particularly love our front cover this month by local artist Karen Neale. It’s a view down St Mary’s Hill in the style of a famous New Yorker front cover by Steinberg from the 1970s showing New York looking towards the Pacific Ocean. It’s a tongue-in-cheek reminder of how we can’t help but think of our own place as somehow ‘central’ in the world; but hopefully it’s also a reminder of the importance of looking outwards. As our article on Stamford’s new business start-ups show this month, we thrive as a town because of people that are born and bred here, because of people that have chosen to stay here and because of people who have chosen to settle here. As Laura Alcazar reflects in her experience of Stamford as a visiting Spaniard (on page 31), it is the friendly character of the people and the beautiful environment that binds us together into a greater whole than the sum of the parts. Long may that continue. This front cover is intended to be a celebration of that. You will not find Clacton-on-Sea on the horizon.

Stamford STAMFORD NURSERY SCHOOL Antonia Scott speaks to Nicky Woodward, Manager of The Stamford Nursery School. How long has Stamford Nursery been running? “The Stamford Nursery School opened in 1998 in a temporary building and has since gone from strength to strength, moving to a purpose built building three years ago, with fantastic outdoor space including a wildlife garden, vegetable patch, mud kitchen and a race track! “At the nursery, we have nine members of staff who work in our two rooms - the ‘Gosling’ room, where the rising 3 year olds learn and play, and the ‘Owl’ room, which is for Preschool children turning 4. We also have three lunchtime supervisors who come in to assist the children in the dining room, where all the children and staff sit together to enjoy the home cooked lunch.” What do you think is the key ingredient for an ‘outstanding Nursery’? “Children will feel that ‘this is a place for me’. An outstanding Nursery is built on a foundation of secure, trusting and honest relationships between the children, the adults and their environment. These relationships grow from respect, care and commitment, and the children will thrive knowing that they are valued.” What is an ‘average day’ at the nursery? “The children arrive at the nursery between 7.45am - 9am. The morning begins with a song and discussion about what is on the day’s agenda. During the session, various activities will be on offer, including cooking, gardening, P.E, making objects, sensory experiences, exploration, painting and tree climbing. Activities are carefully planned to reflect the needs and interests of the children. “The Nursery embraces learning through play, which is a more free flow approach, so the children can take their learning both indoors and outdoors, making connections that are gently supported by adults. Throughout the week there are additional opportunities that children can join in, which include dance lessons, music sessions, French, Spanish and swimming lessons. We have a parent and toddler group on a Tuesday afternoon, which offers a great opportunity for younger children to experience the environment and get to know us before they start. We are lucky to have a kitchen within the Nursery which is supported by the Stamford Endowed Schools’ catering department. This ensures that all food is freshly cooked, using the best ingredients. The nursery

day finishes at 4pm and extended care is available until 6pm.” What are the best parts to your job? “It is a privilege to work with every child and their families. Relationships are very important to us, and the pride and joy we all feel as we share in the exciting journey children are embarking on as they join the Nursery, is tremendous. The Nursery over the last 16 years has flourished, with many children and families coming through our doors and leaving as confident, independent and enthusiastic learners!” Explain the benefits of ‘outdoor learning’ “There is evidence that children use more verbal communication and extend their vocabulary when they are outdoors. We see this regularly, along with the calm focus, adventurous spirit and curiosity that being outdoors fosters in our children. Outdoor learning is part of our children’s daily experience and we believe that this is crucial; it is not an ‘add on’, it is truly an embedded approach to supporting children’s development. There are numerous benefits to outdoor learning, not least that children are emerged in the natural world and learn to notice it! “Anita Mould, our Forestry School Leader, has embarked on Forest School training and we look forward to the exciting developments within our Nursery that this promises. As children move into our Reception Classes, we take advantage of the expertise of Mr Edward Smith, the Director of Outdoor Education for the Stamford Endowed Schools. He has been named ‘Mr Adventure!’ by the children, as he takes them on regular adventures to local woodlands.”

tamford’s newest store ‘Express Printwear’ is another Internet retailer who is bucking the trend and branching out onto the high street to maximise the opportunities for hands and eyes-on experience that a physical bricks and mortar shop offers. The successful online business ‘UK Printwear’, based in St. Leonard’s Street, already has five active web shops and is also an Amazon partner, which sees their products dispatched around the world via the Amazon fulfilment service. However, after listening to a variety of local people, owner and Director, Mark Stanhope says “it appears that many Stamford residents are unhappy that they do not have access to a younger age range of affordable clothing, including basic school uniforms - and that custom printed items would be well received.” This finding, coupled with meeting many parents from St. Augustine’s School, who already purchase all their uniforms directly from UK Printwear, has led them to change this ‘online only’ policy and offer a traditional retail experience to see ‘real’ garments and try them on before purchase. It appears that although Internet shopping may be cheaper, not everyone is a fan, especially when buying school uniforms, as children come in all shapes and sizes and the ability to quickly replace a lost jumper or Polo T shirt, rather than order online and wait for it to be delivered is certainly a major benefit. Running in Stamford – the routes with a view! This month Georgie Fenn shares some of her favourite routes around Stamford

