Cool off at two local frozen yogurt shops this summer
T
he summer heat is almost here. What is better on a hot summer day than sweet, cool treat? Frozen yogurt will satisfy a sweet tooth without ruining a diet. Just where will Granite Bay residents find this frozen, tasty treat? Granite Bay View looked around town and found two locations. NUYO

According to NuYo Frozen Yogurt, frozen yogurt promotes digestive health, helps manage lactose intolerance, supports healthy bones and boots the immune system. The Granite Bay shop has just over 80 toppings and 14 flavors to choose from. NuYo offers staple flavors and rotates out a few each week. Some of the most popular flavors are pomegranate tart, cake batter, the classics — vanilla and chocolate, ube, orange and tart. The shop also offers seasonal fruit. “We try to get as local as we can. Ours

is always fresh, never frozen,” Kimberly Guyton, co-owner and operator said. Besides yogurt, the shop offers shaved ice. Some even layer the bottom of the cup with vanilla frozen yogurt and top it with flavored shaved ice. Some of the most popular toppings customers choose are strawberries, blackberries, almonds, chocolate chips, gummies, chocolate wafer sticks and boba. The Granite Bay shop has been in town for nine years. “Since we’ve been here so long, we’ve seen kids grow up and now some of them work here.” Guyton said. Sandi and Sal Viscuso first opened a Mountain Mikes in El Dorado Hills. After watching the next door’s frozen yogurt customers come back and forth they asked, why not open their next Mountain Mike’s with a frozen yogurt shop inside? Thus, Sierra Frozen yogurt was born. For the past six years customers have been able to have a slice of pizza, a beer and some frozen yogurt all in under the same roof. Their most popular time is after school on Thursdays for the kids. Regulars often stop by each week. “Parents can get a beer while the kids have a yogurt,” Sandi said. Customers can also bring their dog by to get a sample of vanilla frozen yogurt and have their photo taken for Sierra’s wall of friends. “Sierra is our dog. That’s where the name came from. The name also went well with Mountain Mikes,” Sandi said.
Sierra Frozen Yogurt offers eight flavors and in the middle of the machines, it offers a swirl of two flavors. Sierra changes out their flavors about every two weeks. Some of the most popular flavors are the cable car chocolate, cookies ’n’ cream, pomegranate raspberry and salted caramel corn. Popular toppings include hot fudge, poppers, cookie dough, brownies, and sprinkles. Once in while Sierra offers a sorbet flavor. Strawberries and bananas are the most popular fruit toppings. Thursdays are 50 percent off yogurt if you buy a lunch buffet at Mountain Mike’s. The shop also offers punch cards with buy 10, get one free.

Following close behind Dexter is Marcus Graziano, owner of Capitol Cellars and a warm, hospitable wine enthusiast who has a passion for community and creating great customer experiences. “I grew up in the industry and I went to UC Davis,” Graziano said. “When you are passionate about something like this, it really comes through to the customers.” He started his company approximately 33 years ago and during that time Graziano has developed many great relationships with wineries. He explained, customers will learn that they shouldn’t pay too much for a wine because they aren’t getting their money’s worth, whether it is an everyday wine or a special, celebratory wine.

“We carry wines in the $20 price range that are pretty amazing quality for everyday consumption,” Graziano said. “All of these wines are really beyond what their pricing is.” His enthusiasm for his customers and the service he provides comes to life when he recommends a bottle of wine to somebody. He said that he knows every bottle and every customer’s purchase in the last 20 years. He learns and knows what customers enjoy, rather just try to sell something. “I want to really take to heart what they like and what their interests are,” Graziano said. “We really take an interest in what our customer’s tastes are like. It doesn’t matter what I like, it matters what my customers really enjoy.” When it comes to the community, relationships are most important to his business. He loves his customers and knows they could go to chain stores instead of shopping at a locally-owned business. There are many wine to choose from at Capitol Cellars, and as Graziano explained, he helps customers find what they are looking for or he can take them on a journey to find just the right match, whether the wine is for personal consumption, a party or a gift. Capitol Cellars has wine lockers, which are cooling units for customers to help them build a wine cellar. There is also a wine bar that features wines that no one else in the country offers. The wine bar is a non-profitable part of the business, where tastings are offered at a lower cost but encourages customers to purchase the wines they have tried.

