Simply perfect butter tarts Ingredients: 1/4 c Butter 1/2 c Brown sugar; packed 1/2 tsp Vanilla 1 egg 1/2 c Corn syrup 1/4 c Raisins 1/4 c dried cranberries 12 Tart shells Preparation: In bowl, cream together butter, sugar and vanilla. Beat in egg and corn syrup. Spoon raisins and cranberries into tart shells; pour in the filling, two-thirds full. Bake in 375F oven for 15 to 18 minutes or until lightly browned. Frosty the Snowman Frosty the Snow Man was a jolly, happy soul, With a corncob pipe and a button nose and two eyes made out of coal. Frosty the Snow Man is a fairy tale, they say; He was made of snow, but the children know how he came to life one day. There must have been some magic in that old silk hat they found, For when they placed it on his head, he began to dance around. Oh, Frosty the Snow Man was as alive as he could be. And the children say he would laugh and play just the same as you and me. Frosty the Snow Man knew the sun was hot that day, So he said, “Let’s run and we’ll have some fun now before I melt away.” Down to the village with a broomstick in his hand, Running here and there all around the square, sayin’, “Catch me if you can.”

Classic Potato Latkes 2 pounds russet potatoes, peeled, diced 1 large onion, peeled, diced 1 egg 3 tablespoons all purpose flour 1-1/4 teaspoons salt 3/4 teaspoon pepper 1/2 teaspoon baking powder 10 tablespoons (about) vegetable oil Preheat oven to 325°F. Place 2 baking sheets in oven. Line large bowl with towel. Finely grind potatoes and onion in processor (do not puree). Transfer to towel. Fold towel up around mixture; twist top, squeezing out all liquid into bowl. Let liquid stand 5 minutes. Pour off liquid, reserving any potato starch in bowl. Add potatoes to bowl. Mix in egg, flour, salt, pepper and baking powder.
Heat 6 tablespoons oil in large skillet over medium-high heat. Working in batches, drop 1 heaping tablespoon batter per pancake into hot oil. Using back of spoon, spread to 2-1/2- to 3-inch rounds. Cook until brown, about 3 minutes per side. Transfer to baking sheets in oven. Repeat with remaining batter, spooning off any liquid from surface of batter and adding more oil to skillet by tablespoonfuls as necessary. Serve hot.

Welsh Cakes Ingredients: • 4 oz. (120 g) margarine • 8 oz. (240 g) flour • 4 oz. (120 g) currants • 3 oz. (90 g) sugar • 1/2 tsp. mixed spice • pinch of salt • 1 egg beaten • little milk Rub margarine into flour, add all other ingredients using enough milk to make soft dough. Knead lightly and turn onto floured board and roll out to about 1/4’’ thick. Cut into rounds and bake on a moderately hot greased griddle (or in an iron frying pan) until lightly brown, about five minutes each side. Cool on a wire tray. Recipe supplied by Mareth’s Hair Studio

AFrican Stew 4 cups vegetable stock 1 chopped onion 2 cloves garlic minced 2 cups yams diced 1 cup chickpeas cooked 1/2 cup brown rice 1/4 tsp. sea salt 1/4 cup peanut butter 2 cups kale 2 tbsp. lime juice Tamari or soy sauce (optional) Chili sauce Sauté onions and garlic in 1 tbsp. olive oil in a large pot over medium heat. Heat for 5 minutes. Add stock, yams, chick peas, rice and salt. Simmer for 45 minutes. In small bowl blend peanut butter and 1/2 cup of liquid from stew to make a smooth paste.
Stir in stew along with kale and cook for 5 minutes. Stir in lime juice, tamari and chili sauce to taste. This is a vegetarian dish and is excellent.

Christmas S’mores 12 chocolate graham crackers 3/4 cup butter 3/4 cup firmly packed brown sugar 3 cups miniature marshmallows 1 cup red and green M&Ms Preheat oven to 350ºF. Line a 15x10x1 inch jelly-roll pan with aluminum foil leaving a 1 inch overhang on ends; spray foil with no-stick cooking spray. Place graham crackers onto foil so sides touch. Melt butter and brown sugar in 2 quart saucepan over medium heat, stirring constantly, until smooth and mixture just comes to a boil (4 to 6 minutes). Pour evenly over crackers. Bake for 5 to 6 minutes or until bubbly. Remove pan from oven; sprinkle with marshmallows.
Continue baking until marshmallows begin to soften (2 to 3 minutes). Sprinkle with M&Ms. Cool completely. Lift from pan using foil and cut into bars.

