fter more than a decade of success in Loomis, La Villa Mexican Restaurant decided to expand with a second location in Granite Bay. After two years in business, it’s seen much success.

Maria and Victor Lopez worked in the restaurant industry for more than 20 years. Victor started as a dishwasher and worked his way up to cook, where he started to learn his own recipes. Soon after, Victor opened the Loomis location of the family-owned restaurant.

Currently, the Loomis location is owned by Maria and her son. When daughter Margarita Lopez decided to join in the family business, it was around the same time the second location was opening. The mother-daughter duo of Maria and Margarita run the Granite Bay location.

La Villa received its name after the small village in Mexico, as the restaurant itself is petite.

Immediately after entering La Villa, you’re instantly greeted with the warm and inviting atmosphere, as well as tasteful and authentic music to set the mood.

continued from page 11 La Villa’s house special is the steak ranchero, which is a customer favorite, Margarita said.

“It’s our house specialty, which has thin slices of steak with onions, tomatoes, Anaheim chilies and in-house made sauce,” she said. “We also have enchiladas, chili relleno, tacos and more. It’s all very authentic and good” Margarita said her favorite part of the business is meeting the customers who come in.

“We really care about our customers. We like to always have a member of the family here to be involved with the customers. It’s always nice to see them come back and get to know us,” she said.

Margarita said she welcomes everyone to try their food.

“We really care about this space. It’s small and family-owned. Every restaurant has something different. Ours is made with love and care,” she said. “I really love what I do.” ✶

Bushnell Gardens has long history

ushnell Gardens Nursery is not only a family business — it shares land and history with the family home.

The Bushnell family moved to the property in 1963. That’s where nursery owner Dave Bushnell grew up and where the seeds of his future took root.

The busy Granite Bay enterprise, which includes a landscaping business, had modest beginnings. In the early years, the property was a cut-your-own Christmas tree farm.

“They planted 12,000 seedlings bought from the Forest Service,” Shelby Bushnell, Dave’s wife, said. “As they tended to them and brought them up to mature size, people would choose and cut.

They’d pick their tree or the kids would help cut the tree and load it up. That’s where (Dave’s) love of growing plants started — at a young age.”

The money he made working on the tree farm went into a college fund.

“He went to UC Davis and worked in the Horticultural Department greenhouses there while going to school,” Shelby said. “I think that’s when he’d come home and start replacing the Christ-

mas trees. … He’d move the older spent trees and replace them with plants.”

During that time, Bushnell started a small landscape installation business, doing landscapes in Granite Bay and some in Davis. One of his designs and installations was the national award-winning solar HUD home in 1979 in Davis, Shelby said.

“When he was installing landscape, he had a hard time finding plants that were well grown, a nice size and acclimated for our climate,” she said. “He began growing his own plant material to install in his landscapes. People would stop by the property and want to buy the plants.”

That sparked the idea for a retail nursery and Bushnell opened the first retail facility in 1990.

“When he first opened, it was a gazebo and shade cloth cover with plants underneath it,” Shelby said.

The greenhouses went up in 1996, with covered shopping in the back.

Today, the multi-faceted business services customers and clients in Placer, El Dorado and part of Sacramento County.

Dave Bushnell handles the landscape, construction and design company, Bushnell Landscape Creations. He creates landscape designs for everything from the blank canvas of new homes to 50-year-old yards in need of revamping.

“We have done lots of model home landscapes,” Shelby said. “Mostly his true passion is growing plants and designing and building landscapes.”

“It’s my baby,” she said. “It has changed significantly since it opened … We’ve gradually transitioned it to home decor, gifts and home accessories. It’s more of boutique CONTINUED ON PAGE 16

than store. We don’t buy in bulk but by piece. We are just a single store. We don’t have the space to buy mass quantities. I don’t want to be a seller of mass quantities. I want to have a store that’s unique and special and different.”

Shelby Bushnell, also a UC Davis graduate, is a landscape architect designer.

Her work in the gift shop allows her a regular schedule as a mom, while still exercising her creativity as a designer.

The nursery has fertilizers, plants, feeders, a tool shed with quality tools, garden art and wrought iron pieces. There’s even an onsite craftsman who creates custom pieces for the landscape business and nursery customers.

