INGREDIENTS 1.5-2 lb. boneless pork chops, about 1/2 inch thick 2 T. olive oil 4-6 medium russet potatoes

1 apple 18 oz. sauerkraut, undrained 1 t. caraway seeds 1 onion, optional

INSTRUCTIONS 1. Peel & dice potatoes, apple & onion. Set aside.

2. Preheat oven to 350.

3. Pat pork chops dry & season lightly with salt & pepper. Heat dutch oven on stovetop over med-high heat.

4. Add oil. Once the oil is shimmering, add the pork chops. Brown on each side, about 3 mins. per side.

5. Set the pork chops aside & add sauerkraut to the hot dutch oven.

With a wooden spoon, gently scrape bottom to deglaze.

6. Add potatoes, apple & onion. Lay pork chops on top. Sprinkle with caraway seeds. Cover & bake for 1 hour.
