Top 3 Best Dessert Since 1982, when the first Must Be Heaven opened in downtown Brenham, Texas, desserts have been a mainstay of our menu. Although desserts were originally limited to hand-dipped Blue Bell ice cream and a wide assortment of candies, they have always been a popular menu item for customers of all ages.

It was in 1987, under the ownership of ShirleySyptak,thatawideselectionofpies was introduced to our menu. Although the core menu remained the same, the

demand for Shirley’s homemade pies began to skyrocket. Little by little and bite by bite, word of mouth advertising started catching on, and Must Be Heaven became synonymous with delicious homemade pies as well as hand-dipped Blue Bell.

The only thing better than a big warm slice of homemade pie is a big warm slice of homemade pie with Blue Bell ice cream on top!

Again the dessert menu expanded…this time with more cheesecake options, pie variationsandCharlie’s HomemadeBread Pudding with “Bootleg Bourbon Sauce”.

Charlie’s willingness to push the limits led to the development of pies such as his “Sweet Texas Heat”, a jalapeno pecan pie and his Sawdust Pie which includes equal parts of coconut, pecans, graham cracker crumbs and sugar. It is baked off with egg whites and vanilla and topped with fresh sliced bananas and whipped cream. Not all of Charlie’s risk-taking paid off, though.

His “Pinto Bean Pie”, though tasty, never caught on and he has been forbidden by wife, Traci, to ever attempt a couple of other “risky” desserts.

The pie selections have grown in proportion to their restaurant ventures. Having opened new locations in College Station as well as downtown Bryan has allowed their customers to get their dessert ‘fix’ at the furthest northern, central and southern locations in the B/CS area No other, locally-owned venture offers both selection and location in the Brazos Valley like Must Be Heaven Sandwich Shoppe and Bakery.

It is hard to argue with success! Success is driven by demand, and demand is created when a business offers a consistent, quality product at a price point that is perceived to be a value by customers. Yes, it is true that Must Be Heaven may not be the most profitable business model in the foodservice world, but sometimes putting out a quality product at an affordable price is reward enough. Pride rules!

It all started in 1982 in downtown Brenham, Texas with a simple menu featuring a limited selection of sandwiches, quiche, baked potatoes and desserts.

Must Be Heaven started quietly in a dying downtown area that had all but been abandoned for the newly constructed U.S. Hwy 290 bypass. Connie Wilder believed that the city would never allow its heart and soul to die. She took a chance by investing in equipment, inventory and a small staff to start what is now a business model which produces almost 3 million dollars in annual sales. Her risk paid off when Brenham’s mayor and city council agreed with her and began reinvesting in the already present infrastructure of downtown Brenham.

Connie’s business thrived. She sold her

venture to Shirley Syptak, who took Must Be Heaven to another level, but it wasn’t until1999whenTraci&CharliePyle,newly transplants from Bryan, Texas, began to expand the core sandwich menu to new heights.

The Pyles, along with Donna & Baine Morrow, the new owners of 3 B/ CS locations, took the original core menu, which included the traditional deli options along with Must Be Heaven’s proprietary Tuna Salad and Chicken Salad recipes, and brought it into the 21st century.

New bread selections, such as sliced Sourdough, Ciabatta buns, Kaiser Rolls and Croissants were added to the freshbaked options of sliced Wheat and Rye. A wide variety of cheeses, such as Swiss, Cheddar, American, Muenster, Pepper jack and Provolone can be selected for any sandwich. Customers can customize any sandwich with the above list of breads and cheeses or can choose from an extensivelist of Classic Deli sandwiches such as Chicken Salad, Tuna Salad, Pimento Cheese, Roast Beef, Ham, Turkey Breast, Corned Beef or Pastrami, but the selection only starts there.
