Growing up on the Central Coast, it was always someone’s uncle or friend of a friend who knew your coach or teacher or doc.

THIS CHARMING LITTLE BAKERY KICKED OFF IN GOSFORD NOT TOO LONG AGO AND HAS GONE FULL STEAM AHEAD ADDING ANOTHER SPOT IN EAST GOSFORD AND A CHARMING SHOP-FRONT IN TERRIGAL TO THEIR REPERTOIRE. It’s not a baguette in front of the Eiffel Tower, but it’s pretty darn close. Bouffant boast some of the flakiest, butteriest, tastiest baked goods I’ve had since raiding the street bakeries of Paris (when we were still allowed to travel the world). The cabinet is so drool-worthy you’ll have no idea what to go for first. But don’t worry- they offer some delectable ‘mini’ ranges so that you can eat one of everything and go back for more.

Some sensational savoury options are available to you, which is even better. The lamb pie is one of the best I have ever had. Using their croissant pastry for the base, the slow cooked lamb just melts in the mouth and I haven’t stopped recommending it (or craving it) since I first had one. The five cheese and pesto toastie is absolutely next level! The stringy cheese melt is so appealing the temptation for another one will be too strong. But you need to fight that temptation back for your dessert round.

From doughnuts, to Portuguese tarts, back to croissants and the O.G bouffants, the sweet treats just never seem to end. With multiple flavours, toppings and glazes, the world is your oysterbetter yet, the cabinet is at your mercy. The bouffants are the perfect starting place! Buttery and sweet, this bigger pastry will kick off your sweet cravings with a bang! Then comes the hard part- which Portuguese tart to choose? Nutella or caramel doughnut? Plain or chocolate croissant? Scrap the choosing, pretend you’re sharing, and get one of everything! What you don’t eat there you can take home for later when you’ve got more room.

These quaint stores create a romantic allure that feels like those magical bakeries of France. The sweet pastry concoctions twinkle to the eye and the smell of coffee beans grinding away aids that ambiance even more. The stores are mouth-wateringly appetising and once you see the treats laid out in front of you, you won’t know where to begin.

Composting 101 IT’S THE OLDEST TRICK IN THE BOOK THAT IS GAINING MOMENTUM AS ONE OF THE MOST BASIC ENVIRONMENTAL CONTRIBUTIONS EVERYONE CAN MAKE TO AID COOLING THE PLANET

What composting does is it allows organic materials to breakdown in the presence of oxygen. Without oxygen those organic materials will still breakdown, but they will release methane gases into the atmosphere instead.

WHAT YOU CAN PUT IN THE COMPOST BROWN MATERIALS

• Brown leaves • Crushed egg shells • Ash • Wool • Hair • Shredded newspaper • Shredded or ripped up natural fibre materials (cotton, linen, hemp)

GREEN MATERIALS • Any fruit • Any vegetable • Grass clippings • Leafy weeds squashed and destroyed so that they cannot grow back • Green leaves • Coffee grounds

WHAT YOU CAN NOT PUT IN THE COMPOST Meat scraps, fat & bones, plastics, foil, cheese & any diary, oils, glass, diseased plant matter, pet poo.

GET ROOTED

SIMPLY START FROM THE GROUND AND WORK UP! 1. Find, build or buy yourself a compost bin 2. Find or buy yourself a compost bucket to keep in the kitchen or laundry 3. S tart collecting your organic waste into the compost bucket 4. W hen filled or stinky, or both, take outside and tip into the compost bin 5. Repeat steps 3 & 4 for the rest of your life 6. W hen the compost bin is full and decomposed spread it throughout your garden You need to have an even mix of ingredients in your compost to achieve speedy and high quality compost. This is also known as the carbon to nitrogen ratio; brown to green. You can do this simply by layering the ingredients into your compost. When you empty the compost bucket (usually mostly greens) into the bin sprinkle over a layer of browns and place the lid back on.

The best style compost bin is one that doesn’t have a base, connects directly to the ground, and has a lid on it. To avoid vermin getting in you can dig it about 10-20cm into the ground. This style also allows worms and other breakdown assistants to travel into your compost freely. It is easier to keep a balance of carbon and nitrogen in this system.

