RIBOLI FAMILY OF SAN ANTONIO WINERY

At 102 years old, the Riboli family winemaking business is hale and hearty, but wise and humble enough to know that the true mark of maturity is knowing that one never stops learning, growing and improving.

RIBOLI FAMILY HISTORY In 1917, an Italian immigrant in California named Santo Cambianica founded the first Riboli family winery. When Prohibition darkened the doors of 100 California wineries in 1920, Santo, a devout Catholic, and a handful of vintners survived the 13-year drought by making sacramental wines. The family resumed commercial winemaking in the 1930s, grew deep roots in the California wine industry, and was named Wine Enthusiast’s 2018 American Winery of the Year.

PASO ROBLES TERROIR In Paso Robles, Riboli Family winegrapes come from five distinct estate vineyards from within two of the 11 districts that make up the Paso Robles AVA. The Stefano and Maddalena vineyards, plus a hilltop vineyard called Pretty Penny Vineyard, all grow in the El Pomar District. A series of geographical passes,

known as the Templeton Gap, allows afternoon breezes to cool the vineyards and helps retain acidity within the fruit.

Two more parcels, Creston Highlands and Riboli Creston Vineyard, both of which lie in the Creston District, provide a wide diurnal swing. Warm temperatures and afternoon breezes that come whistling in from the Salinas Valley help to cool the grapes and make for more deeply flavored harvests. The coarse and loamy Arbuckle-Positas soil found deep within these vineyards provides good drainage, room for roots to grow, and it enriches grapes with color.

FARM-TO-BOTTLE SUSTAINABILITY Anthony takes a practical approach to the merits of sustainability, which is not only responsible, but also economical.

The state-of-the-art production facility is outfitted with 50 stainless-steel fermentation tanks and 10 open-topped fermenters can be electronically monitored at the winery or offsite. To maintain purity, the equipment is also organically sanitized with an ozone-generating system to ensure cleanliness and overall product quality.

After grapes are harvested and delivered to the winery, they are

cleaned and crushed. Pre-fermentation byproducts, such as excess leaves, stems and post-fermentation byproducts, such as seeds and skins, are deposited into an underground auger. This residual material, rich in nitrogen, sugar, and amino acids, is then carried away to be used for fertilizer and animal feed.

“For our family, sustainability is not only an environmental decision, but a sound business decision,” said Anthony. “Our winery’s barrel room has ‘night air cooling.’ When the temperature drops below 50F, the refrigeration shuts off and fans blow cool outside air into the building. With 811,902 kWh that is produced from our completely solar-powered production facility, the offset equivalent of greenhouse gases equals 1,403,759 miles driven by car or the CO2 emissions from 627,662 pounds of burned coal.”

To date, the Paso Robles winery has processed over one million gallons of wastewater. At the Riboli Family production facility, not far from the San Antonio Winery tasting room, all that water is treated and then repurposed for landscaping and vineyard use.

“To optimize our water use, our vineyards rely on timed drip irrigation and cover crops,” Anthony said. “For weed control, we also use sheep. They love roaming the vineyards to graze on everything!”

ART AND SCIENCE CONVERGE “Technology helps us to streamline our operation, work more efficiently and preserve natural resources, but it also helps us make better wine,” said Anthony. “We can take a more stylistic approach to winemaking when working with great fruit and production is running at optimal levels. Gone are the days of 16-percent-alcohol

wines; it’s just not necessary.” The average alcohol content for red wine hovers at around 14.5 percent.

“It’s a marriage of art and science,” Anthony said. “We had over 60 small lots last year, and we focused on the whole artisanal concept. We want to monitor different clones, formulate our own experiments, and build a record of historical data. We’ve found that even the aromatics of our wine have improved, and they’re more complex. A good example of that is our Malbec – it’s already beautiful wine, but it has even more character now.” >> BY MELISSA CHAVEZ

• Opaque ‘Darkness’ – Inky and impenetrable to light, the 2016 Opaque Darkness blends Zinfandel (57%), Cabernet Sauvignon (18%), Syrah (13%), Petite Sirah (6%), Malbec (4%), and Petit Verdot (2%) that is aged in French and American oak barrels for 12 months. Anthony Riboli describes Opaque ‘Darkness’ as “a fun wine – big, dark, and full-bodied with just the right amount of tannins.”

