From winter comfort food to a crispy salad refresher or as spots of color in the garden, cabbage is a utility player in the vegetable world.

The green and purple heads found in most grocery bins are the most common, but they’re just one type of the many varieties.

Savoy is a favorite for Jan Thompson, owner of Newcastle Produce market and cafe and Twin Brooks Farm in Newcastle.

“It’s a round head with crinkly leaves,” she said. “You can get them large or small — from about 4 or 5 inches (in diameter) up to 10 or 12 inches.”

Savoy is good raw as a slaw or cooked in a variety of dishes. One of Thompson’s favorite ways to use it is for cabbage rolls.

“The crinkly leaves make them roll better without breaking,” she said.

Stuff them with meatloaf for a hardy main dish or substitute grains as the filling for a tasty vegetarian course.

Napa cabbage has an oblong shape with a looser form than other tightly coiled head varieties.

“It is shaped like a barrel — tall and cylindrical,” Thompson said. “We use it here in Chinese chicken salad.

It is more tender than some of the other cabbages.”

It also works well in stir fry recipes.

Bok choy — with its white stems that end in green leaves — has a mild flavor. It’s a great addition to soups and is perfect for stir fries.

terchangeable in salads and are versatile for main course and side dishes.

And, as with other types of cabbage, “they hold up well to cooking,” Thompson said.

Cone cabbage is less common but if you find it, try it.

“They have pointy tops instead of round,” Thompson said. “They look kind of like an upside down ice cream cone. I put them in soups — they are good in vegetable soups.”

Brussel sprouts — the tiny, tightly bound green cabbage heads that grow on a spike — offer another option for enjoying the nutrient-dense vegetable.

The sprouts can have a bitter taste is not prepared correctly. A simple way to prepare them is to cut the heads in half, toss them with olive oil, salt and pepper, then roast them the oven for a flavorful side dish.

With the exception of Brussels sprouts, which don’t thrive in the the local climate, most cabbages do well in foothill gardens, Thompson said.

“Mostly they need cool weather,” she said.

Plant them in the fall or early spring.

“We get a lot of rain (during that period) so there’s no need to water them unless we have a long dry stretch,” she said. “We just use a lot of compost in the soil and that’s about it.”

Ornamental cabbage — cultivated for looks rather than flavor — is a pretty fall addition to the landscape.

“We have some in flower beds,” Thompson said. “They are edible but most people just grow them for looks.

They are good as borders. We have them in the flower barrels at the store.”

It's one of those vegetables that lays low, at the bottom of the crisper, abandoned because you bought it in a fit of ambition and then forgot about it, covering it with sexier counterparts: eggplant, asparagus, or Brussels sprouts (cabbage's more glamorous cousin, only granted such status because of its place on the Thanksgiving Table and its natural sidekick, the ever-trumping bacon). But it turns out that unassuming cabbage has the last word, because even when you leave it for weeks in the fridge, it's still pretty much usable. Peel off the top few layers and you're good to go. Sure, says the cabbage, walk all over me. Forget me, leave me to dry out at the bottom of your food chain. I will still be there for you. Like your kids, whom you forgot to pick up from school.

Yup, that's cabbage. The doormat of the vegetable world.

But we overlook it to our detriment. Cabbage is not

only one of the more flavorful ingredients out there, it's downright cheap. As in, when you walk past the artichokes and sigh because you just can't stomach spending $2.89 per globe (especially when you're going to throw away everything but the heart anyway — whoever thought this was a good idea?), you can always rely on your stalwart friend, the cabbage.

In American cuisine, cabbage is mostly hidden behind mayonnaise and sugar in coleslaw-type dishes. The recipes below — Eastern European and Middle Eastern, respectively — make cabbage the star, using complimentary ingredients to make the cabbage taste more like, well, cabbage. These are humble, peasant dishes. But you know what? They put the artichoke to shame. And you'll learn your lesson: Never overlook the cabbage again.