There are also garden consultants who diagnose plant diseases and visit customers’ homes to provide personalized planting recommendations.

Most of the nursery’s plants are grown onsite and it is known for its large specimens.

“We have plants that will incorporate into existing landscapes and make a brand new landscape look somewhat established already,” Shelby explained.

A section of the nursery is devoted to experiment-

ing with California native plants.

“We like to grow them first in our demonstration garden so customers can see what they look like after two years or so,” she said. “We do a lot of native grasses and staples that will be happy in our climate.”

The Christmas season is big at the nursery and gift shop.

“We do a lot of home Christmas decor — table toppers, buffet pieces, dining table pieces, centerpieces and figurines,” she said. “We have Santas, deer, … tree decorations — florals, ribbons, ornaments — a lot of natural material pieces. There’s rustic to elegant and a lot of things in between.”

Along with the fresh-cut wreaths and garland for the holidays, there are special bonsais pruned and sculpted at the nursery.

Giving back is also part of the culture at Bushnell Nursery.

“This year, we’re auctioning off a decorated Christmas tree to benefit the Keaton’s Child Cancer Alliance,” Shelby said. “It supports children and their families by providing emotional, educational and financial support while increasing awareness and funding research.”

The raffle runs Nov. 2-25 and tickets are $20.

Moore Natural Ranch pasture raises heritage breeds

t’s just a couple of miles away from the bustle of Douglas Boulevard, but a Granite Bay couple’s quiet acreage could be deep in the country.

At Moore Natural Ranch, owners Stephen and Cathy Moore share a passion for preservation. Their animals — sheep, pigs, chickens and turkeys — are all heritage breeds and all pasture raised.

Cathy Moore, a bio immunologist, is closely focused on diet and nutrition.

“Because of my education, I started to look at the connections between heart disease and diabetes and the correlation that we ingest commercial food. That seems to run parallel to the increase in disease, including cancer, in this country,” she said. “I really started to examine that. I am also part Native American. If you look at native diets and diets our great-grandfathers consumed, they ate heritage meats.”

Heritage breeds are distinct from commercial animals in significant ways.

“They take a longer time to mature,” Cathy said. “They are healthy animals. They have incredible flavor, incredible texture and they are high in all of the really good healthy fat to maintain a healthy body both in the animal and for us as consumers.”

The ranch is known for its Tamworth pigs.

“We’re the only breeder of pure Tamworths this side of the Mississippi,” she said.

“These pigs are not commercial pigs. This is oldest pig on record. They graze. They eat Above, Gandolf, a blue copper maran, in the chicken enclosure. The chickens spend a good part of their day roaming the ranch acreage. Left, red bourbon and Naragansett turkeys on the ranch.

grass. They eat nuts. They forage. They are friendly. They contain a high level of super fantastic fat that fights triglycerides and cholesterol.”

And, because of a diet of hay and vegetables, their sty does have a foul odor.

Not far away is the duck enclosure, where the Moores keep Appleyard ducks, named for Englishman Reginald Appleyard. Appleyard worked during the 1930s to create a breed of good egg layers that had meat with a good flavor. “(The ducks) fell out of favor because they take six months

to grow,” Cathy said. “The eggs are a little bigger and a little creamer than chicken eggs.”

The Moores’ heritage chickens have their own enclosure and house, but mostly they roam the 5.2-acre ranch.

There are several breeds including blue copper marans, popular in part thanks to Chef James Beard.

“Beard uses them exclusively in his baking because they are the best for pastry,” Cathy Moore said.

The turkeys, residing nearby, include bourbon reds and Naragansetts.

“They eat grass and sometimes get fruit,” she said. “They love cantaloupe and pomegranates.”

The flavor of these turkeys can’t be beat for a memorable Thanksgiving or Christmas dinner.

“When we sat down for our first (heritage) bird, the flavor was so different,” Stephen

Moore said. “A good way to describe it is ‘clean.’”

The Moores also raise Hair sheep, an American breed that doesn’t have to be sheared.

“They grow wool in the winter and then shed in the spring,” Cathy Moore said.

The couple’s dedication to the preservation of heritage animals includes membership in the Livestock Conservancy, which strives to protect the breeds from extinction.