amily, flowers, and fun are just a few things that are planned for Mother’s Day on Sunday, May 13 at Granite Beach at Folsom Lake. Bill Driskill, founder of Total Body Fitness, explained that this is the eighth year Total Body Fitness has been hosting the Mother’s Day Triathlon & Duathlon at Granite Beach and is excited for another successful and fun year for moms and families to enjoy the event. “Both the triathlon and duathlon are women-only events and the Mother’s Day 5K is a coed event,” Driskill said. “It is a great event for moms to enjoy with their entire family and three races to choose from.” Not a fan or running and rather walk and take in the surrounding nature? to boating season! 52nd Camellia Cup is a wrap tradition that spans decades was celebrated on the blue waters of Folsom Lake last weekend as the 52nd annual Camellia Cup set sail. A stellar roster of competitors battled challenging conditions on the opening day of the event and near perfect weather made for a spectacular event for one of the two days on the water and off, where many spectators enjoyed the sights from the shores of El Dorado Hills, Folsom and Granite Bay alike. The running of the annual Camellia Cup means one thing to recreationalists at Folsom Lake, it marks the official opening of boating season. With the late season rainfall and recent snowmelt, Folsom Lake’s level remains near the 80 percent capacity mark. While this season may not have the longevity of last summer, it is surely off to a satisfying start. This weekend, temperatures are expected to near 80 degrees and the launch ramps are expected to have their first busy day.

When it came to racing on Saturday, consistent sailing in both light and strong wind was a key to Sacramento resident Mark Erdrich winning the overall Camellia Cup regatta. This was the second Camellia Cup victory for Erdrich, 57, who led the seven-boat Santana 20 class in four races conducted by the Folsom Lake Yacht Club (FLYC). Representing FLYC on Fusion with midman/tactician Austin Quilty and bowman Dave Kerner, Erdrich finished first thrice and second once to win his class, the C&T Sailboats Perpetual Keelboat Trophy (the fourth time he has taken home this honor) and the Camellia Cup. Winds were so light on the first day of the regatta, varying from one-to-four knots, that racing was abandoned after just one race. The next day, the wind strengthened, reaching 10-to-12 knots, which was described by local Laser sailor Steve Aguilar as ideal conditions for Lasers (a 13-foot single-handed dinghy). Eleven Lasers, the most to compete in Camellia Cup in recent memory, strongly positioned a Laser skipper to win the Cup, but the Lasers were so expertly

n 1990, Dr. Doreen Granpeesheh founded the Center for Autism & Related Disorders with one location in Woodland Hills. CARD is the world’s largest and most experienced organization effectively treating individuals affected by autism spectrum disorder, according to their website. One in 68 children are affected with autism. CARD was founded to help families overcome the hardships and learn how to work with the diagnosis and to help children overcome the obstacles. Auburn welcomed CARD’s expansion site in April 2017 with Alana Leal as operations manager. She worked to create the clinic rooms that allow students to work with their therapist on homework, behavioral issues, drawing and many other selections. The rooms allow for various age groups as well as helping with various behavioral issues. “Currently at this site we have five patients and nine therapists,” Leal said.

“We max out at 30 patients per site, then we will open a new site again.” Leal explains that the sites grow and expand as needed depending where the families are located. Currently, the organization has 181 locations in 32 states. She said that Dr. Granpeesheh never expected for the organization to become so big, but her goal is to help people. “She is the most selfless person you can ever imagine,” Leal said. “I really believe in good fortune to good people, that’s what has occurred with her.” With the continual growth of the organization, therapists and staff do not hesitate to help families and children overcome obstacles. If a child is having trouble at the grocery store, doing their home and bathing, CARD will do an at home clinic community type of program for them. “A program for this behavioral issue could consist of Tuesdays and Thursdays we will be at your home, Wednesdays

