THE LOWER DECK AT THE WINDJAMMER
T
he restaurant industry is a difficult one, famous for its failure rate. So, when an eatery has been around for 46 years, you have to figure they’re doing something right. At The Windjammer, success is due to the balance of the new and the familiar, the innovative and the traditional. The owners, managers, and chefs make sure the restaurant caters to its regular customers, who love it for what it is, while still thinking of ways to modernize and draw in new people.
The dining concept at The Windjammer is unique. It’s how they can ensure they have something for everyone. “'It's very versatile," Dan Phelan, general manager at The Windjammer, said. “There’s no reason why we need to limit ourselves and our guests.” The downstairs area seats about 300 people. While it leans more toward higher-end steak and seafood, over the past few years the chefs have been trying to focus on local and seasonal fare. The upstairs area has an entirely
different, much more casual vibe. The Upper Deck, as it’s known, fits 125 people into a sports bar or pub-style venue, offering things like wings and burgers. Now, the owners are trying something new, an expanded wine bar. “It was a vision we had for many

years,” Dan explained. “But we were never able to pull the trigger because we were always so busy.” The middle of the restaurant used to have a salad bar but the pandemic put an end to that concept. That's when they saw an opportunity to create the space they had always dreamed of.

Within the same footprint of the salad bar, The Windjammer now has a boat-shaped 12-seat bar built of mahogany, and they have named it The Lower Deck. They installed a Cruvinet system, a device that keeps up to eight bottles of wine fresh by controlling temperature and pressure.
Dan explained that a normal bottle of wine is only fresh for maybe two days after you open it. The Cruvinet system extends that lifespan from days to weeks. That way, The Windjammer can open finer bottles of wine for glass pours without fearing some would go to waste.
The Cruvinet system measures out pours by the ounces, so guests can choose from one-, three-, or sixounce pours without the necessity of committing to an entire glass. Though the new boat-shaped bar is special, like every other aspect of The Windjammer, the customer has choices. Although the seating is centered around the Cruvinet system, The Lower Deck is also a full-service bar where you can order anything from the entire wine list, along with beer or cocktails and food. Likewise, you can order glasses of wine from the Cruvinet system even if you aren’t sitting at the new bar. The Windjammer is already hosting wine tastings and tap takeovers at The Lower Deck. There’s no fee to attend, and visitors are under no obligation to purchase any of the wines offered; all you need is a reservation for The Lower Deck on the night of the event. The restaurant hopes to do more of this moving forward and already has some wine tastings and wine dinners planned for 2024. Eventually, the restaurant would like to co-sponsor events with breweries and distilleries. To see when those events will be held, check out The Windjammer on social media. And since the wines rotate on a near-daily basis, Dan recommends calling ahead to see what's on offer. Pint-Sized PARADISE Big Tree Is a Small Brewery Brewing Up Big Things
I
n the quaint town of Waterbury, Vermont, nestled within the heart of The Reservoir, a culinary haven renowned for its delectable offerings, lies a hidden gem that proves great things do indeed come in small packages—Big Tree Brewing. This unassuming nano brewery, an integral part of The Reservoir experience, has quietly been crafting exceptional brews that defy its modest scale. Much like the towering trees that fill Vermont’s landscape, Big Tree Brewing stands tall, offering patrons a sip of the extraordinary amid the scenic charm of Waterbury. Welcome to a pint-sized paradise where flavor knows no bounds and where big things are happening in the coziest corner of Vermont’s brewing scene. As it enters its 15th year, The Reservoir is firmly ensconced in Waterbury as an institution, but 15 years ago, it was just an idea to bring the best of Vermont food and beer to Waterbury. “The Reservoir started in 2009 with a focus on bringing some of the farm-to-table movement into the casual restaurant atmosphere.

