2 lb. Tart Apples 1 Tbsp. Butter 4 (3/4 inch) Loin Chops 1/2 Cup Dry White Wine 1 Cup Heavy Cream 1/3 Cup Dijon Mustard Salt and Freshly Ground Pepper
1. Preheat the oven to 400°F. 2. Quarter, core and peel apples; slice thin. 3. Spread them in a lightly buttered baking dish and bake for 15 minutes.
4. Trim excess fat from chops; salt lightly. 5. Brown in butter in skillet, medium heat for 7 to 8 minutes per side. 6. Arrange chops over apples. 7. Deglaze skillet with wine; reduce liquid by half and dribble it over chops. 8. Mix the cream and mustard. Season with salt and pepper. Pour over chops and apples. 9. Bake for 15 minutes longer or until done.
