A Paso Robles ‘Legacy’ Gary Eberle was awarded the Robert Mondavi Hospitality Award. The distinction, established in 1999, recognizes pioneers in all aspects of the hospitality industry. The award carries with it special meaning for Eberle, as it shares company with its first honoree, Robert Mondavi. The accolade coincides with Eberle Winery’s 40th year and helped to kick off “Legacy,” a conglomeration of awards, seminars, wine tastings and dinners to celebrate Gary’s 46-year vision and tireless work in support of the Paso Robles wine industry. Libbie Agran, director of the San Luis Obispo Wine History Project, spotlighted Gary’s achievements at the celebration and announced other events, including museumquality installations and insightful, educational seminars. To commemorate Gary’s 40th year, 2019 will also feature “Legacy” Eberle Cabernet Sauvignon and a July 13 Gala at the winery. Among Eberle’s premier vintages are the Cotes-du-Robles

Always a Team Effort In the 1970s, Gary not only established Estrella River Winery, the first commercial winery in Paso Robles, he was the first winemaker to create California’s first Syrah varietal wine. Together, Gary and winemakers Tom Meyer, Vic Roberts, and land developer-turned-grower Herman Schwartz combined their expertise to develop the Paso Robles AVA in 1982, and they debuted Paso’s first Wine Festival the following year. Visitors from all over who visit Eberle Winery who meet and chat with Gary not only learn a lot about wine, they leave pleasantly surprised to find the most accessible, gracious and unpretentious winemaker around. Gary’s hospitality is wellknown, and he freely gives away the credit to fellow vintners when talking about the wine Gary and Marcy Eberle appellation he helped develop.

“There are 30 different soil series across the Paso Robles AVA,” said Gary, who received his Enology degree at U.C. Davis following his college football heyday at Penn State under Joe Paterno. “That quality, combined with the long growing season, large diurnal swing, and different microclimates, affords us the ability to create a multitude of different wines that cannot be pigeonholed into one definable category.”

Mondavi’s Mentorship Throughout his career, Gary learned by both doing and listening to sound advice. When California State Fair presented Gary the Wine Lifetime Achievement Award four years ago, it was an honor that he took to heart. His own winemaking inspiration, Robert Mondavi, was the first to receive that distinction. “Robert Mondavi was my mentor,” said Gary, who listened intently when the two conversed under the arch of Mondavi’s Napa Valley winery. “He knew how to make wine, but he taught me the business side of how to really sell wine.” Marcy Eberle, who works alongside her husband, wholeheartedly agrees. “The fact that we are one of the highest award-winning wineries in the country is huge,” said Marcy. “The reality that he truly loves every day of his life being a part of Eberle – not too many people get to live life like this. I’m so proud of him and his legacy.” In Gary’s economy, business is built on relationship. True to form, Gary can be found at the winery on any given day, immersed in cheerful conversation about the region in which he’s invested his life. “Paso Robles doesn’t have to play second fiddle to anyone,” Gary said, with a smile. “We can be really proud of what we make.”

H

istorically, many of the first-made wines were light-colored field blends of both white and red grape varieties. In the sixth century BC, the Phoenicians brought grape vines from Greece to what is known as modern-day Marseille in southern France. The wines produced from these vines were naturally light in color and word spread of this pleasant wine around the Mediterranean. When the Romans landed in Provence, they used their trade networks to popularize these wines throughout the south of France and henceforth many consider the epicenter of rosé to be in this region of the world. Rosé, however, isn’t from a specific region or grape. It’s a genre of wine, like red wine and white wine. The biggest producers of this style are France, Spain, Italy and the United States. Several other places of the world also make excellent rosé including South America, Germany and Australia. These pretty wines are known by other several names including rosado, rosato, blanc de noir, vin gris and blush. The wines may also have a name using the single grape variety from which they are made, such as White Zinfandel, White Grenache, Pinot Noir Blanc or White Merlot. Most rosé wines are blends of multiple grapes. Some of the most common grape varieties used in dry/European-style rosé are Grenache, Sangiovese, Syrah, Mourvèdre, Carignan, Cinsault and Pinot Noir. While there have been rosés made in the European style throughout the American winemaking history, it wasn’t until the end of the 20th century that “pink wines” became a truly significant segment of the American wine market. Like the romantic fascination of the French baguette and beret, rosé has been adopted into American culture with charm. Over the years, it has become a quality wine choice with an unpretentious and delicious flavor for many palettes and continues to be a favorite choice for many people today. California, in particular, is making beautiful rosés that can rival some of the best in the world.

