The megatrend? Back to basics

Does the flap of a butterfly's wings in Brazil set off a tornado in Texas? Edward Norton Lorenz, renowned American meteorologist and father of the chaos theory, chose this provocative title for a paper he presented to the American Association for the Advancement of Sciences in 1979. He later coined the phrase "the butterfly effect" to sum up the idea. A terribly perfectly metaphor for our times, marked by globalisation. Everything is so interconnected and so fast, so complex and so unpredictable, that all it took was an invisible force like a virus to bring the whole world grinding to a halt. The forced closure required to minimise the spread of the coronavirus has imposed a return to basics on our daily lives, making us reassess our value system to focus on the things that really matter. One of these is the vital importance of a healthy planet to our very survival. This mindset informs all the Bio Bank 2020 Trends, united by an increased awareness

of the effects of actions taken by each and every one of us. It is no coincidence that the pandemic saw sales of organic products increase by 11%, as emerges from Ismea's findings based on Nielsen data. This is because the organic approach truly responds to fundamental needs, including those related to our health and the environment. Demand has increased for foods that are live and active (fermented, sprouted, raw) and simple and essential (basic), as well as foods and ingredients rich in beneficial properties (superfoods, ancient grains, protein and fibre, and even multivitamin cosmetics). Meanwhile, consumers are steering away from added sugars, gluten and lactose (free from) and striving to reduce their environmental impacts through sustainable choices (anti-waste, plastic-free, plant-based, solid cosmetics), increasingly going beyond organic (biodynamic, ethical, Italian).

#AntiWaste zero rubbish

According to estimates contained in the Waste Watcher 2020 Report, Italian household waste fell for the first time in the last year, from € 6.60 to € 4.90 per week. This heightened consciousness is driving supply: shelves now feature imperfect-yet-perfectly-good organic vegetables, individual portion sizes are becoming more common to reduce waste, and cosmetics are coming in smaller packages so that they can be used up before their expiry date.

#Plastic-free inside and out

A ban on plastic in food packaging and micro-plastics in cosmetics and cleaning products. Content and containers must respond to the growing demand for sustainability: from recycled and recyclable to rechargeable, reusable, biodegradable and compostable. This is an increasingly decisive factor for consumers. Packaging is being reduced, and produced from plant-based materials. Micro-plastics are being replaced by natural alternatives.

#Origin Italian, regional, local

Consistent attention is being paid to the origin of ingredients: for Italian consumers, they should be Italian, better yet if they are regional, ideally local. Not only for food, but also for cosmetics. Italians are the first supporters of Made in Italy, well-loved across the world. Regions showcase their local specialities, even with the Dop and Igp marks, a field in which Italy is the European leader. Short supply chain support small producers and protect the environment.

#Veg vegan & vegetarian

Vegan and vegetarian consumption is a well-established and broad-reaching category. In fact, 6.7% of Italians identify as vegetarian and 2.2% as vegan, according to the 32nd Eurispes report. That said, 90% of those who choose these products are neither vegetarian nor vegan, as revealed by a study entitled The Future of Plant-based Snapshot, led by The NPD Group. This trend is spearheaded by Millennials, followed by Generation X and Generation Z.

#Fermented live, active

Fermentation continues to play a key role, to nourish body and skin. Fermented foods aid digestion, promote gut health, strengthen the immune system and boost the metabolism. Cosmetics featuring fermented fruit, plants and herbs have a symbiotic relationship with the skin, moisturising and protecting it, strengthening its metabolism and improving its texture. Prebiotics and probiotics are also growing in popularity, both in food and cosmetics.

#Basic simple, essential

A decisive turn away from ultraprocessed foods, the enemies of cardiovascular health, among other things. Now, consumers are embracing foods with fewer, simple, recognisable ingredients, processed using natural and innovative techniques, which respect the many nutritional properties of organic ingredients. Increasingly conscious consumers are seeking "clean" recipes, "gentle" processes and transparent information.

#Superfood fruit, seeds, spices...