N

IGHTS are drawing in and the leaves are on their way off their cosy branches so it’s time to either run in the day or run where street lamps light your path with a sensible reflective top on! DAY ROUTE My first route which is a bit tough but worth it for the view of Stamford is for daytime and it is 5 miles exactly! If you live in Stamford it’s best to start at Tinwell Road (for people who don’t live in Stamford you can park on this road as it isn’t marked). From here make your way to Water Furlong which takes you to the meadows. Start off with a nice easy jog shaking out your muscles and having a stretch. When you get to the bottom of the hill turn right through the gate and follow the grass path heading towards the pylons and the bridge that crosses over the river. After you have skipped over the bridge make a right and follow the river for a short while before you see a path that cuts across the field under a bridge – start saving your energy up because it’s relatively uphill for the next few miles. It is very straight from the bridge, just stick to the path that aims at Easton-on-the-hill and you should be fine, there are a few stiles so look out for those and if you have enough energy you could always go for the agile jump (I’m so knackered I tend to roll over the stiles.) Once you make it to the road in Easton you should be on Church Street, if not better luck next time! Turn left on Church Street and follow the undulating road until you get to the T-junction near the pub (don’t stop here) and turn left and you’re on the home straight. Now you just need to stick to the pavement all the way down the hill on the A43 until you get to Stamford Junior School. Take the next left at Wothorpe Rd, keep to the left in the fork of the road and keep going until you get to the meadows, jog towards the car park around the meadows and then it’s the final hill up the cobbled road at the west end of Bath Row up to Austin Street and you are nearly back to Tinwell Road, Once you get to St. Peter’s Street break into a walk and cool down, Tinwell road is just over the roundabout – have a stretch and you’re done! Approximately 500 calories burnt according to my Garmin!

KEY POINTS: . There is a railway track on this run - please take your headphones out (or don’t wear headphones at all) LOOK, LISTEN, LOOK AGAIN and then cross. . Wear good footwear; there is no point getting injuries from bad trainers . If you do feel a niggling in a joint stop and rest otherwise you risk making it worse . Take a mobile phone or go with someone else in-case anything does go wrong and you need a lift NIGHT ROUTE Now for a night run, if you prefer running in company I recommend you join the Stamford Striders who cater for all abilities, all the details are on their website: www.stamfordstriders.co.uk If you prefer to run alone like myself then a route I enjoy is starting at the meadows, run towards The George Hotel but make a right as if you are heading out of Stamford towards Wothorpe, past the Junior School and take the first turning on the left, First Drift – it is dark because there aren’t many street lights but this should make you run faster, really attack the hill all the way to the top if you can! Once you get to the top you are near Bottle Lodges, turn left heading back into Stamford and it really becomes your choice how much further you want to go at this point – you can either turn right after The George Hotel and go back to the meadows or you can put in an extra loop by running past the luxurious smells of Pizza Express and turning right down Wharf Road, follow it onto St. Leonard’s Street and then turn left at the mini roundabout and go straight across the cross roads and the traffic lights, then just stay straight and you will get back to the centre of town where you can wiggle back through the square to the meadows! KEY POINTS: . Wear Reflective clothing, this is a MUST! . Always face the direction of traffic, this means you run on the right hand side of the road and when a car comes you step on to the verge.

THROUGH THE KEYHOLE

The Old Rectory, Thornhaugh By Harjit Gammon

T

HORNHAUGH is a small village around 6 miles to the south of Stamford which unusually boasts not one but three large properties; Thornhaugh Hall, The Manor (a farm) and The Old Rectory. The Old Rectory, though next to the village church, is not just a rectory that is old, but a rectory that is a rectory no more. This former rectory has been home to local family, Karen Rutter, her three (now grown-up) children and is now on the market. The Old Rectory, Thornhaugh like numerous rectories up and down the land, was originally a clergy house, owned and maintained by the church, as a benefit to its rector until it passed into private ownership. Such clergy houses frequently served as administrative offices of the local parish as well as a residence, so were frequently located next to the church. As well as serving as a residence for the rector and his family, the property was also required to receive members of the congregation and to entertain visiting church officials. In some villages historically the rectory was also the headquarters for managing the glebe land owned by the Church, with the rector entitled to collect the tithes from the land. The Old Rectory as a result is not only impressive (great kerb appeal) and substantial in size but it is also well situated next to the church in its village setting.

What the brochure doesn’t tell you:

• During WW 11 the house was a Land Army Hostel; home to young women, who worked on the surrounding farmland in Britain’s Dig for Victory drive. • The girls slept in attic rooms, where they apparently wrote their names on the ceilings with the soot from their night candlesticks. • The original building had a square shape footprint. • The ‘new’ extension to the right of the front door (currently a Holiday Let for Hen weekends and birthday parties amongst other things) was added in 1730 and boasts a dining room (now the drawing room) for seating up to 40 according to the owner. An addition paid for and at the insistence of a wealthy rector’s wife as a pre-condition of marriage! • In 1878 the front door elevation was built to give the house grandeur. • There are three decorative stones on the front facade, under the drawing room windows from Fineshade Abbey.

