McMillan presented with diamond award

Dora McMillan, a longtime resident of the Quesnel area, was awarded the Queen’s Diamond Jubilee Award Monday.

MLA Bob Simpson presented McMillan with the award, which honours significant contributions and achievements by Canadians to their communities.

“Dora has founded or been involved in nearly all the environmental and sustainability groups in Quesnel, including the Baker Creek Enhancement Society and the Quesnel Air Quality Roundtable,” Simpson said.

“Dora’s talents and service to the community, especially in the area of environmental protection, have not only strengthened the Cariboo but our country as well.”

Diamond Jubilee Award nominees Peter Walsh and Carol Weremy were also recognized at the ceremony for their outstanding contributions to Canada.

Pet Coalition start-up

Petsafe Coalition Society of Canada was recenly received a donation of $100 from Regency Chrylser through its RegencylovesQuesnel program. The donation will help the Society to obtain the insurance it requires in order to start functioning fully in the Community. Petsafe Coalition was recently established by volunteers when Noah’s Wish withdrew from Canada. The Society will provide emergency relief and care for animals during natural disasters, and hopes eventually to expand into other programs offering short term foster care for animals during other personal emergencies, such as house fires, etc. There are a number of volunteers in Quesnel who were trained through Noah’s Wish, and worked on disasters such as Hurricane Katrina and the Kelowna fires.

This strong volunteer base will concentrate on establishing the new Society in Quesnel and the Cariboo, and then hopes to extend to other interested areas within Northern BC. The Society is actively fundraising and also looking for people who are interested in volunteering in various capacities with Society.

As the shelves begin to fill, volunteers at the Good Cheer depot in Maple Park Mall are getting busy but it will take a lot more donations to fill the expected 800 plus hampers. As of Monday, they were more than halfway to last year’s number of 803.

Tax credit not helping those who need most DANIKA M. HÉBERT Observer Reporter The province has released details of a new tax rebate available to seniors, but Peter Nielsen of A Voice for Cariboo Seniors said it’s just not enough.

The tax credit is available to seniors or family members sharing their home.

Family members who qualify according to the province are child, grandchild or other family member including brothers, sisters, nieces and nephews but not necessarily cousins or distant relatives.

Starting in 2012, those who are 65 before the end of the taxation year are eligible for up to $1,000 of tax credit.

To qualify for the credit, an expenditure needs to be part of a renovation or alteration of a “qualifying principal residence” of a senior or land on which they reside.

The province has listed the following as examples of qualifying expenditures: • upgrades to improve accessibility, including handrails, grab bars, walk-in bathtubs, wheel-in showers and raised toilets; • motion activated lighting;

• certain renovations to allow a first floor occupancy or secondary suite for a senior relative; • widening passage doors; • lowering existing counters/cupboards; • installing adjustable counters/cupboards; • hands-free taps; • door locks that are easy to operate; • light switches; • non-slip flooring in the bathroom; Some expeditures are not eligible for the tax credit, including general maintenance, appliances, landscaping and vehicles adapted for people with mobility limitations.

Although Nielsen said this tax credit is a step in the right direction, he pointed

out it isn’t helping many seniors who desperately need renovations in their homes.

“I think it’s a good thing, but it’s only good for people with high income,” Nielsen explained.

“It’s helping people who are above average for income, it’s really helping to do the renovations to their house, to make it wheelchair accessible, renovate the bathroom with bars and what not.”

Nielsen said there’s a problem for seniors who need the credit but don’t have the money to initially pay for the renovations.

“The credit is no good for low income seniors,” he said.

“If you’re only making $16,000 – $20,000 a year, you’re strapped for cash and to lay that money out initially is almost impossible.

“If you’re that low income, with what tax credits are available, you’re just about maxed out.”

A Big Thanks to Government Workers!

Over the past few months I’ve been working on a number of very complex files, and I’m very appreciative of the support I’ve received from our public sector employees. I could not do my job as your MLA if I was not provided with such timely and thoughtful assistance on an ongoing basis.

