Parrish Family Vineyard Opens New Winery Parrish Family Vineyard opens new winery and tasting room celebrating its family history and showcasing its award-winning wines The new location is set among the winery’s 30-acre estate vineyards at 3590 Adelaida Road and in one of the best regions of Paso Robles wine country. “My great-grandfather was one of the first people to plant grapes in the Atascadero area and opening this winery and tasting room on our family vineyard is a dream that’s been 90 years and four generations in the making,” said David Parrish, owner and winemaker. After seven years with a tasting room in downtown Paso Robles, guests can now enjoy Parrish’s award-winning wines just steps from where they are made. Tastings are available inside the tasting room, around a communal table or in more private spaces. Tastings will also be offered outside so guests can soak in the picturesque views, lounge under the shade of the wraparound porch or listen to the sounds of the fountain while enjoying their wine. For those who want a more active wine tasting experience, they can take a vineyard tour focused on sustainability and the restoration of Adelaida Creek or take a swing on the putting green; which is an ode to David Parrish’s great-grandfather. “We are excited to offer a variety of experiences and educational opportunities at the winery and also out in the vineyard,” said Cecily Parrish Ray, general manager. “We created a place where people can be inspired and informed about wine, our incredible land and discover their own palates through a range of flights and pairings.” A wide selection of Parrish’s wines are available in the tasting room including the: 2016 Estate Sauvignon Blanc, 2016 Chardonnay, 2016 Estate Rosé and the 2014 Zinfandel, 2014 Petite Sirah, 2013 Reserve Silken and the 2013 Reserve Cabernet Sauvignon. Cheese plates and chocolate pairings are also offered to enhance the tasting experience, as well as charcuterie and vegetable boards. Why is white wine served colder than red wine? Did you ever notice how a fine piece of art or jewelry always looks better under a spotlight? While proper lighting brings out the best in art, poor lighting diminishes the likelihood that you will see all of its beauty. Think of wine the same way: serving temperature impacts wine as much as lighting impacts art. A wine’s best features are brought out when served at the proper temperature. For example, light white wines with high acidity and refreshing crispness, such as Riesling or Pinot Grigio, are best served at around 46°F to 50°F—almost as cold as a sparkling wine is served. Chilling brightens acidity, giving it a palate-cleansing quality, like whisking water off a car windshield. If you serve white wine too warm it becomes flat, dull, and unappealing. Full-bodied white wines, like oak-fermented Chardonnay or Pinot Blanc, taste better with slightly more warmth, around 50°F to 54°F, allowing more potent aromas of these grapes to come forward. It’s unfortunate, but too often restaurants and bars serve Chardonnay, and even lighter-bodied white wines, too cold, which suppresses the wine’s bouquet. (You can speed up raising the temperature of the wine by cupping your hands around the bowl of the glass.) Just leave it on the table to allow it to warm up to the proper temperature.

While chilling a white wine brings out its acidity, a chilled red wine high in tannin will taste bitter and harsh, like hot tea tastes after it has cooled—too dry and hard to drink. One red wine exception is French Beaujolais. Its bright fruit and high acidity show better when slightly chilled. Other light- to medium-bodied red wines with some acidity, like Sangiovese or Pinot Noir, need a little more warmth and are best when served around 60°F to 62°F. More robust red wines like Cabernet Sauvignon, Merlot, Zinfandel or Syrah are best served closer to 65°F in order to bring their heavy-duty aromas forward and soften the impact of tannins.

Entrepreneur Turned Vintner When Janis Pelletiere Denner was 21, she founded a marketing research company. With hard work, determination and passion, the business grew, and 29 years later she sold it. Discovering Paso Robles, falling in love with the area and the wines, several years later Janis started a new adventure, that of winery vintner. In 2014 Janis purchased a vineyard, complete with an 1890’s farmhouse, and Pelletiere Estate Winery was established. In an area renowned for its Rhone varietals, Janis had a different idea. Being of Italian descent, and finding the perfect property that was already growing Italian varietals, Janis embarked on a journey focusing on producing high quality Italian wines…and what a gift that is. With the vineyard located in the Willow Creek AVA, one of the richest and most esteemed AVAs in Paso Robles, Janis teamed up with well-respected local winemaker Amy Butler, to produce unique, well balanced wines, reflective of the area’s terroir and bursting with personality!

