On the other hand, elephant garlic is not garlic.

“It is a leek with a bulb,” Faoro said.

Garlic reproduces through cloning — breaking the bulb apart and then planting the cloves, which then sprout — repeating the growing process.

Faoro recommends using seed garlic.

“If you are starting out, you can get seed garlic from a nursery or online,” he said. “But is should be seed garlic, not normal garlic. You can use organic garlic. Make sure no one has sprayed anything on it that would stop it from sprouting.”

After planting, Faoro recommends putting down mulch. He uses rice straw because it doesn’t have seed in it.

“Cover the ground around the plants,” he said. “You want to stop the weeds from growing. They compete for nutrients and stunt the garlic. You want to keep the bed weed free.”

And then hope for some chilly fall and winter weather, because that produces better garlic, he said.

It’s an easy care crop.

“You don’t have to water it because it grows over the winter,” Bollinger said. “In the (eastern U.S.), they mulch it pretty heavily. We don’t do that here. We will water if it is a dry spring.”

In the early spring the Bollingers fertilize the growing plants and then monitor them for any supplementing feedings.

As the crop ripens, it produces some short-term treats.

Green garlic, which looks like a scallion, is the early-stage garlic that is pulled out of the ground when the beds are thinned in early spring.

“That gives the (remaining) plants more room to grow and form bulbs,” Bollinger said.

Use green garlic in any dish that calls for scallions. The Bollingers like them as an addition to scrambled eggs.

Another delicacy are scapes, which are only available for a couple of weeks in late May and early June.

“It is the flower stalk of the hardneck garlic,” Bollinger said.

“We go through the field in May and pull the scapes to force all the energy into bulb production.”

Blend the scapes with nuts and cheese for a pesto or put them into a hot pan with a little oil and salt, then cook them until tender.

“They are similar in the eating experience to a piece of asparagus,” he said. “But they are very sweet and garlicky.”

Harvest time for fully ripened garlic is in early summer. The next step is curing.

“We cure it in the shade, which gives it time for the greens to die down,” Bollinger said. “Through the drying process, it seals itself up.”

Garlic bulbs should be stored at room temperature, on a counter or in a pantry.

“Don’t store it in a bag,” he said. “It wants to be able to 8

breathe.”

It’s not necessary, in fact it is a bad idea, to store it in the fridge.

“If you refrigerate it, it will sprout faster. It breaks the dormancy so it thinks it is time to grow,” Faoro said.

At Veneto Gardens, Faoro tends about 500 garlic plants — a mix of hardneck and softneck varieties. Besides garlic, Faoro is known for his tomatoes. He sells his produce at a farmstand on his property and also has a mailing list for customers who want to place special orders.

He donates the profits from his vegetable sales to the Placer Food Bank.

“I have supported them for years,” he said. “It is an amazing organization.”

As an aromatic, garlic adds flavor to a wide array of dishes.

Faoro recommends roasting bulbs in the oven for use as a spread.

Another of his favorites recipes is adding garlic to olive oil and heating in on the stove to build the flavor. Then he adds the mixture to grilled sweet peppers.

“Add a little salt, cover it and put it in the fridge. Then use it on sandwiches and it is summer,” he said. “It is the most wonderful thing in the world.” ■

Future flyers YOUNG EAGLES PROGRAM DRIVES INTEREST IN FLIGHT

t’s the Experimental Aircraft Association Chapter 526 of Auburn’s way of introducing youth to the world of aviation. In its first four monthly flight days this year, the chapter’s Young Eagles Program made 68 trips, introducing 137 passengers to the joy of soaring through the sky.

“If you look at the airport, it is a graying bunch of pilots,” program coordinator Steve Kendall said. “Nationally, there’s getting to be a shortage of pilots.

Major air organizations are trying to encourage more youth to get involved in aviation — not only as pilots. You also need mechanics and air traffic controllers. And you need engineers to design planes and work for aerospace companies. There are all sorts of professions that revolve around aviation and we’re trying to get kids more interested in that.”

The nationwide Young Eagles program began in 1992.

“It was 10 years before the 100th anniversary of the Wright brothers’ first flight,” Chapter 526 member and director Dan Wojdac said. “The goal was 1 million flights in 10 years.”

