Food Scraps Grow in Saucer Garden When you think about gardening and preschoolers, a spindly bean sprout emerging from a half-pint cardboard milk carton might come to mind.

Every child deserves to be initiated

into a "green thumb society" with this classic gardening activity.

But there's another favorite my kids enjoyed when they were young, even before they could say "rutabaga." We called it a saucer garden. It uses kitchen-scrap throwaways from vegetables such as carrots and beets, offers life lessons about care and responsibility and, like the bean seed, this simple garden grows to maturity before the kids go off to college.

Keep a cup with a spout or a pitcher nearby so your child can be responsible for keeping fresh water in the saucer at all times. A spray bottle mister is a fun tool, too, for giving sprouting plants a shower now and then.

Growing Most carrots are generally sold with their "tops" already cut off. Now you'll grow them back again. While preparing dinner vegetables, slice off the top 3/4-inch of several carrots. Set them cut side down on the container or pebbles, making sure they are almost completely submerged in water. Keep the water level consistent; it can evaporate quickly.

Move to a sunny window when sprouts appear within a week or two. The carrots are especially charming with their feathery green growth.

For extra whimsy, let your kids' creativity sprout, too. Place plastic miniature animals and Lego figures in the container to create a jungle or enchanted island scene. Or, add a few marbles, colorful clear beads and sparkling gems for a platter of jewels.

Extra growing idea: You actually can re-grow celery. Cut off the bottom inch of the bunch and place in the container along with the carrot tops.

Set it base side down and cut stalks facing upright in the water. When tiny leaves begin to form from the center of the base, they'll grow, turning a darker green. At this stage, you can plant it in soil in a flowerpot or container with drainage holes, covering everything but the leaves. Water regularly. Eventually, transplant the growing base to your outdoor garden. Stalks will start to grow back for you to eat.

Gingery Shrimp and Noodles Light and fresh, this Asian-inspired dish tantalizes with the scents of ginger, soy and green onion. Low-cal shrimp and nearly 2 pounds of nutrient-rich cabbage keep it healthful.

Salt and pepper 3 tablespoons vegetable oil 1 bunch green onions, thinly sliced 1 tablespoon peeled finely chopped fresh ginger 1 pound shelled and deveined 16- to 20-count shrimp, with tail part of shrimp left on, if you like 3/4 cup water 1/3 cup lower-sodium soy sauce 2 bags (14- to 16-ounce) shredded cabbage mix for coleslaw 1 pound rice noodles 1. Heat covered 6-quart pot of water to boiling on high. Add 2 teaspoons salt.

2. In 12-inch skillet, heat oil on medium. Add green onions and ginger; cook 2 minutes, stirring occasionally. Sprinkle shrimp with 1/4 teaspoon freshly ground black pepper.

Add shrimp to skillet in single layer; cook 3 to 4 minutes or until shrimp just turn opaque, stirring frequently.

Transfer shrimp to medium bowl.

3. To same skillet, add 3/4 cup water and soy sauce, scraping up browned bits. Stir in cabbage mix; cover and cook 6 to 7 minutes or until vegetables are crisp-tender, stirring often.

4. Meanwhile, add noodles to boiling water in pot. Cook minimum time that label directs, stirring occasionally. Drain well; rinse under cold water and drain again. Return to pot; add shrimp and vegetable mixture, tossing until well-combined. Serves 6.

TIP: We like to use flat, 1/8-inchwide dried rice noodles, often labeled pad Thai, thin rice noodles or rice sticks.

Individuals looking for a way to incorporate exercise into their lives need look no further than their own feet. Walking offers numerous health benefits to people of all ages, and it’s particularly beneficial to fitness novices. Walking can facilitate a transition between inactivity and increased intensity for those who may have been away from exercise for some time.

According to Dr. Thomas Frieden, former director of the Centers for Disease Control and Prevention, walking is “the closest thing people have to a wonder drug.” Any physical activity is a boon to personal health, and walking provides a host of benefits.

1. Strengthens bones: Walking can slow down the loss of bone mass due to osteoporosis. Arthritis.org notes that a study of postmenopausal women found that 30 minutes of walking each day reduced their risk of hip fractures by 40 percent.

2. Boosts cardio endurance: Regular walks can improve cardiovascular endurance, which can help people progress to more rigorous physical activity.