Cabbage Salad Serves 6 In the Middle East, meals are often prefaced by a large spread of colorful salads: Hummus, tomato-and-cucumber, babaghanoush (eggplant), carrot, and cabbage — to name a few. This salad is intensely simple and can be the garnish to an entree (falafel, lamb, fish tacos), or be served as a side dish. Make sure to let the salad marinate for a while before serving.

In fact, it gets better with time. You'll wonder how so few ingredients can make such music together.

Ingredients:

1 head purple cabbage juice of 2 lemons 1 teaspoon salt

dash of pepper 1/2 teaspoon sugar 2 tablespoons mayonnaise

Instructions:

First, cut the head into a few manageable chunks to work with. Then, slice the cabbage thinly. Add all of the ingredients together and store in the fridge for at least an hour so the cabbage marinades.

When you're ready to serve the salad, mix it, add a dash of salt, and enjoy.

Haluski: cabbage, onions and egg noodles Serves 6 Haluski is a Slavic dish with counterparts in Hungary, Poland and Romania. When I was growing up, we called it Lukshn mit kroet, Yiddish for "noodles with cabbage." And yes, it really is as simple as that title suggests. There are three basic ingredients: cabbage, onions and egg noodles. Everything else is just a variable to tweak according to your preference. The secret here is the caramelization of the onions, so low and slow is your friend. Don't rush it. Throw the onions in the frying pan and go watch an episode of "House of Cards." When you come back, they'll be perfect.

Ingredients:

About half of a 12-ounce bag of extra wide egg noodles (wide is key; don't use the skinny ones) 1 small head of green cabbage 2 onions

1/2 tablespoon salt, plus more to taste pepper, to taste 6 tablespoons oil, divided

Instructions:

Slice the onion thinly. The more surface area, the more caramelized goodness. Throw it into the frying pan at medium low and let it sit for about 30 minutes. Slice the cabbage, but not as thinly; you don't want mush. When the onions are caramelized, add the cabbage. You might have to add it in stages, depending on the size of the pan. Add the salt, and turn the heat up to medium. The salt makes the cabbage wilt. In a separate pot, boil the noodles using the directions on the package. When the noodles are al dente, drain them and add them to the cabbage mixture. Taste for seasoning and add more salt and pepper according to your taste. Voila — you're done. Simple and delicious.

Note: if you want a heartier meal, start with sliced sausage or other meat instead of the oil. The grease will work even better for sautéing. Alternately, use butter instead. You really can't mess this up.

Contra dancing has a dedicated following in the foothills — and around the nation.

Locally, dancers gather one Saturday a month in Newcastle and Nevada City for an evening of toe tapping and twirls.

The Foothill Country Dancers, which was established in the early 1990s, has a mailing list of 880, with 40 to 60 or even more attending the events, according to board member Eric Engle.

He and his wife, Lisa Frankel — who is the board president, have been members since they moved here in 2002.

Contra dancing evolved in the United States a long time ago out of dances the Europeans brought with them, Engle explained.

It survived in New Hampshire in small local dances until it was rediscovered in the 1960s and 1970s.”

Now it has spread to about 40 states.

he said. “In general, it is designed as a kind of dance you can learn in one evening. People who’ve done any kind of dancing before will get the hang of it in one dance.

There’s no special footwork and you are walking all the time. There is a lot of interaction with others — with hands and arms.”

Newcomers are always welcome

“On any particular Saturday, there are probably 200 to 300 Contra dances across the United States,” he said.

“And there are dances on other days of the week, too.”

Engel discovered Contra dancing in college, when a new group started up in Santa Cruz.

“I got hooked right then and have been dancing regularly ever since,” he said.

Contra dancing is similar to square dancing in its roots.

Both have the allemande and do-si-do. Each has a caller that directs the dance moves.

In Contra dancing, there’s always a live band that typically includes a fiddle player, piano or guitar and a mandolin or banjo.

“There are lots of different kinds of music that can be danced too,” Engle said. “The main requirement is the structure. The tune has to have 64 measures or half that and then repeat.

