W

hile it came a little later than some seasons, Mother Nature’s Christmas gift to the Sierra mountains was a pretty big package and well worth the wait. With well-producing storms bringing plenty of white stuff to the mountains over the recent holidays, it is prime time to grab the skis and snowboards and head up Highway 50 toward a trio of quality resorts.

The South Lake Tahoe region is home to several world-class ski resorts and acres of backcountry trails, so you can glide down groomed slopes or take a cross-country tour of the winter woods. One of the unique attributes that Lake Tahoe offers skiers that many resort towns do not is the simple fact, when the day of skiing comes to an end, there is still plenty to do with a night on the town, including fine dining, entertainment and more.

This month, The Entertainer magazine brings you the first in several months of articles to help you explore Tahoe, a year-round playground just miles up the highway. Want to traverse Heavenly Mountain like a pro?

COURTESY ALEX SILGALIS, TAHOE SOUTH | PHOTOS ARE COURTESY TO THE ENTERTAINER ake Tahoe’s Heavenly Mountain Resort is big. In fact, with a vertical of over 3,500 feet spanning 4,800-plus acres, it’s not surprising that it’s one of the top 10 largest resorts in North America.

With so much acreage, Heavenly has something for everyone. From well-spaced trees, a multitude of easy-going cut ski runs, two canyon areas with challenging chutes (Mott and Killebrew) and one true alpine bowl (Milky Way), you’ll never say that Heavenly is a boring place. For first-timers though, visiting this hulking brute of a resort can be downright frustrating. Don’t worry, we’re to help.

With a little bit of planning and guidance, you’ll be able to traverse this mountain like a pro, reducing the stress and increasing the fun. Here’s a few tips to get you started.

SKYLINE (TOP OF SKY EXPRESS TO DIPPER) So, you’ve skied all the terrain around Sky and Canyon Express lifts and want to check out the Nevada side of the mountain. To do this, you’ll need to take the Skyline trail from the summit of the Sky chairlift. Be forewarned … keep your velocity and don’t get distracted by the views of the lake to your left. At over a mile in length, you need to pass the entrance to the Pinnacles and still keep going forward. You know you’ve made it once you

see the Dipper chairlift, otherwise, keep that acceleration up.

Photo LocalFreshies.com Comet and Dipper offer skiers and snowboarders fantastic views of the Carson Valley below as well as great groomers to lay out some turns. If you do make it to this side, don’t miss the Olympic Downhill trail.

Stretching over 5.5 miles and covering nearly 2,000 vertical feet, it’s the perfect option for those that want to carve to their heart’s content. To get to it, you’ll need to take the Comet trail (off of the aptly named chairlift) and blast your way onto Cross-over. Do not slow down, otherwise, you’ll be walking or skating the entire length until you get to the top of $100 saddle. From here, you’ll schuss your way to the bottom of Olympic.

PEPI’S (TOP OF STAGECOACH TO DIPPER) From the top of Olympic Express, take a right and proceed onto the Olympic Downhill trail. This run will get your legs burning as you wind your way all the way down to the base of Stagecoach Express.

For those that want to get back to another part of the mountain, the traverse from the top of Stagecoach via Pepi’s is a challenging one. The easier of the two options is to ski

to Upper North Bowl and take Olympic Express up. From there, make a left onto Von Schmidt’s which will let you drop back into the Dipper/Comet base area easily. The second and more direct route would be to take Pepi’s from the top of Stagecoach. This is another flat route, meaning you need to keep your speed up or you might end up walking again.

CALIFORNIA TRAIL (TOP OF DIPPER TO SKY) After so much skiing and snowboarding, your legs are done for the day. The problem is you’re still in the Nevada area. From the top of Dipper, you’ll want to head skier’s left onto the California trail. Keep up your speed until you pass the Tamarack chairlift overhead. From there, you can let yourself relax and link some turns. As you ski past the Tamarack/Gondola area, take a tight left turn. You’ll need to make sure you keep the momentum going. This long traverse can be deceptive, leading to you not making it to the bottom of Sky. Being the largest and highest ski area in Lake Tahoe, Heavenly Mountain can be a challenge to navigate. Instead of getting frustrated, be sure that you have a plan. OSTERIA MOTO EATERY NAMED AFTER LOVE OF MOTORCYCLES

BY RACHEL ZIRIN | PHOTOS BY BILL SULLIVAN If you are looking for a dining experience with a warm casual energy, look no further — Osteria Moto recently opened in December in the El Dorado Hills Town Center.

After having success in the Italian restaurant business in Los Angeles, Owner Stephen Sakulsky ventured up to El Dorado Hills when a friend had been bugging him to check it out for nearly six years. Finally the timing was right for him and his young family. He said he enjoyed the clean air, no traffic, good schools and normal people.

“It clicked and made perfect sense to move my young family up here and do what we have done in Los Angeles, up here,” Sakulsky said. “We are an Italian-California restaurant, like Calitalian.

We look at it as grass-roots county Italian food. We utilize our gift of a backyard in Northern California and stay true to our values of using local and quality ingredients.”

Sakulsky said at Osteria Moto, you will not find a Cisco truck out back. Everything comes from local farms including Apple Hill, Placerville, Chico, Amador, Rancho Cordova and more.

Osteria Moto has a deep meaning with Sakulsky. Osteria is an informal Italian eating establishment, which is based on regulars and family. Moto is for motorcycle, which Sakulsky has been riding for decades.

“We ride them, race them and wreck them. We love the culture of motorcycles and what they represent,” he said. “It’s the camaraderie of being on bikes together with friends and sharing that experience.

