Fringe goes back to school Perhaps the world can be divided between people who loved the first day of school and those who didn’t. There is always that mix of excitement and anxiety: do I wear my new outfit or will that make it look like I’m a dork who actually likes the idea that school has started again? Do I play it cool? Can I even pull off playing it cool? For those looking for advice (or healing), the Fringe Festival can help. Die Roten Punkte

RIOT: reaction & reconciliation Written by Grade 10 students, this show is about the Stanley Cup riot and will be staged in the Woodwards Atrium, under the Stan Douglas mural of another famous Vancouver riot.

Buddhist pet blessings According to Buddhist thought, blessing animals can help reduce the hardships they may face in their lives, and lead to a positive rebirth. On September 1, Kyabgon Phakchock Rinpoche, the supreme head of the Tibetan Taklung Kagyu Buddhist lineage, will conduct the first known pet blessing in Vancouver by a Buddhist lama. A riotous evening of rock, punk and electronic music takes over The Cultch Aug. 28 - Sept. 2, and kick starts their 2012/13 season. After a sold-out run at the 2010 Fringe festival, comedic duo Die Roten Punkte (The Red Dots) are returning to Vancouver with their musical comedy Eurosmash! (think Flight of the Conchords meets Spinal Tap, plus a healthy dose of sibling rivalry). The duo have built a cult fan base during their festival tours around the world, performing infectious indie rock songs about robots who think they are lions, dinosaurs working at fast food restaurants, and breakdancing aliens.

Along the way, their shows have been showered with awards (including Best Production – Montreal Fringe; Best Production (Cabaret) - Green Room, Melbourne; Most Outstanding Production – Ottawa Fringe; and a Total Theatre Award nomination, UK) and revolve around Otto and Astrid Rot, a pair of German orphans whose parents were either eaten by a lion or crushed by a train (the two perpetually argue over which). The accessible musician Dan Mangan opens up about his music and his personal life — he’s about to get married — in new documentary managed to tell a story, which was the purpose of the doc. I’m a little bit shy about how much I’m talking in it, but that’s natural to me.

I

remember the first time I saw you play,” said a fan to Dan Mangan. “You were with Basement Suite and it was in this gymnasium in North Van.” “Whoa, my god,” Mangan said, genuinely impressed that the fan knew Basement Suite, Mangan’s first band. “Yeah, I remember those days.”

This conversation was one of several that Mangan had with admirers during our interview at the screening of What Happens Next?, a documentary on the Vancouver singer-songwriter’s career leading up to a personal-hallmark performance at the Orpheum Theatre last November.

Initially, I had resisted the temptations of Dan Mangan. Mistaking sincerity with smugness, the cynic in me questioned the humility and the let’shave-a-pint aura that partially defined the man.

Musically, he did not have that edge, that bittersweet sincerity I usually look for in artists.

It became, however, difficult to ignore the unavoidable hum of praises sung by friends, critics and even music snobs like myself. After listening to 2009’s Nice, Nice, Very Nice and last year’s Oh, Fortune, I was soon singing the praises to tracks like Sold and Rows of Houses, where I found that edge in the lyrics — there was real some angst and a hurting soul — beneath the pop melodies.

WE: What do you credit all of the recent success to? Is it honesty? Ambition?

Dan Mangan: The purpose is to be honest. That’s it — work hard and be honest. That’s everything.

Masked or veiled coolness only goes so far and that can be short-lived. You have to be honest because that’s the stuff that allows you to have any foothold to stand in.

Adjectives that I’ve heard to describe you include “approachable” and “accessible.” Do you consciously try to deliver yourself in that way?

(Laughs) I don’t put on a mask to be in the spotlight, I’m just me. So maybe it’s in my nature to be accessible, but for me it’s just life. The whole goal is to be yourself. If you are yourself and that self is a compassionate and thoughtful person, then those are good things to strive for.

So was it quite surreal watching the documentary?

It’s weird to watch yourself and then be in the same room as all those people also watching you speak. It’s very exposing but I think [filmmakers] Brent Hodge and Jon Sidall did an amazing job and

What was the documentary’s original purpose?

Well, I think when you start making a documentary, you don’t know what the purpose is and that’s kind of the fun part of it, that’s the craziness of it — figuring out what the story is when you don’t know what the purpose is. I think they were really smart to grab Kenton [Loewon, drummer] and Gord [Grdina, guitarist] and Kirsten [Slenning, Mangan’s fiancée) to be characters in it [for a poker game] and pull it all together. And they took footage from all these different things and made into one cohesive package.

Was the Orpheum show pretty nerve-wracking ?

I don’t really suffer from huge stage anxiety, but there was bit because we were on this big, long tour and this was the final home-coming show. So yeah, there was a lot of anticipation for it.

Dan Mangan says that wherever he is — on stage or at home in Vancouver — he’s always the same person.

In the documentary, you mention how this show was a big piece of the puzzle, professionally. What’s the next piece?

I guess that’s what the documentary’s about. I guess it’s just more music. None of the hoopla exists without the music so I’m just going to get back to writing. In the immediate future, I’m getting married and we’re playing some festivals and we’re doing a Canadian tour with Rural Alberta Advantage. And then we’ll go back to Europe, playing a tour with Jason Collett. Next year, we’re going to take it a little slower with the touring and I’m going to do some film scoring and stuff like that, maybe record another album.

Aside from music, are there any other creative areas that you’re interested in exploring?