Each dance has a certain structure and there’s a match between the structure of the music and the dancing.

That is one of the most fun things. If you are listening to the music, then it tells you what to do.”

The dance format is geometric with two lines.

“You could think of it as groups of two couples,” he explained. “Groups of four make little squares and create a line from the top of the hall to the bottom. One time through the music, two couples are dancing with each other and doing the set of figures that constitute the dance. When the round is finished, you dance with the next couple up the line or down the line. You will end up dancing with everyone by the end of the tune.”

“For the dance in Nevada City, since it is in town, we get people walking in off the street,” Engle said. “We have banner outside that says ‘Contra dancing tonight’. So they look in and give it a try.”

For Engle and Frankel, Contra dancing is a passion.

“We really love to dance and love the events,” Engel said. “It is just incredibly fun and really good exercise. It’s a chance to socialize and meet new people and make new friends.”

They like it so much that they always incorporate it into their travels.

“When we visited family on the East Coast in October, we went to three dances — one in Maine and two in Massachusetts, “ he said. “In both places, we saw people we know. We know people all over the country through Contra dancing.”

In fact, aficionados travel around the country to attend Contra dances.

“They go occasionally or they are retired and travel in RVs and go to as many dances as they can,” Engel said.

Dress is casual and comfortable

“It is quite vigorous as a form of exercise,” Engle said.

“You get hot and sweaty. Women like to wear skirts because they allow ventilation and it is fun when they twirl.

Even men may wear skirts.”

For beginners and those who want a refresher, there’s a 30-minute workshop before each dance begins.

“The caller teaches the rudimentary steps and shows a lot of the basic figures that are the units of the dance …,”

Reason why it’s not viable: You must create time every day to exercise and be healthy. It should be high on the priority list and part of your lifestyle. A good quality workout can be completed in under an hour if you learn how to exercise efficiently. Regular exercise has been proven to make you more productive at work as well as improving your mood and making you feel better overall.

You can work with a trainer or join a group exercise class to make your workouts productive and efficient so that they fit into your busy schedule.

Excuse No. 2: I don't know what to do.

Reason why it’s not viable: The most important part of exercising is moving and having fun even if it's as simple as going for a walk in the fresh air. Start simple and gradually increase the difficulty of your exercise routine. Remember to enjoy how it feels to move your body and make your muscles work. You don't want to suffer through every workout. At CACFit we have several trainers that can help you create an exercise routine specific to you and the goals that you'd like to achieve. Many people spend a considerable amount of money on eating out and entertainment, while working with a trainer or joining an exercise class, will be an invaluable way to make exercise your lifestyle. It also helps to join a community of like-minded individuals who will encourage you along the way.

Excuse No. 4: I don’t like exercising in a gym.

Reason why it’s not viable: I totally understand because when it comes to cardio I have to be out on the trails breathing in the fresh air. Reason why it’s not viable: Exercise can seem boring if you are forcing yourself to do workouts that you don’t enjoy doing. It’s important to discover the type of exercise that you enjoy so that you can continue doing it for the rest of your life. Everyone enjoys different things so for the individual that can be one-on-one training, small group or team training, classes, or outdoor workouts. At CACFit we have a wonderful social atmosphere and a lot of people enjoy working out with others in small or large group settings. You will quickly build a relationship with the gym that makes exercising fun and productive.

What else do you recommend to help keep someone on track or start a routine?

Excuse No. 1: Not enough time

Almost everyone I know is busy, and doesn’t have enough time in their day. It’s the default response when you ask someone how they are doing. This is the American standard of today. Even children are busy now with all of the extracurricular things required of them in their day. They come home as tired grownups. Kids, work, life, in general, none of us seem to have any time to do anything extra. Our business, is something that we have chosen. It’s something we collectively force one another to do, and leads to nothing but an unhealthy way of living. Who even has time to make dinner anymore … ?