White Chocolate Oreo Fudge Ingredients: Box of Oreos; broken in chunks & divided 1 (14oz) can sweetened condensed milk 2T butter 2 2/3C white chocolate chips 1.5t vanilla Preparation: Greased cookie sheet. Place half of broken cookies in pan. Melt in saucepan: butter, chips, milk. Stir over low heat until chips are melted. Remove from heat, stir in vanilla. Pour over cookies in pan. Wendy’s Gourmet Cheese Thumbprints with Hot Red Pepper Jelly Glaze Enjoy a burst of savory and spice this Christmas Season! 2 cups of shredded Mexican-style blend cheese 1 cup shredded Parmesan cheese 1 cup crumbled Feta 6 tablespoons cream cheese 6 tablespoons soft butter 2 cups gluten free (or regular) flour 2/3 cup hot red pepper jelly Either by hand mixer or food processor cream the butter , cream cheeses and cheeses and add flour until mixture forms a soft dough. Gather up dough and divide into 4 balls and roll until about 1 inch by 10 inch . Then wrap in wax paper and freeze about 40 minutes. Line cookie sheets with parchment and preheat oven to 400 degrees.
Remove dough and roll out small balls about 1 inch and place on lined sheets about 1 inch apart. Bake for 5 minutes. Remove and poke an indent or “thumbprint” in middle. The handle of a large wooden spoon works great! Place a 1/2 tsp of red pepper jelly into middle of each cookie so it overflows on the top. Bake for another 10 minutes until tops are lightly browned. Cool completely. Makes about 40 cookies. Store in refrigerator. Courtesy of Wave Dentistry

Peppermint Cookies • 1 cup whipping cream / heavy cream • 1 cup sugar • 1 egg • 2 tsp. baking powder • 2 tsp. peppermint extract • 3 cups flour Cream together the heavy cream, sugar and egg. Do not whip cream beforehand. Add baking powder, peppermint extract and flour Mix together into a soft dough and roll out and use small cookie cutters. Bake at 350 degrees for 10 minutes or until bottoms are barely brown. Ice with pale green icing and dust with coconut. Courtesy of Gallery 24

Kourabiedes (Greek Shortbread Cookies) • With floured hands, shape dough into 1 ½ inch balls • Stick a whole clove into the centre of each ball (optional, but adds charm and flavor) • Place on baking sheet and bake in pre-heated oven for 15 minutes (should be golden) • Let cool slightly and sift icing sugar over all cookies (looks like snow)
Ingredients: 2 cups butter, softened ¾ cup icing sugar 1 egg yolk 1 ounce brandy, cognac or ouzo ½ cup chopped, toasted almonds (toast in oven until golden) 4 ½ cups flour, sifted whole cloves (optional) Icing sugar for sifting onto cookie Directions: • Set oven to 350 degrees to preheat • Cream butter until light and fluffy • Gradually add sugar and beat until well blended • Add egg yolk, brandy and toasted chopped almonds • Gradually add flour a little at a time to make a soft dough
*don’t forget to remove clove just before eating Yield: 4 – 6 dozen
Kourabiedes(koo-ra-be-edes) can be tasted in all parts of Greece at this time of year and is the Greek version of the popular Christmas shortbread cookie. This recipe was handed down to me by my mother, Loula Manolopoulos, the founder of the popular Cosmos Greek Restaurant. I hope you enjoy them!

You will need: • 1.7 metres cotton fabric 112 cm wide • 1 spool woolly nylon and 2 spools coned thread Cutting layout (fabric is folded in half): to match your fabric To make cutting easy: • 1 large Olfa cutting mat • 1 Omnigrid 15”x15” square ruler • 1 Olfa rotary cutter with a new blade Rolled hem serger setup: You will be using only 3 threads, please remove left needle and left thread. Right needle - coned thread. Upper looper - woolly nylon. Lower looper - coned thread. Please check your instruction book for recommended rolled hem settings for your serger. Serge along 1 edge of each napkin, pulling the fabric slightly from in front and behind to create the ruffled edge. Liver Dog Treats & Festive Dog Treats Liver Dog Treats Put the following four ingredients into a blender and purify: 1/2 to 3/4 of a pound of chopped/sliced liver 3 cloves of garlic 1 tbsp oil 2 eggs including the shells Pour the liver mixture into a bowl and add: 1 cup flour (all purpose, whole wheat, rice, bean) 1 1/2 cups of corn meal Mix everything together and grease a cookie sheet REALLY well or use parchment paper. Spread the mixture on the pan with a wet hand. Bake at 350ºF for 45 minutes or until medium brown. Cut into squares and return to the “off” oven to dry out for another 10 minutes. These treats must be kept frozen. Courtesy of Dog Utopia Retriever, Retriever pumpkin eater. Festive Pumpkin Dog Treats 2 eggs 1/2 cup canned pumpkin 2 tablespoons dry milk 1/4 teaspoon sea salt
2 1/2 cups brown rice flour (or any flour of your choice) Optional: 1 teaspoon dried parsley OR 1/2 teaspoon of cinnamon and/or nutmeg Preheat oven to 350. In large bowl, whisk together eggs and pumpkin to smooth. Stir in dry milk, sea salt, and dried parsley (if using, optional). Add brown rice flour gradually, combining with spatula or hands to form a stiff, dry dough. Turn out onto lightly floured surface (can use the brown rice flour) and if dough is still rough, briefly knead and press to combine. Roll dough between 1/4 – 1/2” – depending on your dog’s chew preferences, ask first – and use biscuit or other shape cutter to punch shapes, gathering and rerolling scraps as you go. Place shapes on cookie sheet, no greasing or paper necessary. If desired, press fork pattern on biscuits before baking, a quick up-and-down movement with fork, lightly pressing down halfway through dough. Bake 20 minutes. Remove from oven and carefully turn biscuits over, then bake additional 20 minutes. Allow to cool completely on rack before feeding to dog. Courtesy of Dog Utopia