“In the last 40 years, they have lost 190 livestock breeds to extinction …” Moore said. “These breeds were abandoned because the commercial food industry animal containment system needed animals to produce meat quickly on grain and be dispatched fast. Heritage animals don’t fit that profile.”

The Moores sell onsite by appointment only, but are planning to open a store on the ranch in the spring for weekly order pickups.

Whole chickens (frozen) and pork are available year round. Pork and lamb are sold by the quarter, half or whole animal and butchered to customers’ specifications. Customers normally order a whole animal in advance and then split it up.

Turkeys are available fresh rather than frozen during the holiday season. In addition to the heritage breeds, the Moores raise standard turkeys, which are larger.

The ranch is not certified organic due to the small

size of the operation, but the Moores follow organic standards, Cathy said.

The ranch is also licensed with Placer County as a cottage food operation.

“I have a passion for bread,” Cathy said. “My specialty is wild sourdough.”

She also bakes and sells cookies and custom cakes, all available on an order basis.

In the future, her baked goods will be available for weekly order pickup at the ranch store.

Moore’s interest in baking began in 4-H. She tackled her first project with a friend — creating a pumpkin pie from scratch.

“We started with a whole pumpkin, cooked that and put it through a food mill,” she said. “The flavor was fantastic.”

The Moores’ three daughters — Ashley, Catherine and Lauren — grew up on the farm and still help with tasks.

Stephen Moore, who works for FedEx, is looking forward to the time when he can devote himself fully to the ranch and the dedication to providing a healthy source of food.

“The density of food of heritage meat is more satisfying because of the protein makeup,” Stephen Moore said. “It is protein dense.”

The couple’s message is that you can eat good food and support a sustainable environment by buying local.

New taproom in Granite Bay sets tone for modern breweries

T

here’s a new taphouse in Granite Bay creating a lot of buzz for craft beer lovers in the area. New Glory Brewing located on 5540 Douglas Blvd. opened last month and is booming with business, according to operations manager Tiffany Haberman.

The new location marks the company’s second spot with another one in Sacramento.

“We are a family-owned business based here in Sacramento,” Haberman said. “We started brewing five years at our Alpine (Sacramento) location where we have a brewing production facility and taproom.”

Placer County was always a target for the company, according to Haberman.

“We love the community and great group of craft beer drinkers in Roseville, Rocklin, Granite Bay,” Haberman said. “We want to bring our passion for quality beer and food to them. We believe in bringing people together through beer, food and art and we think we found the perfect spot to bring it all together.”

Haberman spoke to what sets New Glory apart from other area microbreweries.

“We are irrelevant to the traditional brewing style as we brew with the seasons and on a whim to push the flavor paradigms,”

Haberman said. “We have an ever-changing draft and package line up with weekly releases of three to four different beers.”

New Glory Brewing also employs executive chef Yuri Dancer.

“Our menu consists of food we are proud to serve our families, from our house-made dressing to our beer-infused pizza dough,” Haberman said.

“Our menu will change with seasons and pair well with our beers.”

With microbreweries and gastro pubs popping up all over Placer Coun-

ty, Haberman spoke to how New Glory plans to maintain a successful rapport with customers.

“We respect and appreciate our customers and we are here to make sure they feel like part of our family,” Haberman said. “We love to share our knowledge and appreciation of beer with our guests.”

The New Glory Brewery in Granite Bay has 40 employees and is looking for more kitchen staff. Hours are from 11 a.m. to 10 p.m. Mondays through Saturdays and 10 a.m. to 9 p.m. Sundays.

If you are like most people, you do what you can to live a healthy life. You try to eat nutritious foods and exercise regularly.

You practice mental and emotional wellness by managing your stress and spending time with family and friends.

But did you know there is one habit that can undo so much of what is good for your health? It’s smoking. Though fewer people smoke now than have in previous decades, it’s still a problem.

Tobacco products kill an estimated 1,300 smokers every day.

The data are even more shocking when it comes to young people.

Studies show that every day almost 4,000 people under the age of 18 try their very first cigarette. Those who start young will have the hardest time quitting.

Some may try “vaping” with e-cigarettes. These are battery-operated devices that turn nicotine and other chemicals into vapor.

The safety and long-term effects of e-cigarettes are still being studied.

