EBERLE WINERY EBERLE’S AWARD WINNING WINES ARE MADE WITH EXPERIENCE One of the first things you might find out about Eberle Winery is the fact that it is the longest continually-running family owned wine establishment in Paso Robles. The winery has been in business since 1979 when Gary Eberle bought 64-acres in the area, and decided to produce wines under his own label. With years of experience, Eberle releases a wide range of wines that receive accolades. In fact, every wine with the Eberle label has earned a gold medal, or better, in 2018.

Wine Godfather of Paso Robles When Eberle decided to set up shop in the Paso Robles region, he was one of three people who helped draw the lines for the new appellation. Eberle is known for its Cabernet Sauvignon, which was first released in 1979, and also for its Rhone varietals. In addition, Eberle was the first winery in the United States to make a wine made from 100% Syrah fruit. When the varietal started to

gain ground in the 90’s, the Wine Spectator labeled Eberle, “The Johnny Appleseed of Syrah.” The Eberle Vineyard is located on 40 acres of land featuring Cabernet Sauvignon, Chardonnay and Muscat Canelli varietals. The winery also partners with other exceptional vineyards in the region. Eberle only uses fruit from Paso Robles. “We use Paso grapes to make Paso wines,” said Marcy Eberle, co-owner of the winery.

A Visit to Eberle When you visit Eberle’s tasting room, be sure to look for the bronze boar statue. The word eberle means “small boar” in German, and it is considered good luck to rub the animal’s nose. The statue found at the tasting room is a replica of one cast in the 1600’s. (The original can be found at the Straw Market in Florence, Italy.) Some of the wines to look for in the tasting room are the: • 2017 Viognier – Double Gold and Best of Class, C.C. Wine Competition • 2016 Barbera, a cult favorite which sells out quickly • 2016 Cabernet Sauvignon, expected to be released this fall The Cabernet is the winery’s flagship wine. According to Eberle, “My husband says that Paso grows the best Cab in the state. It’s definitely his beverage of choice.” While visiting the winery you can also take a tour of the underground caves with staff who know about Eberle and the region as a whole. The winery is committed to inviting visitors to both enjoy the wines and be educated about the wine making process at the same time. When you visit the caves, you will see more than 2,000 barrels stacked to the ceiling with Eberle wines. The winery

Allegretto Vineyard Resort for Making Holiday Memories No holiday tradition is complete without gathering around the table for conversation, laughter and great food. The Allegretto Vineyard Resort is devoted to gastronomic excellence, and the Mediterranean-inspired creations at Cello Ristorante & Bar enchant locals and visitors alike. At the culinary helm is Executive Chef Justin Picard who crafts seasonal menus, including special Christmas and New Year’s Eve combinations, with ingredients sourced regionally and from the Chef’s Garden on the estate. On a daily basis, Chef Picard can be found in the garden harvesting fresh ingredients for his inspired dishes and seasonal mixology program. He also raises bees for honey, harvests olives for tapenade, and gathers seasonal fruits from the estate, such as figs, mandarins, pomegranates, persimmons, and Meyer lemons for his creations. You can join Chef Picard for an Organic Garden Tour, Saturdays at 2:30 p.m. The extensive wine list, local artisanal beers and craft cocktails complement the daily offerings. The restaurant opens to a patio with iron fire bowls and a bocce ball court that takes advantage of the garden setting. Whether for an energizing breakfast, productive lunch, happy hour, or romantic dinner, Cello is Paso Robles’ destination restaurant with the highest standards, service, and commitment to delighting guests. Ask for the prix fixe three-course lunch ($15), or dinner ($35), or explore the full range of offerings on the menu and wine list.

Many accommodations offer guests a sense of physical relaxation, but at the Allegretto Vineyard Resort, emotional and spiritual rest are given equal attention; you’ll leave yearning to return. The resort is nestled on a 20-acre estate in Paso Robles that includes wine grapes, olive and fruit trees, walking paths, and manicured Mediterranean gardens with crafted vignettes. The thoughtfully curated environment sets a tone for serenity and discovery. The resort’s 171 guest rooms and suites are complimented by museum quality art and artifacts, French inspired Abbey, boutique spa, pool and cabanas, wine tasting room, Cello Ristorante & Bar, and a myriad of event spaces, providing a remarkable setting for holiday traditions. “The Allegretto’s purpose is to inspire joy in every holiday celebration we host,” said Allegretto’s General Manager, Rich Verruni. “Whether that’s a family reunion in the Murano Private Dining Room, a company party in the Dylan Room or Veneto Ballroom, or a gathering of friends in Cello Ristorante & Bar. Our commitment is to ensure that each experience lifts the hearts of those who attend.” The expansive Italian-style villa with global accents counts among its many venues a grand 12,000-square-foot piazza, 375-person-capacity ballroom, in addition to several smaller, beautifully appointed celebration rooms, the Abbey, and gardens for intimate gatherings or large events. The resort’s professional Catering & Events team works to simplify and streamline planning.

Visionary Douglas Ayres first established the eight acre vineyard on the estate prior to building the resort. The award winning Allegretto wines were launched concurrent to the opening of the property in fall 2015 and feature Viognier, Duetto—a field blend of Viognier and Vermentino, Malbec, Tannat, and Cabernet Sauvignon. The wines can be enjoyed in the Willow Creek Tasting Room, located at the resort, or at Cello Ristorante & Bar. The Allegretto Vineyard Resort is located at 2700 Buena Vista Drive in Paso Robles, California, 93446. For more information, please visit AllegrettoResort.com, or call (805)369-2500.

WILD HORSE WINERY QUALITY, CONSISTENCY AND EXCELLENCE For over 36 years, nestled within the laidback surrounds of Templeton, right next door to Paso Robles, Wild Horse Winery has earned itself a solid reputation for creating some of the best wines on the California Central Coast.

Committed to Making Beautiful Wines In 1981, founder Ken Volk was among a handful of Paso Roblesarea vintners committed to making beautiful wines before they were ever found on a wine tasting map. Over time and with each vintage, he became one of the most respected winemakers in the region. A third-generation Californian, Ken attended Cal Poly State University. A fruit science major, he got into winemaking by

accident when he traded vineyard responsibilities with a fellow student. Ken’s knowhow grew right along with his production of an initial 600 cases to 150,000 over two decades. His expertise and dedication to quality, consistency and excellence are what won Ken both respect from his peers and many accolades from within his industry. “Nothing has changed,” said Nicki Armenta, tasting room manager. “We have humble roots in the community. After our operation was purchased by Constellation Brands in 2007, it still feels like a family-owned winery and vineyard operation of educated people, many of them Cal Poly grads.” And it’s precisely this relational approach that lends itself to educating their customers in the tasting room.