Tumbling compost systems have their benefits too. They don’t attract vermin and being able to spin them over helps speed up the breakdown process. In these systems you have to ensure you have a good mix of browns and greens. Each compost will have slightly different ratio needs. Look at it as a learning curve and work out your ratios.

If you’re looking at stepping up the zero waste efforts then let me introduce you to the Bokashi compost system. Instead of utilising oxygen for material breakdown it is a process of fermentation and you can compost all types of meat, fish, dairy, bones and breads this way. Once the batch of Bokashi compost has been fermented it then needs to be dug into the ground so it can continue to fully breakdown and release all of its good juices into the earth.

If you’ve never composted before, don’t be fearful of the change or feel like it could be difficult. It’s one of the most simple things that can be done in a household to help our planet, and in mere weeks, will become second nature.

My Happy Place NORAH HEAD, NSW

Who are you and what do you do? Ange Elder. Muralist.

Essentially I see myself as a vibe changer. I paint walls in spaces that could do with some love. Everyone feels better with a bit of love in their lives, right?

Do you have a creative background? I actually majored in Sculpture at Uni but my work is multi-modal: anything from printmaking to painting. Officially, I’ve been an Art Educator for about 25 years. I retired from my full time position in the classroom this year to paint murals.

How long have you been a creative for? Y’know, for about as long as I can remember...

What is your favourite thing about what you do? Every piece and place is different so that’s a tough one, but in each case I like when I get to the part where it all starts to flow and I find that zone where time disappears and the work unfolds effortlessly. And the result of that is a state of happiness, for me and generally anyone else who appreciates the mural.

That’s the fundamental mission.

What inspired you today? Oh wow! Everything? My visual sensitivity never switches off. My mind kinda devours everything I see and spits it out somewhere later down the track. I find artists, other creatives and environmental elements equally inspiring.

Why do you do what you do? Basically, because I love it. It’s good for me. And I think it’s good for others too. Art makes me happy. I’ve discovered I really ‘need’ to do it. I feel like it’s where I belong when there is a brush in my hand. I feel like I’m contributing something positive that someone may see and be affected by. Nothing makes me happier than hearing someone say they love what I painted. To me it means the message was received.

What environment do you like to work in most? I love working outside. The walls are usually pretty average and it’s hard going, but I enjoy the sunshine and the people I get to meet. Schools are great too. The kids are always curious and I like to talk to them about the work and the layers of meaning in a #mindfulmuralsproject.

How has your art changed over time? It’s gotten a lot bigger! Stylistically my work has stayed quite similar, I think.

Bold, graphic, fun. I don’t do a lot of realism these days, even though it still gives me a huge buzz.

What themes do you pursue? I try to put a positive slant on whatever the brief is. Mindfulness. Happiness. Fun interactive elements. Aesthetic enhancement initially, but there’s always a little more to it.

What medium do you use? Generally I’m working in commercial house paint. Whether interior or exterior, I want my murals to last as long as possible, and the colour range is endless. I’m also trying to get up the guts to trial aerosol.

What do you do to keep yourself motivated? Music and podcasts are my lifeline on long projects. The right playlist can really make things happen for me. I also take time out between jobs to regroup and reconnect with things that fill my cup: sunrises and ocean swims, good friends and conversations, family time.

What piece are you most proud of? I guess the one I get the most feedback from is at RISE Café on the main road in East Toukley. I’m proud of the way it lifts people. But one time I got a list of over 20 different elements the client wanted to include in their mural, and I managed to pull it off. This custom mural is inside The Island Café at Norah Head. I think it worked because Norah Head is my happy place and for that reason I felt connected to everything they asked for.

Where do you hope your creative future takes you? To the next wall. I had visions of travelling to San Diego last year to participate in an all female mural walk (postponed due to CV19), but to be honest, I’m happy working locally, making an impact on my own community.

Can you share any advice for aspiring creatives? 1) Work hard. If you love it, it’s totally worth it. 2) Connect and share.

Learning and reward comes by doing both of these.

Is AirBnB In Your DNA? 6 TIPS ON BECOMING A SUPERHOST

We live in a beautiful area – hey that’s why everyone wants to holiday (and recently live) here. And if your lifestyle takes you away from the coast? How can you make money from your vacant home while you’re away?

We’ve all had a friend who said they rented out their house and it paid for their holiday. How easy is it? And how much work? I’ve been doing this for a while; so here are my six tips on making sure you can become an AirBnB superhost.

