NEW TAKES ON VODKA
New releases and creative innovations are pushing this go-to category forward BY ALIA AKKAM
risp, clean, unfussy vodka is exactly what summer demands, but the spirit undoubtedly has year-round appeal. According to the Distilled Spirits Council of the United States, vodka represents 27 percent of all spirits sales. Here is a look at some of the brands and innovations that are keeping the market dynamic.
C ● New
Amsterdam Vodka
Along with a classic 80-proof version, New Amsterdam Vodka is known for a mighty 100-proof iteration and a lineup of flavors such as pineapple, red berry, and coconut. Spirit of Gallo has recently pushed the brand into the ready-to-drink sphere with Wildcard. This range of 8% ABV canned

vodka-based beverages consists of a tart Original Hard Lemonade, a sweet-andsour Classic Hard Punch, and a citrusy Lemon Hard Tea. ● CÎROC
Ultra-Premium Vodka
Now part of CÎROC’s permanent collection, CÎROC Summer Citrus embodies the lighthearted season with its five-times distilled vodka buoyed by tangy notes of blood orange and lime zest. The versatile spirit works just as well in an easy-to-prep spritz as it does in a Cosmopolitan.
● Smirnoff
Vodka
Ready-to-drink Smirnoff Ice Smash Lemonades are a boozy (8% ABV) upgrade to summer’s go-to quencher. In both of the 16-ounce can offerings, Peach Lemonade and Pink Lemonade, zippy citrus is the star, melding either with juicy peach or bright raspberry. ● Broken
Shed Vodka
Sustainable vodka brand Broken Shed is deeply intertwined with its homeland of New Zealand. Distilled from whey, it is heightened by the country’s natural aquifer and spring waters. Highlighting this relationship is Broken Shed’s Vodka of Tomorrow campaign. First introduced last year, it will continue through 2022, spanning video, print, and social media, with displays that put the spotlight on New Zealand’s forward-thinking mindset.
● Deep
Eddy Vodka
Texas-made Deep Eddy turns out a number of flavored vodkas like sweet tea and cranberry. The brand’s ready-todrink, carbonated Vodka + Soda line, then, was a natural outgrowth. Enlivened with real juice, these 12-ounce cans of 4.5% ABV, 120-calorie seltzers are available in ruby red grapefruit, lemon, and just-unveiled lime. ● Seagram’s
Vodka
Concocting summer cocktails is a cinch with Seagram's fruity Strawberry Lemonade or tropical Mango Pineapple vodkas. Pair the former with sparkling water and lemonade and cap it off with a fresh strawberry garnish. The latter can be savored on the rocks or mixed with fruit juice. ● Grainger’s
Deluxe Organic Vodka
Grainger’s Deluxe Organic Vodka, part of the M.S. Walker portfolio, is a celebration of America’s heartland. Produced in Missouri from whole-kernel corn grown at organic-certified and non-GMO farms within 100 miles of the distillery, the vodka is distilled seven times and filtered five. ● Barr
Hill Vodka
Vermont distillery Caledonia Spirits is well known for its Barr Hill and Tom Cat gin varieties, but Barr Hill Vodka also stands out for its embrace of local and regional wild honey. Distilled entirely from this raw, unheated honey (each bottle contains four pounds) no
more than two times, the vodka balances nectar aromatics with floral depth. ● Redmont
Vodka
Founded in 2015 (NBA legend and Alabama native Charles Barkley became the majority owner in 2019), Redmont Vodka is produced at Birmingham’s first legal distillery since Prohibition, which is also home to Vulcan Gin. Spawned from nonGMO corn and reverse osmosis water, the vodka is distilled eight times, winding its way through an advanced carbon filtration system that extracts impurities. ● Smoke
Lab Vodka
NV Group’s Smoke Lab Vodka is a pure expression of India, spun from freshly harvested native basmati rice and Himalayan natural spring water one batch at a time. Following a five-step distillation process that utilizes charcoal filtration, the vodka then benefits from an additional two-step Sparkle Filtration treatment that ensures a smooth finish. Joining the nutty classic is the aniseed variant that illuminates the Indian herb through layers of fennel and licorice.
● Dirty
Devil Vodka
Canada’s Dirty Devil Vodka is ramping up its presence across the U.S. with the help of newly appointed global brand ambassador Giancarlo Esposito, star of Breaking Bad and Better Call Saul. The pioneering vodka from St. Lucifer Spirits is made with Canadian corn spirit that is distilled five times and filtered three. It then undergoes a proprietary hyper-oxygenated water process that transforms the liquid’s density and viscosity to elicit an especially soft mouthfeel. ● Absolut
Vodka
Absolut Vodka has teamed up with actress and author Garcelle Beauvais to roll out the Front Yard Citrus Club, a campaign to encourage and facilitate outdoor summer get-togethers, fueled by a quartet of custom coolers produced by Outside Gang. Showcasing vibrant colorways that reference Absolut’s citron, lime, mandarin, and grapefruit flavors, the coolers invite neighborhood hangouts. Bonus: they are accompanied by limited-edition cocktail kits complete with all the ingredients needed to whip up an Absolut Citrus Swizzle, as well as Beauvais’ new memoir. n

Gran Coramino From Kevin Hart and Juan Domingo Beckmann Is Not Like Other Celebrity Tequilas By Amanda Schuster proprietary slow-filtration process. “Both of us wanted to produce highquality tequila at an affordable price for all,” says Beckmann (the bottle’s SRP is $49.99). Beckmann points out that several other factors add to the uniqueness of the product. “Unlike all other celebrity tequilas that are made at contract distilleries, we own every stage of the process from the highest quality blue agave from family fields to its distillation at the family distillery La Rojena, the oldest in Latin America. Gran Coramino tequila is a tequila I am particularly proud to have made, as the taste profile is so nuanced.” Kevin Hart and Juan Domingo Beckmann
Cristalino tequila is having a moment. It’s a barrel-aged style filtered for clarity, which also removes most of the oaky notes some drinkers find off-putting. Having gained extensive popularity with a new generation of tequila aficionados searching for more approachable flavor profiles, the majority of them are añejos or extra añejos — matured one or more years. Gran Coramino is a new cristalino brand founded by celebrity Kevin Hart and 11th generation tequila producer Juan Domingo Beckmann. However, what sets it apart, aside from the partnership, is also that it is a reposado cristalino that is initially matured only a few months in eastern European oak, and, as a nod to Hart’s home state, it takes an additional nap in California Cabernet wine barrels before undergoing a 12 BIN 2022
You might be wondering how such a partnership began in the first place. “Kevin and I first bonded over our passion for what tequila is and can be over breakfast in the Tequila Valley, and we shared an interest in introducing great tequila to a wider audience,” explains Beckmann. “Kevin had been working on this idea for almost four years before he approached me, and after many great conversations, we got to work.” Beckmann says it’s a true creative partnership. “We have made all critical decisions together — from initial liquid creation and barrel selection, to the design of the bottle.” Hart is apparently quite dedicated to promoting the brand, having recently celebrated National Tequila Day (July 24) in New York City by visiting retailers, bars and restaurants, and pouring cocktails
and shots for consumers. According to Beckmann, Hart loves meeting with distributors and customers to discuss Gran Coramino, and has even integrated mentions of it into his “Reality Check” Tour which visits 66 cities in 2022. So far, Beckmann says the response has been enthusiastic, selling well beyond initial projections. He adds that the brand has a strong social media presence, with Instagram alone already having nearly 46K followers after a few weeks. In addition, Beckmann says, “Gran Coramino also has a give-back component that is connected to small businesses and entrepreneurs, which was a must for both Kevin and I as we strongly believe in supporting both of our communities. We donate $1 from every bottle sold to aspiring entrepreneurs and small businesses from communities in the US and in the homeplace of Tequila, Mexico. Nicole Austin, the general manager and distiller at Cascade Hollow Distilling Co. in Tennessee, has unveiled the latest expression in the experimental, small-batch Cascade Moon series. Featuring a mash bill of corn, rye, and malt, and matured in new, charred American oak barrels, the limited-edition Cascade Moon 15-year-old Barrel Proof clocks in at 79.8-proof, just short of the 80-proof whisky designation. Although classified as a grain-distilled spirit, it tastes of whisky, culminating in a leather and oak finish. SRP: $124.99 per 750-ml bottle

