CLU T TERED S E L B I T C E L L CO An eclectic potpourri of items fills a 22,000 square-foot warehouse in Roseville. One man’s discard is another’s treasure. Can you find yours?

BY GLORIA YOUNG

One thing about winter — it gives you more time indoors to ponder the decor. Would a different sofa give the room new life? Is there an empty corner that needs a lift or maybe a cluttered room that needs a pare down? The Home Consignment Center — with a store in Roseville and another in Folsom — offers a way to do that — while keeping the budget in mind. The Roseville store’s 22,000-square-foot show room is filled with furniture, art, rugs, lamps and accessories. “There’s rarely a day that something doesn’t hit the floor,” manager Andrew See said. The selection is a mix of pieces from consignees and area stores. “We just got a shipment from Z Gallerie,” See said. “It is brand new current merchandise. It is stuff that was mainly returned or shipped as a wrong item.” A couple of times a year, there are deliveries from model homes. “You get three houses worth at one time, so it’s a pretty substantial stock,” he said. “It’s an assortment of everything from beds to sofas, coffee tables and the accessories (such as) floral and candleholders.” It all makes for an eclectic

10

selection. “You can come in here and there is something for everyone — vintage, mid-century, antique and current stuff,” See said. And there are some rare finds, too. “I actually ended up purchasing a hutch from the 1700s (made) in Belgium,” he said. “You get some crazy old stuff that is in surprising good quality. A lot of antiques have nicks, scratches and dings. We try to take stuff that is in fine shape.” See and his staff create displays incorporating furniture with lamps and other accessories, providing ideas of how to put things together for a total look. “I have a degree in art history with emphasis in interior design,” he said. “That is something I am passionate about — figuring out how to display merchandise to get it sold. … The showroom is a visual presentation.” Several other associates have design backgrounds, too. Although the stores don’t offer a full catered design service, staff members will walk around the store with customers and give suggestions. CONSIGNING Customers looking to consign have a couple of options.

“We offer in-home previews,” See said. "We can go out to your house as a free service and take look at what you have. Anything we can take, we’ll price at that moment and arrange to have it brought into the store.” The pickup and delivery price is $75 an hour, which is deducted when an item sells. Customers are also welcome to bring in items to the store’s back door. “We get just as many people up to our back door with merchandise we haven’t seen before,” he said. Turnover is very high. Some items sell soon after they arrive and most of the rest will sell within three weeks, he said. “There are customers who come in regularly and we know what their styles are,” See said. “We get customers who come in every day. We have a couple that comes in five or so times a week to see what has come in that day.” The store splits the sale proceeds with the consigner. It is rare that something doesn’t sell. But if it is still on the floor after a couple of months and repricing, the customer can chose to have it donated or can take it back. The Home Consignment Centers have a jewelry section, with vintage and new pieces.

A MOVEABLE

FEAST A plethora of good eats awaits you at Roseville’s Food Truck Mania. Choose your cuisine of choice — or, actually, don’t. With food trucks, you don’t have to. by mindy schiller

If you haven’t tried ordering a fish taco while standing next to a tire that comes up to your waistline, you’ll soon have your chance — at Food Truck Mania in Roseville on Jan 10, at the Vernon Street Town Square. The event will be co-sponsored by the city of Roseville and SactoMoFo, a food truck event planning company based in Sacramento. Attendees will be able to sample from six different trucks, spanning as many different cuisines. According to Caille O’Leary, General Manager of SactoMoFo, this is a typical number of options for food truck events — anywhere from six to 10 — and the cuisine always spans a variety. “You can find anything from American to Filipino, Mexican to Mediterranean, and just about anything you can think of in between,” O’Leary said. But, there are always last-minute changes. For some, the surprise is exactly what they’re looking for. In fact, that seems to be the case for more people than ever before. According to the The Economist magazine, there are over 4,000 food trucks in the United States. The West Coast dominates the market, with Portland, OR owning the highest number and Austin, TX coming in second. Seattle and San Francisco come in third and fourth, respectively, and trailing the market are East Coast cities like Boston and New York. Chicago comes in at the very bottom—probably due to a mix of cold weather and permitting tensions. According to the market research company IBISWorld, the food truck industry produced $1.2 billion in sales in 2016, with annual revenue rising at a rate of 7.9 percent between 2012 and 2017. Clearly, it’s an industry with promise. And why not? Is it any surprise that would-be restaurateurs are opening food trucks, instead? As opposed to brick and mortar restaurants, which have to pay for little details like heat, electricity, and rent, food trucks go where the audience—and free parking spot — is, communicating to their audience through Twitter, Snapchat, and other forms of social media. In other words,

