The Skinny on Potatoes

From large holiday feasts to a quick weekday dinner - if there is one vegetable that Canadian cooks would not want to do without, it is the potato. Masters of versatility, potatoes can be boiled, baked, fried, mashed and prepared several other ways. Potatoes are sometimes underestimated in their nutritional value. The average potato provides 40 percent of the recommended daily allowance for Vitamin C, has 3 grams of protein, is an excellent source of dietary fiber and supplies 12 other essential vitamins and minerals. All that and no fat.

There are lots of choices when it comes to potatoes.

Tried and true classics, such as Russet Burbank or Yukon Gold or new gourmet varieties, including Fingerling-style Banana Potaoes or deeply coloured Russian Blue, are just some of the choices you have.

The texture determines a potato’s use, not its skin.

Potatoes that are high in starch are more mealy. They tend to bake up nicely and make good fries and chips.

Those low in starch are waxier and often higher in sugar. These varieties hold together better during boiling and are best used for salads, soups and similar dishes.

Nicola is a relatively new, early yellow potato with a very low rating on the glycemic index, making them perfect for people who need to watch their blood sugar levels. Potatoes are usually rated fairly high on the index, which means that after you eat them, the carbohydrates in the potatoes cause a spike in your blood sugar levels. For example, a baked Russet Potato has a ranking of 111 on the glycemic index and the Nicola comes in at only 58.

Beside your culinary preferences, you should look at your local growing conditions when selecting your seed potatoes. In general, potatoes are very forgiving and can grow in virtually all soil types. For best results, however, pick a sunny location and add as much rich, organic soil as possible. This is especially important if the soil has a high content of clay.

Potatoes like neutral or even slightly acidic soil. In most of our region, the soil is more alkaline - a quick pH soil test will tell you - and potatoes benefit greatly from adding some sulphur to the soil. Experienced gardeners will also recommend that you rotate the location of your potatoes in your garden to help offset nutrient deficiencies and avoid pests.

Seed potato tubers can be cut to allow for more plants. It is recommended that a minimum of two eyes are left on the tuber that is to be planted. After cutting the tubers, leave them out to allow the cut to scab or harden off before planting, generally between 12 and 24 hours.

When first planting the potatoes in your garden, only cover the tubers with 3 to 4 inches of soil. Once your potatoes have grown to about 6 inches, you can hill them by adding some soil over the plants.

Carefully add about 2 inches of soil to avoid breaking the plants. Leave at least two thirds of the plant with leaves sticking out of the soil. Keep repeating this process as your plant grows. You can begin harvesting potatoes once the plant has flowered or when it dies back in the fall.

Potatoes can also be grown in almost any large container, provided good drainage is available. Just remember if you are planting potatoes in containers, use good potting soil and feel free to add some organic matter to it to make it a little heavier. A slow release fertilizer is a good idea as well, as potatoes are heavy feeders. When growing potatoes in containers, it is important to keep them moist, but not soaking wet. Consistent moisture helps form uniform sized potatoes.

A great idea, especially for smaller patios and balconies, are potato grow bags. These soft-sided, collapsible totes are light-weight and easy to move, some even have a harvest flap at the bottom for easy access. If you are transplanting potatoes from a container into a spot in the garden, do so before they flower for the best potato production.

So put aside some space in your yard or add a few spuds to your containers this season and enjoy the results on your family’s dinner table.

Challenges and history for BC’s ORV puzzle Submitted With the warm weather upon us, the Grasslands Conservation Council (GCC) wants to remind recreation enthusiasts using off-road vehicles (ORVs) such as ATVs, 4x4s, and motorcycles to ride respectfully and responsibly. Spring is a sensitive time for plants on the range. ORVs can do extensive harm to grasslands by spreading

invasive weeds, damaging grass plants and causing soil erosion.

BC’s grasslands are an incredible gem – vistas of grass swaying in the breeze, large expanses of open ground that provide not only valuable forage and habitat, but incredible aesthetics and open areas for the recreating public to enjoy.

BC is the only province in Canada that does not regulate motorized activity.

The Grasslands Council in 2002, gathered a group which later became known as the ORV Coalition, and over a period of years of dialogue, the coalition eventually provided 47 recommendations to the BC Government aimed at bringing in regulation to manage motorized activity. These recommendations were aimed at managing environmental impacts as well as focusing on public and rider safety. In 2009 the government finally announced endorsement of these recommendations under an ORV management framework – motorbikes would be licensed, identifiable, and regulations brought in to ensure that bikes had spark arrestors and mufflers. Managed trail systems would be part of this initiative to ensure that trails were sustainable, and properly located. Today, in 2012, this legislation is shelved yet again. There are still no regulations governing the irresponsible use of

off road vehicle (ORV) – 4x4, quad, motorbike on terrain that is accessible, snow free early, and on fairly gentle terrain.

As a result, many areas of grassland in BC are heavily impacted from motorized activity, especially those that are adjacent to urban areas or readily accessible by vehicle. Large scars occur on the hillsides, where a single motorbike may have made a trail, and others then followed and widened.