THE PROPERTY A Grade 11 Listed Rectory, adjacent to St Andrew’s Church, Thornhaugh. St Andrew’s Church dates from the 12th century, although was much restored in the 19th century. The rectory dates to the early 17th and 18th Century, c.1620/1635 Arranged over four floors, with 6 reception rooms, breakfast kitchen, 10 bedrooms and 4 bathrooms plus cellar, store room, coach house & gardens. The property and grounds extend to approximately 1.9 acres in all.

• A cupboard door in the rector’s study has the height measurements of children and a dog dating to c.1799. The same room also has double lobby doors and may have been a receiving room for tithe payments. • There is an enormous safe with fantastically heavy doors and a secret lock on the first floor; for safekeeping of the church tithe income perhaps. • A cellar is kitted out with racks to hold 2,200 wine bottles. • Every room in the house has a chimney, Karen tells me. In the 2013 Budget the Government announced new tax incentives for childcare and Garry Wiles of Chartered Accountants Stephenson Smart explains how these have now been considerably enhanced

Tax Free Childcare Scheme will be launched in Autumn 2015 with all children under 12 within the first year of the scheme being eligible. The relief will offer 20% of the costs of eligible childcare up to a total cost of £10,000 per child per year, being worth therefore a maximum of £2,000 per child. To qualify all parents in the household must: • Meet a minimum income level based on working eight hours per week at the National Minimum Wage. • Each earn less then £150,000 per year. • Not already be receiving Tax Credits or Universal Credit. Parents will need to register with the Government and open an online account which will be used to administer the family’s childcare payments and the 20% Government credit. Employers are still able to set up Tax Free Childcare Voucher Schemes until the new scheme is introduced and these type of schemes if already established may continue to operate beyond Autumn 2015, offering a maximum value of £55 per week per parent in tax free childcare benefits. Stamford Junior School building on inspirational ideas from the Thinking Hands Symposium Director of Early Years at Stamford Junior School, Samantha Weeks, was lucky enough to be invited to a symposium organised by the Clayground Collective at Central St Martin’s, London, recently.

S

amantha is passionate about the place of expressive arts in early childhood education and this was a valuable opportunity to look at the significance of clay work in particular, from a range of perspectives. Around 50 professionals, including artists, educators, arts professionals and medics, came together to look at research regarding the significance of hand skills and how important these are in a child’s development. Eye surgeons, dermatologists and neurophysiologists all spoke with passion about how re-engaging their students with clay work and drawing had helped their students to improve their abilities. Bruce Noble, consultant eye surgeon, outlined how he uses his skills as an artist to teach his students to draw as a way of understanding what they are seeing as they prepare for surgery. Samantha said of the event, “It was a thought provoking and inspiring day that delved into the relationship between the digital revolution - including 3D printers and traditional hand skills.” Samantha will continue to work on this new research project, and The Clayground Collective hope to put together a handbook to be used within schools, including casestudies to illustrate the significance of hand skills across a breadth of disciplines. As a result, Stamford Junior School will continue to embed traditional hand skills within their curriculum. e aren’t shy of a few celebrities around Stamford, Gok Wan visits The George at Christmas, that man from flog it was seen filming here and it has been rumoured for years that Rowan Atkinson inhabits a lovely house in Apethorpe. However; now a very exciting new celebrity is living just half an hour away at Somerby and is set to stay - Andrew Hoy. Now for those who are not part of the equestrian world, Andrew Hoy is kind of a big deal; he is an Olympic legend who at our great loss competes for Australia and he also won our very own Burghley Horse Trials in 2004. To local riders this means that we can use his great experience for our own benefit by going for lessons at Somerby Stables which is a great facility with both indoor and outdoor schooling facilities. I had the pleasure of attending the opening of Hoy Enterprises Ltd and it was so lovely to meet Andrew and his absolute delight of a partner Stefanie who helps run the show. Together they make a great team and Hoy Enterprises is sure to be a success with Stefanie’s organisation skills and Andrew’s talent. Lambs make changes L

ambs Cookshop has transferred to the opposite side of St Mary’s St, merging into the existing Lambs China and Glass shop. Janet Brown, owner, told SL: “It has been quite a challenge fitting everything in. The staff, several of whom have worked at Lambs for many years, have all worked very hard moving stock and fixtures. “We have now succeeded in offering an amazing choice of products all under one roof. Lambs History Lambs is a family business, run by Richard Stapling and Janet Brown, a brother and sister partnership. They have both been involved in the shops since leaving school in the 1960s. Their parents Steven and Muriel Stapling purchased the established hardware business in 1946 from Mr & Mrs Lamb who were relatives of the family. Like many shopkeepers at the time, Steven & Muriel lived above the shop at 8 St Mary’s St. They had no bathroom and had to use the old Municipal baths. The building can still clearly be seen in Bath Row, marked ‘baths’.

