New restaurant specializes in south-of-the-border cuisine

I

f you are looking to have a taste of Mexico without leaving Granite Bay, El Rey Mexican Cuisine may be your next best choice. After being in the restaurant industry for more than 15 years, owner Luc Hurtado stumbled upon the Quarry Ponds Town Center and knew she needed to open a restaurant there. “Every time she passed by the shopping center on Douglas Boulevard, she saw this place and wanted to be a part of it,” said Brandon Bernardo, restaurant manager. “She really wanted to share our Mexican traditions with the Granite Bay community.” Opened in September, El Rey is 100 percent authentic Mexican cuisine, Bernardo said. From the music to the décor, the dishes to the exquisite paintings on the walls, guests get a true taste of Mexico without having to travel far. “Most of our recipes have been in Luc’s family for generations and generations, and it’s all very tasty,” he said. “Our dishes are not only tasty and flavorful, but we take our time with the presentation as well. We are a sit-down restaurant, not a taqueria.”

Bernardo wanted to emphasize that at El Rey, guests can come for an experience with a sit-down meal, enjoying the space, atmosphere and service. At El Rey, there are the basic items such as burritos and tacos that are commonly found in Mexican restaurants, but in addition to that, guests will find special items such as Enchiladas Mineras, which is a traditional meal from Guanajuato, Mexico, Hurtado’s hometown. Other items on the menu include mole, chili verde, chile relleno and chile colorado.

O

ne thing about winter — it gives you more time indoors to ponder the decor. Would a different sofa give the room new life? Is there an empty corner that needs a lift or maybe a cluttered room that needs a pare down? The Home Consignment Center — with a store in Roseville and another in Folsom — offers a way to do that — while keeping the budget in mind. The Roseville store’s 22,000-square-foot show room is filled with furniture, art, rugs, lamps and accessories. “There’s rarely a day that something doesn’t hit the floor,” manager Andrew See said. The selection is a mix of pieces from consignees and area stores. “We just got a shipment from Z Gallerie,” See said. “It is brand new current merchandise. It is stuff that was mainly returned or shipped as a wrong item.” A couple of times a year, there are deliveries from model homes. “You get three houses worth at one time, so it’s a pretty substantial stock,” he said. “It’s an assortment of everything from beds to sofas, coffee tables and the accessories (such as) floral and candleholders.” It all makes for an eclectic selection. “You can come in here and there is something for everyone — vintage, mid-century, antique and current stuff,” See said. And there are some rare finds, too.

“I actually ended up purchasing a hutch from the 1700s (made) in Belgium,” he said. “You get some crazy old stuff that is in surprising good quality. A lot of antiques have nicks, scratches and dings. We try to take stuff that is in fine shape.” See and his staff create displays incorporating furniture with lamps and other accessories, providing ideas of how to put things together for a total look. “I have a degree in art history with emphasis in interior design,” he said. “That is something I am passionate about — figuring out how to display merchandise to get it sold. … The showroom is a visual presentation.” Several other associates have design backgrounds, too. Although the stores don’t offer a full catered design service, staff members will walk around the store with customers and give suggestions.

CONSIGNING Customers looking to consign have a couple of options. “We offer in-home previews,” See said. “We can go out to your house as a free service and take look at what you have. Anything we can take, we’ll price at that moment and arrange to have it brought into the store.” The pickup and delivery price is $75 an hour, which is deducted when an item sells. Customers are also welcome to bring in items to the store’s back door. “We get just as many people up to our back door with merchandise we haven’t seen before,” he said. Turnover is very high. Some items sell soon after they arrive and most of the rest will sell within three weeks, he said. “There are customers who come in regularly and we know what their styles are,” See said. “We get customers who come in every day. We have a couple that comes in five or so times a week to see what has come in that day.” The store splits the sale proceeds with the consigner. It is rare that something doesn’t sell. But if it is still on the floor after a couple of months and repricing, the customer can chose to have it donated or can take it back. The Home Consignment Centers have a jewelry section, with vintage and new pieces.