Racetracks circle lakes and cut through sensitive riparian areas. Networks of braided trail systems on the open and semi open grassland areas are increasingly common.

Every year, new trails are developed as the older ones get dusty or less challenging to ride.

These impacted grasslands are now ripe for establishment of invasive plants, soil erosion, loss of forage, and loss of habitat for nesting birds and other small mammals. BC has become a mecca for motorized enthusiasts from other provinces and the neighbouring states, where regulations are

motorized vehicles.

Section 46.1 of the Forest and Range Practices Act was passed in 1994 to provide enforcement agencies legislation to deal with motorized activity and environmental damage. To date, it has been very successful when riders have been charged with mudbogging in riparian areas, but has had limited success in the courts to deal with riders on grassland areas.

Grasslands and sensitive alpine areas continue to be damaged, in all parts of the province.

There is no desire to continue closing areas to motorized use. Motorized recreation is a booming tourism opportunity for the province, and it is recognized that it is here to stay. The challenge is to educate the public on where they can ride safely, and with the least impact to the environment.

Legislation is s badly required to identify bike and quads through a licencing and decal process . Currently the public or enforcement agencies are challenged to report and prosecute irresponsible riding without a better means to identify the vehicles.

Public safety is still very much a concern. BC very much lags behind other provinces and the United States in drafting regulations, and the hard work that the ORV coalition completed and government endorsed appears to be stalled out at present. This is not only disappointing, but alarming, as sensitive ecosystems of grassland and alpine continue to be degraded.

The GCC hopes that as you head out on for a ride or a walk you will stay on managed or established trails, roads and routes in sanctioned riding areas and that you obey and respect the signage on private and lease land. The plants and soils in these areas are sensitive and it is easy to do irreparable damage. It is very important to the future health of these areas that the restrictions and limitations placed on these lands be respected. We want to ensure that the grasslands are here for future generations to enjoy.

She won a gold and silver medal in short stories “I Am Cassandra” and “Remembrance of Things Past”, a gold medal on her personal essay/memoir “Big Brother Is Watching Us” and gold in photography “Middle Eastern Atheist”.

Spring Trip 2013 The travel club from Mount Baker, Laurie, and Parkland schools spent nine days over spring break touring the sights of Athens, four of the major Greek islands, and visiting Ephesus, Turkey.

The highlights of the EF tour included a visit to the Parthenon, and a four day all inclusive cruise. The participants spent time exploring the palace of King Minos of Crete, visiting the beautiful island of Santorini; seeing the house of the Virgin Mary in Turkey, and St. John’s Monastery on the island of Patmos.

The Mines are hiring and they are looking for females in various fields. Mount Baker Secondary has an opportunity for female students in Grades 11/12 to attend the “Girls Explore Mining Careers Day”. This is an educational opportunity to orient young women about the diverse options for women within a mine setting, such as Human Resources, Accounting, Mechanical/Chemical Engineering, Geology, Environment, Heavy Duty Equipment Operator, Trades etc… This exciting orientation will take place April 29/30th. Students will leave after school on April 29th and stay overnight in Fernie. The morning of April 30th the girls will venture to the workshop at Line Creek Mine, which is lead by female mining employees in various professional and trades careers. If you are interested please see Mrs. Kettenacker for an application as there is only room for 24 students.

The Adapted Art class traveled to The Painted Crate on March 5, 2013. Prior to this field trip the students learned about how colour enhances the feeling of a room. By using the Personal Colour Viewer on Benjamin Moore’s website, students discovered what colours they preferred by ‘painting’ a chosen bedroom online. Once at the store they were given the paint chip of their favourite wall colour. Following the Painted Crate’s “Create @ the Crate” DIY night model, the students were invited to paint wooden boxes with acrylic paint and the lids were painted with chalk board paint. Once back at school, students primed their lids and created drawings in chalk. They are now waiting for the art project that will “fill” their boxes. Special thanks to Barb and Jan for opening up their business to the class. One student said “he really enjoyed all of the colours and liked the name of the store”. They all said “they had a good time and enjoyed the painting”.

The recipient of many outstanding service awards, including the Order of Canada and most recently a Queens Diamond Jubilee Medal and the Canadian Museums Association’s Distinguished Service Award, Anderson has dedicated his entire career to preserving local heritage, including the building of an internationally recognized Railway Museum in Cranbrook, BC. According to CAMAL Board Chair, Jeanette Sissons, Anderson’s professional career is a record of outstanding dedication and achievement.

“Garry is always quick to acknowledge the help of our board members, volunteers and donors,” explained Sissons. “But everyone would say the Museum was Garry’s vision from the very beginning, one that he has pursued with a singleminded tenacity for almost 40 years.”

Anderson grew up in Cranbrook. After earning a degree in architecture at the University of BC he returned to the City in 1972 to find a community up in arms about the recent demolition of a number of historic buildings, particularly the local post office. The City hired him to produce a report to find a better way to manage heritage perseveration, and one of the recommendations was the formation of a local heritage society.
