Wine box art at The Beaumont Multidisciplinary artist Arne Gutmann brings his imagination and the work of over 30 artists from Whistler to San Diego to The Beaumont Studios (316 W. 5 at Alberta) once again. runway.

On March 1, firefighters featured in the 2013 Hall of Flame calendar will work the catwalk at the inaugural Spring West Coast Women’s Show.

Although event attendees can’t take a firefighter home with them as a souvenir, they can purchase a copy of the 2013 calendar for $15 before and after the show.

This year marks the 26th edition of the Hall of Flame calendar, which features playfully provocative photos of Metro Vancouver firefighters. “The oldest FRANCHISE OPPORTUNITY calendar that I have is from 1988,” says Adrian Sherriff, a Vancouver firefighter and chairman of the calendar committee. “There’s a lot of mustaches in that one.”

I’d like to correct Paul Richards on a few points he made regarding the Comox/Helmcken greenway route (Bike lane vs. bike lane, Feb. 14). Firstly, with respect to the design process being “railroaded through”, the City of Vancouver held an open house and consultation in the fall of 2011.

This was followed in September of 2012 with the announcement of four public open houses where much input from the public was gathered.

Secondly, with respect to his thinking that “an overall plan should have been envisioned a long time ago”, the city approved a greenway plan of 14 routes (including this one) back in 1995, then in 2010, voted unanimously to invest $25 million on bike lanes as part of a 10-year plan. I’ll credit Paul for having enough awareness to realize that.

Vancouver is a wet, rainy, hilly city, But I do disagree with his notion about local transit options being “poor”. If I’m wrong about that, then all the more reason to move ahead with supporting other transportation options as part of our city’s comprehensive 17-year-old plan.

Shut up or get involved What I find hilarious are armchair critics who don’t get involved in the process for city projects and then, after the consultation phase is all over, bitch about them being “railroaded through”. For the Comox Greenway, the City provided many opportunities for input into the design. Mailings,

posters, etc., all went out. There were open houses and consultations with groups in the areas affected.

From that they made a plan, got feedback on that, revised the plan, then it went to council, which also got input, then it was democratically voted on.

There’s been an overall greenway plan envisioned since the 1990s. None of this is a surprise to those of us who were paying attention.

Sweaty cyclists I don’t agree with the promotion of bike lanes as a good alternative to public transportation! Who wants to arrive places all soggy or sweaty!! It’s not a good alternative! The weather in Vancouver is too frequently unpredictable. Also, housing is being developed primarily in the suburbs, where people commute from. Bike lanes are a waste of energy and will ultimately be ineffective.

Walk on, Yellow Pages About three years ago, upon getting dozens and dozens of unsolicited copies of the Yellow Pages delivered to our building, I called the company and was assured that the practice would be discontinued the next year; people who wanted paper directories could order them. What appears recently at our door, but the latest version of the Yellow Pages!

Seriously?! It’s 2013... very few people let their fingers do the walking through hard copy. They use them to browse online. It’s time that this company stopped killing so many trees for something that pretty well goes straight into the recycling bin. In fact, when I called and asked that someone come pick them up, or that they’d be put in the recycling bin, I was informed that it was OK to do that, as they were 100% recyclable! Sheesh!

Dance as if the world is dancing with you

W

hen we “dance as if no one is watching,” wouldn’t it be great if we could do it as well as Alessandra Quaglia is doing behind the bar at Provence Mediterranean restaurant?

In between making a latte for a visiting reporter, she’s explaining what it is she loves about salsa dancing.

“You just get to feel your hips and go to the rhythm of the music,” she says as her hips and shoulders start swaying to some song she’s hearing in her head.

Her eyes sparkle with the memory of being on the dance floor, her voice gets softer, more dreamy, her feet are propelling her forward

and back. “You can walk down the street like this” — her hips are doing a little sassy sashay — “but you don’t get to release the feminine energy of Latin street music.”

She pauses as the milk steams.

In her usual day, as the co-owner of two busy restaurants with her husband Jean-Francis and mother of two teenaged boys, she’s always organizing things, making sure things happen and get done. “I get on the dance floor and for three minutes of each song, I don’t have to make any decisions. The man is leading me, I can be sexy and

feminine. For three minutes you surrender and follow.” She laughs.

