From Bees to Bottles

CALEDONIA SPIRITS Crafts Award-Winning, Raw Honey-Based, Landcrafted-in-Vermont Spirits

The internationally lauded company is set to launch its 27,000-square-foot distillery, tasting room, and visitor center in Montpelier 14

marketed Barr Hill Gin and Barr Hill Vodka, whose names are inspired by nearby Barr Hill Preserve in Greensboro. The spirits were a big hit, selling 235 cases in the first year. Barr Hill Gin is distilled in custombuilt botanical extraction stills. Barr Hill Vodka is made entirely from raw honey that, unlike most vodka, is only minimally distilled and filtered. Barr Hill Reserve Tom Cat Gin is made by barrel aging Barr Hill Gin for six months in new American white oak barrels. The name pays tribute to an important time in gin’s history. As a result of eight Gin Acts passed by the British Parliament during the 1730s and 1740s, London distilleries were forced into the black market. Wherever a wooden black cat, or Old Tom, plaque hung, imbibers would know gin was available. Caledonia Spirits’ Tom Cat debuted in 2014, selling much faster than Hardie and Christiansen had expected. Because there weren’t enough barrels to keep up with demand, Hardie and Christiansen, true to their vision, worked with local foresters to sustainably harvest the Vermont white oak from which new barrels were built. In 2015, Hardie sold the business to Christiansen, who is now president and head distiller. In turn, Hardie established Thornhill Farm where he planted and now harvests the barley, rye, and elderberry that Caledonia Spirits uses to craft its magic elixirs. As Christiansen has stated, “The land spurs our creativity and serves as a guide on our quest to produce flawless landcrafted spirits.”

VERMONT LANDCRAFTED SPIRITS MAKE AN INTERNATIONAL SPLASH Barr Hill Gin, Vodka, and Tom Cat have been entered into at least a dozen national and international competitions and garnered 30 awards, over half of which are gold medals or better. Today, the spirits are sold in 29 states as well as Canada, Japan, China, Denmark, and the UK.

FROM THE KINGDOM TO THE CAPITAL Having outgrown its 6,500 square foot Hardwick location, Caledonia Spirits is, as of this writing, about to move into a custom-designed and -built 27,000-square-foot distillery, tasting room, and visitor center on 4.3 acres along the banks of the Winooski River in Montpelier. At its new home, the entire process will take place, from delivery of the raw materials through creation of the spirits to bottling them, sealing the bottles with beeswax, and finally, pouring the end result into a delighted customer’s glass at the cocktail bar.

If Chris Granstrom wasn’t always experimenting and trying new opportunities, he’d likely still be running a successful apple tree nursery or a strawberry farm. Instead, he’s operating one of the largest vineyards in Vermont and making award-winning wines.

Granstrom taught himself how to make wine by reading, observing, visiting other wineries, and attending a two-day seminar in Virginia. He also had to learn the hard way—by making mistakes. “But it keeps me on my toes, ” says Granstrom. In 2007, Lincoln Peak Vineyard produced and sold its first bottles of wine. The next year, Granstrom opened a shop with a wine-tasting room, which he doubled a few years later as demand grew. The Vineyard is a small, hands-on operation with half a dozen college students working in the field, and a similar number helping out at harvest time and in the tasting room serving customers.

and make space available to hold events here,” adds Granstrom. “It’s nice to be recognized and win some awards. I never thought these wild dreams could come true. It’s like wine making: one step at a time. There was no grand vision. We kept taking steps that made sense and that’s how it evolved.” The vineyard has been enormously popular, and occasionally too popular. The outdoor Friday night concerts drew upwards of five hundred people—too much for a small family operation, and ultimately they were cancelled. Mellow acoustic sets on the porch on Sunday afternoons are still popular and much more manageable. Seven days a week during the

summer and fall, visitors can look out the window, see the vines, and buy a popular local product that only travels a few hundred yards from vineyard to glass. Lincoln Peak Vineyard has become a unique destination experience due to its gorgeous setting, interesting gardens, and a big, beautiful porch overlooking a pond. Serving excellent, award-winning wines also doesn’t hurt. The only winery on the Middlebury Tasting Trail (which mainly features breweries and distilleries), the vineyard serves and sells a variety of incredible, all-local cheeses. Visitors can try several wines in the tasting room, and buy a bottle or case to enjoy at home. Reusable 750 ml wine growlers also are popular, and buyers receive a two dollar discount off the bottle price. Members of the Wine Club receive twenty percent savings on six or twelve bottles of wine four times a year, plus free tastings and other discounts. Wine Club “pick-up days” have become popular events. Granstrom’s wife Michaela and daughter Sara have been crucial to the vineyard’s success. Michaela is retired from teaching and helps wherever she’s needed, while Sara is in charge of the marketing and communication side of the business. “We’re always experimenting, never resting, looking at what we can do better,” says Granstrom. “We offer a nice place to visit. The wine is good and we make sure our visi-