14

they’re speaking the language of today’s consumers. “Food trucks are very on trend right now.” said SactoMoFo Event Coordinator Audrey Ellison. “It’s a whole experience to go up to a truck and order food — a real novelty. Plus, since we have so much variety of cuisines, it’s a great alternative to traditional catering.” And, says Ellison, it’s a lot cheaper to hire a few food trucks to come out to your event than to engage a traditional caterer. Which, according to The Economist, is something more and

SAVORY more organizations are doing—with the help of local companies like SactoMoFo and a national company called Roaming Hunger, based out of West Hollywood, CA. Founded in 2009, Roaming Hunger was started to track the emerging food truck movement. Now, it’s the leading provider of turnkey food truck catering, with a network of over 12,500 food trucks and customers like Apple, Google, and Warner Bros. They also help would-be food truck owners navigate the process of starting their own food trucks, as well as provide a listing of food trucks in every major city. Their app helps hungry roamers find out where their next meal is parked. The rise of Roaming Hunger mimics the rise of the food truck industry nationally—as does SactoMoFo’s. continued on PAGE 16

Especially if Ellison’s experience is any indication. “We have daily emails from new food trucks who want to join our our network,” she said. “And, there’s a lot of competition between trucks now as the concept becomes more popular. It used to be that there was a stigma associated with food trucks—they’re dirty, not formal enough. But now, they’re an artisanal craft. Permitted, clean, and local.”

And, for those looking for scientific proof: The first National Food Truck Day was declared in 2016. Food Truck Mania in Roseville is a tradition that started five years ago. “The community has been supporting this event for the past four years, and we are looking forward to keeping it going in 2019,” said General Manager O’Leary. Founded in 2011, Sactomofo has produced over 5,000 events. While based

in Mid-town Sacramento, their reach goes as far as Vacaville to the South and cities like Roseville to the North. Ellison says she’s planned many events in Placer, Yolo and El Dorado Counties. Attendees at the event can enjoy their meals at the tables provided by the hosts or bring their own blankets and chairs, picnic-style. Or, they can eat like a propper tail-gaitor: on the back of a truck.

advice

fiancial mistakes and how to fix them The holidays are over and the new year is here, but one thing hasn’t changed: managing our finances. Whether it’s paying off the credit card that financed those Christmas gifts or reducing the balance on a student loan, fiancial challenges abound. So, we caught up with Joe Siau, a licensed mortgage professional for 23 years based in Roseville, to get his ideas on the most common financial mistakes and how to fix them. by paige smith

Financial mistake No. 1 Opening up too many credit cards

Siau said that when applying for a home loan during the holiday season, recent car loans and credit card applications enticed by cash rewards, points or discounts, may damage a credit score. “Excess credit card charging may increase a borrower’s debt to income ratio causing a loan to be potentially declined,” Siau said. “Extra credit inquiries may decrease borrower’s credit scores and increase the interest rate.” He added that a decline of a credit card application may also reduce a borrower’s credit scores and increase interest rates. With loans, an underwriter will need to have all inquiries explained and the loan will need to be re-underwritten causing time delays.

HOW TO FIX THIS “It is best to wait till after financing is completed before applying for a car loan or new credit cards no matter how attractive the offer may sound,” Siau said. “Based on the rapport that you have established, it is prudent to ask your licensed mortgage professional throughout your escrow period, what negative impact will there be before applying for any new credit.”