Tips on staying the course BY PAIGE SMITH

O

ne new year’s resolution that can be heard time and time again is, “This year I am going to get fit.” But if there is no plan or motivation, will it happen? It doesn’t have to happen at just the beginning of a new year. It is finding the right way to do it for yourself and the enthusiasm to stick with it. Breann Zweck, owner and fitness coach at StayFIT Fitness Coaching Center, provided common mistakes and tips to stay the course and how to overcome those mistakes. Mistakes such as making a weight goal, making vague goals, not having enough “time,” and not having accountability. When it comes to these, Zweck emphasizes that health should be a major priority daily, including exercise. Rather than using the scale to look at and dread, she said to use it as a tool and that in order to lose weight, you need to change your behavior. “Get away from the idea of losing 14 pounds in a week,” she said. “Think about losing 14 to 28 pounds in a year and keeping it off.” Adding that instead of making goals driven by willpower of the moment, Zweck said that goals need to be a behavior that is specific, measurable and most importantly achievable. It also must be something that you are mentally and physically prepared for so that a lifestyle change can be made that will stick. If you are ready for the change, Zweck said, that accountability is essential, don’t hesitate to ask for help to stay on track.

“Let your friends and family know what you are trying to achieve and allow them to support you,” Zweck said. “Get a workout buddy or a personal trainer so you are less likely to skip.” Furthermore, she adds that a personal trainer will hold you accountable, set achievable goals, help with nutrition and get rid of the confusion of dieting that is being marketed. Zweck cannot stress enough the importance of nutrition and to take food seriously by starting with small goals that lead to big results. “Food is not just important from a weight loss point of view, it also plays an important role in the day to day functioning of your body and long term health,” Zweck said. “Invest your money in good quality unprocessed food.” So, how do you stay motivated when it feels like you aren’t getting anywhere? Zweck said that it is hard since less than 50 percent of people who make new year’s resolutions keep them through Valentine’s Day. “Understand first that change is difficult otherwise everyone would be doing it,” she said. “I recommend that you get S.M.A.R.T.” Her acronym is: Set a specific, measurable, achievable goal; Monitor your progress; Arrange your world for success; Recruit support; Treat yourself. Zweck said if you cannot achieve the goal you have set for yourself, change it. Make it something you can achieve without fail.

Secondly, cut down or cut out the sugar. He said that we can have about 24 grams of sugar a day and that is about 4 tablespoons of honey, so not too much. The third step would be to cut down on the dairy products, not just milk but also sour cream, cheese and mayonnaise. If you get coffee, look at the nutrition of what you get and maybe opt for something healthier or without sugar. The final step he suggests is to cut down on carbohydrates; chips, bread, cut it down or out. “If you cut down on those four things, you would actually see a lot of success,” he said. “For myself, I lost 12 pounds in the first month because I cut out dairy and sugar. he holidays are over, and the new year is here but one thing hasn’t changed — finances. Whether it is credit card bills or loans, the financial situation and conversations are always there. We talked with Joe YOUNGmistakes. Siau, a licensed mortgage professional in Roseville for 23 years to get tips on BY howGLORIA to fix financial

FINANCIAL MISTAKE NO. 1 Siau said that when applying for a home loan during the holiday season, recent car loans and credit card applications enticed by cash rewards, points or discounts, may damage a credit score. “Excess credit card charging may increase a borrower’s debt to income ratio causing a loan to be potentially declined,” Siau said. “Extra credit inquiries may decrease borrower’s credit scores and increase the interest rate.” He added that a decline of a credit card application may also reduce a borrower’s credit scores and increase interest rates. With loans, an underwriter will need to have all inquiries explained and the loan will need to be re-underwritten causing time delays.

HOW TO FIX THIS “It is best to wait till after financing is completed before applying for a car loan or new credit cards no matter how attractive the offer may sound,” Siau said. “Based on the rapport that you have established, it is prudent to ask your licensed mortgage professional throughout your escrow period, what negative impact will there be before applying for any new credit.”

