Chef's Recipe
VEGAN CHILLI CON CARNE RECIPE
INGREDIENTS
• 500g Soy mince or vegetable mince • 1 Tin red kidney beans drained and rinsed • 2 Tins chopped tomato • 500ml Vegetable stock • 3 Green capsicums diced • 2 Small onions chopped • 2 Medium carrots peeled and grated • 4 Garlic cloves minced • 3 Tbls Tomato paste • Olive oil • 1 Tbls Paprika sweet or smoked • 2 Tsp Ground cumin • 1 Tsp Ground coriander • 1 Tsp Chipotle chilli (optional)
METHOD
Cooking 1. Heat up the olive oil in a large saucepan over medium heat. Add the onion and garlic and fry until they are soft. 2. Add the spice mix, Vegan mince, tomato paste, and cook for a few minutes to cook the tomato paste 3. Add the tin of tomatoes, vegetable stock and chipotle chilli (if you are using it) 4. Allow the mix to simmer gently for 15 minutes. Check seasoning and add salt/ chipotle if required
Serving Serve with steamed rice, in a burrito or with nacho chips