The Wild Horse Secret to Great Wine

Eric

12

“Sourcing and variety” are what distinguish Wild Horse wines from all others, said senior winemaker Todd Ricard, an Army veteran and graduate of Cal Poly’s Wine and Viticulture program. “We continue to source grapes and vineyards among the best in Santa Barbara and San Luis counties. Our wine style continues to be food-friendly and approachable.” Todd and winemaker Kip Lorenzetti, whose own philosophy is to allow good fruit to express its terroir, keep the bar high for creating the Chardonnay and vineyard-designated reserve Pinot Noirs that reign supreme at Wild Horse along with cabernet Sauvignons, Merlot, Rhône-style varietals and more.

Wine Country This Month: Central Coast

Todd and Kip

Celia Wild Horse makes full use of the many aspects that affects the character of their wines, including harvesting grapes of the same variety from several terroirs, but fermenting them separately. For those who have listened to related voices sing, the interconnected vibe is much the same. This dynamic has encouraged experimentation with new methods in small lots that produce pleasing results.

Tasting Room Offerings In the tasting room, an enticing example is their 2015 Blaufränkisch, a satisfying, aromatic, spicy Central European grape that’s received increased attention in North America. A versatile wine, akin to a robust version of pinot Noir, Blaufränkisch pairs easily with both cheeseburgers and holiday dishes. More wines to enjoy throughout the holidays are the 2016 Salvador and the 2015 Dolly Llama, a nicely structured red wine blend with a lovely finish. Dolly Llama showcases grapes from three sub-AVAs within the Paso Robles region – Willow Creek District, El Pomar District, and Wild Horse Estate fruit from the Templeton Gap District AVA. Wild Horse welcomes outside picnics or call ahead to reserve their Cheese & Charcuterie plates ($14-18/pp). “We’re not a large event facility. We keep our groups small and intimate. From January through December, there are only about 13 of us and we know one another well,” said Nicki. “We’re very proud to be part of that open, warm relationship our founder Ken Volk had with his guests,” said Nicki. “We’re a part of his vision, his plan, and his style of winemaking; and we’re going to stay true to that!” >> MELISSA CHAVEZ

HITCHING POST WINES OPENS NEW TASTING ROOM AND LUNCH VENUE Santa Barbara County has an exciting new tasting room at Hitching Post Wines, right next door to the ever-popular Hitching Post 2 Restaurant at 420 East Highway 246 in Buellton. More than just the location made famous in the film, Sideways, the new tasting room—created by Frank and Jami Ostini and Gray and Charlotte Hartley—has become a prime destination where everyone can enjoy wines made from among the most sought-after vineyards in the region.

About Those Wines! Gray Hartley and Frank Ostini have handcrafted wines in Santa Barbara County for nearly 40 years. Frank, owner and chef of Hitching Post 2 Restaurant, became fast friends with Gray when their appreciation for good winemaking converged. Through tenacity and hard work, what began as a hobby for long-time friends became popular and very successful. Their flagship creation, Highliner Pinot Noir, represents the “best of the fleet.” Crafted from both Santa Maria Valley and Sta. Rita Hills grapes, this go-to cuvée is a nod to Gray’s 28-year experience as an Alaskan salmon fisherman. The Hitching Post’s 10 Pinot Noir wines are created from grapes that are sourced from Santa Barbara, Santa Maria and Los Alamos. Inside the tasting room, a flight of five Traditional Tasting selections from the Hitching Post label includes their 2017 Pinks, a dry, crisp rosé, the 2016 Hometown Pinot Noir, 2015 Cork Dancer Pinot Noir, and St. Rita’s Earth Pinot Noir. HP’s 2016 enduring Generation (“Gen Red”) Red wine is a blend of Merlot, Valdiguie, Tempranillo and Sangiovese grapes. Their second Reserve Tasting menu offers a rotating series of rare, single-

COMING SOON A second phase of Hitching Post’s building restoration is under way. Soon, a public wine bar with an enclosed patio will open onto a natural stage to facilitate live music performances. A classic 1970s Airstream trailer and HP’s famous Santa Maria-style grills will offer an extended menu with onsite cooking and adjacent casual seating. Later, in the third phase, a full remodel of the family’s barn will enable guests to enjoy private events right on their picturesque property in view of the Santa Ynez Mountains.

vineyard and special aged vintages, including four Pinot Noirs – 2016 Highliner, 2015 Perfect Set, 2015 Quinta del Mar Pinot Noir, and 2015 Fiddlestix Pinot Noir, as well as their 2012 Four Top, made of primarily Merlot and Cabernet Sauvignon plus Valdiguie and Cabernet Franc grapes.