Denver distillery Laws Whiskey House has debuted its fourth release of Bottled in Bond Centennial Straight Wheat Whiskey, crafted from a mash bill of 100 percent soft white Centennial wheat (50 percent raw and 50 percent malted) grown by the Cody Family Farm in southern Colorado’s San Luis Valley. Bringing together 22 barrels of liquid aged for an average of five years and five months, Batch #4 is marked by notes of vanilla, caramel, and bergamot. SRP: $79.99 per 750-ml bottle
THE COMEBACK
Hotaling & Co.’s Old Potrero Straight Rye Whiskey, created by Fritz Maytag in the 1990s, now flaunts new packaging by the clamored-for design agency Stranger & Stranger. Old Potrero’s six-year-old straight rye whiskey (SRP: $64.99) and single barrel rye whiskey (SRP: $89.99) are distilled in San Francisco, and the redesign is an ode to the city. The label’s perforated edges and ticketstyle treatment recall historic cable cars, while the images of a copper pot still—the one used at the distillery from the very beginning—and the Golden Gate Bridge are bolstered by the Fog City Gothic font, seen on signage throughout San Francisco.

British bartender Mannie Monaghan won the brand’s 2019 global bartender competition, entitling him to help blend a whisky that evokes the color coral. The result is a 92-proof spirit laden with pineapple, stewed peach, and honey that mixes tropical whisky from Glen Elgin Distillery with sherry-aged whiskies, dashes of peated whisky, and a small amount of malt whisky further matured in shaved, toasted, and re-charred wine casks. RCS RUMZCAL: Harmony of Rum and Mezcal Together Written by Allison Levine
Don The Beachcomber, the father of tiki culture, would say “what one rum can do, three can do better.” This adage applied to mixing different rums together to enhance the flavor of the drink. This is the idea behind split cocktails in which the main liquor component in a cocktail is split between two or more ingredients. Whether splitting the base in the same spirit category or unexpected spirit combinations, split based cocktails can enhance the flavor of a cocktail. And that is what Ron Colón Salvadoreño’s (RCS) newest Rumzcal offers in one bottle. 18 BIN 2022

VODKA IS BACK IN VOGUE RESTAURANTS AND BARS ARE SEEING INCREASED BUZZ FOR ALL THINGS VODKA, FROM PREMIUM CALLS TO NOSTALGIC RECREATIONS OF CLASSIC COCKTAILS BY JAKE EMEN

here’s a change happening in the world of vodka. It may be subtle, and long in the coming, but it’s gaining momentum nonetheless. It’s a change in perception most of all. The types of consumers who previously wouldn’t consider ordering a vodka cocktail are now doing so in droves, specifically naming the top-shelf brand they prefer, and the bartenders who came up in an industry which labeled vodka the black sheep of the backbar are now innovating in the category with nostalgic recreations flooding the pages of the consumer press. “We have seen considerable growth in sales in on-premise establishments recently,” says Estelle Horysa-Hubert, Absolut Elyx's brand manager. “Our sales are surpassing pre-pandemic levels.” An ever-increasing push for premiumization has occurred across the spirits industry, but vodka, more than any other category, saw a drop off in sales of cheaper price segments compared to gains in the premium categories, according to the Distilled Spirits Council of the United States (DISCUS), losing 1.68 million nine-liter cases of sales in the lowest two price tiers, while gaining 3.6 million cases in the highest two tiers.
Even ahead of the pandemic, numbers were indicating a bump to vodka’s already lofty status. In 2019, total vodka sales on-premise were up 5.9 percent in the U.S., according to IWSR Drinks Market Analysis. But with consumers’ longawaited return to the bars after the pandemic-era interruption, vodka's onpremise positioning has only been further padded, and looks set to continue.

The Big Picture Vodka is by far the largest category in terms of total sales in the U.S.. According to DISCUS, in 2021 vodka accounted for $7.3 billion in revenue with 78.1 million nine-liter cases sold. It's no secret that vodka has long been a key driver of revenue for many on-premise establishments. “Vodka has been the top seller in bars for quite some time now—even with the rise of other spirit categories, such as American whiskey and agave spirits spe-

Broad Shifts in Vodka's Appeal Many of the cocktails that seem to be dominating the conversation today—the ones that consumers walk into a bar and order by name even when they aren’t on the menu—are made with vodka, from the Vodka Martini to its caffeinated cousin, the Espresso Martini. “Even the Cosmopolitan is making a huge comeback—[you can thank the new] Sex and the City streaming series [And Just Like That],” says Johnny Swet, the founding partner at Jimmy rooftop bar at Modernhaus SoHo in New York City. Alcohol has absolutely soaked the digital airwaves—alcohol brand’s digital ad spend grew nine percent between 2019 and 2023, according to a Zenith report—and it's driving some

