1. Combine flour, cinnamon, ginger, cloves, nutmeg, cardamom & salt in a bowl until well blended.
2. Beat butter & sugar in a bowl until creamy. Mix in eggs & vanilla. Gradually add flour mixture.
3. Preheat oven to 350.
4. Roll dough about 1/8 to 1/4 inch thick on well floured surface. Cut out cookies with cookie cutters that have been dipped in flour. Place cookies on ungreased cookie sheet with parchment paper. Brush with the egg white & water mixture.
5. Bake 10 -12 minutes, or until just browning on edges. Cool on wire racks. Store covered.
6. Sprinkle with powdered sugar before serving.