Over the years there have been many changes: • In the 1950s Lambs China & Glass expanded in the shop that had been newly converted from a doctor’s house by SKDC at 36 St Mary’s St, later acquiring the property next door that had been the hairdressers ‘Top Notch’ in 1986. • 1970s Lambs Cookshop started up in 31 St Mary’s St. Now occupied by The Flower House, formally Sue’s Flower House. Lambs Hardware moved to 22 St Peter’s St where it continues to operate as a traditional hardware store run by Richard Stapling, selling gas & electric fires, cookers, white goods, lawnmowers & gardening tools, Calor gas, coal and bee-keeping equipment. • 1980s Lambs Tableware Shop moved into 7 St Mary’s St; previously it had been Palmers TV & record shop and now is occupied by Black Orchid. Lambs continues to evolve and develop. SO remember the excitement of starting my own publishing business in 2001 – the excitement of the first magazine coming off the press, the first cheque arriving which I pinned on the wall and admired (until my accountant pointed out this was not ideal for cash flow), waking up in the morning and realising that something amazing was in the process of being created.

All those types of feelings exist when you start your own business, and they make all the hard work more than worthwhile, especially those frantic last few days before launch or opening! So what advice did the 2014 crop of entrepreneurs give to anyone else planning to start their own business? These are the most frequent bits of advice: • Follow your heart, do what you love • Expect it to be really hard work, especially the first few months • Be very grateful of family & partner support • Research and plan carefully • Be different and original; have the courage of your convictions • Just Do it!! It was a huge pleasure to meet up with so many vibrant, new independent businesses – long may you all thrive!

Start Up! Stamford is a brand new competition launched by some churches and business people in Stamford, to help young people get started in business. Melton Bucking the trend on high street downturn and making a strong statement as the Rural Capital of Food, Amander Meade discovers that Melton Mowbray is so much more than just a market…

A

MERE ten minutes by train from Oakham, Melton is so accessible (Adult return £7.20) and offers such versatile shopping that after a recent visit I vowed to visit much more regularly. The town centre is only two or three minutes’ walk from the station and if you go on market day you will find the streets full of shoppers filling their bags with fresh, locally grown produce. I made straight for Dickinson & Morris to meet their Managing Director, Stephen Hallam who had volunteered to be my guide for the morning. As well as running the legendary Olde Pork Pie Shoppe at the heart of the town, Stephen relishes his voluntary ambassadorial role as an enthusiastic champion of the region, regularly representing market traders and other retailers at tourism events up and down the country. “We have one of the strongest brands in the UK in the Melton Mowbray pork pie,” he explains, “but we are not alone. We co-exist within the same market place as other great makers such as the Melton Cheeseboard and the Long Clawson Dairy, home of stilton cheese, and the Belvoir Brewery. Melton Mowbray absolutely deserves its branding as Rural Capital of Food as we have more protected food status that any other town in the UK.” First on our list is a walk through the traditional street market in the town centre where there are stalls offering all the usual fruit and veg plus the more unusual – handmade ceramics, traditional toys, leather goods, clothes, shoes and even wigs. National chains rub shoulders harmoniously with the flourishing independents. There are over a hundred makers and suppliers of food in Melton so choice is certainly not a problem. Next a tour of the farmers market held each Tuesday and Friday morning which was absolutely buzzing with fabulous food and shoppers tasting, testing and buying. “People in this region are very canny about food,” Stephen explains. “In times of austerity especially, people want better value for money and in a country where thirty per cent of all food between field and fork is wasted, Melton folk prefer to buy and eat fresh produce with an excellent provenance – it makes more sense financially and environmentally.”

Stephen’s passion for the town is clear and he relishes the contribution visitors make to the town especially those who buy a pork pie to take home – one of the four and a half thousand pies and just under a tonne of sausages sold at the shop each week during peak season. The Melton Cheeseboard is famed for its Stilton and stocks well over a hundred other varieties of cheese. Cheese lovers are welcome to call in and try before experimenting with some new flavours. A family business, the shop has a long association with the Long Clawson Dairy who make award winning Stilton and a fantastic aged Red Leicester. As well as the full Long Clawson range, you’ll find Cropwell Bishop Lincolnshire Poacher, Godminster Organic Vintage Cheddar, Bertelin Staffordshire Farmhouse Cheese, Shorrocks Lancashire and Sparkenhoe Farm’s range here. Trevor and Sarah Neal are the proprietors of gift shop Bright Stuff on Burton Street and agree that Melton retailers are amongst the hardest working in the region. “Everyone works together to try and improve shopping in the town for customers. There are lots of independent traders which also adds interest to the mix.” Among its stock Bright Stuff has a selection of over three hundred different jigsaws which must be among the largest selections in the East Midlands.

Bourne Grammar School Sixth Form Open Evening: Nov 13th A

-Levels are changing. Students moving into the Sixth Form in September 2015 will be the first to experience the reformed A-Levels but only in certain subjects. An initial list of subjects which will be affected by the reforms for courses starting in September 2015 has been published and includes: English Language, English Literature, Biology, Chemistry, Physics, Psychology, History, Art, Business Studies, Economics and Computing. All other subjects will adopt the new format from September 2016. Jonathan Maddox, Headteacher at Bourne Grammar School, explains what these changes mean for students: “Reforms to A-Levels mean that the AS examinations taken at the end of Year 12 will be ‘free-standing’ and will not contribute to the final A-Level grade achieved at the end of Year 13; the final A-Level grade will be determined entirely as a result of students’ performance in their examinations at the end of Year 13. The increased breadth of the new syllabuses means that students may be better prepared to study a given subject at degree level.” Under the present arrangements, marks achieved at the end of Year 12 when students take their AS examinations do count as part of