We want that same experience to be shared around our tables.”

In Osteria Moto, the restaurant is filled with natural light in an open concept.

“The previous restaurant was dark and didn’t have a flow of energy, so we gutted the space and made it open, WHERE: 4364 TOWN CENTER BLVD., bringing in as much natural light as #124, EL DORADO HILLS possible. It’s not just about the food, but the service, the design and everything to be a part of a bigger package experience of hospitality.”

Sakulsky said the restaurant was designed by Brendan Ravenhill, using alder wood and limestone. Alder is typically used in cabinet and furniture framing, and it is usually never put on the outside, but Sakulsky said it keeps its form for a long time. Alder and limestone are said to age better with time and use.

“Hopefully like our restaurant is Los Angeles, as time goes on, 10 years down, it will look better as it gets some use to it,” he said.

At Osteria Moto, everything is made fresh daily, in house.

“All of our pastas are made in-house in our pasta room. Our bread is baked daily in our dough room,” Sakulsky said. “Some popular items include our CONTINUED ON PAGE 16

“Just like the kitchen, the wine dictates certain values of local and representing people who work hard. We have a dedication to wine makers that aren’t manipulating anything in the wine —not adding things, not over-using oak, no chemicals or sulfates,” Sakulsky said.

“Our wine list comes from the entire west coast of America from Baja to Washington and all of Italy. We have off-the-beaten-path varietals and true varietals, not so many blends. A wine list like this doesn’t exist in the region. We’re sort of pushing the envelope.”

When asked what his favorite thing about his restaurant was, Sakulsky said seeing his vision come to light.

“I also love seeing people walk out happy. The other night, someone said it was the best meal they had since they can remember. That’s our job and it feels good to hear things like that,” he said. “I love the energy of a full restaurant — it’s the dining experience I came here to do.”

One thing Sakulsky wanted to note is how proud of his staff he is.

“I’m really proud of my staff. They’re coming into something completely new from our food to level of hospitality and service,” he said.

“They have done an amazing job, and I’m very proud.”

WINTER BREWFEST 2018 KICKSTARTING WINTER’S BEER WEEK IN FOLSOM STORY AND PHOTOS BY BILL SULLIVAN Last year, its debut it was a hopping success. It’s known as Folsom Beer Week, and it’s sure to brew up plenty of fun and treat the winter blues with plenty of local craft brews.

The last week of January has since been declared Folsom Beer Week by the growing number of brew-loving Folsomites. Once again in 2019, to kick off the city-wide celebration will be the “Tap into a Cold One” brew fest from 4 to 7 p.m. on Jan. 26.

Presented by the Greater Folsom Partnership, the event will feature craft brews from more than 40 breweries along with a variety of bites from local restaurants. It’s sure to be bigger and even better than last year, an event that saw more people and was sold out.

“Our first winter brew fest was a huge success with more than 1,500 attendees. Thanks to our sponsors and partners, the event featured a great blend of local and regional breweries and crowd favorites,” said Mary Ann McAlea, senior vice president of the Great Folsom Partnership and the Folsom Chamber of Commerce.

Following the brew fest, Folsom Beer Week will continue in the days after. The period will highlight the growing craft beer culture and showcase Folsom restaurants and pubs as well as the incredible variety of local craft brews. Many will be hosting their own fun events to celebrate the craft beer scene that is growing in Folsom.

“Folsom Beer Week is one of four such celebrations in the region,” said Joe Gagliardi, CEO of the Greater Folsom Partnership. “This is the perfect time of year for Folsom to check out a fun winter event and sample their favorite brew. Plus, it’s a great opportunity for the brewers to introduce their latest craft creation.”

Last year, Gagliardi credited the success of the longtime Tap Folsom event illustrating the popularity of craft beers in Folsom and prompted the creation of a beer week in Folsom.

Tickets to the event start at $50. Early entry admission tickets are $55 or two for $100, so bring a date and save $5 each.

Early entry tickets are limited. This event not only showcases local craft beer, but also supports local causes as a portion of the proceeds benefit the Folsom Police Foundation and other charitable organizations.

Throughout the last four years, Folsom has seen great growth when it comes to local tap houses opening in the city.

While the community is known for its great trails, schools

and the legend of Johnny Cash, it’s also become known for great brews. The latest tap houses to open their doors are Out of Bounds Brewery and Red Bus Brewing Company, both of which are seeing great success and popularity in the city.

After last year’s event came to a close, attendees were talking about it for days to come and already looking forward to 2019.

“I had a great time; I was very impressed with many vendors that were there and all the restaurants that were there. Everyone was really having a great time,” said Sam Lee, a local resident. “This was so well-organized; they had a ton of great volunteers for the event. It’s great to see Folsom have an event like this that can bring in the whole community like they did.”

AGAPE ECO NAIL SALON GOES THE ‘EXTRA MILE’ TO ENSURE CLEAN ENVIRONMENT

A

fter growing up around the traditional nail salon and industry, Nina Tran chose to live a healthier lifestyle.

In 2015, she decided to open a clean and safe nail salon while keeping things simple — offering organic manicures and pedicures at Agape Eco Nail Salon.

Tran’s mother had been in the nail industry for more than 20 years when she realized her mother was working in a toxic environment eight to nine hours a day.

“I looked at the environment my mom was working in and it was so toxic. She was slowly getting poisoned every day, eight to nine hours in this little space,” she said. “I thought there had to be a better and healthier solution to all of this.”

Tran’s background is in building businesses and clientele, turning it around and selling it. She took her business experience and much research on the nail industry and found that she can make it better.