What is a consequence we can do stop them from picking at their skin?” The joy it brings the organization and therapists to see the child bloom in this program is what makes it worth it for Leal. And it will grow year-round in our area, Kaminsky said. “Arugula is pretty easy to grow,” said Jan Thompson, owner of Newcastle Produce in Newcastle and Twin Brooks Farm in Loomis. “If you are picking it for salad, you can have leaves in 30 days and big

enough to bunch in 45 days. I like it best at 30 days.” COLLARD GREENS
Collard greens — part of the cabbage family — are mild and usually served cooked. “They get the size of a dinner plate and have a mild taste similar to cabbage,” Thompson said. KALE
Kale in its numerous varieties is tasty raw or cooked. “You can use it in salad if you get it small — three inches tall or so,” Thompson said. “You have to strip out the center rib because that is tough. Then slice it across the grain in thin strips. You can stir fry it, too. Any greens are good stir fried with onions and garlic. I like it in soups. We do a soup with a Portuguese kale and white beans with sausage, that’s really good.” When growing it in the home gar-

den, kale is best as a fall, winter and spring crop. Once summer heat arrives, it is vulnerable to pests. Natural Trading Company produces a lot of kale. “We grow Dino kale (Lacinato), red Russian, redbor (red curly one), white Russian and four or five more varieties,” Kaminsky said. “There’s a Dino kale that has a ruby red stem to it, which is interesting.” When picked small, kale goes well with sunflower greens, pea shoots and lettuce in a salad — and add some herbs like parsley or even basil for extra flavor, he said MUSTARD GREENS
Mustard greens are peppery — even more peppery than arugula. “The bigger they grow, the more spicy they get,” Thompson said. They are widely used in the south. While the leaves are small, they work as salad greens. But cook them when the leaves get big. “In the south they cook them with ham and onions and garlic,” Thompson said. “They will hold up to long-time cooking. In my experience, they are not nearly as popular as the other (leafy greens), except the small salad ones. You’ll find them in some of our spring mixes.” SWISS CHARD
Swiss chard is another green that works well in salads in its small-leaf form. When it is bigger, it is good steamed. “You don’t have to take out the center rib. It is not tough at all,” Thompson said. “It will cook very similar to celery. I take the stem that’s behind the leaf and cut it up into pieces and cook that for a minute or two before I throw in the rest of the leaves because it takes a little longer for the stem to cook.” Swiss chard is available in several colors, but the taste is the same. While it grows best in cooler weather, chard handles the heat better than kale, is more pest resistant and will do better in the garden after the weather warms. Kaminsky grows it year-round. “Chard and kale are two entirely different plant families and attract totally different pests,” Thompson said. “They can be planted side by side.”
BEET GREENS
If you like chard, then give beet leaves a try. “The tops of beets are just like chard,” Thompson said. “They taste the same. Chard is a beet propagated for the leaves rather than the fruit.” “Beet greens are so sweet and delicious,” Kaminsky said. “The best way to cook them is in coconut oil in hot pan. They cook very fast in the high heat and in two minutes are ready to eat.” MIZUNA
Mizuna, an Asian green, is a type of mustard. It is mainly used in salads, but can be stir fried, too. “All of our Asian greens do well in winter and spring,” Kaminsky said. “Mizuna is a easy to grow from seed and is very fast growing.”
Green Garlic Pesto This great green garlic pesto is delicious as a topping for bread, pizza, pasta, baked potatoes, fish or chicken. INGREDIENTS
About 1 ½ cups of green garlic (white part and tops) About ½ cup of olive oil Salt to taste DIRECTIONS
Puree all the ingredients until smooth in a blender or food processor, adding enough olive oil to create a good spreading consistency. Kohlrabi leaves are similar to cabbage, Brussels sprouts and broccoli leaves. “It’s very similar in texture to a collard leaf and has similar flavor,” Kaminsky said.” If I pick leaves off Brussels sprouts or broccoli, it’s hard to tell from smaller collard.”

wiss chard has to be one of the most beautiful vegetables I have ever seen. Its large, green leaves are ribbed with veins of pink, purple or red that run down to the pearly white or colored stem. Since I rarely eat Swiss chard, and have never cooked with it, I decided to try something completely new and different with a Swiss chard and tomato casserole. Swiss chard is in season right now and will be throughout summer — as will other leafy greens such as kale and arugula — so it will likely be at any farmers’ market in your area. I love going to the farmers’ market that’s just four blocks from where I live and buying vegetables fresh from the ground. But since that market is only once a week, I find myself at Safeway quite often. Wandering the produce section, I spotted the vibrant Swiss chard in the organic section and began perusing for the two bunches that looked just right for my casserole. Sometimes when I’m at the grocery store gathering ingredients for my next recipe, I wonder about where my food is coming from. I began thinking about what it really meant for produce to be “organic” and later learned (from Goolging it, yes) that the definition is