We have to change the crazy, and change the way we look at exercise. Even changing the name of what we call that hour of our day at the gym can be a game-changer in itself. We all know the countless benefits of exercise … so DISCIPLINE is the key.

Don’t think, just do. It’s a part of the day, like getting up, making your bed and brushing your teeth.

It has to become a non-negotiable part of our daily routine. Time? We have it, we just haven’t learned to prioritize this part of our existence.

Excuse No. 2: Can’t afford it. Reason why it’s not viable:

you a $150 unlimited membership that will change your life forever. If we actually took a look at our monthly spends, I’m sure we would all be guilty of frivolous spends that don’t truly serve us. Fitness … that serves us.

Excuse No. 3: Have too many injuries and don’t want to get hurt. Reason why it’s not viable:

I’ve had 12 knee surgeries, hip surgery, foot surgery … the list goes on an on. Simply put: I was never taught to move correctly, and I was a scholar athlete at a Pac 10 school. My injuries have caused me to dig deep into what really caused them. Pealing back the layers of the onion and seeing what I did wrong, and how one thing led to another has created a deep relentless passion to help and teach people to move correctly. If I can prevent people from going through what I’ve gone through, then I win. Not moving, or avoiding doing something is not an option.

Learning how to do it properly and getting there one step at a time working through mobility restrictions, age, arthritics, etc., is what we simply must do. To become stagnant in life is the absolute worst thing we can do to our bodies and should only be an option at death. We have to get up and move. “Sitting, is now the new smoking.” That is how bad it is and there are so many of us that do this more than 85 percent of the 24 hours we have every day.

Excuse No. 4: Wait until after (insert big event, or milestone here) to start. Reason why it’s not viable:

What are you waiting for? Now is when you start. We might not get tomorrow.

Excuse No. 5: Afraid that I’m not fit enough to keep up and don’t want to hold anyone back. Reason why it’s not viable:

There is no such thing as fit enough. We all have starting points. We all have physical challenges on some level. I’ve yet to meet someone who has walked through my doors with absolutely nothing going on with them.

Most of us are overweight, and out of shape. We all just want to be a part of something bigger than us that keeps us coming back for more that adds to our lives, and encourages us to be better. There is no failure in anything unless you don’t make the attempt to try at all.

Taking the first step … just walking through the door or scheduling a time to meet with me even before trying a class, is the scariest thing anyone can do. That’s the big leap. I urge anyone to take it, and know that I’ll be right there on the other end ready to pick you up and cheer you on. There is no judging here. We just want to help people reach their potential. Think of me as your big exclamation point.

What else do you recommend to help keep someone on track or start a routine?

First of all, they have to want to go to the gym, so I do everything in my power to create a place that they can’t wait to come back to the next day. I correct anyone that refers to G-Theory CrossFit as “my” gym. I correct them by letting them know that this is their gym. Setting goals is one of the first things we do. Then the discipline, and trusting the process becomes second hand. Showing measurable results to people is important, and to personalize it is what sets what we do at G-Theory CrossFit apart from the rest. There isn’t one thing for everyone. Not one diet, not one work out, not one class. Everyone is unique, and we cater to each and every one of our unique family members. Encouragement to keep going is something none of us get enough of.

Better every day is all we can expect from anything we do in life. It takes 10,000 hours to become proficient in any one thing. We have to change the conversations we have with ourselves. Most of it is negative, and it does nothing to serve us.

Our bodies will do exactly what our mind tells it to do. It’s pretty powerful, and with a little direction, encouragement, and continual positive reinforcement, we can change the self-talk, and in turn, change our lives. The body transformations are the bonus. Community is everything when it comes to staying healthy and fit. We all want to feel like we aren’t alone and we want to surround ourselves in an environment that feels safe to show up exactly how we are. At G-Theory CrossFit, I know every member and what their challenges are. I’m more than just a coach, I’m a friend, a counselor, a mentor, a life coach. I’m a safe person who sees the potential in people and helps them see it again and then I just throw a little fertilizer on it every day and watch my people grow. We celebrate every win no matter how big or small. For some, it’s celebrating the fact that they showed up at all.

