hat does a tulip and the mythical creature pegasus have in common? Aside from their admirable beauty, well, not a whole lot. Except when they are both poured as lactic art expressing itself over a double espresso. Pair those pouring from a shiny carafe of steaming milk with an excited crowd of coffee lovers and you’ve got a caffeinated competition on your hands, which is what transpired at the Pour Throwdown, The Pour Choice’s first latte art competition on May 14 in Auburn.

Competitors, most of whom were seasoned baristas, travelled from far and wide — some driving over the mountains from Reno and others up from the Bay Area — for a chance to

compete. Nearly 50 baristas signed up to participate in the throwdown.

The event was enthusiastically emceed by Temple Coffee Roasters Jeremiah Frazier. Coffee was provided

by Verve Coffee Roasters from Santa Cruz. Prizes were donated by Auburn’s own Clementine Coffee Roasters, Stella + Parker, Kra Creations, with regional roasters Mast Coffee Co., Valiant Coffee, Chocolate Fish Coffee Roasters and Pachamama Coffee also pitching in.

Though the latte art competition was billed as the main event — with a livestreamed broadcast projected on a wall for those seated upstairs — the night also invited attendees to contribute to the Paul E. Smith Scholarship Fund, a scholarship awarded annually to a high school senior who struggles with epilepsy.

fter years of preparation and groundwork, the dogs are finally ready to duel.

Dueling Dogs Brewing Company is Lincoln’s newest brewery, meadery, cidery and farm stand, owned and operated by longtime Lincoln residents Earl and Adriana Stephens. Earl grew up in Placer County and attended Glen Edwards Middle School, Lincoln High and Sierra College before continuing his education in Southern California. He returned to Lincoln as an engineer.

Earl’s wife, Adriana, grew up in San Jose and moved to Placer County several years ago.

Before their son Matteo was born, the couple decided they wanted to raise him in an agricultural environment. “I realized that you cannot make enough money off most 10-acre plots to

do anything with and I had to figure out how to do it,” said Earl.

The solution came in the form of mandarins and hops.

So in addition to being an engineer, farmer and father, Earl added the title “brew master” to his name when he decided to build his own brewery from the ground up. Adriana became head of business operations and mead maiden with a baby on her hip. Matteo is now 4 years old and already boasting to his friends about “his” brewery.

“It’s been a true family adventure,” said Earl, who designed, engineered and built almost everything on the property. Adriana’s brotherin-law does all of the graphic design, and Earl’s daughter does the web development for their

I realized that you cannot make enough money off most 10-acre plots to do anything with and I had to figure out how to do it,”. website. The “dungeon,” where all the beer and mead is made and stored, was built partially underground to keep it cooler inside which will reduce energy cost and use.

Earl uses a seven-barrel system to brew the beer and keeps batches of mead and braggots in small, 30-gallon barrels. Each brew calls for approximately 700 to 1,200 pounds of grain to create the unique, locally sourced libations.

With its grand opening at the end of May, Dueling Dogs introduced three beers, one mead, one spiced apple cider and two braggots (A braggot is a type of sweet mead made with honey and barley malt). Paw Pills is a classic pilsner and Hoppy Tails is an earthy IPA. Mandarin Madness is a light, citrus beer similar to a Blue Moon, and the Mandarin Session Mead is sweet and lightly carbonated. The two braggots offered are a honey pilsner called Diggin’ the Braggot and a honey IPA called Braggot On. The Stephens also hinted at seasonal flavors like a mandarin chocolate porter around Christmastime.

Earl and Adriana both said the experience of creating this rustic and relaxing place has been enjoyable, but acquiring all the appropriate permits and meeting regulations took longer than expected. “We went from growing mandarins

to making an all encompassing operation,” said Adriana. In addition to traversing through the bureaucratic jungle, one year into the project Earl was diagnosed with cancer. Undaunted, the Stephens’ continued working on the brewery while treating the cancer with homeopathic medicine and a ketogenic diet. Earl has now been in remission for almost four years and has maintained a healthy diet and optimistic attitude. Perhaps all the difficulties that arose during the beginning stages of this venture have made the culmination of this “craft” project even “hoppier.”