of the trends. “The marketing on TV and streaming services with product placement has gotten into our psyche,” adds Swet. Go one step further and it's easy to connect the dots with viral cocktail trends and endless TikTok how-to videos—like Stanley Tucci's instructionals—and even the semiironic odd sensations, including, yes, the Dirty Shirley, which has been bewilderingly posited as the drink of the summer by consumer publications far and wide. For those more classically inclined, though, the Martini reigns supreme. “The Martini is having a massive boom in both cocktail and pop culture,” says Redlien. “Last year, demand for Martinis increased by 25 percent at bars and restaurants nationwide, according to Technomic, and dominated pop culture, as we saw the Dry Martini, Dirty Martini, and ever-popular Espresso Martini take over our social media feeds.”
ABOVE: Death & Co.'s Tyson Buhler
As for the Espresso Martini, it's become a wrecking ball. “You can hardly walk through a bar or restaurant and not see at least one on a table at any given time,” says Buhler. The idea of cyclical trends, as well as the lure of nostalgia, is something Redlien, Buhler, and Horysa-Hubert each call out. “It's a glamorous serve that's been sipped for years and can transport the drinker to another era of elegance, and I think consumers are so drawn to the Martini right now because of how nostalgia is trending everywhere we look,” says Redlien. A number of the cocktail renaissance’s early leaders famously banished vodka from their menus as a means of establishing their craft credentials. The pioneering Audrey Saunders, co-owner of New York City’s now-shuttered Pegu Club, didn’t carry vodka as a means of introducing drinkers to the then unfashionable gin. Vodka was previously defined as “without distinctive character, aroma, taste, or color,” by The Alcohol and Tobacco Tax and Trade Bureau (TTB), but both the attitude towards the spirit and its definition by the TTB has been updated, and many of the current crop of bartenders are now embracing it. “Bartenders are driving the resurgence and reinvention of vodka as the world knows it, with key players like Leo Robitschek

cifically,” says Tyson Buhler, the national beverage director at Death & Co. As consumers head back to bars on the whole, though, they’re displaying more of a treat-yourself mentality, opting to upgrade their calls because after the past two years, they feel as if they deserve it. “Now, when consumers are going out for drinks, they're trading up for top-shelf liquors that really enhance the entire experience,” says Katie Redlien, the brand director at Grey Goose, which has seen a significant increase in on-premise sales. St. George Spirits has also benefited from this boon. “Understandably, people seem to really want to be back out at their favorite bars and restaurants,” says Dave Smith, the head distiller. “Some markets have seen minor growth, while others have roared back to life with strong demand and significant growth.” Suffice to say, vodka’s status as a stalwart of sales but little else of relevance is changing, as is its currency in cocktail culture. Vodka is moving from the elephant in the room to, well, the elephant on the top shelf. Increasing demand continues to build momentum for the category.

championing the spirit and showcasing its versatility in cocktails, giving vodka drinks the spotlight they deserve on their menus,” says Horysa-Hubert. Haku Vodka is experimenting with vodka’s potential reach by pairing it with food, especially with other touted culinary touchstones of Japan, drawing a straight line that consumers can easily connect. “We've been focusing on our food-pairing programs in on-premise establishments that showcase Haku Vodka with a variety of gastronomic categories, including highend sushi,” says Susan Gibbons, the senior director of North American marketing for Beam Suntory. “Great chefs and leading mixologists across the country have embraced Haku as a spirit they can build great programs around,” adds Gibbons. For instance, during the early stages of the pandemic, chef Sonoko Sakai led virtual cooking classes pairing Haku Vodka highballs with her Japanese curry dishes. Meanwhile, at Chicago's Bar Kumiko, Julia Momose has served up Haku Martinis and highballs in her cocktail flights and alongside dishes from the kitchen's touted culinary program. Flavored vodkas, which account for one-fifth of on-premise vodka sales, according to CGA’s On Premise Measurement, continue to thrive, particularly from brands with more natural processes and authentic flavors. The days of cotton-candy and bubblegum vodkas are long gone.

“Bartenders are driving the resurgence and reinvention of vodka as the world knows it, with key players like Leo Robitschek championing the spirit and showcasing its versatility in cocktails.” – Estelle Horysa-Hubert, Absolut Elyx
“Vodka drinkers tend to have their preferred call and are often less interested in exploring other brands,” says Smith. “They need to have a significant reason to go outside of their comfort zone. Naturally-made, premium flavored vodkas are one of the few ways we can connect with that person.” St. George has seen great success with its Green Chile and California Citrus vodkas, for instance, with the former being deployed in Mules and Bloody Marys, and the latter in martinis. While Death & Co. doesn’t dedicate much of their menu to vodka cocktails, Buhler calls out St. George as being among the craft vodkas which have long stood out to their team for “being made with a focus on spirit character,” in addition to options including DSP, Good, and Woody Creek. Another growth area is vodka designed to be both lower in alcohol and calories. While most brands would stop
short of denoting any alcohol as being good for you, consumers are showing a preference for drinks they perceive as healthier options. “Like most other categories, the spirits industry has seen a growing desire for 'better-for-you' products made with less calories, lower ABV, and quality ingredients,” says Redlien, pointing to the line of botanically-infused Grey Goose Essences as an example. “Since launching last winter, consumer reaction has been even better than we'd hoped for.”
Looking Ahead The trends driving vodka's current momentum aren't going anywhere, and premiumization will continue to be paramount in the conversation. Of course, interest in premium vodka isn't novel. “While we've continued to see people more interested in the premium end of the vodka market, the vodka category has been leading the charge in premiumization for decades,” says Smith. One new point, though, is how consumer behavior changed during the pandemic to build atop that. “After so many months spent at home during the pandemic, consumers have really embraced the true luxury of ordering a craft cocktail at their local bar, served just the way they like it by their favorite bartender,” says Redlien. “It's great to see consumers share this feeling, and we're hopeful that the momentum will continue for the on-premise in the coming months.” ■

BAR-QUALITY COCKTAILS IN A CAN
I
n recent years, consumers have increasingly reached for ready-to-drink (RTD) cocktails as their beverages of choice. In many cases, it’s hard to beat a drink that has the convenience of a can with the taste of a bar-quality cocktail. And the numbers prove just how popular RTDs have become: In 2020, the RTD segment grew by 102 percent, according to Nielsen, and spiritsbased RTDs are predicted to grow 41 percent in volume by 2024, according to the IWSR. A series of new, premium RTDs from three of Pernod Ricard’s most in-demand brands—Jameson Irish Whiskey, Absolut, and Malibu—position the company as a leader in this rapidly growing category. Whiskey is among the fastest-growing RTD spirit bases. Nielsen predicts a 347 percent growth in whiskey-based RTDs by 2024. Jameson, one of the most iconic, recognizable Irish whiskeys, recently released its first RTD, Jameson Ginger & Lime, in March 2022. It’s made with natural ginger and lime flavors that pair perfectly with smooth Irish whiskey. The cocktail is an easy-drinking and convenient choice that can be enjoyed

chilled straight from the can. For tropical, rumbased cocktails, Malibu Cocktails in a Can now come in four flavors: Piña Colada and Strawberry Daiquiri, introduced in 2021, as well as the newly released Pineapple Bay Breeze and Watermelon Mojito. All options combine Malibu’s signature Caribbean rum with natural flavors, demonstrating Pernod Ricard’s commitment to high-quality products. The 7%-ABV, 12-ounce cans easily conjure the summertime mindset that Malibu cocktails embody. Finally, there’s Absolut, which launched its first RTDs in 2020. Absolut has long
been a go-to vodka for premium, classic cocktails, and Absolut’s RTD cocktail line puts original Absolut Vodka into a can with refreshing natural flavors. Sparkling options, which launched in 2020, include Mango Mule, Berry Vodkarita, and Grapefruit Paloma. Each flavor is well balanced with a touch of fruity sweetness and just the right amount of fizz. The new Pineapple Martini, released in the spring of 2022, is a refreshing, smooth, non-carbonated cocktail that delivers on consumer expectations of a classic Martini. The flavors are currently sold in four-packs and range from seven to 10% ABV. Regardless of the flavor, all of Absolut’s RTDs offer bar-quality cocktails with an innovative flavor twist. Led by new options from these three core, consumer-favorite brands, Pernod Ricard is meeting the demand for creative and high-quality RTDs head-on now and into the future. n This advertising content was produced in collaboration with our partner, Pernod Ricard.

