Editorial This is a project that has been in the works for about a year.

It almost feels surreal, bringing it to life and having it available for anyone to see. I remember the day I got the idea about this magazine. It was born from an ambition and a goal to bring the idea of studying abroad to students, both those matriculated into the University of Maine and those who are not. I wanted to make something that would be accessible to anyone interested in travel in general. This magazine is the outcome of that goal and I could not be more excited to bring it to everyone who decides to read it.

My experience with studying abroad came when I was entering my sophomore year of university. I’d known well before then that I wanted to go to Japan. Being able to achieve that longtime goal and now having the experience to look back on and pull from is something that I will always be thankful for. Thankful to the people who made it happen– all those who worked in the Office of International Programs–and thankful to those who believed in me and pushed me to achieve that traveling goal–various friends and family. I can say, with absolute certainty, that I left America as one person and returned from Japan as someone else.

Being able to spend that time abroad has awarded me the chance to look at the world through eyes that were otherwise shielded and closed-off. I only ever knew a few states in America before I left. Now, I have friends all over the world.

Letter I hope that those of you who take the time to read this magazine can find a taste of travel within the pages. I hope that you can read through some of the interviews from past study abroad alumni and stories from students who went abroad and come away with something you may not have had before reading.

I would like to thank everyone who contributed to the magazine from the alumni who agreed to be interviewed to the students who submitted stories and the amazing people who work in the Office of International Programs. This would not have been a project that could have been completed without them.

When did you go abroad?

I studied abroad at University College Cork (UCC) in Cork, Ireland, during the Spring 2020 semester.

What did you study?

I took elective courses in Irish Language and history and Ancient Celtic studies.

Where did you stay?

I stayed in the Victoria Lodge 6

apartments, which are fully furnished apartments owned by UCC. I had three wonderful roommates, all of whom were also visiting students.

What was your experience like?

Studying at UCC was one of the best experiences of my life. It pushed me outside my comfort zone and afforded me memories and lessons that I will always treasure. For example, going through the immigration process certainly pushed my comfort zone. On

my first day of orientation, the orientation leader said, “stand up if you are an immigrant.” When few people rose, she said, “You should all stand; you are all immigrants.” This was a significant perspective shift for me as I had not thought of it that way, and this made me more cognizant of my position as a global citizen. Going through the immigration process under any circumstances, no matter how positive, can be challenging. In addition, to significant lessons like this one, my experience also pushed my comfort zone on a small scale every day. Best of all, I met some incredible students from around the world, who continue to be close friends of mine.

It is also notable that my experience included having to evacuate from my

program. Due to the COVID-19 pandemic, I had to come home suddenly in March, about halfway through my scheduled program.

While it was disappointing to not be able to spend the remainder of my time in Cork, I look back on this strange experience as a learning opportunity because it taught me resilience and flexibility, and I am thankful I was able to return safely home during that tumultuous time.| What was the most memorable thing you did?

The most memorable experience was exploring within and outside of Ireland with my friends. We made weekend trips to Dublin, Galway, and London and visited several other places. The countryside of Ireland is so picturesque, with sheep and ancient castles decorating the

bright green landscapes. My favorite spot was the iconic Cliffs of Moher, which we visited during our Galway trip; the pictures absolutely do not do it justice. The cities themselves are so vibrant. I was so impressed with how friendly the locals were, especially in Cork. It made me feel at home very quickly. My memories are defined by the people with whom I shared them, and I am grateful that my friends and I can collectively reminisce on all of the highs and lows.

Another unique and memorable aspect of my study abroad experience was actually coming home. I woke up on what I expected to be a typical Thursday to a slew of missed calls and emails from family and school officials saying that I needed to come home ASAP. By that evening, I was on a flight home. It was a whirlwind of a day that I will look back on as a defining experience.

Do you have any advice for someone looking to apply to the George Mitchell Peace Scholarship?

The primary piece of advice I would give if you are considering applying for the George Mitchell Peace Scholarship, or studying abroad in general, is that you only regret the chances you don’t take. When I was initially considering studying abroad, I didn’t know if it would be realistic for me, but it is actually very accessible with proper planning.