• 2018 San Simeon Grenache Rosé – Made of 100% Grenache grapes, the long growing season and hang time on the vine imparted more depth and structure to the grapes. Pale pink in color, this summer sipper has characters of fresh strawberry and cantaloupe melon. Crafted in small lots and fermented at 55 degrees for several weeks, this wine will pair perfectly with tuna tartare or your favorite charcuterie.

INSIDE THE TASTING ROOM “In our urban location, our tasting room is never overrun by crowds,” said Paula Dooley (Stephen Ross Dooley’s wife).

“Customers are assured of getting an intimate and engaging experience with our small staff. The barrels are steps away, and you can visit the cellar where the wines are made. You can stand at the bar, or retreat to comfortable seating for privacy, and enjoy a flight of Stephen Ross wines or wine by the glass.”

Featured wine releases for the season include Stephen Ross’s 2016 Pinot Noir, “Arete” (ahr-it-tey’), meaning the pinnacle of something or the highest level of virtue or excellence.

“As our Stone Corral estate vineyard has matured since being planted in 2001, the blocks and clones have really begun to express themselves in unique and amazing ways,” Paula said. “We have seen this developing in recent vintages and decided to carve

out the Arete in 2016 to really highlight the best from the vineyard.

The grapes were hand-harvested and sorted in the cool of night.

Non-fined and non-filtered, we aged the wine for 18 months in French oak barrels.”

Also pouring in the tasting room this summer are Stephen Ross’s 2016 Pinot Noir, Stone Corral Vineyard ($60), the 2017 Albariño, Spanish Springs Vineyard ($25), and the 2016 Chardonnay, Edna Valley ($28).

SUSTAINABLE FARMING Stone Corral Vineyard in Edna Valley supplies 100 percent of their estate-grown grapes for Stephen Ross wines. The rest is sourced from premium parcels within the Central Coast AVA, throughout San Luis Obispo County’s Edna Valley, Santa Maria Valley, Santa Lucia Highlands, and Paso Robles. A conscientious effort to maintain sustainability practices and surrounding themselves with future leaders of their industry is a priority.

“We have a great cellar crew of Cal Poly University Wine and Viticulture grads and students,” said Paula. “Our vineyards, estate and contracted, are either SIP Certified or Certified

Organic. For example, we laid down a band of organic mulch six inches deep under the vines to suppress weed growth and hold moisture in the soil. We do what we can to be good stewards of the environment.”

CASTORO CELLARS VINEYARDS & WINERY Ever since Niels and Bimmer Udsen became established in 1983, Castoro Cellars at 1315 North Bethel Road in Templeton has made high-quality, award-winning wines that are enjoyed around the world.

SIP & CCOF ORGANIC CERTIFICATION With the help of respected winemaker and mentor, Tom Myers, the Udsens tended their vineyards, made wine, and put their profits right back into the family business. Throughout the next decade, Castoro Cellars became not only well-known for their distinctive brand of “Dam Fine Wine,” but also the integrity to go with it. “We never thought it would get this big,” Bimmer reflected in 2003.

Niels and Bimmer were raising their sons, Luke and Max, ages 17 and 14 years, during the time that the family vineyards were being converted to organic farming. Now at twice their age sixteen years later, Luke and Max are continuing to take an active part in the family business that made its mark as an organic and sustainable 1,400-acre winery operation.

“With all of our estate vineyards either certified organic or in conversion to be certified, we’ve become the largest grower of organic grapes on the Central Coast, and that’s something we are really proud of,” said Luke. “All of our vineyards are also SIPcertified, which stands for Sustainability in Practice.”

In 2006, Castoro Cellars also began installing solar panels in the vineyards, a home, and two wells on the property. Soon, the winery’s solar array began generating more power than they were using, and now produces more than 2 million kWhs, annually. >> BY MELISSA CHAVEZ

What was initially planned as Castoro Cellar’s 30th-year anniversary party in 2013 morphed into Whale Rock Music & Arts Festival. The annual two-day concert series on September 14-15 features music by 16 bands from all over the world, art, yoga classes, delicious food, and is among the most highly anticipated outdoor entertainment events in the region.