this: Grown without the use of pesticides, synthetic fertilizers, sewage sludge, genetically modified organisms or ionizing radiation. Sewage sludge? OK, well that alone makes me want to grow all my own produce or buy organic everything. Following this discovery, I bought a little tomato plant so that I could grow my very own tomatoes in my backyard. I’m nowhere near being a gardener, so they may end up black and shriveled in the dirt — but I am a very hopeful person, so maybe they’ll be awesome. Since I have never cooked with Swiss chard and don’t make too many casseroles, this recipe was destined to be an adventure. Swiss chard is also sometimes called silver beet, perpetual spinach, beet spinach or seakale beet. Although it is quite firm, the stems of Swiss chard soften quickly in a pot of boiling water. When making the casserole, be careful not to let them soften too much, as the chard, and other ingredients still, have an hour to go in the oven surrounded by bubbling cheese, broth and bread. Speaking of bread, the French bread loaf does not necessarily need to be a day-old, but it will soak up the broth a little better if it is drier. Sometimes small bakeries sell day-old bread or endof-the-day bread for a discounted price. Layering the casserole is the fun part, and kids can help, too. But before the layering starts, don’t forget to butter the dish. I usually just get a bit of butter on a paper towel and run it along the bottom and edges of the dish. A butter spray will work just as well. When that’s done, the first step of the layering is placing the sliced French bread in the bottom of the dish so that it covers, or nearly covers, the dish. that’s fine. Next, add some color with thick slices of tomato. Topping the tomato will the chard mixture with tomatoes and onions. Then comes the shredded cheese. Feel free to use more or less of the gruyere, according to your own taste and preference. After you have repeated the layering steps one more time, and finished with bread on top, slowly pour the hot broth over the casserole. Be sure to douse each top piece of bread or it will burn. Pressing down the casserole will push out any air pockets ensures even baking in the oven. Brushing the top with melted butter will make the final result a bit crispier on top. Then just cover it with a piece of foil and leave it to bake for an hour. This recipe is a good one for if you’re having a few people over or just looking for something new. If made with vegetable broth, it is vegetarian, and can be made vegan by omitting the butter. Savor each warm, melty bite, and pair with a dry, white wine — I used the wine that was in the recipe. Enjoy a meal that tastes as good as Swiss chard looks with this delicious, savory casserole.

Ingredients 2 bunches Swiss chard, stemmed ¼ cup olive oil 1 large onion, thinly sliced ½ cup mushrooms, chopped 1 tablespoon chopped thyme ½ cup dry white wine Pepper 2 cups chicken, beef or vegetable broth One loaf of day-old French bread, sliced ½-inch thick 2 beefsteak tomatoes, sliced ½-inch thick 6 ounces Gruyère cheese, shredded (3 cups) 3 tablespoons butter, melted (optional)

SWISS CHARD AND TOMATO CASSEROLE
Directions In a large pot of boiling water, cook the Swiss chard for two minutes; drain. When the leaves are cool enough to handle, squeeze out the excess water. Coarsely chop the chard. 2. In the same pot, heat the olive oil. Add the onions, mushrooms and thyme and cook over low heat, stirring occasionally, until softened; about 12 minutes. Add the chard and the wine and simmer over medium-high heat until the wine is reduced to 1/4 cup; about 5 minutes. Season with pepper. 3. Preheat the oven to 400°. 4. In a small saucepan, bring the stock to a simmer. Butter the casserole dish. Line the bottom of the dish with one-third of the bread, overlapping the slices slightly and cutting the bread to fit. Top with half of the tomato slices and season with salt and pepper. Spread half of the chard on top, and then sprinkle with half of the cheese. Repeat the layering once and finish with the remaining bread. Pour the hot stock over the casserole and press down with a spatula. Brush the top with the melted butter (optional). 5. Cover with foil and bake for one hour. Uncover the dish and bake for about 10 minutes longer until the top is browned and crisp. Let cool before serving. 1.