“Maybe a man would say, ‘Yea, I get to take charge for once.’”

From March 7 to 10, she’s helping to host the Vancouver International Salsafestival, which will bring some of the top professionals and enthusiasts from around the world to the Westin Bayshore Resort Hotel. “This is our fourth year and the excitement around it has exploded. People just love the festival. It’s constant fun.”

Sadly, this is also the festival’s last year. “We feel we’ve exhausted

all of our great ideas so we’re going out with a bang.”

Festival passes have already sold out but tickets to individual events are still available. The fun starts Thursday night with a Red Bull X party and competition, and continues Friday with an intense three-hour crash course followed by a World of Dance party. On Friday and Saturday there are a variety of dance classes and each night is capped with a performance and party that isn’t scheduled to end until four the next morning. (Quaglia was recently at a salsa festival

in San Francisco where they didn’t turn off the music until 8am.)

Surprisingly, Quaglia didn’t start salsa dancing until four years ago.

An avid tap dancer, she and one of the staff members at Provence Mediterranean talked about trying something new. “We didn’t want to go to the regular clubs because I felt too old so she mentioned a salsa event at the Howard Johnson at Kingsway and 12th. Most salsa events start with an hour of lessons and even though she arrived wearing the wrong shoes for salsa — you need shoes that allow you to spin and hers had rubber soles — by the end of the evening she was hooked.

With some types of salsa, you find yourself with different partners throughout the dance and at one point in the evening, she was dancing with a man who’d obviously done this many times before. “Halfway through the dance he did this really slow dip” — she bends her head back — “and I thought I’d died and gone to heaven. I thought, ‘Where do I sign up?’”

She took private classes for two nights a week for six months and joined various dance groups. This will be the third year she’s on the salsa festival’s four-person organizing committee.

“The festival is definitely for all levels,” she says. “We have all these people who can help you take your dancing to the next level. It’s an incredible opportunity to have access to all this amazing talent.”

Nils Hognestad: speaking from the heart After four open-heart surgeries, the Vancouver actor hopes to be among the last who have to feel the pain of a broken heart

I

failed my very first day on the job. And it wasn’t like I hit “reply all” on a rude email about a client or didn’t get a FedEx off in time. We’ve all had those kind of bad days. No, this was life or death.

It was 28 years ago, but I still remember the events of that day like it was in slow motion. They say that happens...

On quiet nights, with only faces of the people whose lives I’ve changed forever (Arnhild, Jone, Karoline, Jo, Nils…) dancing in the darkness, it’s hard to forgive myself.

Sometimes I simply feel broken. But then I’m reminded of the circumstances.

I thought I was ready, but nine months of training couldn’t prepare me for the events of July 16, 1984.

The air was electric, pulsing. There was a bright flash of light, chaos. I remember hearing screams and everywhere I looked, seeing blood.

I froze. I didn’t finish sealing the chamber in time, and suddenly, bad gas was mixing with the good. The oxygen supply was dangerously low and the pumps were working over time. We got sick.

The project was temporarily abandoned.

All we could do afterward was put in half measures, patches — solving one problem that caused another somewhere else.

But, after the fallout, instead of being fired, my boss has stood by me ever since.

I am actor Nils Hognestad’s heart, and he forgives me.

We have undergone three open-heart surgeries since his birth. He was a “blue baby,” born with Tetralogy of Fallot — a congenital heart defect. The first time they opened his ribs to the sky, we were three years old.

You see, I was supposed to close up the wall between my left and right ventricle, so that when red blood comes in from the lungs, it doesn’t mix with the blue blood that’s no good to anyone. But when Nils was born, open it stayed.

His dad Jone worked in shipping in Norway, where we’re from. A transfer brought the family to Vancouver though, and, after swapping seasides, his parents carried us into Children’s Hospital for the first surgery.

Nils’ body was too little, but doctors had waited as many years as they could before operating to clean up the mess I had made.

Afterward, I felt fine, but Nils’ rib cage was crooked and overlapping, healing like a Sierra mountain range. The next time doctors broke the bones, they left me alone and I watched as they reset his sternum. We were five years old.

Doctors told his parents that this was an exciting time for our condition, and that technologies for heart surgery were growing

By age 13, he was fainting all the time. We had a new problem, but Nils refused to tell anyone. It wasn’t until he blacked out while racing bikes with a friend that his secret came out.