Financial mistake no. 3 Not verifying your

Filing taxes too late

co-signer’s qualifications

Planning on applying for a home loan during the tax season? Siau said that all lenders need to verify that the tax return provided by the borrower is the same one that the IRS received. One mistake made here is that the day after April 15, an underwriter will require a copy of the most recent year’s filed tax returns or filed extension. “If the lender was not able to get a confirmation from IRS that the borrower’s tax return was filed or extended or confirmation the data matches the copy in the loan file, borrowers are sometimes asked to deliver their physical tax returns to the IRS office and get an IRS confirmation stamp on the tax return,” Siau said. “This authenticates that the tax return provided to the lender was the same one received by the IRS.”

Are you planning on selling or buying a home in 2019? Siau said to be aware of this common mistake: “As lenders, we don’t underwrite to the seller’s finances nor do we pull a credit report on the seller. Yet, many times we see problems during a probate sale, estate sale or REO sale, the person signing on the listing agreement was not authorized to act on behalf of the trustee for the property beneficiary,” Siau said. He explains that this can cause a delay in the escrow closing from 30 days to 4 months.

HOW TO FIX THIS “Verification can be done up front by matching the name on the recorded title with the listing agreement including the middle initials,” Siau said.

HOW TO FIX THIS The first suggestion Siau offers: file early, i.e. four weeks before April 15 since the verification process can take up to six weeks during the tax season from the IRS. “This creates unavoidable delays that sometimes requires extending escrow closing, extending rate lock at buyer’s expenses,” Siau said. “Avoid the hassle of being asked for an IRS stamped copy by filing as early as possible.” The same guide applies when applying for a loan around the Oct. 15 tax extension deadline, Siau added.

Financial mistake no. 4 Not checking your credit score

Financial mistake no. 5 Assuming all lenders are equally good

before they do “Many borrowers assume they have great credit scores, they deserve the lowest rate, and everything can close in 14 days with zero delays,” Siau said. “Chances are, that theory applies to only 10 percent of all folks and not to everyone.” From late payments to bankruptcy, there are a dozen of reasons and issues that can all drive down credit scores and interest rates become higher since the rate is priced against credit scores. Additionally, Siau said that situations involving credit repair, divorce, bankruptcy, probate, solar liens and home owners’ association litigations can sometimes take more time to assess, to document and to secure underwriting approval.

HOW TO FIX THIS Siau said that it is best to look to the licensed mortgage professional as your trusted partner. “Both of you are on the same team, navigating across the numerous underwriting mine fields to avert un-necessary conditional delays,” he said. Siau’s note: Always work with someone local, that you can meet face to face. It is best to choose a referred professional instead of someone from a call center who may quote low rates but are unable to return your phone calls promptly or understand the technicality of your situation. In addition to being a mortgage advisior, Siau is also a certified divorce lending professional with Homeowners Financial Group USA, LLC.

Another final financial mistake is assuming all lenders or loan officers are the same, they are not, Siau said. “If one was to shop for low rates, that’s fine, but do the same research with a licensed mortgage professional,” Siau said.

HOW TO FIX THIS Siau said there are four ways to fix this. First, ask for a list of lenders’ past client testimonials. Second, Siau recommends looking at their website which should provide information on years of experience, steer clear of a generic web page that has no details on experience. And third, look at their LinkedIn profile to determine their individual business acumen, not their Facebook page. Finally, look at their history on the Consumer Nationwide Mortgage Licensing website: NMLSConsumerAccess.org. “This will tell you if the individual has been the subject of any enforcement fines or regulatory actions related to their loan origination activities,” Siau said. “This site will also reveal their work history. Industry consolidation has occurred with many loan officers switching employers to gain a better marketing edge and/or market share.” The last 10 years of employment history of who you like to work with may raise red flags such as several employment gaps or less than 10 years of being a licensed mortgage professional. Pay attention to their “other employment” on this site to see if they are both a lender and a realtor, Siau added.