Janis welcomes visitors, eager to pour and have you experience the Pelletiere difference. If you are fortunate (as I was) on your visit, you will begin with a splash of Mayson, a beautiful rose of Italian varietals. When I commented how delightful it would be to just sit out on the patio or around the pool and sip this on a warm afternoon, Janis commented: “It will go great with your Thanksgiving turkey also.” I can’t wait to experience that at our table this year. Santa Barbara Vintners Celebrate Harvest Weekend Premiere Screening of SOMM 3 October 12-14

The Santa Barbara Vintners and Solvang Conference & Visitors Bureau are happy to present the premiere screening of SOMM 3 in Santa Barbara County during Celebration of Harvest Weekend. With harvest in full swing, October 12-14, 2018 is officially designated “Celebration of Harvest Weekend,” three days of special wine and food events taking place throughout Santa Barbara Wine Country. A highlight of the Celebration of Harvest weekend is the first public premiere of SOMM 3, the latest addition to the successful SOMM film franchise. This premiere will take place on Saturday, October 13th at 8 p.m. under the stars, in the Solvang Festival Theater, 420 Second Street, Solvang. After the film screening, a Q&A will follow with cast members and Producer Jackson Myers. Net proceeds from this event will benefit the Santa Barbara Vintners. SOMM 3 is the highly anticipated follow-up to the influential films SOMM and its sequel SOMM: Into the Bottle. Like the previous two films, SOMM 3 has unprecedented access to the highest levels of the wine world. While three of the greatest legends of wine meet in Paris to drink the rarest bottles of their careers, the best blind tasters in the world gather in New York City to settle an age-old argument about wine. Build your own cheese platter Creator and owner Sophie Boban-Doering relieves her customers of all uncertainty when it comes to tinkering with cheese plating and pairings. It’s fun and easy to build your own platter. When considering amounts to prepare, two or three ounces per person is recommended. “It’s important to think about the texture of the cheese because it helps enhance the overall experience,” said Sophie. “Aim for a variety of soft, creamy and hard selections. Also consider flavor profile, color and height. It’s easiest to start with a soft cheese that can be paired with bread or fruit, like an Alpine cheese and then choose a surprise selection like a blue cheese or something funkier.”

Perfect wine and cheese pairings As for pairings, the goal is to look for cheese that stands up to the wine on its own, and then a cheese and wine pairing that tastes entirely different when combined. For example, Cabernet Sauvignon pairs provides an appealing balance with Regal De Bourgogne a la Moutarde de Meaux. Coated with mustard seeds, the rich cheesecake-like texture and taste is derived from pasteurized cow’s milk and triple-creme cheese. Rhone-style GSM wines are even tastier when paired with Beppino Occelli Cusie Foglie di Castagno. Aged for 18-24 months, the cheese is wrapped in chestnut leaves. This permeates the cheese with remarkable flavor. “Zinfandel is made for Beenleigh Blue, a pasteurized sheep cheese with remarkable aromas,” said Sophie. The gentle sweetness of honeysuckle and nectar come to mind. “It’s a mild blue and a crowd favorite,” assured Sophie.

Keep leftovers air-tight To store leftover cheese in a way that most maximizes its taste, it can be stored in air-tight containers in the refrigerator. To answer the mystery of whether cheese is edible once it grows mold, the answer is that it’s just fine to cut off the mold and eat around it. BRICK BARN WINE ESTATE Brick Barn Wine Estate is the type of place that will leave a lasting impression. You will remember the barn, made from hand-laid bricks, and originally designed to house Arabian horses, the historic ranch near Buellton, and the red and white wines, such as the 2016 Grenache Blanc, the 2016 Chardonnay and the 2016 Pinot Noir.

A Winery with a Rich Heritage Located in the Santa Ynez Valley, Brick Barn Wine Estate was once part of Rancho San Carlos de Jonata, a 26,634 acre piece of land which stretched across what is now Solvang and Buellton. When Norman Williams purchased the land more than 40 years ago, he decided to honor its heritage by continuing to farm and tend cattle. He then built a 36-stall brick barn and bred Arabian horses for many years. Recently, however, Norman and Kathy transformed part of their ranch into a 35-acre vineyard, and put their focus into winemaking. Brick Barn Wine Estate has many things about it that make it unique. For one, the vineyard faces south, and benefits from the marine influence coming from the Pacific Ocean and the strong sun exposure. This combination produces multi-dimensional fruit. Another is the fact that the ranch is relatively unchanged, with wild pigs, red tail hawks, and other wildlife roaming the ranch, and plentiful oak trees.

