Independence Day in the Desert Celebrate America’s Independence, Patriotism and Pride

T

his is the day for red, white and blue. What better way to let freedom ring here in the Coachella Valley in traditional – and some non-traditional – ways, than to take part in many of the local community celebrations planned for July 3 and 4. Since the big day falls on a Wednesday this year, we get a bonus day on Tuesday with many parades and being parties being held both days. The Fourth of July, or Independence Day, is a time to bring families, friends and communities together to recognize our nation’s anniversary of the signing of the Declaration of Independence in 1776. Be prepared to show and see plenty of pride, enthusiasm and high spirits across the country – along with fireworks, hot dogs and maybe even your favorite cold beverage!

Here’s our line-up of July 4th options!

Patriotic Fireworks Show at Fantasy Springs on July 3 Reminding Americans of the native American history embedded in our nation’s history and intertwined with our patriotism, the Cabazon Band of Mission Indians and Fantasy Springs Resort Casino invites celebrants of all ages to gather for a free fireworks show. The event will take place on Tuesday, July 3 with the fireworks blasting off at 8:45 p.m. from the Eagle Falls Golf Course and accompanying music will be simulcast on The Eagle 106.9 FM. The public is welcome to gather around the Eagle Falls Pro Shop at Fantasy Springs and in the surrounding parking lot.

Guests should plan to arrive at Fantasy Springs Resort Casino early to secure a good spot to take in the magnificent and colorful show. Parking will be permitted in the gravel parking lot closest to the Eagle Falls Golf Course Pro

Shop (follow signs for Eagle Falls), in the casino parking garage and in the casino’s west and north lots. Palm Springs’ All American Fourth of July – Baseball and Pool Party As many people know, this annual event is a classic, pretty much defining the July 4th holiday in Palm Springs. Family members are encouraged to attend the much loved “All American Fourth of July” Fireworks Spectacular, Pool Party and Power Baseball festivities on Wednesday, July 4. Guests can make their way over to Sunrise Park for a picnic and then proceed on to adjacent Palm Springs Stadium, 1901 E. Baristo Road, to watch the Palm Springs Power

baseball team take on the Palm Springs Collegiate League All Stars at 6:05 p.m. Gates will open at 5 p.m., and FREE admission for the fireworks begins at 8 pm followed by the fireworks show at 9:15 p.m. sharp! Attendees should bring blankets or lawn chairs to set up on the field for one of the best fireworks shows in the valley.

To keep cool on July 4th, think about heading over for a refreshing dip in the pool at the Palm Springs Swim Center, 405 S. Pavilion Way, for fun and frolic at a special 2 p.m. pool party featuring music, games and a large inflatable slide. Or combine the best of both; enjoy the fireworks show while relaxing in the pool! Americans love fireworks. After the Continental Congress passed a resolution to declare independence from England (which was actually on July 2), the founding father John Adams wrote that the event would forever after be commemorated with “illuminations” across the country. His prediction has proven correct so far. Here are just a few fun facts about America’s favorite way be festive on the Fourth of July.

• Americans have been using fireworks to commemorate the founding of the country from the very beginning. Fireworks displays on the Fourth of July were recorded before the United States was even officially the United States, in 1777.

• Although fireworks have been used in China for a long time, the aerial shell that bursts in the sky was invented in Italy in the 19th century.

• Fireworks are made with gunpowder, so you’d think we invented firearms before fireworks. In fact, the reverse is true. Gunpowder was used for fireworks in the 10th century in China whereas the first recorded use of gunpowder for weapons is from the 11th century.

• Blue is the most difficult color to make in fireworks.

• The Walt Disney Company uses more fireworks than any other organization in the world. It also is the second largest purchaser of explosives. Only the United States Department of Defense buys more.

• Moving tip: Put books into suitcases, which often have wheels and good handles, in order to transport them.

• Finding a bandage to cover a skinned knee or elbow is almost impossible. These can be a large or irregular area that doesn’t fit under even the most generous of bandages, and adhesive bandages just don’t stick well over a joint.

Here’s a tip for that: Apply antibacterial ointment generously, then cover the knee or elbow with a regular gauze pad. Then add a “sleeve” cut from a pair of tights.

It moves with the joint without bunching up and it stays in place.

• “After the kids decorated cupcakes one day, I found that the counter and floor were covered with little prinkles. Rather than sweeping them up (which made them go flying), I used a lint roller, which worked perfectly.” — S.I. in New York

• “To save money on electricity, hang jeans and other heavy clothing to dry first. When it’s mostly dry, pop it in the dryer to fluff. Do the same with towels. ou might not think of seafood as seasonal. If you go to the supermarket, many types of fish are available yearround. But not all seafood is created equal. If you care about fresh seafood, sustainable fisheries, protecting our oceans and eating fish that is healthier for you and your family, it pays to know what fish are in season. Here are some great tips about selecting fish from the Center for Food Safety, www.centerforfoodsafety.org

Much of the fish available today in the United States is imported, and frequently from places where health and environmental standards are weak or non-existent.

Worldwide, regulation of the fishing industry is poorly enforced, and less than 2 percent of seafood imports to the U.S. are inspected for contamination.

Shipping fish around the world has a negative impact on the climate, but it can have an even greater impact on our oceans. With nearly 85 percent of the world’s fisheries overfished, our seafood choices are more important than ever. Decades of overfishing have driven many fish populations to levels so low that recovery is a longterm proposition.

1. Choose local seafood if possible, and always choose domestic over imported.

2. Choose wild.

3. If it’s farmed, choose seafood from the U.S., especially in low- or no-output, recirculating systems.

4. Favor fish caught by hook and line, handline, troll (not to be confused with “trawl” fishing, which can be very destructive), jig or speargun.

PCBs can cause significant health concerns for both humans and the environment, and are associated with increased risk of cancer, disrupting the endocrine system, and contributing to developmental and reproductive problems.

Eating seasonally – whether it’s fruits, vegetables or fish – is a healthier choice for both our plates and our planet. Use the tips above to go fishing this summer in your grocer’s seafood department and try this wonderful recipe for wild Alaska salmon.

Herb-Roasted Wild Alaska Salmon • 1 (2- to 2 1/2-pound) skinless wild Alaska salmon fillet • 1 teaspoon coarse sea salt • 1 teaspoon freshly ground black pepper • 1/4 teaspoon cayenne pepper • 1/4 cup extra-virgin olive oil • 2 tablespoons fresh lemon juice • 1/2 teaspoon lemon zest • 4 minced whole green onions, green tops and white parts • 1/2 cup minced fresh dill • 1/2 cup minced fresh parsley • 1/4 cup dry white wine, chicken or vegetable stock • Lemon wedges

1. Heat oven to 425 F. 2. Place the salmon in a ceramic, glass or stainless-steel roasting dish and season with salt, black and cayenne pepper. Whisk the olive oil and lemon juice together and drizzle over the salmon. Let sit at room temperature for 15 minutes.

3. In a small bowl, stir together the lemon zest, scallions, dill and parsley. Scatter the herbs over the salmon, turning it so that both sides are coated. Pour the wine or broth around the fish fillet in the roasting dish.

4. Roast the salmon for 10 to 12 minutes, until firm and almost cooked in the center. Cover the dish tightly with aluminum foil and allow to rest for 10 minutes.

Cut the salmon crosswise into serving pieces, and serve hot with lemon wedges. Serves 6.