The Oshkosh, Wisconsin-based organization reached that goal and kept going. The total is now at 2.1 million.

In Auburn, Wojdac has completed 467 Young Eagles flights in his Cessna 182. He sees the excitement the program generates.

“I’ve had several (participants) come up and say because of me, they want to be a pilot. Several have said after a flight that it was the best day of their life,” he said.

Wojdac, whose plane seats four, usually flies his young passengers over Folsom Lake and then back to Auburn.

“That’s a 10-minute flight,” he said. “What I do sometimes is take the kids over their house and point it out to them. (For instance), if they live in Loomis, I can turn a little and take them over their house or school. It makes it a special flight. Also I’ll do the same thing for kids who live in Foresthill or Colfax. I’ll let the kids closer to 18 fly a little bit — take the yoke and steer a little. I stay with them so there’s no danger.”

The flights are free to participants, with the pilots picking up the costs.

“I try to take three (kids) at a time,” Wojdac said. “(The plane uses) about 12 gallons an hour and it is $12.30 a gallon. It is quite a bit of fuel. That doesn’t include oil and maintenance. I do it for the enjoyment the kids get out of it.”

Sometimes on Young Eagles flight days, Wojdac will bring along a small pedal plane he built.

“Kids too small to fly can get into the pedal plane and pedal around,” he said. “It is a miniature of a P51 — what (Auburn resident and flying ace) Bud Anderson flew in World War II.” The pedal plane even has Anderson’s autograph.

The Young Eagles program is for youth ages 8 to 17 and, locally, is held on a Saturday in April through October at Auburn Municipal Airport. While many of the volunteer pilots have planes parked at the airport, others fly in from the surrounding area to participate.

“There’s an awful lot of nuisance involved in getting it all set up — all the logistics are in the nuisance category,” Kendall said. “Flying the kids is the fun part. There are lot of volunteers involved. For any given flight rally, we will have about 12 volunteers. Of those, seven are pilots and five are people working on the ground.

There are people handling safety — keeping kids and propellers apart and others taking care of registration and filling out paperwork.”

For the kids waiting their turn to go into the sky, there’s a flight simulator in the hangar.

“It’s a PC-based one,” Kendall said. “It has controls, so they have a good time with that.”

Quite a few of the riders are returning passengers.

“We have kids who have done it several times,” he said. “We give priority to those who haven’t. They come from as far away as Elk Grove.

We aren’t the only chapter that does rallies but we do more of them. Occasionally we get a couple of kids who haven’t flown at all.”

In addition to the flights, the Auburn Young Eagles program has a second component — free

tuition for one or more aspiring aviators to attend the week-long EAA Air Academy in Oshkosh during the summer.

“We pick one a year to send. This year we sent two people,” Kendall said.

The EAA Air Academy camps are split up by age group and run during June, July and August, according to the website.

The Auburn chapter covers the tuition for its attendees, which runs about $1,200 per person. Parents pay for the transportation.

“In case of need, we would consider that (paying for the transportation),” Kendall said.

The academy’s advanced session for the oldest group, up to 18, overlaps Air Venture, the yearly national convention for the EAA, and gives the youth an opportunity to experience the gathering firsthand.

“It is the biggest air event in the world,” Kendall said. “Over 10,000 airplanes fly into Oshkosh for that. Many more fly elsewhere and come in on the ground. It is a wonderful event. ... It is quite an impressive thing. It is a bucket list item if you are into aviation.”

Summer chili & garlic spread Enjoy all the fresh flavors of summer with this spicy, scrumptious vegetarian summer TESSA chili. Chili is a great dish to bring to family gatherings, barbecues or office potlucks. It is quick and simple, and can be made with variations depending on desired ingredients.

There are so many ways to use tofu as an alternative to meat. One serving of tofu contains about 10 grams of protein and less than 100 calories. It is also an excellent source of amino acids, iron, calcium and other micro-nutrients.

This combination of tomato, garlic, beans, onion, other vegetables and spices makes a delicious dish to serve at a summer barbecue or bring to a potluck. If a large group of people need to be fed, this chili will fill the hungry bellies of eight to 10 people. It can also be heated up for leftovers or frozen.