At the same time, the craft beer movement was really getting going. After I attended the Vermont Craft Beer Brewers Festival on the waterfront, I was surprised to find that there were almost no restaurants where you could try all the Vermont breweries in a single location. We opened with almost every brewery represented and had to add lines over the years as more breweries opened,” Mark Frier, co-owner of The Reservoir and its sister restaurant, The Bench in Stowe, VT, said. While Big Tree Brewing was not part of the original plan, Mark said it was a natural progression for him, especially as a homebrewer and a fan of craft beer. “The brewery wasn’t in the original plan. I was an avid home brewer and decided I wanted to give brewing on a more commercial system a try. The nano-brewing equipment was getting better and better, and the timing just seemed right,” Mark said. In addition, Mark had a very useful background for making the systems and processes necessary to make good beer, and make it consistently. “I am an engineer by education, and I like the repeatability and planned chaos that is brewing. Trying small changes like dropping the wort temp before adding whirlpool hops, adjustments in water profile, or doing the first round of dry hopping during active fermentation have been fun to experiment with,” he said. For that reason, it makes a lot of sense that Mark would choose nano brewing, as the very small scale
allows for a lot of experimentation. And while many mistakes in nano brewing can have very limited consequences, Mark remembers one mistake that has had a lasting effect. “One mistake we made was putting the brewery on the third floor of the building. Carrying grain bags up the stairs and then full kegs down is a challenge. We also have had issues with the floor leaking down onto the other floors; good times,” he said. Despite the trials of having a brewery on the third floor, Big Tree has a history and reputation for making some excellent beers, and while the rotation of Big Tree beers
continues to change over time, there are always a few that can always be found on tap at The Reservoir. “Our flagship Big Tree beers have changed a bit over the years. Currently, they are Local Legend, a 6% IPA; Mellowstone, a 5% IPA; and Glampin, a 4.5% Pilsner. All our IPAs are designed to be flavorful up front, but don’t destroy your pallet and

finish nicely.” While the small brewery size of Big Tree allows for a lot of experimentation and flexibility, it definitely comes with its limitations, which is why Big Tree often partners with larger breweries to ensure its beers are available in the marketplace for their fans. “We were using the nano system to test recipes and increase my understanding of commercial brewing. We pursued a few locations for a brewpub in towns like Montpelier, Winooski, and Burlington. None came to fruition, but we wanted to get the beer into the market, so we looked into and ultimately settled on contract brewing in order to get it into package for retail,” Mark said. Because of that effort, Big Tree is now available in most specialty beer stores, some grocery stores,

and some additional select retailers in the area, but Mark still hasn’t given up on opening a more dedicated brewery. Those plans just may take a little longer than he originally thought. However, he is still open to finding just the right location to fit in with The Reservoir and The Bench. “We still have interest in our own large-scale brewery, but life is getting in the way a little. I had my first kid this year, and my focus on growth will probably be on pause for a bit. We would want the location to speak to the brand and focus on the outdoors and nature,” he said. Of course, The Reservoir has a lot more to offer than just Big Tree’s beers, which is why it has become such an institution in Waterbury over the past 15 years. To begin with, its dedication to showcasing the best craft beer Vermont has to offer has never faltered. Its carefully curated craft beer list focuses on balance but regularly features some heavy hitters and often has a surprise for craft beer fans. “My general manager manages the list. It is a lot to organize, and my manager has to make sure the beers are being poured fresh and the list is balanced. We were fortunate to build relationships with Hill Farmstead Brewery right when they started, and having world-class breweries like that available to us is amazing. The whole program is laid out on the computer and organized, so we know what is planned for each line well in advance. We just replaced all of our beer lines and cooling systems for the draft system as we enter our 15th year in business,” Mark told us. While you may visit for just a beer or a cocktail, don’t miss trying The Reservoir’s food, which is varied, topnotch, and reasonably priced. “We are really proud of what the food at our restaurant has grown into. Everything is made inhouse or in our sister restaurant in Stowe [The Bench]. We really do try to bring food that is unique to our restaurant, balanced against other offerings in town, and at a price that the customer appreciates. Our bar manager and team design our cocktail menu,” Mark said. If you get a chance to visit, be sure and ask about great beer pairings with your meal, as the staff knows just the right brew to complement your lunch or dinner. “My favorite beer pairing right now is our brown ale, Big Tree 85 Bears, paired with our 85-layer lasagna. Mark also let us know that if we want to know more about the ’85 Chicago Bears, the best way to find it is to watch the “Superbowl Shuffle” on YouTube. Feel free to do that in preparation for your visit. If you would like to try a pairing with something other than beer, Mark also has a great cocktail recommendation for you. “My favorite pairing right now is our Sunset Road cocktail [Bar Hill Tomcat Gin, Campari, pineapple, and sage] with our hot honey smash burger [La Platte Farm beef, pepper jack, bacon, hot honey, and chipotle aioli],” he said. Lost Lantern Whiskey’s New Tasting Room
A
lthough the business model has existed for hundreds of years in Scotland, the concept of an independent bottler is still new to America. Lost Lantern brings the concept to life in Vermont, making it the first independent bottler in the nation to do so. WHAT IS AN INDEPENDENT BOTTLER? Nora Ganley-Roper is the co-founder and general manager of Lost Lantern. She explains that Lost Lantern is by no means a distillery. Instead, it seeks out the best whiskies from all over the country and then bottles them as a single cask or small blend. In some cases, it will also blend whiskies from multiple distilleries, creating something brand new. Everything
goes under the Lost Lantern label. “There are 2,600 distilleries across the U.S. and most of them are regionally focused,” Nora explained. “What we do is we help people find out all the cool things that are happening and highlight the distilleries.” When something goes under the Lost Lantern label, it provides full transparency about where each whiskey comes from. To play on that point, the name “Lost Lantern” is an allusion to the company shining a light on fantastic distillers that might otherwise be lost. “That’s why people seek us out; they know we are highlighting the best,” Nora said. “We’re not trying to pass it off as our whiskey. We say we’re curators, we’re blenders, here are all the distillers that distilled it—
if you like it, go check them out. It’s a nice, kind of symbiotic relationship.” Nora and her husband, Adam Polonski, co-founded Lost Lantern. Nora serves as the general manager, while Adam is the "cask hunter" and head of whiskey sourcing. Nora and Adam often thought about how there were no independent bottling companies in the U.S. like they had seen in Scotland. So, they decided to create their own. “It just became a thing where it was like, ‘We have to do this. It needs