Winemaker Rob DaFoe

A Winemaker with Vision Brick Barn’s wine maker Rob DaFoe started out as a snowboarder, but became interested in wine while touring Europe. After his snowboarding career ended, he made a documentary about winemaking called From Ground to Glass, and, eventually, started working at local wineries before launching his own label. From the beginning, he was recognized as a winemaker of distinction. Wine Spectator’s James Laube called him a rising star in the Cabernet Sauvignon arena. As a Santa Barbara native, DaFoe is dedicated to bringing out the best in the wines. “The harmony of the ground to the glass is unfolding and a large part of my job is bringing everything together and energizing that discovery to make wines of substance and intention.” Brick Barn Wine Estate is located at 795 W Hwy 246 in Buellton. These are the sensory delights of the Harvest Festival at Opolo Vineyards, where an entire year’s work is celebrated in autumn.

Harvest Festival Fun and Food At Opolo Vineyards, October is synonymous with the Harvest Festival, when folks from all over the country gather to celebrate the season in traditional Serbian style. From 5:30 to 9:30 p.m. on Friday and Saturday, October 19-20, guests can partake in a mouthwatering array of delicious food paired with Opolo wines. The Harvest Festival takes place over the three-day Harvest Festival Weekend, which includes a Survivor Brunch on Sunday. More Opolo Vineyard cuisine features fireroasted breakfast pizza, burritos and mimosas from 10 a.m. to 2 p.m. Among the delectable foods that will be served at the Harvest Festival are oysters, roasted lamb and sarma, a savory, slow-simmered dish, made of meats, sauerkraut, cabbage and rice. Another Opolo mainstay will on this year’s menu is ćevapi, a traditional dish made with grilled with pork, beef and lamb sausage. The Morava Folklore Ensemble will arrive from San Diego to celebrate the rich, cultural heritage in Serbian and Balkan heritage in traditional dance. Since 1987,

STEPHEN ROSS WINE CELLARS Within the Edna Valley Appellation in San Luis Obispo is an urban winery and tasting room at Stephen Ross Winery. Established in 1994, both the winery and their estate vineyard in this “cool climate” AVA are each five miles away from the Pacific Ocean. What is it like to make wine? In 1989, when Paula Dooley, née Donnelly, met her husband, Stephen Dooley, a whole new world opened. Stephen was then the winemaker and general manager at Edna Valley Vineyard. “I discovered that the world of wine is vast and dynamic,” said Paula, whose professional background is steeped in aviation and corporate finance. “Cultures all over the globe have been producing wines for centuries. Having our own winery feels like being part of something ‘bigger.’ I began tasting wines as much as I could to educate myself and started paying attention to how wine is made.”

Behind the Cinematography Lush, green vineyards evoke serenity and images of picturesque views, but in truth, winemaking doesn’t come easy. At Stephen Ross, hard work, humility and tenacity are the invisible ingredients infused into every bottle of wine. Stephen’s Minnesota roots and a Central California terroir are equally integral in his accomplishments. “His Midwestern roots play into how he conducts he (Stephen)

conducts himself in business more than the actual winemaking,” said Paula. “He gets along with everyone and has longstanding relationships with our growers, distributors, and fellow wineries. “Everyone thinks having a winery is relaxed and romantic, like in the movies,” said Paula, whose University of Texas business degree helped establish and grow the business. “It is work like everything else—so much hard work that you had best be passionate about wine to embark on a wine career. It is nice that people love, versus simply need (like a hammer) what we make, but it is still work to produce it!” At Stephen Ross, a more subtle approach to winemaking is key. “Wine is a natural product. Mother Nature grows the vines and takes care of the fermentation,” explained Paula. As winemaker Stephen gets to guide that process so that the end-result is delicious tasting wine. Pinot Noir is particularly expressive of the site where it is grown. As winemaker, he has influence, but the vineyard is singing the song. “Pinot Noir is seductive with its terroir —that is how we have ended up making five or six Pinot Noirs each vintage.”