FINANCIAL MISTAKE NO. 2 Planning on applying for a home loan during the tax season? Siau said that all lenders need to verify that the tax return provided by the borrower is the same one that the IRS received. One mistake made here is that the day after April 15, an underwriter will require a copy of the most recent year’s filed tax returns or filed extension. “If the lender was not able to get a confirmation from IRS that the borrower’s tax return was filed or extended or confirmation the data matches the copy in the loan file, borrowers are sometimes asked to deliver their physical tax returns to the IRS office and get an IRS confirmation stamp on the tax return,” Siau said. “This authenticates that the tax return provided to the lender was the same one received by the IRS.”

deserve the lowest rate, and everything can close in 14 days with zero delays,” Siau said. “Chances are, that theory applies to only 10 percent of all folks and not to everyone.” From late payments to bankruptcy, there are a dozen of reasons and issues that can all drive down credit scores and interest rates become higher since the rate is priced against credit scores. Additionally, Siau said that situations involving credit repair, divorce, bankruptcy, probate, solar liens and home owners’ association litigations can sometimes take more time to assess, to document and to secure underwriting approval.

HOW TO FIX THIS Siau said that it is best to look to the licensed mortgage professional as your trusted partner. “Both of you are on the same team, navigating across the numerous underwriting mine fields to avert un-necessary conditional delays,” he said. Siau’s note: Always work with someone local, that you can meet face to face. It is best to choose a referred professional instead of someone from a call center who may quote low rates but are unable to return your phone calls promptly or understand the technicality of your situation.

The first suggestion Siau offers: file early, i.e. four weeks before April 15 since the verification process can take up to six weeks during the tax season from the IRS. “This creates unavoidable delays that sometimes requires extending escrow closing, extending rate lock at buyer’s expenses,” Siau said. “Avoid the hassle of being asked for an IRS stamped copy by filing as early as possible.” The same guide applies when applying for a loan around the Oct. 15 tax extension deadline, Siau added.

Another final financial mistake is assuming all lenders or loan officers are the same, they are not, Siau said. “If one was to shop for low rates, that’s fine, but do the same research with a licensed mortgage professional,” Siau said.

FINANCIAL MISTAKE NO. 3 Are you planning on selling or buying a home in 2019? Siau said to be aware of this common mistake: “As lenders, we don’t underwrite to the seller’s finances nor do we pull a credit report on the seller. Yet, many times we see problems during a probate sale, estate sale or REO sale, the person signing on the listing agreement was not authorized to act on behalf of the trustee for the property beneficiary,” Siau said. He explains that this can cause a delay in the escrow closing from 30 days to 4 months.

HOW TO FIX THIS “Verification can be done up front by matching the name on the recorded title with the listing agreement including the middle initials,” Siau said.

FINANCIAL MISTAKE NO. 4 “Many borrowers assume they have great credit scores, they

Second, Siau recommends looking at their website which should provide information on years of experience, steer clear of a generic web page that has no details on experience. And third, look at their LinkedIn profile to determine their individual business acumen, not their Facebook page. Finally, look at their history on the Consumer Nationwide Mortgage Licensing website: NMLSConsumerAccess.org. “This will tell you if the individual has been the subject of any enforcement fines or regulatory actions related to their loan origination activities,” Siau said. “This site will also reveal their work history. Industry consolidation has occurred with many loan officers switching employers to gain a better marketing edge and/or market share.” The last 10 years of employment history of who you like to work with may raise red flags such as several employment gaps or less than 10 years of being a licensed mortgage professional. Pay attention to their “other employment” on this site to see if they are both a lender and a realtor, Siau added. he cabbage is a humble food if I ever saw one. It’s one of those vegetables that lays low, at the bottom of the crisper, abandoned because you bought it in a fit of ambition and then forgot about it, covering it with sexier counterparts: eggplant, asparagus, or Brussels sprouts (cabbage’s more glamorous cousin, only granted such status because of its place on the Thanksgiving Table and its natural sidekick, the ever-trumping bacon). But it turns out that unassuming cabbage has the last word, because even when you leave it for weeks in the fridge, it’s still pretty much usable. Peel off the top few layers and you’re good

to go. Sure, says the cabbage, walk all over me. Forget me, leave me to dry out at the bottom of your food chain. I will still be there for you. Like your kids, whom you forgot to pick up from school. Yup, that’s cabbage. The doormat of the vegetable world. But we overlook it to our detriment. Cabbage is not only one of the more flavorful ingredients out there, it’s downright cheap. As in, when you walk past the artichokes and sigh because you just can’t stomach spending $2.89 per globe (especially when you’re going to throw away everything but the heart anyway — whoever thought this was a good idea?), you can always rely on your stalwart friend, the cabbage. In American cuisine, cabbage is mostly hidden behind mayonnaise and sugar in coleslaw-type dishes. The recipes below — Eastern European and Middle Eastern, respectively — make cabbage the star, using complimentary ingredients to make the cabbage taste more like, well, cabbage. These are humble, peasant dishes. But you know what? They put the artichoke to shame. And you’ll learn your lesson: Never overlook the cabbage again.

the cabbage mixture. Taste for seasoning and add more salt and pepper according to your taste. Voila — you’re done. Simple and delicious.