3. Burns calories: People can walk to burn calories and maintain or lose weight. The number of calories burned will depend on how briskly people walk, the distance they cover, their body weight, and the terrain on which they walk.

4. Improves cardiovascular health: The American Heart Association recommends adults get at least 150 minutes of moderate-intensity activity each week. Walking can fit that bill. Walking five days a week can reduce risk for coronary heart disease by roughly 19 percent, according to a report in the European Journal of Epidemiology.

5. Counteracts effects of weight-promoting genes: Researchers at Harvard Medical School looked at 32 obesity-promoting genes in more than 12,000 people who walked briskly for about an hour a day. Walking reduced the effects of weight-promoting genes by 50 percent.

6. Tame cravings: People who have a sweet tooth can take notice that walking may steer people away from overindulgence. A pair of studies from the University of Exeter found a 15-minute walk can curb cravings for chocolate and reduce the chocolate consumed in stressful situations. Walking also helped to reduce cravings for other sugary snacks.

7. Reduces joint pain: Walking improves blood flow and helps protect the joints. This can keep people from developing arthritis and other stiffness.

As soon as you walk into Beacon Diner, an enduring landmark on East Greenwich’s South County Trail, you are immediately transported back in time.

If you didn’t know better, you might think you had just stepped into a Norman Rockwell painting! This longstanding diner in bears all the markings of a classic diner, filled with nostalgia.

Checkered valances frame the windows, cozy booths are just right to squeeze into, and a long countertop beckons those who are craving a cup of coffee and one of the diner’s signature Blueberry muffins. Beacon Diner is a time-capsule that has a long story, and a reputation that has allowed it to stay a desired destination for over half a century.

Beacon Diner is, and

always has been, a familyrun business. Way back in 1967, Vernon Knott ~ a Navy veteran who had a knack in the kitchen and a keen eye for business ~ took over the diner from its former owner, John Ponte.

Ponte had run a spotless restaurant that had been a favorite of beach-bound travelers. Vern had the same high standards as his predecessor ~ and he also had a healthy respect for what the diner’s many loyal fans had come to expect: good oldfashioned home cooking made from the highest quality ingredients, timeworn recipes that never disappoint. Vern took the baton and never turned back.

Today, Beacon Diner is run by Vern’s devoted daughter Judy Harris.

An Ode to Avocados I’ve been preparing, eating, reading and writing about avocados for more than a decade. Never in my wildest dreams did I ever think that avocados would rise to their current heights in the culinary world. Avocados are like the child you have who goes from sitting quietly in the back of the classroom making a “C” at best, to becoming the highschool valedictorian with a full-ride college scholarship to Harvard.

Avocados are considered a fruit. They are one of the few fruits or vegetables that contain fat, but the fat is unsaturated and heart healthy. That healthy fat also is why avocados have such a creamy, delicious mouth-feel.

California avocados are in season from spring to fall, which means they will be easier to find, better quality and more affordable during that time.

Avocados are one of the produce items with the least number of pesticides, so there is no reason to buy organic.

Avocados are loaded with nutrients such as dietary fiber, vitamin B6, vitamin C, vitamin E, magnesium, folate and 60% more potassium per ounce than bananas. They’re also cholesterol- and sodium-free. Two tablespoons of mashed avocado (about 1 ounce) or one-fifth of a medium avocado provides about 55 calories.

To choose an avocado, squeeze it gently. It should be firm but give to slight pressure. Hard avocados are not yet ripe, but can ripen in a few days.

Place the unripe avocado in a brown paper bag for two to five days. Apples or bananas can be added to the bag to shorten the process, because the gas

they give off helps ripen the avocados.

Ripe avocados can be stored in the refrigerator for two to three days.

Always wash avocados before eating to remove any dirt or bacteria.

Cut lengthwise and rotate the halves to separate. Use a spoon to remove the seed and scoop out the meat or peel the skin away from the fruit. Lemon juice, lime juice or white vinegar can help prevent discoloring. You can also press plastic wrap directly on the surface and then wrap to store in the refrigerator for a few days. If the surface turns brown, just cut off the top layer and eat the rest.

Avocados can be enjoyed in a variety of ways, including mashed and spread on a sandwich in place of mayonnaise, or blending it with oil and vinegar to make a salad dressing.