Answer: Really, what are you binge watching on Netflix this week? How much time have you scheduled to be sick and broken due to lack of consistent exercise?

Excuse No. 2: I'm too old to do that.

Asnwer: Actually, our oldest student started training at 72 and earned her black belt in taekwondo at 75. You are never too old to take charge of your own wellness. We appreciate older students because they appreciate regaining fitness levels the young take for granted.

Excuse No. 3: I'm too broken to do that.

Answer: Now you've hit our specialty. Many students come to us after physical therapy to continue their recovery. Not one of our adults starts with a perfectly fit body. All of their bodies have acquired the quirks that life and age pile on. In all of our adults we have significantly increased their range of motion, balance, strength, and endurance.

Excuse No. 4: I stopped signing up for new fitness classes because I never go.

Answer: You need a class that is fun and engaging enough to distract you from the workout. You need a training program that evolves every few months to keep you challenged and improving. You need a caring instructor to hold you accountable. And you need a group of positive, fitness, minded classmates who encourage each other.

Excuse No. 5: I can't afford it.

Answer: Preventing is always cheaper than treating.

The most expensive fitness program is still way cheaper than doctors, medicine, physical therapy, mental health therapy, hospitals, and days off work. How can you not afford to prevent your own physical downfall?

What else do you recommend to help keep someone on track or start a routine?

Recruit a friend or loved one to be your exercise buddy, you're much more likely to go and enjoy with a buddy. Go to a scheduled class, a scheduled time will become part of your weekly routine. Choose an exercise that will entertain you with fun new things to experience, boring workouts aren't looked forward to.

Their is no such thing as the perfect age, fitness level, body, or time to start getting fit. You know for certain that if you do nothing you will get worse every day.

Excuse No. 3: Lazy, “I don’t feel like it”

Excuse No. 1: Time. “I don’t have enough time in the day”

Reason why it’s not viable: Fitness begins on the inside, so as long as you’re in your center you can shift as rapidly as you wish. A few minutes a day is all it takes once we are aware.

Excuse No. 2: Money

Reason why it’s not viable: What we choose to do with our money is a choice we prioritize. When will be learn to budget money for our health prevention rather than health problems?

Reason why it’s not viable: Then don’t. Why are you complaining? If you want to, then get up and go.No but seriously, taking time to relax is just as important as movement. Enlighten tri-fecta blends core, stretch and balance, building smooth beautiful muscles and your body inside and out, leaves feeling good.

Excuse No. 4: Discouraged or depressed

Reason why it’s not viable: See answer No. 3. Sounds like you need a class to change your perspective. Try classes all over the towns, til you find your favorite, and remember they’re all great but as people are as unique as each instructor you’ve got to find the place that resonates for you. To each his own. But step outside and breath helps this one, if it’s hard to make it out the door.

(And I’ve been there, I know!)

Excuse #5: Don’t allow myself the space

Reason why it’s not viable: Give yourself freedom.

Sometimes I also don’t stop and allow myself room for my needs and desires from an old habit of past lives.

That’s my excuse anyway! Actually parents can sacrifice so much they forget self care so for this person it is wise to sit down and relax. Allow yourself the freedom to provide what you deserve.

What else do you recommend to help keep someone on track or start a routine?

That’s different from person to person, but maybe the biggest thing to release is shame. Letting go of all fear of judgement and shame is vital! Once we have done this and love and accept ourselves as we are, fitness will ALWAYS be stellar on the inside.

VEG OUT Origins of an organic favorite in downtown Auburn

STORY BY GLORIA YOUNG When Roy and Tomi Cunningham decided to open a restaurant in Auburn, they started by mulling over some questions.

“What did we want, where did want to go to eat, what sort of things did we like to eat and how did we eat at home,” Roy said.

Organic was the most important thing, they decided.

From there, vegetarian and vegan were a natural fit.