how rosé is made Winemakers use nearly all types of grape varietals to produce rosé. And, it can be made still, semi-sparkling or sparkling with a range of sweetness levels. There are basically three ways to make rosé wine. The main style used for making rosé as a primary wine is called the maceration method. It is a method of letting the juice stay in contact with the grape’s skin for a period of time ranging from two hours to a couple of days depending on the producer and winemaker’s choice. The longer the skins are left sitting in the juice, the darker the color of the finished rosé and the more the wine will take on the tannin structure found in red wines. After the time with skin contact, the grape’s juice is strained from the solid matter, called “must”, and fermentation begins. Another method is called Saignée, pronounced “san-yay”. This method consists of taking the juice from the first part of the red wine process and putting it into its own vat. This is a common methodology in regions that produce fine red wines like Napa and Sonoma. The purpose of bleeding off the juice not only produces a lovely rosé but it also concentrates the red wines’ intensity. Lastly, the blending method is used when a bit of red wine is added to a vat of white wine to make it pink. It doesn’t take much red wine to dye a white wine. This is more common in regions where sparkling wine is produced such as Champagne, France.

swirl, sniff, sip, savor How to identify wine in the glass Most obviously, the tell-tale sign of a rosé wine is from its color: PINK! Other than that, depending on the type of grape the rosé wine is made with will vary the flavor, as will the sweetness level of the wine. For example, a deeply colored Italian Aglianico rosé will bring out lively orange and soft cherry flavors while a pale-colored Grenache rosé from Provence will taste of honeydew melon, lemon and celery. Essentially, there is a range of variance in style of rosé depending on region, grape and sweetness level which will determine slightly different palette characteristics of the wine. Overall, the primary flavors of rosé wines, in general, are strawberry, watermelon, rose petal, hibiscus, honeydew melon and citrus zest. For drier rosé, there is often a pleasant crunchy green flavor similar to celery or rhubarb with a slightly salty finish.

What’s in a glass? Would wine in any other glass smell as sweet? There are two types of wine glasses generally used for rosé wines. One option is a stemmed glass with a short bowl and a slightly flared lip. The flared rim glass directs wine to the top of the tongue to help temper the crisp acidity or enhance any sweetness in the wine, depending on the style chosen to imbibe. The round bowl of the glass emphasizes the fruitiness of the wine. The other option is an all-purpose white wine glass since the process of making rosé mostly resembles that of white wine.

SLO Coast resides on the seafront side of the coastal Santa Lucia mountain range in San Luis Obispo County. SLO Coast is California's coolest winegrowing region. The Stasis label showcases grapes grown in Santa Maria AVA’s Murmur Vineyard, a highdensity, 213-acre parcel in the Solomon Hills subregion, just 12 miles from the ocean. The luxurious Amor Fati, or “love of one’s fate,” capitalizes on wines crafted with concentrated flavor, courtesy of late-season harvests. At press time, the Tooth & Nail Winery tasting room poured its light and bright 2018 Sauvignon Blanc, sourced from Sonoma County grapes, fermented in stainless steel, and finished in concrete. The 2017 Stasis Viognier, made with grapes grown in Santa Maria’s Murmur Vineyards, is aged in concrete, new French Oak, exhibits a pleasant minerality.