VEGETARIAN SUMMER CHILI:

There’s nothing like the delicious scent of roasted garlic greeting guests as they are welcomed into your home. Whether it is served on bread or as an added flavor to any dish, roasted garlic is a mouthwatering treat.

The recipe for this roasted garlic is almost too simple. Just wrap the garlic heads in foil with a bit of olive oil drizzled inside and place it in the over for about 25 minutes. When they are ready, the garlic cloves will be so tender that they can be squeezed out of their shape and onto a warm slice of Italian bread like thick butter. If you think you liked garlic before this recipe, get ready to fall in love.

Garlic is an amazing plant bulb — or herb — that has many health benefits. It can be used for many conditions related to the heart and blood system including high blood pressure, low blood pressure, high cholesterol, coronary heart disease and more. Garlic also contains antioxidants that may prevent Alzheimer’s disease and dementia, and may improve bone health.

It’s easy to include garlic in most meals, and can be used in clove, dried or powdered form.

Try this roasted garlic as a spread as a yummy alternative to traditional garlic bread.

Tomatoes, garlic and three types of pepper: What could go wrong? If I could add tomatoes and garlic to every meal, I would — and often do. Tomatoes plucked fresh from the garden or a local farmers’ market are the way to go. If you don’t believe me, try doing a taste test with a tomato from a grocery store that has been heaped on a mound of others in the produce department, and with an imperfectly shaped tomato from an outdoor market. I am confident that the quality and flavor of the garden tomato will be evident.

I think the ingredient that may prevent some from giving this recipe a try is the tofu. Tofu is a somewhat unusual substance and for those who have never tried it, could look more like Playdough than food. Whenever I encounter someone who says they don’t like tofu — usually because they have never tried it in a good recipe — I tell them why I like it: Tofu is a tasteless protein base of soy with an egg-like texture that takes on whatever flavor it is mixed with. Throw some tofu in a pan with a bit of oil and taco seasoning: vegetarian tacos. Simmer some coconut milk and curry with small bites of tofu: Vegetarian curry. Marinade several slices of tofu in peanut butter and soy sauce: Nutty Asian tofu.

ROASTED GARLIC

1 tablespoon olive oil ½ purple onion, chopped ½ or 1 Anaheim pepper, chopped 2 cloves garlic, minced 1 pound tofu, crumbled 3 teaspoons oregano 1 teaspoon black pepper 1 teaspoon cayenne pepper 1 green bell pepper, chopped 2 cans crushed tomato 1 cup diced tomato 1 can kidney beans, not drained 1 can cannellini beans, drained Toppings: Green onions, chopped Sour cream Shredded cheese Heat olive oil in a large pot on medium heat. Add onions and simmer 5 minutes or until they become translucent. Add Anaheim pepper, garlic, tofu, spices and bell pepper. Let cook for about 10 minutes. Add the remaining ingredients, stir, and cover. Simmer on low heat for 35 minutes.

Serve chili with green onions, sour cream and shredded cheese. Serves 8-10 people.

ROASTED GARLIC Olive oil Several heads of garlic Remove papery skin from garlic while leaving cloves intact.

Place garlic on a square piece of aluminum foil and drizzle with olive oil. Wrap garlic loosely in foil and place on cookie sheet.

Bake at 400 degrees for 25.

Allow garlic to cool for a few minutes, and then unwrap and spread on Italian bread or any bread of your choosing.

The Loomis Eggplant Festival will return to its roots, filling the town’s main street with food, music and art for the entire family. The Loomis Basin Chamber of Commerce held the first Eggplant Festival on the street in 1987 and plans to provide another memorable community event this year on Saturday, Oct. 6.

“We hope to rekindle the friendly spirit of the original festival when the town used the street as its front porch and welcomed visitors to enjoy a day of small-town friendliness,” said Jenny Knisley, Loomis Basin Chamber executive director.

Festival admission and parking are free. Events are spread on Taylor Road from High Hand Nursery to the Blue Goose Historic Fruit Shed, as well as the Train Depot parking lot at the junction of Horseshoe Bar and Taylor roads.

About Acres of Hope This program is tailored for women with young children to help them get on their feet and become successful, so the cycle is not repeated from the women who are in the program to learn and grow. One analogy Lisa Risdal, Executive Director, provides are wounds and bandages.