Superfoods continue to feature in a huge number of recipes: yoghurt with exotic fruits, specialities with nuts such as almonds and cashews, pasta and ovenbaked products with linseed and hemp, drinks featuring cereals like oats and quinoa, energy bars featuring berries such as cranberries and goji berries, spices like turmeric and ginger everywhere. Then the amazing seaweeds, microalgae and the highly versatile Jerusalem artichoke. Superfoods also abound in cosmetics.

#Sprouted seeds and sprouts

Easier to digest, and rich in bio-available substances thanks to the germination process, sprouts are a classic choice of active food. Be they cereals, pulses or other plant species, sprouts are precious allies for good health. They are increasingly to be found as an ingredient in a range of dishes: bread, rusks, biscuits, soups, bars and more.

#RawFood nutritional, energy-boosting

Joining fermented and sprouted foods in the "basic" trend category is raw food. The raw food shopping list is long: fruit and vegetables, seeds, berries, sprouts, plant-based oils and butters, cocoa, natural sweeteners and more. By not cooking the ingredients, we avoid losing precious nutrients. To be considered "raw", they must be processed at low temperatures, dehydrated or dried.

#Richin protein & fibre

Plant-based protein sources feature heavily in the "rich in" category of foods. Popular not only among those who follow a vegan diet, but also as a lifestyle choice: seaweeds, fruit, vegetables, seeds, cereals and pulses, with new varieties coming on the market all the time. Meanwhile, fibre is always in high demand. Then there's wholegrain, and products with vitamins, calcium, potassium, iron, magnesium, Omega 3 and antioxidants.

#AncientGrains a common good

The use of ancient grain varieties in pasta, bread, pizza and baked goods has risen by 250% over the last twenty years across the world, and particularly in Italy, as confirmed by Firab, the Italian Foundation for Research in Organic and Biodynamic Agriculture. There are many reasons for this: they're Gmo-free, contain less gluten and have greater nutritional content, they protect biodiversity, promote a short supply chain and are stone-ground, making them less refined.

#FreeFrom sugar, gluten, lactose

And it's thumbs down for added sugars. Ever-increasing data on the number of children and adolescents suffering from obesity across the world paints an alarming picture: 124 million in 2016. In Italy, one in three children is obese. Natural sweeteners and alternatives are on the rise. But the list of "free from" food options remains a long one: free from gluten, lactose, soy, egg, salt, yeast, peanuts, palm oil and more.

#Biodynamic beyond organic

Highly sought after internationally, and with a growing following in Italy, too, biodynamic products are the pinnacle of the organic world. Now that many conventional companies have branched out into organic, numerous organic operators are shifting to biodynamic as a mark of higher quality. The Associazione per l’Agricoltura Biodinamica estimates 4,500 biodynamic operators in Italy. But just over 400 have achieved the prestigious Demeter certification.

#Ethical fair & just

Consumers are increasingly conscious of the values embodied by the overall history of a product. Respect for the environment is necessary, but no longer enough. Respect for people is also required, represented by social and economic justice. This means fair earnings and dignified work, adherence to fair trade principles, inclusion through social farming, standing up against the mafia and opportunities for redemption through prison work programmes.

#ReadyMeals food is served!

The perfect solution when time is scarce, or for a quick lunch break. Ready to eat or reheat, or ready in minutes, without compromising on flavour and goodness. Today, the range is extensive and continues to grow, particularly in the organic sphere: chunky and smooth soups, grains and pulses, cous cous and risottos, burgers and croquettes, seitan and tofu, pâté and sauces.

The coronavirus crisis triggered a hygiene obsession, with a boom in sales of personal and home sanitising products. The obsession has now abated somewhat, but the practice has become part of our daily lives: surface disinfectants, hand gels or, if gel is not available, sanitising wipes. All also available in organic, eco-friendly versions, which of course feature essential oils.