I don’t know. I’m just open to the winds of the universe and if they take me in different directions, I’ll just follow my gut. I’ll try some film scoring and I think that my musical journey will have all kinds of different chapters in it. If one day, music isn’t fulfilling me anymore, I don’t have any issues going in a different direction.

Like, other types of writing?

Yeah, maybe. I’m interested in writing fiction – I’m interested in a lot of things.

Not your ordinary boat… or sailor

T

he northwest breeze is picking up on the water off Jericho Sailing Centre. As the 16-foot Martin sailboat starts heeling, her speed quickly increases and the concert of wind and sea gets louder around the small vessel.

At the helm, his clear eyes scrutinizing the horizon and the sails above, is skipper Sam Sullivan.

This is no ordinary captain; this is no ordinary boat, either. In fact, there is not even a tiller or wheel since most controls are done through a joystick or, alternatively, a “sip-and-puff” pipe that allows trimming the sails or moving the rudder.

The Martin 16 is the brainchild of two visionaries: Sullivan, the former mayor of Vancouver, and Don Martin, a boat designer who has to his credit a number of racing designs.

At 19, Sullivan had a skiing accident that left him a paraplegic, with limited use of his hands. A long period of deep despair followed. Years later, as part of his renewal quest and need to help others, he imagined putting severely disabled men and women on the sea and in charge of this most demanding vehicle of escape — a sailboat.

After much door knocking, he found various sponsors who agreed to come on board with the funds, one boat at a time. The next task was to find the right boat designer. Don Martin was up to the challenge and agreed to build a boat with instructions that all necessary maneuvers be brought down to the simplest and most efficient operation.

The sponsorship program continues, and last week a boat sponsored by the Friends of Ferrari was christened and launched by the Jericho Disabled Sailing Association of British Columbia, a volunteerrun organization.

Sitting in the cockpit behind Sullivan, I admire the seemingly simple technology; using just two fingers, he sails the boat away from the beach. On the water around us, flotillas of both able-bodied and disabled boaters sail or race together. As our boat accelerates, leaning with the wind, I can’t repress a grin, and that amazing feeling that all sailors experience once the lines to land are cast and the craft starts moving under her own power.

Comfortably ensconced in his bucket seat, Sam suddenly lets out a joyous “Yippee!” — an accurate expression of that incredible sensation of independence and freedom.

The heart of Rick Hansen Today he’s a Canadian icon but 25 years ago it took a million people lining the streets of Beijing to make the world notice that a hero was being born

I

t’s 1986. Michael French is the producer of BCTV’s Vancouver Show and he’s just been told that a million people lined the streets of Beijing to cheer on Rick Hansen during his Man in Motion tour.

French senses that something big is happening so he calls a few friends, calls in a few favours, and quickly cobbles together a documentary team that flies to China a few days later.

“You know how sometimes you think you know something about a person,” French says in a telephone interview, “and all of a sudden you meet them and it’s a whole different experience than you imagined? When I met Rick [in China], he was on the road. He was wheeling. He was not happy.

He was tired, the wind was blowing, he was beaten up.

“I realized that whether there was one person on the street [cheering him on] or one thousand, his job was still the same — ‘I just gotta get through this day.’ I was astounded to find him living entirely in the moment, focused only on getting through the next mile.

“I think he was holding on minute by minute sometimes.”

That’s the thing about meeting a live-and-in-the-flesh super hero. Because they are doing the extraordinary — like wheeling themselves around the world — you simply assume they were born with some special power, some prenatural ability to do things no other human can do. Maybe it’s a way to justify why you’re not trying to squeeze too many heroic acts into your day. It’s easier to stop questioning whether they have the same weaknesses as most mere mortals.

And then you find out, as French did, that this particular super hero was simply a young, very determined man in agony as he pushed his body to do the equivalent of a marathon every two days.

This is the Rick Hansen you meet in French’s 2010 movie, Heart of a Dragon, which has just been

released as a DVD. Hansen isn’t seeing his quest to circumnavigate the globe in his wheelchair as some sort of mystical vision quest.

He doesn’t get involved in deep, philosophical pontifications about the meaning of life. Instead, Hansen is focused almost exclusively on how he’s going to find the strength to get himself up the long, snaking spine of the Great Wall of China.

Such single-mindedness sometimes blinds him to the people around him — people like Don Alder, who was in the truck with him when a teenaged Hansen lost the use of his legs, physiotherapist Amanda Reid, who would later become his wife, and his cousin Robin Gibson.

Rather than go the Forrest Gump route — superimposing an actor’s image into real-life scenes — French does, quite literally, what only he can do. He takes his documentary footage of Hansen in China in 1986 and weaves it into the story.

He doesn’t use only the shots that could trick the audience into believing that it’s actor Victor Webster in the chair. Instead, film and documentary are woven together, giving the audience credit for knowing

that there’s a difference.

This is not the movie Hollywood would have made. “Based on a true story” would have meant that apart of acknowledging that someone did indeed circumnavigate the globe in a wheelchair, the paths of truth and fiction would rarely converge.

“We decided, ‘let’s tell the story we understood,’” French says of the decision to concentrate on those few days in China. “In the end, our sole objective was that if you see someone struggling, you will take a different look at them.

Rick wanted people to see disability in a way that had never been done before….

“Rick is clearly an athlete. He was hugely inspired by Terry Fox. Then, as he was going around the world, he was hugely inspired by his wife Amanda [who joined the Man in Motion tour as his physiotherapist.] He found people who were in the place he wanted to go. He finds people he respects and learns from them. The Rick Hansen you see now is someone who incorporated the best qualities of those people.”