Note: if you want a heartier meal, start with sliced sausage or other meat instead of the oil. The grease will work even better for sautéing. Alternately, use butter instead. You really can’t mess this up.

Haluski is a Slavic dish with counterparts in Hungary, Poland and Romania. When I was growing up, we called it Lukshn mit kroet, Yiddish for “noodles with cabbage.” And yes, it really is as simple as that title suggests. There are three basic ingredients: cabbage, onions and egg noodles. Everything else is just a variable to tweak according to your preference. The secret here is the caramelization of the onions, so low and slow is your friend. Don’t rush it. Throw the onions in the frying pan and go watch an episode of “House of Cards.” When you come back, they’ll be perfect. INGREDIENTS:

About half of a 12-ounce bag of extra wide egg noodles (wide is key; don’t use the skinny ones) 1 small head of green cabbage 2 onions 1/2 tablespoon salt, plus more to taste pepper, to taste 6 tablespoons oil, divided INSTRUCTIONS:

Slice the onion thinly. The more surface area, the more caramelized goodness. Throw it into the frying pan at medium low and let it sit for about 30 minutes. Slice the cabbage, but not as thinly; you don’t want mush. When the onions are caramelized, add the cabbage. You might have to add it in stages, depending on the size of the pan. Add the salt, and turn the heat up to medium. The salt makes the cabbage wilt. In a separate pot, boil the noodles using the directions on the package. When the noodles are al dente, drain them and add them to

In the Middle East, meals are often prefaced by a large spread of colorful salads: Hummus, tomatoand-cucumber, babaghanoush (eggplant), carrot, and cabbage — to name a few. This salad is intensely simple and can be the garnish to an entree (falafel, lamb, fish tacos), or be served as a side dish. Make sure to let the salad marinate for a while before serving. In fact, it gets better with time. You’ll wonder how so few ingredients can make such music together. INGREDIENTS:

1 head purple cabbage juice of 2 lemons 1 teaspoon salt dash of pepper 1/2 teaspoon sugar 2 tablespoons mayonnaise INSTRUCTIONS:

First, cut the head into a few manageable chunks to work with. Then, slice the cabbage thinly. Add all of the ingredients together and store in the fridge for at least an hour so the cabbage marinades. When you’re ready to serve the salad, mix it, add a dash of salt, and enjoy.

More than just green and red

rom winter comfort food to a crispy salad refresher or as spots of color in the garden, cabbage is a utility player in the vegetable world. The green and purple heads found in most grocery bins are the most common, but they’re just one type of the many varieties. Savoy is a favorite for Jan Thompson, owner of Newcastle Produce market and cafe and Twin Brooks Farm in Newcastle. “It’s a round head with crinkly leaves,” she said. “You can get them large or small — from about 4 or 5 inches (in diameter) up to 10 or 12 inches.” Savoy is good raw as a slaw or cooked in a variety of dishes. One of Thompson’s favorite ways to use it is for cabbage rolls. “The crinkly leaves make them roll better without breaking,” she said. Stuff them with meatloaf for a hardy main dish or substitute grains as the filling for a tasty vegetarian course. Napa cabbage has an oblong shape with a looser form than other tightly coiled head varieties. “It is shaped like a barrel — tall and cylindrical,” Thompson said. “We use it here in Chinese chicken salad. It is more tender than some of the other cabbages.” It also works well in stir fry recipes. Bok choy — with its white stems that end in green leaves — has a mild flavor. It’s a great ad-