The early years of strain, before the hole could be sealed up, had caused my pulmonary valve to completely wear away. We were rushed in for our third open-heart surgery. It was Nils’ first year in high school.

After the operation, I inspected the plastic invader that they had put in me, and knew that this would not be the last of it. This valve had a life expectancy of maybe 15 years. Nils had a life expectancy of five times that. He also had a life.

Nils had developed a passion for acting.

He got on with a kids’ talent agency in Vancouver and tried his hand at the trifecta: acting, modeling and singing. I could feel his excitement when he stepped on stage. I

Nils excelled in the drama program at Handsworth in North Vancouver and went on to study further at Ryerson in Toronto, and then LAMDA in London.

Nils didn’t really notice when our old valve slowly began to leak.

He carried on with his voice-over career.

Anyone with a penchant for gambling hears Nils heralding Poker Stars as the “world’s largest online poker and gambling site.”

Then, in 2011, Kokanee beer fans voted to kill off the curmudgeonly ranger. And, in a Starsky-and-Hutchesque turn, Nils and his golden hair appealed to voters as one half of a new ranger duo — Glacier and Fresh.

But in May of 2012, just before filming began, Nils was resting on the patio in his

wooded back yard. The sun was beaming bright shafts between the leaves, and his mother, Arnhild, was enjoying the warmth in a chair next to him. But Nils’ body was cold. Wrapped in a wool blanket, he shivered and shook.

He told her it was the flu. He didn’t want to ruin Mother’s Day. A week later, though, he could barely lift his head, and his parents rushed us to emergency at St. Paul’s, terrified. I knew it was my fault, but it took the doctors two visits to discover the bacteria teaming inside me.

Nils had developed an elusive bacterial endocarditis. They could see a growth clinging to the site of the old valve — already scheduled to come out soon. His gallbaldder, kidneys and liver were septic and nine weeks of antibiotics ensued.

But he responded, and learned to administer the medicine by IV through a line directly into his heart. (If he ever gets cast as a doctor, he’ll know exactly how to act).

And his schedule was full. He got a doctor’s note and took his liquid cocktail on a flight across Canada to some friends’ weddings. Then he started filming the movie.

But by June, sitting in the office of a naturopath in North Vancouver, he cried. He was tired. I was functioning at a mere 40 per cent. His body was riddled with allergies and weakened by the antibiotics.

Our next surgery was less than a year away and we were being told the severity of the endocarditis meant doctors couldn’t do the revolutionary procedure we had been preparing for. They would have to go in the old-fashioned way — through the chest.

But his body still hadn’t fully rebuilt from the last time they cut it open, 15 years ago.

The recovery time for a Sapien transcatheter valve procedure, though, is more like a week. So he fought the doctors until they agreed to do it this way.

Just after his movie premieres, we get our new pulmonary valve. And this one should last 20 years.

I can hear him telling all this to a reporter, sitting on the couch in his parents’ living room. He pulls out a video on an iPad to show her how they’ll replace the old valve by running a lead up through the femoral artery in his thigh and into my right ventricle. Then they’ll send a state-of-the-art valve made of stainless steel and cow parts up along it, and, via a balloon, puff it out into place.

The reporter asks him what he would tell children who are just starting down the same road. He says, with his chest bisected by scars, that he feels like the last of his kind — when he’s an old man, kids will be amazed that they used to cut people open to do surgery.

She asks him if he feels like this upcoming procedure is his choice, and he says it feels more sterling silver like something that is hook earrings just happening to him.

She asks, if he could write a letter to his heart, what would it say?

And after a long silence, he says that he loves me, and that he cares for me, and that I’m perfect the way I am.

And I break just a little bit more.

Enter Dane Brown and Clinton McDougall who, after a trip to LA’s Berlin Currywurst, decided to open their own 25-seat German-style haute dog and beer joint at 105 E. Pender. Burdock & Co, Mount Pleasant Seasoned Chef Andrea Carlson

(Harvest Union, Bishop’s and Raincity Grill) is bringing her considerable locavore talent to Burdock & Co. at 2702 Main, which she will own in partnership with Vancouver Farmers Markets. Known for pioneering the 100-mile diet here, Burdock will serve organic vegetable-focused share-plates for $20 and under. Kevin Bismanis has redesigned the former Cafeteria space to resemble an urban barn.