“Our society is equipped to throw bandages at these folks in order to help them meet their immediate need just dealing with the things on the surface; but it isn’t going to take care of what is causing that wound,” Risdal, explained. “Acres of Hope allows women and children to stay there for up to two years and gives women the opportunity to step out of survival mode and start looking at those deeper issues.”

Their program helps these women look at the deeper issues within that has caused this wound and behavior and help them overcome the obstacles.

a bathroom, living area and a small kitchen space for basic needs. All main cooking is done in the main area so there are no accidents and the women can learn to cook.

From there, the Acres of Hope team works with the women through basics and has volunteers come in to teach the women how to do different things such as budgeting or meal preparation to be successful on their own. “ Homelessness is not the issue, homelessness is just one of the myriad results of those destructive behaviors, including damaged relationships, criminal records, credit records,” Risdal said.

“Unless you can step out of survival mode and focus on those things, and heal from the inside out, you are never going to break that cycle.”

ull out the apron and light up the grill, the second annual All American Ribs and Chili Cookoff will take place Sept. 29.

The event is not only serving up barbecue deliciousness but also it raises money for local organizations.

“We were very pleased and overwhelmed by the support last year so doing it again was a no-brainer.

We had people come from over 100 miles away and we are seeing tickets being purchased from as far south as LA this year. It’s a great event, supporting wonderful local organizations and at the same time supporting our city,” said Nina Besselman, event chairman.

The cookoff will feature approximately 20 competition teams vying for the title of All American Rib and Chili Cook off Champ.

“It’s an awesome event, it worked out great for me last year and I can’t wait to compete again,” said Mike Robbins who won first place last year. “Not only did my team win but my other team did too. I coach football at Placer High and we were honored to receive a donation from the event last year and we are again this year. That donation helped our team in so many ways, getting us through the playoffs and all the way to the state championship.”

THE AID STATION GIVES COMMUNITY A ‘CLUB HOUSE’ SPACE TO REST AND REMEMBER AUBURN’S HISTORY OF ENDURANCE STORY AND PHOTOS BY TESSA MARGUERITE

A

n idea that started as a joke between two friends is one of the most unique destination spots for the outdoor running community in Auburn and beyond.

Local runners Paulo Medina and Brian Valle are the owners of The Aid Station, a specialty running store and club house of sorts that serves craft beer and houses race memorabilia.

LEARNING TO RUN Medina, a Colfax resident originally from Peru, met his wife through running and they have three children, ages 9, 6 and 11 months.

About nine years ago, Medina decided to start running to lose weight and it quickly became an all-encompassing lifestyle. “It’s all I do,” he said. “All my friends revolve around running.” Since he started running competitively, Medina has done the Western States 100-Mile Endurance Run twice in under 24 hours, completed the Boston Marathon, five 100-mile races, two Ironmans and once came in third place in the American River 50 Mile Endurance Run with a finish time of 6:35.

His passion for running led him to work for several running stores like Fleet Feet and Auburn Running Company and to volunteer for many local runs. Medina started his own racing company called Single Track Running 24

four years ago and has hosted several events throughout Placer County as a race director.

That’s how he met Valle.

Valle is also the father of three children, ages 15, 11 and 9. He moved from Boston to the Bay Area during dot-com boom and lived there several years before moving to Cameron Park. For the past 17 years, Valle was a director of operations for a large company and also has experience in retail and the food industry, and was very much not a runner. “I was a smoker and drank too much,” said Valle. He said his running journey began with a jog to the stop sign outside his house, then the end of the road, and within that first year, Valle had run in five 50k races.

“I remember when I was really, really into

the running scene in mid-2000s, I heard about Western States and it was intriguing,” said Valle. As he started doing races around Placer County, Valle’s goal was to someday own his own running store.

He had been going through a rough patch in his career when he met Medina. After a two-day race in March, Medina and Valle were talking about the possibility of opening a running store that serves beer. “At the time it was kind of like a joke,” said Valle. But with Valle’s education in technology and business, and Medina’s experience as a race director with contacts in the local community, they started a business plan and began running full speed ahead.

Now, less than five months later, they have reached the starting line of a fresh and exciting joint operation. The Aid Station opened in August.