The laid-back atmosphere and rural country setting surrounding Dueling Dogs is family-, kid- and pet-friendly. Visitors can throw rocks in the pond or buy their dog a beer (yes, this brewery serves a specialty, bottled beer for dogs). Earl’s thoughtful designs even include outlets below the redwood bar top for phone batteries that have been drained after taking too many photos of the lush green grasses and mandarin trees surrounding the property. There is indoor and outdoor seating, and picnickers are welcome to bring their own spread or buy some Placer-grown produce from the farm stand inside the tasting room. All the mandarins, pistachios, pumpkins and herbs are grown on farms within a five-mile radius. Adriana said she hopes this will be a fitting space for local growers to sell their ripened fruits and veggies.

For those looking for an innovative craft brewery off the mainstream beer path, take an afternoon escape into the countryside and let the scent of mandarins carry you to Dueling Dogs Brewery.

The Dueling Dogs Brewing Company is named after the Stephens’ two dogs, Newton and Rocco. Newton, a yellow lab, was named after Isaac Newton because his large ears often caused him to trip and gravity would pull him to the ground.

Rocco, a black lab, was named by Adriana who is of Italian descent.

After Newton died two years ago, the Stephens’ got another yellow lab puppy and named him Newton II, or N2, or Nitro.

n the summer there is nothing better than using a boat as a platform for swimming the river, floating the gentle rapids or fishing for trout on a hot summer day. Side streams provide waterfalls, good lunch stops and opportunities for exploring and learning more in-depth details about American River ecology, life cycles and food webs.

“The canyons are a mosiac of native trees and shrubs that are specifically adapted to our climate,” Eric Peach of Protect the American River Canyons said. “Deeper exploration reveals bedrock mortars along the river that were used by the native Nisenan Maidu for preparing acorn meal and other seeds for cooking. More recent Gold Rush

history is revealed in the cobble rock piles left behind in search of gold along the river channel.”

If you are a beginner, go with seasoned paddlers or commercial companies to learn how to safely outfit a raft or inflatable kayak. It is also very important to learn from experienced paddlers how to “read” the rapids for the safest route and how to deal with unexpected challenges. Some rapids like Murderers Bar are rated Class V-VI and are not considered safe at any flow level. Alcohol consumption or smoking pot is not recommended on rafting trips.

Peach recommends taking time to enjoy the wilderness scenery and history of the American River.

The rafting season starts in the spring but one must take care to consider that the river is running cold and swift even though air temperatures are warm. Check on one of the websites like dreamflows. com that flow levels are safe and not too high for your skill level. Rapids are rated from Class I easy to Class V very difficult but at high flows even an easy rapid can turn into a Class IV or V. An appropriate rafting life jacket, PDF, is essential for any river paddling trip. In the spring wear appropriate protective clothing like a wetsuit with a spray jacket or a dry suit to stay warm. Wear polypro, fleece or synthetic under clothing. Cotton wicks the cold water and doesn’t warm easily. The water temperature is in the mid-50 degree range so hypothermia is a real consideration. Conversely, in the summer the cold water is a welcome refreshing feeling on a hot summer day. The raft provides a fun river swim platform.

• Visit the company’s website.

A good rafting company will have a great website full of valuable information.

• Read online reviews and see what others thought of their experiences.

• Call the outfitter and seek advice on an appropriate trip for your group’s athletic ability, age, and experience level.

• Ask about lunch — the best rafting companies serve delicious cuisine.

• Dress for success. Wear a (raft-company-provided) wetsuit in cold months like April, May, September and October and plenty of sunscreen and a hat or visor under your helmet in summer months. Don’t wear cotton. And make sure your sneakers or sandals are comfortable and have heels or backstraps.

• Visit the photo companies after your trip. Hotshot Images and Sierra Nevada Photos take awesome pictures that will preserve your memories for a lifetime.

• And finally, have fun. After all, that’s the main goal of whitewater rafting!

Thornley explains that they have had over 5,000 applicants for the 369 slots. They use a lottery system for those who qualify for the race, and if applicants apply various years, they get double tickets for the lottery.

Sponsors for this event help keep the cost low for participants at $410, unlike other races. Some sponsors include Altra, MicroLumen, VESPA, Comstock Heritage, Red Bull and more.