Newcomer Maruko, at 1333 Robson, which opened February 18, may be the next big thing. Chef Shuma Sakakibara learned his trade at the popular Tokyo chain Komen.

The chef handmakes the springy noodles in shop and simmers stocks for 10 hours. Shio comes with or without chicken. Shoyu comes with pork shoulder — a leaner alternative to pork belly.

Pidgin, Gastown Owner Brandon Grossutti and celebrated Chef Makoto Ono didn’t expect their fledgling restaurant, at 250 Carrall across from gritty Pigeon Park, to become the focal point of the gentrification debate.

Story behind Fable begins with chef Trevor Bird

T

he past year has been a pretty “intense ride” for Trevor Bird — and 2013 is shaping up to be even busier.

Capitalizing on his fame on Top Chef Canada, where he was the Season 2 runner up, the Vancouver chef opened Fable last May on West 4th. It was a chance for him to flex his creative muscle in the kitchen and pursue his dream of creating exactly the sort of restaurant where he’d like to eat.

Eight months later, when Bird is told that Fable was chosen as the Best New Restaurant in WE Vancouver’s Best of the City readers’ survey, it adds to his feeling that it has all been a little bit overwhelming. Overwhelming in a very good way.

“It’s a dream, really,” he says. And as much as he’s “really stoked” that Vancouver diners love his farm-to-table concept, he’s also very open to ideas on how to make it even better.

Like him, Vancouverites love to eat but they are also conscientious about eating foods that are fresh and healthy. He makes sure he eats his vegetables, and his plates include a lot of healthy options, too.

“It’s well balanced food,” he says.

The most popular items on the menu include the steak with black pepper jam, and duck that is seared to crispy perfection and brushed with a

sherry glaze. But the dish that surprises people the most is his Canned Tuna appetizer.

“People don’t quite understand it when they read it on the menu,” he laughs. “You don’t have high expectations but when you eat it, you’re like, ‘Oh shit, this is good!’”

He takes fresh albacore tuna and puts it in a mason jar along with fingerling potatoes, confit lemon, confit tomatoes, olive oil, tarragon and chervil. He submerges the jar in hot water and lets it bathe for about an hour, cooking the tuna and melding all the tastes together. When it arrives on the table, people are given a teaspoon of salt which they mix in to release all the flavours before spreading it on toasted sourdough bread. We can attest that it’s delicious!

It’s this sort of creativity — plus the daily specials — that make all the demands of owning his own restaurant so rewarding.

Not that he’s going to have the chance to rest on his laurels. The next few months are jam-packed with culinary adventures, including cooking demonstrations, teaching cooking classes and going to Fernie to cook for 200 Telus executives. As well as hosting some Top Chef Canada chefs from Season Three at the restaurant, he’s also travelling to Banff to cook with chefs from all three seasons.

“It’s through-the-roof busy,” Bird says as he goes through a mental check list of his to-do list. But don’t say he doesn’t love it.

Who taught you to be so thoughtful of others?

My mom. I remember many discussions at a young age about how everyone is equal regardless of race, gender, religion, sexuality or financial situation. That was hammered into me almost as if she was terrified to have a child who felt otherwise! Ha. Thumbs up for mom!

I think we’re all connected in a very literal way. It’s obvious that emotions and experiences are contagious. We feed off each other as intimate partners, as coworkers, and even as a city. Reading The Intention Experiment by Lynne McTaggart was an eye opener for me. She discusses what the fringe sciences have discovered about how we’re connected.

Who were your big influences growing up?

Ad companies probably. Haha! I know that sounds like a smart-ass answer but really... our subconscious was mostly programmed by them. (Without our consent I might add.)

I’ve been trying to shake off most of what I learnt as a kid because none of it seems to be true. For example, most of my early goals as a kid were to obtain ‘stuff’ and now as a wiser adult it’s like, wait a sec... none of this stuff has helped me to be happier, WTF! My mother loved me, and I had a couple of solid mentors along the way, but sometimes your biggest influencers aren’t always your best.

You seem to be able to look at life’s issues and blessings from all perspectives.