AID STATION AHEAD For those unfamiliar with organized races, an aid station is a volunteer-manned post along the race route with water, electrolyte drinks, food and medical personnel. It is also a place where cheering and shouts of encouragement fuel runners on toward the finish line.

The city of Auburn now has its very own “aid station” where runners and not-yet runners are invited to gather, drink a beer and be a part of the running community. The store had its soft opening Aug. 3, and will have a grand opening this month (check the website for dates and times).

One of the more unique aspects of The Aid Station is its museum-feel with artifacts from Auburn’s history of endurance races and trail runs. “We’re really excited and people in the community have already started donating to our space,” said Valle. A Western States timeline from the first year until now will be displayed with pictures along the wall, and more will be added as the annual event continues. Buckles, T-shirts from past races, awards – including the first cougar ever given at WS – and other memorabilia will be on display as well.

In addition to homage to Western States, Valle and Medina intend to decorate the walls with pictures of current and former Placer High athletes in a rotating gallery.

Photographs by local photographer and race director Luis Escobar will be visible, too. “This

place will be filled with beautiful images,” said Medina.

The beers and kombucha served will be on rotating taps from craft breweries around Auburn and Placer County, but the store will maintain normal retail hours – with the exception of special events. “We are definitely a specialty running store that sells beer,” stressed Medina. However, outside food is welcome in the store for those who want a place to hang out after a long run or spend an afternoon with their family.

The Aid Station sells four brands of running shoes, and a treadmill in the store is intended to observe gait analysis to fit runners to the proper shoe. They also have a variety of socks, hydration packs, poles, shirts and Goodr sunglasses. The store offers custom apparel made in-house like crew shirts and other printed merchandise. Products are sold online and in-store, but they are not the first priority at The Aid Station.

“The people in the community don’t need another place just to go and buy stuff,” said Valle. “But what the community loves, and what we really love, is that time we get

to spend together either during or after a run. That’s where that passion really comes together and that’s what we want to create here.”

Valle and Medina hope to give the space a club house feel with weekly community events and “thirsty Thursday” runs alternated with a town cleanup the following week. The Aid Station will also have packet pick-ups, post-run gatherings, local “super legend” speakers, movie nights and other community events. “I want a place where my kids can come in and remember when they’re older, ‘I spent my childhood at the running store, The Aid Station, and it wasn’t about buying stuff,’” said Medina.

Both Valle and Medina are visibly passionate about running and encouraging others to get out on the trails and explore the beauty around Auburn, the Endurance Capital of the World. “The whole (running) community is something you fall in love with,” said Valle.

“The sights and the experiences and just being in the canyons or mountains … it’s all just something that becomes a part of you.”

f you have a passion for United States history and the founding of this great nation, you won’t want to miss the 52nd annual Constitution Day celebration on Sept. 8 and 9.

Join other passionate citizens to watch the Constitution Day Parade and visit the Revolutionary War living history and re-enactments at Pioneer Park. The parade is expected to include 60 to 70 entries.

If you are new to this event, Jan Weaver, publicity for Constitution Day Weekend provides some insight and history of this unique and important occasion.

“It is a parade that was started to celebrate our nation’s fight for liberty and the signing of the Constitution,” Weaver said. “A republic government that is the longest running government entity in history.”

Nevada City’s Constitution Day Parade has been a local tradition since 1967 and is reported to be the oldest and largest Constitution observance in western America.

Weaver explains that the parade was started by the late Col. Bill Lambert, Worship Master of Nevada City’s Masonic Lodge No. 13, who wanted to recognize the importance of the Constitution as the cornerstone for a democratic nation.

While there is nothing new to the itinerary for the weekend, the crowd favorites of the parade are still prominent.

“Signing of the Constitution before the parade, the Famous Marching Presidents, a unique collection of citizens who see it as their civic responsibility to portray the 45 presidents of the United States at Constitution Day in Nevada City,” Weaver explains. “You can visit their website at famousemarchingpresidents.org.”

She adds that the crowd also enjoys the California Consolidated state official Fife and Drum Band, and concert by the Grand Isle Fire Brigade after the parade.

The Delaware Regiment of the Brigade of the American Revolution will be offering living history demonstrations of Revolutionary War soldiers drilling and firing, drilling of kids with mock muskets, music by the California Consolidated Drum Band, and colonial life living history.