Regarded as the mother of all seeds by civilizations from the Mayans to the Incas, quinoa is a herbaceous plant native to the Andean region of South America. A pseudocereal rich in fibre and phosphorous, it is also a source of plant-based protein, magnesium and iron. Easy to cook, it doesn't require soaking and is perfect in soups and minestrones, or as a side dish with meat and vegetables. The 300 gram package is made from paper and is fully recyclable.

These little seeds are tasty and healthy. An excellent snack, they are packed full of goodness: they are rich in magnesium and phosphorus, with a high concentration of tryptophan (known as the happy hormone), and are a good source of zinc. Perfect with tomato-based sauces according to Mediterranean tradition, this pasta is made using the ancient Cappelli durum wheat variety of semolina. Grown in Italy, it is known for its intense fragrance and ears that can reach up to 1.8 metres high, culminating in unmistakeable black bristles. The semolina dough is prepared using spring water from the Dolomites. The range also includes Rigatoni, Fusilli, Penne rigate, Linguine and Mezze maniche.

This pasta is made using Timilìa, an ancient variety of Sicilian durum wheat that has not been genetically modified, grown by organic farmers in the Valdibella cooperative. Fermented organic buckwheat germ contains a natural nutrient that activates and transforms its numerous elements, making them bio-available. It contains the nine essential amino acids, high biological value protein and key micronutrients: magnesium, potassium, phosphorus, zinc and copper. A small sprinkle brings perfect balance to a range of cooked or uncooked dishes. It can also be added to baked goods. It comes in a 110 gram container.

A delightful dessert, quick and easy to prepare, with all of the flavour and benefits of fruit. Organic, vegan, gluten-free, BioSun Amor di Frutta has a very short list of ingredients, all of which are organic: corn starch, cane sugar and agar agar. Simply add half a litre of your favourite fruit juice, freshly squeezed juice or blended fruit and boil for two minutes, then pour into four moulds and leave to cool.

Vivid yellow, with the unmistakeable aroma and distinctive taste of mango in an organic sorbet with a remarkably intense flavour. Certification What is set out in the European regulations, which are constantly being updated to keep pace with the ongoing evolution of the sector? And how to recognise an organic product from the label. by Rosa Maria Bertino

From pioneers to law

The pioneers of organic farming in Europe, beginning in the early 1970s, were fuelled by a great ideological drive, but had no regulatory guarantees. It took twenty years for organic products to be regulated at a European level. Legislation was only introduced in 1991 with European Regulation 2092. This was replaced in 2007 with Regulation 834, which came into force two years later, setting out specific rules for the production, control and labelling of organic products. A regulatory framework that is constantly being updated. A new regulation that will come into force in 2021 has, in fact, already been approved. Not to mention national legislation, including the Italian 2018 control decree.

Bodies and specifications

There are 18 active control bodies in Italy, plus two solely dedicated to the Bolzano province. They are recognised by the Ministry of Agricultural Policies, based on the criteria of independence, impartiality, effectiveness, competency and reliability. Accreditation in accordance with the ISO 17065 technical standard, on the other hand, is entrusted to Accredia, who over-

sees their work, monitoring their performance over time. There are also a number of private specifications, overseen by national associations and issued to companies that satisfy more restrictive criteria than those provided for in the regulations. These include Demeter, which identifies biodynamically grown products.

Euroleaf guarantee

Consumers can identify whether a food is organic by checking the label, i.e. the product's identity card. The first thing to check for on the label is the Euroleaf, the European organic mark. Mandatory since 1 July 2010, it consists of twelve white stars on a bright green background, with a comet in the centre. To use the Euroleaf, organic products must: • contain at least 95% organic ingredients • comply with the control and certification system rules • specify whether or not the product was grown/reared within the Eu • indicate the code of the operator who carried out the most recent production or preparation • specify the code of the control body. Naturally, the specific information required for organic products is in addition to the mandatory information for all food products.

Certification

Aside from hunting and fishing products, water, salt, certain additives, vitamins and mineral salts, all agriculture, livestock and acquaculture products (including those obtained through foraging) can be certified, if they comply with organic regulations. These are based on respect for the fertility of the soil, the plants, the animals and the ecosystem that they form together, without the use of GMOs, fertilisers, weed killers, pesticides and synthetic veterinary drugs.