Together with Tina Phan and Bethany Nguyen, the three business partners opened Agape in Elk Grove in 2015. When CONTINUED ON PAGE 24

looking to expand, plans fell through, and they had to sell their first location.

Tran came to Folsom and fell in love with the area.

“I didn’t even think I was going to find a spot here,” she said. “We opened on Nov. 1.”

Meaning unconditional love, Tran said, Agape was inspired by her mother.

“Mothers love you unconditionally, and we wanted to be able to give that to our clients too. We are a non-toxic nail salon and only provide a clean and safe environment for our technicians and the community,” Tran said. “We don’t carry mainstream brands; we only carry brands that are clean. We make our body butters and scrubs in house with 100 percent organic products.”

One of the main issues Tran mentioned about traditional nail salons is the sanitation.

“The biggest thing is as those jet spas became really popular, the number of clients that has infections increased. It takes 20 minutes to properly clean a jet spa between clients.

How often do you go to get a pedicure and someone gets up from the chair, and you immediately sit down in it,” she said. “Whatever the previous client had, the chances of you contracting that are so much higher — God forbid your skin gets nicked.”

At Agape, clients have the option of an Agape Mani/Pedi or the Luxurious.

“We do our pedicures in 100 percent copper bowels,

which have anti-microbial properties. We line them and then sanitize them in the back room,” Tran said. “I took what I learned in the food industry with strict sanitation regulations, and I implemented them. I made it a really simple process.”

The Agape Mani/Pedi includes the normal cut, buff and paint, as well as a hot stone massage and hot towel service.

All clients also get an herbal neck warmer and the option to sip on organic tea or water.

The Luxurious Mani/Pedi includes everything in the Agape, as well as an extra hot stone massage, paraffin wax and a detox mask.

Tran said while their prices are on the higher side for nail salons, it’s because they make up for it in service and organic products.

“We go the extra mile to make sure our clients and technicians are in a safe and clean environment,” she said. “I’m very passionate about providing a clean and relaxing space for the community.”

When asked what her favorite thing about her business was, she said the people.

“I love the people and their stories — they inspire me.

I love contributing to people’s lives in a positive way,” she said. “It’s a privilege and an honor to be able to have your own business and sometime decisions are made solely on money. If you do right by your clients and your employees, the money will come. Whatever it is that you do, if you follow your true intentions, it’ll all work out. Have faith.” ✶

Hair artistry with a twist

fter seven years of success in Alameda, Aubrey Cambra and Tami Quan decided to expand their hair salon to Folsom to help more people feel amazing about their hair.

Twist Salon caters to all hair textures and types, but specializes in curls.

“As a stylist, when you go through beauty school, you don’t learn anything about curly hair. I think there was a paragraph in a book and it didn’t even teach you how to cut it,” Cambra said. “They teach you to blow it out, straighten it and then cut it. It makes no sense if someone wears their hair curly or wavy. Not everyone has stick-straight hair. About 87 percent of the population has texture in their hair.”

After obtaining her license, Cambra worked at a few salons, but still didn’t feel like people cut curly hair the right way, and she knew there had to be something out there on how.

Eight years ago, Cambra met Quan and Quan told her that if she wanted

to work together, she needed to learn to cut curly hair.

“She sent me to a Deva class where I learned the Deva Method,” Cambra said.

“It was started in 2008 by Lorraine Massey in New York. She started the Deva line which was three products and has built

over the course of 10 years. Now they have multiple products.”

Cambra said along with the product line, Massey also created an education system to teach stylists how to cut curly hair.

“The Deva method teaches the waterfall cut where the goal is to make curls look like they’re starting from the top of your head and work their way down without looking steppy or like there are a ton of gaps,” she said. “When you cut curly hair straight or wet, you’ll get gaps. Curly hair grows out and then down because it has to form a full curl first.”

Cambra then took it a step further and went to New York to get an advanced training.

“With curls, they are strong, but very delicate. You need to keep the integrity of the curl intact as much as possible. We don’t thin out, use razors or point cut,” she said. “If you point cut or thin out curly hair, you basically just made two very weak curls, and they become frizzy and keep splitting. Curly hair is cut very blunt to keep the curl strong.”

While Twist Salon uses the foundation of the Deva Method, the stylists have moved from it as there are numerous ways to cut curly hair.

“For a typical cut when a client comes in, we will consult with them to find out what shape they are looking for, seeing if they have any ‘goal’ pictures and if there is anything they want to avoid. We want our clients to tell us what works for them and what doesn’t. They are the ones wearing their hair every day, and they know their hair best,” Cambra said.

Next, Cambra will cut her clients’ hair dry, and then take them to the wash bowel where she explains what products she is using, how much to use and when to use them.

“After we scrunch in some product, I will either defuse the client’s hair or air dry it, depending on how the client usually dries their hair,” she said. “Lastly, I do some finishing work and then talk to them about refreshing. Curly hair shouldn’t have to be washed every day — maybe two to three times at most. We teach

our clients which products to use to keep their hair going.”

Cambra recommends her clients come in for a trim every six to eight weeks to keep the hair feeling and looking good.

“I want to make my clients feel amazing about their hair. I want them to walk out that door feeling amazing and wearing their hair the way they do every day in their natural beauty,” she said. “There are not a lot of salons that specialize in curly and wavy hair. While we welcome everyone with all types of hair and textures, 85 to 90 percent of our clients are curly.”

When asked what her favorite part of her job was, Cambra said the transformation.

“I absolutely love the look on my clients’ face when they didn’t realize how much curl they had and how much I could bring out in their hair. They’re just like, ‘Oh my gosh! What did you do?