ver many years and in many countries, researchers have been exploring the health benefits of drinking wine. Some are intriguing, some are humorous and some are hard to believe. Red wine fights obesity? One type of wine grape is known to contain weight loss helping ellagic acid. Red muscadine (aka “scuppernong”) is a wine grape native to southeastern U.S. and grows primarily in Georgia. There are only about 5,000 acres of Muscadine grapes in the world. In the battle against fighting off free radicals that cause terrible health problems such as cancer, wine could be your answer. Wine is full of antioxidants that attack free radicals when they come lurking around. Drinking a glass of wine daily can give your immune system a boost. Moderate alcohol consumption can ward off infections and keep your immune system in check. Red wine has high levels of silicon, which is great for your bone mineral density. It increases the density and reduces the chance of osteoporosis.

Moderate consumption of wine — and alcohol in general — can prevent blood clotting. Wine acts as a natural blood thinner, breaking up any blood clots that could lead to a stroke. The tannins found in red wine contain procyanidins — phenols which neutralize free radicals — that have shown to be effective in preventing cardiovascular disease. Those procyanidins in red wine that promote a healthy heart also promote lower cholesterol. The risk of colon cancer, prostate cancer, and breast cancer can be reduced by drinking a glass of wine. The antioxidants combat nasty free radicals that allow cancer to thrive. Red wine especially is beneficial, as the resveratrol that fights against heart disease also fights against cancerous cells. It may sound crazy, but drinking a glass of wine is like food for the brain. Drinking a single glass has shown to improve brain function. The chemicals in red wine prevent the brain’s neurons from dying off. When you hear about healthy living and longevity, time and time again the Mediterranean diet comes up. At the core of that diet, beyond olive oil and vegetables, is wine. There is something magical inside the daily glass of wine that increases life span. I think I will live to 150 and remember drink in moderation. ✶

Distracted driving is dangerous HEA LTH VIEW |

e’ve all seen this happen: We’re driving down the road and the driver in the car next to us is on the phone, oblivious to traffic and pedestrians. I have witnessed near misses and on one occasion saw a driver, on the phone, rear end another car while driving past me. Distracted driving is dangerous and potentially deadly. It’s extremely important that we do a better job educating each other about the dangers of this risky behavior. Nearly 3,500 people lost their lives and about 400,000 others were injured due to distracted driving, according to 2016 statistics, the most current figures available, from National Highway Safety Traffic Administration (NHSTA). It’s not just a problem with young drivers, though cell phone use is highest among 16-24-year-olds. And it’s not just cell phones that are doing the distracting. Distracted driving is any activity that draws attention away from the task of safe driving. It could be a motorist changing the radio station, conversing with their children in the back seat, or applying makeup. It might be a tourist entering an address in the GPS, or a salesperson digging through paperwork on the way to an appointment, or a student eating a sandwich between school and work. Let’s look at our own habits for a moment. Do we really need to respond right away to an incoming text? Do we need to type that email while the car is moving? Probably not. I know that some people, including myself, like to respond with immediacy to family, friends and coworkers, and we often like it when the recipient gets back to us promptly.
Behind the wheel of a vehicle is not the best place to fidget with our phone or anything else. Typing and driving can be incredibly dangerous because not only are motorists removing their hands from the steering wheel, they’re also taking their eyes off the road. Compose or read a quick text on the freeway and your vehicle will have traveled about the length of a football field. Some people can skillfully communicate by phone or text by using a handsfree Bluetooth device. This, too, can be a distraction. There’s general stigma against driving drunk but when it comes to distracted driving there doesn’t seem to be the same type of shame. Yet they’re both dangerous activities, and many states are acting to curb distracted driving. Nearly every state has passed laws against texting while driving, according to the National Conference of State Legislatures. Some states, including California, ban phone use while driving unless the call can be made hands-free. In recent years we’ve also seen companies develop new technologies to discourage people from using their phones while driving, including devices that block users from sending messages and posting on social media, and apps that alert people trying to reach you that at that moment you happen to be in a moving car. Yet there’s only so much that technology or new laws can accomplish. In the end, it’s up to each driver whether he or she will allow distractions behind the wheel. You’re reading this message — not while driving, please! — because April is Distracted Driving Awareness Month. I’m confident you will have heard this message numerous times, from many sources. I ask that you take these words to heart. Your family and friends need for you to be safe.