the final A-Level grade and this will continue to apply to the subjects yet to be reformed for courses starting in September 2015. Bourne Grammar School has opted to continue AS examinations for all subjects, but each school and college must make its own decision. If you are looking at Sixth Form options it is worth checking what is being offered where you are looking in light of the changes. Choosing which subjects to study beyond GCSE is possibly one of the biggest decisions young people have to make. Those who hope to go to a top university in a couple of years’ time will need to research whether any specific subjects are needed as an absolute requirement for a particular course. It is worth finding out which Exam Board syllabus is being offered for each subject being considered as these tend to vary from school to school and the content for a particular A-level can differ. Some schools cater for a vocation/academic mix, while others focus on academic subjects that give the best potential for achieving a place at one of the most sought after universities. Whilst changing school may seem like a daunting prospect, many students make that

choice and join Bourne Grammar School each year and go on to achieve the A-Level grades needed for securing the university place, apprenticeship or employment of their choice. The best advice is to attend Sixth Form open evenings where you can ask students currently studying the subjects you’re interested what it’s like to be a student in that particular school. Don’t rely on exam results league tables to make your choice as you may not be getting the full picture or may not be comparing like for like. Cambridge International Summer School Richard Barry discovered that he was still just about up to the mark

T

HE CISS started in 1923 with 120 students from nineteen countries. In the intervening 91 years the Summer School has grown almost tenfold. Today it attracts one thousand students from fifty six countries, studying one hundred and eighty different courses. I hadn’t even heard of the CISS until I stumbled upon it by accident. I was asking an economist friend of mine to explain the difference between Deficit Financing (bad) and Quantitative Easing (good). My friend admitted that he didn’t really know, but added “so why don’t you take the Macroeconomics course at the CISS?” So I did. COURSES The 2014 Summer School ran from 6th July to 16th August, organised into three “terms” of two weeks each. The expectation is that most students will enrol for one two-week term – which is what I did. Timetabling of a two week term is designed to allow the student to study three different “subject courses”. Each subject course involves twelve and a half hours of lectures: with three courses plus some general “plenary” lectures that all Summer School students must attend, the two week term imposes a lecture workload of forty five hours. It’s hard work but not dull grind. Subject courses cover a huge range of – broadly -- the Humanities. “The rise and fall of the Assyrian empire” or “Richard II; court and country” or “The abnormal mind: an introduction to psychopathology” is just a tiny sample of what’s available. That said, anyone wanting a course on “Design Options for Fourth Generation Nuclear Power Stations” is going to be disappointed -- that’s just not a CISS thing.

STUDENT DIVERSITY One of the things adding to the enjoyment of the CISS is the sheer diversity of the students. The EU (including the UK) provided about 34%, North America 30% and Rest of World 36%. The median age of students was about 30 and two thirds were female. My Macroeconomics course was fairly typical: there were 23 of us, including four Chinese women who worked for the Beijing Foreign Office and two Japanese women from their London embassy. Not only did they have perfect English but they set a cracking pace in the classroom. At times I had difficulty keeping up (and I didn’t have the excuse of being the oldest – there was an American man who was one year my senior). Our class star was a young Philippine guy who was an intern with a bank -- irritating to see bankers on top yet again. AMOUNT OF WORK How much work you had to do depended on whether you opted for Evaluation. This was a decision that one had to make after the first week. Candidates for Evaluation each had to research and write two essays on topics agreed by their professor (about 2,500 words each) and make two short oral presentations to the class. Many of the young chose to be Evaluated. If they were students at a foreign university then the CISS Evaluation would count as a useful credit when they got home. Those sent by their employers – embassies and so forth – needed the Evaluation, presumably to show they’d been paying attention. Older students might choose to be evaluated just to prove to themselves that they could still cope (which was my reason). Whether in fact we did cope will

only become clear in mid-October when we get the Evaluation results. All in all, about 30% of students chose to be Evaluated. It certainly did increase the work load. SOCIAL Many of us students had rooms in Newnham College -- a women-only college in term-time. Comfortable but not luxurious, few bedrooms were ensuite. Fortunately I remembered to take my dressing gown for nocturnal sprints to the loo. Breakfast and dinner were provided in the College and were enjoyable -- eaten at long communal tables, giving one the chance to mix with students from other courses. COST The two week academic term cost £1040. Some students lived in Cambridge or stayed with friends and this would have been the total amount they paid. I judged that daily commuting from Stamford would not be feasible -- early starts, late lectures and so forth – so I paid an additional £1895 for two weeks’ board and lodging at Newnham. My total bill was therefore £2935. Not too bad for an extremely interesting two week “working holiday”. CONTACT The 2015 CISS prospectus will soon be ready. David Barnes, Our Own Dr Doolittle

Readers may recognise David Barnes from his role managing Uppingham Sports and Books but may be surprised to learn of his lifelong and continuing work in worldwide animal welfare and in particular, his mission to save Phevos, a fifteen year old Bengal tiger from an awful fate in a Greek zoo. Amander Meade reports

D

AVID recalls being captivated by the tale of Doctor Doolittle at primary school and thinks that the story was the catalyst for his fascination with animals of all kinds. Despite being a city boy, brought up in Birkenhead, Liverpool, David yearned to forge a career working with animals. Having successfully applied to train as an RSPCA Inspector David went on to run one of three main rescue centres owned by the RSPCA before accepting a job running a boarding kennels, advising on the safe movement of animals and developing animal welfare in Dubai.