How did you do that? I have never seen my hair this curly!’ That’s an amazing feeling,” she said. “I think that’s why stylists become stylists — to make people feel amazing about themselves and feel that shock and awe. That’s the best part.”

Cambra said she also loves that she gets to work on different hair every single day.

“Each cut is designed and customized for your curls. Sometimes clients have five different textures in their hair, so I am doing five different methods,” she said. “I cut different hair every day. I never cut someone’s hair the same as someone else. That’s the beauty of my job because I get to do something fun and different every single day.”

Cambra said if you’re willing to do the switch over from straightening to wearing it curly and natural, it can be a process, but as long as you’re patient, you will get amazing results.

“You don’t have to fight with your hair. I know the daily struggle that people go through,” she said. “Our identity is a lot in our hair and I want people to know that we want to take everything into account and consideration. You can wear your hair however you want to wear it, and we can help you get there.” ✶

fter a long day, many of us enjoy the accompaniment of a glass of wine with a nice dinner.

The distinct beverage always seems to make an appearance at every major holiday celebration as well. Wine, through the ages has become to many people, the center of happiness. It can bring a smile to our faces and a deep sense of relaxation to our minds. Many health studies over the years have offered undeniable proof that drinking wine in moderate amounts, can actually be good for your overall physical health.

Putting the word “moderation” when it comes to drinking wine, into perspective is important when considering its health benefits. Most medical experts consider a proper glass of wine to be approximately five ounces. So when “drinking in moderation” is referenced by physicians, one five-ounce glass a day for women, and two for men is what is “clinically” considered a healthy amount.

In the battle to combat free radicals that cause such devastating auto immune disorders as cancer, wine has demonstrated its ability to aggressively stand up against them. Surprisingly enough, white wine tends to have even more antioxidants than red wine. One particular study done by the University of Barcelona found that the phenols in white wine had equal, if not higher levels of antioxidants than red wine which is good news for those who prefer the lighter whiter side of wines.

Moderate wine consumption has also been known to prevent infections as well as protect the overall immune system. For bone health benefits, wine contains calcium, and you can automatically increase your daily calcium intake by sipping on a glass.

Wine is also particularly good in the prevention of blood clotting. The leading cause of strokes is blood clots. Wine is a natural blood thinner and thus is effective in breaking up the clots, particularly in women.

Moderate wine consumption has been found to lower cholesterol in many individuals. In some cases, the properties in wine have even demonstrated its ability to reduce the risk of heart disease. It has been discovered that the tannins found in red wine contain properties known as procyanidins.

Procyanidins tend to neutralize the free radicals that contribute to the development of heart disease.

According to WebMD, a study done at the Israel Institute of Technology, Haifa looked at the effects of red wine on the health of blood vessels. Researchers found that after people had consumed wine for 21 consecutive days, the blood vessel cell health was enhanced overall, with improved blood flow throughout the body.

More recent research has shown drinking a glass of wine a day improves overall brain function.

Studies have demonstrated that the chemicals in red wine prevent the brains neurons from dying off.

Wow, I guess you could say that’s a lot of great health benefits found in a little glass of fermented grapes. January is a time for reflection on another year behind us and resolutions for the year ahead. As small business owners, we go through the same process as individuals in making our resolutions for the New Year. We look back at what worked and what didn’t. We make plans and decide on changes which are important steps in growth and renewal as a business. All to help build our brand and our relationships with the community and those we do business with us.

As each of you do, we also take stock in our overall health, our image, our relationships and projects. Most of us take this first part of the year to refresh our stores with a good overall cleaning. Sometimes touching up faded facades, polishing interiors and bringing in fresh products and experiences for our customers. We want the new year to start on trend. This is the month merchants go to “market” in search of all the new products we hope you will love because we have spent the year listening to what matters to you and is needed in your lives.

So, when you make those New Year’s resolutions, we hope as businesses in the Historic District we can help. If it is a new image you are after our salons and boutiques can give you the new look you crave. If getting fit or healthy is your goal, visit one of our workout spots or lifestyle gurus for a boost. Those who would like to take up a new hobby can attend one of the many painting or cooking classes offered. Perhaps spending more time with family and friends is your desire by attending an event or doing an activity in the District. Maybe you want to do more in the community and volunteer. Becoming a docent at one of the many museums and learning a bit of history may be key. Whatever this new year may bring for you we hope you will let us be a part of it.

CONTACT: ZINFANDELEXPERIENCE.COM For Zinfandel lovers, this year ZinEx is shaping up to be another great event, with participation from some fabulous Amador County wineries including: Amador Cellars, Bella Grace Vineyards, Deaver Vineyards, Easton Winery, Renwood Winery, Scott Harvey Wines and Terra d’Oro Winery.

Unlike years past where the ZAP festival was packed with attendance in the thousands, ZinEx offers a more intimate experience where attendees can meet the winemakers and really get to know the wines.

ZinEx (think Zin experience) consists of a three-day event taking place Jan. 17 through 19, with several trade and public events. The festivities kick off on Thursday with a trade seminar and tasting focusing on the advancement of Zinfandel in restaurants, followed by the Opening Night Dinner at One Market Restaurant where award-winning chef Mark Dommen will showcase his latest American cuisine. On Friday, ZAP hosts a presentation and tasting featuring the personalities and stories behind California Zinfandel, a winemaker’s auction, and dinner at the Palace Hotel. The winemaker auction and dinner will feature rare wines and Great Gatsby is the theme of this festive evening.