CONNOR WELLNESS CLINIC WHERE: 1891 E Roseville Parkway,

Where do you start when you want to get on track for a healthy lifestyle? There are many roads to go down and it can be overwhelming, and it might even lead you back to your current path of going out to eat and not focusing on health and nutrition. Pamela Connor, a health care practitioner and a clinical nutritionist in functional medicine at Connor Wellness Clinic, provided some mistakes and tips on how to fix them to help you lead the best and healthiest life possible. The biggest mistake that she sees is a combination of eating processed and packaged foods as well as eating in restaurants too frequently and not ordering healthy choices. The fix for this issue is simple, she explained. “Planning ahead will let you know what to shop for, go to the grocery store, and do the food prep,” Connor said. She said she read recently that grocery store prices have gone down because more people are going out rather than going to the grocery store. Due to food delivery services this is also an issue because younger generations will use this as a primary way to get their meals. “I think that the want and desire for change has to also be there,” she said. “These processed foods and quick restaurant foods are formulated in a way to be addictive, and it becomes very difficult to break from it.” The desire must be there to break away from the processed foods and fast food

choices for healthier options. The fast food industry has chemicals in their food that make it harder to break free from and even though shopping for healthier options might be more expensive, in the long run, it will help you live and lead a healthier life, she said. Connor summed it up: if you can’t say it, don’t eat. “That is where a paradigm shift is sometimes needed,” Connor said. “If all you are thinking about is the cost, know you are paying for real food not binders, fillers and chemicals disguised as food.” When it comes to supplements, Connor advised that if an adult doesn’t already have a healthy diet, to consider a food-based multi-vitamin, and try to avoid the synthetic nutrient. She said that the supplement industry has good and bad options, so it is important to consult a professional and a multi-vitamin can help fill the void in your nutrition. “Practitioners carry high-grade multivitamins that they can recommend based off of what your body needs,” she said. “I will say, a capsule is better than a tablet because most people cannot digest tablets, so a capsule will be more easily digestible.” She wouldn’t recommend gummy vitamins as they have sugar and not all the nutrients needed. For kids, she would also suggest a powder form that can be mixed in applesauce or a drink. A probiotic can also help with kids who need aid with digestion. One thing she encourages her patients

is to avoid snacking between meals because it lowers blood sugar, it decreases and regulates your appetite as well as helps decrease your waistline. She adds that this is easier than you think. “We eat way too often, we overfeed ourselves and we are undernourished as a nation,” Connor said. She added that it is important to eat when you are hungry and not just because it is a meal time, your body might still be digesting from the night before, so you don’t have to force a meal on yourself. However, you also don’t want your blood sugar to crash, she said. There are a lot of changes that can improve your natural health and nutrition. It is essential to find what works for you. It’s not a one size fits all, Connor said. With practice it will all come together, learn what your body needs and ensure there are enough vegetables in your diet. “Instead of asking ourselves, ‘What do I feel like eating right now?’ we should be asking ourselves, ‘What does my body need for nutrition in this meal?’” Connor said. “Take the time to tune into your body and assess that we are giving it what it needs.”

Connor Wellness Clinic was founded by Pamela Connor after her quest to heal herself was successful. Connor, a clinical nutritionist in functional medicine, runs the clinic to help others achieve long-lasting health that targets the root cause issues. She works with patients struggling with digestive disorders like leaky gut, SIBO, gas and bloating and autoimmune conditions.