dition to soups and is perfect for stir fries. Head cabbage — both green and purple — are interchangeable in salads and are versatile for main course and side dishes. And, as with other types of cabbage, “they hold up well to cooking,” Thompson said. Cone cabbage is less common but if you find it, try it. “They have pointy tops instead of round,” Thompson said. “They look kind of like an upside down ice cream cone. I put them in soups — they are good in vegetable soups.” Brussel sprouts — the tiny, tightly bound green cabbage heads that grow on a spike — offer another option for enjoying the nutrient-dense vegetable. The sprouts can have a bitter taste is not prepared correctly. A simple way to prepare them is to cut the heads in half, toss

them with olive oil, salt and pepper, then roast them the oven for a flavorful side dish. With the exception of Brussels sprouts, which don’t thrive in the the local climate, most cabbages do well in foothill gardens, Thompson said. “Mostly they need cool weather,” she said. Plant them in the fall or early spring. “We get a lot of rain (during that period) so there’s no need to water them unless we have a long dry stretch,” she said. “We just use a lot of compost in the soil and that’s about it.” Ornamental cabbage — cultivated for looks rather than flavor — is a pretty fall addition to the landscape. “We have some in flower beds,” Thompson said. “They are edible but most people just grow them for looks. They are good as borders. We have them in the flower barrels at the store.”

Apple, Apricot & Walnut Cobbler INGREDIENTS

Basic Pie Crust 2 ¼ cups all purpose flour ½ teaspoon salt 1 stick unsalted butter (cold and cut into ½-inch cubes) FILLING

3 pounds of cooking apples (10 medium) peeled, cored and thinly sliced 2/3 cup dried apricots, diced ½ cup granulated sugar 2/3 cup brown sugar 2 tablespoons all purpose flour ½ teaspoon cinnamon ¼ teaspoon pumpkin pie spice or nutmeg 1 tablespoon fresh lemon juice 2 tablespoons softened salted butter WALNUT CRUMBLE TOPPING

½ cup chopped walnuts ½ teaspoon cinnamon

1 tablespoon brown sugar 3 tablespoons apple juice, (we used Machado Orchards freshly squeezed unsweetened pure natural apple juice) DIRECTIONS

Preparation: Pie crust: In a mixing bowl sift flour and salt. Add in cubes of cold butter. With clean hands, mix ingredients together until mixture resembles pea sized crumbles. Slowly add ice cold water, about a teaspoon at a time, just until dough forms into ball. Pour dough out onto floured surface and form into round disc. Wrap in plastic wrap and refrigerate for at least 30 minutes. Filling: In a large mixing bowl combine sugar, flour, cinnamon, pumpkin pie spice (or nutmeg), and salt. Add apple slices, diced apricots and freshly squeezed lemon juice. Fold ingredients together until well coated. Set aside. Topping: In a small mixing bowl combine chopped walnuts, cinnamon and sugar. Set aside. Save apple juice in a small cup for later. Pre-heat oven to 355 degrees. Assembly: Pie crust: Remove dough from refrigerator. On a floured surface, roll out dough into a rectangular shape about a ¼-inch thick. Place dough in greased 9-inch-by-5-inch baking dish and lightly pres up sides of the dish. Lay down parchment paper making sure to cover all dough, pour in enough dried rice or beans to weigh down the crust for blind baking. Place crust in the oven and bake for 15 minutes. Remove from oven, let cool for 10 minutes then remove parchment paper with dried beans or rice and store in a jar for future blind baking. Filling: Pour filling mixture into pie crust and spread evenly. Topping: Sprinkle walnut crumble topping evenly over filling. Drizzle about 3 tablespoons of apple juice over top. Place cobbler in oven and bake for 30 minutes. Remove from oven and try to resist cutting into it for about an hour to allow the cobbler to set up.

Pumpkin Raisin Muffins INGREDIENTS:

2 cups all purpose flour ¾ teaspoon baking soda ½ teaspoon salt 1 teaspoon cinnamon 1 stick unsalted butter 2 tablespoons vegetable oil 1 cup granulated sugar 2/3 cup brown sugar 2 large eggs 2 cups 100 percent pumpkin puree (canned is perfect for this recipe) 1 teaspoon vanilla extract ½ cup of raisins DIRECTIONS:

Pre-heat oven to 350 degrees. In a large mixing bowl combine butter, oil, granulated sugar, brown sugar, pumpkin puree, eggs and vanilla extract and blend together with an electric hand mixer until smooth and slightly fluffy. In a separate bowl sift flour, baking soda, cinnamon and salt. In stages, gently fold dry ingredients into wet ingredients. Once the wet and dry ingredients have been combined, fold in the raisins in until evenly distributed throughout the batter. Line a muffin tin with cupcake liners. Spray top of tin and the inside of each liner with cooking spray. Spoon batter in and fill about ¾ of the way up. Bake for about 18 to 20 minutes or until toothpick test comes out clean.

s you were celebrating the start of the new year, did you find yourself making a few resolutions to start 2019? Staying fit and healthy, and losing weight are some of the most common New Year’s resolutions. While it may not be easy, there are plenty of good reasons to make a lifestyle change for your health. Preventing disease, more energy and improving your overall quality of life. There is more and more research that points to a change that can impact your overall health and may help you achieve those resolutions: Switching to a plant-based eating lifestyle. This means enjoying plant foods in their whole, unprocessed form — fruits, vegetables, lentils, beans, whole grains and seeds. You move away from animal products, such as poultry, meat, fish, dairy and eggs. And you pass on processed foods, including oil and sweets. It’s easy to focus on what you might be giving up. But plantbased eating is yielding fantastic results for many of our patients. Some are seeing lower cholesterol, blood pressure and blood sugar. In some cases, we are seeing reversal or prevention of heart disease and diabetes. Many report healthy weight loss. I am fortunate to work with many clinicians who are experts in their field and can share knowledge based on their personal experience. One of them is Dr. Andrew Klonecke, who practices nuclear medicine. This field includes both diagnostic studies and providing treatments for thyroid disease and certain cancers. Dr. Klonecke also follows a plant-based eating lifestyle. I wanted to know: How does a person start with plant- based

eating and then sustain it? “You need to clean out your pantry. Many pantries have a lot of processed foods. Then you need to stock up on beans, legumes, lentils, grains, and start buying more fruits and vegetables,” Klonecke said. “People think of it as being expensive. But we think we spend about 30 percent less on our food bills since we started following a whole food, plant-based diet.” One other important point: You can get the protein and calcium you need from beans, vegetables and non-dairy almond or soy products. Klonecke said the key to sustaining this lifestyle is you must cook and set yourself up for success. Online research will yield information and recipes. Then he recommends cooking in batches. Making large pots of oatmeal, bean chili or quinoa on the weekends to eat over the course of the week. Chop fruits and vegetables so that they are ready to go. Some recipes can be altered to be plant-based. Burritos or tacos with beans, rice and vegetables can be satisfying without the meat and cheese. Burgers can be made with vegetable patties or grilled portabella mushrooms. Vegetable kebabs can be fun to make with your children. “What you value, you will sustain. If you value living longer, if you value seeing the doctor less, taking few medications, weighing less, whole food plant-based eating can do that. Everyone has to find their own value,” Klonecke said. Kaiser Permanente members can take advantage of plantbased nutrition classes. EXERCISE BECAUSE —YOUR BODY WORKS It may seem like an odd reason to work out, but the fact that you can work out ought to inspire you to do so. After all there are plenty of folks who have been affected by disease or congenital conditions that make working out impossible. If you are able to exercise, do it! Every movement you make, be grateful and work to learn your body’s limits. In essence when you do this you’re giving your body a high five.

EXERCISE BECAUSE — DISEASE CAN’T HANDLE IT True, there are diseases that will attack you regardless of your fitness level. However exercising regularly (starting today) is one of the best ways to build yourself up against all sorts of ailments and illnesses. From the common cold to heart disease, exercise helps you avoid health issues and live a healthier, longer life.

EXERCISE BECAUSE — YOUR FAMILY LOVES YOU Because you want to be around for years in the future, you need to exercise. As seen above, exercise is a great way to fend off all sorts of health issues, many of them life-threatening. So if you want to show love to you family members who love you, you’ll need to work out regularly. Afraid your workouts will take away family time? Get up earlier or take your loved ones with you.

EXERCISE BECAUSE — YOU BEAT GOALS Some people meet goals. When you commit to getting in the

gym today, you set yourself up to beat goals. Because once you reach your new bench-press or weight-loss goal, you move on to the next.