LET IT BE THEIR HOME

TALK

This is your home, but your guests want it to feel like it’s theirs for a while – so replace your personal items with more generic ‘holiday’ images.

Early and Often. We LOVE it when people care for us, so caring for your guests is SO important. Call them a week before they arrive, give them tips on when arriving, and how to park. Call them after they’ve checked in to make sure all is ok. If it’s raining or the power is out we call the guest to make sure they are fine. After a week with you they’ll be saving your number and your friends (for next time they book). I also remind them to put the garbage bins out on the right night – helps with the clean when they leave.

TIPS ARE TOPS We know where to eat, where to surf, where to ride bikes – and your guests will love to have a note from you (or a chalk board) with your top tips on coffee and markets. It helps them ‘be’ as they unpack.

CAN YOU BEND? THE BOTTOM DRAW When something doesn’t work, it’s where we all go. So all your appliances (oven, washing machine, dishwasher) manuals should be in the bottom draw. Saves them calling to ask how to turn things on or operate them. And of course, for anything that’s a little tricky, leave a little note with friendly advice. (I actually laminate these notes and use bluetac to put them where needed)

Flexibility on arriving and departing, (days and times) is very helpful for guests travelling to get here. So having options that help them have a great first hour with you in your home is very important. How will you manage a late checkin, or a last minute booking? Giving thought to this will save you in the end and help you be a superhost. (If after dark, remember to leave a light on for them to welcome them home)

THE TRUTH WILL SET YOU FREE Honest advertising is the better policy for long term guest friendships. Remember they can review you online. Using professional photography is fantastic – you should definitely do this, but be truthful about the walk distances to beach and café.

If you remember they are your ‘guests’ and you treat everyone the way you want to be treated when you’re on holidays – then you’re on a very rewarding path to enjoy holiday letting your home. I wish you well with it.

Remember: you want your guests to feel like ‘imagine how good it’d be if we owned / lived here’.

Oh – my last tip; people love visitors books, to record their experience and to read others. It’s great for you to comment in it as well.

AS A PHOTOGRAPHER, OR ANY TYPE OF CREATIVE, THERE’S SOMETHING INTERNAL, AN INNATE DRIVE THAT’S ALWAYS SEEKING MORE

It’s what pushes you to find a unique angle or distinct composition. It’s how I can do the same thing every day and yet never produce the same result. Some days it’s a feeling of motivation, other days it’s frustration, but every day it’s there. A challenge. So for me there’s a special quality about some locations that seemingly have it all.

WEEKEND WARRIOR

Forming part of the Kempsey Shire, the town of South West Rocks may be a location rich in history but it has built its wealth on maintaining its natural beauty. From the moment you exit the M1 3 ½ hours north of Newcastle, you get a feeling for the type of place you’re headed to. Lush paddocks filled with cattle and crops line the banks of the Macleay River as it winds from Clybucca, through Jerseyville, and out to the ocean just north of South West. The simplicity is serene. The town itself is fairly simple – a shopping centre and IGA on the road in, and a general store, bait and tackle shop, two bakeries, and a range of cafés and restaurants opposite Horseshoe Bay and Main Beach. The blocks here are lined with holiday units and you can feel the tourist vibe developing.

From a photographer’s perspective, the rock formations at Main Beach are iconic. Back Creek Bridge creates cool lines against the stunning aqua waterways and there’s a chance to catch a view of the resident turtle who frequents the channel. Follow Main Beach to the southern end and you reach Trial Bay. This place is paradise on steroids. Perhaps that’s why they built the gaol here – the sheer thought of freedom would have been torture from behind the stone walls. The break wall catches insane light on dawn and dusk, and the bay itself is untouched beauty all day long.

Little Bay, on the southern side of the point, is a location not to be missed in its own right. The cliffs are like nothing I’ve seen.

Nature’s playground, they host some of the most stunning and dangerous rock pools (known as the Mermaid pools) and are frequented by rock fishermen who enjoy the thrill of putting their lives into nature’s hands in order to reel in the biggest catch. >>

Smoky Cape Lighthouse sits perched atop cliffs smack bang in the middle of Arakoon National Park. The sunrise here is immaculate. Come winter, as the sun creeps over the horizon, whales begin spouting to celebrate the new day. There’s always a kangaroo or two exploring the cottage grounds and the white picket fences make for a great contrast shot. Access to North Smoky Beach via the Jack Perkins walking track is a little slippery to say the least, but reaching the secluded paradise is more than worth it. It gives a great angle to the lighthouse and I’ve often found dolphins frolicking along the shoreline. You can access South Smoky beach via 4WD for an easier access point and views all the way to Hat Head.