Sustainably Grown Winegrapes About 25 percent of Stephen Ross grapes are estate-grown and harvested from their Stone Corral Vineyard in Edna Valley. The rest are sourced from premium parcels throughout San Luis Obispo County’s Edna Valley, Santa Maria Valley, Monterey County and Paso Robles. A conscientious effort to maintain sustainability practices and surrounding themselves with future leaders of their industry is a priority. “We have a great cellar crew of Cal Poly University Wine and Viticulture grads and students,” said Paula. “Our vineyards, estate and contracted, are either SIP Certified or Certified Organic. For example, just recently, we laid down a band of organic mulch, six inches deep, under the vines to suppress weed growth and hold moisture in the soil. We do what we can to be good stewards of the environment.” In the cellar, what else is Stephen up to these days? “He is making a barrel of 2017 Muscatel after a trip to Portugal and has recently been talking about giving vermouth a try,” said Paula. “There is always something new to explore!”

Wine Country This Month: Central Coast

Santa Maria Costa de Oro Tasting Room Costa de Oro Tasting Room is located right off of Highway 101 in Santa Maria. This site pays tribute to the history behind Costa De Oro — it was the strawberry stand for Gold Coast Farms, the parent company of Costa De Oro, which has been farming Santa Maria since 1978. Gold Coast Vineyard was planted to 20 acres of Pinot Noir and 10 acres of Chardonnay in 1989, and these grapes were sold to the area’s best wineries — including Au Bon Climat. Gary Burk, Costa de Oro co-owner and winemaker, was fortunate to work in the winery with Jim Clendenen from 1994-2002, and during this time he began to make his own wine. Gary started with just one barrel of Chardonnay and one barrel of Pinot Noir. Today, Costa de Oro produces more than 6000 cases featuring Chardonnay and Pinot Noir from the estate — Gold Coast Vineyard. At the 2017 Central Coast Wine Competition their Estate Chardonnay won “Best of Show” and their Estate Pinot Noir received a “Gold Medal.” The best place to experience the wines is at the tasting room, where guests can taste five wines for only $10.

Live Music In addition to their regular tasting room hours (normally 11 a.m. to 6 p.m. daily), they have music three nights a week...Thursday

5-7 p.m. (Classical), Friday evening, “Friday Night Wine Downs” featuring live music from local musicians & $12 food plates available. Then on Saturdays they have acoustic music 3 to 5 p.m.

Kegs Another facet to the Costa de Oro portfolio is their “Wine on Tap.” Kegged wine, wine stored and shipped inside five gallon kegs instead of bottles, has been gaining popularity throughout the past several years. Costa de Oro started kegging wine for high-end accounts, like Roy’s Hawaii. Now these wines, a white and a red, are available in the tasting room by the glass and by the growler (these can be refilled). Foxen Canyon The Foxen Canyon Wine Trail The Foxen Canyon Wine Trail, connecting the Santa Ynez and Santa Maria Valleys, is just 10 minutes north of Los Olivos, but feels like it is a world away. This 30-mile stretch of road is home to over a dozen wineries, nestled in the canyon and surrounded by rolling hills and vineyards. With the exception of Garey Deli on Foxen Canyon Road, there are no other commercial food establishments along The Trail. It’s a good idea to bring food and water.

