or close to 50 years, family owned and operated Zaca Mesa Winery has been a leader and transformative presence in Santa Barbara’s wine country.

Many of Santa Barbara’s most well-known and influential winemakers have been part of the Zaca Mesa story. Winemakers such as: Ken Brown (Zaca Mesa’s first winemaker), Jim Clendenon, Bob Lindquist, and Daniel Gehrs are among the industry leaders who began their career at Zaca Mesa, and then moved on to start their own labels, helping to bring the wines of the Santa Ynez Valley to a position of acclaim and high esteem.

Today, Kristin Bryden, head winemaker since 2016, leads a committed team, continuing the tradition of excellence, creativity and excitement in producing award winning wines that Zaca Mesa is renowned for.

Change is Constant at Zaca Mesa Change has been a constant since the beginning, when Zaca Mesa originally planted varietals such as Cabernet Sauvignon, Merlot, and Pinot Noir. Over the years it was apparent that this micro-climate and special

terroir was best suited for growing Rhone varietals, so a major commitment was made to replant. For almost 25 years now, Zaca Mesa has focused on and grown exclusively Rhone grapes. Included in their portfolio is the acclaimed Black Bear Block Syrah. Planted in 1978 this is the oldest block of Syrah in the Central Coast.

Following in the footsteps of her predecessors, Kristin Bryden continues the vision of producing not only highly rated, hand crafted wines, but is blazing new, exciting paths forward in the art of winemaking. Kristin has instituted several ground breaking programs over the last few years: •T he Homage Collection: Sourcing grapes from selected area vineyards, this program honors the original varietals that were grown at Zaca Mesa, before converting the vineyards to Rhônes.

•T he Amphora-aged program: Kristin is using a new, yet ancient approach to aging with use of Amphora (originally used by the Greeks and Romans over 6,000 years ago): Experience how Amphora affect the taste and texture of wine when you taste the Amphora Syrah.

•T he Recusant program started with the 2016 vintage as a threepack bottling, a blend of Grenache and Mourvèdre, one aged in amphora, one aged in concrete and one aged in neutral French oak. Going forward, the 2017 vintage is aged only in the amphora as a single bottling, is part of the winery team’s forward-thinking approach to capture age-old methods of bringing out the grape’s expressiveness.

istorically, many of the first-made wines were light-colored field blends of both white and red grape varieties. In the sixth century BC, the Phoenicians brought grape vines from Greece to what is known as modern-day Marseille in southern France. The wines produced from these vines were naturally light in color and word spread of this pleasant wine around the Mediterranean.

popularize these wines throughout the south of France and henceforth many consider the epicenter of rosé to be in this region of the world.

Rosé, however, isn’t from a specific region or grape. It’s a genre of wine, like red wine and white wine. The biggest producers of this style are France, Spain, Italy and the United States. Several other places of the world also make excellent rosé including South America, Germany

and Australia. These pretty wines are known by other several names including rosado, rosato, blanc de noir, vin gris and blush. The wines may also have a name using the single grape variety from which they are made, such as White Zinfandel, White Grenache, Pinot Noir Blanc or White Merlot. Most rosé wines are blends of multiple grapes. Some of the most common grape varieties used in dry/Europeanstyle rosé are Grenache, Sangiovese, Syrah, Mourvèdre, Carignan, Cinsault and Pinot Noir.

While there have been rosés made in the European style throughout the American winemaking history, it wasn’t until the end of the 20th century that “pink wines” became a truly significant segment of the American wine market. Like the romantic fascination of the French baguette and beret, rosé has been adopted into American culture with charm. Over the years, it has become a quality wine choice with an unpretentious and delicious flavor for many palettes and continues to be a favorite choice for many people today. California, in particular, is making beautiful rosés that can rival some of the best in the world.

how rosé is made Winemakers use nearly all types of grape varietals to produce rosé. And, it can be made still, semi-sparkling or sparkling with a range of sweetness levels. There are basically three ways to make rosé wine. The main style used for making rosé as a primary wine is called the maceration method. It is a method of letting the juice stay in contact with the grape’s skin for a period of time ranging from two hours to a couple of days depending on the producer and winemaker’s choice. The longer the skins are left sitting in the juice, the darker the color of the finished rosé and the more the wine will take on the tannin structure found in red wines. After the time with skin contact, the grape’s juice is strained from the solid matter, called “must”, and fermentation begins.