I just came to accept that I’m not ‘right’ about anything... There’s always a book, or a person or an idea that reminds me how little I know. That keeps me open to new ideas all the time. Sometimes people don’t get that about my personal-

ity on the radio, because when you’re doing a radio show, you have to polarize the audience to spark a discussion. So I’ll dig my heels in and represent a hard opinion on something, when in reality... what the hell do I know!!?? My view is just a snapshot of the moment. I’m hopefully evolving all the time.

How are you able to understand life as women see it too?

My family was tiny... my mom, sister and me. I think dudes who grow up around women have a natural inkling to understand more.

That being said, men and women literally have a different brain and speak a different language. A woman says to her man: “We never go out for dinner!” And what she means is, “I feel like going out for dinner.” Meanwhile the man hears: “You’re a lame partner, you don’t take me out enough.” And it bruises his ego. FAIL. What do you try to convey in your show?

If there’s ever an overall theme to my show, it’s that happiness doesn’t come from the things we’re trained to believe. We’re all just trying to be happy.

We’re on the same mission, let’s help each other.

A toast to our readers’ favourite BC wineries CityCellar

A

fter the ballots were all counted, WE Vancouver readers anointed Burrowing Owl, Mission Hill and Quail’s Gate as the top three British Columbia wineries. Of course, this is an extremely subjective category that really comes down to the style of wine that floats your boat, but I like these three choices for a couple reasons.

All of them play an important role in the history and evolution of British Columbia’s wine industry but, more than that, they have all maintained consistent quality over the years, particularly in tougher vintages.

Here’s my take on the bottles you should be grabbing from each winner, the labels I feel express the winerys’ strengths and are always dependable, vintage after vintage. Prices in brackets are winery direct; tack on a couple bucks more if you’re looking to buy them from private wine stores around Vancouver.

Burrowing Owl, gold Burrowing Owl was certainly the Next Big Thing when their inaugural 1998 vintage was released, and their wines have been in high demand ever since. Handsome and sturdy packaging aside, they constantly offer great concentration and solid balance; the level of oak used across both whites and reds is always in check. Their Cabernet Franc ($33) shows us why the grape is so much more suited to our climate (its big brother Cabernet Sauvignon being notoriously tough to ripen properly) and can be counted on to be chock-full of red fruit, spice

and warm, toasty gingerbread. If you think you don’t like oaky notes in your Chardonnay, don’t be afraid to give their $25 version a whirl. It’s so beautifully integrated — just the perfect amount to handle all of that ripe, tropical fruit.

Mission Hill, silver You simply cannot tell the story of British Columbian wine without having Mission Hill as part of the conversation.

Established in 1981, Anthony Von Mandl’s stately winery in West Kelowna is not only our most-awarded and well-known internationally, but big-name global winemakers from Michel Rolland to Fritz Hasselbach get to kick the tires and play around on the property with long-time winemaker John Simes as well. Hasselbach and Simes’ collaborative Martin’s Lane Riesling ($25) has quickly gained cult-status as one of the Okanagan’s best, while the winery’s S.L.C.-level Syrah ($29.99) is a personal favourite for its Old World, earthy spicy character that carries some New World, fruit-forward power.

Miss 604 explores all that is great about Vancouver

W

hen Rebecca Bollwitt started her blog, it was more like an online personal diary. “There really was no goal,” she says. “It was to write about my day, the shows I watched, the music I listened to…”

The year was 2004. There were only two other bloggers in Vancouver, plus musician Matthew Good, and Bollwitt laughs when she says her mother was her primary fan (and reader.)

Today, Bollwitt’s mother is still an avid follower of Miss 604 — along with the roughly 5,000 other people a day who visit Bollwitt’s popular blog or have signed up for her RSS feed, not to mention the 40,100 people who follow her every move on Twitter.

Miss 604 has become one of Vancouver’s goto bloggers and her enthusiasm for all things Vancouver has helped earn her the gold medal as Vancouver’s Best Blogger in WE Vancouver’s Best of the City readers’ survey.

In a city where there are hundreds of bloggers sharing their thoughts and activities, Miss 604 stands out. She’s informed, informative and seems to know every corner of this city and beyond. She’s not so much Vancouver’s cheerleader but more of the enthusiast who shows her love of the city by embracing many of the activities it has to offer.