JULIA STONE SIXTY SUMMERS BMG, 2021

In a time where hitting the clubs feels almost a thing of the past, Julia’s colabs with artists as motley as The National’s Matt Berninger and St Vincent, have her owning the town with her hair down, exploring all the synth laden nooks that her former vehicle couldn’t take her. While remaining wholesome, albeit from a D.I.Y/outside the lines/textural avant-electro pit stop, this feels capable of mass appeal.

FLEETWOOD MAC RUMOURS WARNER BROS, 1977

The direct antithesis of punk, Rumours is all coke-fuelled, partner-swapping love and malice in the shadows, spoken through bright and true, bear-all confessions. Spiritually potent and scathingly shallow, in turns. Tight buoyant rhythm, brash ’n cocky guitar leads and gauzy bewitching vocals, cloaked in an immaculate and breathable production. Likely the most A-grade pop-rock album ever made.

DRY CLEANING NEW LONG LEG 4AD, 2021 Stream of consciousness nonchalant cool kid shares London art school house party walk through, self deprecating but certainly not concerned, in fact loves the stir of it but won’t smile until a mutual understanding is confirmed, twice. Raw female spoken word on the backdrop of one of Sonic Youth’s Sister/Daydream Nation era journey songs. This is smart.

Getting a vibe here. I hope they get to tour Australia.

Swim Deep ALBUM REVIEW Emerald Classics 2019

For those of you fortunate enough to have listened to Swim Deep’s excellent 2013 Debut Where The Heaven Are We, you will be incredibly pleased to learn that six years later, they have managed to recapture that same great sound and no fuss vibe.

But for those of you unfamiliar with Swim Deep, if you’re remotely into shoegaze or indie-pop, then there’s a fair chance that this will tickle your fancy.

It’s far from love at first sight with opening track To Feel Good giving off some kind of spoken word poetry feel, yet this may end up being one of the best sing-alongs on the album. Or should I say, speak-alongs! To Feel Good, Top of the Pops and Father I Pray encapsulate Swim Deeps slurkey vibes the best, and will no doubt help set the mood at your next backyard sun-filled barbie.

The guitar hooks are the sort that will remain stuck in your head for hours after each listen and will similarly have you tapping away on your steering wheel or desk at work; much to the dismay of your colleague who is still telling you how good Nickelback are. Similarly, there is of course some synth filtered throughout the record (I don’t think anything is produced without some degree of synth these days!), however it is far from overdone and compliments the guitar seamlessly well.

Swim Deep haven’t quite hit the highs of their debut record, but what they have done is deliver a record that reminds us to not take life too seriously; go out there and have some fun!

Mediterranean Grilled Vegetable Salad THE TASTIEST OF SIDE SALADS

INGREDIENTS

METHOD

3 small zucchinis, sliced about 1/2cm thick lengthways 1 medium fennel bulb, halved & sliced 1/2cm thick lengthways 1 red & 1 yellow capsicum, cut into chunks & seeds discarded 1 red onion, cut into 1/2cm rounds 1 cup of Italian parsley leaves 1/2 cup dill sprigs (woody stalks removed & branches plucked) 100g Goat’s Fetta, crumbled 1/4 cup toasted pine nuts 1 tsp chilli flakes Sea salt & pepper 1/4 cup of good quality, cold pressed Extra Virgin Olive Oil Juice of 1 lemon

To prepare the Mediterranean vegetables, heat a griddle pan or BBQ to smoking hot. Don’t oil them first, the best way to get those delicious char-grilled lines are to allow the natural sugars in the vegetables to caramelise and even burn slightly.

Once each batch is cooked, arrange them on a platter, pulling the charred onions apart.

Allow the vegetables to cool for 10 minutes.

Sprinkle over the herbs, goat’s fetta, pine nuts and chilli flakes.

Season with salt & pepper and drizzle over the olive oil and lemon juice just before serving.