The Western States Endurance Run organization invites all community members from Auburn and other local communities out to watch the runners, at least to the finish lines.

Thornley explains that the first runners come in around 7 p.m. and then continue to come in until the next morning. However, he adds that the Golden Hour between 10 a.m. and 11 a.m. is when there are more people than any other and inspiring for those present at the finish line to watch.

“These are the people who have jobs and families and have managed to run all the way to Auburn from Squaw Valley, it is incredible to witness,” Thornley said. “I say it is a juxtaposition of human exhaustion and human achievement which is hard to duplicate; if everyone could spend time at the Western States Finish Line, I think the world would be a better place.”

JUXTAPOSITION OF EXHAUSTION AND ACHIEVEMENT n June 23 starting at 5 a.m. in Squaw Valley, 369 runners will begin a 100-mile run until they reach Placer High School’s LeFebvre Staduim in Auburn. Craig Thornley, race director of Western States Endurance Run gave a brief overview of what the nonprofit has done and continues to do to improve the lives of runners.

The historic Western States 100-Mile Endurance Run started in 1974 with Gordy Ainsleigh.

The run’s website states that in the miles between Squaw Valley and Auburn, runners experience the majestic high country beauty of Emigrant Pass and the Granite Chief Wilderness, the crucible of the canyons of the California gold country, a memorable crossing of the ice-cold waters of the main stem of the Middle Fork of the American River and during the latter stages, the historic reddish-brown-colored trails that led gold-seeking prospectors and homesteading pilgrims alike to the welcoming arms of Auburn.

“People run in and out of canyons and through some mining history near old equipment,” Thornley said.

Since the race goes through Granite Chief Wilderness, organized events are not allowed in the area. After a long process, the Western States Endurance Run was grandfathered in and allowed to go through the wilderness. The only

Is it selfish to volunteer for fun?

A

nyone who thinks volunteering is dull has most likely never spent an weekend with Billie MacDonald, selflessly serving at a parade, symphony or crab feed.

In addition to spending countless hours volunteering, MacDonald is a great-grandmother, collecting officer with Safe Credit Union and also has a glass fusing business called MacFusion. She moved from Berkeley to the Sacramento area several years ago after raising four children as a single mother. MacDonald now has five grandchildren and one great-grandson.

“Billie’s the first one, always, to sign up for something,” said Amanda Merz with community engagement and volunteerism for Safe Credit Union.

The company offers employees 16 hours of paid time off during the year to volunteer, but most of MacDonald’s time spent volunteer is outside work hours. Merz said a majority of the volunteer opportunities that are posted for employees are from Team Giving.

Team Giving is a nonprofit based out of Newcastle that connects volunteers with businesses or organizations in Placer and Sacramento counties. This year, MacDonald was awarded for excellence in volunteerism, the Magical HATT Award, from Team Giving, and

was recognized by Assemblyman Kevin Kiley with a certificate of appreciation.

MacDonald said the reason she began volunteering stemmed from selfish roots. “Crime Stoppers was having a crab feed,” MacDonald said. “And I thought ‘Ooo … I’ll volunteer and I’ll get a crab dinner ‘cause they feed the volunteers!’” She was right. And as she signed up for more volunteer opportunities that popped into her email inbox, she found that in addition to the positive experience, she was meeting some very delightful and genuine people. “I have met the most interesting people in Sacramento — which I never thought lived here,” MacDonald said with a laugh.

A few of the events and fundraisers MacDonald has participated in over the past two years include: The Folsom Symphony, the Folsom Theatre Co., Make A Wish Foundation, Mercy Multiplied, Crime Stoppers, the Folsom Fire Department, the Sacramento LGBT Community Center and many others.

MacDonald is part of a group of volunteers that sorts through donated clothes for patients at Sutter Hospitals who might not have anything to wear when they are discharged. Before she joined the team, items that couldn’t be used by the patients, like undergarments or formal attire, were placed CONTINUED ON PAGE 16 ››

MacDonald said seeing the recipients of the Make A Wish Foundation when they are granted their “wish” is just amazing. MacDonald remembers one little girl in a wheelchair whose wish was to go on a trip with her parents. Seeing her face as the wish was coming true is something MacDonald will never forget and has made her appreciate what she has.