“Now in its seventh year, Whale Rock Music and Arts Festival has truly become a part of the Central Coast community and something people look forward to all year long,” Luke said. “We’ve been fortunate enough to raise over $90,000 that has gone directly to the Templeton School District, primarily the Templeton High School music program."

A choice of food vendors will provide plenty of choices for healthy appetites, from sweet and savory crepes, wood-fired pizzas, and BBQ to acai bowls and vegetarian cuisine. A wide assortment of beer, wine, cider, spirits, and nonalcoholic beverages and desserts will also be available for purchase.

At Kit’s Corner, children can enjoy face painting, games, a musical petting zoo, tie dyeing and more. Yoga classes will take place from 12:00 to 7:30 p.m. in one-hour sessions on both concert days.

Tickets range from $75/day to $120/two-day passes and cost slightly higher at the door. Kids 12/under are free with each paid adult admission.

PARRISH FAMILY VINEYARD In Adelaida, one of the most beautiful winemaking subregions in Paso Robles AVA, is Parrish Family Vineyard. Just minutes from downtown, a beautiful five-mile drive leads visitors to the winery’s new countryside tasting room.

THREE ESTATE VINEYARDS Parrish Family Vineyard grows grapes on 150 acres spread across three estate vineyards in the Adelaida District, Creston and Templeton subregions of the Paso Robles AVA. The climactic conditions and distinct soil traits of each parcel help to create wines that reflect characteristics of their respective terroir.

In 1995, vineyard owner David Parrish developed his own trellis system and applied it to calcium-rich granite soil across 40 acres within the Creston District to produce four clones of Cabernet Sauvignon grafted onto two rootstocks. In 2013, David planted Cabernet Sauvignon, Cabernet Franc, Petit Verdot, Petite Sirah, and Grenache grapes on an 80-acre parcel with a 1,700-foot elevation in the Templeton Gap District.

In 2014, David planted seven varietals on his 30-acre Adelaida District parcel with a 1,500-foot elevation. They include: Cabernet Sauvignon, Cabernet Franc, Petit Verdot, Malbec, Syrah, Sauvignon Blanc, and Zinfandel grapes. David is also an international expert on trellis design and has held many patents.

NEW TASTING ROOM IS OPEN! The two-story, ranch-style Parrish Family Vineyard tasting room features wraparound porches and VIP and members’ rooms. The lower level opens to landscaped gardens, a water fountain, a paved patio and table seating with sweeping views of the valley.

In a modern twist on Craftsman architecture, the tasting room is decorated in soothing shades of sea blue, indigo, and white with pops of cranberry. Couches, upholstered chairs, round tables and stools at the bar provide ample seating for relaxed sipping and conversation while overlooking vineyards planted with Cabernet Sauvignon, Cabernet Franc, Malbec, Zinfandel, Syrah, and Petit Verdot grapes.

FEATURED WINES The Welcome Tasting at Parrish Family Vineyard features five wine tastes for $25, waived with a $50 wine purchase and free to club members. Currently pouring in the tasting room are: 2017 Estate Sauvignon Blanc, 2016 Chardonnay, 2014 Petite Sirah, 2014 Reserve Silken, and the 2015 Estate Cabernet Sauvignon.

Attractively plated and served with three two-ounce wine pours, pairings are available 11am to 4pm from Friday through Sunday. In a culinary sort of call-and-response of taste and aroma between seasonally fresh food and wine, Chef Rachel’s unique flavor combinations delight and surprise the palate.

“I definitely go outside the box,” said Rachel. “It’s the seasonings and the spices that you add to it that can transform a dish and transform a wine.”

For the month of July, the first course is Sweet Peppers Stuffed with Chicken and Feta over Bittersweet Chocolate Pesto. Paired with Parrish Family Vineyard Sauvignon Blanc, notes of citrus, apricot and bright acidity of the wine lend a pleasant contrast to the flavors of grilled chicken, crumbled feta, and dark chocolate pesto.