Start researching early, and use the resources that are available to you, such as your peers and the Office of International Programs. For the George Mitchell Peace Scholarship in particular, do your research about The Troubles in Northern Ireland and Senator Mitchell’s contribution to the Good Friday Agreement. Equally important, make your application personal to you: what draws you personally to study in Ireland, and what do you hope to gain from it? Don’t hold back, and let your interests take you somewhere exciting!

Meet the People Behind the Scenes

Orlina Boteva serves as the Director of the Office of International Programs. A native of Bulgaria, Orlina earned her undergraduate degree in International Affairs at the American University in Bulgaria. She spent her junior year of college as an exchange student at UMaine during which she also served as an RA in Knox Hall. She returned to UMaine to complete her M.A. in History and M.Ed. in Higher Education. Orlina joined OIP in 2009 as the Study Abroad Advisor. Orlina brings a passion for working with college-age students combined with a strong background in advising, intercultural communication, and student affairs.

I love working with college students and helping them transition to college, get excited for a global experience, and support them through the journey.

My favorite part about working at OIP are working with the students and my colleagues.

I studied abroad at the University of Maine from 1999-2000 and returned for my two master’s programs.

Erika is an Estonian-American from Syracuse, New York.

In 2007, they studied abroad in Tübingen, Germany and in 2009 moved to South Korea for a year to teach English.

After traveling across Europe and parts of Asia, they went to SIT Graduate Institute and received her MA in International Education. They are passionate about accessibility and inclusion in study abroad, as well as the internal journey that occurs when adapting to a new culture.

In their free time, they enjoy creative writing and dancing Argentine tango.

I joined OIP because I was hunting for a study abroad position in a nice location and with a good office culture that would allow growth. I definitely found it here!

My favorite part about working at OIP is everyone in the office; they’re all so supportive and care so much about what they do and the students they interact with.

Brian joined the OIP in September 2013 as a student employee.

In April 2016 he was hired as a full-time staff member. His duties include maintaining the Student and Exchange Visitor Information System (SEVIS); supervising student employees; providing support to all areas (admissions, study abroad, and international student and scholar services) of the office; and reception. Although he was born in Maine and has lived there his whole life, Brian has always been fascinated by other cultures and loves to learn about life in different places around the world. This lifelong fascination resulted in bachelor’s degrees in French and secondary education which he earned in May 2018. Brian loves getting to know and work with 22

international students while supporting programs like Culturefest (held annually each November) and International Dance Festival (held annually each February). He looks forward to continued work with international students and supporting their success at UMaine.

I became part of OIP because I believe that international students bring essential and diverse world views and perspectives to our campus community. Their involvement in courses, discussions, and events brings essential outlooks that would otherwise not be available. I joined OIP so that I could help bring international students to campus and support them in any way I can.

My favorite part about working at OIP is meeting students from all over the world, getting to know them, seeing them share their culture, and watching them succeed. I also love working with study abroad students and seeing their growth and development during and after their experiences abroad.

Originally from Guangdong, China, Ella moved to Buxton, Maine when she was 14. After graduating from Bonny Eagle High School, she attended the University of Maine and earned her business degree in Marketing and Management. Throughout her college career in UMaine, Ella was highly involved with both international and multicultural communities. She loves working in a higher education setting. She often describes universities as a place for inspirations, a symbol for growth and a path to success.

I have always loved OIP, even when I was just a student at UMaine. When I saw there was a position open in the office, I jumped with excitement and rushed to apply.

I made the mistake of talking myself out of studying abroad when I was a student and I still regret it to this day. When you are a working adult, it really limits the chance to live in a country for over two months. I know it is scary, and there are a million ways to talk yourself out. My advice, don't.

This singular word might be that one cheat code to unlock a different path for you in life.

Mireille grew up in Brittany, France and joined the office in 1998. She advises international students, faculty and staff on immigration issues. She also oversees Women of the World, a support group for international women in our area. Mireille enjoys being a part of commencement ceremonies, celebrating students’ achievements, and enjoys meeting with international alumni when they return to visit UMaine!

Initially, I just needed a job. As time went on I got to learn how special international students are and how important they are to the campus community. One of my favorite aspects of working at OIP is meeting the students, getting to know them and seeing them get through their degree program, from arrival day to commencement, and beyond for some.