Whether I need briefings on emerging topics, the attendance of senior staff at either private or public meetings, or help with individual constituent issues, I’ve found our local public service managers and staff ready and willing to help. Even more so now that I’m free from the partisan politics that parties foist on our governance structures, which can make our public service hesitant to assist individual MLAs for fear of reprisal.

Few of us can imagine the pressures put on our public servants. They are the ones who have to roll with the changes created by politicians without their input, both when government changes hands and when the government attempts to redefine itself in advance of an election, as we are seeing now. They must also deal with people who are mad at the lack of common sense in government decisions, the lack of resources to assist people in need, and the lack of resources to simply do their job to the level the public expects.

The public service is also an easy scapegoat for politicians who want to distance themselves from the implications of their budget and spending decisions. I’m sure we’ll see lots of blame placed on the public service as the BC Liberals try to balance the budget on the backs of public servants next spring in advance of the May election.

Despite all of these pressures, I believe the vast majority of our public servants do everything they can to serve the public interest to the best of their ability with increasingly fewer resources. Coldsnap line-up released Jonas Gagnon Observer Reporter

Winter in the Cariboo can trap residents inside, putting a damper on social lives and fun gatherings. The Coldsnap planning committee has stepped into that cold void in an effort to bring joy into the middle of grey evenings in downtown Prince George.

Started in 2008, the festival brought a cross section of musical acts to the Cariboo, from folksy musical groups to rappers to the next big indie group in Canada.

This year, the organizers are looking to continue the tradition of grouping acts together in nights of entertainment.

The first night, Jan. 18, of the festival explodes with the indie dance night at the Ramada Ballroom. The night features Shred Kelly, a mix of banjo and synth that mixes power pop and folk in a way that moves listeners to square dancing and the sweaty mosh of electronic in equal parts. The night also features another folk derived band, Current Swell and Prince George Idol winner Chazz Amos.

Those super swinging sounds are followed by an Electric Funky Celtic Ceilidh. A Ceilidh (pronounced Kaylee), for those of us unpracticed in Gaelic, is a traditional gathering. If you’re one of those with rusty, or non-existent Gaelic, you probably won’t understand a lyric of Prince George native Andrew McFayden’s music, but it shouldn’t take away from your enjoyment of his traditional Celtic sounds. While McFayden prefers his Gaelic music straight, the raucous King Crow and the Ladies from Hell prefer to mix it with modern instrumentation, flirting with rock

and gypsy tunes along the way. Troy MacGillivray and Friends will bring the east-coast flavour to the ceilidh with fiddle, piano and even a bit of step-dancing.

On Sunday, the festivities move to the P.G. Playhouse, quieting down for a couple of soulful singer-songwriters in an intimate evening of Aboriginal Artists.

Don Amero sits firmly between new country and singer-songwriter earnestness, while Diyet falls in the more traditional singersongwriter territory, with a few nods to roots music.

Monday and Tuesday feature T.B.A. local talent, moving once again, this time to ArtSpace.

Mid-week Dala and Ewen Dobson take the torch and run with it. Dala follows in the footsteps of Feist, with pop-y folksy songs that should put a smile on the most dour of faces. Dobson, something of a guitar

ninja, plays classic guitar like ringing a bell, fast enough at times you would swear Phil Spector’s overdubbed his tracks.

The night’s genre will snap back to singer-songwriter vibes on Thursday, with U.K. artist Jake Morley, an upbeat solo artist and guitarist. Matt Epp will fly the Canadian flag on the night, filling big boots as he’s been compared to some of the past greats – Cohen, Young, Mitchell, Lightfoot and the like. Referred to as a folk festival, Coldsnap covers just about every genre throughout, though it goes back to its roots on the penultimate night with Pharis and Jason Romero and the Daniel Lapp Trio. Pharis and Jason Romero, hailing from Horsefly B.C., keep the tradition of folk, hearkening back to the banjo and bathtub bass of bluegrass and old country, while

the Daniel Lapp Trio stray more to the Celtic folk, with their fiddles.