to exist. Let’s put all of our stuff in storage and travel around the country for eight months to make sure people will sell us whiskey,’” Nora said, laughing. “And the rest is history!”

A NEW TASTING ROOM The couple’s venture got off to a rocky start due to launching during the pandemic. They’d intended their first bottled products to be released in April of 2020, but that was delayed until October. Now, they’ve got their feet on the ground and are trying something new: the very first Lost Lantern tasting room. Most of Lost Lantern’s sales have been from New York and California. With the opening of the tasting room, they'll be able to focus on Nora’s home state of Vermont. She says that, so far, the local support has far exceeded her expectations. The tasting room is set up so that people of all interests and knowledge can

have an experience suited to their preferences. And for Lost Lantern fans, the tasting room is a haven for delicious memories. “Even though we’ve been releasing our products since 2020, we’ve been saving a small number of bottles of each of our whiskies since then. So, for many our products, the only place to get them is our tasting room because they’re all sold out,” Nora said, talking about how exciting it is when she gets
to tell someone she has the bottle they’re looking for. Right now, the Lost Lantern tasting room is only open two days a week. You can check Lost Lantern's Instagram (@lostlantern_ vt) for days and hours, which vary by season. Moving forward, the couple plans to roll out classes. With a variety of tasting flights, merchandise, and bottles to purchase, there’s something for everyone at Lost Lantern's new tasting room.

“The Most Interesting Man in the World!”
V
illage Garage Distillery in Bennington, VT, and Vermont resident Jonathan Goldsmith, who is famous for being the “Most Interesting Man in the World,” have teamed up to bring their mutual love of whiskey to life. Goldsmith, the actor who played the Most Interesting Man in the World in all those fun Dos Equis beer commercials and advertisements, has been named Chief Storytelling Officer at Village Garage Distillery in Bennington. In this new role, Goldsmith will tell the tale of the Village Garage. He’ll be creating online videos and

photos, hosting events, and making appearances at a variety of local functions, concerts, shows, and other social events. When asked about this partnership, Goldsmith related: “Fellow Vermonter Robert Frost said, ‘Good fences make good neighbors.’ Well, great whiskey makes better neighbors. From the moment I walked into Village Garage, I knew they had bottled the very reason I live in Vermont.”