Susan joined the staff in 2001. She works with University of Maine students going overseas as well as short-term visiting students from UMaine’s exchange partner schools. She also assists the Education Abroad Advisor with prior approval, pre-departure orientation, transfer credit, and other aspects of the program.

Susan serves on the University Club board of directors and is active with the American Association of University Women.

Susan Nolan Landry

Administrative Specialist for Study Abroad

Initially, I was a temporary employee. The work of the unit interested me enough to apply for the study abroad job when it opened.

My favorite part about working for OIP is helping students broaden their horizons! Also, working with colleagues of diverse backgrounds all focussed on enabling international education and campus internationalizations.

Sarah has been advising students and scholars on immigration issues and cultural transition since September 2003. Her background is in advocacy, immigration and legal services and she has had a life long love of travel and international affairs. She is a graduate of the University of Vermont and in 1991 she studied at the University of Lancaster in the UK. In 1998 while teaching ESL, she had the opportunity to travel throughout Korea and visit both China and Japan.

In my lifetime I have traveled widely and always received such kindness from people in whatever country I was visiting or living. I wanted to have a job where I could provide the same kindness and support to those visiting the US. My times abroad also helped me to have a different

My favorite part about OIP is the awesome team of very caring people. We care for our students but also for each other. This environment allows us to do our best in our jobs each day.

Andrius joined the Team at the Office of International Programs in July of 2018 and brings along almost six years of experience in international admissions, recruitment, and enrollment management fields. In his current role serving as the Assistant Director of International Admissions, Andrius is looking forward to helping talented students from all over the world to discover the immense value that higher education at UMaine represents. Originally from Lithuania, a small country in the European Union, Andrius found his home away from home in the beautiful and welcoming state of Maine where he, along with his wife and three children, 32

have resided since the early 2000’s. He loves traveling and exploring, enjoys the outdoors, and is a huge fan of space exploration. Having gone through the experience of enrolling and studying as an international student in the United States, Andrius is uniquely positioned and always passionate to share his experience and advice with those considering studying at UMaine.

Having been a former international student myself, I appreciate the opportunity to give back through my work at OIP by sharing my own experiences with our international students and my love for the state of Maine.

My favorite part about working at OIP is being a member of the experienced and caring team. I absolutely cherish my interactions with all of our amazing international students! In my current role, I am excited and grateful to be able to work with talented students from all over the world and help them discover the immense value that higher education at Umaine represents.

Jess is a Maine native and graduate of the University of Maine. She received her Bachelor of Arts in International Affairs in 2017. Her studies centered around world cultures, populations, and languages and she spent much of her time learning Spanish and French. During her undergraduate career, Jess was involved with many multicultural events and programs that brought both the international and domestic communities closer together.

This included participating in activities such as CultureFest and International Dance Festival with the OIP as well as working with the Modern Languages & Classics Department to facilitate World Languages Day for the area’s local high schoolers. Pursuing this passion further, 34

Jess joined the OIP Team in 2021 to assist applicants with the admissions process and provide a welcoming introduction to the UMaine community. She looks forward to continuing her work bridging the gaps between diverse groups of people with her knowledge of campus and the local area.

I became part of OIP because I have a real passion for connecting with people from all over the world. I think that the pursuit of education (especially in another country!) is something that not only can make us more well-rounded and accepting individuals, but is also something to truly celebrate.

My favorite part of being in OIP is that everyone in the office has a real heart for student success - whether they are incoming students from abroad, or those that are from here going to study elsewhere. We want to make sure that their experiences are positive as best as we can, and that shows in our work.

Shania joined OIP as a junior after returning from a study abroad in Japan. She started as a Peer Advisor, organizing events and helping to advise students interested in studying abroad.

She graduated with a BA in English and is now working as an assistant to the Study Abroad Advisor. During her time in the office, she works to support the Study Abroad Advisor, organize events for students, and maintain social media and website accounts.

I joined OIP because I wanted to help other students achieve their study abroad goals. From before I entered university, I knew I wanted to go abroad to Japan.