Although she said it began with selfish intentions, MacDonald’s volunteerism has developed into a humble passion. When others ask her: “Where do you find the time?” or say, “Oh, I’m too tired at the end of the day.” MacDonald responds: “You don’t think I’m tired?”

But because of how much her children and grandchildren benefited from the communities they lived in, the joy of seeing the gratitude in someone else’s face and the inspiring people she meets doing it, MacDonald continues to give back. “It has enriched my life more than I ever imagined,” she said. “I can’t even verbalize it … it’s just better. And I have fun. I’ve got more time than money, so why not?”

in a pile to give to a thrift store. MacDonald suggested that they give the remaining clothes to Women’s Empowerment. Now, after sorting through clothes at Sutter Hospital, MacDonald loads her car full of the remaining articles of clothing and brings then to Women’s Empowerment to offer the women for free.

MacDonald said when she found out how many people in her own community were in need, it was a shock. She realized many only have one pair of shoes or no change of clothes. “You have all these clothes that nobody else wants, they’re filling our closet,” MacDonald said. “And you give them to people and they’re so grateful.”

Through volunteering, MacDonald said she has become aware of many local organizations that she did not know existed.

One fundraiser that MacDonald has been involved in is St. Baldrick’s Foundation volunteer-organized head-shaving event. This year, she volunteered as a decorator handing out beads, and next year, she plans to participate in the event by getting her own head shaved.

ogs are known to be man’s best friend but sometimes they can have their bad days, bad behaviors, and other dogs may be stubborn and not want to listen at all.

Sometimes dogs can be easily trained by their owners and other times, they need something more.

Movin’ On Up K9 Training, offers unique curriculum that is geared toward helping all dogs learn basic obedience, positive reinforcement and more. Nancy Creal, owner and director of instructors at Movin’ On Up, retired from teaching in 2006 and followed her passion to become a professional canine trainer.

“I find it incredibly rewarding to work with families who are frustrated with their dog’s behaviors and see how thrilled they are when they have a well-mannered dog,” Creal said.

Their first-rate curriculum is individualized for young puppies, dogs of all ages, sizes, breeds and competition levels. Creal emphasizes that all breeds and potential students are welcome to visit, observe classes and ask questions.

“Our philosophy is to train dogs in focus and attention,” Creal adds. “We want to teach you how to build a relationship with your dog; a relationship where your dog is focused completely on you regardless of what is going on around you.”

The takeaway of the classes is to create and build a strong bond and trust with your dog. By doing so, this will lead to a happier and more confident dog and lifetime relationship between the two of you, Creal said.

Whether clients have just started attending classes this year or have been attending for numerous years, they all seem to agree on one thing: It is a great, positive class for them and their four-legged friends. Brenda Afdal and her golden retriever, Samson, have been training with Nancy for three years.

“I appreciate that she not only hits on the basic obedience, but she will

Kathleen Fraga and her puppy Kenzie have been training with Nancy for four months and have already seen a positive outcome from being in the class.

“Because of her four months, Kenzie got her canine good citizenship award at a small dog show,” Fraga said. “(Creal) is great with the dogs and correcting bad behavior and encouraging good behavior through reward and praise rather than punishment.”

Other clients who have completed their trainings agree that it is a great time not only for the owners but also the dogs whose tails are wagging throughout the class. Through the games and positivity with the animal both the dog and owner are happy.

A variety of classes are offered from puppy socialization to competition obedience, rally classes and therapy dog certification.

Shiloh, golden retriever and therapy dog, has more than 12 years of therapy visits to hospitals, schools and residential facilities. Creal said that he is close to 13 years old and still provides his services and refuses to retire.

“When I ask Shiloh to say ‘hello’ to a patient he automatically goes up and lightly rests his head on their lap,” Creal said. “If a resident has no mobility in their hands, Shiloh will gently put his head under the hand, so they can feel the texture of his coat.”

The mission of Movin’ On Up is simple: Positive, utilizes motivational methods, effective and last, but not least, fun. Classes are offered at our large, enclosed facility at the Gold Country Fairgrounds.

“So, put your paws down and come to class,” Creal said.