to creating a unique experience that showcases the best of what the region has to offer. Glen is pleased with the community they are building at Village Garage. “We’re trying to put life into our downtown to boost the downtown we grew up in. What could we add to bring life to our downtown? What can the big-box stores and the internet not bring to your house — sharing experiences and stories with friends while enjoying great spirits!” The distillery currently offers seven spirits: Village Vodka, Village Straight Bourbon, Village Rye, and its Village House Gin. Its Village Bonfire, inspired by a campfire, is a combination of its five-year-old Vermont whiskey and locally sourced, smoked maple syrup. For a short time it will also have a limited-release whiskey, “L’Esprit de Vermont,” that has been matured in a 27-year-old Armagnac cask. Village Garage Distillery is open Wednesday–Saturday from 12–9 pm. The restaurant offers fun fare with weekly specials in its tasting room. The distillery also offers tours where its knowledgeable staff will walk you through the entire distilling process, all before sampling some of its handcrafted spirits. It works with local farms and sources local corn and rye, and the spent mash goes back to feed Angus beef, which is used in the restaurant. As we pulled the nugget from the bag, the beautiful purple color was striking. We raved about the “bag appeal” for the color alone. It was evident the detailed trim job was done with care on the loosely structured kolas inside. Through our scope, the trichome coverage was moderate with small, lean, and clear trichome heads, many intact, and the deep, brilliant purple color awed us. The immediate aroma was an undeniably sweet blueberry and chem, followed by well-balanced spice, floral, and earth to round her out. To us, it was a classic and delicious mix. Sweet came powering through on the grind; after the roll and dry hit, it went back to the fruit and blueberry. This hit the mark with an overall quality cure, evident on the grind and with the roll. There was great moisture content for an outdoor-grown, bulk-stored flower, and it rolled and burned very nicely. For a beta-caryophyllene dominant strain,

Wizard Express, a cross of Blissful Wizard and Pineapple Express, was grown on repurposed organic hayfields at a retired dairy farm in Barre. Honey Tree Farms produces both indoor- and outdoor-grown flowers, with Wizard Express being one of the 2024 fall outdoor strains it released. As we opened the biodegradable bag, the initial nose was sweet, floral, and tropical. Secondary notes were earth with a touch of spice. The structure was typical of Vermont outdoor grown. With our scope, we saw a moderate amount of mature, amber, and ripened trichomes, just ready for picking (or smoking?). As we opened the nugget and ground her up, the sweet aroma shone through. It was a little dry for grinding and rolling. The sweet aroma opened with a splash of tropical

she smoked smoothly and consistently. Blueberry Muffin has a top-notch, all-around great profile for newcomers and savory and sweet lovers, with a beautiful mix of terpenes and just enough THC. The fruitiness is just right, and spice, sweetness, floral, and that pungent kick of chem hit home. It will show just about anyone a good taste and time. The high came on quickly as the thick smoke coats your throat, mouth, and nasal passages. Powerful and relaxing effects were the consensus, as you might expect from a strain with 1.35 % beta-caryophyllene and 0.51% myrcene, followed by humulene, bisabolol, and limonene terpenes. Known to be supportive of pain, it also has gastrointestinal benefits, increasing appetite, decreasing nausea, and stimulating digestion. With a solid head high and deep body relaxation, the Blueberry Muffin was mildly sedative, and relaxing, and left a big smile on our faces. We think it will do the same for you! INDOOR GROWN LAB TESTS: THC 22.48 total THC, 27.03 total cannabinoids TERPENES: 1.9% HARVEST DATE: Summer 2023 With a deep almost warm color of kelly green, purple highlights, and vibrant orange stigmas, Gummiez was a picture worthy of capturing. The structure was extremely dense and tight, true to form, and up to par for an indoor, synthetic nutrient-grown strain. Viewing small yet intact trichomes through our scopes, we noted many amber-colored heads, speaking to the maturity and time the cultivator allowed for true ripening.

We then drew Gummiez in close to assess the aroma. The first notes brought us a tangy, candy-like fruity sweetness, true to name. They were followed by an aroma reminiscent of ground coffee, a nutty and warm smell. We continued looking for brighter notes on the grind and dry hit, and unearthed a more complex nose, adding some spice and sweetness, especially on the dry hit. As we burned this one down, we didn’t notice the greasy ring around the joint’s tip like we often do with Jet Fuel strains. The fruit flavors and the Peach Ringz genetics continued to be the main flavor on our palates, with coffee reminding us of the uplifting effects to be expected. The intense spice and tickle in the back of our throats reminded us of either the potent trans-caryophyllene terpene packed into this strain or the synthetic nutrients used to help bring her to life! The tangy, almost apricot and peach-like fruitiness with tantalizing coffee notes and a spicy bite on the back end were followed by moderately layered flavors that blended nicely into a perfectly uplifting and energizing pick-me-up. The smoke was smooth and light-bodied and tickled the nose and throat halfway down. Stimulating, cheerful, and cerebral, it equated to one ready-to-rock, happy camper for hours on end! For the person looking for that deeper body high and physicality, or someone who needs to be cautious due to anxiety, we might say to look further. For the person who is all about playing, dancing, being creative, or chatting it up, Gummiez by VT Green Castle Reserve is what you are looking for.