Saturday is the Grand Tasting at Pier 27 and an all-day pass gives attendees the opportunity to taste reserve, limited production wines that are not available to taste anywhere else during the three-day event. This ultimate tasting experience includes delectable samples from restaurants and winery chefs, along with the opportunity to network and socialize with friends. The afternoon tasting highlights over 500 different wines poured by 120 Zinfandel producers. Throughout the tasting, attendees will have the opportunity to meet the legends who have made what Zinfandel is today and who are carrying Zinfandel into the future.

Also, during the Grand Tasting is the Meet the Winemaker Roundtables, which is basically like speed dating for Zinfandel lovers. With only a handful of people seated around a table, the winemaker will share stories on how their wine is made and attendees are encouraged to participate by asking questions. A few of the savory bites attendees will have the opportunity to sample include Smoked Duck Parfait, Vietnamese Beef Tartare, Lamb Merguez bites, and Smoked Pork Rillette Crostini, just name a few examples of the gourmet food offerings. It is recommend to come to this event with an appetite.

CYCLOCROSS growing locally

C

yclocross is the fastest growing sport in America, apparently, and if you live in the Sacramento/Folsom area you won’t have failed to notice that this area is a hotbed of cyclocross racing and events. But what on earth is cyclocross? Is it mountain biking on road bikes or just an excuse to get out into the mud? Possibly a little bit of both. With the cyclocross (CX) season underway, here is Folsom Bike’s definitive beginner’s guide to all things CX.

Just like in modern races, cyclists had to negotiate obstacles and areas of the course that were simply too chewed up to ride and so they had to carry their bikes. Thus cyclocross was born and it has remained a staple of cycling in northern Europe and more recently the world over. Cyclocross races occur on a set circuit over a specific length of time, with races lasting from 30 minutes to an hour at the pro level.

WHAT IS CYCLOCROSS? Originally descended from road cycling, cyclocross came about as a winter alternative for riders in Northern Europe around the turn of the 20th century. This is in the days before paved roads, when gravel or dirt tracks turned into muddy swamps in the wet winter months. There was no turbo trainers or Zwift so riders had to venture out into the

They also accommodate wider knobby tires for wet, sandy and generally grim conditions. Gearing is often more forgiving than that found on a road bike with bigger gears for pedaling up steeper climbs.

Other than the bike, all the other gear required is more or less the same as to what you would require for road cycling with the exception of shoes. Cyclocross riders use mountain bike or CX-specific shoes with a hardy tread. This provides the grip required for running and negotiating obstacles.

SO HOW DO I TRAIN? Cyclocross is a perfect for developing both your bike handling skills and your cardiovascular fitness.

Another key skill is the ability to quickly get on and off your bike. The easiest way to practice this is to find a park and practice riding at speed, quickly dismounting, carrying your bike, and then remounting. The constant underlying danger for male riders is crushing certain delicate areas while remounting, so getting this skill down is essential.

Check out GCN’s guide to CX mounting like a pro: Apart from getting on and off your bike, practice your bike handling skills on technical trails and a variety of surfaces (gravel, sand, mud, grass, etc.), and also practice high-intensity efforts. If you decide to race cyclocross you’ll have to get used to pedaling as hard as you can for the entirety of the race.

SO WHERE DO I SIGN UP? If you live in the Sacramento area you are in for a treat! With Folsom Rodeocross, the Sacramento Cyclocross Series and the West Sacramento Cyclocross Grand Prix you are spoiled for choice when it comes to racing.

Rodeocross runs most Wednesday nights through September and October, while the Sacramento Cyclocross Series runs over eight races from October through December.

One of the biggest cycling events in the Sacramento area; the West Sacramento Cyclocross Grand Prix is a UCI event. This means that in the pro races, some of the best CX riders in the world will be lining up. The West Sacramento Cyclocross Grand Prix is Sept. 30 and Oct. 1.

FUN AND COMMUNITY The reason why so many people love CX is the community that surrounds it. Races often have a party atmosphere and the community is very inclusive and doesn’t take itself too seriously. If you head down to Rodeocross, you’ll likely get a mid-race beer handout.

orscht is one of those dishes that comes with a suitcase full of memories. Mine has me hurrying off to my grandparents’ first-floor walk-up after school, sitting down to a hot meal of klupselach (turkey meatballs) and mashed potatoes, drinking ice-cold borscht with a spoon so I could scoop out the remaining beet at the bottom of the glass. I can still hear the clinking of that spoon as I chase those last stubborn pieces up the wall of the glass toward my mouth. Borscht always came in a jar for me, labeled with the green and orange “Manischewitz” logo on the side. It was cold, flaming magenta, and never left the table. Some Southerners won’t sit down to a meal without a pitcher of iced tea. My grandparents wouldn’t sit down to dinner without a jar of borscht.

My grandmother didn’t always buy borscht in a jar; my mother tells me that when she was a little girl, her mother made it herself. It had more beets in it then — even the chopped up stems — and other vegetables, too. She served it with a side of hot mashed potatoes, which sounds as close to the perfect meal as some of us will ever get. But oddly enough, I never tasted my grandmother’s borscht.

Borscht is a centuries-old slavic dish — one whose recipe ingredients will tell you more about the recipe owner’s region of origin than a 23andMe DNA kit. It is served throughout Eastern Europe and Russia, and ranges in scope from a clear broth to a thick and hearty meat and vegetable stew. Some serve it hot, others serve it cold. (I thought everyone served it as a cold drink until I

Ingredients: (serves 6) 12 cups chicken or vegetable broth 6 medium-sized beets, peeled and diced into ½ inch sized pieces. More doesn’t hurt, either.