THE SHRINKING FOOTPRINT OF GLASS WINE BOTTLES HOW THE WINE WORLD AND ITS SUPPLIERS ARE DEALING WITH THE PROBLEMATIC CARBON EMISSIONS OF ITS FAVORED PACKAGING BY BETSY ANDREWS
B
efore he cofounded Napa Valley’s lauded Smith Devereux in 2012, vintner Ian Devereux White was a travel and wine writer. On trips abroad, he received a schooling in sustainability. “I kept asking Italians why their wine bottles were so light, and they’d say, ‘It’s so much better for the planet.’” When he returned to Napa, he was “shocked” at the relative heft of the bottles. Still, when his partners and he chose a vessel, they at first followed local custom of heavier molds. 38 BIN 2022
That bottle lasted one vintage. “The energy and heat of the molds, shipping the glass, the larger cardboard to carry the weight, the glue— already there are massive environmental issues,” says Devereux White. “Then you fill it with wine, use more resources at your facility, ship it to customers, use more airplane fuel—and then the customer finishes it, and puts it in recycling, and it requires more energy to process, or there’s a good chance it’s not recycled and it takes up space in a

landfill. Every milligram that glass gets heavier is exponentially worse for the planet. It didn’t feel good.” Now, Devereux White bottles his 100-point wine in one of the lightest Bordeaux molds available from supplier M.A. Silva: the 550-gram Fuego, over 400 grams lighter than their initial choice. Most clientele accepted the switch. “Some said, ‘These look really small in my wine cellar.’ They liked heavy glass that feels substantial, powerful, and impressive,” says Devereux White. “But I couldn’t do it.” He’s not alone. When it comes to packaging wine, glass is a miracle and a curse. As its manufacturers will tell you, it’s sturdy, which enables shelf life; it’s inert, so it doesn’t react with the liquid to create off tastes; it doesn’t have the health risks or pollutant problems of plastic; and it can be washed and reused multiple times. It is completely and endlessly recyclable. But glass has downsides, admits James V. Nordmeyer, the vice president of global sustainability for the glass producer O-I: “It’s heavier, and it is energy intensive.” In a world in need of emissions reductions, therein lies the rub. As the wine industry struggles to shrink its carbon footprint, producers have discovered that more than half their greenhouse gasses (GHGs) are due to the shipping and manufacture of their glass bottles. With governments now mandating climate goals for nations and businesses, however, suppliers and third-party entrepreneurs are working on new technologies and products to help make glass more sustainable. They’re not only lightening the vessel; they’re overhauling the furnaces, the material’s composition, and the infrastructures to create a glass bottle industry that can make it to net zero.
LIGHTWEIGHTING It’s become a term of art nowadays among eco-minded winemakers: lightweighting. Simply put, it means choosing a light-

er bottle. The issue of choice is key. The prevalence of Napa’s Cabernet-filled twopounders, with their thumb-snuggling punts and their Sasquatch-sized carbon footprints, comes from winemaker demand, says Erica Harrop, the president and CEO of Global Package LLC. “Bottles can be made any way requested,” she explains. “As bottles became more individualized, with deeper punts and broader shoulders, the glass became heavier over the past 30 years. Now the direction is to keep the nicer shapes but get a lighter bottle. It is possible. It has been the case forever in Europe. We may forgo the 60-millimeter punt, but we can have beautiful glass.” And, notably, without concern for its durability. “They have to be careful about

distribution of wall thickness in lighter glass,” says Harrop. “But it’s not necessarily stronger the thicker it is. If it’s welltempered and -annealed then glass is really strong.” Using technology such as the finite element method, a software-assisted microanalysis of a bottle’s geometry, and the narrow-neck-press-and-blow process, in which a plunger is pressed into the molten glass in a mold to ensure thin, uniform walls, manufacturers like Switzerland’s Vetropack Group can offer wine bottles as light as 350 grams, or roughly 12 ounces. That’s good news for wineries like Spottswoode. A member of the International Wineries for Climate Action (IWCA), the venerable Napa Cabernet house is required to measure and lower its carbon emissions annually. Using a GHG calculator, Spottswoode’s winemaker Molly Sheppard found that product transport and packaging amounted to 50.4 percent of the winery’s emissions. Her conclusion? “Our bottles are too heavy. We don’t need quality wine in heavy bottles anymore. That’s an outdated idea,” says Sheppard. Starting with the 2020 vintage, which will be released in 2023, the Spottswoode Estate Cabernet Sauvignon will lose its 798-gram vessel for one weighing 550 grams. Though that’s still more than the global average of 500 grams, it’s a departure from the norm among U.S. premium wines. pard, “the more we ask of our vendors, [the more] it pushes up the chain of larger companies to track their GHGs, too.” For Spottswoode’s owner Beth Novak Milliken, the potential sticking point was customer perception. “We know 2020 is a great wine, but it is challenging in consumers’ minds because of the Glass Fire,” which caused smoke taint in many vineyards. “We thought, ‘Should we wait?’ And then it was like, ‘No, let’s just do it.’ This is what we believe in.” For those who think that premium wine drinkers won’t stand for premium wine in a less-than-behemoth bottle, Milliken quotes Steve Jobs: “Some people say, ‘Give the customers what they want.’ But that’s not my approach. Our job is to figure out what they're going to want before they do.” Many other wineries are coming to the same conclusion. Biodynamic Alto Adige producer Alois Lageder has created the 450-gram SUMMA design, which they’ve left unpatented in hopes that others in the region will adopt it. Crimson Wine Group has been transitioning its brands to lighter-weight domestic glass in the past three years, reducing their carbon output by 300 tons annually. The switch was easy, says Fintan du Fresne, the winemaker at Crimson’s Chamisal Vineyards. “There's that assumption there's going to be consumer pushback,” he says. “Even at the highest level of wine price, there's been zero pushback.” In 2016, Jackson Family Wines lowered the glass weight by five percent on its biggest molds, resulting in a two to three percent emissions decrease and a whopping $1 million savings in glass costs.
40 BIN 2022
When you produce the nation’s top-selling Chardonnay—Kendall Jackson Vintner’s Reserve—and tweak the bottle without repercussions, that’s proof of concept for lightweighting. Even sparkling producers are lightweighting their bottles. It can be tricky because of the bubbles. “A sparkling bottle holds a six-bar internal pressure. If it’s flawed, it will explode. That’s why they’re so heavy,” explains Douglas Stewart, the winemaker and owner of the Anderson Valley’s Lichen Estate. Stewart turned to Saverglass’s 835-gram Champenoise Eco-Design, a bottle that’s more than 100 grams lighter than the average for sparkling wine. “The French engineered a lighter weight that’s still strong enough to hold that pressure,” he says. “But I pay the same amount for this as I would pay for a heavier bottle.” Champagne Telmont is going even further, conducting six months of experiments in attempts to lower its packaging weight from 835 to 800 grams. “Once this final phase is complete, we will be able to communicate whether or not we will be able to commercialize the world’s lightest Champagne bottle for our entire range,” says Champagne Telmont’s president, Ludovic du Plessis. “Fingers crossed!”
FIXING THE FURNACE Despite all the buzz, “We have to stop focusing on the lightening of bottles ABOVE, LEFT TO RIGHT: Wines from Chamisal Vineyards, Spottswoode, and Lichen Estate. RIGHT: Alois Lageder Porer Pinot Grigio.
as the only solution to the emissivity of bottles,” says Regis Maillet, the marketing director at Saverglass. “Our real objective is to transform our glassmaking process. Only this approach will enable us to reach our objective of -45 percent in 2035 on our direct emissions and carbon neutrality by 2050 in order to be in line with international objectives.” Glass furnaces are monstrous carbon emitters. Using fossil fuels, they melt glass, sand, lime, and sodium carbonate to more than 2,700 degrees Fahrenheit. Most operate continuously. “Once you turn them on, they run for 15 years,” says O-I’s Nordmeyer. Shooting for an 85 percent reduction in the carbon footprint of its containers by 2026, O-I hopes to overhaul the way it melts gas with a new furnace dubbed MAGMA, for Modular Advanced Glass Manufacturing Asset. At a third the size of a conventional furnace, it’s energy efficient, adaptable to alternative fuels, and able to turn off and on. In the meantime, the company is working on a circular system, capturing heat from its furnace in Reims, France, to supply to surrounding homes. Similar initiatives are happening in glass manufacturing across Europe. Encirc, which has bases in the U.K. and Italy, worked with nonprofit Glass Futures to pioneer the use of biofuel in furnaces. French glassmaker Verallia is investing in electric furnaces at its factory in Cognac. German manufacturer Wiegand-Glas has developed a line called Eco2Bottle, produced using climate-neutral hydropower. And