FITNESS for GOOD A conversation with Breann Zweck, owner of StayFIT Fitness Coaching Center One new year’s resolution that can be heard time and time again is, “This year I am going to get fit.” But if there is no plan or motivation, will it happen? It doesn’t have to happen at just the beginning of a new year. It is finding the right way to do it for yourself and the enthusiasm to stick with it. BY PAIGE SMITH

Breann Zweck, owner and fitness coach at StayFIT Fitness Coaching Center, provided common mistakes and tips to stay the course and how to overcome those mistakes. Mistakes such as making a weight goal, making vague goals, not having enough “time,” and not having accountability. When it comes to these, Zweck emphasizes that health should be a major priority daily, including exercise. Rather than using the scale to look at and dread, she said to use it as a tool and that in order to lose weight, you need to change your behavior. “Get away from the idea of losing 14 pounds in a week,” she said. “Think about losing 14 to 28 pounds in a year and keeping it off.” Adding that instead of making goals

driven by willpower of the moment, Zweck said that goals need to be a behavior that is specific, measurable and most importantly achievable. It also must be something that you are mentally and physically prepared for so that a lifestyle change can be made that will stick. If you are ready for the change, Zweck said, that accountability is essential, don’t hesitate to ask for help to stay on track. “Let your friends and family know what you are trying to achieve and allow them to support you,” Zweck said. “Get a workout buddy or a personal trainer so you are less likely to skip.” Furthermore, she adds that a personal trainer will hold you accountable, set achievable goals, help with nutrition and get rid of the confusion of dieting that is being marketed.

Zweck cannot stress enough the importance of nutrition and to take food seriously by starting with small goals that lead to big results. “Food is not just important from a weight loss point of view, it also plays an important role in the day to day functioning of your body and long term

continued on PAGE 24 health,” Zweck said. “Invest your money in good quality unprocessed food.” So, how do you stay motivated when it feels like you aren’t getting anywhere? Zweck said that it is hard since less than 50 percent of people who make new year's resolutions keep them through Valentine’s Day. “Understand first that change is difficult otherwise everyone would be doing it,” she said. “I recommend that you get S.M.A.R.T.” Her acronym is: Set a specific, measurable, achievable goal. Monitor your progress. Arrange your world for success. Recruit support. Treat yourself.

HEN GRANITE BAY resident Amitis Pourarian discovered martial arts in her early teens, it captured her heart. “I really fell in love with it,” she said. “It is not a team sport. It is an individual sport that control is in your hands for you to be as good as you want to be on your own.” It quickly became an essential part of her life. “I just was consistent with it throughout school and even when I worked,” she said. “It made me very athletic and confident. I ended up being on the U.S. team in 2001 and competed for the U.S. in the World Cup in Vietnam.” Today she is a 7th Degree Taekwondo Master and owns The Studio Martial Arts & Fitness in Roseville. In addition to martial arts/Taekwondo, Pourarian’s studio offers classes in fitness, cardio kickboxing, Zumba, Yoga, weight training, spin, pilates and a ninja obstacle course. The popular studio actually got off to a slow start. “I opened it in 2010 and I actually taught one person for two weeks,” she said. “‘Nice decision —way to go,’ I said to myself. One turned to two. Now we have 900 members. It has been a great decision.” The center has a strong focus on family and Pourarian’s vision that there is a class for every age and every fitness level. “That means if you ave a 3-year-old, there’s a class at The Studio. If you are a grandma or grandpa in your 80s, there’s a class for you.” For very young children, there’s the Tiny Tigers and a Mini-Ninja programs. The Super Kids martial arts program is ages 6-12. There are teen and adult martial arts classes. The Wise Warrior program is for seniors and those who have had injuries and can’t sustain high impact. “Literally, for anyone in the family, there’s something to do at The Studio,” she said. “We have two rooms. The kids are in martial arts while parents are doing martial arts or kickboxing. Parents and

kids come in together and leave together and get an amazing workout. It eliminates the problem of parents not having time for themselves. They work out at the same time as their children’s workout. It has been really popular.” There are even classes in which the whole family trains together. “They are coming in and getting a workout with their family and getting quality time together and then they go home together,” Pourarian said. It works well despite age and fitness differences. “We have a very structured teaching system that allows us to manage our classes in a family environment at different levels,” Pourarian explained. “We are amazing at managing different people. And they go out feeling energized. They leave with a

feeling of accomplishment. They learn self-defense and they have quality time with their family. It is a win-win across the board.” The growing success of the business necessitated a move in 2013 to a larger location. “(The original studio) was 3,000 square feet and we started growing out of the seams,” she said. “We couldn’t fit into the space anymore.” The current site gives her