Achieving this goal was something that changed my outlook on my future goals and allowed me the chance to make lifelong friends. I wanted to help other people have their own experiences.

I studied abroad during my second year at Waseda University in Japan. I was supposed to be there for an entire year; however, the COVID pandemic cut my time short. Despite this, I still treasure my time there and the people I met.

Fran Woodworth joined the OIP Team in Summer 2021 as the programming Graduate Assistant. Fran is from Rockport, Maine, and received her Bachelor of Arts in political science from UMaine. Currently, she is pursuing her M.A. in Global Policy at UMaine’s School of Policy & International Affairs (SPIA).

I was interested in the position primarily because of my experience studying abroad during my undergraduate career. I learned to assimilate to a new culture and speak a new language, and found the international student social gatherings and programs to be very helpful in the process of learning to live in a new place and getting the most out of my time there. “I work as a policy advisor and behavioural scientist at a consultancy called The Behavioural Insights Team in London. In particular, I specalize in applying behavioural science to edutainment, international stabilization, and social cohesion programs.”

l Bothen mester at Sea in Where and when did you study abroad?

A: I studied abroad twice while at UMaine, once as a Sophomore with Semester At Sea, and went to 12 countries in one semester. I loved it so much and was so lucky to do it early enough in my time at college that I was able to also study abroad for 9 weeks in Spain the summer after my junior year.

Why did you choose to study abroad?

A: I was always drawn to other cultures and still feel the best way to experience one is by living there and interacting with people. I also wanted the opportunity to travel extensively while I was in college and to grow from having extremely different experiences to what I grew up with. Being from Maine originially and going to college in Maine, study abroad presented the best opportunity to do this.

What was the most rewarding part of your study abroad experience?

A: It’s so hard to pick just one thing, but definitely the most lasting piece has been the friendships I’ve made through it and meeting people so similar to me. It’s great to always have a group of people who you can travel with, or are willing to say yes to an adventure in such a short time and those kinds of experiences bond you together really quickly. I’m still great friends with my friends from study abroad today.

How has study abroad impacted you?

A: I always knew I wanted to live abroad but studying abroad gave me the confidence to do so more permanently. It catalyzed my desire to travel and immerse myself in other ways of life, and is in large part why I did my graduate school in Berlin, Germany and live in London Today.

What’s some advice you would give to future students looking to study abroad or who are currently abroad?

A: If you’re unsure or are waiting for a right time, just do it! There is never a right time to uproot your life and leave your friends but it is SO worth it, and at the end of the day it is very temporary so take the plunge! The feeling of wanting to do it won’t go away so better to just commit.

For those abroad, just make the most of it! And try your best to journal and take videos. Focus on the feeling that the experiences make you have as that can often be the best way to remember something in the future. Also, don’t be afraid to do the things that are most important to you, even if it involves travelling with people you don’t know as well! It may be your opportunity for a long time!

Why did you choose to study abroad?

A: College is all about pushing your boundaries and getting out of your comfort zone, so as a kid from small-town Maine I wanted to experience living on the other side of the planet.

What was the most rewarding part of your study abroad experience?

A: Being able to experience a different culture was extremely eyeopening and helped me understand a lot more about how much where we come from shapes what we think. Now I am both much more aware of that and sensitive to it as I interact with others. I also 50

got to swim at the Great Barrier Reef, road trip through the Outback, learn how to surf, and in general experience the incredible nature that Australia has to offer.

How has study abroad impacted you?

A: More than I can easily explain.

But briefly: because of study abroad, I had the confidence to move to Germany to do my PhD, and that led to several other things that ultimately landed me back here. My life would be very different had it not been for this experience.

What are some challenges you overcame through study abroad?

A: The main challenge I overcame was one of confidence. You can never be sure of what you can handle until you do it. After that, everything seems a lot easier by comparison. A lot of situations I 52

faced in Australia were difficult: being as far away as physically possible from my family and friends, having to find my own housing in an unfamiliar country, at one point even being without housing as my first arrangement fell through. But I came through those okay– better even, as I understood more about the world. Now, I know that when difficult situations arise, I can handle it.

What’s some advice you would give to future students looking to study abroad or who are abroad?