David was approached by the Greek Ministry to help find a home for two adult tigers and five cubs it had confiscated from a circus. “The cubs were homed quickly leaving Phevos and his mate Athena in a zoo in Trikala – not ideal by any means. I found them a placement in a fantastic sanctuary in San Diego and began trying to raise the £11,500 it would cost to move the pair.”

“I’ll be with him all the way…” In the meantime David insisted on and helped design improvements to general living conditions at the zoo, getting to know Phevos and Athena very well and studying their behaviour during his frequent, self-funded visits. “It’s true that even after a career in professional animal welfare, those two tigers became very special to me,” he admits. Everything changed for the worse in 2013 when the Greek financial crisis hit hard and David was prevented from travelling to Greece by major surgery. On his return eighteen months later, he was horrified at the deterioration in conditions at the zoo and for Athena in particular. “She was in an appalling way following a terrible injury to her paw. The tigers were being fed very little and their situation was critical.” Despite David’s concerted efforts over the next few months, Athena died in agony as a result of negligence and a lack of veterinary attention and with Phevos grieving and pining desperately for his mate, it became

a matter of urgency to move him before his own deterioration went too far. David hasn’t succeeded in raising enough money to move Phevos to his new home but with time running out, he plans to pay the balance by credit card and once again at his own expense will fly out to Greece later this month to accompany his old friend on his epic journey to the USA. “I’ll be with him all the way,” he has pledged. Having personally rescued over three hundred animals, with many more in dire need, David has vowed to continue his vocation. “I will do what I can to help – it’s my life’s work.” • David talks to schools and groups about his life in animal welfare. A steep learning curve… Over the next couple of decades David ran and revamped the pet department in Harrods and headed up the Wood Green Animal Shelters before becoming Chief Executive of the Greek Animal Welfare Fund. “My first job with GAWF was to assist with the efficient closure of an animal centre situated half way up a mountain – we managed to rehome 120 dogs, 30 cats and five donkeys and I came to understand the Greeks and their attitudes to animals very swiftly. I learned how to successfully negotiate with government officials and that the British hard headed attitude simply didn’t work in Greece.” As a result of sporadic heart problems, David is now based in the UK but offers unpaid advice to animal welfare groups all over the world including China – “If I can afford to go and help, I will,” he says. hen people join Great Food Club via the form on the website, I ask them to name their favourite local restaurant, pub, food shop or producer. As a result I’ve got a lot of recommendations that I need to check out! I’ve also got a good idea of the places that are impressing people the most. In this month’s article, I thought I’d pick out five of the arguably more unsung venues and producers local to this magazine that have received a good number of nominations from new club members.

CASTLE COTTAGE CAFÉ, OAKHAM Just off from the busy marketplace in Oakham lies this classic English tearoom. It’s a haven of tranquility from breakfast to teatime. A big draw when the weather’s fine is the beautiful rear garden, something that sets the place apart. But the pretty and well-thought-out interior and excellent food are the biggest reasons to visit. Happy customers use words like “magical” and “charming”. “We try to make it special with lots of little touches, like our eclectic collection of china cups and saucers,” says proprietor Ruth Beaver. “Then of course there is the fresh food made with local ingredients.” Breakfast could feature a Rutland sausage sandwich with bangers supplied by Nelson’s Butchers of Oakham, scrambled eggs with smoked salmon, or Greek yoghurt with homemade fruit compote and granola. At lunchtime you might want to tuck into a triple-decker club sandwich of chicken, avocado, Nelson’s ham, rocket, tomato and wholegrain mustard mayo, or maybe a simple toastie made with bread from Rutland’s Hambleton Bakery.

GROOVY FOODS Toft Lodge Cottage, Stamford Road, Bourne, Lincs, PE10 0JY Groovy Foods was born in 2007 when farmer’s daughter Rachael Robinson bought her husband Duncan two pigs – Dot and Trevor – on Valentine’s Day. Groovy Foods now comprises a successful farm shop, selling national-award-winning products, and an event-catering business. Hog roasts and gourmet barbecues are specialities but sit-down catering is also available. The Groovy Foods farm shop specialises in free range meat and is home to an artisan butchery. “We have a breeding herd of Aberdeen Angus cattle, rare-breed pigs, free range chickens for their eggs and outdoor reared cockerels,” says Rachael. “We also stock free range chickens, wild local venison and local lamb. Our shop is growing all the time.” On sale, too, are handmade pork, beef, lamb, turkey and venison sausages made to Groovy Foods’ own recipes. “We have made over 70 varieties,” says Rachael, “including ‘Drunken Ginger Pig’ and our national award-winning ‘Aunty Kate’s Barbeque Banger’.”