What we do know is that those who smoke face some grim health consequences. The most serious of these is lung cancer.

Researchers estimate that 90 percent of deaths from lung cancer stem from smoking. It’s also been linked to heart disease, respiratory disease and damage to the immune system which can make you more susceptible to other health problems. There’s also a risk of diabetes, stroke, and infertility.

I checked in with Renee Nelson, MD, who is one of our family medicine physicians and one of our experts in the field of smoking cessation. Dr. Nelson is deeply engaged in educating people about smoking and how they can kick the habit for good.

I wanted to know her thoughts on young people who may consider smoking or e-cigarettes because they may have friends who

smoke or vape, or they have seen smoking on TV or in movies.

“Tobacco use in any form is unsafe for young people. About 90 percent of tobacco users started before the age of 18 years old.

Besides causing reproductive harm, there is a strong association with youth smoking and stress, anxiety and depression,” said Dr. Nelson. “My concern is the increased use of e-cigarettes since it is viewed as less dangerous. Nicotine is not only highly addictive, it can harm adolescent brain development and lead to smoking cigarettes in the future.”

Dr. Nelson says it’s not just smokers who will suffer consequences. They could be contributing to health problems for those around them through their smoke as it travels through the air.

“Exposure to secondhand smoke poses health risks that have been linked to cancer, cardiovascular disease, and respiratory illnesses. This is especially important when children and infants are exposed to secondhand smoke since this puts them at risk for premature death,” she said.

But it’s never too late to quit. Almost as soon as you stop smoking, you will start to improve your health.

After you quit, your risk for lung cancer and a heart attack start to drop. For those with asthma, you should have fewer, shorter asthma attacks. It could also mean more energy and stamina and fewer coughs and colds. Smoking can make you look older than you are. So, many people can expect a physical change for the better.

Quitting is difficult but we have support and tools that can help, including a wellness coach for Kaiser Permanente members.

“When people are given medication and wellness support, their chance of quitting increases,” said Dr. Nelson. “When done together, this increases the chance of quitting by up to 70 percent.”

Every cigarette you smoke shortens your life by 11 minutes.

That can mean an average of 12 years lost. Quitting smoking means you will have more moments to make memories with your family and friends. Make a list of all the reasons you want to quit and enlist the support of those around you to make the commitment today.

utumn is upon us and just a few miles up the road from Granite Bay a special place has opened for the season that provides for a special outing that is fun for all ages. It’s known as Apple Hill, a small community of 50 ranches that draws more than a million visitors to the region annually this time of year.

While the area draws its share of locals from September to December, Apple Hill draws travelers the far reaches of California and even the Pacific Northwest. It’s this large attraction that benefits the surrounding communities in Placer and El Dorado counties, and certainly boosts the tourism into the area this time of year.

The Highway 50 corridor is the common route to Apple Hill. With its large draw from the Central Valley as well as the Bay Area, Folsom provides an ideal stopping place, either on their way up the hill or on their way down to enjoy Folsom’s many dining options, shopping venues and lodging.

The Apple Hill area is known for its rural ambiance and tasty products that extend well beyond that of just apples. Altogether the members of the growers association are responsible for more than 50 different special events during the season.

“It seems like yesterday when we first started really,” said Evelyn Abel, who has been operating her family farm “Abel’s Acres since 1976. “I look forward to it every year. It’s great to see all of the families come out and get away from the hustle and bustle of everyday life. The kids love it no matter where they travel from. It’s good wholesome fun and we need that these days.”

Four generations of family continue the tradition of running the Abel ranch right alongside the patriarch at the place where many travel from afar just for a taste her famous homemade fudge and handmade buttermilk apple pie.

In addition to the great eats and the ingredients to make your own special treats, the Apple Hill Farms have many great products beyond the apple alone. The association has its very own cookbook that can be purchased at various locations. Many of the member farms host craft vendors and special events for the whole family to enjoy. From Johnny Appleseed Day celebrations to fishing, pony rides, hay rides and amazing mazes, no youngster or young at heart will find themselves board in this form of nature’s playground.

Diane Schuur

A

leading vocalist in contemporary jazz, Diane Schuur is as eclectic as she is brilliant. Nicknamed “Deedles” as a child,Tacoma-born Schuur grew up steeped in traditional American jazz, courtesy of both parents: David Schuur was a local police captain and amateur pianist, and Joanie Schuur kept a formidable collection of Duke Ellington and Dinah Washington albums in their suburban-Seattle home.