Jimmy Flynns Spiced Nuts 2 cups chopped pecans 2 cups chopped, salted cashews 1/4 cup butter 1/4 cup water 1 tsp. pepper 1/2 tsp. cumin 1/2 cup brown sugar Mix sugar, butter, water in sauce pan. Bring to boil for 4 min. Add spices, nuts and stir well. Bake on non-stick baking sheet for 10 min., at 350 degrees. Let cool. Cinnamon Shortbread Crescents Ingredients: 1/2 lb. soft butter 1/3 cup white sugar 1/2 cup ground pecans 1tsp vanilla 1 and 2/3 cup white flour pinch of salt - in separate bowl mix 1/2 cup white sugar and 4 tsp. cinnamon Mix the first 6 ingredients and chill 10- 15 minutes in fridge. Flour hands very well and have a small amount of flour on hand if dough gets too sticky. Roll small amounts of dough into 2 inch rolls with the thickness of a finger. Gently shape into a small crescent shape, similar to the shape of a croissant, but tiny. Arrange on a cookie sheet covered in parchment paper and chill for 30 minutes in fridge. Bake at 325 degrees for 20 minutes or until just golden

Homemade Mac and Cheese 2 cups uncooked elbow macaroni 1/4 cup butter or margarine 1/4 cup all purpose flour 1 tin Campbells tomato soup 1/2 tsp salt 1/4 tsp pepper 2 cups milk 2 cups shredded cheddar cheese 1. Heat oven to 350F degrees. 2. Cook macaroni as directed on package. 3. While macaroni is cooking, melt butter in 3-quart saucepan over low heat. Stir in flour, salt, pepper and cook over medium low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat and stir in milk and half of the tin of tomato soup. Heat until almost boiling. Remove from heat and stir in 1 cup of cheese, stirring occasionally, until cheese is melted.
4. Drain macaroni, gently stir macaroni into cheese sauce. Pour into ungreased 2 quart casserole. 5. Let macaroni cool slightly and take the other half of tomato soup and spread over macaroni until evenly coated, take the other cup of grated cheese and sprinkle on top. 6. Nana’s Ginger Cookies
Ingredients: 2 cups flour 2 tsp baking soda 1/2 tsp salt 1 tsp cinnamon 2 tsp ground ginger 1/2 cup white sugar (reserve) 1 tsp cloves, crystallized ginger 4 tbs molasses 1 egg 2/3 cup oil 1 cup brown sugar

Fruited Brazil Nut Loaves
Makes two loaves
• 1 1/2 cups (375 ml) dried figs • 1 1/2 cups (375 ml) dried apricots • 1 cup (250 ml) candied pineapple • 1/2 cup (125 ml) candied cherries • 1/2 cup (125 ml) chopped preserved ginger • 1 cup (250 ml) all-purpose flour
• 1 cup (250 ml) packed brown sugar • 1 tsp (5 ml) baking powder • 3 cups (750 ml) whole shelled Brazil nuts • 4 eggs • 1 tsp (5 ml) vanilla
PREPARATION: Line two 8- x 4-inch (1.5 l) loaf pans with foil; grease well and set aside.
remove from pans and let cool completely on racks. Loaves can be wrapped well and refrigerated for up to two weeks.
Pour boiling water over figs and apricots; let stand for 5 minutes. Drain and chop into large pieces. Cut pineapple into chunks. Halve cherries. In large bowl, mix together figs, apricots, pineapple, cherries, ginger, and Brazil nuts. Stir together flour, sugar, and baking powder; add to fruit mixture and toss to mix. In separate bowl, beat eggs well; stir in vanilla. Add to fruit mixture and mix well; spoon into prepared pans. Bake in 350°F (180°C) oven for 1 hour or until cake tester inserted into centre comes out clean. Let cool in pans on racks for 10 minutes;

Directions Preheat oven to 325 degrees F (170 degrees C). Cream the butter, sugar, syrup, vanilla and eggs well. Add remaining ingredients and mix thoroughly. Pour batter into tart shells, no more than half full. Bake for 20-25 minutes. Watch carefully! – they’ll burn quickly.