glass producer Ardagh has created Europe’s largest behind-the-meter storage system, using Tesla batteries to store and then return energy to the grid when the furnace isn’t using it. Many of the efforts around furnace sustainability are cooperative. Saverglass has teamed up with glass company Verescence to launch Vercane, a research and development project looking at low-carbon energy sources for furnaces, including biomethane and electric fusion. The Federal Association of the German Glass Industry is researching hydrogen as a substitute for fossil fuels in glass production. And, in the most ambitious scheme, FEVE, the European Container Glass Federation, dreamed up an electric-meets-hydrogen
model called the Furnace of the Future. “Molten glass conducts electricity,” explains Fabrice Rivet, the technical director of FEVE. “You can place electrodes in molten glass so that electricity will flow through the glass and heat it up. This is a very efficient way for producing glass. Full electric melting exists already but is limited to small-scale furnaces producing only clear glass and with no, or limited, post-consumer glass.” The Furnaces of the Future project, or F4F, has aimed to demonstrate that 80 percent electric is possible in a large-scale furnace producing glass of all kinds with high levels of recycled materials. “The industry will be able to reduce furnaces’ CO2 emissions up to 60 percent,” says Rivet. As furnaces need continual combustion to ensure proper temperatures and quality, F4F also aims to replace the remaining natural gas in the system with carbon-free hydrogen. Yet, though 19 FEVE members were backing it, in a field of more than 300 grant applicants, the project failed to win the financial support of the EU Innovation Fund. “Without the EU grant, the project cannot be pursued as initially planned,” says Rivet. It nonetheless galvanized the industry toward “one common goal: the transition to a resource-efficient and lowcarbon economy.”
RECYCLED CONTENT “The gassing-off from the fusion of turning sand into glass is inefficient and polluting,” says Harrop. “It takes 1.2 tons of raw material to make one ton of glass, and you lose 10 percent to the air.” The solution? Instead of sand, turn glass into glass. In other words, recycle. “But you don’t just take any bottle and throw it in there. You don’t want to contaminate the furnace. Where are we going to find good, clean recycled product?”
LEFT: Champagne Telmont's dark bottles. ABOVE: Glass inspection at Ardagh.

The answer is easy in Europe, where the infrastructure supports the recycling of 80 percent of post-consumer glass. “Every ton of recycled glass saves 1.2 ton of virgin raw materials, with a three percent energy reduction and a five percent GHG emissions reduction for each 10 percent of glass recycled in the furnace,” notes Rivet. European bottles contain, on average, 52 percent recycled content, called cullet. To increase that percentage, manufacturers launched Close the Glass Loop, a campaign to bring government authorities, glass producers, and recyclers together to achieve a 90 percent collection rate by 2030. Comité Européen de Enterprises Vins, the association representing Europe’s wine producers, is among the stakeholders. Many European wineries are aiming for carbon reductions through recycled materials. Sacrificing their rosés’ visual impact, both Spain’s Bodegues Sumarroca and Champagne Telmont have pivoted to using only dark bottles, which can contain up to 86 percent cullet, compared to conventional clear glass, which has none. Even better is Wild Glass. The twoyear-old brand is 100-percent recycled. Uncorrected for blemishes that don’t affect functionality, Wild Glass sports a sea foam hue from its mix of cullet. It has, says Harrop, the “organic and authentic” feel of hand-blown glass, with a reduced footprint over other commercial bottles. The founder and winemaker of Napa’s Tarpon Cellars, Jeremy Carter, has adopted Wild Glass as a duty and a selling point. If

a supply of the glass is available in time for bottling, they’re even planning to use it for their $150 Cabernet Sauvignon. “Being a younger winemaker with a younger brand, it’s important to lead by example. Sustainability isn’t a feature. It’s a matter of course,” he says. “When you show other people what you’re doing, you not only encourage other brands to follow suit but also create a connection to buyers who share your values.” Carter and other winemakers like him don’t currently have an American-made option for recycled-glass packaging. Alas, U.S. recycling rates are only 30 percent. “The hardest part here is that we have a very bad national recycling program. It’s run by counties, and there’s not enough recycled glass,” says Harrop. In states like California, which mandates 35 percent recycled content in glass production, manufacturers have difficulty procuring cullet. To drive higher recycling rates and shore up supplies, O-I has bought recycling facilities in Colorado and Oregon and is partnering with communities through its Glass4Good initiative. With every ton of glass it collects, the company donates to the American Red Cross or United Way for projects in that community.
B2B REUSABLES One solution avoids the furnace altogether: returnable wine bottles. Outfits like The Gotham Project and Good Goods attempt to create a circular glass economy based on consumer buy-in. But wine drinkers have proven unreliable with returnables. New initiatives use a businessto-business model instead. Six percent of O-I’s global volume of glass goes into returnable systems, particularly in South America and Europe. In North America, the company is piloting returnable programs with partners in Oregon, Kentucky, and Quebec. “But you need an ecosystem,” says Nordmeyer. “You need government regulation, a producer, and an interested partner to get the B2B.”