The second course of Coffee-Rubbed Duck Confit in a TripleCream Blue Cheese Sauce is arguably a showstopper. New California Art Destination Launches with World-Famed Light Installation Sensorio, an immersive new destination located in Paso Robles, California, launches its first phase with an illuminated art installation by internationally acclaimed artist Bruce Munro. The British-based artist has created his largest site-specific project to date, with the enormous multi-acre walk-through artwork, Bruce Munro: Field of Light at Sensorio. Field of Light is a sculptural composition that covers Sensorio’s rolling hills with an array of over 58,800 stemmed spheres lit by fiber-optics, gently illuminating the landscape in subtle blooms of morphing color.

Powered by solar, the stunning exhibition is expected to captivate thousands of visitors, inviting them to engage with the countryside through an ethereal light-based, sculptural experience. Bruce Munro: Field of Light at Sensorio is open to the public through January 5, 2020 at Sensorio, 4380 Highway 46 East, Paso Robles, California. Smithsonian Magazine has called Munro’s work “stunning,” while The Guardian noted, “This is art you feel, rather than art you view.” The Huffington Post said, “It can be hard to describe in words the gifts that Munro bestows on the landscape as his work escapes description in either written or photographic form, it is something to be experienced.” Theoretical physicist/Nobel Laureate Frank Wilczek noted, “I had the uncanny sense that I was walking through my own mind, or at least a good model of it. I’ll never again think about brains, or myself, in quite the same way.”

Munro created an international sensation with a stunning Field of Light installation in Uluru, Northern Territories, Australia in 2016 that was met with instant acclaim. Involving 326 miles of optic fiber, Field of Light in Uluru has been seen by over 200,000 guests in one of the world’s most remote locations, and will remain on display through December 2020. The journey to that exhibition started in 1992, when Munro and his fiancée (now wife) took a camping tour of Australia’s red desert center. Struck by the thought that deserts seem infertile, until it rained and the flowers bloomed, Munro dreamt of a field of lights that, like dormant seeds in a dry desert, would quietly wait until darkness

to bloom with gentle rhythms of light. The first iteration of Field of Light was not created until 12 years later, in 2004, in Munro’s own home field in Wiltshire, UK. Since then, he has been invited to temporarily recreate Field of Light in many forms: along water and through forests, in urban squares, on building roofs, and over rocky buttes.

Sensorio’s breathtaking exhibit is larger in size than any other Munro exhibition internationally, and will be Munro’s first US exhibit entirely powered by solar. For Sensorio, Munro will create an even larger field, offering visitors an unparalleled experience of immersing themselves in a breathtaking otherworld. Other amenities include refreshments and a special terrace option offering viewing while dining.

Munro’s oeuvre aims to transcend time and space by inspiring moments of awareness, inviting viewers to contemplate a world larger and more mysterious than their own existence. Munro’s recent West Coast premiere at Montalvo Arts Center in Saratoga, California, was described as “Spectacular” by the San Francisco Chronicle, and “Wondrous,” by San Francisco Magazine. KQED (PBS) declared the exhibit “Magical. His dream becomes your dream,” and The Mercury News added it “lives up to the hype. We never left Saratoga, yet entered into another dimension, exploring brilliant realms.”

Sensorio, the intersection of art, technology, and nature, has been designed as a destination for entertainment, exploration, meditation, adventure, and delight. Sensorio will honor the natural topography of the landscape and offer a wide range of amusing, mystical, and kinetic experiences. The Central California destination launches with the interactive light installation by Bruce Munro, as other exhibits and buildings are put into place for an expected opening in 2021. Future developments at Sensorio will include a hotel and conference center.

The Venue: Located on the eastern edge of the Sta. Rita Hills AVA on Santa Rosa Road, Peake Ranch is a 105-acre parcel with 50 acres of vines. Their newly opened winery and tasting room offer a stunning setting in which to enjoy their estate wines.