Not surprisingly, Dinah Washington is often listed as Schuur’s major vocal influence. She learned the iconic singer’s “What a Difference a Day Makes” while still a toddler and began developing her own rich, resonant vocal style.

Jazziz Magazine describes her approach as one that encompasses her whole lifetime of singing: “Schuur’s vocal chops move from little-girl innocence to bawdy-mama blues in a hair’s breadth, but always at the service of the song.” Schuur is also an accomplished pianist, accompanying herself onstage as well as on many of her recording projects.

Her most recent album is an homage to two of her important mentors, both jazz giants: Frank Sinatra and Stan Getz.

“I Remember You (With Love To Stan and Frank),” released in 2014, also commemorates her “official” discovery by towering sax virtuoso Getz at the 1979 Monterey Jazz Festival.

“She’s consistently combined fine artistic efforts with the pizazz of an entertainer and held sway in both concert halls

and small clubs,” observed All About Jazz’s Victor L. Schermer in his rave review. “Her style incorporates both subtle jazz interpretation and the power of rhythm and blues.”

“I Remember You” finds Schuur in an intimate setting, surrounded by her quintet, with compositions both understated and sophisticated. Featuring all-new arrangements

by Grammy winner Alan Broadbent, the material blossoms under Schuur’s improvisational scatting and deeply poignant delivery. “I Remember You” is Schuur’s 24th album.

That much-laureled career includes two Grammy Awards — each for Best Jazz Vocal Performance — on Timeless (1986) and Diane Schuur and The Count Basie Orchestra (1987). Both were released by GRP Records, the label that had launched her recording career. Schuur scored three additional Grammy nominations for subsequent albums “Pure Schuur” and “Love Songs,” as well as for the individual track “The Christmas Song.”

Her music has explored almost every locale on the American musical landscape, and her attendant studio collaborations —showcasing Schuur’s pitch-perfect execution and crystalline, three-and-a-half-octave vocal range —are a who’s who of superstellar American originators in a plethora of styles.

They include the albums Heart To Heart with B.B. King and Swingin’ for Schuur with Maynard Ferguson, along-

An audio souvenir of another formative gig is actually captured on her 2008 album, Some Other Time, which contains 11-year-old Deedles’ 1964 performance of “September In The Rain.” The vintage track displays an uncannily accurate template for all the elements present in her mature style today: the alternating qualities of intimate tenderness and outgoing theatricality, the assured sense of rhythm and phrasing, the unerring perfect-pitch sensibility. An especially touching piece on this recording is classic Irish heartbreaker “Danny Boy,” which opens with a brief snippet of her mother’s voice asking, “Diane, do you know the song Danny Boy?” and Schuur responding, “I’m going to record it, Mom. Just for you.” Her mother, sadly, never got to hear that 2008 release,” as she died of cancer in 1967, when Diane was 13.

The artist has been blind since her premature birth in 1953, having lost her sight to the disorder Retinopathy of Prematurity. It affected babies receiving high-oxygen therapy during neonatal intensive care — which was standard practice until, tragically, 1954. She first learned to play piano by ear, picking out tunes on the keys with two fingers at the age of 3. “I sang to myself at night,” recalls Schuur. “Mom and Dad would open the door a crack and yell ‘Diane, shut up,’ so I progressed from there to the closet.” By age 6, Schuur was giving regular command performances

amid her corduroy jumpers.

Her formal study of piano began while at the Washington State School for the Blind which Schuur attended until she was 11 years old. A significant inspiration came at the age of 12 when her mother brought home an LP by the great George Shearing, Concerto for My Love. Young Diane learned all the pieces (by ear, of course), soaking up the distinctive style of Shearing — who was blind himself.

