*Ingredients:

°2 cups all purposeflour °3/4 teaspoon bakingsoda °1/2 teaspoon salt °1 cup granulatedsugar °1/4 cup soft butter °2 large eggs °½ cup mashedripebananas (about 3 bananas) °1/4 cup low fat plain yogurt (or Pina Colada flavoured!) °3 tablespoonsdarkrumor applejuice °1/2 teaspoon vanillaextract °1/2 cup shreddedcoconut °cookingspray

°1 tablespoon of shredded or grated coconut °1/2 cup powdered sugar °1 1/2 tablespoons fresh lemon or lime juice

*Instructions

Preheat oven 180 degrees. Put a spoonful of flour in dry measuring cups; level with a knife. Combine flour, baking soda and salt, stirring with a paddle attachment. Putting sugar and butter in bowl. Beat with mixer on medium speed until well blended. Add one egg at a time, beating well after each addition. Add banana, yogurt, rum and vanilla; Whisk until blended. Add the flour mixture. Beat at low speed until moist. My heart 1/2 cup coconut. Pour mixture into a standard size loaf pan covered with cooking spray; Sprinkle with 1 tablespoon of coconut. Bake at 180 degrees for 1 hour, or until a stick inserted into the center comes out clean. Cool in skillet for 10 minutes on a wire rack; Remove from skillet. Combine powdered sugar and juice, stirring with a whisk. Sprinkle on warm bread. Cool completely on a wire rack. Enjoy!