An ‘Old’ New Tasting Room, And ‘HP 2 You’ For those familiar with Hitching Post’s incredible Santa Maria-style BBQ steaks at their Buellton location, it makes more sense to dedicate a sister location in which to feature their winemaking. Hitching Post Wines is situated on a 12-acre parcel bordered by red oak trees and a large 200-year-old tree near the entrance. The 2,000-square-foot structure contains two wings. The west wing features a fireplace hearth with original oak flooring, and inside the east wing is a seating area and retail space with a corrugated tin ceiling. Between the sections is a second tasting room with photos displaying the history of Hitching Post Wines. Throughout the new construction, inlaid concrete, burnished copper wine tasting bars, repurposed barn siding and copper design elements lend a warm and welcoming rustic feel. Outside, shaded picnic grounds with lots of seating, native landscaping and walkways throughout encourage guests to relax and unwind. Malene Wines Introduces Two New Rosés and Announces the Opening of the Malene Airstream Tasting Experience Adjacent to Chamisal Winery Malene Wines, the newest member of Crimson Wine Group, is pleased to introduce two new distinctive Rosés, a Bandol-style Rosé of Mourvèdre and an Old Vine Rosé of Grenache, made from 44-year old vines. The two new wines join Malene’s recently released 2017 flagship cuvée, and all three will be on tap in the Malene Scene Airstream beginning June 1 at its new location adjacent to Chamisal Winery in San Luis Obispo. “Rosé has grown up and it’s a joy to work on a brand like Malene Wines that is solely devoted to crafting Rosé,” said Malene Wines winemaker Fintan du Fresne. “I’ve embraced the challenge to present three distinctive styles of Rosé, and I was inspired to elevate the wine from something juicy and delicious that one sips on a summer afternoon, to something that one thinks about as a serious wine.” Malene’s 2017 Rosé of Mourvèdre is a Bandol-style Rosé made from Camp 4 Vineyard, a preeminent vineyard in Santa Barbara County’s Santa Ynez Valley. Savory, textured and broad, this complex wine pairs well with barbequed pork loin and can be aged for up to two years. In an effort to “explore the limits of Rosé,” du Fresne chose a single block of 44-year old vines from Santa Ynez Valley in Santa Barbara County for Malene’s 2017 Old Vine Rosé of Grenache. He feels the age of the vines adds elegance and refinement to this subtle, ethereal wine. This wine can lay down for up to three years, and pairs well with scallops and crab. Malene’s flagship 2017 Rosé, is a Provençal-style Rosé from Santa Barbara. Although the wine is made in the Provençalstyle, it still retains exuberant California character. The wine, which is meant to be enjoyed young, is fresh, juicy and crisp with honeydew melon and strawberry aromatics. Each of these wines will be available to the public on June 1 in Malene’s 1969 Airstream Overlander Trailer, which will be located in its permanent location adjacent to Chamisal Vineyards winery.

18

Reminiscent of the ‘60s surf scene, the new mobile tasting room was sourced, rebuilt and customized specifically for the Malene Rosé brand. The Malene Airstream is roomy enough to accommodate a tasting bar and a cozy seating area for several guests. Guests can visit the Malene Airstream every Friday, Saturday and Sunday from 10 a.m. until 5 p.m. at 7767 Orcutt Road in San Luis Obispo, California. Updates about airstream hours, locations and activities can be followed on Instagram @MaleneWines and with the #MaleneScene hashtag. The wines are available across the country or at www.malenewines.com.

Paso Robles Sparkling Wines Made in the Traditional Way Champagne France is over 5000 miles from Paso Robles, but you can get a taste of that delicious bubbly just North of Paso Robles near the town of San Miguel. There are various ways to make a wine sparkle with bubbles but there is only one way in Champagne and at Vino Vargas – the traditional method pioneered by Dom Perignon and Madame Clicquot in the 1800s. Producing the bubbles inside the bottle with a second fermentation, riddling the bottle by hand until it is crystal clear and then removing the yeast (disgorging) and applying the cork and cage. It’s tedious and hard work but the bottle-by-bottle, manual process is how Pedro Vargas at Vino Vargas winery makes his Paso Doble Sparkling Wine. He named it Paso Doble to reflect: a) the wine is from “Paso” Robles, b) it requires a double (Doble) fermentation, and c) it’s the name of a Spanish dance that reflects the grace and elegance of this wine that has a bubbly personality. In addition to the sparkling wine, Vino Vargas currently offers Chardonnay, Pinot Noir, Grenache, a Grenache-Syrah-Mourvedre blend, Tempranillo and Cabernet Sauvignon, along with two Portstyle dessert wines – a red and a white. A white port? Yes. Just as “Champagne” is a term that should only be used to describe wines from that region, “Port” describes the manner and origin of that wine. That’s why Pedro is careful to describe these wines as “Port-style” dessert wines – they are made in the winery in the Paso Robles vinicultural area. The white port-style wine is called “Oro” – Spanish for gold – that describes the color of this wine. Like a late-harvest dessert wine, Oro has flavors of honey, aromas of jasmine, and pairs very well with desserts such as Crème Brulee. Served cold, the Oro is crisp and refreshing to the palate, not syrup-sweet or overwhelming. These wines are not available in your local grocery store, but you can taste, savor and buy the wines by visiting Vino Vargas in their scenic, Westside winery just outside the town of San Miguel, eight miles north of Paso Robles. The quiet country setting with views of vineyards and rolling hills is perfect for the wine lover looking for something a little quieter and special. Open daily, visitors should call or email the winery to assure they will get attended to personally be the winemaker, Pedro, and his wife, Vicky. The tasting room is open without appointments during all area wine events, such as Harvest Weekend, Zinfandel Vintage Weekend, and Wine Fest. For reservations call: (805) 369-1440. Vino Vargas is located at 950 Indian Dune Road, San Miguel. – Getting to Know –

SPARKLING WINES The joyful “pop” when opening a bottle of sparkling wine is a universal sound associated with celebration, success and special occasions. Quite simply, it’s a party in a bottle in more ways than one. — BY STEPHANIE CULEN —

P

robably the most familiar sparkling wine is Champagne. And yet, all sparkling wine is not Champagne. Champagne is named after an historic province in the northeast of France. It is a wine made with Chardonnay, Pinot Noir, Pinot Meunier or a combination of these grape varieties. Referring to sparkling wine as Champagne from any other region in the world is illegal; and yet, there are some exceptions, namely in California, where this law does not apply. Because of a loop-hole in an ageold naming war in Europe that happened to be somewhat resolved during the time of Prohibition in the United States, some California sparkling wine producers may use the distinction of California Champagne to the chagrin of many French producers. All other countries in the world must call their sparkling wine as such, and denote the region or country of origin where the wine was produced and with no reference to Champagne. Other sparkling wines throughout the world have earned equal

recognition over the years such as the Italian favorites Prosecco, Lambrusco and Franciacorta, the Spanish Cava and the German Sekt. The difference between these sparkling wines is mainly the grape variety used in its viniculture, as well as its country of origin. Spanish Cava may be white or rosé and is made from Macabeo, Parellada or Xarello grapes. Italian Prosecco is made from the Glera grape which is native to the Veneto region of Italy. German Sekt can be produced from Riesling, Silvaner, Pinot Blanc and Pinot Noir. The distinguishing quality of sparkling wine is bubbles. To create wine with bubbles, the grapes go through a process of carbonation using one of a couple of methods. One method is known as Méthode Champenoise, or Classic, or Traditional Method, discovered in Champagne, France. This is a style of sparkling wine where the second fermentation process happens within the bottle. Generally speaking, this method produces drier, less fruit-forward wines with the longest lasting bubbles. This is the method typically used for the fine wines of French Champagne, Spanish Cava, American sparkling wine and Italian Franciacorta. The other method is called the Charmat method which is used to make lighter sparkling wines like Italy’s Prosecco and Lambrusco. With the Charmat method, the second fermentation process happens in a tank and then the carbonated wine is bottled. This method produces wines that are younger and fruitier with bigger, more explosive bubbles.