Another method is called Saignée, pronounced “san-yay”. This method consists of taking the juice from the first part of the red wine process and putting it into its own vat. This is a common methodology in regions that produce fine red wines like Napa and Sonoma. The purpose of bleeding off the juice not only produces a lovely rosé but it also concentrates the red wines’ intensity.

Lastly, the blending method is used when a bit of red wine is added to a vat of white wine to make it pink. It doesn’t take much red wine to dye a white wine. This is more common in regions where sparkling wine is produced such as Champagne, France.

swirl, sniff, sip, savor How to identify wine in the glass Most obviously, the tell-tale sign of a rosé wine is from its color: PINK! Other than that, depending on the type of grape the rosé wine is made with will vary the flavor, as will the sweetness level of the wine. For example, a deeply colored Italian Aglianico rosé will bring out lively orange and soft cherry flavors while a pale-colored Grenache rosé from Provence will taste of honeydew melon, lemon and celery.

Essentially, there is a range of variance in style of rosé depending on region, grape and sweetness level which will determine slightly different palette characteristics of the wine.

Overall, the primary flavors of rosé wines, in general, are strawberry, watermelon, rose petal, hibiscus, honeydew melon and citrus zest. For drier rosé, there is often a pleasant crunchy green flavor similar to celery or rhubarb with a slightly salty finish.

What’s in a glass?

Would wine in any other glass smell as sweet?

There are two types of wine glasses generally used for rosé wines. One option is a stemmed glass with a short bowl and a slightly flared lip. The flared rim glass directs wine to the top of the tongue to help temper the crisp acidity or enhance any sweetness in the wine, depending on the style chosen to imbibe. The round bowl of the glass emphasizes the fruitiness of the wine.

The other option is an all-purpose white wine glass since the process of making rosé mostly resembles that of white wine.

Rosé Inspired Balsamic-Roasted Strawberry Shortcakes Courtesy of Sutter Home Winery. Makes 10 servings Brown Sugar Maple-Glazed Biscuits: • 5 cups all-purpose flour, plus more for shaping the dough • 1/4 cup packed dark brown sugar • 1 tablespoon kosher salt • 1 teaspoon baking soda • 1 cup (2 sticks) butter, frozen, plus 2 tablespoons butter • 1 3/4 cups buttermilk • 2 tablespoons pure maple syrup Strawberries: 1 1/2 pints strawberries, hulled and halved 1 tablespoon balsamic vinegar 1 tablespoon pure maple syrup 1/2 teaspoon pure vanilla extract

Whipped Cream: • 1/2 cup heavy cream • 1 tablespoon pure maple syrup • 1/2 teaspoon pure vanilla extract

Make the biscuits: Heat the oven to 400° F. Line two baking sheets with parchment paper.

Sift together the flour, brown sugar, salt, and baking soda into a large bowl. Using a box grater, grate the frozen butter into the flour. Using the tips of your fingers, gently work the butter into the dough until it resembles coarse crumbs.

Add the buttermilk and gently stir to form a soft dough. Turn the dough out onto a floured surface and shape it into an 8 x 12-inch rectangle that’s about 1.5 inches thick. Using a biscuit cutter (or a drinking glass, in a pinch), cut out as many biscuits as possible. Reshape the dough and repeat, working the dough as little as possible. You should end up with 10 biscuits.

Transfer the biscuits to one of the prepared baking sheets and bake for just 20 minutes. Meanwhile, melt the remaining 2 tablespoons of butter in a small saucepan and stir in the maple syrup. Liberally brush the biscuit tops with the maple butter and bake for 10 minutes more, or until the tops are golden brown and the biscuits have cooked through. Set the biscuits on a wire rack to cool. Keep the oven on.

Make the strawberries: In a large bowl, toss the berries, vinegar, maple syrup, and vanilla and spread them on the second prepared baking sheet. Roast the strawberries for 20 minutes, or until the berries have softened nicely.

Make the whipped cream: In the bowl of a stand mixer fitted with the whisk attachment (or in a large bowl using a hand mixer), whip the cream until thickened. Stir in the maple syrup and vanilla.

Split the biscuits horizontally and place a dollop of whipped cream on the bottom half. Spoon on the roasted strawberries and top with the other biscuit half, and some more cream for good measure.

EARTHFLUENCE A New Project from Michael Larner

or over 20 years, Michael Larner has been producing award winning Rhône-varietal wines (focusing on Syrah) from his Larner Estate Vineyard, in Santa Barbara County’s Ballard Canyon AVA.

