A

re you ready for a spring full of relaxing Wednesday evenings?

If you are ready to enjoy live music, wine, friends and family, Wine Down Wednesday is an event to check out this spring.

A variety of wineries in the region and live music will be featured 5:30 to 7:30 p.m. from April 18 to May 23 every Wednesday. This is the sixth year putting on this event and each year they have grown while figuring out how to update it.

“This year we are looking to offering more pairing, maybe olive oil or chocolates,” Jon McElroy, recreation coordinator for the City of Roseville said.

The event was created to be geared more to adults, however, families are more than welcome to come and enjoy the live music, food vendors and community ambience.

Wineries have not yet been announced for this year as of press time. However, wines that are listed to be included are

smoky and spiced syrahs, petite sirah, cabernet franc and flavor-intense zinfandel, as well as dessert wine offerings.

“For those interested in tasting wine, they may pay a $10 fee that will get them five one-ounce tastes of wine,” McElroy said. “If they like what they taste, they can purchase a ‘Nickel’ that is $5 that will give them a five-ounce taste of wine.”

The City of Roseville offers a season pass for $50 that allows entrance to all six Wednesday events and a souvenir wine glass. They are also offering a cabana rental that is $25 per event. A cabana is perfect for those who don’t want to arrive early to reserve a place to sit.

“We have a couple of cabanas to rent that seat six people, includes water and snacks — like crackers and grapes, things that pair well with wine,” McElroy said.

All proceeds for the event benefit recreation programs for at-risk youth.

oseville’s annual Earth Day Celebration, formerly called Celebrate the Earth Festival, will be a day devoted to the wellbeing and care of our planet.

“We have inherited this event from the City of Roseville and wish to continue their 10 year history,” said Jim Crosthwaite, executive director of the Arts Council of Placer County.

Crosthwaite said the event calls attention to the need to protect our resources and continually look at ways to sustain our planet. This year, the Arts Council is including artistic and cultural activities to the event in an effort to remind attendees that these important actions are also part of a balanced life.

The focus of the event will be on the arts, libraries, community organizations, culture and the environment. “We have added many more hands-on activities, arts and library booths and cultural entertainment like the Maidu Independent Theater and City of Trees Brass Band,” said Crosthwaite.

In addition, there will be an artist

sculpture contest featuring more than 100 local artists who have created “My Favorite Book” sculptures using recycled materials. All sculptures will be on display at the event and will be featured in various Placer County libraries after the Earth Day Celebration.

The event is free and family-friendly.

Attendees are invited to come and learn about how to help the planet and its inhabitants thrive.

There are many ways to demonstrate our concern for the future of the earth; planting trees, making meals with locally grown vegetables, cleaning up trash, making bird feeders and conserving power and water are just a few ideas of how to care for the planet. I also try to buy local produce to reduce my carbon footprint. It usually tastes more ripe and fresher anyways.

Most bathrooms don’t have paper towels to dry your hands, so I learned to let them airdry. When I got back to America I noticed how much trash I create every time I wash my hands. Now, I just flick the excess water off into the sink, and pat my hands dry on my pants. It saves paper and reduces waste.

fter one bite of my most recent creation, calzones immediately became my husband’s newest obsession. And since he doesn’t particularly enjoy mushrooms or spinach, I felt the accomplishment was a veritable success.

These chorizo mushroom calzones are wrapped in a flaky, butter crust recipe from Go Bold with Butter. Usually pizza dough and pie crusts are my least favorite part of any recipe and I do my best to avoid them whenever possible. My doughs tend to come out flat and chewy, while my pie crusts just crumble through my fingers before I can even get them into the dish. With this dough recipe, however, I didn’t experience any of my usual frustrations.

After letting my KitchenAid do the kneading work for eight minutes or so, I covered the bowl with my dough in it with plastic wrap and considered where to leave it for the proofing. I reminded myself of Martha, a contestant on “The Great British Baking Show;” unsure but with strong instincts and hopeful

disposition — and I hoped my own instincts would prove correct as well.