The vineyard plantings include seven different clones of Pinot Noir, three clones of Chardonnay and two each of Syrah and Grenache. The plantings are all along a hill that covers most of the ranch, exposing the vines to the cool air that comes off the Pacific and into the Santa Ynez Valley. The combination of North, South, East, and West facing slopes coupled with the exposure to varying degrees of the cool wind give the vineyard a diversity of fruit flavor profiles that are unique for a ranch of this size.

Solvang’s First & Oak Restaurant Awarded 2019 ‘Michelin Plate’ First Solvang Dining Establishment to be Recommended by Prestigious Michelin Guide For the first time, a Solvang dining establishment has been recommended by the prestigious Michelin Guide. On June 3, the 2019 Michelin Guide California debuted, awarding First & Oak at the Mirabelle Inn at 409 First Street in downtown Solvang with the “Michelin Plate” which recognizes “Fresh ingredients, carefully prepared: a good meal.” Only 13 restaurants in the entire county of Santa Barbara received this recognition. Other Michelin Guide ratings include “Bib Gourmand” and “Stars.”

First & Oak’s Michelin review states “In a small, romantic boutique hotel, this is a deliciously old-school restaurant that is coming into its own with ambitious contemporary cuisine. This should be no surprise, as the chef boasts a background in some esteemed and globally acclaimed kitchens. Guests are invited to create their own prix-fixe menu by selecting four to five dishes from a variety of categories, such as garden, ocean or farm. This might yield a meal that begins with a refreshing gazpacho made from delicately spiced melon with basil blossom and a bit of smoky fried shrimp. Masterful desserts have included a brownbutter sponge cake with dense clotted cream and marinated strawberries. Be sure to sample the owner’s own wine label,

Steven Snook, First & Oak’s opening chef, came to Solvang with a Michelin-starred Gordon Ramsay résumé. The restaurant’s current chef JJ Guerrero, a protégé of Chef Snook, continues to serve a popular, locallysourced tasting menu format accompanied by a wine list created

Following a successful 10-year hiatus running their business, Chronic Cellars, the brothers Beckett are excited to return to the family winery to manage the cellar, national sales and marketing, daily operations, as well as oversee the farming of the five westside estate vineyards in Paso Robles.

Chronic Cellars was acquired by WX Brands (Novato, CA) in 2014 and Jake and Josh have continued to work with WX to guide the brand and the winemaking for the past five years.

Returning to Peachy Canyon, the brothers are determined to carry on the legacy of the family business while infusing the brand with a new generation of followers. 2nd Annual Harmony Wine & Beer Festival Supports San Luis Obispo County’s Infants Population explosion expected again in the town of Harmony!

Hundreds of festival goers are expected to take over the tiny town on Saturday, August 3 to attend the 2nd Annual Harmony Wine & Beer Festival. Ticket holders will be treated to unlimited pours from 18 wine and craft beer purveyors and live music by the Chad Land Band, all in support of the local charity Infant Essentials.

The Chad Land the cool of our Band takes the stage at 1:30 p.m. and will keep the afternoon lively Downtown Paso Tasting Room. with tunes described as a mix of classic/Southern rock and blues.

Santa Maria Santa Maria Wine Trolley Hit the road and explore all you can do in and around Santa Maria Valley. You’ll find it’s the perfect home base, where you can eat, drink and do more for less. Now you can explore Santa Maria’s local wineries and tasting rooms on the Santa Maria Valley Wine Trolley.

The Santa Maria Valley wine trolley runs its loop through the Foxen Canyon Wine Trail every Saturday and Sunday from 10:30 a.m. to 6:30 p.m. through October 13, 2019. Starting at Costa de Oro, the route takes approximately 60 minutes, and allows passengers to step on and off at their convenience. Explore a new weekend variety, #SantaMariaStyle. Route stops include Old Orcutt at Clark Avenue and Broadway Street (near CORE Winery Tasting Room), Presqu’ile Winery, Cottonwood Canyon Winery and Costa de Oro Winery Step on and step off at your convenience. Cost is $10 per person in advance and $18 per person at the trolley. Tickets cover trolley transportation only. Purchase tickets in advance at the Santa Maria Valley Chamber of Commerce and Visitors Bureau at 614 S. Broadway in Santa Maria, or any of the vendors listed below.