I

t’s a sunny spring day. A light breeze gently blows stems laden with fruit ranging in color from a soft green, to pink to pastel blue to a deep almost purple hue as blueberries ripen on a hillside at Blue Acres Blueberry Farm in Newcastle. From a distance, they almost look like grapes.

They are Althea Frankel’s “babies,” along with her llamas and dogs.

Frankel planted the approximately one acre of blueberries about nine years ago, putting in 100 to 200 plants each year until she reached about 850. She chose blueberries because of their well documented health benefits.

As it turned out, the property also had soil with the right pH balance. “(Blueberries) like acid soil ...,” she said. “I think the water is the secret — if your water is really clean and doesn’t have a lot of selenium and alkaline. Our soil is pretty good. It grows beautiful mandarins, oranges and azaleas.”

She practices organic farming, fertilizing with soybean mulch or organic liquified fish.

Gophers and organic farming methods have reduced the total to about 700 plants. But the yield continues to grow.

This year’s crop is the biggest ever, she said.

Harvest time begins in late May and lasts through June, occasionally even stretching into early July. During June, Frankel sells the blueberries at the farmers market in Auburn.

“We pick when they are ripe and at their peak,” she said.

“You have to know what it looks like when they reach that peak color. It’s usually a dull deep blue with a powdery look.”

She grows a half a dozen varieties, among them Jubilee, O’Neal, Sunshine, Emerald and Jewel.

Emerald is one of her favorites. The Jewel variety grows very large.

“When we start blending is when I can start selling,” she said. “The O’Neals ripen first and the others follow.”

The berry varieties look similar. But tasting them directly off the vine reveals subtle to distinct differences — all delicious but ranging from slightly tart to very sweet.

Tending the blueberry crop has offered some challenges but Frankel has persevered with great success.

Weather is always a factor. Last January’s warm days caused some of the plants to blossom way too early. Then, inevitably a freeze hit later in the month, killing off those early blooms.

Birds are another hazard.

“The birds are unbelievable,” she said. “A couple of years ago, we lost a whole crop.”

To ensure that doesn’t happen again, Frankel and her husband, Merrill, recently finished installing netting to protect the whole blueberry field.

Frankel’s blueberries have become a favorite at the farmers’ market over the years, with many customers who pre-order from week to week.

“It’s really great to know that people really do appreciate good fruits and vegetables,” she said. “Most of the people who come to the farmers market know about good quality fruits and vegetables. I just enjoy the people and just knowing that I have a good quality product.”

Customer demand is high for the blueberries, but there are still plenty to enjoy at home.

“I make muffins,” Frankel said. “I have a certified kitchen so I make muffins for the market.”

She also makes a blueberry crumble.

“It is a favorite because it is to quick to make. I precook the berries first, almost like a preserve,” she said. “Then I pour (the mixture) into the crumble.”

They blueberries also great on cereal.

“My husband loves them,” she said. “He just eats them by the handful. The dogs love them, too.”

Vegan berry tea cookies A PERFECT AFTERNOON SNACK

ne of my favorites things to do as a little girl was get out my plastic tea set, arrange it on the floor of my bedroom and invite a select few of my very favorite stuffed animals to attend the party. The spread was simple: Apple juice for the “tea,” whatever type of cookies Mom had in the snack drawer and all the berries I could find in the refrigerator or blackberry bushes outside. To my young and imaginative mind, berries of all kinds were a crucial ingredient to make a proper tea party.

I still think berries are a lovely addition to a tea party.

Their vibrant hues add splashes of deep purples and bright reds to the setting. But instead of just dropping them into a dish on the table to be plucked out – as I did when I was a child – I now find it more exciting to incorporate berries into scones, cakes and tea cookies.

I have a delightful recipe for blueberry scones, and who doesn’t love a decadent cake piled with whipped cream and raspberries? But I decided this time to experiment with a type of tea cookie with the added challenge of making it vegan.

I am not a vegan, but I have several friends who do adhere to a vegan, dairy-free or gluten-free diet I know they appreciate when others make the extra effort to provide special treats for them. This recipe for vegan berry tea cookies is free from all milk and animal products. It does contain gluten since I just used bleached, all-purpose flour, but it

could easily be a gluten-free snack by substituting the flour in the cookie with almond or coconut flour.