A: Take every opportunity to push your boundaries. Make the time for that extra side trip, talk to the folks around you (especially if you’re working on your language skills!), make an effort to be part of the local culture. This is a once-ina-lifetime learning experience that you’ll be looking back on decades from now.

James Floyd Leeds, England Why did you choose to study abroad?

A: Part of my choice was pure whim–it sounded interesting to do. I found a flyer posted on a bulletin board around campus about a meeting happening for study abroad and went to it. I think I was looking for some sort of academic challenge while also satisfying a curiosity of what it would be like to live in a different country.

Is there a reason you chose Leeds, England?

A: I previously had 5 years of Spanish between high school and college. I chose an English speaking country so I wouldn’t have to worry about the struggle of speaking or learning another language and could focus on the academic coursework.

“I studied abroad 50 years ago at the University of Leeds in England. I went for an entire year at a very turbulent time to be growing up. A lot of crazy things were happening in the country. I think I was looking for some sort of break from everything happening and stability.

There was the Vietnam war going on and if you were male and didn’t have student deferment, you’d be drafted.”

When I started applying, it was already pretty late in the game. You have to remember, during this time, you had to do everything alone. There wasn’t the same type of guidance or help that a lot of the students today receive. The deadlines for a lot of the big name schools (Oxford and Cambridge) had already passed their application date.

I applied to 5 different schools and was accepted to all of them. My main reason for choosing Leeds was because I like the literature that they portrayed on their flyers and course 56

descriptions. I liked what they had to offer me.

I mostly took Sociology as that was my major and also some Philosophy classes.

I liked the atmosphere that Leeds gave off. There was a good sense of life on the campus. The student union and student engagement was a big deal.

What was the most rewarding part of studying abroad?

A: The British university was a large part of my experience as there was less emphasis on lecturing and more on tutorial groups. There was a good student/teacher relationship and a challenging atmosphere where you had to be actively engaged with your courses.

There was also when I moved out of the university residences and into an apartment with some friends (people who I still speak with today). We got an apartment in a working class neighborhood and this was a very immersive and totally different from the intellectual academic atmosphere compared to the blue collar working environment.

There were multiple things I found rewarding that was thanks to being engaged in the culture. When you study abroad, it becomes a part of you.

How has study abroad impacted you?

A: Because of the challenges I faced, I became much more self-assured in myself. I went abroad during a time where I had already started to grow and going abroad allowed me the chance to negotiate the complexities of life with confidence, something that will help me forever.

When I returned for my senior year on the University of Maine campus, there was a professor that I always wanted to take a course with; however, the registar had said no since I didn’t have the necessary prerequisites. There was a time, before I went abroad, where I would have just

accepted this but I was in a different place internally then, so I went to the professors office and asked about the course. We spoke about the course and also my time abroad. After that discussion, the professor had said he wanted me in his class.

What’s some advice for future study abroad students or students currently abroad?

A: Just do it because it’s a great opportunity. There’s so much support and information about programs that you have today that I only dreamed of having when I went.

Everyone should keep a journal and document the experience, probably more so later when you’re looking back on things.

This will also help to keep you more centered and in the moment.

Journaling

Since the olden days, journaling has long been a way people have kept their thoughts organized and their person centered. It’s been a tried and true method of storing precious memories and experiences.

While you’re studying abroad, and even when you’re not abroad, journaling may be a good idea for you. We’re not talking the old cliché of “Dear Diary,” either. Journaling can be a simple bullet list of things you see, a sketch of a building or people you pass. It can be a singular thought you have for the day or an in-depth reflection of your week or month.

Journaling is whatever you want it to be because these are your memories and your experiences for you to document and remember however you find the most engaging and most natural for you.

Some people struggle with sitting and just looking at an empty page, but there are other ways we can journal. There are prompts online asking standard questions of “what did you see today?” To the bizarre of “what color would you say best describes your day?”

Get creative with your journal and make it wholly your own so that, when you look back on your time abroad, you can remember those moments that may have otherwise been lost in the recesses of your mind.

Some people may think you need a funky set-up to journal; that maybe you need a perfect leather bound notebook and a special pen. For some people, sure, maybe that’s how they get their journaling groove on, but for all people, no.

Everyone is different and as such, all journaling will be different, too.