Also, for refillable schemes to be effective, producers must agree on standard shapes and sizes. Since the look of the vessel is integral to winery branding, such standardization is difficult. Some are still trying. Caren McNamara founded Conscious Container on a mission to create a reusable bottle economy for the California wine industry. With the support of a Cal Recycling GHG reuse grant, Conscious Container is now set to sort and wash glass collected at recycling centers or left over from big producers like Jackson Family Wineries to resell to small and medium wineries. To Nordmeyer’s point, McNamara is working on creating an ecosystem for her endeavor. She lobbied successfully for California’s AB 962, the California Beverage Container Recycling and Litter Reduction Act, a bill to facilitate reusable beverage containers, which passed in October 2021. It recognizes glass bottles as refillable and,

therefore, able to be separated from the recycling stream by vendors. She’s pushing for wine bottle standardization and a law that will allow wine and spirits bottles into the state’s bottle redemption plan, to ensure consistent supplies for washing and reuse. With a new bottle washing machine coming from Europe, McNamara anticipates beginning to wash bottles in August. “We’re just getting the wheels turning,” she says. Of course, all these efforts are for naught if winemakers can’t get their hands on enough glass at a price they can afford. “We have consciously avoided using heavier molds because we believe in trying to be as sustainable as possible,” says Brad Jonas, co-owner and winemaker of Mendocino’s Minus Tide Wines. “But as a growing, scrappy winery, we have to pay attention to our costs, and packaging is one area where we can’t spend too much.” A true infrastructure around recycling and returnables might alleviate the financial and supply pressures for winemakers seeking sustainable alternatives. “A multifaceted approach will take collaboration in industry and policy,” says McNamara. “All I can say is that everybody wants to figure out how to do this.” ■

BAGLIO DI PIANETTO’S TERROIR-DRIVEN PORTFOLIO PRIORITIZES SUSTAINABILITY
C
ount Paolo Marzotto’s search to find the perfect vineyard took him from northern Italy, across the globe, and finally to Sicily. It was there that he found the ideal combination of physical beauty, expressive terroir, and the opportunity to execute his vision of sustainable Italian wine. His journey culminated in Baglio di Pianetto, a familyowned estate that prides itself on stewarding Sicily’s indigenous grape varieties and natural assets. The Count, however, added his own twist: an interpretation of classic French grapes that would add finesse and elegance. Originally founded in 1997 with the Pianetto Estate near Palermo, the portfolio also includes the Baroni Estate in Val di Noto, fusing two styles under a unified umbrella that places a premium on environmental stewardship. The northern estate, Pianetto, lies 650 meters above sea level in a mountainous region that leverages diurnal temperature shifts and diverse microclimates to produce elegant wines with complexity and character. Bordeaux varieties such as Merlot, Cabernet Sauvignon, and Petit Verdot coexist with native Sicilian grapes such as Catarratto and Grillo. The southern estate, Baroni, 52 BIN 2022
enjoys a mild climate and lies only 50 meters above sea level. Here, Sicily’s indigenous grape varieties shine. The limestone soils contribute minerality and freshness, the hallmark of Baroni’s signature regional reds, Nero d’Avola and Frappato. Baglio di Pianetto’s founding principle is respect for the environment and the estate has been certified sustainable since its inception. Now run by the second and third generations, the estate has continued this mission; since 2016, all 160 hectares are certified organic. It’s not only in the vineyards that such care is demonstrated: The naturally insulated, gravityfed winery significantly reduces the use of pumps and water, and uses solar power to produce renewable energy, lowering its CO2 emissions. Baglio di Pianetto produces wines that showcase the family’s Sicily-meetsFrance winemaking philosophy. The Monovarietali line offers fresh, approachable, fruit-driven wines that are convivial and
food friendly. The Classici line famously combines Sicily’s character with French finesse, blending grapes from both the high- and low-altitude estates. The portfolio carries out the Count’s vision of tradition and innovation in such wines as Insolia, a high-elevation white from the Pianetto vineyard made entirely from this ancient variety; Timeo, a 100-percent Grillo also sourced from the mountains, which undergoes cryomaceration on the skins before aging in oak for five months and another month in bottle; and Ramione, which equally blends Merlot from Pianetto and Nero d’Avola from Baroni, and ages for 12 months in French oak and another two years in bottle before release. Further leveraging Sicily’s unique heritage, the Pianetto estate includes a villa amid vineyards and olive trees offering an integrated experience of hospitality, authentic regional cuisine, and custom wine tastings, bringing the Count’s vision full circle. n This advertising content was produced in collaboration with our partner, Opici Wines & Spirits.

THE SCIENCE OF SOUR BEER BEER EXPERTS DIVE INTO THE METHODS AND MICROBES BEHIND THIS OFT-MISUNDERSTOOD CATEGORY
S
ipping a sour beer for the first time is a shock to the senses. The category is instantly recognizable thanks to tart, fruity, funky flavors. Yet the intense acidity associated with sour beers today is only one component of a diverse spectrum of sour beer styles and flavors.
What defines sourness is as much a science as it is subjective taste. As Vincent Cilurzo, the cofounder of Russian River Brewing in Santa Rosa, California, writes in the The Oxford Companion to Beer: “[A]cidity is usually considered a flavor fault in modern beers. When speaking of beer, the word ‘sour’ is usually pejorative.” Yet when beers are intentionally soured, he notes, as in Old-World styles or the New-World replications of those styles, “they can be among the most complex and refreshing of beers.”
58 BIN 2022
Generally speaking, sour beer is defined as that which is high in acidity derived from lactic-acid producing bacteria. Technically speaking, it is beer that has been subjected to bacterial infection. In other words, context is key. “When I think of sour beers, I think of any beer that has sourness as part of its primary or secondary flavor components,” says Max Finnance, the senior manager of education and training for Artisanal Brewing Ventures, a North Carolina-based parent company of Northeastern brewers
including Southern Tier Brewing, Victory Brewing, and Sixpoint. “There are lots of styles of beer that can have sourness as a part of their overall flavor profile, and other than that, don't have much in common.” Sour beer styles span centuries of Western brewing traditions: Belgium’s rich, full-bodied Flanders brown ales, berry-tart Flanders red ales, and the spontaneously fermented and sharply acidic lambics of Brussels; Germany’s bubbly Berliner Weisse, the “Champagne of the North,” and the salty, softly sour gose; and American and other new-school brewers’ interpretations of these historical styles. In the last decade, Belgian- and German-inspired sour ales have split into endless refractions, bringing on such unexpected trends as fruited sours mimick-