She says that when it comes to blogging, you get what you give. If you’re snarky, you’ll get snarky back. If you rant, you’ll get rants in return.

She doesn’t want such negative energy in her life, and certainly not recorded for all time on the internet.

Of course, the blog has evolved from that early diary. “The focus is not ‘Oh, look at me, look at what I’m doing,’” she

says. “I’m writing about what other people can do….

“I write about things my mom can talk about at her office. It’s for people who want to get out and about and don’t necessarily want to spend a lot of money.”

As the site’s popularity surged, Bollwitt was going to so many events that she was rarely at home. She had two choices: she could either try to be omnipresent, tweeting at all hours of the day and weekends, or she could carve out a niche that allowed her to be Miss 604 as a full-time job and yet spend time with her husband John (with whom she co-owns Sixty4Media.com.)

She opted for balance. Today, she basically turns her computer off at five and on weekends occasionally tweets photos of a beautiful walk she and John have just enjoyed.

As to the ethical debate about how honest bloggers should be about the perks that can come with being invited to write about events, food and various products, Bollwitt says, “My readers have helped keep me accountable. They are really smart and wanted me to have disclosures. As long as you’re up front about it — and say ‘I’m writing about this vehicle because I was given it for a week” — they’re fine. I don’t want to piss my readers off.”

Judging by her success in Best of the City, she’s a long way from doing that.

Finding the perfect fit in fashion

Winnyunt learned how to sew from his uncle in Malaysia; Chao studied fashion in Paris for six years.

They both know the rules and proper techniques for making clothes fit just so, but also enjoy working with clients on implementing their design ideas.

Such work can take time, however. The duo likes to meet with the client to talk about what the client wants. They will also make sure they give the job the care and attention it deserves so that when the client tries on the altered clothes, they will all be thrilled with the results. That means an alteration can take a couple of weeks.

“We’re trying to do the best job and we want to maintain good quality,” Winnyunt says.

s talented as they are as florists, Nghia Diep and Mike Dreher have also earned their clients’ loyalty by being good listeners.

The business partners opened Blumen Floral Boutique in the Cambie Corridor two years ago after 10 very busy years doing weddings and events.

Instead of falling into the mold of treating all weddings as if they were the same job with different customers, they established a devoted following by being intuitive about how to personalize each and every assignment.

Those customers have responded by voting Blumen as the gold-medal winner of best florist in WE Vancouver’s Best of the City readers’ survey.

“You’ve got to get a feel for the couple and try to pull out something that’s personal for them,” Dreher says of their approach to coming up with the

perfect bridal bouquet. “We usually go with them to the coffee shop next door to get a sense of who they are and what they want out of the day.”

The couple is often just as intrigued by the answers, using the opportunity to put their expectations into words. However, Blumen has learned that it’s important to re-connect a month before the wedding because “I can guarantee they’ll have changed their minds,” Dreher says with a smile.

Blumen also specializes in micro landscaping, perfect for a city with so many condos. “Everyone has this little piece of real estate they don’t know how to make beautiful,” says Dreher of their deck and patio container designs.

The night (and well into the morning) before talking with WE Vancouver, Blumen’s staff had been at the Fairmont Pacific Rim, decorating the ballroom with 1,800 red roses for the Forum for Women Entrepreneurs gala. It was a big project but they thrive on coming up with ways to create magic with flowers.

Striking a chord The Vancouver Men’s Chorus

ithin two weeks of tickets going on sale last December, all five performances of the Vancouver Men’s Chorus’ Christmas concert were sold out. It’s an indication of how the choir has become one of this city’s most popular cultural institutions.

Another indication is that the 32-year-old choir has once again earned the gold medal for Best Choral Group in WE Vancouver’s 2013 Best of the City readers’ choice awards — consider it a standing ovation!

The cause of such success is twofold. Obviously, music lovers value the high standards set by founding conductor Willi Zwozdesky and the ability of the 90-plus volunteer singers to meet them.

However, reaching those lofty goals takes time and commitment. You can’t get that level of dedication if the singers aren’t enjoying themselves.

“What a great group to belong to,” says Len Cousineau, who joined the choir 32 years ago and has only missed one concert. (He was involved in an accident two days before the performance.)