The Coldsnap will end back in the Ramada Ballroom by starting the next cultural festival, with ‘Danse, danse, danse.”

Coldsnap partners with Le Cercle des Canadiens Francais de Prince George for the final day Coldsnap/beginning of the FrancoFun Winter Festival. Vazzy and Yves Lambert both carry the torch for traditional French music. Vazzy plays an unmistakably east coast sound, as an Acadian, while Lambert trips back to the roots of what most think of as ‘French’ music.

Though that covers the main stages, the fun and shows don’t stop there. Additional workshops and side shows take place around town. For information on all the peripheral happenings, go to the Coldsnap website at coldsnapfestival.com.

Attention: Social Service Providers The Quesnel Women’s Resource Centre has received a research grant from Status of Women Canada to do research into violence and abuse in the lives of local women and girls. This is a 3-year project that will include women and girls of all ethnic backgrounds, women with disabilities and elderly women. We will be doing interviews, focus groups and online questionnaires to determine what resources are available, why women access certain services and not others and stigmas that prevent them from receiving services. Impaired judgment

T

he RCMP CounterAttack road check program in December is a Christmas holiday tradition.

And it’s time Cariboo residents residents got its message.

CounterAttack, which is aimed at getting impaired drivers off the road, is 35 years old this year, having started back in 1977.

The year before CounterAttack started – 1976 – more than 300 people were killed in impaired related crashes every year in B.C. Attitudes toward drinking and driving, of course, have changed considerably, and the RCMP keep repeating their message about its dangers, their repeated enforcement campaigns and how getting impaired drivers off the road remains a top priority.

But in the 35 years since CounterAttack’s inception, an average of 113 lives are still lost each year, and impaired driving remains the second leading cause of car crash fatalities in B.C. Statistics released by ICBC show that, between 2007 and 2011, there were an average of 36 impairedrelated crashes in the Southern Interior.

That’s the most of B.C.’s four regions (32 in Lower Mainland, 25 in North Central and 21 on Vancouver Island). The message is being heard, but not heeded in our region.

And that’s head-scratching. Because given the tough financial penalties, the possibility of a criminal record and the potential for loss of life, it’s a wonder anybody gets behind the wheel at all after having had several drinks.

So take the advice of RCMP and the CounterAttack program.

Don’t drink and drive, not just during the holidays but any time. Plan ahead, use alternate transportation or use a designated driver.

Let’s all have a safe Christmas season.

n today’s world, where the internet and social media are such a powerful force, anyone’s life can randomly change by sheer virtue of its astounding influence.

The recent story of the royal hoax that led to a tragic suicide illustrates that.

But does blaming the DJ’s behind the prank make any sense?

If the internet is a fair barometer, I’m going to guess that roughly half the people reading this will say yes, and half will say no, and there will be a lot of passion behind some of those opinions.

I am one of those who would emphatically say no.

The suicide victim was the nurse who answered the phone when a couple of goofy radio hosts called in from Australia.

Impersonating Queen Elizabeth and Prince Charles, the duo rang the hospital where Kate Middleton was a patient, and to their surprise they weren’t hung up on.

Instead they were transferred to another nurse who answered some of their silly questions about Kate’s “little tummy bug” and

When I first heard the recording I was amused that the pair was able to keep the call going for any length of time given their preposterous performances.

The gag seemed harmless and lighthearted despite the initial controversy over impersonating the monarchy and violating their privacy.

Of course, that was before someone died and hate hit the web.

After reading a few days later that the first nurse had killed herself, my heart went out to her and the family she left behind.

I hadn’t seen her name published before, and knowing little more than that, I suspected there must have been some deep-seated issues for her to voluntarily end her own life.

I am still trying to think of one comedian, or even one person for that matter, who hasn’t unintentionally hurt or humiliated someone at least once in their lifetime.

Perhaps every joke that could possibly be taken the wrong way by someone will also be banned.