Realistically speaking, all you need for journaling is a normal old notebook and a pen or pencil. There’s nothing fancy about it. If you have access to an electronic device, then you don’t even need a notebook or a writing tool, you can just type away. For some people, this works great, for others who enjoy the feel and practice of physical writing, it doesn’t tick all their journaling boxes.

Journaling doesn’t have to be private either, or even be called journaling for that matter. You could start a travel blog, either private for your 62

family and friends, or public for all the world to see!

You can start an online blog/ journal for free on sites like wordpress and blogger. A lot of people find this a useful way to hit two birds with one stone as it allows you to keep track and note down all your memories and experiences while also updating your loved ones about the current

Strangest Experience Abroad I would like to preface this by saying, I got really, really carried away writing. This is my go to story when people want to hear about my experience and I love sharing it. I think it paints a great picture of the highs and lows that I faced when going abroad, and lends some advice on how to deal with uncomfortable situations. I have a ton of photos from this trip and would be happy to share them along with this story!

If you ever want to have a wacky story to tell, take a weekend trip to Africa. While studying in Valencia, I booked trips almost every weekend to a different country, trying to take full advantage of Ryanair’s cheap (but turbulent) flights. Tickets to Tangier, Morocco popped up on my travel notifications for only 30 euros round trip! I bought the tickets that day and booked a four-story AirBnb in the old city (feat. A rooftop deck). In an effort to get more comfortable being uncomfortable, I decided not to do research about where I was staying or how to get there.

The five of us were greeted in the Tangier airport with a melting pot of languages, all of which I was unfamiliar

with. This proved to be a large problem as my friend’s drone got confiscated by Airport security, he took it in stride, and we pressed on. Through luck and sleep deprived brains, we made it into a taxi on the way to Medina (the old city). A collaborative effort between myself and a Finnish journalist, who was writing an article about a traditional Moroccan festival, secured a taxi.

We exchanged travel stories and our mutual anxiety distracted me from the anticipation of approaching the city. Our driver was going for a new land speed record through the winding streets of Tangier.

This part of the story may be construed as what not to do while 72

studying abroad, learn from my mistakes (if you want to). A local named Muhammed greeted us at the door of our AirBnb, he was not our host although he swore he knew him, but being a trustworthy individual, I let him guide us around the city. This went surprisingly well, he brought us to an outstanding restaurant, introduced us to a medicine man, he even organized a taxi for noon the next day. We had heard of a city painted in blue called Chefchaouen, the cave of Hercules, and camel riding through the desert.

Muhammed met us the following day and I could tell something was off; he answered his phone, arguing with the person on the other end. The phone call ended abruptly. He noticed a taxi that had

approximately 11 people in it. He yelled “Taxi!!!” while running at the speed of sound down the street. He was gone, never to be seen again.

I noticed a well-kept van with the label “tourist” on the side and front, perfect.

An elderly man sat in the driver’s seat, and I knocked on his window with a proposition. We haggled in a combination of Spanish, French and interpretive dance. He was willing to take us to the blue city for 100 euros, I heavily stressed the point that he would take us there and back, I did not want to be abandoned in a city two and a half hours away from Tangier. He accepted my deal, we ceremoniously shook hands and I paid him half of what was promised. The van was a welcome escape from the sweltering city, we agreeably climbed in and sealed our fate.

For two and a half hours we winded our way across the Northern tip of Africa; I was expecting desert but the van window only displayed mountain villages. The driver was not wearing a seatbelt, so I followed his lead. We were going through the third mountain pass of the 74

He made it around the corner and passed the bus, I made ats per minute.

We made it to the city unscathed, the Forumla 1 Driver dropped us in a city parking garage and said he would meet us back there in 3 hours. Our first stop was food, we ordered lamb tangine and mint tea, traditional Moroccan customs.

We dined with a confusing number of cats. One got a little personal with my friend and scared the mint tea right out of his mouth. Chefchaouen was astounding; its streets and buildings were all painted a deep blue, complimenting the city’s delightful amount of flowers.