Reaching your goals: 10 easy tips

By Brad Hardie Chart a course and then revise Take some time to think about the goals that you would like to accomplish. Be clear and make sure they are really the ones that you desire. Research and learn as much about them as you can. Three months from now your goals may look very different than they did from the beginning. Be flexible so that you can alter and rearrange goals that no longer work for you and be open to new ones.

Pen to paper Write our goals down. Studies show that goals are better realized when you actually set a pen to paper. You breathe life into your ideas and make them more tangible. Being able to review a list is helpful in deciding what we really want to pursue.

Scale the goal When setting a new goal make sure it is something that you are genuinely interested in. If you are unsure about a goal then scale the goal from one to 10, one being “I really have no interest in this” and 10 being “Let’s rock this”. If the goal falls anywhere below an eight then I suggest you do one of two things: decide how you can make it closer to a 10, or look at whether it’s really worth pursuing.

Be realistic Taking on goals that you know you simply cannot succeed at will only prevent you from accomplishing the ones you can. Keep your list manageable; don’t make it unreasonably large or daunting. Having a long list of things you want to accomplish may look impressive but can start to feel so daunting that none of the goals get completed.

Timing is everything When looking at your goals, consider when they will start and when they will finish. If you set goals with no timeline, then chances are they may never happen. I encourage clients to use their calendars and fill out several days, weeks or months at a time. It is amazing when you have an idea of what you are doing and when, how much easier the task can seem to accomplish.

Assume the position To succeed at something, you have to commit to it entirely and “assume the position”. As children, we could easily become anything we desired by simply visualizing it with few restrictions. As adults, we have to exercise our inner child more and be open to possibility. For instance, I tell clients if you want to be a great cook, then you must act, talk and channel cooking as if you are a great cook!

Divide and conquer Prioritize. It is best to start with smaller things that will help build momentum. For instance if your list includes “clean desk top” as one of the items, and “clean bedroom” as another, then build momentum by doing your smaller task first, and moving to the larger task second.

Get a different perspective When setting goals that seem daunting, try taking on a new perspective. Ask others how they have accomplished similar goals or how they are working toward accomplishing them. Being open to opinions can save you loads of time and actually give you insight into faster completion of your own goals.

Celebrate When you have accomplished a goal, before setting off on the next one, make sure to celebrate what you have done. It may be as simple as a coffee break or as elaborate as a dinner out. Completing a goal and being rewarded for it will establish positive reinforcement, which makes it more likely for you to continue working down your list.

hat it is about Labour Day that gives us that frisson of excitement and anticipation, even though it may have been years since we were aflutter about the first day back to school? Compared to New Year’s Eve, a somewhat contrived launch of new opportunities, for many of us Labour Day is the true new year.

We want a new wardrobe, a new look, a new start. There’s a freshness in the air and although the nights are cooler, our thoughts of winter are still far away.

On this week’s cover is Breakfast TV’s Dawn Chubai, who, when she’s not exploring all the things that make this city great, is also a well-known singer and entertainer in high demand as an event host. We asked Vancouver designer Chloe Angus of Chloe Designs how we can all revamp our wardrobe.

Describe the outfit you’ve chosen for Dawn.

Sometimes all it takes is cutting up fruit, veggies, cheese and meat in different shapes, rather than simple slices, to keep them interesting. Try tiny cubes of cheese, mini tomatoes, super-skinny carrot, cucumbers and celery sticks.

Veggies can be enhanced with a simple shake of gomashio (seasoned sesame seeds). Send along a Ziploc bag of seasoning, to which the veggies can be added and shaken, to ensure overseasoning is avoided.

Make fruit fun Use a mini melon baller to carve up apples, melons, bananas and strawberries into a bowlful of berry-sized balls. (Throw leftovers into the next day’s smoothie). Add blueberries to complete the party.

A squeeze of lemon will keep apples from browning and add a barely detectable but delicious zing. Add a splash of maple syrup to sweeten it up with a boost of minerals or a sprinkle of hemp seeds for a colourful crunch. Serve in a small bowl with a tightly fitting lid.

A good ol’ thermos Keep smoothies cool or soup, stew or pasta warm. A wide-mouthed model will make for easy serving but even better, easier cleaning.

Left-over dinner time favourites can be reheated in the morning and accompanied with small containers of grated cheese, chopped arugula or sunflower seeds to add at mealtime.

A taste of the Big Smoke’s big sandwich OnThePlate

T

hough I was born in Vancouver and consider myself very much a BC boy, I spent nine years (off and on) growing up in downtown Toronto. I have plenty of fond memories of the city — it was where I got my first proper restaurant job, where I found my calling (however fleeting) as a Boy Scout, and where I first discovered girls (I’d previously only been to private schools for boys).

But aside from the efficiency of its public transportation system and the intense electrical storms in the heat of summer, I never thought I’d pine for anything quintessentially Toronto-esque.

That changed when I returned to speak at a conference on food a few years ago and tripped over one of my best and strongest memories, that of the humble, over-sized peameal bacon sandwich made by several competing vendors in the St. Lawrence Market.