how to pair like a pro

What to look for in the glass Generally speaking, if the bottle pops, it’s a sparkling wine. A sparkling wine made only from white grapes, and typically Chardonnay, is called a “Blanc de Blancs” and a sparkling wine made only from dark-skinned grapes, typically Pinot Noir, is called “Blanc de Noirs”. Depending on the kind of wine opened and the kind of grape variety used in the winemaking, there are several different notes to play with when tasting sparkling wines. All of the grape varieties used in sparkling wine contribute individual attributes to the finished wine. For example, Chardonnay offers elegance and finesse with notes of yellow apple, citrus and pear, yeasty brioche and toast with a touch of delicate honeysuckle or chamomile. Pinot Noir gives body to a sparkling wine and offers orange and red fruit flavors and subtle herbaceousness. Pinot Meunier delivers richness, fruitiness and more roundness on the palate. Prosecco is fresh and bright green apple and zesty lemon with gardenia sprinkled in a honey-like palate. In addition, when looking at the color of sparkling wines, there is the spectrum of pale yellow to bright pink to harvest coral. Each color hints at the grape variety used in the wine’s production. On the palate, sparkling wines have little tannic content with subtle finishes. And then, of course, there are the bubbles.

Wine Country This Month: Central Coast

There are many wonderful things about pairing sparkling wine with food. Mainly, it goes fantastically with just about everything you can imagine and with every course in a meal. Sparkling wines pair well with all taste profiles from sweet to sour to salty to spicy, but make sure you are buying the kind of sparkling wine that suits your taste and your dish. When choosing a sparkling wine there are several determining factors to getting what you want and pairing the wine. One is understanding the wine’s sweetness level. Sparkling wines have a wide variance of sweetness ranging from no, or very little sweetness, to very sweet dessert-like sparkling wine. Reading a sparkling wine’s label for it’s sweetness level, however, can be a bit confusing. A label with the subheading of “brut” means there is little to no residual sugar in the wine; and, a label of “ dry” on the bottle means there are more residual sugar levels. Brut Sparkling Wine is probably the most popular wine. It is dry, but there is a hint of sweetness. In this wine, the fermentation process was stopped just before the yeast ate all of the sugar leaving just a bit behind in the wine. Some quintessential favorite pairings with Brut Sparkling Wine include raw oysters, mussels and caviar, or foods that have an earthy or salty nature, as well as every kind of cheese imaginable from feta to brie to manchego to gorgonzola cheeses. Many Bruts also pair beautifully with Italian food, especially the creamy and tomato sauces that accompany rich pasta dishes, as well as poultry and cured meats. Sparkling wines also accompany almost all vegetable dishes made in any style nicely with the exception of mushrooms. Extra Dry Sparkling Wine retains more sweetness but is still not sugary sweet. Prosecco is usually made Extra Dry, as well as Rosé Sparkling wine and are good choices with fried foods such as french fries, fried calamari and a wide variety of cheeses that usually accompany dessert. The sweetest sparkling wines will be labeled Demi-Sec and Doux and these are usually paired with desserts. Sweet wines and sweet desserts work best, like fresh fruits, sorbets and chocolates. Basically, when in doubt, open a bottle of bubbles. It will turn an everyday moment into a cause for celebration.

What’s in a glass The classic Champagne flute is a clear signal for a celebration. This is the perfect glass shape to display the wine’s effervescence. Contrary to popular choice, however, the shape of the flute is not the most ideal glass for enjoying the subtleties and aromas of sparkling wine. A glass with a bigger opening is becoming more popular. The more a sparkling wine can breathe, the fruitier and more expansive it becomes. Ultimately, it’s a personal choice, and there are several options, including a simple Burgundy glass, that can serve the different expressions of the wine quite nicely.

Wine Country This Month: Central Coast

Celebrate the Holidays with the ‘12 Days of Cheesemas’ Leave the turtle doves and French hens behind this holiday season and give the gift that will leave a lasting impression with your loved ones: the gift of artisan cheese. Fromagerie Sophie has your ‘12 Days of Cheesemas’ covered with a unique, worldly selection of artisanal cheeses perfect for the holidays. Whether you’re celebrating with close family or throwing a Christmas party for the whole neighborhood to enjoy, these 12 cheeses are just what you need to make the holiday season extra special (and extra delicious). Day 12 - Gorwydd Caerphilly - This semihard, unpasteurized cow’s cheese from England hits all the right notes with its earthy rind and creamy, succulent center. Mild and buttery with hints of lemon, it would be an ideal match for Alsatian Gewürztraminer, Chardonnay and California Pinot, as well as a citrusy IPA, ale or wheat beer.

Day 11 - Alex - Named after the Alex train system that connects the countryside of Southern Germany to Munich, this semi-soft, unpasteurized cheese is washed in local herbs at five months, which imparts rich aromas to the rind and adds a welcome complexity to the taste. Dense and creamy at its core, Alex is balanced by notes of fruit and cured meats with a texture that’s elastic with incredible meltability. Day 10 -

Paški Sir - Produced exclusively from milk of the sheep on the Island of Pag, this hard, pasteurized cheese is Croatia’s most awarded cheese and a lovely choice for the holidays. With its pleasantly sharp taste and smell, and a melt in your mouth texture, it would be great sprinkled on risotto and polenta, with olive tapenade or even served a holiday ham this season. Try it with stronger red wines like Cabernet Sauvignon and Merlot.

Day 9 -

Sottocenere al Tartufo - A semi-soft, raw mild cheese from Italy, Sottocenere al Tartufo is mixed with truffle shavings and aged roughly 100 days in an edible vegetable ash rind with spices. Nutmeg, coriander, cinnamon, licorice, cloves and fennel add complexity in flavor and aroma, making it an ideal cheese to serve with a wide variety of holiday meals. An ideal pairing for red Italian wines like Barbera, this versatile cheese will also go well with sparkling wine, full-bodied whites and dry wines.