5,500 square feet and she is “stretching out of the seams” there, too, she said. For Pourarian, giving back to the community is an important aspect of being a business owner. “We do community service and make community charitable contributions,” she said. “We have so many organizations that we do fundraising for. Right now we are doing a sock drive, which is the No. 1 requested item by

the homeless. Last year we gave away 1,200 pairs of socks.” The studio offers memberships in martial arts, fitness and ninja or all three. Monthly rates vary depending on the program. Pourarian was born in Iran and grew up in the Folsom/ Granite Bay/Roseville area. She has a master’s degree in construction management and is a real estate broker and general

contractor. Owning The Studio allows her to follow her passion and encourage others to excel in the sport she loves. “I would easily have to say (that my favorite aspect) is changing people’s lives through martial arts and fitness for the better and watching them grow into the next best version of themselves,” she said. “And I am lucky to do it every day.”

FOR ONCE, THE LIMELIGHT Hold the fridge door open; cabbage has something to say

T

he cabbage is a humble food if I ever saw one. It's one of those vegetables that lays low, at the bottom of the crisper, abandoned because you bought it in a fit of ambition and then forgot about it, covering it with sexier counterparts: eggplant, asparagus, or Brussels sprouts (cabbage's more glamorous cousin, only granted such status because of its place on the Thanksgiving Table and its natural sidekick, the ever-trumping bacon). But it turns out that unassuming cabbage has the last word, because even when you leave it for weeks in the fridge, it's still pretty much usable. Peel off the top few layers and you're good to go. Sure, says the cabbage, walk all over me. Forget me, leave me to dry out at the bottom of your food chain. I will still be there for you. Like your kids, whom you forgot to pick up from school. Yup, that's cabbage. The doormat of the vegetable world.

But we overlook it to our detriment. Cabbage is not only one of the more flavorful ingredients out there, it's downright cheap. As in, when you walk past the artichokes and sigh because you just can't stomach spending $2.89 per globe (especially when you're going to throw away everything but the heart anyway — whoever thought this was a good idea?), you can always rely on your stalwart friend, the cabbage. In American cuisine, cabbage is mostly hidden behind mayonnaise and sugar in coleslaw-type dishes. The recipes below — Eastern European and Middle Eastern, respectively — make cabbage the star, using complimentary ingredients to make the cabbage taste more like, well, cabbage. These are humble, peasant dishes. But you know what? They put the artichoke to shame. And you'll learn your lesson: Never overlook the cabbage again.

Haluski SERVES 6

Haluski is a Slavic dish with counterparts in Hungary, Poland and Romania. When I was growing up, we called it Lukshn mit kroet, Yiddish for "noodles with cabbage." And yes, it really is as simple as that title suggests. There are three basic ingredients: cabbage, onions and egg noodles. Everything else is just a variable to tweak according to your preference. The secret here is the caramelization of the onions, so low and slow is your friend. Don't rush it. Throw the onions in the frying pan and go watch an episode of "House of Cards." When you come back, they'll be perfect.

Ingredients: About half of a 12-ounce bag of extra wide egg noodles (wide is key; don't use the skinny ones) 1 small head of green cabbage 2 onions 1/2 tablespoon salt, plus more to taste pepper, to taste 6 tablespoons oil, divided

Instructions: Slice the onion thinly. The more surface area, the more caramelized goodness. Throw it into the frying pan at medium low and let it sit for about 30 minutes. Slice the cabbage, but not as thinly; you don't want mush. When the onions are caramelized, add the cabbage. You might have to add it in stages, depending on the size of the pan. Add the salt, and turn the heat up to medium. The salt makes the cabbage wilt. In a separate pot, boil the noodles using the directions on the package. When the noodles are al dente, drain them and add them to the cabbage mixture. Taste for seasoning and add more salt and pepper according to your taste. Voila — you're done. Simple and delicious.