It’s conceivable we’ll all learn to live in fear of saying, doing or writing something that might drive someone else tragically over the edge.

I doubt that will happen though.

We’re not meant to live in a bubble, and as long as we try to refrain from purposely harming others, that’s the best we could ever hope for.

When I then read the tremendous outrage and vilification directed at the DJs, as if they were to blame, my heart went out to them as well.

It is not their fault that Jacintha Saldanha made such a devastating and deadly decision.

It was her unfortunate choice and there is no way they could have foreseen such a drastic and unhealthy reaction to a stunt that was intended to amuse their local morning show listeners.

If they had predicted their prank would result in the appalling outcome that it did, they never would have made that call.

Mel Greig and Michael Christian are now horribly scarred by this tragedy and they have become victims themselves.

For all those who condemn them, saying they are the ones that have blood on their hands, please imagine for a moment what would happen if they now chose to commit suicide.

Would all the people who publicly bullied and blamed them on social media and in the press be responsible for their death?

W

hen the Federal Department of Fisheries and Oceans installed the salt-water tank in the Nature Education Centre in 2006, they never envisioned that tank to become a nursery, however, that’s exactly what happened beginning in September.

“The tank was designed for the program Sea to Stream to teach the public about life in inter-tidal areas of the ocean,” Erin Robinson, NERC coordinator said.

“The tank was stocked with primarily invertebrates with one scuplin fish.”

This colony include several sea anemones of which one set of parents have given birth to a tiny offspring.

Now, before anyone gets excited about this seasonal birth, the little one is just that, very little, hardly a speck in its rock nursery at the bottom of the tank.

“This baby is the first in-tank birth at the centre,” Robinson said.

“Sea anemone births in captivity are extremely rare.

Just having anemones in captivity is rare as there are regulations as to who and where these creatures can be housed outside their natural habitat.”

She said in early October she noticed both the male and female anemone were releasing stuff, the female sort of gelatinous eggs and the mail rope-like strands.

“At first I thought something was wrong,” Robinson admitted.

“However, when I noticed the gel balls floating around and then one had settled under the rock ledge, I figured it was a baby. Although at that stage it looked like a pink smear.”

Now the baby is at least four times bigger than when she was first noticed.

Robinson has decided the baby’s birthday is Nov. 8, the date Robinson figured the gel egg became viable.

Sea anemones are difficult to determine gender but Robinson said they’ve been referring to the baby as “she.”

“Maybe because of its pink colour,” she said with a smile.

Sea anemones were one of the first creatures to appear on earth. They are basically a small sac (polyp) attached to the bottom by an adhesive foot, with a column shaped

body ending in an oral disc.

The mouth is in the middle of the oral disc, surrounded by tentacles armed with unique cells that function as a defense and as a means to capture prey by stinging and releasing a toxin.

When the hair is touched, it mechanically triggers the cell explosion which fires a harpoon-like structure, with attaches to organisms that trigger it and injects a dose of poison in the flesh of the aggressor or prey.

This gives the anemone its characteristic sticky feeling.

Although similar to jellyfish, they remain attached to a surface whereas jellyfish float around. Sea anemones are also similar to coral except they are bigger and live as live, solitary somewhat mobile polyps rather than part of a fixed colony.

They take in oxygen and expel carbon dioxide and reproduce by dividing into two pieces (fission), by budding and by eggs.

Eggs and sperms are formed in partitions in the body cavity and ejected through the mouth. The eggs are fertilized by sperm in the water.

The fertilized egg develops into free-swimming larvae which develops into an anemone.

“Sea anemones are very hardy, surviving in the extreme tidal conditions,” Robinson added.

“They are also relatively selfsufficient.”

Robinson cleans the 178-litre salt-water tank once a week.

She replaces just half the salt water and the inhabitants, include the baby anemone, stay in the tank. She also feeds each

creature separately every couple of days.