THE CHOLMELEY ARMS Village Street, Burton-le-Coggles, Grantham, Lincolnshire, NG33 4JP The subject of numerous glowing reviews from Great Food Club members, The Cholmeley Arms is clearly hitting the spot for lots of food and pub lovers. A classic country inn with rooms, it is part of the Easton Estate, situated near beautiful Easton Walled Gardens. Run by John and Lesley Berry since 2009, when it was extensively refurbished, it has an attractive village shop – Berry’s – on site, housed in an old barn. Berry’s Farm Shop as it is called, has a particularly good butchery section. Cholmeley Arms licensee and head chef John Berry is a trained butcher, so he really knows his ingredients, and this is a big reason why his pub has gained such a fine reputation for food. Especially worth seeking out are the pub’s game dishes, which are often made with produce from Easton Estate. The Cholmeley Arms is a past Countryside Alliance Awards Regional Champion and was highly commended in the final Awards. THE FINE FOOD STORE, STAMFORD 37 St Mary’s Street, Town Centre, Stamford, Lincs, PE9 2DS The Fine Food Store was founded by local businesswoman Jenny Fitzpatrick in 2004, when she was just 22. Jenny is passionate about good food and top-quality service, and has created the perfect refuelling spot for both Stamford locals and visitors. Breakfast is served until 2pm and the menu is affordable, extensive and mouthwatering. Choose from the likes of The Big Breakfast (the full works, with free range, locally sourced eggs, bacon and sausages), Homemade Buttermilk Pancakes, or Fresh Fruit Muesli. Lunch service starts at 11am and the choices are equally appealing, especially when you consider that everything is freshly prepared, and the majority of ingredients are locally sourced. The lunch menu includes a variety of gluten-free options. The Fine Food Store offers a modern, warm, friendly environment, with professional service, superb coffee, wonderful homemade cakes and excellent sandwiches, all made with high quality ingredients.

THE KING’S ARMS, WING 13 Top Street, Wing, Rutland, LE15 8SE Sometimes you know quickly that you’ve stumbled across something special, and you get that impression as you amble through the door of the King’s Arms in Wing. The map and photos of the pub’s local food suppliers is a giveaway, as is the vast array of seasonal ingredients and relaxed atmosphere. Run by head chef James Goss and family, the King’s Arms is a 17-century country pub in a beautiful setting. It has a homely feel, with stripped-wood tables, exposed flagstones and floorboards and low, beamed ceilings. One of the best things about the pub is that passionate chef James makes everything in-house, from the tomato ketchup up. He also runs Jimmy’s Smokehouse (attached to the pub), where he smokes things like Rutland trout and Hambleton mutton. James learned to smoke food in Denmark and to cure in Switzerland, where he was trained by the best in the business. The King’s Arms is a pub run with passion and this shows in its food and drink. The Black Horse, Nassington O

nce a popular eating destination, still fondly recalled by many, The Black Horse at Nassington had suffered mixed fortunes in recent years, with a succession of landlords failing to make this appealing village pub an attractive proposition to residents or visitors. Now, to the delight of many locals, a change of management and the arrival of an experienced team (who also run The Lamb and Flag at Welney) is putting the pub back on the map. We went along for Sunday lunch, tempted by the boards outside offering a selection of roasts and ‘fresh Fenland vegetables.’ The interior has been pleasantly refurbished, with newly painted walls, a carpeted floor, dark beams and wooden tables and chairs. On a chilly day, you’ll find not one but two fires lit, creating a very cosy atmosphere. We were greeted warmly by front of house manager Gary, before being shown to our table by landlady Gina. The restaurant was fully booked and buzzing with family groups. The Sunday lunch menu is exactly what we’d hoped for: a straightforward choice of turkey, beef, pork or lamb, sourced from a local butcher. At £9.95 per person, with a children’s roast at £4.95, it is excellent value. There was a specials board, offering lamb shanks or vegetable lasagne, but we opted for a traditional lunch with all the trimmings. Perry chose the beef, I went for lamb and our 16 year old son Carey opted for turkey. There are at least three real ales on the bar, and a good wine list too. Although the pub was busy, our lunch arrived promptly and was a huge feast. Thick slices of meat piled on hot plates, with roast potatoes

and a giant Yorkshire pud, and special mention must go to the vegetables, which included a vast platter of perfectly cooked carrots and broccoli and another of Colcannon mash, and the most appetising leek and cauliflower cheese. We also received an extra jug of gravy (without requesting it) and a tray of sauces, horse radish, and mint included. Carey’s turkey came with stuffing too. For pudding, Perry chose a calorie-busting sticky toffee pudding with ice cream, which was

pleasant, but Carey really struck gold with his syrup sponge pudding. It was a great rendition of a comfort food classic. This is excellent pub food rather than fine dining, but with a full restaurant, the appeal speaks for itself. We’ll definitely return. Impossible to resist.” So what of the future? “We will continue with the same strong menu that we have, but also add some more informal dishes over the coming months,” Robin said. Autumn is here and that means it’s game season. The recipe I’m sharing with you in this issue will be served as a first course at The Olive Branch’s eight-course Game Dinner, which I’m looking forward to cooking with the team on both November 11 and 12. Also on the menu are the likes of fallow venison tartar with seared king scallop and juniper; roasted partridge with game chips and bread sauce; and quince soufflé with white chocolate sorbet. I hope you enjoy cooking this one – it makes a lovely starter if you’re planning a dinner party of your own.