30

Note: if you want a heartier meal, start with sliced sausage or other meat instead of the oil. The grease will work even better for sautéing. Alternately, use butter instead. You really can't mess this up.

Cabbage Salad SERVES 6

In the Middle East, meals are often prefaced by a large spread of colorful salads: Hummus, tomato-and-cucumber, babaghanoush (eggplant), carrot, and cabbage — to name a few. This salad is intensely simple and can be the garnish to an entree (falafel, lamb, fish tacos), or be served as a side dish. Make sure to let the salad marinate for a while before serving. In fact, it gets better with time. You'll wonder how so few ingredients can make such music together.

Ingredients: 1 head purple cabbage juice of 2 lemons 1 teaspoon salt dash of pepper 1/2 teaspoon sugar 2 tablespoons mayonnaise

Instructions: First, cut the head into a few manageable chunks to work with. Then, slice the cabbage thinly. Add all of the ingredients together and store in the fridge for at least an hour so the cabbage marinades. When you're ready to serve the salad, mix it, add a dash of salt, and enjoy.

Ring in the new year with

A HEALTHY LIFESTYLE

Chris Palkowski, MD

Physician-in-chief Kaiser Permanente Roseville Medical Center

34

As you were celebrating the start of the new year, did you find yourself making a few resolutions to start 2019? Staying fit and healthy, and losing weight are some of the most common New Year’s resolutions. While it may not be easy, there are plenty of good reasons to make a lifestyle change for your health: preventing disease, more energy and improving your overall quality of life. There is more and more research that points to a change that can impact your overall health and may help you achieve those resolutions: Switching to a plant-based eating lifestyle. This means enjoying plant foods in their whole, unprocessed form — fruits, vegetables, lentils, beans, whole grains and seeds. You move away from animal products, such as poultry, meat, fish, dairy and eggs. And you pass on processed foods, including oil and sweets. It’s easy to focus on what you might be giving up. But plant-based eating is yielding fantastic results for many of our patients. Some are seeing lower cholesterol, blood pressure and blood sugar. In some cases, we are seeing reversal or prevention of heart disease and diabetes. Many report healthy weight loss. I am fortunate to work with many clinicians who are experts in their field and can share knowledge based on their personal experience. One of them is Dr. Andrew Klonecke, who practices nuclear medicine. This field includes both diagnostic studies and providing treatments for thyroid disease and certain cancers. Dr. Klonecke also follows a plant-based eating lifestyle. I wanted to know: How does a person start with plant-based eating and then sustain it? “You need to clean out your pantry. Many pantries have a lot of processed foods. Then you need to stock

up on beans, legumes, lentils, grains, and start buying more fruits and vegetables,” Klonecke said. “People think of it as being expensive. But we think we spend about 30 percent less on our food bills since we started following a whole food, plant-based diet.” One other important point: You can get the protein and calcium you need from beans, vegetables and nondairy almond or soy products. Klonecke said the key to sustaining this lifestyle is you must cook and set yourself up for success. Online research will yield information and recipes. Then he recommends cooking in batches. Making large pots of oatmeal, bean chili or quinoa on the weekends to eat over the course of the week. Chop fruits and vegetables so that they are ready to go. Some recipes can be altered to be plantbased. Burritos or tacos with beans, rice and vegetables can be satisfying without the meat and cheese. Burgers can be made with vegetable patties or grilled portabella mushrooms. Vegetable kebabs can be fun to make with your children. “What you value, you will sustain. If you value living longer, if you value seeing the doctor less, taking few medications, weighing less, whole food plant-based eating can do that. Everyone has to find their own value,” Klonecke said. Kaiser Permanente members can take advantage of plant-based nutrition classes. To find out more, contact the Kaiser Permanente health education department at 916-474-6269. You can be successful at your resolution to be healthy. Think about all the reasons you want to make the change and then set yourself up for success. Ask your doctor for help. Enlist the support of your family. Plan a plant-based meal for tonight. A new year can bring fresh perspective and perhaps a new motivation to be the healthiest you.