Add the lemon juice, salt, pepper, curry or garam masala powder, onion powder, garlic powder, cilantro or parsley leaves, and mix well.

2. Add 1/3 cup of flour at a time to the avocado mixture and mix or process well after each addition. Lightly dust the counter or cutting board, and a rolling pin with flour. Knead the mixture on the counter or cutting board to form a soft, smooth dough.

If the dough is too loose, add another 1/3 cup of flour. If the dough is too dry, add a tablespoon of water.

3. Cover the dough with a dish towel or plastic wrap, set aside for 15-30 minutes. Divide dough into 8 equal portions. Roll each portion into a circle or oval shape of even thickness (about 2 inches).

4. Place a heavy-bottom skillet or a griddle over medium-high heat until hot. Place one of the flatbread pieces in the dry skillet or a griddle. Press flatbread lightly with a spatula. After 5 to 7 seconds, when bubbles form on top of the flatbread and the bottom is light brown, spread a teaspoon of oil on top of the flatbread. Flip it over, cook it for another 5-7 seconds, then apply oil to the top of the flatbread, flip again, cook for the last 5-7 seconds. Transfer to a serving plate, cover to keep warm. Repeat process with remaining flatbread.

All American furniture was handmade before the 1800s, and old furniture was saved until it was too battered to use.

The United States was a young country, and the first collector of note was an eccentric man in the 1800s who saved furniture and objects made or used in the 1600s and after. By the late 1700s, the rich were decorating in styles that copied English styles, but with pieces made in America. Wealthy collectors bought antiques if they did not have any from the family. By the 1900s, less expensive copies were made by a few companies.

The 1940s were the start of the demand for exact copies of museum pieces. Only an expert could notice the difference and recognize modern tool marks. Many homes were decorated in Chippendale or other old styles.

Baker Furniture started in 1903 as Cook, Baker & Company. The name was changed to Baker Furniture Factories Inc. in 1927. It changed owners seven times, but still used the Baker name as it does today. The company made different styles as decorating tastes changed. The earliest lines were Golden Oak and Mission. By 1923, Baker was making reproductions of Duncan Phyfe. Then it added other 18th-century wooden pieces. In 1925, Baker started “The Twentieth Century Shop,” using rosewood and olive burl, eventually using pieces by midcentury designers like Donald Deskey and, in 1951, Danish Modern by Finn Juhl.

Baker continued to make reproductions for Colonial Williamsburg and other historic sites labeled with their names.

Today some early reproductions sell for about the same price as an average antique piece. This Biedermeier “secretaire a abattant” has a “Baker” label. It sold for $1,063 at a Neal auction in 2019. *** What is goofus glass?

Goofus glass is a type of pressed or mold-blown glass made from about 1900 to 1920 by several American factories. It was the first “carnival glass,” an inexpensive glass given away at carnivals, movie theaters, gas stations and other businesses. The glass was cold painted in bright colors and originally sold under names like “Egyptian Art,”

Financial literacy is the ability to understand how to make sound financial choices so that you can confidently manage your money over the course of your life. The full breadth of financial literacy includes a wide array of financial skills, ranging from the basics (such as setting and maintaining a budget and properly managing credit cards) to the more complex (things like navigating tax regulations or diversifying investment portfolios).

Developing these skills from an early age is a crucial step on the path toward financial security. When you’re financially literate, you’re able to allocate your income toward various goals simultaneously—not just to ongoing expenses, but to savings, debt repayment and rainy-day funds. You can navigate the financial marketplace with self-assurance, and you have the tools to thoroughly research anything from loans, to credit cards, to investment opportunities.

Unfortunately, however, a host of recent studies show that far too many individuals and families across the country and around the world struggle with basic financial education.

According to Standard & Poor’s Global Financial Literacy Survey, less than 60% of American adults are considered sufficiently financially literate.

The National Foundation for Credit Counseling found that just two out of every five American adults know how to set a monthly budget. A study from the Financial Industry Regulatory Authority (FINRA) Foundation found that more than half of Americans admit to being “financially anxious.”

Clearly, the widespread lack of financial preparation is a major problem that needs to be addressed.

The question is: Where do we start?

At Navigant Credit Union, we’ve made financial literacy education a focal part of our community outreach

efforts here in Rhode Island. While we certainly haven’t found all of the answers, we are proud of the difference our team has been able to make in the financial lives of our members and neighbors.