With his background in, and love of geology, Michael’s new project is an exploration of terroir: “Influence is the key word and root of the brand, exploring different terroirs. It is the influence of the earth on the grapes and wines – hence the name Earthfluence – a fusion of the two.”

Focusing on Santa Barbara County’s Unique Terroir As Michael showcases the exceptional Larner Estate Vineyard terroir, he had a goal to also showcase other Santa Barbara specific sites, producing wines to parallel the quality of those produced from the Larner Estate-while displaying the diversity of Santa Barbara’s wine growing regions and various meso-climates.

With both a scientist’s and winemaker’s curiosity, Michael searched to find the “perfect” vineyards to source from, in order to produce single varietal, site specific wines “representing the true influence of the Earth, satisfy my winemaking curiosity and speak to their natural

Kukkula Wins ‘Wine of the Year’ in European Competition The Paso Robles-based winery with Finnish roots took this year’s top prize at Finland’s largest international wine competition for its 2014 Aatto.

Kukkula, the organically dry-farmed winery in Paso Robles is pleased to announce its 2014 Aatto has won 2020 Wine of the Year at Finland’s 23rd annual Wines of the Year Competition. Another kukkula wine – the 2014 sisu – placed second in the Best New World Red Wine category.

That’s right: Kukkula is kind of a big deal in Finland.

But, winning over Finland is no small feat. A nation of famously discerning drinkers, the Finns consume more wine per capita than Americans, according to the World Health Organization.

This marks the second time in two years Kukkula’s Aatto – a Counoise-based Rhône blend – has been named one of the best wines in the world. In 2018,

Wine & Spirits Magazine named the 2015 Aatto a Top 100 wine on the planet.

This win is doubly exciting for Kukkula’s founder and winemaker, Kevin Jussila. Jussila’s parents emigrated from Finland, he grew up in Southern California speaking Finnish, and in 2003

The collaboration that began with the Santa Barbara Wine Auction comes full circle to support medically underserved families in Santa Barbara County.

To bolster the local fight against the COVID-19 crisis and continue supporting Santa Barbara’s medically underserved farmworker community, the Santa Barbara Vintners Foundation and Direct Relief are pleased to announce it is gifting $200,000 to Community Health Partners of the Central Coast (CHC).

The Santa Barbara Wine Auction held on February 15 brought together a unique partnership between the wine industry and the nonprofit sector. The Santa Barbara Vintners, Direct Relief and Community Health Centers each share the common mission to support humanitarian health assistance for people in need both locally and globally – especially during the fight against COVID-19.

This gift to Community Health Centers is a result of this special collaboration.

CHC has stepped up to meet the challenges of the pandemic in the Central Coast, but its clinics have been stretched thin, suffering shortages of staff, medical supplies and protective equipment.

“This generous gift will literally save lives – it’s that simple,” said Ron Castle, CEO of CHC. “Our clinics are on the healthcare frontline. As a result, CHC has never had a greater need for support. We are extremely grateful to the Vintner’s Foundation and Direct Relief for their joint donation.”

This wider support for CHC during this pandemic reflects the Vintners Foundation’s success in forging a lasting partnership between the global Direct Relief and the local CHC beyond the February charity auction.

Kukkula means “the hill,” or “high place,” in Finnish. And many of the wines in Kukkula’s portfolio bear Finnish names. For instance, Aatto means “eve” in Finnish, and was named for his late father, who was born on Christmas Eve. And sisu is the Finnish concept of steely determination and grit, a philosophy Jussila lives by.

“For a Finnish-American making wine in Paso Robles, California, we could not be prouder to have won Finland’s most prized wine competition,” said Jussila.

“The fact it’s a wine I made to honor my Finnish-born father has moved me and my family beyond words.”

The annual Wines of the Year Competition took place in Helsinki.

A panel of Finland’s top wine judges blind tasted nearly 1,000 wines from all over the world, including France, Italy, Germany and the United States. Kukkula’s Aatto was first awarded the Best New World Red Wine of the competition, with sisu placing second. Aatto then advanced and won Best Red Wine, and in the final round, it was awarded the overall Wine of the Year for 2020.

This is the first year Kukkula entered the competition.

Hideaway Wine Company Releases Flocking Fabulous New brand goes beyond expectations due to grass roots creative marketing by three owners Just 60 days after releasing a new wine label, FLOCKING FABULOUS – despite winery and tasting rooms closures and general shut down of the nation – Flocking Fabulous brand drives sales at Hideaway Wine Co to its highest sales in its first year of business. Hideaway Wine Co., Los Olivos’ smallest tasting room and newest brand is seeing sales three to four times its yearly average sales in a month.