2 tablespoons sugar 3 tablespoons brown sugar 4 tablespoons apple cider vinegar 5 tablespoons lemon juice Salt and pepper to taste Garnishes: 6 Yukon gold potatoes 6 eggs Seedless cucumber, thinly sliced (Persian works perfectly here) Radishes, thinly sliced Sour cream or plain Greek yogurt, but definitely don’t use the low-fat kind Fresh sprigs of dill Salt and pepper Instructions Bring 12 cups of broth to boil in a large stock pot and peel and dice the beets. (Note: beets stain, so be sure to keep nice towels away from the cutting board.) Toss the beets into the boiling water and bring to a simmer, about 20 minutes. Use a fork to test the tenderness of the beets. They should be cooked through, but not too soft. Now, add the remaining ingredients. This is kind of a game, and depends on your taste preferences.

The goal is to achieve a sweet-and-sour double punch at the end (this is what makes it a Slavic dish; that signature pickle-y tanginess), and these measurements accomplished that for me. You can definitely keep it simple by using only one type of sugar and one acid (just use lemon juice, for example, or white vinegar instead of either cider vinegar or lemon juice). Let the soup simmer for another 10 minutes, then turn off the heat and let it cool. Stick it in the fridge to speed up the process; the soup should be served cold.

While your beets are simmering or your soup is cooling, prep the garnishes: boil the potatoes (whole, unpeeled) for about 30 minutes and the eggs for about 20 minutes. Test the potatoes with a fork to make sure they’re cooked through. (Tip: when you remove the eggs from the flame, put the pot with the eggs into the sink and run cold water in it for at least five minutes. This is what makes the eggs easy to peel.) Put everything in the fridge to cool.

Now, for the fun (and essential) part. Here’s how to properly garnish the borscht: Ladle the soup into a bowl. Be sure you have a good amount of beet chunks in there.

Dice a cold (unpeeled) potato into the bowl, and slice one egg in as well. Then, put a dollop or two of sour cream on top. Toss in a few slices of cucumber and radish, and sprinkle with freshly chopped dill. Hit it with freshly ground salt and pepper on top for good measure, and you have a masterpiece. Alternatively, if serving a crowd, serve only the borscht itself and place all of the garnishes on the table, so guests can build their own bowls.

Note: some recipes list garnishes as an afterthought, as though they’re optional. These are not. You can’t have buffalo wings without buffalo sauce and you can’t have borscht without sour cream. Don’t skimp.

was an adult.) Every Eastern European country will tell you that its recipe is the “real” one: During the Space Race, the Soviets sent it up in tubes with their astronauts, and in 2005 Ukraine featured it on a stamp as a national dish.

So what’s the commonality? Sweetand-sour tanginess and the main ingredient, of course: beets.

In the age of the modern foodie, when we no longer make borscht because it’s poorman’s food or because it’s the only crop that will grow in a cold climate, the recipes look a little different. Now we make borscht because we fell upon a pile of luscious beets at the Thursday farmers’ market and then Googled New York Times Cooking to see what Mark Bittman had to say about it. Or, because we checked in on our Food Network friend Ina Garten, who makes us all feel woefully inadequate for not having a grapefruit spoon or a house in East Hampton, but who makes damn good food. Ina’s recipe calls for Champagne vinegar, by the way, which kind of puts a damper on the whole “rustic peasant” thing. Still, hers is beautiful: light pink and creamy with uniformly sized pieces of beet floating like ballerina tutus above the water.

This recipe is a compromise between all that.

Mine is a cold soup served with boiled potatoes and hard-boiled eggs, perfectly topped with sour cream, radish and cucumber shavings, and dill.

The sour cream’s appropriately naughty way of seeping into the magenta soup and marbling it with swirls of pink, is enough to make you recant the time in kindergarten when you gave up pink as your favorite color.

When you garnish your soup, don’t mix anything. If you do, you’ll lose the contrast of colors and the textures will soften and mellow. Your borscht will look like Ina’s: Disney-princess beautiful, but too perfect. It’s the non-uniformity of this dish that makes it sing. ✶ 42 | FOLSOM LAKE ENTERTAINER

One million tickets — it’s a magical number, and it represents the number of tickets sold since the very first performance at the Harris Center in February 2011. Fittingly, that first performance was “A Chorus Line.”

“Opening night feels like a lifetime ago,” said David Pier, executive director of the Harris Center since its launch in 2011. “But it’s not a lifetime ago. It’s a million tickets ago.”

As one may have guessed, Mathematical Mysteries is a show about math; Schreier and her husband are both scientists.

“It seems appropriate that people good at numbers bought such a statistically significant ticket,” Pier said.

Schreier will receive 10 complimentary tickets to attend any of the upcoming Harris Center Presents performances — which includes eight national tours of Broadway shows, as well as a range of dance, music, lectures, theater and other events.

One million is a number that stands out, but the Harris Center can claim some other impressive numbers as well. It has been home to more than 2,900 events, featuring artists from more than 50 countries, generating more than $37 million in ticket sales. Last season alone sales topped $5.4 million, the highest to date, and the 2018-19 season is on track to be higher still.

As of Nov.15, more than 1,740 volunteers have donated a total of 254,560 hours in support of Harris Center operations — that’s approximately 35,000 hours a year.

And then there are the economic impacts of the Harris Center.

“Not only do the performing arts provide jobs, the arts have a real ripple effect across the local economy,” Pier said.

“Since the opening of the Harris Center in 2011, the Harris Center and its audiences have generated $10 million annually in related spending — that’s over $74 million since 2011. Hundreds of full-time equivalent jobs have been created, and local and state revenues generated by the center and its audiences have been over $7.5 million.”