I was having a hangover wander with some of my fellow speakers when I was reunited with this beast of a sandwich. It

was a simple enough tower of warm peameal bacon slices with crumbled meal, lettuce, cheddar, tomato, and mayonnaise inside a soft, juice-soaked bun, but it was a sight nevertheless. The food editor of GQ, Alan Richman, asked me — with no small amount of envy in his voice — what it was that I was stuffing my face so gleefully with. I gave him the same dry description that I just gave you, only with my mouth full, explaining that it was “the city’s signature dish... Toronto’s greatest culinary gift to Canada.”

And no, I didn’t offer him a bite.

I wasn’t completely accurate in my description, however. Despite its drool-inducing properties and massive local appeal, the famous peameal bacon sandwiches have never enjoyed anything approaching national reach.

They’ve certainly never made an entrance to Vancouver’s food scene, a sad fact that has frustrated me to no end. Ever since that visit I’ve asked just about every new butcher shop, deli, and sandwich speciality joint

whether they’d ever consider offering one. The response has always been roundly uniform: “We’ve never heard of it” — polite chef-speak for “f*** the hell off”.

When Big Lou’s Butcher Shop was getting ready to open at Gore and Powell two years ago, I gave them the same spiel and received the identical response.

I even tried to entice them with an “every former Torontonian living in Vancouver will love you” angle, but owners Karl Gregg and Allan Bosomworth just smiled and blinked, completely nonplussed. When Meat & Bread were building their second location, I tried again, to no avail. As a sandwich advocate, I was just no good. So I gave up.

But then two weeks ago I received a text from Gregg asking if I would I please come down to Big Lou’s and help him and Bosomworth reconstruct the sandwich so beloved by Torontonians. It turns out that I wasn’t the only one lobbying for it, and thus, after they met my terms (I would be permitted to eat the experiments), my long-standing policy of never doing consulting jobs flew out the window.

Even by reading up on the

internet and employing my recollections (such as they were), a peameal bacon sandwich reminiscent of the ones at Toronto’s St. Lawrence Market wouldn’t be an easy thing for them to replicate. Neither Gregg nor Bosomworth had never eaten the sandwich before, and Big Lou’s is bereft of a flat top grill for sizzling.

The first thing I noticed was that their peameal bacon slices were half the size of those that you get in Toronto, where five to six slabs usually make it into every sandwich. At Big Lou’s, they’re using a dozen of their smaller slices for parity.

But they weren’t greasy enough. In order for that effect to be achieved, they tried warming the peameal slices in their oven with a light wash of porchetta drippings. This — it should surprise no one — turned out to be the most delicious solution imaginable. They also added more garlic aioli, which had been developed to mimic the garlic sauce used by Sausage King (one of the most famous of the Toronto’s peameal bacon sandwich makers), and included an

option for HP Sauce, which is one of the more standard add-ons (together with bell peppers and fried eggs).

But there weren’t enough of those golden, mealy crumbles that are like little gifts to your molars at other Toronto joints like Carousel and Paddington’s. In the first draft, they were keeping to the edges, with little (if any) instances within. Not good enough. So they added more.

The sandwich is finished with iceberg lettuce, cheddar and tomato, and instead of using kaiser rolls or sesame seed hamburger buns (as they do most commonly in Toronto), they settled on Portuguese buns, which soak up the fat and mayo without becoming enslaved (to ruin) by either.

In the end, I think they’ve nailed a fantastic, borderline enormous facsimile. Even the price is on par with Toronto. I remember them being in the $6-$8 range when I used to live there, and at Big Lou’s, where they premiere this week (269 Powell St., 604-566-9229, BigLousButcherShop), they sell for $7.95, which is a deal to be sure.

Fresh at farmers market: peaches

eaches don’t need much introduction.

That first bite into a warm luscious peach, with sweet juices exploding chinward and beyond, are a true indication that we are right smack in the midst of summer.

Peaches are great additions to any meal — on yogurt or in smoothies, simply added to a favourite jar of salsa, broiled for a couple minutes and served on a salad of arugula, goat cheese and proscuitto, or blended margharita-style with tequila.

With school starting just around the corner, this recipe is the perfect answer to busy mornings in need of a nutritious kick good enough for kids and grown-up alike. The recipe makes eight tarts that can be stored in an airtight container for about three days on the counter. They can easily be reheated in the toaster oven.

PEACH POP TARTS Adapted from Tasting Table Summer Cookbook 2012 ¾ cup unsalted butter 1 cup organic cane sugar 1 ¼ cups whole wheat flour ¾ cup all-purpose flour ¾ teaspoon salt ½ cup buttermilk 8 oz cream cheese, room temperature 2 cups peeled and chopped peaches (about 5-6 ripe peaches) 2 tablespoons honey 1 tablespoon cornstarch In a stand mixer, beat together the butter and sugar until light and fluffy, about 3 minutes. In a medium bowl, whisk together dry ingredients.

Alternating with the buttermilk, add the dry ingredients to the butter mixture until a dough forms. Divide the dough into two balls and wrap in plastic. Chill for 1 hour.

In a small bowl, whisk together 1 tablespoon of honey and the cornstarch. In a saucepan over medium heat, combine the peaches and cornstarch mixture and cook until the fruit comes to a simmer. Lower the heat and cook until the fruit breaks down, stirring occasionally, about 10 minutes.

Taste for sweetness and add more honey as needed.

Add cream cheese and stir until well combined.

Remove the compote from the saucepan and chill until ready to use.