ing smoothies and decadent desserts; and hazy, hoppy sour IPAs. Add in the overlapping “wild beer” category, which favors Brettanomyces yeast strains but is not “sour beer” unless acidified, and it’s no wonder retailers and consumers are often left in the dark about what exactly a sour beer will taste like. Where each wild and sour beer style lies on this microorganism-speckled spectrum depends on a variety of brewer decisions and environmental factors. KETTLE SOURING
Quick souring, also known as kettle souring, encompasses a vast array of tart, low-alcohol American sour beers. With this method, beer is soured directly in the brew kettle, or stainless steel tank, by adding a lactic-acid producing bacteria to the wort pre-boil. This lactic acid starter gives the bacteria a head start on turning sugar into lactic acid before the brewer pitches yeast. It can also be pitched post-boil for added acidity. The two main acidifying bacteria used to sour beer are Lactobacillus and Pediococcus. In the case of a kettle sour, Lactobacillus is more favorable, contributing what is considered a “clean” acidity. Pediococcus can offer a more complex acidity over time, but comes with more risk of off-flavors. “Pediococcus might work well in a lambic or gueuze, but in a kettle sour, picking a clean Lactobacillus strain is going to give you a nice, clean, lactic acid sourness. And sometimes that's all you need to make a really delicious gose or Berliner weisse,” says Finnance. Although the original Berliner weisse likely got its tartness from a sour mash, yeast cross-contamination during fermentation, or microflora during storage or maturation, brewers typically replicate the style today as a kettle sour using Lactobacillus to acidify the beer during fermentation. This form of quick souring is the least risky because brewers can care-
fully select their microbes and have more control over the fermentation. It is also the most efficient way to make sour beer; a typical kettle sour can be turned around in two weeks or less, compared to a traditional barrel-aged sour that can take months and even years. Flavored sours have become popular in recent years, with brewers experimenting with a variety of fruit purees, juices, and yeast strains to amplify citrusy or tropical fruit character derived from fermentation. Stratford, Connecticut’s Two Roads Brewing Co. has an ongoing series of kettlesoured (or more specifically, tanker trucksoured) fruited goses available in a variety of tart-friendly flavors, including Passion Fruit, Pineapple Mango, and Persian Lime. Still, others reach for stronger extremes: Victory Brewing’s new Berry Monkey, a fruited sour tripel made with raspberries and Belgian yeast, pushes alcohol to a high-octane 9.5% ABV. SOURING WITH SPONTANEOUS FERMENTATION
A growing number of U.S. craft brewers and blenders are incorporating spontaneous fermentation methods into their sour beer production. To achieve the complexity of a traditional Belgian lambic like Brasserie Cantillon, the single remaining traditional lambic brewery in Brussels proper, the most devoted have even added coolships to their properties. Established regional brands such as Russian River Brewing in Sonoma County, California, Allagash Brewing in Portland, Maine (whom Cantillon has officially collaborated with), and Two Roads’ offshoot Area Two, have produced a dizzying array of both traditional and experimental bottlings. The Referend Bier Blendery in Kutztown, Pennsylvania, replicates the historical Berliner style in Berliner Messe, a Berliner weisse-style beer that is “spontaneously acidified,” according to the label, and fermented in oak barrels. Each bottling incorporates different barrels and
aging periods; the recent Blend No.: 7 was fermented in a mix of neutral French oak barrels and Italian red wine puncheons for between eight and 30 months, or an average age of 18 months at bottling. Opting for open fermentation, or letting wort cool in a coolship, welcomes the spontaneous inoculation of wild yeast and bacteria in the air. This includes “all sorts of microbes that you wouldn't normally want in a sour beer,” notes Finnance. Bacteria strains such as Acetobacter, Enterobacter, and Pediococcus will “show up and make what would otherwise be considered some really gnarly off flavors.” That’s where Brettanomyces comes in. “[G]iven enough time, the Brettanomyces is going to clean up those off-flavors and turn [them] into some really nice-tasting compounds,” adds Finnance. For example, Butyric acid past its “beer threshold” will give a rotten, cheesy aroma. With Brett by its side, Butyric acid gets broken down into Ethyl butyrate, which “tastes like pineapples.” “Brettanomyces strains work very slowly. That's one of the reasons that lambic and gueuze take such an extended maturation time to get a product that tastes palatable and tastes delicious and tastes like Belgian lambic or gueuze that we all know and love,” Finnance says. Spontaneous fermentation is not as simple as “set it and forget it,” how-

MIXED-CULTURE FERMENTATION
Sister to spontaneous fermentation is mixed-culture fermentation. “I feel like there was a time in the craft beer scene here in the U.S. where folks were making really aggressively sour beer primarily through mixed-culture fermentation, pitching Lactobacillus, pitching Pediococcus, either post-primary fermentation and into barrel aging, or perhaps just into barrel aging,” says Swanson. “That degree of acidity, though it can be done really well and can make really interesting beers, doesn't necessarily lend itself to especially balanced or drinkable beers.” While many mixed-culture fermentations can reach too-tart territory, Swanson prefers “to create acidity in a beer that acts as a balanced flavor element as opposed to the primary flavor element.” She does this by manipulating variables such as IBUs and temperature throughout the brewing and fermentation processes. “[Y]ou can control for when acidity will develop,” she says. “I want to see Sac-

charomyces in my culture dominate for the first part of fermentation, but I want that bacteria to be present in the background so that when the Saccharomyces begins to slow down a little bit, or once that primary fermentation is coming to an end, then that lactic-acid producing bacteria can begin developing a little bit of acidity.” For even greater acid development, Swanson says, “I would put it into an oak barrel and allow that beer to sit in there for a period of time—four to six to eight months, if not longer—and allow the concentration of lactic acid or other types of acid to increase through that bacterial activity over time.” Brewers can also opt for lab cultures, selecting specific Brettanomyces strains to achieve their desired flavor profile. “We have so many different types of Saccharomyces yeast that can make all sorts of different flavor profiles and all sorts of different beers—whole categories of Belgian yeast and English [yeast]—and it's almost true for Brett as well,” says Richard Preiss, the cofounder of Escarpment Laboratories, which provides yeast cultures to Canadian craft brewers from its lab in Guelph, Ontario. Preiss describes a “whole rainbow” of Brettanomyces strains among Escarpment’s offerings, each selected for flavors ranging from “horse-blanket funk” to pineapple, plum, pear, cherry, citrus, and white wine.
NEW FRONTIERS
In addition to a broad yeast strain collection, Escarpment Labs has been developing and launching new products that target more niche needs, including “Lactic Magic,” an acid-producing yeast strain developed with sour beer brewers in mind. “We started seeing this interest pop up with brewers [for] yeast that can be used to sour the beer, because normally they have to use bacteria,” says Preiss. Lactic Magic is developed from a species of yeast called Lachancea thermotolerans. “We were able to dig into our strain collection and screen a few different strains of that species. We found one that we really liked that was doing a good job of producing acid and that we felt had a really unique flavor profile,” says Preiss. “We're excited about it because it's just different from a Lacto sour. You can do different things, like make a sour IPA.” It has potential for barrel-aged sours, too, Preiss says, adding that this could be one of the strain’s best applications. “There's no right or wrong way to make a sour beer, as long as you end up with a product that tastes good and isn't showing off too much of a specific offflavor—or any, ideally,” says Finnance. Though sour beers can be crowd-pleasers, there is much to be learned—and tasted—in the realm of these tart, tangy fermentations. n