The evolution of the the Harris Center is ongoing. Just this past summer, the facility dramatically upgraded its sound system in the 851-seat Stage One. “If it were a car, it would be a Ferrari,” Eduardo Garza said, the interim technical director for the Harris Center. “You cannot go to another theater now and have better sound.”

In addition, significant improvements to the facility’s ticketing system and website are underway and will be unveiled in February 2019.

“The Harris Center has nestled into the community quite comfortably,” Pier said.

“It’s becoming part of the fabric of everyday life in our region. It’s hard to imagine that it wasn’t always here, even though we’re still less than a decade old. Our future is quite bright. And we have our patrons to thank for that.” ✶

hey were just four ordinary guys from New Jersey, and then, they started to sing together. They had a sound like no other, a sound the public and the radio stations quickly grew to love. However, behind the scenes wasn’t always about a perfect harmony for Frankie Valli and The Four Seasons.

This month, visitors to the Harris Center for the Arts in Folsom can learn the story of this band made of blue-collar workers from the Bronx as the National Tour of “Jersey Boys” comes to life on stage for seven local performances beginning Jan. 22. The live Broadway tour of this epic story has made the “Jersey Boys” an international sensation once again, decades after they hit the air waves for the very first time.

From the streets of New Jersey to the Rock and Roll Hall of Fame, “Jersey Boys” has been bannered as a musical that’s just too good to be true. However, it is very true all the way from their start to being inducted into the Rock and Roll Hall of Fame.

Legend has it that when Valli, the lead singer, decided to enter into a business partnership with keyboardist and songwriter Bob Gaudio, the musician asked Valli “should we have somebody draw up a contract?” Valli responded by offering his

Jersey Boys is recommended for ages 12 and older, due to mature scenes and language. The show contains smoke, gunshots, strobe lights, drug references, sexual situations and “authentic Jersey language.”

According to the Harris Center for the Arts, “The Wizard of Oz” is a spectacular on-stage celebration of the 1939 film, complete with Munchkins and flying monkeys born of breathtaking special effects, and a land brought to life with dazzling choreography.

When the dedication for the opening credits of the 1939 MGM classic film “The Wizard of Oz” was written, no one could’ve imagined the lasting impact the movie would have on American culture.

“For nearly 40 years this story has given faithful service to the young in heart, and time has been powerless to put its kindly philosophy out of fashion. To those of you who have been faithful to it in return … and to the young in heart … we dedicate this picture,” wrote the great Frank L. Baum.

A treasured film, “The Wizard of Oz’s” infiltration into American culture is undeniable and unparalleled. Quotes and references from “The Wizard of Oz” can be found in movies, music, and sitcoms and no genre is left out. Everything from “Star Wars” and “Clueless” to “The Simpsons,” “Hannah Montana” and so many others pay tribute to the beloved classic.

In music, Pink Floyd, Madonna, and Metallica have alluded to Baum’s story. And in everyday life who doesn’t know a Wicked Witch of the West or every now and then and want to simply click their heels three times to get home?

Leading the cast of this tour as Dorothy is Kalie Kaimann, who received rave reviews last season as Dorothy. She had previously played the role for the Children’s Theatre of “Cincinnati.” Additional credits include Bonnie in “Anything Goes,” Logainne in “25th Annual Putnam County Spelling Bee,” Ulla in “The Producers,” Millie Dilmount in “Thoroughly Modern Millie,” Belle in Disney’s “Beauty and the Beast,” and Minnie Fay in “Hello Dolly!”

She received a Best Featured Actress in a Musical by BroadwayWorld.com for her performance as Minnie Fay. No one has seen it will forget Judy Garland’s portrayal of Dorothy in the movie. Kaimann’s challenge is to inhabit the character anew.

“Judy Garland left such a beautiful portrayal for me to learn from. I certainly pay homage to her. I try to be honest for Dorothy. But yes, I’ve made it my own, I feel,” Kaimann said.

The well-known Dean Sobon returns as the director of Oz. Sobon previously created the national tours of “Fiddler on the Roof ” and “Seven Brides for Seven Brothers.” Other directing credits include “Clue, the Musical,” “West Side Story,” “Oklahoma!,” “Crazy For You,” “A Christmas Carol,” “How To Succeed In Business,” “A Closer Walk with Patsy Cline,” “Big River,” “The Sound of Music” and “Guys & Dolls. “ Amy McCleary returns to create the magical choreography, and she was the director/choreographer of the national tour of “Memphis, the Musical” and the choreographer of the national tour of “The Wedding Singer.”

So the biggest question about the cast is who will play Toto?

His name is Murphy, and he is a white Brussels Griffon/ Cairn terrier mix with scruffy fur and an adorable underbite.

Murphy was rescued from the ASPCA in Arizona by Lizzie Webb, music director for the tour.

Murphy and was immediately welcomed into the theater world. He has been a trusty backstage companion, a pit orchestra and within a few months of adoption, he was onstage as Willoughby in Mary Poppins. This will be his second time playing Toto. aised in a family where swinging was upbringing, jazz great Branford Marsalis is returning to the city of Folsom with his exceptional quartet for all to enjoy.

The oldest son from the First Family of jazz, Marsalis has stayed the course, refining and expanding both his talents and horizons. and educator Ellis Marsalis, Branford was drawn to music along with siblings Wynton, Delfeayo and Jason.

His first instrument, the clarinet, gave way to the alto and then the tenor and soprano saxophones when the teenage Branford began working in local bands. A growing fascination with jazz as he entered college gave him the basic tools to obtain his first major jobs, with trumpet legend Clark Terry and alongside Wynton in Art Blakey’s legendary Jazz Messengers.