Remove one dough ball from the refrigerator and place on a lightly floured surface. Roll out to a large rectangle, about 1/4-inch thick. Cut the dough into eight 4-inch by 3-inch rectangles, rerolling the dough if necessary. Place the rectangles on a parchment-lined sheet pan and chill. Roll out the second dough ball and cut into slightly larger rectangles.

Place the rectangles on a second parchment-lined sheet pan and chill.

Remove the first of rectangles from the refrigerator and carefully top each with about a tablespoon of peach compote, leaving a ½ - inch border. Use a dab of water to slightly dampen the edge of the dough. Remove the second set of dough from the refrigerator and top the first set of rectangles and fruit with the dough. Seal with your fingers and use a fork dipped in flour to finish the seal. Trim the edges of the dough slightly as needed and chill the pop tarts for 30 minutes.

Preheat the oven to 325º. Bake pop tarts until golden brown, 25-30 minutes, rotating the pan halfway through baking. Let cool slightly and enjoy.

was one of the naysayers when Twitter first exploded onto the scene, assuming it was too frivolous and fleeting to permeate the zeitgeist with any significance. A few years later it’s been instrumental in everything from the Arab Spring and the downfall of American congressmen to becoming a direct line of communication with celebrities and icons and the initial way we learn breaking news. Back in January of 2011, Family Guy’s Seth MacFarlane (@SethMacFarlane) tweeted, “So is the way this works that we all now have to tweet for the rest of our lives?” Yes, apparently it is.

The wine industry is no different from the rest of the world.

Twitter offers an opportunity to be exposed to previously unheard-of wines, a tool to stay up to date on industry news or a way of keeping engaged with winemakers and grape-growers whether they’re in BC or the Barossa. This week I’m sharing a handful of my favourite wine folks who offer a constant pulse of Vancouver’s wine scene.

Robert Stelmachuk (@ChambarWine) is the sommelier of Crosstown’s popular Chambar restaurant and an industry veteran who’s currently working toward his Master Sommelier status, a pinnacle of vinous academia that is shared by less than 200 people around the world. His prolific tweets offer tasting notes of new wines on his list or recent Robert Stelmachuk favourites he’s found on his own, with descriptions that are often quirky and @ChambarWine surreal. In no time you’ll learn that Ferret Pouilly Fuisse is “a storm of river stones, citrus lightning & hazelnut spice,” or that Jakoby ‘Pur’ Riesling is “like a box full of kittens. Playful, expressive & determined.”

If you’re a fan of tasting notes that harbour that crisp imagery and err toward hilarity, you’ll also want to keep up with Tyler Dawson (@tythewineguy), the long-time manager of Park Royal’s Liberty Wines who not only passes along great deals in the store, but shares nuggets like describing Thornhaven 2011 Gewürztraminer as a “citrus bong... bursting with ruby red pink grapefruit and lychee. Hit it!”

Also on the retail side of things is the owner of the West End’s Marquis Wine Cellars, John Clerides (@MarquisWineCell), who is not afraid to speak his mind on our outdated liquor laws or, frankly, anything else. One of the good guys who’s always fighting the good fight, John’s Twitter feed is a stream-of-conscious expression of his colourful personality which, like many a great wine, is unfined @Marquis and unfiltered. Whether passing along tips on WineCell unsung wine regions, challenging local politicians,

riffing on current events or giving Vancouver traffic updates (yes, really) — he utilises Twitter for all it’s worth. It’s John’s world, we just live in it.

To keep current on much of the regulatory business regarding local wine and liquor laws, from mark-ups and shipping to the implementation of BYO in our restaurants, monitor local lawyer Mark Hicken (@MarkHicken) who’s a self-propelled lobbyist when it comes to bringing our regulations into the 21st century, or the latter part of the 20t, at the very least. An amiable guy the industry is thankful Mark Hicken to have on our side, he helps decipher breaking news on the booze front and has been @MarkHicken influential in a call to arms or two that have been instrumental in much-needed change.

Veterans and activists aside, we would be nowhere were it not for the many restaurant servers and retail clerks who keep Vancouver’s industry strong with their passion and care. Justin Everett (@Drunkinitsyouth) spent a bunch of time around town over the last few years, learning the tools of the trade everywhere from Kitsilano Wine Cellar to Bao Bei. He now finds himself serving at Wildebeest, Gastown’s newest dining hotspot.

Tartine Bakery is just down the street from our store. If you haven’t been, I highly recommend it. I also frequent Japanese food restaurants as much as I can and God knows I am a sucker for MAC makeup.

I love our restaurants.

Festive red lanterns welcome hungry diners to Shao-Lin Noodles and the welcoming staff smile as they seat, serve and tidy-up. They may be moving quickly but the experience is something to be savoured. It’s a well choreographed cacophony for the senses — sights, smells, sounds, textures and, especially tastes tantalize diners from the moment they enter.

The menu has hundreds of noodle-based dishes, dumplings, soups, side dishes and specialty teas to choose from. All the portions are generous, wellseasoned and a little bit addictive. It’s definitely all about the noodles, though. Fresh noodle dough is made every day with more than 150 pounds of flour. Chefs expertly prepare the dishes to order and they may even show off a little when they spot spectators watching through the large kitchen window.

With lightning-like reflexes they stretch, spin, cut, and chop the dough into three main varieties of noodles — dragging, cutting and pushing. Diners are welcome to choose their favourite noodle style to be included in their choice of sauce and accompaniments.

Twelve years ago, McLellan began working at Art Knapp Plantland’s flagship store in Port Coquitlam while studying fine art at SFU. Drawn to the friendly, familyowned atmosphere, she stayed after graduating and began to apply her understanding of colour, texture, and balance to create customized garden designs for small spaces that express the style and requests of her clients.