Day 8 -

Shakerag Blue - Aged four months, this Tennessee blue has a crumbly, dense paste with an added kick: it’s wrapped in local fig leaves that have been soaked in Chattanooga Whiskey. Offering complex notes of savory bacon, dark chocolate, root beer and more tropical fruit flavors towards the rind, it’s a fun cheese worthy of any holiday celebration.

Day 7 - Tomme Perigourdin Affinée - With its edible “brainy rind,” creamy texture and aromas of nuts and mushrooms, this soft, pasteurized from France is perfectly suited to Cabernet Sauvignon or a white wine with a bit of silkiness, like Semillon. Day 6 -

Langres - Dense and rich, with a creamy flavor and long finish, this semi-soft, pasteurized cheese from France

Wine Country This Month: Central Coast

is milder and more delicate than many washed-rind cheeses. The top of the cheese is concave and tradition dictates pouring Marc de Champagne into it so it infuses the paste. Try it with Burgundy, Champagne or California Rosé.

Day 5 -

L’Affinee au Chablis - A triplecream cow’s milk cheese from the Burgundy region of France, as the name implies, this cheese is aged with regular washings of Chablis wine, making it a natural pairing for any fine Chablis wine.

Day 4 -

Mothais Sur Fueille - Made from whole goat’s milk, this soft, pasteurized and slow-curdled cheese is aged on a chestnut leaf. The result is a paste that’s rich and creamy with a thin natural rind. Try it paired with a bold red wine or a sweet or tangy white wine.

Day 3 - Chiriboga Obere Muhle Blue - This German cow’s milk, pasteurized cheese is made from the milk of grass-fed cows at the foot of the Alps in Bavaria. Intensely rich and buttery, with a dense, tongue-coating texture that’s reminiscent of frozen custard, it has sweet cream and grassy flavors that are balanced with a welcome blue piquancy. Day 2 -

Cusie foglie di Castagno - This hard, Italian cheese gets its delicate and complex aromas from its lengthy aging time, sometimes over two years, where it spends time aging in cellars. The wheels are then wrapped in a layer of chestnut leaves, giving the cheese its unique flavor. Enjoy on its own, or paired with a fine dark beer.

Day 1 -

Black Betty - A crowd-pleasing cheese only available during the holidays, this goat cheese gouda from Holland is aged six–nine months with an additional six months in caves, resulting in a cheese with a firm paste and intense flavors of pineapple and brown butter. It takes its name from the black wax it’s coated with, distinguishing this pasteurized gouda from younger versions. Fromagerie Sophie is a European-inspired cheese shop with a fabulous selection of cheese from all over the world, as well as artisanal charcuterie, pâtés and specialty accoutrement. There are typically 60-80 cheeses in the case at any time, made according to old world traditions. Fromagerie Sophie is located in downtown San Luis Obispo, California at 1129 Garden Street.

Come explore our European-inspired cheese shop featuring artisan cheeses, charcutarie and pâtés from around the world. 1129 Garden St., San Luis Obispo, CA 93401 805.503.0805

More than 200 wineries produce critically acclaimed vintages in Paso Robles, Edna Valley and Arroyo Grande Valley. Visitors can head out along the gorgeous country roads to sip their way through the vineyards.

San Luis Obispo’s unusual natural beauty, along with its gentle climate, first attracted the Spanish padres to the area in the 1700s. In 1772, they built the fifth of California’s 21 missions Too Paso Pas aso Ro Robless (26 m mi miles ) MO

here, on the banks of San Luis Creek, and named it Mission San Luis Obispo de Tolosa. Today, many consider this the most beautiful of the Spanish missions.

t’s no wonder the people here call it SLO. No one is in any hurry in the cafes or on the sidewalks, and certainly no one is in any rush to leave. Strangers are genuinely friendly, always ready to talk about their favorite hiking trail or barbecue joint, or to point the way to the winery with the best Pinot Noir. It’s all part of the SLO life, that combination of good stuff that makes visiting here so nourishing to the soul.

More Prestigious California Vineyards Get SIP Certified in 2018 Jackson Family Wines and Scheid Family Wines Certify Additional Acreage the Wine Industry’s Premier Sustainability Organization Opens 2019 Certification Process on December 1 SIP Certifiedâ (Sustainability in Practice) is one of the wine industry’s oldest and most important organizations to certify that vineyards, wines and wineries use sustainable practices. SIP Certified launched its pilot program in 2008 with 3,700 acres of vines between Monterey and Santa Barbara counties. Today, there are 43,600 acres of vines in California and Michigan and more than 36 million bottles of wine that have been SIP Certified. The group recently announced the certification of a number of new vineyards and the expansion of acreage at currently certified vineyards for 2018.

New Vineyards Certified Two properties on the eastern edge of the Sta. Rita Hills AVA owned by John Wagner were newly certified in 2018: Breeze Ranch (20 acres certified) and John Sebastiano Vineyard (130 acres certified). The Record Family’s 18.53-acre Paso de Record Vineyard in the Paso Robles AVA was also newly certified.

Additional Acreage Certified Jackson Family Wines certified additional acreage at the following vineyards: Ferguson (Sonoma County), Fieldstone (Sonoma County), Copain (Sonoma County) and High Rock (Mendocino County). These sites contribute fruit to a number of JFW’s ultra-premium and luxury-class wineries and brands. As of 2018, all of Jackson Family Wines’ California vineyards– more than 12,500 acres – are now SIP Certified. Scheid Family Wines certified an additional 742 acres in Monterey County in 2018, raising their total of SIP Certified acres to 1,080. The following

Wine Country This Month: Central Coast

sites were included: Baja Viento Vineyard, Elm Vineyard, Scheid Vineyard and Viento Vineyard. Viticulture Management Inc. certified an additional 110 acres at three sites ‑ Bear Valley Vineyard, Terra Bella Vineyard and White Cliffs Vineyard – bringing their total to 1,635 acres of SIP Certified vineyards in California.

2019 Vineyard and Winery Certification Starts December 1 SIP Certified opens its 2019 certification process on December 1, 2018. To get more information or to start the process, vineyards and wineries can visit https://app.sipcertified.org/ or contact Beth Vukmanic Lopez, SIP Certified Manager, at 805-466-2288 ext. 3 or beth@vineyardteam.org. Applicants can choose to certify their vineyard or winery by implementing the rules covered in the Standards. Individual wines can carry the SIP Certified seal on their packaging when they are made with at least 85% SIP Certified fruit as verified by an inspection.