When the brothers left to form the Wynton Marsalis Quintet,

the world of uncompromising acoustic jazz was invigorated. Branford formed his own quartet in 1986 and, with a few minor interruptions in the early years, has sustained the unit as his primary means of expression.

Known for the telepathic communication among its uncommonly consistent personnel, its deep book of original music replete with expressive melodies and provocative forms, and an unrivaled spirit in both live and recorded performances, the Branford Marsalis Quartet has long been recognized as the standard to which other ensembles of its kind must be measured. The Harris Center is proud to present the quartet in an encore performance on Stage One. Branford has not confined his music to the quartet context. In addition to guest turns with a legion of giants including Miles Davis, Dizzy Gillespie, Herbie Hancock and Sonny Rollins, he has excelled in duets with several major pianists, including his boyhood friend Harry Connick Jr. and the longtime pianist in his quartet, Joey Calderazzo. Branford’s first solo concert, at San Francisco’s Grace Cathedral, is documented on his 2014 recording, “In My Solitude. “ His interest in classical music continues to expand. With a repertoire including works by Copland, Debussy, Glazunov, Ibert, Mahler, Milhaud, Rorem, Vaughan Williams, Villa-Lobos and Sally Beamish (who reconceived a work in progress, “Under the Wing of the Rock,” to feature Branford’s saxophone after hearing him perform one of her earlier pieces), Branford is frequently heard with leading symphony orchestras including those in Chicago, Detroit, Dusseldorf and North Carolina as well as the New York Philhar-

monic. He also served as creative director for the Cincinnati Symphony’s Ascent series in 2012-13.

Broadway has also welcomed Branford’s contributions. His initial effort, original music for a revival of August Wilson’s Fences, garnered a Drama Desk Award for Outstanding Music in a Play and a Tony nomination for Best Original Score Written for the Theater. Branford also provided music for “The Mountaintop,” starring Samuel L. Jackson and Angela Bassett, and served as musical curator for the 2014 revival of A” Raisin in the Sun.” Branford’s screen credits include the original music for “Mo’ Better Blues” and acting roles in “School Daze” and “Throw Momma from the Train.”

His efforts to help heal and rebuild New Orleans in the wake of Hurricane Katrina mark him as an artist with an uncommonly effective social vision.

Together with Harry Connick Jr. and New Orleans Habitat for Humanity, Branford conceived and helped to realize The Musicians’ Village, a community in the Upper Ninth Ward that provides homes to the displaced families of musicians and other local residents. At the heart of The Musicians’ Village stands the Ellis Marsalis Center for Music, a community center dedicated to preserving the vibrant New Orleans musical legacy containing state-of-the art spaces for performance, instruction and recording Some might gauge Branford Marsalis’s success by his numerous awards, including three Grammys and (together with his father and brothers) his citation as a jazz master by the National Endowment for the Arts. A new year, a new trail H

appy New Year! A new year is like exploring a new trail in life. Of course, many of our trails are quite familiar and we’ve been down our trails many times before. But it’s the unknown, excitement and wonder of what lays ahead in the upcoming trip through life.

My recent trails have been filled with joy and success. As many readers know, I have two daughters that go to college. While I have fond memories of our past trails when they were younger and we explored those trails together, their trails are full of lots of new scenery at each and every turn. I can only wish for continued familiar trails in my real estate business. As a Top 10 Realtor at Coldwell Banker, I’d be happy running on the same trail year after year after year. More rewarding is the joy and satisfaction that I get from helping my clients go down the trail of purchasing or selling their home.

We live in area that is full of trails. Outdoor recreation and the Folsom trails are an important part of the community and why people want to move here. Those trails add beauty, increase our standard of living and contribute to our lifestyle and culture. There are more than 95 scenic trail miles in the Folsom area. Senior Trails Planner Jim Konopka is responsible for design and funding of the trails. The Johnny Cash Trail is the highest profile trail in the area.

Jim explains that this project was exciting and unusual because land had to be acquired from the Department of Corrections (hence the Johnny Cash connection). Five acres of prison land (and easements) was acquired after years of meetings and discussions. The trail will eventually be filled with more artwork. Initial artwork can be seen at the corner of East Natoma and

Folsom Lake Crossing, site of a future park. Jim notes, “These trails really help people feel like they can get away. Access points are conveniently located and it’s a great way to meet people in your neighborhood.”

So the real estate trail is well-traveled and has a few bumps. While year-end real estate totals for Folsom and El Dorado Hills were not yet available at press time, the sales numbers through November show lots of “up.” In both Folsom and El Dorado Hills, the average price of a home and average price per square foot is up. In Folsom, the average price rose to more than $562,000, $271 price per square foot, while in El Dorado Hills, the prices rose to more than $740,000 and $251 respectively. It’s interesting that the total number of homes sold in Folsom through November 2018 was 919, down in comparison to 2017. While homes continued to sell faster and for a higher percentage compared to listing price, the drop in number of homes sold may simply be that there are less homes for sale in Folsom. As some readers may recall, in previous articles, I comment that while there are fewer homes for sale, it’s amazing that more homes are selling in comparison to the previous year. In El Dorado Hills, the prices are up, the homes sell faster and sold price compared to list price also continue to climb. While December is typically the month with lowest number of homes for sale, the number of homes on the market has been steadily dropping. El Dorado Hills has 145 homes on the market while Folsom only has 93. What’s in store for 2019?

We’ll have to wait and see what turns, bumps and obstacles are on that trail.