As it turned out, a lot of people shared that vision. The Cunninghams’ Nectar Cafe on Central Square in Auburn recently celebrated its five-year anniversary.

“I am surprised that we keep growing the way we are growing and the amount of following we have (both in) and outside of Auburn,” Cunningham said. “We get some 900 inquires on Yelp in peak months. We get a lot of Bay Area traffic looking for vegetarian or vegan. Everything on our menu can be made vegan. It is a fast growing food segment. Cutting out meats is an important part of that.”

He attributes the eatery’s popularity to the “super healthy and delicious fare.”

“Every chef we’ve had has been trained and knows

As testament to that, Nectar Cafe took second place in Sacramento’s Vegan Chef’s Challenge.

One of Cunningham’s favorites on the menu is the Beyond Burger.

“It tastes and feels like meat,” Cunningham said. “It’s like having a meat burger. It is unbelievable. It’s a non GMO, non soy product that is primarily a pea protein. It is incredible.”

The eatery is also known for its soups, which are made from scratch and are vegan and gluten free.

“They are a multi-level process with tons of ingredients

and tons of steps,” General Manager Katie Schleder said. "We always have a soup of the day and rotate that on an every-other-day basis. Coconut curry lentil soup (is a favorite). When we have it on the menu, people will drive from out of town to get it.”

Buffalo cauliflower wings, added in the past year, are another big success.

“It’s cauliflower florets tossed in a spicy buffalo sauce,” she said. “It is a vegan hot sauce. (The dish) is served with a side of vegan ranch dressing that we make in-house as well.”

Another favorite is the spicy buffalo cauliflower taco.

For dessert lovers, there’s made-from-scratch, cashew-based cheesecake.

The food has had an impact on Schleder, who joined the restaurant three years ago as a part-time employee and has been general manager for a year.

“Before working there, I had never been familiar with vegan food and the lifestyle,” she said. “But since I’ve been

working there, I have really embraced it.

That’s the diet I follow for myself as well as my family. It’s a lifestyle choice for all of us.”

As they look to the future, the Cunninghams are boosting the menu with hardier meals, to give customers something more satisfying at night.

“We’ve added enchiladas and lasagnas,” Roy said. “And we’re adding the item that won second place in the Sacramento Vegan Chef Challenge — shepherd’s pie.”

Toy and Tomi Cunningham had careers in the Bay Area before moving to the foothills. Now they devote full time to the restaurant.

“I think my favorite part is that we bring together people who are like-minded about being healthy — people who want a healthy meal and are concerned about how they eat ” he said. “Every day I’m there, someone comes up to me and thanks me for opening the restaurant. If someone has a gluten or dairy issue, they can order everything on the menu. … People have been faithful because of that.”

Who doesn’t love a good story? Binge watch storytellers from across the area for tall tales and whoppers of lines at the annual Auburn Winter Storytelling Festival.

The all-day event begins for the kiddos with a children’s storytelling hour and music. Ed Lewis and Joan McCammon lead this portion of the event keeping little ones entertained with songs, stories and maybe even a parade.

Want to tell your own story? A workshop, Story Play, instructed by Joan Stockbridge will share tips and techniques to make a tale come alive.

After the workshop, some may be ready for a go. There will be an open mictype story telling session. Anyone in the audience can tell a story. The narrative must be no more than five minutes, family friendly and told with no notes or props.

With stories so comes exaggeration of truth or just an out right falsehood.

The Storytelling Festival has this too. A Liar’s Contest has storytellers giving tall tales and they’re laying it on thick. See who’s pants are on fire during this event highlight. Rules are the same in that fables should be five-minutes or less, family friendly and no notes or props.

The entire day is free to the public and made possible by sponsors that include the Auburn Arts Commission and the Arts Council of Placer County.

This is the fourth Auburn Winter Storytelling Festival presented by the Foothill Storytelling Guild, an eclectic group of foothill people interested in keeping alive the art of telling stories aloud. AWSF is planned and executed by dozens of volunteers.