The release of Flocking Fabulous during a national pandemic was a risk.

With the tasting room closed and no outlet to sell its new brand, resourceful owners John Wright, Jeremy Fraser and Tim Tighe decided to go use social media as a way of getting the word out. They started by messaging some celebrity and music friends and sending them the new wine with a nice letter explaining that tasting rooms are shut down and sales are stagnant, and that, instead of letting

the wine sit in storage, it would be better to get the wines out to some “friends” in hope that they would enjoy the wines in these trying times and maybe share with their followers. Within a couple weeks, celebrities with 500k followers were spreading the word and getting positive posts and tons of shares. Sales started to surge. By the end of month one, celebrities were posting daily and followers were growing rapidly.

Bethel Rd. Distillery Joins the Ranks of Local Distillers with Hand Sanitizer ‘From Our Still to Our Community’ Bethel Rd. Distillery and Winery has joined many distilleries around SanLuis Obispo County by turning their production of distilled spirits into the production of much-needed hand and surface sanitizer. The COVID-19 Pandemic has left many in our community without the protection they need, especially those on the front lines. Shifting production to this essential service was an easy decision.

Bethel Rd. has teamed up with a few other companies to produce their hand and surface sanitizer and get it into the hands of those who need it most.

In hard times like these, we are reminded how easily we all come together for a single cause and how every small effort creates a colossal difference.

Fable Soap Co., a Central Coast company, has partnered up with Bethel Rd. to donate sanitizer to those in need and provide hard to get spray bottles and other supplies. Bethel Rd. also teamed up with LABELTRONIX who is based in Anaheim, CA who donated the labels and printing costs. The design of its label was donated by Kraftwerk Design, Inc. out of San Luis Obispo, CA who has designed all Bethel Rd. wine and spirit labels.

With much gratitude for what these companies have done to aid Bethel Rd. in

the creation of its hand sanitizer, they are able to give to those in need.

Bethel Rd. has already donated 30 gallons of its hand sanitizer to the Sacramento Regional Fire Department/ EMS Communications Center. Dr. Kevin

Mackey stated, “This valuable resource will enable a collaborative program involving the Sacramento County Public Health Department and Students for a National Health Program, the Unhoused Encampment Outreach project. Our students are proud to serve as Disaster Service Workers to help prevent COVID-19 spread in the homeless community.”

Bethel Rd. has also made additional donations to local long-term care facilities, the Atascadero State Hospital and the Cal Poly University Police Department who is preparing to become an alternative treatment center for COVID-19 patients.

Along with listing purchase specials for over 60 wineries in the Paso Robles wine region, Home with Paso Wine also features new and fun ways to connect with the area’s wineries. Through independent virtual experiences, Paso Wine led Zoom Hangouts, winemaker contributed play lists and home recipes, binge watch recommendations and the wines that pair, as well as a published photo gallery featuring fans’ posts, there are some creative new ways to experience the Paso Robles wine region. Immediately following the recommended closures of tasting rooms across California, wineries began to design special opportunities to continue to connect with those patrons who favored their wines direct from the cellar door. The Paso Robles Wine Country Alliance created the Home with Paso Wine program to help wineries broaden their reach. The list of exclusive offers included discounted wines and shipping premiums, but also showcases a list of services like delivery or curbside pick-up, which includes what restaurants have extended for take-out food options. This extensive list is continually being updated.

“The Paso Robles wine community’s relationship with its fans is tight, so not surprisingly our wineries quickly adapted into virtual experiences to continue to enrich that commitment,” said Joel Peterson, Executive Director of the Paso Robles Wine Country Alliance. “Our team created Home with Paso Wine as a fun and unified way to connect with fans who have supported Paso Wine country for years. With so many wine lovers sheltering at home, we knew we had to

bring the Paso Wine experience to them.”

Delivery: Delivery tends to revolve around driving and having brief customer interactions. In some cases you may develop a regular route and make new friends. However, driving can be intimidating. For those new to the California freeways, highways and small-town road networks driving can be quite challenging, often frustrating. Do not be discouraged! Even those of us who’ve driven these California “roads” for years still wake up from time to time with cold traffic jam sweats and dead cellphone fevers. But if you’re interested in learning the roads, listening to music and driving safely while making sure your customers and patients get the correct orders securely, safely then delivery work might be your best fit in the industry.