I considered the warmest, darkest room in my one-bedroom apartment and decided on (as strange as it may sound) the bathroom. I set the bowl on a shelf and started the kitchen timer for one hour.

While my dough was (hopefully) rising, I pulled out a pot and began cooking the chorizo and mushrooms. Although I am definitely not a vegetarian, when cooking with raw meat I sometimes think I ought to be. For a vegetarian option, you can substitute the chorizo for tofu chorizo or tofu mixed with marinara sauce. Once the chorizo was in the pot, with relief I turned my attention to slicing the mushrooms into bite-sized pieces. After adding the garlic, oregano, sage and rosemary, the aroma that filled the air was making me hungry. But at this point, there was still a ways to go before calzones would be ready for consumption.

perfect. It had more than doubled its original size and the consistency was superb. The next few steps are fun and simple: For rolling the dough, I used a lightly floured pint glass instead of a rolling pin (since I don’t own a rolling pin). As with every recipe I make or follow, substitutions and alterations are absolutely acceptable.

After you’ve filled the dough with the chorizo-mushroom mixture, press the edges together with a fork. If the dough doesn’t seem to be sticking together when you press the edges down, try wetting the dough with a little water.

One of the great things about this recipe is it freezes well. If you don’t want to eat eight calzones for one meal, they don’t have to go to waste. The only thing that changes if they are frozen is an additional 10 minutes in the oven. These savory pastries are delicious with dipping sauces like marinara or ranch dressing. If you become obsessed with these tasty calzones after trying my recipe, experiment with your own fillings to create any type pastry pocket: barbecue chicken and corn; shepherd’s pie with ground beef, mashed potatoes and peas; grilled veggies and pesto; or whatever your palette desires. Mushroom chorizo calzone INGREDIENTS: CALZONE

3 links chorizo, sliced 8 oz crimini mushrooms, washed and sliced 1 large bunch spinach, chopped 2 cloves garlic, minced ½ cup black olives 1 teaspoon each dried oregano, rosemary and sage 1 cups mozzarella, shredded 1 cup swiss cheese, shredded 1 cup parmesan, shredded 1 egg + 1 tsp water for egg wash Marinara sauce and ranch dressing for dipping

DOUGH

3½ cups all-purpose flour 2¼ teaspoon (1 envelope) active-dry yeast 1 cup water ⅓ cup (5 tablespoons plus 1 teaspoon) unsalted butter 1 tablespoon honey

DIRECTIONS: 1. For the calzone dough, I used a recipe for pizza dough by Go Bold with Butter: These step will take approximately 1 hour and 30 minutes.

2. In bowl of stand mixer fitted with dough hook combine 2 cups of flour with yeast and salt. In small saucepan set over low heat, warm water, butter and honey until butter is melted. Remove from heat and let sit for about 5 minutes, or until 120-130°F. 3. Add liquids to mixer and mix until combined. With mixer on low speed, add remaining flour ¼ cup at a time, waiting until it is incorporated before adding more. Add just enough flour so that the dough clears bowl but is still slightly sticky to touch. You may not need all 4 cups of flour.

4. Continue to knead dough with mixer on medium low speed until dough is smooth and elastic, about 5-8 minutes. Place dough in buttered bowl, cover with plastic wrap and let rise in warm spot until doubled, about 1 hour.

5. During this time, preheat oven to 350 F. Cook chorizo and mushrooms in a large pot over medium-high, stirring occasionally, about 10 minutes. Stir in garlic, spinach, olives and herbs; season with salt. Cook 5-10 more minutes. Remove from heat.

6. Line 2 baking sheets with parchment.

7. Wait until dough is ready and then use your fist to gently punch it down. Place on lightly floured surface and knead a few times. Return to bowl and cover with plastic wrap. Let sit for 10 more minutes.

8. Cut dough into 8 equal portions and roll into balls. Roll out dough individually on a lightly floured surface to a 7-8” diameter circle. Transfer ½ cup filling and ½ cup cheese to center of circle. Fold dough in half over filling to create a half moon.