That includes the sea anemones, starfish, sea cucumbers, sea urchins, hermit crab (of which one is blind making feeding particularly difficult), mussels, oysters, shrimp and barnacles – oh and the sculpin who must catch his food as it floats (that’s just how he functions.)

However, baby anemone has no name and the NERC staff are hoping the public will help. Name nominations are being accepted until the end of January and the child whose name is chosen receives a prize.

Even before baby anemone came along, Robinson said the salt-water tank has provided thousands of hours of enjoyment for visitors to the centre in West Fraser Timber Park.

“The tank is constantly changing and always fascinating,” she said.

And if you’re very lucky and the timing is right, you might just have a chance to hold one of the creatures, its an amazing experience.

hen I first came to Quesnel in 1970, logging and forestry were still in their fledgling stages, even if we all thought differently at the time.

A logging show then consisted of a road building cat, two or three hand falls, a couple of rubber-tired skidders and a small track skidding machine, a marker and bucker man coupled with a loader and two or three logging trucks.

This group of 12 to 15 very hard-working people would produce from six to 10 small truck loads of logs each day. You might remember the trucks of that era as pole-axle trailers, a

Historical Footnotes five-axle truck/trailer combination capable of hauling 50 – 60foot logs. There were also some six-axle short-log truck trailer combinations to handle short logs required for plywood plants at the time.

Flash forward to 2012. Equipment manufacturers have now developed powerful falling machines coupled with large and versatile skidding equipment capable of moving large bundles of timber to the main road. From there, a

processor de-limbs and cuts the tree into short lengths, sorting the logs into piles based on where they will be delivered. The final stage is loading the logs onto trucks using a large butt-ntop loader.

This new era logging sees roughly half of the manpower producing two to three times the amont of wood. Logging contractors today have a huge investment in specialized equipment, requiring trained operators working as a team to get the logs to the mill. One of the biggest positives in modern logging is the safety factor in getting people off the ground and into the protected cab of a

machine.

The log trucks we see on our highway today are usually seven to eight-axle short log trucks carrying three or four

Gordon Russell segments of shorter wood to either a sawmill or plywood plant. The trucks are now capable of hauling nearly double the payload of the 1970s era haulers, which has helped minimize large truck traffic on our highways and logging roads.

So has the industry made progress over 40 years? Of course it has, in both the methods used and the footprint left on the ground. Will it develop further in the years ahead? You bet it will, as we recover from the beetle impact and move into younger second growth forests. Just watch!

FOL looks back and to the future

regular Friends of the Library year end meeting was held at 7 p.m. Dec. 6 in the program room. As well as reviewing the past year, future plans for programs and library usage were discussed.

Due to the success of a designated day, Thursday will continue to be Friends of the Library Day. The popular yarn club meets regularly in the program room on the second and fourth Thursday of the month. A discussion group met on the third Thursday at 1 p.m.

Although attendance was small, discussions were interesting and in depth.

The topics were advertised on the white board located at the entrance to the program room. Due to health issues, the current coordinator resigned from this position. The FOL would very much like to reinstate this program. Anyone interested in keeping the program active, contact Dorrie Havens, 250-7471453 or email havens@telus.net.

Special thanks to Rick Raynor and the Boy Scouts for their assistance. Proceeds from past sales have assisted with the purchase of genealogy equipment, two Brodart carts and a presentation screen.

The Friends of the Library annual general meeting is scheduled for 7 p.m., Feb. 28, 2013.

This will be an enjoyable evening in that along with the usual business portion of the meeting, some live music will be featured. As well, a dessert refreshment will be served.

Christmas war W

hen we prepare for Christmas service we often are drawn to Christmas cards with a peaceful scene. It might have been one of a snow-covered house with warm inviting lights within. It might be a manger scene. A card might include the words, “…peace on earth, good will toward men.”

For mankind, Christ’s gift was to bring peace but it wasn’t the kind of peace we normally think of here on earth.

What God did by sending his Son Jesus to be born as a baby was to initiate an attack on the spirit world that was akin to what “blitzkrieg” was to allied forces fighting the Nazi army.