The choir’s history dates back to 1981 when “the first gay choir, the San Francisco Gay Men’s Chorus, toured the United States and several men from Vancouver drove the three hours south to Seattle to hear them,” the choir’s website says.” On their return, they decided to start a chorus of their own performing their first concert in December of that

same year. They officially became the first gay chorus in Canada, a founding member of GALA and the first international gay chorus in that organization.”

“Our mission is to present quality entertainment,” says Cousineau, who is currently the choir’s vice-president and chair of concert planning, having served as president several

times. The show isn’t only about the singing; there’s a performance aspect as well. “We can make people laugh and cry within a 10-minute span. It’s a very emotional connection.”

our wines for your weekend drinking pleasure this week — some bottles I’ve enjoyed over the last month that I’ve been meaning to share. Let’s dive right in!

Josef Chromy NV Sparkling | Tasmania, Australia | $35-ish | Private Wine Stores It’s a shame we don’t see more Tasmanian wines in our market. Australia’s cool-climate island does some darn good Chardonnays and Pinot Noirs, and you’ll find both grapes excelling in this cheery, food-friendly sparkler. Fresh sourdough on the nose leads to green apple, pink grapefruit and mandarin orange, making it a handy pairing for seafood, pâté, or even just a big bowl of popcorn. Feel free to grate some parmesan cheese on that popcorn if you’re feeling fancy; the wine will tackle it well.

Highlights from the media night included Turner’s award-winning wings (stuffed with cream cheese, wrapped in maple bacon, deep fried and grilled) and spicy wok-fired squid. On the beverage front, the fully stocked bar features ten beers on rotating taps.

Weekday diners are encouraged to order from the $10-item lunch menu — and return on Friday and Saturday nights for DJ-spun tunes.

“It’s not pretentious, it’s quality food, and it’s fun,” said Kerasiotis.

“There’s something here for everybody.”

Mer Soleil 2011 ‘Silver’ Unoaked Chardonnay | Central California | $28.99 | BC Liquor Stores When I first got into wine, I was a big fan of Mer Soleil’s Barrel-Fermented Chardonnay ($34.99) which is the richer, fruit-forward big brother to this guy. As I’ve expanded my horizons, I find myself gravitating to wines that use a lot less oak which gives the fruit more of an opportunity to express itself honestly.

This unoaked version is bright and clean, with citrus, Granny Smith apple and some very distinct minerality shining through while maintaining Mer Soleil’s trademark fruit-forward richness. While some may see the ceramic bottle as a marketing gimmick, it does a great job of keeping the wine chilled while it sits on your table.

Blue Mountain 2011 Pinot Gris | Okanagan, BC | $25ish | Private Wine Stores Pinot Gris rarely excites me, but in the right hands it can really shine. Okanagan Falls’ Blue Mountain Winery is one of our best, and with their 2011 outing they’ve made a wine that truly dazzles. Nice and fleshy, it’s got some good weight to make it food-friendly with bigger, boldflavoured dishes since it’s jam-packed with peaches, nectarines, apricots and a little zip of lemon curd. Make sure you’re drinking it out of bigger wine glasses because there are plenty of lovely aromatics that’ll be unleashed as you swirl it around.

Ganton & Larsen ‘Admiral Shorts’ Okanagan Tawny | Okanagan, BC | $17.99 (375ml) | BC Liquor Stores Some of the grapes in this Okanagan port-style wine were in barrel for more than 15 years, which gives a good dose of charisma and makes the dark berry fruit nice and plushy. It’s fortified with neutral grape spirit to 17.5% alcohol, which will warm up even the rainiest of nights. Stewed plums mingle with toffee, butterscotch and a little spiced orange.

I’ve had some local Port-type wines that have been outright vile, so I proceeded with much caution on this one. Very impressed that it wasn’t too hot (alcoholwise), the fruit wasn’t stemmy and, most of all — it’s not ridiculously sweet. Enjoy it with sharp cheeses or dark chocolate.

Where kindred spirits meet Long Table Distillery is Vancouver’s first artisan gin and vodka maker

W

hen Charles Tremewen and his wife Rita took some time off to explore Portland, they were struck by the fact there were 44 craft distilleries in the-city-Vancouvermost-wants-to-be-like.