Dragging noodles are super long; scissors are supplied by the servers for assistance. Cutting noodles have been cut short and are by far the easiest to eat. Pushing noodles are somewhere in between, not too long and not too short. What ever you decide, it’s an entertaining and satisfying dining experience.

McLellan finds inspiration for her designs and strives to create a welcoming environment at Art Knapp Urban Garden. “I love living and working downtown,” Katie admits. “Whether browsing the boutiques in Gastown, checking out the latest local artists’ exhibits at the Vancouver Art Gallery or just enjoying the parks and trees close to her West End home I’m constantly inspired by my surroundings.”

It’s so important to always adapt. With our store being located on the newly installed bike lane, we’ve adapted and diversified our product line. We now carry women’s fashions and accessories. Our main line of clothing is made by Vero Moda which is a company from Denmark who is fair trade certified, uses organic colorants and is always focused on current, global trends. It’s been a great way for us to continue adjusting to the various seasons exactly the same way we do with our plants.

I love that each neighbourhood in Vancouver is so unique - depending on the mood I’m in, there seems to be an area in the city that is the best that day.

I’ve lived in Yaletown and Kits before moving to our farm in Richmond. I loved that in Yaletown I could take my dog with me everywhere - whether shopping and trying on dresses or out for lunch. I love that Kits feels almost like it’s own small town. Compared to Yaletown it felt like going to the country - so close to nature, with bigger dogs and coyotes in the streets.

What’s your favourite way to unwind?

Have a glass of wine and visit with my husband in the evening.

Movies - I love romantic comedies.

What are your favourite stores or restaurants?

Earl’s is where my son works but I also love going for dinner. I get the Kung Pao chicken everytime.

Bellisima is Kits is close to one of my studios and I love the clothes in there.

I do most of my shopping in the neighbourhoods where my studios are it’s convenient but I love to support my neighbours.

What I learned... about business

Jade Electrolysis Jennifer Desloges, CEO Jennifer Desloges has been there. When pregnant with her first child she began to grow hair on her face. “I was so embarrassed. I wanted to hide all the time,” she says. She began to research electrolysis as a permanent means to get rid of the hair that she so badly wanted gone. She found many treatment options but most were inconsistent and unreliable. Disappointment led to inspiration and Desloges became an electrologist herself.

Shortly after she began her practice it became clear that there had to be a better way and after extensive research she patented her own technique, The Desloges Method of Electrolysis, and opened her own clinic, Jade Electrolysis. “When I do something I am a perfectionist,” Deloges admits.

It’s one of her strengths. Her clients were beyond grateful for finally finding a clinic where the treatment is 100 per cent guaranteed. There are no longer any doubts — start the process and the hair will be gone.

With six clinics open in BC — including two that are managed by her daughter Janine, who started learning about the business when she was 15 — Desloges is determined to reach as many people struggling with hair removal as possible. Knowing how empowering her journey has been, she has created franchise opportunities for anyone interested in opening their own Jade Electrolysis Clinic. “The goal is to have 500 clinics open across Canada within 10 years.” She is dedicated and focussed and spends much of her time training new electrologists, even though her heart is working one-onone with clients.

Upon entering one of her clinics, Desloges’ commitment to her business is obvious - they are bright, cheery and welcoming, but also exceptionally professional and clean. “I’m always looking for ways to improve the experience for my clients,” she shares. “I’m definitely a perfectionist. I’m not satisfied with just getting the job done — I want to exceed expectations.”

With a quick read through the testimonials on her website, it’s easy to see that Desloges’ hard work is paying off. Many men and women have found great satisfaction from her services and a new found zest for life. “I’ve been there, so I know the effect these procedures have. It’s so rewarding to know the work I’m doing is making a difference in people’s lives.”

At the end of every day, Desloges feels satisfied and energized and looks forward to going home to her small farm in Richmond and connecting with her family.

Evenings spent sharing a glass of wine with her husband while watching a movie or enjoying dinner at Earls, where her son works, are the simple pleasures that keep her smiling. “I just love the Kung Pao chicken. I get it every time.”

And even after decades, she still enjoys exploring Vancouver. “I just love Vancouver - each neighbourhood has so much to offer I’m still discovering new places all the time.”

Wandering eye leads to luxury purse line

n March 2011, Ela Kowalewska and her husband Martin Aldorsson were strolling through the piazza in Bologna, Italy when they came across a beautiful door with studs adorning its surface.

Wouldn’t it be neat, Kowalewska said, stopping to take a photo of the door, if they could find a way to recreate that stud effect on the one of the leather purses that she’s created for their Ela line of handbags?

A year and a half later, Aldorsson was sitting in Vancouver’s Holt Renfrew to talk about the new line of Ela purses and accessories — including a tan-coloured studded MILCK (money, identification, lipstick, cellphone, keys) clutch bag that’s exclusive to Holt Renfrew.

“We always say ‘the eye must travel’ because inspiration can hit you anywhere. It can come from a door,” Aldorsson told WE Vancouver.

Kowalewska spent 10 years in London working for Burberry before accepting a job with Hermes in Canada.

Her husband has a background in marketing and advertising. Together, they eat, sleep and talk about their three-year-old business, which is now their sole occupation.