The 2015 Amor Fati Chardonnay, aged in French oak and softened by malolactic fermentation, exudes a silky palate, and presents ample body and structure among notes of pineapple layered with lemon, toasty oak and marzipan. Wine steward Amie Micklus makes no secret of the fact that this Chardonnay, dubbed “a therapist in a bottle,” is among her personal favorites. Also sourced from Murmur Vineyard is the 2015 Stasis Pinot Noir. This velvety aromatic wine exudes red cherry, rose petals, a touch of spice and a slightly dry finish. Amy describes Rabble’s juicy, fruit-forward 2015 Amor Fati Grenache as “Christmas in a bottle.” Tooth & Nail Winery’s 2016 flagship, The Possessor, is made with Paso Robles grapes, including Cabernet Sauvignon (69 percent), Merlot (15 percent), Petit Merlot (10 percent) and Syrah grapes (six percent). A fruit-forward wine, The Possessor has plenty of structure, body, deep berry and plum notes and bright acidity that yields to tannins on the finish. Springtime vintages include the new augmented reality release of Rabble Zinfandel and 2018 Amor Fati Gruner Veltliner (200 cases). Eric started in the Cellar under the guidance of his father and grew to embrace a winemaking style that balances Old World tradition with cutting-edge California. Eric consistently produces generous, articulate wines that are true to the character of the Laetitia Estate. in the Central Coast (or California) region, offering seven distinctive “sparklers.” Remaining true to the roots of the Champagne district in France, Laetitia’s sparkling wines are produced under traditional Méthode Champenoise guidelines. Additionally, Laetitia uses a time-honored wooden Coquard press – the same type used throughout France. To their knowledge, this is the only wooden Coquard press in North America. If you happen to be at the winery during crush, you may see the press in use. Pinot Noir is one of the most difficult grapes to grow, and Laetitia excels at growing and producing a line-up of distinctive Pinot Noir wines. There is a choice of six on the current tasting menu. Paso Robles Wine Festival The Paso Robles Wine Festival returns May 16-19 with the 37th annual celebration of everything Paso Robles wine. Il Cortile Ristorante At 608 12th Street, just steps away from Paso Robles City Park, Il Cortile Ristorante has been making both locals and visitors happy as a top pick for intimate Italian cuisine with homemade pastas in a cozy, relaxed atmosphere. It was an unexpected trip to the Central Coast that inspired Chef Santos and his wife Carole MacDonal to seriously consider Paso Robles as the brick-and-mortar location for Chef Santos’s cooking. The restaurant opened in 2010 and has been a perfect fit for the couple ever since. Among Il Cortile’s exciting and varied menu choices are Carpaccio tartufo (beef tenderloin with parmesan fonduta and shaved black truffles), Capesante (seared scallops with seasonal mushrooms, mashed potatoes and fontina fonduta and white truffle oil), Pappardelle al Cinghiale (homemade pappardelle with wild boar ragu), Filetto al Pepe Verde (filet mignon with green peppercorn sauce) and Bisteca (grilled ribeye finished with Olea EVO and sea salt). Vegan, gluten-free and vegetarian menu options are available. Originally from Honduras, Chef Santos established his career in Southern California at the area’s top restaurants, including Giorgio in Malibu and as executive chef at Bridge Restaurant and L’Angolo Café in Los Angeles. In Paso Robles, Chef Santos relies on strong relationships with local sources for fresh produce, meats and grains. His mainstays are handmade pastas in menu offerings in antipasti, primi and secondi courses. Carole’s entertainment industry experience has exposed her to a variety of cuisines in locations throughout the world. At Il Cortile, Carole runs the front of the house and knows many of her repeat guests by name. Carole’s background in her other career as a successful film and television producer includes 35 seasons at the reality-TV adventure “The Amazing Race” and as the executive in charge of production for “The Biggest Loser.” Il Cortile carries a handpicked and formidable selection of Paso Robles AVA and Italian wines. Il Cortile Ristorante has been recognized for its wine program in Wine Spectator’s Restaurant Wine List Awards for the fourth year in a row. A philanthropic-minded business, Team Il Cortile has raised tens of thousands of dollars through its involvement with Tour of Paso cycling event for the Central Coast Cancer Support Community, which provides resources to cancer patients and their families. Calcareous Vineyard The father-daughter ownership team of Lloyd Messer and Dana Brown began their dream in 2000 of establishing a winery on a scenic westside mountaintop in Paso Robles. When Lloyd passed in 2006, Dana carries on the mission of making wines that reflect the sense of place that her father had wisely chosen.