Here are a few lessons we’ve learned along the way.

Financial literacy is a life-long journey.

Through our partnership with EverFi, Navigant Credit Union is bringing proven, student-friendly financial education curriculum into local classrooms.

Our program has reached more than 4,000 students across Rhode Island, who have completed more than 30,000 financial literacy modules and logged more than 22,000 hours of learning.

Programs like this are so important because the financial literacy educational journey can and should begin at a very early age. Young children may not need to worry about credit scores or learn how to file a tax return before they reach kindergarten, but that doesn’t mean they can’t start the process of familiarizing themselves with the basics. Something as simple as teaching a child how to save up their allowance for a new toy can put them on the right track toward developing financial skills they’ll use as they’re growing up.

Individuals of all ages need access to financial education resources.

Financial literacy is not an issue unique to any age group. Whether you’re a child hoping to save an allowance for a new game, or an adult hoping to squirrel away cash for a milestone purchase like a home or a car, you need to know the basics.

There are plenty of free resources available to help people of all ages navigate their financial journeys. Navigant Credit Union offers dozens of free modules on our online Financial Wellness Center.

Finally, it’s never too late to start.

There was a time, not so long ago in the 20th Century, when thinking (at all) about supporting yourself through your retirement year’s generally involved only one factor: the size and viability of your financial portfolio and your non-liquid assets (if any).

Below we outline 11 Deadly Errors to avoid to ensure you don’t outlive your money.

DEaDly Error 1: Disregarding Extended longevity Living a long life is no longer wishful thinking. It is a valid belief. In the 21st Century, we are experiencing a longevity revolution. Life expectancies in the United States are on the rise. Reaching your 100th birthday is increasingly common.

Just over a decade ago in 2010, the U.S. Census reported 53,364 centenarians (people 100 years or older). Last year, in 2020, that number nearly doubled as it was reported that 90,000 over 100 years old were living in the U.S. That number continues to grow. By 2030, the population over 80 years old in the U.S. is expected to increase from 9.3 million to 19.5 million. You could be one of them.

DEaDly Error 2: Grossly Insufficient lifetime Saving In the U.S., savings and investments have declined significantly as a percentage of Gross Domestic Product (GDP) over the last 40 years. Savings and investments have all but collapsed since the 2008 financial crisis. The excuses often heard: • The government continues to deduct more and more for Social Security and Medicare.

• I have no money left after 401(k) / retirement plan contributions, taxes, increasing healthcare costs and inflation.

• How can I save anything when I have a family to support?

Lack of savings is particularly prominent in youth who suffer from a need for immediate gratification fed by technology which conveniently delivers to the door. Large college loans, irresponsible spending and social pressure – all contribute to a corrosive savings malaise.

DEaDly Error 3: Unaffordable Mortgages / lifestyle Levels of lifestyles barely financed at

A pension fund and a 401(k)/Qualified Plan may not be monitored or managed successfully. However, for many it is easier to trust that all is being properly managed or at least monitored by plan administrators. Employees often purchase company stock in 401(k)’s out of loyalty and rarely sell it for fear of retribution regardless of how poorly it may be doing or is expected to do. Many also still believe that if they save in these types of retirement vehicles alone they will have more than enough in retirement. Others need immediate cash flow while working and never save enough in these means for their retirement.

Aging parents and/or relatives living in your guest room or nursing homes, unemployed or dysfunctional children and grandchildren staying in your basement or playroom, family members suffering from mental illness and/or alcoholic or drug problem siblings - are just a few examples that can be unanticipated drains on retirement cash flow. Today we have parents, grandparents and other family members who go so far as to have co-signed college loans, auto loans and more. The co-signers always assume these loans will be paid back before or during their retirement and also assume that after college the borrowers would easily be able to obtain well-paying jobs. Both assumptions are not bankable.

DEaDly Error. 5: Inept / often Too Conservative / Too aggressive Portfolio Management

DEaDly Error 10: Failure to Plan for Unanticipated life Events

Nothing can erode portfolio values faster than careless professional management. Investment advice should not be influenced by advisor personal profitability, increased fees and expenses and over-conservative/ overaggressive portfolio management. We continue today to see crippling failure by portfolio management to recognize the trend to extended longevity.