9. Using a fork, press edges to seal completely. Transfer to prepared sheet. Repeat with remaining dough, filling and cheese.

10. Whisk egg and water in a small bowl. Brush tops of calzones with egg wash using a brush or your finger.* 11. Bake about 30 minutes or until tops are golden brown. *If freezing to bake later, freeze on baking sheets 1 hour, then transfer to foil and freeze up to 3 months. Bake 40 minutes at 350 F on foil wrapping.

o what is a “hacker lab”? Do you imagine a dark, seedy looking place with pasty looking web developers staring at monitors? When someone says hacker, do you reach for your purse or wallet, hoping that those “hackers” haven’t found a way to use RFID technology to break encryption codes and access your bank account? Are you imagining a place where you need to use hightech computers, and have a mastery of command line coding on UNIX systems?

The Merriam-Webster Dictionary has several definitions for “hacker.” One the definitions: “A person who illegally gains access to and sometimes tampers with information in a computer system” matches some of the shady character traits mentioned above that people often fear.

Other definitions focus more on range of experience and a desire to learn and solve problems. That’s more in line with what the Hacker Lab in Rocklin is all about.

The Hacker Lab is a place where innovators of any age and experience level can come to learn, create, design and network with other innovators.

Membership to the lab is similar to membership with a gym, instead of

HOW TO FIND CLASSES AT THE HACKER LAB

The easiest way to find out what classes are available and when is to visit rocklin. hackerlab.org, then click Events. At first you’ll see a listing of the upcoming classes available along with the cost of the class.

Members get a discount on classes, but the public can take classes without becoming a member first. Classes cover a wide gamut of skills and topics, including sewing, woodworking, jewelry, entrepreneurship, electronics, art, CAD, CNC, programming, photography and more.

Ian Milford is one of the Hacker Lab instructors who teaches classes on mold making and casting.

“It’s a great place to learn,” Milford said as he was finishing some experiments with vacuum forming, or sometimes called thermoforming. With vacuum forming, innovators can create a hard plastic mold of any solid object, whether it’s made of plastic, metal or wood. To create the mold, the object is placed on a surface with tiny holes that connect to a vacuum. Then a heated sheet of plastic is placed over the object, while the air underneath in sucked out with the vacuum, creating a tight mold of the object. After the plastic has cooled, the object can be removed revealing a nearperfect imprint of the original object.

HOW TO FIND WHAT TOOLS ARE AVAILABLE

Need more specifics on what tools are available at the Hacker Lab? Go to rocklin.hackerlab.org and select Resources > Browse Resources. You will then see a listing of all the resources such as 2D and 3D printers, laser cutters, sewing machines, CNC tools, meeting rooms and more available. Most of the listings have a photo of the resource, plus schematics with links to the resource creator, plus the ability to book a particular resource for a date and time.

If you’re running a start-up and need more room than the tiny corner of your bedroom, the Hacker Lab rents out private spaces. Desks start at $200, and offices start at $600 a month, both based on availability. Some of the amenities for renting private spaces include a gigabit internet connection, use of private conference rooms, private lockers for storage and use of their laser printer and copier. Also don’t forget the free coffee and kitchen use for those late-night projects.

ooking for a pet? How about a Vietnamese giant centipede? If that’s too venomous, maybe a deep red eclectus parrot would be more fitting.

For all things that slither and flap, Roseville’s Serpentarium and the Bird Shop are literally crawling with options.

Joaquin Lopez, supervisor of the Serpentarium in Roseville, could probably answer any question about amphibians, invertebrates, lizards, snakes or turtles. The entire staff of this privately owned reptile store prides itself on its expertise in this field.

All of creatures at the Serpentarium come from local breeders or animals otherwise bred in captivity. “The Sacramento community has a ton of local breeders,” said Lopez. He added that Northern California has one of the largest populations of breeders. Many larger pet and reptile stores acquire animals from farm breeding, said Lopez, but you won’t find any of those here. The Serpentarium also never uses wild caught animals. Although it is not illegal to catch and sell wild animals, it can be unethical.