A Mountaintop View Situated almost 2,000 feet above Peachy Canyon Road, the rustically appealing glass-walled and wood-beamed tasting room overlooks the surroundings of the Salinas Valley. This isn’t a visit to be rushed; instead, it should be lingered upon and savored along with the wine. Cooled by a series of passes known as Templeton Gap, Calcareous Vineyard benefits from reliable ocean influences that work perfectly together with other Mediterranean characteristics in Paso Robles. Rich in limestone, the Calcareous’ outcropping that tops 442 acres nourish grapes that make for satisfying results.

From the Winemaker Winemaker Jason Joyce, a former Cal Poly biochemistry major and biotech researcher, has been making wine for about 12 years. The combination of Calcareous’ ideal soil mix, elevation, climatic influences, vineyard cultivation and Jason’s expertise helped Calcareous’ 2010 Syrah tie for best red wine from among 1,500 wineries at the San Francisco Wine Competition.

“I try to do everything in a distinct way,” said Jason. “Each wine has its own purpose and place. I don’t play favorites because every day is different.” For spring, Jason suggested four Calcareous Vineyard estate wines that will please most palates. Calcareous Vineyard’s 2018 Vin Gris Cuvée is a rosé that people anticipate drinking. Bright and refreshing, this balanced offering has notes of light berry and stone fruit. Jason’s 2017 Kate’s Vineyard Zinfandel is great representative of the Paso Robles region. Pleasingly deep in color, this Zin, crafted from 30-year-old vines of intensely-rich grapes, weaves rich berry flavor, earthiness, sweetness, spice and soft tannins. Calcareous Vineyard’s 2016 Lloyd, a Bordeaux blend of Malbec, Cabernet Sauvignon, Cabernet Franc and Petit Verdot, is hitting its stride this season. Deeply jewel-toned, well-structured and full-bodied with blackberry and sweet cola nuances, each of the four varietals is handled separately after harvest and blended after primary fermentation. The flagship of this estate-grown collection is Calcareous Vineyard’s 2016 Tres Violet. A Double Gold winner by San Francisco Chronicle and 92 points from the Wine Spectator, this sophisticated Rhône-style wine of Grenache, Mourvèdre, and Syrah is lush with blueberry, black raspberry, mocha that finish confidently with lasting impressions of structure and minerality.

The Sta. Rita Hills AVA is a special place in Santa Barbara County, where Pinot Noir grapes linger long on the vine and thrive in the coastal fog that characterizes the subregion of the larger Central Coast AVA. On the Lompoc Wine Trail, a selection of Pinot Noirs, Rhône-style wines, and other varietals can be found at LaMontagne Winery, located at 1509 Chestnut Avenue, right in the center of an industrial complex of small wine producers, affectionately dubbed the Lompoc Wine Ghetto. It was a vintner from the esteemed Clos Pepe Vineyards, located in the Sta. Rita Hills appellation, who “encouraged me to make up my own mind” about making the leap into winemaking, said owner Kimberly Smith, who reported that her very first barrel of Pinot Noir was awarded Best in Class by Wall Street Journal. Kimberly credits a dead seabed of diatomaceous earth as one reason why her wines turn out just the way she likes them. “Right here in this region is one of the few diatomaceous earth locations in the world,” said Kimberly. A soft sedimentary rock, diatomaceous earth possesses filtering qualities for crushed, fermented

grapes that enhance the clarity her wine. “Good fruit makes good wine. I’m a diabetic. That’s what led me to go back to school to be a chef. I make wines that are healthy. They have very little sulfites and are below zero in residual sugar,” Kimberly explained.