Revelation 12:7 talks about this war in the heavenlies.

It was huge but completely unseen by the human eye.

It was a war that so enraged Satan that he, “…went off to make war against…those who obey God’s commands and hold to the testimony of Jesus.”

Christians face this opposition every day.

Much of the time they don’t even know it.

But it was much more than the birth of Jesus.

It was his death and resurrection that sealed Satan’s final defeat and destiny.

Jesus proclaimed victoriously, “it is finished” (John 19:30) from the cross.

This proclamation wasn’t just for the people around the cross it was for all of creation, his victory cry, his work complete.

This Christmas, my wish is for you to experience the peace that is offered to you.

Not a peace from war, trial or calamity but “…the peace of God, which transcends all understanding…” (Phillipians 4:7).

It is the kind of peace we have with God because of the sacrifice of Jesus on our behalf.

Hazel Esther Williamson February 25, 1920 - December 9, 2012 We regretfully announce the passing of Hazel Esther Williamson on December 9, 2012.

Budworth Laverne Merz Oct. 24, 1927 ~Dec. 12, 2012

We regret to announce the passing of a Quesnel pioneer, Budworth Laverne Merz. Bud was born October 24, 1927, one of “Dr. Baker’s babies”.

Bud is predeceased by his mother, Minnie & infant brother (1937), his dad, Walter (1966), sister Jean (1990).

He is survived by wife of 53 years, Yvonne, son Robert (Lizette), daughters Christine (Ben) and Carol (Raven).

Grandchildren Kati & Kevin, and great grandchildren Edan & Naomi.

Service to be held at Clayton’s Funeral Chapel, Wednesday, December 19th at 11 am.

Hazel McKay was born in Lomond Alberta on February 25, 1920. She was raised, schooled and lived on her parents farm in Lomond until WWII broke out and then went to help her bother Ross on his farm in Bow City. After the war, Earl Williamson returned from overseas and swept her off her feet. They were married in 1946, raised four boys which grew to 11 grandchildren and presently 13 great grandchildren. In 1964, after 17 years of working a farm in Bow City, they moved their family to Quesnel. Here she held a number of jobs, most notably as a floor clerk in Marshall Wells. After Earl retired in 1984, they did a little

traveling, gardening, fishing, volunteering with the Legion’s Ladies Auxiliary. Hazel just plain enjoyed life, friends and being number one grandma to her family to the fullest she could; she will rest in peace.

A Celebration of Life will be held on December 17, 2012 1:00 PM at the Quesnel Royal Canadian Legion Hall with a tea to follow.

In Lieu of flowers, donations may be made to the Alzheimer Foundation or a local charity of your choice.

Making the goal

Bantam Thunder punch above their weight JONAS GAGNON Observer Reporter Through chance, the tier three bantam Thunder were invited to the tournament, which was hosted by the tier one Prince George team, to play against a raft of tier two teams. And the boys represented their team well in the tournament, finishing second over all.

Knowing the challenge going in, the team set a goal of playing six games, an amount that would require them to play all the way to the finals.

"We took it as a challenge to see how our team could measure up to those teams," Thunder coach, Allen Slaney said.

The first game of the weekend, the Thunder met Fort St. John. The game, while close, was ultimately won by the Fort St. John team, 4-3.

The team bounced back against Smithers.

Giving no quarter, the Thunder bore down, taking the game 3-0 after 60 minutes.

The Thunder then faced Williams Lake. The game mimicked their first, with Williams Lake sneaking the win, topping the Thunder's three goals with their four.

Prince George, the eventual winner of the tournament, proved to be the biggest challenge.

The tier one team would go on to win the tournament and their strength showed in the game, in which they doubled the Thunder's three goals to win 6-3.

The win against Smithers was good enough to make it into the semi-finals, where the Thunder regrouped to play against Williams Lake once again.

