SETTING THE STAGE As culinary artisans, Chefs Bonnie Moore, Sarah Steffan and Cassidee Dabney each have wonderfully distinct styles and personalities. Their philosophies about the foundations of a great meal, however, couldn’t be more alike—including their shared belief that plating the perfect meal starts with the perfect plate.

ortunately the trio of chefs also happen to know another artisan who believes the same thing: potter, and longtime friend of Blackberry, Leanne McQueen. Working together over the last few years, Bonnie, Cassidee, Sarah and Leanne have collaborated to conceive and create plates and serving pieces that are as beautiful as they are functional. Starting first with shape and scale, the team established simple yet elegant forms. They obsessed over even the most nuanced details. They then explored colors that would complement but never overshadow Blackberry Farm’s award-winning cuisine. The pale blue of the dishes crafted for The Dogwood, for example, recalls the early-morning, blue-gray skies seen from the Main House. The Barn’s pieces take color inspiration one step further: ashes from the dining room’s iconic fireplace weren’t just the inspiration for the pottery’s gray tones, they are actually what gives the glaze its subtle shade. Now a fixture in Blackberry Farm’s beloved restaurants, the chefinspired ranges have also become a favorite for those wanting to add a bit of Blackberry to their own dining table. Finessed but never fussy, elegant but perfectly understated, each piece is as artful as the chefs who helped bring them to life.

ven after years as Blackberry’s Head Cheesemaker, Chris Osborne still marvels at the way fresh yet sometimes temperamental sheep’s milk can be transformed into rich, earthy, creamy cheeses—especially in the warmer foothills of Tennessee. That’s partly because Chris knows that sheep’s-milk cheeses are typically found in the cooler regions of Spain and Portugal. But it’s also because Chris has been a key part of an extraordinary journey that has produced not only delicious cheeses but also numerous awards and accolades. Celebrated varieties include Hawkins Haze, a ripened sheep’s milk cheese with

a line of vegetable ash running through it, commemorating the Hawkins line that runs through Blackberry Farm. The richness of the ewe’s milk pairs with mineral notes from the ash. Another favorite is Brebis, a fresh sheep’s milk cheese similar to the light, supple texture and balanced flavor of a Chèvre. Other cheeses that still awe Chris? Blackberry’s bloomy, tangy Camembert-style Magnolia and the team’s new sheep’s milk pimento cheese, both of which demonstrate the beauty and possibility of cheesemaking with this special milk.

Joel, who is as passionate about outdoor pursuits as he is about exhilarating cuisine, has channeled his love of adventure into the menu of Blackberry Mountain’s new Firetower restaurant. Hearty without being heavy, Joel’s creative dishes elevate fresh, nutritious ingredients with the bold flavors of unconventional combinations and surprising accompaniments like perfectly-fermented vegetables and sauces. A standout among those carefully aged accompaniments is Joel’s Firetower Hot Sauce, which kicks up a base of Aleppo peppers with the punchy addition of a special spice blend and red Fresno chiles. The resulting sauce, like the modern mountain cuisine it’s now a signature part of, is as inventive, invigorating—and deliciously addictive.
