1. Squash: Halve squash lengthwise, remove guts and reserve seeds for toasting (toss seeds with some canola oil and pinch of salt; place on baking sheet and toast 10-15 min at 350 F until golden). Cover bottom of roasting pan with water. Place squash flesh down in pan and put in 350 F oven for 45-60 min until tender. Remove skin with fork â&#x20AC;&#x201C; squash should resemble spaghetti. Before plating, heat 1 tbsp butter and maple syrup in pan until frothy; add squash, tarragon and a pinch of salt, and sautĂŠ until warm throughout. 2. Compote: Render bacon in canola oil and butter in a small pot until crispy.

Serve: Form bed of squash on plate; top with seared scallops and compote. Garnish with squash seeds. Serves four.

1. Glazed carrots: Combine all ingredients, cover and cook on very low heat until tender and glazed. Remove from heat; cool in juices. Reheat as needed in a small pan with some of the braising liquid until hot, nicely glazed and shiny. 2. Roasted carrots: Heat olive oil until smoking hot; add carrots, season gently with salt and cook until deeply caramelized. 3. Carrot puree: Combine all ingredients in a pot and bring to a boil; cook on high until carrots are very tender. Strain through a chinois; purĂŠe until smooth. Season with reserved salt. 4. Miso mustard: Combine lemon juice and mustard powder; cover and let stand for 15 minutes. Combine all and purĂŠe until smooth. 5. Soy miso: Combine all ingredients and homogenize. 6. Miso mustard butter: Heat butter until foamy; remove from heat, add soy miso and whisk to emulsify.

7. Serve: Season meat with salt and pepper; cook in hot pan until caramelized. When almost to tempera-

DIRECTIONS: 1. Remove legs and breast from duck. Lightly score skin. Marinade legs with salt, garlic clove and thyme for 4 hours. Wash legs, pat dry, place in ovenproof dish, cover with foil and bake for 3-4 hours at 275 F until fork tender. Cool, remove thigh bone and reserve until required. 2. Warm 30 g butter in heavy-bottom pan; add celery root and pinch of salt. Sweat until tender (use a tight-fitting lid). Add milk; simmer for 10 min. PurĂŠe in food processor until smooth. Pass purĂŠe through fine sieve, season to taste and reserve until required.

5. Shape potato into cylinders. Slowly roast in 350 F oven with duck fat, thyme and garlic clove. Season to taste. Turn occasionally until golden on both sides. 6. When ready to serve, pre-heat heavybottom pan over medium to low heat. Season duck breast; place skin down in pan for 7-9 min until skin is golden and crisp. Periodically baste breast with fat

renderings. Flip to flesh side and turn heat off. The latent heat in the pan will continue to cook the duck breast to a medium temperature. 7. Wash and pick Russian kale. SautÊ until tender with ½ tsp duck fat, salt and pepper. SautÊ golden chanterelles separately, season with salt, pepper and lemon juice. Warm up celery root purÊe.

Cook green onions in boiling salted water until tender. 8. Reheat duck sauce by bringing to a quick boil. Drop fresh blackberries into the hot sauce. Bake duck legs for 10-12 min at 375 F; slice each duck breast into three pieces. Dress and present dish similar to photograph. Serves two.

4. Save 9-12 blackberries for garnish, crushing the remainder. Add to duck sauce and reduce to oil consistency. Push through fine sieve.

DIRECTIONS: 1. Blend butter, icing sugar, vanilla, egg, salt and cardamom. 2. Add in flour and ground almonds and work into the dough until semi-hard (do not work too much). 3. Form dough into a ball and refrigerate overnight. 4. Roll out the dough on a floured surface until approximately 1/8 of an inch thick. 5. Use a flower-shaped cookie cutter, two inches in diameter, to cut out 20 cookies. Place cookies on a baking sheet lined with parchment paper.

6. Cut 20 more cookies, this time cutting an additional small â&#x20AC;&#x153;eyeâ&#x20AC;? from the centre of each cookie for the top. Place cookies on a baking sheet lined with parchment paper. 7. Chill cookies in fridge again for 10 minutes. 8. Pre-heat oven to 150 C (300 Fahrenheit) and bake until very lightly golden on the edges (between 10 and 15 minutes). Careful â&#x20AC;&#x201C; the cookies will brown quickly! 9. Cool cookies before piping the jelly on the full cookie bottom. Top each cookie gently with an â&#x20AC;&#x153;eyeâ&#x20AC;? cookie and dust with remaining icing sugar. Makes 40 cookies.