In the past, some species have gotten popular and then because of the high demand, are now endangered. This also effects the price, causing it to increase for the remaining few creatures. continued on page 22

If a lizard doesn’t have legs, isn’t it just a snake? No. It’s actually an entirely different creature called a legless lizard.

The European legless lizard, or glass lizard, at the Serpentarium is unlike a snake because it has eyelids, external earholes and a notched rather than forked tongue. These lizards, native to southern Europe and Central Asia, were popular in the late 80s and 90s, according to Lopez, but now they are rare. Legless lizards are tan colored and look like giant earthworms with a distinctive fold of skin down each side of their smooth bodies. They are insectivores, surviving on a diet of crickets, meal worms and snails.

WHY SO MANY LEGS?

The Vietnamese giant centipede may not be everyone’s ideal pet, but for some, there’s no such thing as too many legs.

These creepy-crawlies can grow up to four inches and eat just about everything – even mice. Although its name may suggest its origin, the centipede’s specific native range is unclear. The species is, however, found on nearly all land areas around and in the Indian Ocean. Its body is usually red or reddish brown with yellow legs. It is venomous, but not enough to kill a human. According to Lopez, a bite from a Vietnamese giant centipede would feel like a bee sting.

Young centipedes take about four years to attain full size, and may live for up to 10 years.

The Serpentarium sells many unusual

creatures, but also has more common animals like scorpions, tarantellas, cockroaches and beetles. The store offers professional reptile services such as health inspections, gender determination, lizard nail clipping, turtle beak trimming, animal boarding and other services. In addition to its Roseville location, the Serpentarium also has stores in Stockton, Lodi, Modesto and Elk Grove.

THE BIRD SHOP

Tiffany Latino started working at the store when she was 16.

Latino’s grandfather, William T. Whitten, and mother, Sharon Garsee, opened The Bird Shop in 1979 in its original location in Foothill Farms – it moved to Roseville in December of last year. Whitten’s interest in breeding and showing English budgerigars, or budgies, was the genesis of the store that grew into a colorful and exotic family business. “When we started this, everybody thought we were crazy,” said

when given a treat. Latino said parrots often learn to associate words and phases with other sounds or time of day, which is why many say “hello” when the phone rings or “good morning” at the start of a day. Macaws are native to the southern part of North America, Central America and South America. The majority of macaws are now endangered in the wild and some species are extinct. Trouble is not for sale, but he is always available to greet customers and maybe even say, “hello.”

THE EXUBERANT ECLECTUS

Latino, owner of The Bird Shop. She said that when the store opened in the 1980s there were a lot of bird stores, but now The Bird Shop, run by herself and her daughter Brianna, is only one of two in the city.

Latino said this time of year is breeding season, but in a few weeks there will be baby birds fluttering around the store, adding to the rife of squawks and chirps. All the birds sold at the Bird Shop are locally raised, some from breeders and some from the store’s

own birds, and hand-fed. Most of the parrots take three months to raise which includes feedings every three hours. “It’s a lot of work,” laughed Latino. There is a nursery in the back of the store and when it is completed customers will be able come watch the baby birds being fed and cared for.

A BIRD CALLED TROUBLE

Trouble, a 37-year-old ruby macaw, is the store’s mascot. His feathers are predominately red with a rainbow-like pattern on the wings and he has long tail feathers. Latino’s family bought Trouble as a baby to be the store’s pet.

Although he can be shy when the store is bustling with people, his vocabulary includes, “Bird Shop,” “Trouble, Trouble, Trouble,” “bad bird,” and “mmmmmm”

The eclectus parrot, native to Australia, is one of the most expensive birds in the store, ranging around $1,700, due to its rarity in the United States. Latino said with most parrots it is impossible to tell whether they are male of female, but with the eclectus, the males are emerald green and females are a deep red, making them easily distinguishable. The females have vibrant blue eyeliner and stark, black beaks, while the males have orange beaks and feathers of blue, orange and red under its green wings. Until the 1980s, it was unusual to keep an eclectus as a pet. But because of the birds’ calm nature and beautiful coloring, they have become one of the more popular birds to be kept in captivity.