In coming up with the designs for the bags, Kowalewska thinks of other women like her: “A normal woman with a normal job and normal interests but who likes something with a twist. She doesn’t,” Aldorsson says, “want to look exactly the same as everyone else. She wants a little bit of an edge to what is the normal within her world.”

Kowalewska deeply admires Hermes for its craftsmanship and sophisticated sense of design. She pays homage to them in her own creations, which she calls “humble luxury.” She seeks out quality leather supplies — hence the twice annual trek to Bologna —, pays attention to small details (such as the playful imprint of an open and closed lock at each end of their new line of Editor’s Pouch bags that conveniently fit an iPad.) hat an adventure — upon arrival in Whistler for Canada’s first Wanderlust yoga festival last weekend, I was greeted by event organizer Dania Jimenez, from LA, who gave me the lay of the land. It was pretty straightforward: attend any of the 50+ activities available over four days — yoga classes, hikes, speakeasy talks, activities, live music — and enjoy!

First up, Eoin Finn’s Vinyasa Earth Puja yoga class honoured our connection to the earth. I was reminded of my inner child, acting out bold fluid movements. We crawled like lizards, jumped like frogs, swam like fishes and even surfed some waves, surrounded by like-minded people on a positive, enlightened path. This process encouraged energy to flow and reminded me how important it is to take a break from day to day activities by immersing myself in the magic of life.

The next day, one of the highlights was a Sound Salad class with Vancouver’s Mike Nichols, who incorporates the sounds of crystal, Tibetan singing bowls, the grounding energy of the didgeridoo, yin yoga, meditation and breathing techniques. The sound vibrations permeated through my entire core on every level imaginable. At some point, I felt weightless, floating through invisible plains wondering where this experience was taking me.

Then it was off to an exhilarating Detox Flow yoga class with internationally celebrated yoga teacher Seane Corn.

The intense, challenging class explored how

making conscious and responsible choices can help purify our body, mind and over all health. Through a special vinyasa sequence, we cleansed vital organs and I was given many positive motivational tools to aid me in awareness and guidance of my yoga practice and daily life living.

Later, Seane was on the main stage at the Olympic Plaza with Michael Franti, followed by the Rebirth Brass Band and thousands of dancing yogis.

The next day I signed up for a hike, followed by yoga in the park with Jackie Helton from Seattle was in order. Whistler was truly the perfect location for this event. Fresh mountain air, pristine landscapes and the beauty of all that nature has to offer.

That evening, Feast in the Mountains — a collaboration between local restaurants, farmers, vintners and brewers — was on in Rebagliati Park.

But the night far from over. We were off to the Whistler Conference Centre for one of the most amazing shows I have ever seen, performed by Quixotic — an acrobatic, dancing, musical, light show sensation.

Needless to say the last day was a slower day for me. Yin Yoga — Going Beyond the Muscles with Ichih Wang from Ottawa — was just what I needed, topped off with a swing on one of the many hammocks outside Lululemon in the front yard.

Wanderlust touches your senses on every level — a magical event full of progressive ideas, wonderful teachers, great music, delicious food for the mind body and soul.

A teary good bye was had by all at the last dance party and group hug in the Sea to Sky Ballroom.

Compliance gives terrifying glimpse into human nature

MOVIE REVIEWS The Possession scares up hellish mystical forces, yet falls flat

COMPLIANCE Starring Ann Dowd, Dreama Walker, Pat Healy Directed by Craig Zobel When we meet Sandra (Ann Dowd), the fast food restaurant manager is already under intense pressure. Thanks to the carelessness of her teenage charges, she’s going into the busiest night of the week minus $1,500 in inventory. Staring down her pimply troops, she warns them that, from here on in, everything needs to be “by the book.”

And wouldn’t you know it? This is the night that Sandra gets a call from an “Officer Daniels” (Pat Healy) who advises her that her employee Becky (Dreama Walker) has been accused of stealing from a customer.

Requesting Sandra’s complete cooperation, he asks her to detain Becky in a back room. Next, he asks that Sandra search the teenage girl. As his demands escalate, becoming increasingly depraved, Sandra… well, you

Disturbingly, writer-director Craig Zobel’s sophomore feature is inspired by an actual series of prank phone calls placed to fast food restaurants.

And while we’re alerted to the fact that Daniels is a fraud almost from the outset, Compliance is so deeply unsettling because Sandra fails — or refuses — to realize this too. While Daniels is hardly a master manipulator, she’s content to ignore every red flag, do as she’s told and absolve herself of any personal responsibility.

In probing this ugly aspect of human nature, Zobel not only crafts one of this year’s most terrifying films but also one of its most unshakeable.

Absolutely riveting from start to finish, it leaves you feeling in greater need of a shower than someone who’s just worked a double-shift over a deep fryer. — Curtis Woloschuk

THE POSSESSION Starring Jeffrey Dean Morgan, Kyra Sedgwick Directed by Ole Bornedal Based on a true story, The Possession tells the tale of a young girl named Em (Natasha Calis) who acquires a wooden box bearing an ancient Hebrew inscription from a yard sale.

Soon enough, she begins to exhibit strange behavior and gradually becomes obsessed with the mysterious object. Her father Clyde (Morgan) begins to put the pieces together and realizes this is no ordinary antique. The mystery leads him to a young rabbi (a bizarre role from musician Matisyahu) who explains the box was built to contain a dislocated spirit hell-bent on consuming its host. Time is running out to save defenseless Em. Calis, whose previous acting work includes The Firm TV series, demonstrates a keen sense of the turmoil her character is experiencing

while Morgan plays the concerned dad with just enough intensity. The movie’s characters are otherwise paper thin, which is especially disappointing given Sedgwick amounts to little more than a disapproving divorcée.