Wineries and History Heading north from Los Olivos, one of the first wineries you will come to is Andrew Murray Vineyards. The view and the tasting area are extraordinary, but not nearly as impressive as the award-winning wines. There are several tasting flight options, including a wine and chocolate pairing, a wine and cheese pairing (by reservation only), and more in depth tasting and tour opportunities to choose from. Specializing in Rhônes, Andrew is extremely passionate about his wines and hopes all who visit his winery will “taste his passion in every sip.” Other iconic wineries on the southern-end of The Trail are Firestone, Fess Parker, and Koehler. Valley AVA, you come to Rancho Sisquoc Winery. One of the earliest wineries in Santa Barbara County, Rancho Sisquoc Winery produces small lot, artisan wines that are served out of a comfortable rustic tasting room. This family owned winery has been producing wines for over 40 years and is one of only two vineyards in California that grow Sylvaner (a “cousin” to Riesling.) Take the drive down their olive tree-lined lane to experience their Sylvaner in addition to other award winning wines, and bring a picnic to enjoy at one of the tables on their expansive grounds. As you follow the sign to Rancho Sisquoc Winery and make the right turn up the road, you will notice a church perched on the hillside. Take a small detour and drive up to The San Ramon Chapel. In 1875, Frederick Wickenden built the chapel and cemetery for his wife, Ramona Foxen, because the closest chapel at that time was Mission Santa Inez in Solvang, 30 miles away. Designated as Santa Barbara County’s Historical Landmark #1, the chapel is still in use today. Los Olivos Dragonette Cellars, A Step Above A lawyer, a geologist and computer engineer walk into a winery…….. The story of Dragonette isn’t quite that simple, but the combination of brothers John and Steve Dragonette, along with best friend Brandon Sparks-Gillis, who decided to leave their professions, learn about wine (beginning their training at Wally’s Wines stocking shelves and serving wine), to follow their passion ultimately making wine, has been a gift to all who love small lot, high quality boutique wines. (recently adopted), but you will certainly be greeted by Nick (who changed from a pre-med career) or Blake, with a broad smile, a welcome, and introduction to what will be a memorable tasting experience. As Nick or Blake pour, they explain the philosophy of the Dragonettes, the difference that soil makes, and how that is reflected in the wine. At one point during our tasting, Nick picked up a piece of diatomaceous rock, which came from one of the vineyards, explaining how that affected the flavor and feel of the wine. Tasting different wines, side by side, you will experience the subtle differences that prevail between one vineyard and another, with the same grape. The current tasting menu consists of six wines, and although known as “a Pinot House,” every wine varietal bottled by Dragonette is simply, remarkable.

Solvang Solvang Stomp: A “Footie” Wine Festival Debuts Tracy Farhad, Executive Director of the Solvang Conference & Visitors Bureau, has announced the debut of the organization’s inaugural Solvang Stomp, a “Footie” Wine Harvest Street Festival, happening on Saturday, October 13, from 2 to 5 p.m. in downtown Solvang on First Street (between Mission Drive/Hwy 246 & Copenhagen Drive). Farhad enthused, “Solvang is surrounded by world-class vineyards, wineries and tasting rooms. October is harvest time which means it’s a fun time to taste new wine and stomp grapes! Carivintâs Winery

Carivintâs created their tasting room with a goal in mind. They started by asking themselves a question, “What would prevent people from going wine tasting on a regular basis?” They came up with several answers, which included the fact that it is difficult to take children to a tasting room that has a formal or stuffy atmosphere. Another reason people might not find it easy to go wine tasting is the fact that some tasting rooms don’t welcome pets. The family dog would have to stay at home alone. And the final reason Carivintâs representatives thought that people might be dissuaded from a wine tasting experience was the hours. Longer hours could accommodate more people. With these ideas in mind, Carivintâs designed a tasting room to address these concerns. For children, the tasting room has puzzles, legos, and coloring books, as well as fast internet. For dogs, the tasting room offers beds, water and treats. And for those wishing to visit a tasting room later on in the evening, Carivintâs is open most days until 7 p.m.

A Wide Variety of Wines In Carivintâs tasting room you will find many wines to choose from. Winemaker Fleet Hamilton produces wines from many different varietals including Barbera, Malbec, Pinot Noir, Sangiovese, Viognier, Chardonnay, Syrah, and Sauvignon Blanc. Some of the new releases in the tasting room include: The 2017 Albariño, aged in stainless steel barrels, with aromas of pineapple, guava and Asian pear. It has a smooth fruity mouthfeel and finish. The 2017 Rosé, barrel fermented, with aromas of strawberries, wildflowers and quince. The 2013 Grenache “Cat’s Meow,” aged in neutral oak, a port style wine with aromas of blueberry, vanilla, green bell pepper

Wine with a Philanthropic Bent One of the things that makes Carivintas special is its emphasis on philanthropy. When you visit the tasting room you might notice the many pictures of dogs and other animals adorning the walls and even the labels on the wine bottles. Many of Carivintâs wines, the ones that feature dogs or horses named Lillie or Oz on the label, serve as a way to raise money for organizations that support animals. A part of the proceeds from the sale of these wines goes to organizations like Old Yeller Ranch Rescue, Shadow’s Fund, and Return to Freedom, an American Wild Horse Sanctuary.