ever. Averie Swanson, the founder and beer maker of Keeping Together and one of the world’s only Master Cicerones, spent several years honing spontaneous fermentations at Jester King Brewery in Austin, Texas. Now helming her own beer brand, which she is currently transplanting from Chicago to Sante Fe, New Mexico, Swanson has shifted her focus to mixed-culture saisons fermented in stainless steel. “Spontaneously fermented beer is more challenging than people give it credit for,” says Swanson. “There’s a lot more attention to detail and intention that goes into making those beers, from how you're building your grain bill, to how you're going about your mash schedule and the entire hot side process, to where, when, and how you are knocking it out into the coolship and letting it cool overnight.”

to be found in the Loire Valley—and there’s no better time to explore further. DIVERSE AND VERSATILE “I am again reminded how diverse and versatile these incredible wines brim across the entire region,” says New York City-based sommelier and wine educator Bruno Almeida. “Fresh and vibrant, energetic with cool expression of fruit, less pretentious and more relatable to different palates.” This is Almeida’s second year serving as judge for the Loire Buyers’ Selection, and he notes that vintage plays an important role, particularly in these terroir-driven wines. “It was great to witness how certain wines from some regions evolved in quite different character from last year,” says Almeida. Almeida says that “a great sense of place shines across the board,” reflected in the 51 bottles that received 90+ point scores. Producers and importers now
have the option to add stickers to the bottles indicating they’ve been tasted and rated by Loire Buyers’ Selection, a stamp of approval from this group of the country’s best sommeliers and retailers, which represents a variety of backgrounds and well-known establishments. “Diversity of perspective is valuable, especially in rooms where points are getting handed out,” says James Sligh, a Brooklyn-based sommelier and the creator of Children’s Atlas of Wine. The judges worked in panels of three, and Talbot averaged the scores for a final number. Loire Buyers’ Selection wines are sorted into five categories: white wines, red wines, sparkling wines, rosé, and a final division called fresh, fruity, and friendly,

or the second year in a row, esteemed wine buyers from the U.S. gathered together to taste a range of wines from one of France’s most diverse and exciting growing regions: the Loire Valley. They were tasked with the challenge of scoring each release on a 100-point scale. The Loire Buyers’ Selection competition positioned nearly 100 bottles—all available in the U.S.—in front of nine judges in a blind tasting environment. The collection was curated by industry veteran David Talbot, with selections from Pays Nantais, Anjou-Saumur, and Touraine. After the three judging panels expertly evaluated the wines, more than 50 came out on top, scoring 90 points or higher—a merit that buyers can use to better highlight the excellence of this special selection on retail shelves. But this is just a small sampling of the outstanding freshness and mineral-driven versatility
“It‘s a place you could drink from and study for your entire career without ever running out of new things to taste and learn.” – James Sligh, sommelier
which highlights some of the many juicy, easy-drinking wines that this cool-climate region can produce. Many of the judges came away from the competition impressed by the diversity and value of wines from the Loire Valley. “The Loire is a huge, incredibly diverse region close to my heart,” says Sligh. “It's a place you could drink from and study for your entire career without ever running out of new things to taste and learn.” HIGHLIGHTS OF THE DAY Wines such as the Domaine Jean Aubron Folle Blanche 2019, made from one of the lesser-known grapes in the region, showcase how much discovery the Loire Valley offers. Rated at 91 points, Sligh notes, “One of my own highest-rated wines ended up being this organically farmed wine from [Gros Plant du] Pays Nantais.” Other top-scoring options in the under-$20 price range include smooth and bright Biotteau Frères Poussière De Roche 2020 from PGI Val de Loire and saline- and citrus-driven Château De La Ragotière Les Vieilles Vignes Black Label 2020 from Muscadet Sèvre et Maine.
“I enjoy seeing the breadth and diversity of styles in the Loire and inside micro-categories of specific regions and grape varieties,” says wine director Jhonel Faelnar. He says that blind tasting alongside fellow colleagues in the industry with varying perspectives and opinions provided an interesting point of view. Marquita Levy, a sommelier at Crown Club at the Barclays Center, returned to the competition this year. She has experience working with wines from the Loire Valley and found that the 2022 selection highlighted smaller and lesser known appellations. “I was particularly drawn to the wines of Haut Poitou which really stood out and showed spectacularly in the line ups,” she says. Levy suggests that the new scores will contribute another point of consideration for buyers and consumers looking to explore the wide range of Loire wines. “This is helpful in learning about the lesser known appellations and new wine rules, and [also those who are] exploring the ever-popular category of rosé, which was one of the highlights of the day for me,” she says.
Almeida’s also got his eye on refreshing rosé as well as bubbly Crémant de Loire and sparkling Vouvray, which he says “will keep you salivating all year round.” Domaine Xavier and Agnes Amirault make an organic Crémant de Loire from Chenin Blanc, Chardonnay, and Cabernet Franc— this was one of the top bubbly wines of the day, noted for its fresh acidity and chalky mineral backbone. Another sparkling star, and one of the most highly marked by the panel, was Monmousseau Cuvée JM Blanc Brut NV from Touraine. This fresh and complex wine delivers the value for quality that the judging panel so appreciated. “I will be more likely [now] to choose a sparkling wine from the Loire, rather than my usual suspects of Prosecco, Cava, and pét-nats!” says Levy. In Levy’s eyes, “preparing for the judging felt like home schooling or a Loire Valley bootcamp.” No education of this region is complete, however, without a regional specialty: Chenin Blanc. The panel found many favorites, such as full-bodied Domaine Vincent Carême Le Clos 2019 and the off-dry and slightly spicy Pierre Chainier House Clos du Gaimont 2020, both from Vouvray. From Bonnezeaux, Domaine la Croix des Loges Les 3 Failles 2017 showed the diversity of the variety in this off-dry and golden release. “I have a tendency to be harder on wine styles that I really love,” says Sligh. “If I'm tasting a flight of Chenin Blanc, I'm going to be grading knowing what that variety is capable of in the hands of some of the greatest growers on the planet.” n