It’s fun to find new ways to make familiar recipes, regardless of whether you can’t or don’t want to put certain ingredients in your body. I was intrigued by the idea of making a dairy-free frosting and loved how the cashew frosting turned out.

I let my frosting remain nutty simply by shortening the mixing time. In my opinion, it added a nice texture beneath the soft and sweet berries. For those who prefer frosting to be more or less sweet, this can be accomplished by adding more or less sugar. Another alternative for a low-sugar frosting would be maple syrup in the place of sugar. In fact, even if no sweetener was added at all, the sweetness from the berries and cookie would probably balance out quite nicely. Any extra nutty frosting can be used on toast or as a fruit dip.

Be sure to bake the cookies until they are golden-brown so that when they cool the crunch is there. These are not meant to be soft and fluffy, but rather a firm base for the nutty frosting and berries. They are delicious without the toppings, and can be served plain if you desire.

For the berries to top this batch of tea cookies, I used blackberries, raspberries and strawberries. The local roadside strawberries stands are mostly all open now, and it seems to me that they are particularly sweet and delicious this

VEGAN BERRY TEA COOKIES Ingredients NUTTY FROSTING

2 cups soaked cashews (soak full 24 hours) 1/3 cup sugar 2 Tbsp lemon juice 2 Tbsp water 3 Tbsp coconut cream 2 tsp vanilla extract COOKIE

½ cup coconut oil or dairy-free butter

¾ cup white sugar 1 Tbsp ground flaxseed mixed with 2 Tbsp water 1¼ white or wheat flour 1 tsp cream of tartar ½ tsp baking soda TOPPINGS

Sliced strawberries Raspberries Blackberries Any other fruit or berry

Directions 1. For the cookie, begin by preheating the oven to 350 degrees F. 2. In a large bowl, mix together the coconut oil or butter and sugar until smooth and creamy.

3. Mix in flaxseed and water.

4. Combine the flour, cream of tartar and baking soda; stir into the creamed mixture until just blended.

5. Roll dough on parchment paper and cut into circles with cookie cutter or mouth of a pint glass. Lay on parchment paper cookie sheet 2 inches apart.

6. Bake for 9 to 13 minutes, or until lightly browned. Let cool. Makes about 14 tarts.

7. For the frosting, blend the soaked (and drained) cashews in a high-power blender or food processor until it turns into a coarse texture.

8. Add the remaining ingredients and blend until completely smooth, or until desired nuttiness, about 4 to 5 minutes.

9. Spread the nutty frosting on the cookie. Top with berries. Enjoy! year. While some strawberry stands also sell other berries, the farmers’ markets around Placer County will surely have a vibrant collection. Buying fruits and vegetables from local sellers makes it much more likely that the food was picked or harvested at the peak of its growth. It makes a difference to the farmer, too.

I invite you to try out these sweet treats, perhaps accompanied by a cup of tea, and enjoy a simply delicious afternoon snack. Maybe you’ll even be inspired to invite a few friends to a “berry” sweet tea party.

alling all Dead heads: It’s almost time for Auburn’s Ain’t Necessarily Dead Music Fest.

The outdoor music festival will have bands performing tunes in the style of The Grateful Dead. The festival will have two stages of music, a main stage and a smaller stage.

The smaller one will have local bands and talent.

The event is hosted by Auburn Recreation District and will feature a kids’ zone with bounce houses and other children’s activities.

For the older ones, a beer garden will be pouring local brews. Pair that craft beer with something from one of the food trucks that will be on hand offering a variety of eats from pho to Italian ice.

Craft vendors will be showing off their creations as well.

The event is similar to ARD’s Party in the Park which takes place June 15 and is also no charge to attend.

“It is a also a great way to enjoy our parks, and to gather with friends — Something the Auburn Area Recreation and Park District supports,” the event’s website said.

or more than thirty-seven years, Music in the Mountains SummerFest has been Northern California’s premier summer concert series, featuring exciting outdoor performances and sophisticated chamber concerts, demonstrating that classical music, performed by a world-class orchestra and chorus, can transform lives and communities.