Ventura County Back Patio Cellars The word “winery” can evoke images of oak barrels stacked against jewel-toned vineyards across sweeping vistas. But there are other, more hidden gems to be discovered in the most unlikely of places. Disguised inside a Camarillo business park at 930 Flynn Road, Unit F, is Back Patio Cellars, where everyone can find terrific wine, not hype. Inside their tasting room is a meaningful array of wines to try. Comfortable furniture invites visitors to lean back, relax, sip, and really taste the wine – between spirited games of checkers, of course. “Many customers visiting the winery leave as friends,” said Jen Hules, who along with her husband, Frank, owns Back Patio Cellars. “Wine started as a hobby, but it really became my passion,” said Frank Hules. Years ago, Frank’s foray into wine began as a curious learner, college student, and then winery intern, roles in which he gained valuable knowledge in both vineyards and cellars. Finding just the right grapes was crucial. “We traveled and tasted wines from all over the place,” said Frank of countless wine region visits together with his wife, Jen. “Stained Patio,” their Petite Sirah and Cabernet blend, is commemorates of their early days of de-stemming and crushing grapes by hand – all on their back patio. Crafted in small batches, their wines can go fast. Back Patio sources only premium grapes from key sub-regions, including Lodi, Alexander Valley in Sonoma County, Paso Robles, Santa Rita Hills and Santa Maria in Santa Barbara County. “Jen works the tasting room and I work in the back,” said Frank, who wisely maintains an uncomplicated approach to winemaking. “Our Patio Red is versatile, very popular and just a great wine that goes with everything,” said Frank. Back Patio’s Rhône-style trio of Syrah, Grenache and Mourvèdre wines is a blend that makes a sure-fire pleaser for gift-giving. And the price point is right, too, well below $30. Frank is especially fond of his 2014 Merlot, a spicy and fruit-forward vintage, and his sublime 2014 Idyllic red blend. Towards the end of the year, Frank and Jen will release their 2014 Petite Sirah, perfectly timed for the holidays. One wine to anticipate in the warmer months is their Paw Prints Rosé, which always goes fast. “I was actually inspired by a winery in Paso Robles to make that one,” admitted Frank. “Everyone loved it – at least until there wasn’t anything left!” Back Patio Cellars is open Friday (4 to 7 p.m.), Saturday (11 a.m. to 5p.m.), and Sunday (11 a.m. to 5p.m.). PLAN B WINE CELLARS An Unexpected Delight If the industrial area near Mid-Town Ventura is the oyster, then Plan B Wine Cellars is the surprising pearl. The backstreet location and unassuming building adjacent to a yard filled with slabs of granite and limestone is in stark contrast to what you find inside the tasting room. Surrounded by barrels of aging wine, the striking reclaimed oak slab bar invites visitors to relax, and take in the view towards the harbor and the Channel Islands while enjoying a seated tasting or a glass of wine. Owners and winemakers Marlow and Janis Barger came to the wine business as consumers first, and it shows in their low key approach. “We don’t have a typical wine club” states Janis, “because we both felt that always pushing a wine club detracts from the enjoyment of the tasting experience.” “We just wanted people to enjoy themselves without feeling like they had to join a club, it’s less intimidating, especially for folks that are just getting into wine” adds Marlow, “we feel wine tasting is about the experience, not just about flavors and wine jargon. People need to learn to trust their own pallet and drink what they like.”

Sundays, a time of Wine and Music The City of Ventura has long been known for its beach culture, but is fast becoming a destination for wine, food, and music, as well as the vibe that only a beach city can provide. Plan B Wine Cellars has been hosting music for most of the six years the tasting room has been open, and the venue has become popular with musicians who find the acoustics surprisingly good and the audiences attentive and enthusiastic. While music in the barrel room happens almost every weekend, the signature music event

each month is Second Sunday Supper. Held on their 2200 square foot covered patio, half jokingly referred to as “The Stoneyard” because of the stone slabs visible next door, the event features an “outdoor” band, and a food truck. Second Sunday Supper, as the name implies, is held on the second Sunday of the month, 4:307 p.m., and has become a popular way for fans to wrap up the weekend.