Featured storytellers Angela James

A Sacramento poet and storyteller who is a true performance artist, weaving music, movement, and storytelling into a fusion presentation that appeals to all audiences. James is a certified multi-disciplined teaching artist with the Sacramento Metropolitan Arts Commission.

She is a judge for the Poetry Out Loud competition and has worked to introduce poetry and storytelling in after-school programs.

Mary McGrath

Oracle Award winner from the National Storytelling Network for the Pacific Region in July. For the past 40 years, McGrath has told stories in schools, libraries, museums and has performed with the Sacramento Symphony, at the Crocker Art Museum and at festivals in Canada, Ireland, and Scandinavia. She has produced festivals for UNICEF and Project Heifer.

Bill Ratner

A nine-time winner of The Moth Story Slams and two-time winner of Best of Hollywood Fringe Festival Extension for Solo Performance and a published author. Ratner has appeared on stage at the National Storytelling Festival, Portland Storytelling Festival, Timpanogos Storytelling Conference, and his spoken word performances can be heard on National Public Radio stations.

Joan Stockbridge

Founder of the Foothill Storytelling Guild in 2002 to bring together people interested in storytelling. She is the Oracle Award winner of the National Storytelling Network for the Pacific Region in 2016. For seventeen years, she has volunteered to work with women who are at risk and are in substance abuse recovery programs in Placer County and the Sacramento region.

Mike Tomson

Experience teaching, presenting, coaching, and telling in a number of venues. Tomson captivates his audiences with life stories and indigenous lore. Raised in an oral island tradition, he remembers histories; carved in the rafters and shared in the fire light.

Kirk Waller

A lifelong lover of story, literature, and the performing arts. Waller has been awarded the J.J. Reneaux Emerging Artist Grant by the National Storytelling Network. His latest CD “But Why? Stories, Music, Songs” was awarded Parent’s Choice Foundation GOLD designation.

Ed Lewis

A retired early childhood professor who has taught storytelling classes for aspiring teachers. He produces storytelling events in Davis area including Tellebration, The Storytelling Café, and the Davis Storytelling Extravaganza. A teller of tall tales he won the award for “Best Liar” in Sacramento and “Biggest Liar” in Auburn.

Joan McCammon

Joan McCammon began telling stories Chautauqua style in Santa Clarita 20 years ago by portraying historical figures in the American Association of University Women’s Women of History school program. She has been a featured Children’s Story Hour teller for the past four years. She was a featured teller in the evening Tellers Showcase at AWSF in 2017.

Shrimp Scampi RECIPE BY DEIRDRE (SPARLING) ROUMAGE

Serves 8 people

Ingredients:

1 ½ pounds spaghetti noodles 2 ½ pounds peeled and deveined raw shrimp ½ cup olive oil ½ cup salted butter ¼ cup fresh lemon juice ¼ teaspoon lemon zest ¼ cup fresh parsley, roughly chopped

Directions:

1/8 teaspoon red pepper flakes 3 large garlic cloves, minced ¼ cup pasta water 1 tablespoon cornstarch ¼ cup white wine (something you would enjoy drinking) ¼ cup chicken stock

Bring large pot of water to a boil, add 3 teaspoons of salt. Add noodles and let cook for about 8 to 10 minutes leaving somewhat al dente. Reserve ¼ cup of pasta water then drain the noodles and set aside.

In a large sauté pan over medium heat, combine the butter, olive oil, cornstarch, lemon juice, lemon zest, garlic, red pepper flakes and parsley. Stir constantly for about 2 minutes. Add wine, pasta water and chicken stock and cook for 7 to 10 minutes reducing heat to medium-low. Add shrimp to pan and toss to cook evenly for about 5 minutes or until light pink in color. Turn heat off and let stand for about 10 minutes. Add pasta and toss gently until evenly coated.

Optionally, you may top with fresh Parmesan shavings and garnish with parsley. Serve with a crusty piece of French bread and enjoy.