Warm tartlet of mushroom florentine served with breast of wood pigeon SERVES 4 For the tartlet pastries • 125g plain flour • Pinch of salt • 55g diced butter • 2-3 tbsp cold water • 8cm diameter tartlet moulds 1. Mix flour and salt together in a mixing bowl. 2. Add the diced butter to the flour mix and rub together to a sandy texture. 3. Gradually add the water to bind the pastry. 4. Wrap in clingfilm and chill for 10 minutes before using. 5. Meanwhile, lightly grease and flour the tartlet moulds and, after the pastry has chilled, roll out the pastry to 2-3mm thick with a rolling pin on a lightly floured surface. 6. Cut out 9cm diameter circles of pastry and line the tartlet moulds; trim off any excess pastry with a knife. 7. Bake the tartlet pastries blind in a pre-heated oven at 170C (Gas Mark 3) until golden brown. 8. Turn out the pastries. 9. To serve, fill the tarts with the mushroom florentine, top with the sliced roasted breast of wood pigeon and garnish with sautéed diced celeriac and carrot.

Mushroom florentine • 100g mushrooms • 1 tbsp finely diced onion • 100g baby leaf spinach • 1 knob butter • 2 tbsp crème fraiche • Pinch nutmeg 1. Sauté the onion and mushrooms with the butter until golden brown. 2. Add the spinach and creme fraiche to the pan and cook out for two minutes. 3. Season with salt, pepper and nutmeg. 4. Place the mix into the tartlet pastries and top with the sliced roasted wood pigeon. For the wood pigeon • 4 wood pigeon breasts, skin removed • Sprig thyme • Garlic clove, crushed • 1 tbsp rapeseed oil • Knob of butter 1. Heat a frying pan, add a drizzle of rapeseed oil and a knob of butter. 2. Add the thyme and garlic, then seal off the wood pigeon breasts for two minutes each side. 3. Natural Dyes from the Kitchen Garden

Botanist Jackie Murray is a natural dyer working creatively with plant based colours gleaned from the kitchen garden at her home in Little Bytham. Sarah Lyon reports

J

ACKIE Murray has been fascinated by textiles and the natural world since she was a child. Influenced by her mother and aunt who were incredibly good seamstresses, Jackie could stitch and embroider before she went to school. “My aunt got me making little felt toys, tiny artisan things that you would have on your Christmas trees these days,” she recalls. She studied plant biology at university and went on to teach it, but she always continued with sewing. “Traditional embroidery is so satisfying and calming; you can sit and listen to the radio. Rain might be pelting down outside but nothing matters. It is intricate and satisfying,” she says. Now retired, Jackie says: “I want to be more free spirited now. Since retiring I have become a sort of lunatic fringe embroiderer. I am dying the silks and inclined to let the fabric speak and guide as I put a few stitches in here and there.” Friends who are textile artists encouraged Jackie to think about how fabrics were dyed. “Old textiles like the Bayeux tapestry are thousands of years old and still the blues, yellows and tans remain strong and vibrant reflecting an abundance of colour from the natural landscape. How is that possible? I started looking at old textiles like these and those in National Trust properties and places like Burghley House. The textiles at Burghley House are amazing and yet being hundreds of years old they haven’t faded. I began delving into the history of dying - when they hadn’t got a bucket full of chemicals - and to investigate the plants that would do it.” Combining her love and knowledge of the natural world with her passion for textiles,

Jackie began to cultivate and collect plants for dyeing fabrics. “I started growing woad and madder. Weld grows by the roadside. Then there are oak galls from the oak tree. Sometimes you see little marble shaped, corky textured blobs left by a hatch of wasps on the tree branches. It took me two years to gather a jar of them. They were like gold nuggets picking two or three at a time. I crushed them up to make a powder and then soaked the powder for weeks to start it mixing with the water before boiling it up. The result was the most gorgeous dark dye which dyed the silk a beautiful amber colour.” Some colours are harder to source. “There is so much green in nature that you would quite naturally think it an easy enough colour to come by for dying but it is not and in fact highly prized,” says Jackie. She explains that the only way to get green is to use weld which dyes bright yellow, and then over dye with indigo or woad for the blue. “Your dye is the chemicals in the plants and this is why they are so unpredictable. You don’t actually know if the chemical (which is the dye)

is actually going to be present in the plant when you start the process. For example last year we had an awful growing summer. I grew and prepared the woad but the dye just wasn’t there because of the lack of sunshine.” “Furthermore, to get the woad to dye blue you have to apply some quite complex chemistry to the process. It involves taking the oxygen out of the liquid for the dye to stick to the fabric. In past times they would have used fermented urine. When full of bacteria the urine worked to take the oxygen out of the liquid. Now we can just add in a chemical! A chemist would call it an oxidation reduction reaction. The science side is absolutely fascinating and another reason for my interest,” enthuses Jackie.

Stamford’s Belgian Refugees As the first Stamford men joined up in 1914, the reality of war was brought home to the town by the arrival of refugees.
