The Garden in June Herbs with everything...

There's nothing like the taste of herbs picked fresh from your own garden! They're so easy to grow, whether in beds, borders, containers or on windowsills, says Buckingham Garden Centre’s Chris Day. All of the commonly used culinary herbs can easily be grown in traditional herb or vegetable gardens, raised beds, containers or in a mixed border. What’s more, there’s plenty of choice, including popular annuals varieties such as Basil, Coriander and Dill; biennials, which will need to be sown and planted every couple of years like Caraway, Chervil and Parsley and the long-termers, the resilient perennials, including Borage, Chives, Bronze and Green Fennel, Marjoram, Mint, Rosemary, Sage, Tarragon and Thyme.

Our plant suppliers are keen to help the gardener/cook with their herb plants as each plant comes supplied with a cultural care label indicating the herb’s practical benefits for the kitchen/cook’s pot! Once you have decided what to grow, then it’s all about finding the right spot in the garden to grow them in. Well, that’s relatively easy; a sunny location suits them all best.

Mediterranean climes, so they like to bask in warmer, drier conditions. The added benefit of establishing them in a warm border is the wonderful fragrance these plants produce, creating tranquility and relative calmness amongst the hustle and bustle of a busy family home.

All herbs benefit from planting in soil which has been improved with plenty of coarse grit, so helping with the drainage around the base of the roots. If you are planting your herbs in a pot, it is best to use a multipurpose compost with added John Innes to which you should add between 10-15% course grit.

Likewise, if you are planting a border with a selection of herbs, carefully incorporate the grit into the top 912in (20-30cm) of well-worked soil.

Once established, herbs grow quickly so it’s important to regularly harvest the leaves and/or to remove the growing tips to encourage new flushes of stems to develop. You can encourage this growth by giving the plants a liquid feed through the summer months. You can use general soluble plant fertilisers such as Phostrogen or Miracle-Gro and apply alternately every 2-3 weeks to boost growth.

Herbs require moisture to establish, however avoid overwatering them once established, especially if you grow them in pots and hanging baskets. Keep your herb plants uniformly moist throughout the growing season. Once we get into the early autumn, you may need to think about drying some of your herbs for winter use. Gather your herbs after the dew has dried on them, and make sure they are free of dirt and insects -wash them if necessary but let them dry thoroughly before preparing them for drying. Wet herbs will clump together and go mouldy in the

To dry your herbs for storing, gather them in bunches and tie the stalks with string or raffia. Leave a loop so you can hang the herbs in a cool dry place, such as an airing closet or in an airy shed. If the air is suitably dry you can also hang your herbs from tree branches, but make sure you enclose the leaves and blooms in muslin bags tied round the stalks to prevent insects from getting at them.

Make the muslin bags yourself out of a rectangle of muslin folded and sewn up on the sides. Leave one end open to insert the herbs, and make sure you have bags large enough for the bigger bundles of herbs.

When the leaves are dry and

crackly, put the muslin bags on a kitchen bench and remove the herbs. Discard woody pieces of stalk, and crush the leaves finely with your fingers or with a mortar and pestle. Store in clean jars - neatly labelled - for use throughout the winter. Another way of preserving herbs is to freeze them in small batches in airtight containers.

Finally, don’t forget to pot up some mint divisions later in the year for growing on the windowsill in a reasonable size pot or small trough. No matter how tempting and attractive growing mint in the open garden may be, don’t! Mint and pots are a winning combination - to keep those roots from taking over the soil and creating chaos! cont.....