Vancouver already had a variety of craft beer makers, coffee roasters and tea adventurers. It even had its own artisan sake maker. But someone who could make craft vodkas and gins?

That bottle had yet to be poured.

Rita ruled out their garage as the distillery’s location. Since the distillery would double as a retail outlet, they needed someplace central and yet large enough for the large copper and aluminum machinery. They found it in a former art gallery on Hornby between Pacific and Beach Avenues.

It took much longer (the BC Liquor Control and Licensing branch isn’t

called a bureaucracy for nothing) and twice as much money than they expected, but earlier this month the Tremewens opened Long Table Distillery, this city’s first and BC’s 8th artisanal distillery.

In the intervening months, Tremewen honed his skills at his newly purchased still, sourced a variety of natural botanical ingredients, including berries picked by First Nations people in the Coast Mountains, and created his own London Dry Gin and Texada Stoned Vodka. (The “Stoned” refers to the polished limestone from Texada Island that the vodka is filtered with. How could anyone think there’s another inference?)

“I’m feeling very Portlandyish right now,” he told a group of journalists recently. His accompanying smile was hard won and, based on the taste of his efforts (especially the vodka), well deserved.

Right now, he’s using a grain neutral spirit from California as his base, but he’s hoping to do everything from grain to bottle on site in the future.

He’s heartened by how much Vancouver has cultivated its cocktail culture, thanks to its award-winning bartenders and innovators such as Lauren Mote, who’s making and selling artisan bitters (Bittered Sling) with her partner Jonathan Chovancek. Asked about Vancouverites’ willingness to devote a significant percentage of their disposable income on the alcoholic arts, Tremewen says, “It’s not so much ‘Does Vancouver drink a lot?’ It’s that Vancouver is in-

That’s why you’ll find him experimenting with a “whisper” of lemongrass and a hint of cardamon. “I love a strong juniper nose on my gin,” he says of why he goes to such reaches to source the best organic juniper.

Tremewen honed his sense of taste and smell during his years in the food industry, and also studied artisan distilling at Michigan State University. But when it comes to sniffing out even minute ingredients, he says smell has always been a part of the way he experiences life.

“Ever since I was a kid I was attuned to smells and odors around me,” he says. “When I went into the food industry, I was always asked to go on tasting panels. I train to do this

and when you’re working at [deciphering different smells and tastes], you’re actually working at it.”

At present, the two inaugural batches are only available at the distillery, where you can lean your elbows on a gorgeous 14-foot naturaledge Sequoia Redwood table, and at The Whip at 6th and Main and Forage on Robson. As these batches sell — $50 for a 750ml bottle of gin and $45 for the vodka — he’ll be bringing on a wider selection.

Distillery tours will be every Saturday (a small fee may apply) and the tasting room is open Fridays and Saturdays from 10am to 6pm and Monday through Thursday by appointment.

Jack is a fun but predictable romp JACK THE GIANT SLAYER Starring Nicholas Hoult, Ewan McGregor Directed by Bryan Singer Adapting one of the most beloved folktales of all time for the big screen is no small task and X-Men’s Bryan Singer pulls off the gargantuan feat, even though the finished product is a bit predictable. Rising young star Nicholas Hoult plays Jack, the iconic farm boy who is tasked with selling the family cow but ends up with a handful of magic beans that sprout an enormous beanstalk into the clouds — stop me if you’ve heard this before. Despite the familiarity of the story’s foundation, Singer manages to create a clever, sometimes surprisingly violent and, above all, adventurous tale. The film relies on a huge amount of CGI to create the fantasy worlds (human

and giant respectively) and the individual behemoths, who do have unique personalities and traits, but the blending works rather seamlessly throughout thanks to a hefty visual effects budget, plenty of wellstaged action and a rousing musical score. A strong cast also helps things move at a brisk pace, though some roles are so small they almost come off as mere cameos. Stanley Tucci has fun as one of the central villains, Ian McShane parades around in robes playing the king and Ewan McGregor Thor Diakow sizzles as the resplendent leader of the elite guard with possibly the best hair in the movie. Not everything works in the movie; the plot’s conclusion can be seen a mile away and the script could have used some more wit but Jack The Giant Slayer avoids becoming yet another silly romp.   Â