Kitty Cat Cookies • 1 cup whole wheat flour • 1/4 cup soy flour • 1 tsp. catnip • 1 egg • 1/3 cup milk or cat’s milk • 2 tbsp. wheat germ • 1/3 cup powdered milk • 1 tbsp. unsulfurated molasses • 2 tbsp. butter, vegetable oil or canola oil Preheat oven to 350 degrees F. Mix dry ingredients together. Add milasses, egg, oil and milk. Roll out flat onto oiled cookie sheet and cut into small, cat-bite-sized pieces. Bake for 20 minutes. Let cool slightly and store in a tightly sealed container. Use as treats for good kitties.

Gingerbread Cookie Gift Bag Traditional Roast Turkey A 13-15 lb. (6-7 kg) turkey serves 6 1 turkey, with giblets • 1 onion, coarsely chopped • A sprig of thyme • 1 bay leaf • 4 oz. (113 g) salted butter • Sea salt and freshly ground black pepper Lemon and Herb stuffing • 2 eggs • 4 oz. plus 1 tablespoon (130 g) butter, melted • A handful of fresh parsley leaves • 1 teaspoon (5 ml) chopped fresh lemon thyme • Freshly grated zest and juice of 1 unwaxed lemon • 4 1/2 cups (1.08 litres) fresh white bread crumbs • Sea salt and freshly ground black pepper
Chestnut stuffing • 14 oz. (392 g) fresh chestnuts • 1 cup (240 ml) milk • 4 oz. (112 g) sausages or sausage meat • 2 tablespoons (30 ml) olive oil • 6 oz. Traditional Roast Turkey (continued) Lemon and herb stuffing: put the eggs, butter, parsley, lemon thyme, and lemon zest and juice in a food processor and blend to a smooth purée. Put the bread crumbs in a bowl, pour over the egg mixture, and mix well. Season to taste with salt and pepper. Chestnut stuffing: cook fresh chestnuts in a saucepan of boiling water for about 3 minutes to soften the shells. Peel them while still hot, wearing rubber gloves. Put the peeled fresh chestnuts in a saucepan, cover them with the milk, and simmer gently until softened, about 30 minutes to 1 hour, depending on how fresh they are. Strain them if necessary, then weigh out 7 oz. (196 g) and put in a bowl. Crumble the cooked chestnuts with your fingers and use the sausage meat to bind them. Heat the oil in a skillet, add onion, liver, and bacon and fry gently until the liver is firm. Stir in the parsley and cook until the mixture begins to brown. Add to the chestnuts with some salt and pepper. Turkey: to make a stock, the day before put the giblets, minus the liver but with the neck chopped in half, in saucepan. Add the onion, thyme, and bay leaf, cover with water and bring to a boil, removing any foam. Reduce the heat and simmer for 2 hours, then strain. Taste and, if necessary, simmer for a little longer to reduce and strengthen the flavour. The next day, wipe out the neck area and cavity of the turkey with a damp cloth and lightly season the inside
with salt and pepper. Spoon the lemon and herb stuffing into the body cavity and the chestnut stuffing into the neck cavity, allowing plenty of room for them to expand. This is particularly important for the neck stuffing. Put half the butter in a saucepan and melt gently. Spread the remaining butter all over the skin of the turkey. Soak the cheesecloth in the melted butter and drape over the bird, with a double layer covering the drumsticks. Preheat the oven to 350°F (180°C). Put the bird in a large roasting pan in the middle of the oven. Roast for the calculated time according to size, except that the oven temperature must be raised to 400°F (200°C) and the cheesecloth covering removed for the last 30 minutes in order to crisp the skin. Remove the turkey from the oven, cover with a tent of aluminum foil, and leave in a warm place to rest while you prepare your side dishes. Using oven mitts, tip out any free juices from the cavity, then lift the turkey onto a serving platter. Pour off the turkey juices from the pan, preferably into a gravy separator or pitcher to be able to lift off the fat, then reheat with the seasoned stock. Serve as is or for a traditional gravy, pour juices into a pan, thicken with a small amount of flour and cook well, stirring to prevent burning. Reserve extra gravy in a Thermos for second helpings. Serve with roasted potatoes, roasted parsnips, candied yams, bacon rolls, cranberry relish, and Brussels sprouts.