The Thunder reversed their previous score with

the Williams Lake team in a nail biting conclusion. Down to the last minute of play the score was tied at three for each team. With 48 seconds left, Myles Mattila scored to put the Thunder ahead and take the game.

That win marked the Thunder meeting their challenge, as the sixth and final game was now assured.

In the finals, the Thunder came up against Prince George once again. The Thunder, tired by the relentless pace of the games over the three days, rallied once again. Prince George, however, proved too much for the team, taking the game 4-1.

For their sustained effort, the Thunder came out of the challenge sitting pretty in second.

Cole Slaney, Keith Redden and Brant Powell finished the weekend with an impressive six points.

The team was rated quite high in tier ‘B’ and so decided to challenge themselves.

The U14 girls didn’t manage to win during the tournament, but came out with a great experience and an understanding of what they needed to work on.

For the record Dalton Starr will be taking part in Rumble #17 this weekend.

Tasty recipe for keeping holiday weight gain away With the holiday season and its many indulgences behind us, many people may be feeling a little more than guilty when they start taking into account the number of calories accumulated over lavish dinners, parties and bottomless bottles of wine. It’s no surprise that shedding unwanted extra pounds is one of the top New Year resolutions amongst many Canadians.

Even with post-holiday consumption remorse, it’s hard at times to feel motivated to maintain a healthy diet. However, with some clever choices, Canadians can enjoy some of life’s more savoury pleasures without sacrificing quality or taste. One way of cutting down calories is by making simple meal or ingredient substitutions.

Using lemon juice and extra virgin olive oil for salads heightens flavours and not the calories of a pre-made dressing from the grocery store. Another easy way to stay healthy is to substitute quinoa for rice, which is high in fibre and iron. Many people cut out wine as a New Year resolution in hopes of cutting back on unwanted calories. Today, however, there are good quality wines that have lower calories per serving than the average glass Enjoy your meal, for example, with a crisp and refreshing glass of wine like skinnygrape by Roundpetal Wines a division of

Take a look at this savoury dish to pair with skinnygrape Pinot Grigio: Lemony Quinoa Ingredients:1/4 cup chickpeas, drained1 cup quinoa2 cups watersea salt to taste1/4 cup fresh lemon juice1/4 red onion chopped1/2 cup chopped cucumber(seedless)1/4 cup chopped tomatoes1/4 tsp cayenne pepper1/2 tsp ground cumin1 bunch fresh parsley, choppedMethod:In a saucepan, combine the quinoa, water and salt. Bring to a boil, then reduce heat to medium and cook until quinoa is tender and water has been absorbed, about 10 minutes.

Cool slightly, then fluff with a fork. Transfer the quinoa to a serving bowl and stir in the chickpeas, lemon juice, cucumber, onion, tomatoes, cayenne pepper, cumin and parsley. Adjust salt and pepper if needed before serving.

Warm the coldest days with tomato, lentil soup

No one knows the ins and outs of cooking with tomatoes better than celebrity chef David Rocco.

As a “Tommalier” – a tomato expert – Rocco uses tomatoes as the base ingredient for the freshest, most flavourful dishes, from sauces to soups and stews.

When selecting the best tomatoes for a memorable meal, Rocco advises cooks need not feel guilty for using canned tomatoes or tomato paste – the tomato harvest season is short in Canada, and the ones in the can are picked at their peak so they’re ripe and flavourful.

Tomatoes form the base of David Rocco’s warming soup, a deliciously simple one-pot meal ready to serve in a little over 20 minutes.

David Rocco’s Tomato and Lentil Soup Ingredients:

4 tbsp (56 ml) extra virgin olive oil 2 garlic cloves, chopped 1 bunch of fresh flat leaf parsley, chopped 2 fresh chili peppers, chopped 2 cans (28 oz/796 ml) peeled plum tomatoes, such as Hunt’s Original Diced Tomatoes 1 can (19 oz/540 ml) lentils, drained and rinsed Salt, QB Pepper, QB 1 tbsp of tomato paste, such as Hunt’s Original Tomato Paste Water Directions In a saucepan, heat olive oil.