About SIP Certified Sustainability in Practice (SIP) Certified is one of the wine industry’s oldest and most important third-party assessment programs. It utilizes a block-to-bottle, integrated approach to management, enabling farmers, wineries and winemakers to preserve the environment and protect human resources. SIP Certified boasts strict, non-negotiable requirements and standards based on science, expert input, independent verification, transparency and the absence of conflict of interest. SIP Certified launched its pilot program in 2008 with 3,700 acres of vines between Monterey and Santa Barbara counties. Today, there are 43,600 acres of vines in California and Michigan and more than 36 million bottles of wine that have been SIP Certified.

Santa Maria Costa de Oro Tasting Room Costa de Oro Tasting Room is located right off of Highway 101 in Santa Maria. This site pays tribute to the history behind Costa De Oro — it was the strawberry stand for Gold Coast Farms, the parent company of Costa De Oro, which has been farming Santa Maria since 1978. Gold Coast Vineyard was planted to 20 acres of Pinot Noir and 10 acres of Chardonnay in 1989, and these grapes were sold to the area’s best wineries — including Au Bon Climat. Gary Burk, Costa de Oro co-owner and winemaker, was fortunate to work in the winery with Jim Clendenen from 1994-2002, and during this time he began to make his own wine. Gary started with just one barrel of Chardonnay and one barrel of Pinot Noir. Today, Costa de Oro produces more than 6000 cases featuring Chardonnay and Pinot Noir from the estate — Gold Coast Vineyard. At the 2017 Central Coast Wine Competition their Estate Chardonnay won “Best of Show” and their Estate Pinot Noir received a “Gold Medal.” The best place to experience the wines is at the tasting room, where guests can taste five wines for only $10.

Live Music In addition to their regular tasting room hours (normally 11 a.m. to 6 p.m. daily), they have music three nights a week...Thursday

5-7 p.m. (Classical), Friday evening, “Friday Night Wine Downs” featuring live music from local musicians & $12 food plates available. Then on Saturdays they have acoustic music 3 to 5 p.m.

Kegs Another facet to the Costa de Oro portfolio is their “Wine on Tap.” Kegged wine, wine stored and shipped inside five gallon kegs instead of bottles, has been gaining popularity throughout the past several years. Costa de Oro started kegging wine for high-end accounts, like Roy’s Hawaii. Now these wines, a white and a red, are available in the tasting room by the glass and by the growler (these can be refilled). Costa de Oro wine club members receive discounts on keg wines, bottled wines and merchandise. To Sa San Luis Obispo (32 miles )

TOP NINE What Not to Miss

photos by Melissa Chavez

Santa Maria The Santa Maria Valley boasts some of the region’s finest vineyards, with the maritime climate providing the perfect balance for the fruit, cooling it with fog and coastal breezes, lending to a balance of flavor and acidity. Enjoy a taste of the valley with over twenty tasting rooms to visit. The rich agricultural farmland also produces luscious strawberries that the area celebrates each year with a Strawberry Festival. The famous Santa Maria-style barbecue is a must-try for every visitor to the region, featuring a succulent tri-tip cut of local beef, that is slow-roasted for several hours over an open fire pit filled with native live oak wood. Santa Maria’s western heritage is celebrated with the annual Elks Rodeo and parade, held each June, which includes professional champion cowboys from the Professional Rodeo Cowboy’s Association. Located near Santa Maria is the charming Old Town Orcutt, perfect for an afternoon of antiquing. Rich in multicultural history, indigenous Chumash and Spain’s famous Portola Expedition of the Central Coast were followed by homesteading Swiss-Italian dairyman, Danish, Scotch, Irish and English settlers, Japanese, Portuguese, Chinese, Filipino and Mexican farmers and workers. Steeped in the traditions of their families, city pioneers arrived and nurtured the area. Their efforts later became immortalized on street surnames, businesses, schools and even Santa Maria-style BBQ.

Los Olivos Larner Vineyard Tasting Room The Biggest-Littlest Tasting Room in Los Olivos Sandwiched between Panino (a quaint café serving up delicious sandwiches) and the Los Olivos General Store on the corner of Grand Ave and Alamo Pintado, (in a vintage 1901 gas station building), is the Larner Vineyard’s Tasting Room. Although barely 200 square feet, don’t let the size deter you from visiting and tasting some of the most impressive, highly acclaimed wines in this wine town of about 40 tasting rooms. The tasting room, café and General Store perfectly meld together a sense of yesteryear in a charming, relaxing and very tasty setting.

Que Syrah Syrah! Translated….that simply says: WHAT Syrah! If you love Rhone varietals, especially Syrahs, Larner is the place to taste. Michael Larner is a master winemaker of Rhone varietals, it is his passion, and Ballard Canyon, where Michael grows his grapes, may be one of the most highly regarded micro growing areas in the Santa Barbara area. Quite a few quality producers throughout the Central Coast source grapes for their own wines from Michael’s Ballard Canyon Vineyard, so step into the Larner Tasting Room for a real treat. Jeni, the tasting room manager, is personable, friendly and knowledgeable, loving to engage visitors, chatting and describing the various wines, winemaking philosophy and even some family vignettes. Christina, Michael’s wife, runs

the Los Olivos General Store, adjacent to the tasting room, and occasionally will pour in the tasting room. And, don’t be surprised to sip with Michael Larner on occasion, when he stops by for a visit, to relax with a glass of wine. The current tasting menu consists of 5 wines, including 2 Syrah’s, a red Rhone style blend, a Rosé and a very special white: Malvasia Bianca. Although specializing in Rhones, especially Syrah, don’t miss savoring Larner’s Malvasia Bianca. Michael trained in Italy, and this aromatic white Italian varietal is Michael’s homage to Italy. On a warm spring or summer day, you will be hard pressed to find anything more pleasant than relaxing with a glass of this liquid gold.