The film wavers awkwardly between scenes of convulsing terror, as victims are lashed about violently by unseen forces, and creeping dread with attempts to build a tense atmosphere. Unfortunately, neither approach works and the individual plot elements have been covered in countless horror movies before. Certain sequences may elicit Thor Diakow some scares from the audience and provide some interesting imagery but nothing more.

The Possession ultimately fails because it offers nothing new to the genre, just a slightly different way of getting to the inevitable outcome and subsequent twist that heralds a potential sequel.

No substance amidst mayhem LAWLESS Starring Shia LaBeouf, Tom Hardy, Guy Pearce Directed by John Hillcoat In 2005, director John Hillcoat and songwriter/screenwriter Nick Cave collaborated on The Proposition, a brilliant Australian Western that wasn’t so much “old school” as Old Testament. And yet, for all the blood that was shed in that tale of three outlaw brothers, it proved every bit as lyrical as it was violent.

Reteaming seven years later, Hillcoat and Cave once again centre their film on three siblings who find themselves on the wrong side of the law.

This time around, it’s the bootlegging Bondurant boys of Prohibitionera Virginia: Jack (Shia LaBeouf), Forrest (Tom Hardy) and Howard (Jason Clarke). When they refuse to cut a corrupt lawman (Guy Pearce) in on their action, things get ugly fast.

Or at least they should. Cave’s script, however, is too bloated with extraneous material to gain much momentum. Instead of manning up, the Bondurants moon over the likes of Mia Wasikowska and Jessica Chastain (both wasted in thankless “romantic interest” roles). And while the film is stocked

with a typical Cave array of bad seeds — drunks, religious zealots and psychotic dandies — almost no one is developed enough to rank as an actual character. Unfortunately, Lawless manages to be both overstuffed and preciously short of substance.

In the wake of this disappointment, one can’t help but reflect on Forrest’s statement, “It’s not the violence that separates men... It’s the distance they are prepared to go.”

While this film is every bit as brutal as The Proposition, Hillcoat and Cave have failed to push themselves to their limits in order to uncover the poetic moments amidst the mayhem.

Five day trip cycle routes

Imagine listening to the Borealis String Quartet play Haydn in this fully restored 17th Century barn. A special fundraiser with the Vancouver Heritage Foundation makes it possible.

f you’ve ridden a rut into the routes around Stanley Park, consider exploring Vancouver’s neighbouring regions. Most destinations are accessible by transit and a bit of pedaling. Bring along a Metro Vancouver Cycling Map. Burrard Crossing. Complete a circle route on the North Shore by riding through Stanley Park and crossing the Lion’s Gate Bridge. In North Vancouver, ride west on the Spirit Trail to Lonsdale Quay. Break for pie, then board the SeaBus back into Vancouver.

The Fraser River. Pedal south on the Inverness Bikeway. Explore the north bank of the Fraser River by following the Kent Bikeway west

or east; or cross the Knight Street bridge and follow the Fraser River’s south bank on River Road. Retrace your route to return to Vancouver.

Steveston Historic Site. In Richmond, join the West Dyke trail at the mouth of the Fraser River’s Middle Arm. The flat, gravel dyke follows the shoreline southwards into the Gulf of Georgia Cannery National Historic Site in Steveston.

Delta and Boundary Bay. Aim for Tsawwassen’s Boundary Bay Regional Park, then follow the dyke trail east as far as the railway bridge.

Watch for shore birds and flowers.

Pitt Lake. By bike, bus or transit, head to the east side of the Pitt River Bridge. Ride Pitt Meadows’ back roads and dyke trails northeast to follow the Pitt River to its source.

Classical concerts in heritage homes

ave you ever wondered how the other-half lived in a century earlier than our own?

Picture this — listening to the Borealis String Quartet play Haydn in a 17th Century barn that was dismantled in Portsmouth, England and meticulously rebuilt in Southlands; enjoying the view of English Bay from the living room of a Point Grey home while the quartet lulls you with the Beethoven String Quartet in C Major; having the spirit move you when the quartet plays Shostakovich’s String Quartet No. 8 inside a church that’s been restored as a home in East Van; and being inspired by Ned Pratt’s design in a mid-century modern house in Kerrisdale — not to mention the Vancouver quartet’s interpretation of Beethoven’s String Quartet in B-Flat Major, opus 130.

“I think it will be stunning,” says Diane Switzer, executive director of the Vancouver Heritage Foundation, of the four-part concert series. “It’s a page out of a Jane Austen novel.”

Music in Heritage Homes is a fundraising venture between the Borealis String Quartet and Vancouver Heritage Foundation. On four afternoons — September 13, September 27, October 11 and October 25 — four Vancouver home owners will open their doors to a maximum of 60 ticket holders who will get to enjoy an intimate concert followed by afternoon tea.

The series pass for all four concerts is $530, and this includes a $250 charitable tax receipt. Any two concerts are $285, with a $140 charitable tax receipt. If you can only fit in one concert, it’s $147 with an $85 tax receipt.

eanwhile, September 22 from 1 to 5pm is the Vancouver Heritage Foundation’s Vancouver Special House Tour. This year’s one-day self-guided tour of five houses includes some with their original floor plans and others that have had radical makeovers.