Our driver met us in the parking garage and our time in the blue city was over. We winded our way back through the mountain passes to Tangier, around every switchback and over each cliffside. As we dipped over the last hill we were received by a sunset of purples, pinks, reds, and oranges. This was a moment where everyone in the van paused and lost themselves in the sky. I could not communicate the beauty of the scene to the driver, and he could not communicate it to me. But we both experience the same emotions evoked by the sky. I learned that despite language or cultural barriers, we can all experience the same emotions, and that is stronger than what divides us.

A Homestay in Costa Rica

My homestay experience has been amazing so far. I live with my host mom, dad, and brother. Being immersed in the culture by being with a host family has helped me understand the Costa Rican (Tico) mannerisms and been able to learn Spanish. At every meal, we talk about what happened during the day and places I plan to go for my next weekend trip. I have to admit, it was weird at first living with complete strangers, but I have

come to love them as family.

My host mom doesn't speak english, but being able to understand what she is saying only a month into the program is extremely rewarding. If anyone has a choice to stay with a host family I highly recommend it. I love my family and I haven't heard a single bad thing from the other students who have host families as well.

What is some general advice for students looking to apply for a scholarship?

There are four important aspects that make students successful: 1) Students should look into opportunities early, one or two years ahead, so they’re prepared and can choose experiences, courses and extracurriculars that then enhance their application(s).

2) Students should leave ample time for essay writing and working on their application.

3) Students should try to apply for at least one scholarship a year, even if the process seems daunting. It’s always worth trying 4) Students should believe in themselves and in all the skills they have gained. Don’t be afraid to brag a little to show that you are proud of your accomplishments.

Are there myths about scholarships that people seem to always believe?

Yes, several. Students often feel like they don’t have a chance at receiving the scholarship when, in reality, there are some opportunities with a 30-40 percent yield. Others believe that they can pull an application together with little preparation, when that is never the case. Many students believe that our scholarships only apply to people who need financial aid; however, the scholarships that we work on are usually meritbased rather than need-based.

What do you think students struggle with the most when applying for a scholarship?

The application component that students most struggle with are the essays, specifically in articulating their experiences and skills within the essay and connecting them to the scholarship’s mission. I find that this struggle often occurs because this is a 106

student’s first time writing such an essay. Students have never thought about connecting their passions with experiences and skills. There’s a certain degree of personal and internal discovery that a student goes through as they connect their background to their future goals. Often, students have not yet made these connections. Even when they don’t receive the scholarship, students say that articulating their life and academic experiences, and discovering their future plans, is one of the most rewarding part of applying for the scholarship.

What Scholarships do you recommend for students looking to go abroad as an undergraduate? As a graduate?

Crema Catalana The Crema Catalana, or Crema Cremada, is a desert similar to crème brûlée. The only difference between the two desserts is that Crema Catalana is made with milk rather than cream.

Enjoy this simple to make delicious dessert with friends or family.

Ingredients: Milk 1L Egg Yolks 8 Sugar 100g Cornstarch 20g Lemon rind to taste Orange peel to taste Sugar to caramelize to taste

We will start by cracking the eggs and separating the yolk from the whites. Do not throw them away, you can use them for other preparations.

In a pot we put the milk to heat with the lemon and orange peel and the cinnamon stick. On the other hand, in a bowl, mix the sugar and the cornstarch, stirring well, add the beaten egg yolks and mix everything with some rods.

When the milk starts to boil, pour in the mixture of yolks, sugar and cornstarch that we will pass through a coarse strainer. We stir over medium heat and without stopping to stir with a rod so that it does not stick to us until the mixture boils again. We pour into individual casseroles.

Let cool without covering and sprinkle with the rest of the sugar that we will have distributed among our creams. We burn with a kitchen torch until the sugar caramelizes. Serve cold.

We start by peeling and chopping the potatoes and cabbage. Put the potatoes to cook in a large saucepan with water and salt. When they are half cooked, add the cabbage and let it boil until everything is well cooked. Then we strain them and put them in a deep plate.

With a fork we mash everything (chop) to form a uniform puree. Peel and roll the garlic cloves and fry them in a pan with oil. We remove them, and in that same oil we fry the bacon cut in pieces, until they are well crispy. Remove the bacon from the pan and pour the oil over the cabbage and potato mixture.