Sip-Eat-Shop Next door to Larner’s tasting room is Panino, where you can order a savory sandwich, enjoying it on the patio out front, relaxing and people watching, accompanied by a glass of wine. Once you have finished, take some time to browse through the Los Olivos General Store, where you are sure to find something to grace your home. On your next visit to Los Olivos, make Larner Vineyard Tasting Room a “must visit.” Once you do, and taste these tantalizing wines, you will come back again and again; I certainly do. Don’t expect a conventional winery tasting room. This is a wine shop that offers select tastings; and if it’s Pinot Noir you want, along with other Central Coast limited-production wines, you have come to the right place. At any given time there is upwards of 100 wines (about 85% Pinot Noir) in stock. Many of the wines Chris stocks are from wineries that don’t have tasting rooms, and with such limited production, they are extremely hard to procure. Don’t be surprised to see labels such as Saxum, Alban, Sea

While you sip, Chris will give you a veritable education on not only Pinot Noir, but the wines, vineyards, terroir, micro climates and exceptionalism of the Santa Ynez Valley. The tasting menu varies as does the inventory. For $10 you will taste nine individual wines from the Central Coast, most from the Santa Ynez Valley. Your tasting will end with a unique intriguing dessert wine. On my visit, Chris concluded my tasting with a Saint James Raspberry Regale – and I couldn’t wait to get home to try it over vanilla ice cream!

Buellton Brick Barn Wine Estate Brick Barn Wine Estate is the type of place that will leave a lasting impression. You will remember the barn, made from hand-laid bricks, and originally designed to house Arabian horses, the historic ranch near Buellton, and the red and white wines, such as the 2016 Grenache Blanc, the 2016 Chardonnay and the 2016 Pinot Noir.

A Winery with a Rich Heritage Located in the Santa Ynez Valley, Brick Barn Wine Estate was once part of Rancho San Carlos de Jonata, a 26,634 acre piece of land which stretched across what is now Solvang and Buellton. When Norman Williams purchased the land more than 40 years ago, he decided to honor its heritage by continuing to farm and tend cattle. He then built a 36-stall brick barn and bred Arabian horses for many years. Recently, however, Norman and Kathy transformed part of their ranch into a 35-acre vineyard, and put their focus into winemaking. Brick Barn Wine Estate has many things about it that make it unique. For one, the vineyard faces south, and benefits from the marine influence coming from the Pacific Ocean and the strong sun exposure. This combination produces multi-dimensional fruit. Another is the fact that the ranch is relatively unchanged, with wild pigs, red tail hawks, and other wildlife roaming the ranch, and plentiful oak trees.

Corporate Events, Weddings and More

A Winemaker with Vision Brick Barn’s wine maker Rob DaFoe started out as a snowboarder, but became interested in wine while touring Europe. After his snowboarding career ended, he made a documentary about winemaking called From Ground to Glass, and, eventually, started working at local wineries before launching his own label. From the beginning, he was recognized as a winemaker of distinction. Wine Spectator’s James Laube called him a rising star in the Cabernet Sauvignon arena. As a Santa Barbara native, DaFoe is dedicated to bringing out the best in the wines. “The harmony of the ground to the glass is unfolding and a large part

Lompoc Zotovich Estate Vineyard & Winery Zotovich Estate Vineyard & Winery may be a small, familyrun entity, but its handcrafted wines produce big results. Wine critic Antonio Galloni gave both Zotovich’s 2013 Pinot Noir and Chardonnay 93 points, with the 2013 Syrah receiving a 95. The road to success wasn’t easy however. Steve Zotovich said that he didn’t walk into a ready-made and profitable vineyard. When he first bought the vineyard in 2004, it needed a lot of work. “The weeds in the vineyard were taller than the vines,” he said. He removed a grove of eucalyptus, and made many other improvements. “We started out grassroots to get to where we are today,” Zotovich said. He credits his winemaking team with emphasizing the production of ‘serious wines’. The current winemaking focuses on showcasing the incredible quality of the grapes from Zotovich Vineyard and constantly striving for excellence. Ratings by reviewers like Stephen Tanzer, Robert Parker and Antonio Galloni show that critics as well as consumers find their varietals noteworthy. The Zotovich tasting room is located at 300 North 12th St., Suite 1D, Lompoc. The tasting room is open daily from 11 a.m. to 5 p.m., or by appointment. For more information, call (805) 7361600 or email info@zotovichvineyards.com.

La Purisima Mission: Tours, Hiking & Living History Events At the awe-inspiring La Purisima Mission State Historic Park, visitors can experience what life was like for the first Spanish settlers to Lompoc Valley. The 2,000 acre park is the site of the stunning, extensively restored and furnished La Purisima Mission, founded in 1787. Visitors will discover 25 miles of trails for hiking and horseback riding, a Visitor Center, Exhibit Hall, and a collection of livestock that includes horses, Spanish bulls, pigs and sheep. The park is open seven days a week, except Thanksgiving, Christmas, New Year’s Day, from 9 am to 5 pm for self-guided tours; guided tours are offered Wednesdays through Sundays, and holiday Mondays, at 1 pm. At La Purisima Mission State Historic Park, ten reconstructed buildings with furnished rooms, mission gardens and livestock, complete the remarkable portrait of this historic mission. Park entry fees per car are $6, general admission; $5,

44

seniors; and $3 for physically-challenged visitors. Here’s a list of events now through the end of the year. Founding Day Remembrance at La Purisima Mission: December 8, 2018 Brightly lit lanterns lead the way to an evening of candlelight and music observing the anniversary of the founding of La Purisima Mission in 1787. Founding Day recognizes the day La Purisima Mission was established on December 8, 1787 on the Feast Day of the Immaculate Conception of Mary. Highlights of this annual observation include a Founding Day Mass at noon and a festive Founding Day evening concert at 7 pm in the setting of the historic church by candlelight, followed by fellowship and refreshments at La Sala. The public is invited to attend both events. No reservations are required. Las Posadas at La Purisima Mission: December 15, 2018 Costumed docents lead the Las Posadas procession though the Mission grounds with songs in Spanish and English on December 15, from 2 to 4 pm. The tradition dates back over 400 years to Mexico and reenacts the biblical journey of Mary and Joseph seeking shelter in Bethlehem. Last Day of the Year Hike: December 31, 2018 A Last Day of the Year Hike is slated New Year’s Eve morning, December 31, from 9 to 10:30 am, starting at the Visitor Center. As with the Thanksgiving-time event, this hike is moderately strenuous, family friendly, free with park entry fee and last about 1.5 hours. Dogs are welcome, with clean up required.