If the past year has taught us anything it has taught us to expect the unexpected events can occur as Covid-19 continues to impact our lives and the future plans for many. Job loss, reductions in hours and more have affected many of our finances and continues to do so. Now more than ever, we have learned the importance of planning for our future to ensure financial security and longevity.

Only if you are unusually lucky can you absolutely count on not suffering in your lifetime such crippling events as: Being involved in a serious automobile accident; being robbed or assaulted; losing your home in a fire or natural disaster; losing a leg to a shark; choking on a piece of steak; unexpected loss of a loved one; sudden contraction of a catastrophic disease; a crippling fall in bathtub or icy walk, need for an elder care nursing home -- all could happen to you.

DEaDly Error 6: Failure to Manage / Maximize Healthcare Costs & Plans The cost of healthcare has become increasingly expensive. The average American while still employed can be lost in the healthcare system. Misunderstanding the impact of obligations such as copays, deductibles, and coinsurance can surprise and potentially impoverish you with healthcare debts for which one never planned. Medicare was supposed to help you when you retire. Instead it has created more confusion and increased expenses for retirees.

DEaDly Error 7: Failure to Maximize / Plan Social Security The original promise of Social security: A government guaranteed retirement income that replaced the whole or part of your income from your job.

However, over the years, the payment that you can expect has increasingly become only “in part.” Today it is important to sort out and maximize Social Security and its complex changing array of moving parts: payments, claiming options and multiple choices for individual/family situations. Moreover, the future value of Social Security payments is too often not anticipated as cost-of-living increases (COLA’s), if any. Instead, Social Security payments are being drastically reduced by deductions such as Medicare Part B expenses, penalties, and rising health plan costs.

DEaDly Error 8: Divorce: End of living on Two Incomes Divorce is the enemy of retirement planning. Not only can a settlement divide assets and cash flow, but it can also end the obvious benefit of combin-

How to save on family expenses

The pandemic sparked by the spread of the novel coronavirus COVID-19 blindsided much of the world. Since the World Health Organization declared a pandemic in March 2020, millions of people across the globe have lost their lives, while hundreds of millions more have lost their livelihoods.

Data from the Bureau of Labor Statistics indicates the unemployment rate in the United States, which was lower than 4 percent in the weeks prior to the WHO’s pandemic declaration, was nearly 15 percent by mid-May. While that figure dropped to less than 9 percent by the end of summer, many families are still confronting financial challenges stemming from the ongoing pandemic. Some parents may still be out of work, while others are working on reduced salaries as their employers try to overcome the economic challenges posed by COVID-19.

No one knows when the pandemic will end and life will return to normal, so families facing financial uncertainty can benefit from tightening their belts for the long haul. Thankfully, there are various ways for families to cut costs that won’t adversely affect their quality of life.

• Plan more meals. Impulse buying is one of the most costly ways that families overspend. A 2018 survey from Slickdeals.net found that the average consumer in the United States spends $5,400 annually on impulse buys. More than 70 percent of impulse spending goes toward food. Families looking to cut costs can plan more meals so they know what

they need when they visit the grocery store, which should reduce the amount of money they spend on spur-of-the-moment purchases.

• Simplify special occasions. It can be fun to go a little overboard for birthday parties, anniversaries and holiday gatherings. However, such spending should be seen as a luxury during a recession.

Momentous occasions can be both special and inexpensive. Birthday picnics in the park or at the beach can be just as unique and memorable as lavish parties, and they won’t cost nearly as much. Parents can agree to forgo gift-giving on anniversaries or birthdays, opting instead for romantic homemade dinners.

• Think of new ways to get away. Many families canceled or postponed vacations in 2020 as travel restrictions and social distancing guidelines greatly limited travel options. While it might be possible to travel safely again in 2021, families still dealing with the fallout from COVID-19 may be hesitant to plan traditional vacations. Thankfully, there are ways to get away without breaking the bank. Many campsites are free or charge nominal fees to use their facilities, and such excursions can be great ways for families accustomed to flying and five-star hotels to enjoy new experiences.

While working with our clients, much of what we do involves Social Security optimization. There is so much about Social Security that many people do not understand.