Add garlic, parsley and chili peppers and sauté for a few minutes until the garlic has started to turn golden.

Pour in the diced tomatoes.

With the back of a wooden spoon, break up the tomatoes into little chunks.

You can decide the consistency. Then add in the rinsed lentils, salt and pepper.

Add tomato paste, and then add water about 1/2 an inch above the lentils; stir well.

Bring to a boil, then lower to medium heat and cook for 20 minutes until the soup has thickened.

Hunt’s Tommalier Tip: It’s a tradition to make tomato lentil soup with sausage on New Year’s Day as it is supposed to bring good luck for the year ahead.

For a heartier version that does not betray the soup’s cucina povera roots, break up some sausage and let it slightly brown, just before you add in the tomatoes. www.newscanada.com

Cariboo Critters Christmas

Snowball fights instead of Christmas preparations This is the fifth installment of the Cariboo Observer’s Cariboo Critters Christmas. Watch for the continuing story.

ack at the candy cane at the North Pole, things were starting to snowball, in some cases literally.

Some of the elves, unsure which toys they should be making because of the mail mix-up, had started a three-day running snowball fight that had affected everyone from the mechanic elves to the big man himself as it raged across the North Pole.

This, of course, slowed down jobs that weren’t making any headway in the first place.

The mechanic elves where in the middle of taking apart the sleigh

when a stray snowball zipped through the open garage door and slammed a coveralled elf smack dab in the face.

“What was that,” he asked, wiping the snow from his face.

“I believe that was a…” started another mechanic.

Zip! In another snowball flew and hit the other mechanic in the back of the head. “…snowball,” he finished, arching his back as cold slush slipped down his neck and under his shirt.

A young elf poked her head into the shop and giggled.

“Now wait here missy,” a mechanic said.

“What’s all this snowball business about.”

“It’s a battle,” she said.

“Shouldn’t you be

making toys?”

She didn’t answer, but ducked a third snowball and ran outside.

The mechanics saw this was no time to work and ran outside to take part in the pitched battle.

Even the reindeers got rolled up in the mess of slush, except Rudolph, who was busy polishing his nose in case it might be needed.

The rest of the young ones were making forts, pushing around snow, plough-like, with their antlers as they couldn’t manage to create their own snowballs with their hooves.

The antlers, however, made better ploughs than you would think and the reindeers proceeded to make some large and quite glorious snow forts in which to protect

themselves.

The elves, upon seeing this, opened up negotiations.

“Hullo up there,” an elf yelled up to the ramparts of quite a large, to an elf at least, snow fort.

A reindeer peered over the wall, keeping low so as not to be ambushed.

“What would you like?

We may not be able to throw snowballs, but if you so much as toss a single snowflake over these wall we can plough them down and cover the lot of you in snow,” she yelled.

“Not at all,” the elf replied, running about, dodging and weaving as snowballs flew about his head.

“You see, I’d like to offer you a reciprocal agreement of sorts. If you let the five of us in,

we’ll defend the castle.

We’re ever so good at making and throwing the snowballs.”

Baff!

The little guy got one in the back of his head.

“Just not so good at dodging them,” he finished.

The reindeer peered out, then yelled back to her cohorts, “open the portcullis.”

The reindeer, opened a somewhat makeshift door on the mighty fortress and let the elves in.

“We could make you some better doors you know,” chimed an elf.

“Ever so better.”

“And a trebuchet as well.”

Outside, another elf peered on, then ran off to tell some friends.

Soon forts with

trebuchets and catapults dotted the North Pole, which is when Santa himself got hit by a load of snow as big as he is.

That could not stand, because Santa, he is the best snow ball shot in the world. Backed by the Mrs., there wasn’t a snowball fight Santa could lose.

The two turned into blurs of red and gold, not a single snowball hitting them as the sniped elves standing on ramparts and looking out windows.

Not half an hour went past before the elves and their reindeer back up were in sore need of some hot cocoa and cookies.
