STORAGE INFORMATION
Goods have to be stored in cool and dry place, far from sources of direct light and heat, repared from humidity.
Organic products can’t be treated with chemical antimould nor preservatives, so they can be more subjected to sharp changes of temperature than conventional products.
QUALITY INFORMATION
Difformity in color from different productions can be caused by differences in the harvest of the raw materials: organic ingredients can not be reproduced in series!

“Farro” is an ethnobotanical term derived from Latin for a group of three wheat species. In Italian language the common name “farro” is commonly used to indicate three different species of triticum (ancient wheat):
• the small one: Triticum monococcum (the most ancient variety recently rediscovered for its nutritional features);
• the medium: Triticum dicoccum (that is by far the most common variety grown in Italy, and in particular in certain Tuscan mountain regions);
• the large: Triticum spelta (It is widely used in bakery products).
In English, there is a specific translation for each of them; the word “Spelt” is only the correct translation of large spelt (triticum spelta). Despite this, “spelt” is often used in English to translate “Farro” without accuracy to the specific species. The exact translation for the species is: • Triticum monococcum: Einkorn • Triticum dicoccum: Emmer • Triticum spelta: Spelt.
The last specific of the EU regulation for the product labelling, requires to add the word “wheat” to “spelt”, to specify that this is a variety of wheat and for this reason is an allergen.

If not stocked in a fresh and dried place, Probios products can undergo a deterioration process, especially during hot season. We suggest not to make a stock in that moment, unless you have the suitable warehouse and instrument for a correct preservation. In case of non conformity, we have to be informed within 8 days from the date of receiving of the goods; after this time, any non conformity can not be attributed to us.
We can guarantee the features of the products listed on label, only if they are kept in the original sealed packaging; if not, we can’t be responsible for them (absence of allergens, organic farming, expiry date, …)

GLUTEN FREE
Probios offers a variety of gluten free products that fall into the following categories: Products bearing the Crossed Grain Trademark (CGT): this symbol is recognized at European level through AOECS (Association of European Coeliac Societies) and at Italian level through AIC (Italian Coeliac Association), end ensures the absence of gluten according to Italian and European common standards. Products bearing this Trademark are also present in the AOECS website at HYPERLINK http://www.aoecs.org - www.aoecs.org
2 - Products which only report the wording gluten-free on the packaging. In this case, the manufacturers guarantee the absence of gluten during the whole production process with specific strategies and precaution to exclude no cross contamination with other cereals containing gluten (gluten <20pp). Analysis plans are regularly planned to confirm the absence of gluten. Over 100 of Probios products, marked with Gluten Free wording on pack, are also present in the AIC Handbook for gluten free products.
DAIRY FREE EGG FREE
Milk is, after gluten, the most frequent cause of allergies or intolerances. The claim “Dairy free” means the product is free from dairy and any type of lactose, excluding them as ingredient and as accidental traces. As the EU regulations don’t fix limits as reference for sensitivity to the allergen, we refer to the detectable limit of the instruments of analysis of reliable laboratories.
Eggs are, with milk and gluten, one of the most common causes for allergies and intolerances. The claim “Egg free” means the product is free from eggs, excluding them as ingredient and as accidental traces. YEAST FREE
Bread-making yeasts are constituted by a group of fungus able to cause fermentation. The intolerance can cause abdominal swelling and/or skin eruptions. Among more than 1.000 kinds of yeast, 3 are the most common:
BREWER’S YEAST: Constituted by colonies of fungus “Saccharomices cerevisiae”, able to multiply on sugary substrate.
REASING AGENTS: Consist in Sodium bicarbonate, Ammonium bicarbonate, Tartaric acid, Ammonium Chloride, Cream of tartar, Phyrophosphate; all these substances in contact with water and heat produce gas increasing the volume of a sweet or salty kneading. Usually, they are better borne in case of intolerances to yeast than the brewer’s yeast.
NATURAL LEAVENING (SOURDOUGH): It is constituted by a dough of water and flour, left in contact with the air, so that it can enrich with the yeasts presents in the ambient. This kind of leavening is slower and more complex than the previous two, but helps in the preservation of the products and it is a rare cause of intolerance.
SUGAR FREE/WITHOUT ADDED SUGAR
Products falling under this category are classified into 2 macro-categories:
SUGAR FREE: product with a sugar content of less than 0.5g/100g.
NO ADDED SUGAR: product that naturally contains sugars, such as fruit, without any type of added sweetener.

Products that rely solely on the natural sweetness of fruit, without any sweeteners - saccharose, malts, syrup or any other. The level of sweetness comes entirely from fruit sugars present in the recipe, and enhance the overall sweet flavor. In this case, fruit ingredients are the only source of sugar in the final product.
RICH IN/SOURCE OF PROTEINS
Protein are constituted by several aminoacids; they are necessary to make the cells of some tissues, muscles for example. But they release scoriae, that have to be discharged by kidneys and liver. Vegetal protein create less nitrogenous scoriae, compared with the animal ones.
VEGAN
The vegan diet is an ethic lifestyle (based on non-violence, on respect for environment and on the rejection of every kind of animal mistreatment, for alimentary purposes as well as for any other use), or a healthy choice. Foodwise, it is avoided any animal product (meat, fish, dairy and byproducts, eggs, honey and by-products). Vegan references don't only contain milk and by-products, egg, honey and by-products, but they offer also important guarantees to vegan consumers:
NO tests on animals: check on ingredients at risk, as flavors, for example.
NO use of additives of possible animal origin: check on additives at risk as E120 (cocciniglia), for example. NO use of ingredients of possible animal origin: check in ingredients at risk, as pollen, wax, honey, propolis, royal jelly; lecithin, lactic acid, natural flavors; wine (for use of additives like albumin, casein, animal gelatine); citrus zest (for external treatment on animal products base). These additional gurantees on Probios products can be provided through a self declaration who grants to respect the vegan philosophy. 1) Probios requires to work in conformity to the vegan standards both for the choice of the raw materials and in the production process, granting that any ingredient or food adjuvant in the recipe has been produced or tested using and creating sofference for animals (vertebrate living organisms and multicellular invertebrate organisms).