Old Town Lompoc: Murals & Heritage Walk Big art is everywhere and visitors from all over the world come to see some 40 murals on street corners, in alley ways, and on sides of prominent buildings that have turned Old Town Lompoc into an outdoor art gallery. Most of the murals are curated by the Lompoc Mural Society, a local non-profit dedicated to revitalizing historic old town and the valley’s economy through cultural tourism, and using art as a tool to help build bridges across barriers between ethnic and cultural groups. The city's latest "Mural in a Weekend" project was held earlier this month; volunteer artists along with visitors joined with Master Artist Art Mortimer to paint a new mural titled "Chautauqua,” which depicts the traveling shows that flourished in the U.S. at the turn of the 19th century and came to Lompoc. The Old Town Heritage Walk is a one-mile self-guided walking tour of Lompoc that showcases the city’s history and architectural gems dating back to 1876. History enthusiasts will especially enjoy the Andrew L. Huyck House (1890), Artesia School House (1876), Lompoc Museum (1911) and the Italian Stone Pines (planted 1940). As part of the experience, be sure to enjoy lunch and antiquing in Old Town along the route. Visitors can download the Mural Tour Map and Heritage Walk Guide at ExploreLompoc.com or stop by the Lompoc Valley Chamber of Commerce & Visitors Bureau for a printed copy.

Foxen Canyon Foxen Canyon Wine Trail The Foxen Canyon Wine Trail, connecting the Santa Ynez and Santa Maria Valleys, is just 10 minutes north of Los Olivos, but feels like it is a world away. This 30-mile stretch of road is home to over a dozen wineries, nestled in the canyon and surrounded by rolling hills and vineyards. With the exception of Garey Deli on Foxen Canyon Road, there are no other commercial food establishments along The Trail. It’s a good idea to bring food and water.

Wineries and History Heading north from Los Olivos, one of the first wineries you will come to is Andrew Murray Vineyards. The “Visitor’s Center’s” view and tasting area is extraordinary, but not nearly as impressive as the award winning wines. There are several tasting flight options, including a wine and chocolate pairing, a wine and cheese pairing (by reservation only), and more in depth tasting and tour opportunities to choose from. Specializing in Rhônes, Andrew is extremely passionate about his wines and hopes all who visit his winery will “taste his passion in every sip.” Other iconic wineries on the southern-end of The Trail are Firestone, Fess Parker, and Koehler. Each winery has its own distinctive personality; you may find yourself planning your next visit before you finish your last sip of wine. Towards the northern-end of The Trail, in the Santa Maria Valley AVA, you come to Rancho Sisquoc Winery. One of the earliest wineries in Santa Barbara County, Rancho Sisquoc Winery produces small lot, artisan wines that are served out of a comfortable rustic tasting room. This family owned winery has been producing wines for over 40 years and is one of only two vineyards in California that grow Sylvaner (a “cousin” to Riesling.) Take the drive down their olive tree-lined lane to experience their Sylvaner in addition to other award winning wines, and bring a picnic to enjoy at one of the tables on their expansive grounds. As you follow the sign to Rancho Sisquoc Winery and make the right turn up the road, you will notice a church perched on the hillside. Take a small detour and drive up to The San Ramon Chapel. In 1875, Frederick Wickenden built the chapel and cemetery for his wife, Ramona Foxen, because the closest chapel at that time was Mission Santa Inez in Solvang, 30 miles away. Designated as Santa Barbara County’s Historical Landmark #1, the chapel is still in use today. Take time to explore and discover the wonderful wines, people, vistas, views and history the Foxen Canyon Wine Trail has to offer. Winter, spring, summer or fall……all you have to do is: GO!

Wine Tasting 101 Visiting a winery tasting room may sometimes be intimidating, especially if you are not used to wine tasting and aren’t quite sure what to expect. Following the guidelines and etiquette tips below will help enhance your experience as you travel through the wine country of California’s Central Coast. Be aware, although some wineries don’t charge for tastings, most do. Figure an “average” tasting fee may be $10-$30. Many wineries will also waive the fee with a purchase, always ask. Ready to taste? Let’s get started! • Don’t be self-conscious to share a tasting with your companion – it’s not looked on as being cheap, in fact, it’s smart. • Don’t worry if you “don’t know good wine.” “Good wine” is what you like. Period. • You don’t have to finish the glass. You are tasting, not drinking – use the dump bucket. Those little sips add up fast. • You don’t have to like everything poured. The reason you are tasting is to see what you do and don’t like. • Take time to smell the roses, or wine! Swirl the wine in the bowl of the glass then take your time, put your nose into the bowl of the glass…and inhale to experience the bouquet. See what fragrances you can identify: Earthy? Lemon scented? Honeysuckle? Cherry? Tobacco? It’s okay if you don’t identify any of those things, with time and tasting you will!

56

• Remember the five “S’s” of wine tasting: See (the wine in the glass), Swirl, Smell, Sip and Savor. (Take a small sip. Let the liquid surround your taste buds, what flavors can you identify)? • A sk questions! Remember…there are no stupid questions. You are there to enjoy and learn, and your server is there to help you. • Don’t feel self-conscious expressing your opinion, there is no right or wrong. • Don’t feel pressured to buy a bottle or to join a wine club, (however, if the tasting is free, or if you have a private tasting with a winemaker, it is good form to purchase a bottle). • Leave a tip if you have had a nice experience ($3-$10 generally). • Enjoy yourself and remember, what you like today, you may not like tomorrow; your taste and palate may change, and that’s a good thing. • Don’t wear scents into a tasting room (cologne or perfume), and try not to wear white! • A sk your server to recommend their favorite wineries to visit. • Seek smaller, out of the way, boutique wineries. • Hydrate—hydrate—hydrate! Hint: Drink one glass of water for each glass of wine. • Bring something to snack on such as crackers, breadsticks or a

baguette. Take time for lunch. When picnicking at a winery, never drink wine from another winery. • Try to plan ahead. Do some research to determine if there is a tasting fee, if appointments are necessary and the policy on dogs and children. In general, three to four wineries will fill your day. • If possible have a designated driver. If staff feels you have had enough to drink they may refuse service, it’s for your own well-being. • Trust your palate. Don’t worry if you don’t like what your friends or companions like. Not everyone likes the same things. This is about you – not them.