LaMontagne’s relationship with some of the area’s best vineyards is a key component to creating beautiful wines. For her Pinot Noir wines, they include Quinta del Mar Vineyard in Nipomo, Buona Terra, John Sebastiano, Clos Pepe, and KesslerHaak Vineyard. (Kimberly’s Kessler-Haak Theron wine spends at least 19 months in the barrel.) Kimberly is proud to be associated with her fellow women winemakers in the industry. “Santa Barbara County has more than 25 female winemakers, more than any other county in the state,” said Kimberly, who took part in the Women Winemakers Dinner hosted last March in Solvang. The Temecula Valley Balloon & Wine Festival, May 31 through June 2, includes three days of concerts on two stages. Friday entertainment features Chase Bryant on the wine stage, and A Thousand Horses, plus the “Toast the Glow” experience in the main stage amphitheater. Saturday headliner Three Doors Down will be joined by Soul Asylum and Dishwalla. Sunday Country Funday includes headliner Big & Rich with Russel Dickerson. Friday will also feature A Thousand Horses. “Toast the Glow” is an event recognizing the Festival’s evening balloon glow. Up to a dozen hot air balloons will line up and tether along the top of the arena at dusk. The glow is accomplished when the balloonists all simultaneously light the burners that create the “hot air” for the balloons. In the dark of night, this causes the balloons to illuminate. Countdowns and music will cue the balloonists to synchronize.The audience is part of this show as they countdown and demand the colorful spectacle with just one word “GLOW.” Temecula’s wine country has experienced explosive growth and wine lovers can enjoy over 60 different wines from up to 20 wineries during the weekend. Wine Enthusiast magazine named the Temecula Valley one of the 10 Best Wine Getaways for 2019. The Festival offers a variety of ways to discover a favorite wine in the valley that is known as Southern California Wine Country. Wine tasting is $2 per taste. Winemaker reserve packages include a larger wine glass, plus eight 1-ounce tastes. There are only 1,000 of these packages sold. Cost is $35 online. Morning launches Saturday and Sunday give guests a chance to hitch a ride on a hot air balloon. Hot air balloons begin inflating at 6 a.m. Flights can be reserved. Balloon flights last 45 to 60 minutes and include champagne, orange juice, water and mimosas. Tethered rides are offered after the mass launch. These rides ascend 50 feet and last about four minutes. Hot air balloon flights, tethers and evening glows are subject to last-minute cancellations due to weather. The early bird catches the balloon Murphy-Goode launch onEdmeades Saturday and Sunday weather permitting. Be sure to be on the Festival grounds no later than 6 a.m. as the balloons launch quickly and do not return. Templeton Wine Festival is an Intimate Hometown Experience at the Templeton Park Seventh annual event features unlimited tastes, live music, food and boutique shopping Tickets are now on sale for the 7th Annual Templeton Wine Festival on May 11 from 1 to 5 p.m. in the Templeton Park produced by the Templeton Chamber of Commerce. The event will feature the Central Coast’s best wineries, breweries, distilleries and cider producers pouring unlimited tastes as well as local olive oil tasting. A variety of food trucks and vendors will be selling food and nonalcoholic beverages. Enjoy boutique shopping and handmade local artisan booths while listening to live music by the Mark Adams Band in the bandstand gazebo in the center of Templeton Park. Mark Adams is the winemaker and owner of Ledge Vineyards, a local winery, who will be pouring in the park while The Mark Adams Band plays on our stage, the band sponsor is A.M. Sun Solar. The Templeton Wine Festival takes place under the beautiful trees of Templeton Park with plenty of room for patrons to relax and enjoy the event. The playground, restrooms and upper field will still be open to the public on that afternoon. Attendees are welcome to bring a low back chair or picnic blanket to enjoy the shady grass, but no coolers, animals or outside alcohol is allowed. Hydration stations with free water will be sprinkled throughout the park sponsored by Rabobank. The Chamber is accepting event sponsors, winery, brewery, distillery, cider house, food and craft/art vendors now. Applications are available by calling the Templeton Chamber office at (805) 434-1789. Locals and visitors are encouraged to come spend the day at the Templeton Park on Saturday, May 11th. The county’s largest farmer’s market is held in the park from 9 a.m. to 12:30 p.m., and the Templeton Wine Festival kicks off at 1 p.m. until 5 p.m. Tickets are $35 pre-sale and $45 at the door for wine tasting or $20 for non-drinking attendees of any age.
