Pea and ham hock soup A rich, warming soup packed with freshness and flavour - ideal as the nights draw in.

Preparation: 10mins | Cooking: 20mins | Feeds: 4 Ingredients: - Frozen peas - 1 onion, finely sliced - 270g ham hock, shredded

- 700ml stock - 20 fresh mint leaves

- 25g butter - Handful fresh parsley

Instructions: Heat the butter in a large pan, add the onion and sauté. Pour in the stock, bring to the boil and add the peas and simmer until tender. Remove from the heat, then add the mint and parsley and season with salt and pepper. When it’s a bit cooler, liquidise the soup adding more stock if it’s too thick. Check the taste and add more. Return to the heat and warm the soup.

To serve, pour into bowls and sprinkle a handful of ham hock onto each portion. For a special treat, dollop on 1tbsp crème fraîche per bowl.

The essential paint colour guide for Spring/Summer and Autumn/Winter Warm neutrals, bolds and beautiful pastels are the must-have paint shades for the year ahead, reveal Homebase.