Put the pan back on the fire and cook the cabbage and potato mixture on both sides, as if it were an omelette.

Flatten the trinxat into four plates, place the garlic and crispy bacon on top and serve immediately.x

Trinxat de la Cerdanya The trainxat food is one that comes from the Pyreneess. The food is made with potatoes, cabbage and pork meat. The name trinxat, means “chopped” or “mashed.”

It’s a simple to make dinner that will leave you craving more.

Ingredients: 1 Winter Cabbage 1Kg potatos 4 slices of bacon 4 Garlic cloves 1 tsp Extra Virgin Olive Oil Salt to taste

Dal Makhani This food is one that originated in New Dheli, India. If you’re looking to bring a little life to your dinners or add a nice cultural variation, try making this lentil dish.

Ingredients 1 cup dry whole urad dal (lentils), debris removed and soaked in water for 6 hours or overnight. (They will take less time to cook this way!)

4 cups water 1 15 oz can of kidney beans (1 ½ cups), drained and rinsed 3 tbsp unsalted butter or ghee 1 tsp whole cumin seeds 1 small bay leaf 4-6 cloves garlic, minced 1 tsp minced fresh ginger 1-2 red chiles, minced 1 small onion, finely chopped,

about 1 cup 1 cup tomato puree salt, to taste ½ tsp garam masala ½ tsp ground coriander ½ tsp cayenne or other chili powder ¼ tsp turmeric ¼ - 1/3 cup heavy cream

Add the soaked dal to a pot with 4 cups of water, over high heat. Once boiling, lower heat to a simmer and allow lentils to cook, uncovered, for 30-40 minutes until tender. Drain well, reserving 1 ½ cups of the cooking water, and set aside.

Meanwhile, in a large sauté pan or Dutch oven, heat butter over medium heat. Add cumin and bay leaf and cook for 30 seconds, until cumin begins to darken.

Add garlic, ginger, and chilies and cook another 30 seconds until that signature garlic-ginger paste has formed.

Add onion to the pan and cook until translucent and browning at the edges.

Add the tomato purée, garam masala, coriander, cayenne, turmeric, and the reserved water. Stir well to combine, and season with salt to taste. Simmer over low heat for 15-20 minutes, stirring occasionally, allowing to thicken just slightly.

Add the cooked dal and kidney beans, and cook on low for another 10-15 minutes, stirring occasionally to prevent sticking.

Add heavy cream, and simmer for 5 more minutes.

Season to taste. Serve with fresh basmati rice—find our recipe here.

Prepare batter: Combine eggs, salt, pepper, cayenne, 1 cup plus 1 tablespoon flour, and milk in a large bowl; whisk thoroughly until batter is very smooth and no lumps remain.

Whisk in water. Cover and let rest at room temperature for 1 hour.

Prepare sausages: Heat vegetable oil in a skillet over medium-high heat. Add sausages and cook until browned, 2 to 3 minutes per side. Remove from the heat and transfer to a buttered 9x12or 9x13-inch baking dish. Pour oil from the skillet over the sausages; brush oil with a pastry brush all over the bottom and up the sides of the dish.

Start onion gravy: Melt butter in the same skillet over medium-high heat. Add onion and salt; sauté until soft and starting to brown, 5 to 6 minutes.

While onion is cooking, pour batter in and around the sausages. Place in the center of a cold oven and turn temperature to 500 degrees F (260 degrees C). Set oven timer for 30 minutes.

While toad in the hole cooks, finish onion gravy: Stir in flour and cook for about 2 minutes.

Whisk in chicken broth and return to a simmer. Add Worcestershire sauce and balsamic vinegar and simmer until gravy thickens up and reduces, about 5 minutes.

Reduce heat to low and stir in green onions. Taste and adjust seasoning.

When timer goes off, remove toad in the hole from the oven; it should be browned and puffed. Spoon gravy over the sausages and garnish with green onions and chives.

Serve with extra gravy.

Toad in the Hole Toad in the hole or sausage toad is a traditional English dish consisting of sausages in Yorkshire pudding batter, usually served with onion gravy and vegetables. Historically, the dish has also been prepared using other meats, such as rump steak and lamb's kidney.