DIRECTIONS: 1. Crunch base: Mix all ingredients, spread over bottom of cake pan and set aside. 2. White chocolate mousse cake: Put white chocolate in oven to caramelize and melt. Transfer to mixer with 100 ml un-whipped whipping cream. Add remainder of ingredients and mix at medium speed until smooth and creamy. Pour over crunch base and place in fridge to set. 3. Passion fruit orange jelly: Combine ingredients over low heat until slightly thick, with creamy consistency. Cool to room temperature. Pour over cake and let set in fridge. Decorate with holly leaves or as desired. Serves 8-12.

DIRECTIONS: 1. Squares: Beat butter with icing sugar; mix in flour until small crumbs form. Press into 9â&#x20AC;? square pan lined with parchment paper; bake at 350 F until light golden and starting to pull away from sides, about 12-15 min. 2. Topping: Whisk together brown sugar, butter, eggs, vinegar, rum and vanilla; stir in raisins. Pour over baked crust. (Can add 2 cups pecan halves now, if desired.) Bake at 350 F for 35 min or until light golden and crust has formed but centre jiggles. Cool in pan on rack. Cut into squares. 3. Sauce: Heat butter in small pot on medium heat until it starts to bubble. Add rum, brown sugar and vanilla and bring heat to low; add golden syrup, simmer for 5 min and cool. When ready to serve, drizzle sauce over squares as desired. Makes 36 squares.

Combine flour, sugar and salt; cut in butter until mixture has bread-crumb consistency and dough holds together when pinched. Evenly press dough on bottom and sides of 8â&#x20AC;? fluted tart pan; chill for 20 min in fridge. Line inside of crust with parchment paper and weigh down with pie weights (try dry beans or dry rice). Bake for 20 min until crust is still pale (take out if starts to brown); cool. Faith Magallenes 2. Filling: Preheat oven to 375 F. Combine sugars, Bluebird Cakery cream, vanilla, salt and corn syrup in large saucepan over medium heat. Stirring constantly, bring to a boil; heat until mixture thickens and caramelizes. Remove pan from heat and stir in hazelnuts. Pour filling in cool crust; let cool again before baking for 20 min or until filling is bubbling and light brown. Let cool completely before adding ganache. 3. Ganache: Melt chocolate in bowl over pot of simmering hot water. Stir until completely smooth and silky. In another pot, heat cream to just before boiling. Take cream off heat, add to melted chocolate and stir until completely combined, glossy and silky. Use an offset spatula to evenly spread ganache on top of tart. Sprinkle crushed, toasted hazelnuts on top and chill in fridge until ganache has set.

DIRECTIONS: 1. Sift flour, baking soda, salt and spices in bowl. Beat butter and brown sugar in stand mixer until light and fluffy, 3-5 min. Add oil, molasses, egg and vanilla; beat to incorporate. Add dry mixture and mix until fully incorporated. Cover and chill for 2 hours or overnight. 2. Preheat oven to 350 F. Line two baking sheets with parchment paper; put granulated sugar in small bowl. Form even cookie-dough balls with ice-cream scoop. Roll each ball in sugar and place 2â&#x20AC;? apart on cookie sheet. Lightly press each cookie with palm. Bake for 8-10 min, until cookies look slightly underdone. Let cool on pan for 20 min; transfer to rack to finish cooling. 3. Frosting: Whip all ingredients in stand mixer until light and fluffy, scraping down sides of bowl several times while mixing. Spoon filing into piping bag; flip half of cooled cookies upside down. Pipe about 2 tbsp filling on centre of each upside-down cookie and press another cookie on top of filling, right side up, to make sandwich. Store in airtight container in the fridge.

Carol Ships â&#x20AC;&#x153;Parade of Lightsâ&#x20AC;? Society began over 50 years ago with one boat decorated with Christmas lights in Coal Harbour. On peak evenings, this holiday tradition has grown to more than 50 decorated boats, with in excess of 100,000 lights and carries over 30,000 people during this celebrated festival.

This service is an opportunity to acknowledge that Christmas can bring hard feelings, but in the context of worship, Godâ&#x20AC;&#x2122;s grace can be revealed at St. Andrewâ&#x20AC;&#x2122;sWesley United Church. A collective creation designed, written and performed by 75+ high school students from Lower Mainland schools.