He had tapped into the perfect keg of opportunity.

POURING PASSION INTO WORK Billy enjoys his work, and it starts early—he is up between 4 and 5:30am. How does he get work done, when many restaurants and businesses aren’t yet open? “Most of my accounts, I have a key for. They open at eleven or twelve for lunch. So I’ve got to be able to get in, get done, and get out before they open.” His work has produced many great friendships, and he also likes not having the same routine every day. “One day, I’m gutting out half a system because a squirrel chewed through a beer line.” Keeping things fresh from day to day helps Billy keep your beer tasting fresh.

FROM PASSION TO ADVOCACY Billy urges restaurant and tavern owners to put quality draught systems in place. “It’s an investment. It’s like buying a good oven or a good grill top, or paying for a good chef or cook. You’re going to see the return. You cut corners and put in a shoddy system…all your profits are going to go into the drip tray and down the drain.” Billy is trying to get Vermont to establish standards of cleanliness. “We’re like the craft beer mecca of the world and we have no standard.” The Brewers Association mandates that all draught beer systems must be cleaned every two weeks. But not every state requires it, and Billy says that is absurd. "It only makes sense to follow the best practices set forth by the trade association." Billy believes that once Vermont puts standards in place, new jobs will follow. Many would toast that development.

The Club outgrew their space the year after Ian began Hired Hand, and the managing directors approached him about the space being available if he wanted to take it. Two years later, that space is being put to good use. As demand and interest grew, Ian expanded the operation. He put in new seats, created a secondary restaurant, and decided to focus on a dining experience that complemented the beer. With a partnership that allowed him unrestricted access to two fermenters, he was able to keep up with demand. Ian’s staff has been largely consistent, too—most of the team has been with him for over seven years. The food aspect of Hired Hand is what sets it apart. “We are always sourced 40 to 45 percent locally yearround, and we’re working to make sure that dining and beer at Hired Hand has great representation of local farms.” The farm to table idea had interested Ian since he started cooking, and extending that mentality to beer felt like a natural continuation. Ian’s philosophy about using as many local ingredients as possible in his beer has been successful. “Last year,” Ian shared, “We created a beer

When asked about his favorite, after a brief hesitation, Ian had his choice. “It’s gotta be the Tracker Pilsner. It’s a simple, light beer, 4.2% ABV, the works. It has a nice flavor and really feels like a good representation of the valley. The Milk Stout has some roasted complexities as well, so that’s definitely a close second.” “If you’re looking for a laid-back vibe, a great team, and a talented chef,” Ian says, “Hired Hand is the place to go. In the last six months, cannabidiol (CBD) retail shops have sprouted in Vermont like mushrooms following a rain. CBD is among the more than 100 chemical compounds in the cannabis plant, and anecdotal evidence suggests it helps people deal with anxiety, pain, and sleep issues. Despite being a close chemical cousin of THC, the cannabidiol that gives people a high, CBD cannot provide a similar high no matter how much is consumed. Here’s a look at three CBD retail shops.

According to Bell, CBD oils provide a sense of calming—an effect similar to meditation. He believes CBD products have huge potential and today’s products are just the beginning. Products from this year’s cannabis crop will be all organic when they arrive in his shop later this year. Bell feels strongly that cannabis products will provide new opportunities for Vermont farmers and he’s excited about the possibilities to help keep struggling farms going. “I came out of retirement to start a business to help struggling farmers produce a product that’s organically raised and that can reduce runoff into our lakes and streams,” adds Bell. “This is a community business and we’re doing our best to help customers with pain, anxiety, and sleep issues.” Finally, CEO Meg Burns and her business partner COO Mark Drutman operate Green Hut in Waterbury.