People may think they have a sound retirement strategy in place. However, when we start talking about social security planning, we’ve had people tell us they plan to continue working and defer benefits until age 70 from age 66 and they may have a spouse already receiving payments in the form of disability benefits.

In the past they may have been told to file for benefits now but defer the payments until age seventy in order to receive an annual eight percent Delayed Retirement Credit.

We know that you do not need to file and suspend your benefits now to get your eight percent Delayed Retirement Credits. It was going to be an automatic benefit you would get, by not taking your Social Security benefits until age seventy.

There may be other reasons you should file now and suspend the payments. There is one benefit. Under the rule that was in effect at the time, you could receive a lump sum in the amount of your deferred benefits at any point before age seventy.

For example, if you filed and deferred payments at the age of sixty-six, and became disabled three years later, you could go back and get a lump sum of money equaling the three years of payments that you would have received if you hadn’t deferred. (As a side note, the full scope of that benefit is no longer available at the time of this writing. Currently you can only receive a maximum of twelve months

of lump sum payments, in the same situation.)

To use the words of the old Ginsu commercial: Wait! There’s more!

There may be a much larger opportunity for you. If you had reached your full retirement age of sixty-six years, and your spouse is currently receiving payments, you will be eligible to receive a spousal benefit of fifty percent of your spouse’s Primary Insurance Amount. That is the amount you qualify for at your Full Retirement Age (FRA). Additionally, receiving this spousal benefit would not affect the eight percent delayed retirement credit you would receive on your benefit amount by not taking your retirement benefits until age seventy.

Under the current guidelines, if you were born in 1954 or before, your full retirement age is 66. For every year after that up to 1960 add two months to find your full retirement age. If you were born after 1960, your full retirement age will be 67.

The Social Security Act of 1935 was a law enacted by President Franklin D. Roosevelt. Since then, there have been many changes to the rules along the way. For example, there were no spousal or disability benefits in the original program, and we do not know what changes, if any, may come. That’s why we always recommend that you work with an experienced team that can determine the “sweet spot” for you to receive the most benefit possible from Social Security.

The COVID-19 pandemic has brought a lot of changes to daily life. One of the positive effects of COVID-19 is that many individuals have turned to pets to tame loneliness or bring some brightness into their lives amidst all the uncertainty and turbulence.

In April 2020, the American Society for the Prevention of Cruelty to Animals said applications to foster dogs and cats was up 200 percent.

In addition, PetPoint, a software system shared by shelters nationwide, reported fostering and adoptions were up by 700 percent since 2019.

A TD Ameritrade survey found 33 percent of Americans have considered fostering or adopting a furry friend during the pandemic.

While it may be tempting to rush out and adopt a pet right away, careful consideration must be given before bringing a new pet into a home.

Expense One of the biggest considerations is cost. The TD Ameritrade survey found that dog owners spend up to $1,201 a year on their pets, while cat owners spend up to $687 per year on average. Food costs top the list of pet expenditures, followed by veterinary care and grooming.

Lifestyle Another aspect to consider is if a certain animal will fit its prospective owners’ lifestyles. Outdoor enthusiasts and physically active people may want an exercise buddy, so a high-energy dog breed may fit the mold. Those who want a cuddling companion or lap warmer may opt for a less active dog or a cat.

Research the pet It is important to learn the care needs of specific pets, particularly among breeds of cats and dogs. For example, certain dogs may fit best

with one person and not take to a household full of kids. Some breeds need ample outdoor space to run around, while others may be content to be couch potatoes.

Another consideration is temperament and the animal’s history.

Some rescues come from abusive situations or may have spent years on the street, so owners must be ready to help such dogs adjust to more loving environments. It’s important to ask how the pet came to be in the shelter. All considerations need to be factored into the equation.

Learn the adoption process Each shelter or rescue organization has its own rules and regulations for adoption, including fees they charge by way of a donation. According to the pet resource Top Dog Tips, a shelter needs to be sure that adoptive pet parents will be able to care for the pet. An extensive questionnaire and a potential home visit may be part of the application process. Veterinarian references, age restrictions (adoptive pet parents are often 21 years or older) and permission from a landlord if one rents will be needed. Some rescues have stipulations regarding fenced yards. Some shelters even insist on a disclaimer that they reserve the right to remove the pet if they feel the animal is not being properly cared for.

Pet adoption should always include careful consideration of a wide range of factors.