After playing clubs and bars around the Pacific Northwest, Schuur’s first break came in 1975 at the age of 21, when she did an informal backstage audition for Doc Severinsen during one of The Tonight Show bandleader’s tour stops at the Seattle Opera House. Band member and drummer Ed Shaughnessy was so moved

by Diane’s talent, he invited her to sing a gospel suite at the famed Monterey Jazz Festival the same year. That performance led to a return, high-profile featured spot at Monterey in 1979, where Stan Getz, captivated by her set, became her mentor and advocate. ✶

Holiday Turkey Makes 15 servings 1 fresh turkey, about 15 pounds, preferably free-range 1 tablespoon olive oil 1 quart apple cider 2 teaspoons dried poultry seasoning Coarse sea salt and freshly ground black pepper Remove the giblets from the turkey and discard (or save for another use). Rinse the turkey inside and out and pat dry with paper towels. Rub it all over with salt and pepper.

Refrigerate, uncovered, for at least 12 hours and up to 24 hours. During that time, the surface of the turkey will become visibly dry and the skin will tighten; this encourages a nice crisp skin on the finished bird.

Remove the turkey from the refrigerator 1 hour before you plan to start roasting. Preheat the oven to 450 degrees.

Put the turkey on a rack set in a large, flameproof roasting pan. Drizzle the oil over the top.

Roast for 1 hour. Reduce the oven temperature to 175 degrees. Pour the cider into the roasting pan and sprinkle the poultry seasoning in the liquid. Continue roasting until an instant-read thermometer inserted

into the thickest part of a thigh (but not touching bone) registers to 170 degrees.

Transfer the turkey to a carving board, tent loosely with aluminum foil, and let rest for about 15 minutes (see tip). Meanwhile, skim the fat from the surface of the liquid in the pan. Put the roasting pan over two burners and bring the pan drippings to a boil over high heat. Cook until the juices reduce and thicken slightly, enough to coat a spoon, about 10 minutes. Taste for seasoning. Carve the turkey and serve with cider pan juices.

RESTING TIP:

Slow-roasted meats need far less resting time (pretty much none) than those that are traditionally roasted. The reason for resting meat that has been roasted at a high temperature is to allow juices that have collected in the cooler center time to migrate back into the dryer (hotter) exterior sections after it comes out of the oven.

Because slow-roasted meats are cooked evenly and a temperature that keeps most of the juices in place, a resting period is largely unnecessary.

A brief resting time does allow the meat to become a little firmer as it cools, making it easier to carve.

The truth is that strength training is one of the absolute best things you can do for your health and appearance.

If you’ve fallen for these 5 myths then you’re missing out on tremendous potential results.

IT’S A MYTH …

THAT MUSCLE TURNS INTO FAT Why would anyone want to build muscle if it could morph into fat after a span of disuse? Rest assured that this is a myth of the highest order.

Muscle tissue is muscle tissue. Fat tissue is fat tissue. One will never become the other.

IT’S A MYTH …

THAT STRENGTH TRAINING DOESN’T BURN FAT On the contrary, muscle mass is your number one ally against fat gains.

A pound of muscle burns 10-20 calories each day, while you’re just living and breathing. Regular strength training helps you increase your muscle mass as well as preserve existing muscle mass, turning you into a fat burning machine.

IT’S A MYTH …

THAT LIFTING WEIGHTS MAKES WOMEN BULK UP Yes, strength training increases the amount of muscle on your body; so many women take this to mean that their body will become body-builder-esque, which is not quite the look you’re go-

The truth is that the female body simply doesn’t contain high enough levels of testosterone to produce that level of results without a very focused and dedicated effort.

The tighter, toned figure of a recreational female weight lifter is every bit feminine.

Assuming that your doctor has given you the OK, you have much to gain from a regular weight lifting routine.

Improved balance and coordination, better strength and flexibility, and a decreased risk of osteoporosis are just the beginning.

IT’S A MYTH …

THAT LIGHT WEIGHTS AND HIGH REPS TONE BEST This myth, popularized in the’90s, that very high repetitions of very light weights would result in a toned physique, has become outdated. These high repetitions will increase your muscular endurance but will not add strength or tone.

We now know that in order to truly challenge your muscles, heavier weights with lower repetitions are a must. Start with an 8-10 repetition range and push your muscles with each set.

Keep in mind there are many forms of resistance training; it is no longer limited to dumbbells and barbells. Each of the following are ways to challenge your body with resistance: Kettle bells Medicine balls Exercise bands Weight machines Body weight training Suspension trainer Including strength training as a part of your fitness routine is essential for achieving a fit and toned body