How to read labels

In order to read labels properly, it is important to know the various categories of products provided for by the European regulation: • unprocessed organic products products consisting 100% of exclusively organic ingredients of agricultural origin (e.g. apples or pulses). The term "organic" appears in the product sales description and list of ingredients, if provided. • 95% organic products organic ingredients make up at least 95% of the weight of the ingredients of agricultural origin (e.g. vegetable sauce). The term "organic" appears in the product sales description and list of ingredients. Any non-organic ingredients of agricultural origin must be among those listed in annex IX of Reg. EC 889/08 or temporarily authorised by the Member State. • products with organic ingredients containing one or more organic ingredients. The term "organic" only appears in the ingredients list, and the label specifies the total percentage of organic products in the overall ingredients of agricultural origin.

• hunting or fishing products the main ingredient is a hunting or fishing product (e.g. tuna in extra virgin olive oil). The term "organic" can appear in the sales description, but only with reference to the organic ingredients (such as the oil in the above example). • in-conversion products consisting of a single plant-based ingredient grown according to an organic method for at least twelve months. The term "in conversion to organic farming" can appear in the product sales description. When specifying the place where the agricultural raw materials were farmed, the following wording must be used: • Eu Agriculture, where the agricultural raw material has been farmed in the European Union; • non-Eu Agriculture, where the agricultural raw material has been farmed outside the European Union; • Eu/non-Eu Agriculture, where part of the agricultural raw material has been farmed in the Eu and part outside the Eu. The Eu Agriculture or non-Eu Agriculture indication may be replaced or supplemented by indication of a country in the case where all agricultural raw materials have been farmed in that country. Finally, since 2009, use of the term "organic" in the agriculture and food industry - and its abbreviations, such as "eco" and "bio", in the Italian context - is exclusively restricted to organic products, putting a stop to organic cheats, who were using such terms incorrectly.

The growth of organic cosmetics

Long available in health food and herbal stores, and historically popular via e-commerce, natural and organic cosmetics are experiencing a significant growth. Sold through organic perfumeries, the numbers of which are growing year on year, they're also increasingly available in hypermarkets and supermarkets, discount stores, specialist beauty and personal care chains and in the perfumery section of pharmacies. In the absence of European regulations, it is very difficult for consumers to differentiate between pseudo-natural products, with small amounts of organic ingredients, and truly organic products. Herein lies the importance and role of voluntary certification, based on private or international standards, certified by accredited control bodies. While they may involve very different specifications, they represent the current benchmark.

Long live transparency!

According to the Bio Bank 2019 census, over 500 companies have taken this challenging step towards transparency, obtaining certification for over 12,000 natural or organic cosmetics products and over 550 eco-friendly cleaning products. There are seven Italian control bodies with their own cosmetics standards, who also perform certification in accordance with other private Italian or international standards, such as Cosmos and Natrue. Five of these also

oversee eco-friendly cleaning products. There are other cosmetics industry standards that are applied in other European countries, some of which are also internationally recognised. The only European certification system for eco-friendly cleaning products, meanwhile, is Ecolabel, which focuses on the environmental impact of products, as Nordic Swan, the official Scandinavian certification system.

Natural, organic and eco-friendly

The guidelines contained in the various specifications can be simplified to offer the following definitions: • natural cosmetics contains ingredients of plant-based and/or animal origin, not harmful to human health • organic cosmetics contains a variable percentage (specified on the label) of certified organic ingredients of plant-based and/or animal origin • eco-friendly cleaning products contains ingredients that are effective and safe for humans and the environment made from raw materials of plant-based or mineral origin and organic and/or fair trade raw materials. The very welcome result is that conventional producers have been encouraged to move towards formulas that are free from unpleasant ingredients. Labels are proudly declaring these missing ingredients, resulting in cosmetics that are not yet organic, but increasingly "green".