These playful parrots have a diet of fruit, leafy greens and a variety of seeds.

Latino said one of the more appealing features about owning a pet bird is that they live much longer than most other pets, some living almost as long as humans.

“Birds are a long-term commitment,” she said. And with three parrots and one cockatiel of her own in addition to the parrots and other birds at the store, Latino is certainly committed. The Bird Shop also provides boarding when bird owners go on vacation and grooming by appointment.

She prefers to slightly undertreat with fillers; this gives the most natural results. More recently, she has been coupling filler treatments with platelet rich plasma (PRP) injections, which flood the skin with growth factors to jumpstart collagen production, improve skin tone, and ultimately prolong filler results.

Her verdict: “Filler treatments are so much easier on the patient nowadays. Techniques and products have improved so that injections are less painful and results are more subtle and sophisticated.”

Kybella® Kybella is a newer injectable that is FDA approved for chin fat reduction. The active ingredient dissolves fat cell walls, allowing the body to eliminate the treated fat. However, what Dr. Clark noticed most with her own treatment was a skin tightening effect — she describes herself as “one of the lucky ones who didn’t inherit a double chin.” She reassures us that her patients who’ve gotten Kybella to reduce a double chin have gotten the results they were looking for.

Her verdict: “To be truthful, Kybella was more painful than the average injectable, but I would definitely do it again for skin tightening.”

NOW TO THE REALLY GOOD STUFF…HER PLASTIC SURGERIES

Breast augmentation (pre-kids) Dr. Clark first got breast augmentation as a plastic surgery resident. A natural A/B cup, she jumped up to a C cup with 300cc saline implants. She had her implants placed through an incision made underneath the lower breast crease (inframammary fold), a technique she uses for her own breast augmentation patients. “The inframammary incision allows me optimal access for precise implant placement, no matter what size or shape of breast implant I’m working with. Plus, the resulting scars are easy to hide beneath a bra or by the breast itself,” Dr. Clark explains.

As for recovery, she remembers taking only two days off work, and “just a week later, I was flashing friends,” she tells us with a smile.

Her verdict: “I rocked those saline implants for several years until I had kids. Going with a more moderate size increase definitely suited me best. I liked the greater flexibility in clothing choices vs. what I’d have with larger implants and didn’t even tell my mom at first.”

Breast lift with implants (post-kids) When Dr. Clark became pregnant with her first child, she

opted to have her saline implants deflated. “I didn’t want the extra volume of the implants on top of my enlarged pregnancy breasts. I had no problems breastfeeding [which she notes as another advantage of the inframammary incision], and after kid #2 was born, I was ready to give my ‘girls’ some TLC.” She recalls that she didn’t want a dramatic size increase with this second breast surgery, but she did have quite a bit of sagging to address. To meet these goals, Dr. Clark got a breast lift with smaller (175 cc) silicone implants to get the best possible shape.

Her verdict: “This time, I took five days off work and eased back into things pretty smoothly. It’s great having a little less up top than I did in my 20s — my chest is lighter and it feels good to go braless on occasion.”

Body contouring Yes, Dr. Clark has had liposuction! “I had it done in 2007 on my waist, along with a ledgectomy [a procedure to remove excess skin on her belly after undergoing a C-section].”

More recently, Dr. Clark has incorporated CoolSculpting® non-surgical fat reduction into her treatment plan to, as she says, “ward off the middle age spread.” She has treated her flanks, inner thighs, and abs. “I’m pleased with what I see — and the boost in fat reduction really motivates me to stick with my workout routine.”

The final two body procedures Dr. Clark has had done are non-surgical. “I get about three laser vaginal rejuvenation treatments per year to prevent loosening and keep things youthful down there. It really helps with moisture too. My mantra is ‘prevention is the best cure’—keeping the collagen levels high to maintain youthfulness in all areas.”

She has also received two miraDry® sweat reduction treatments. Dr. Clark says she achieved about 60% sweat reduction after her first session, and she didn’t need deodorant anymore, noting, “I’m so glad to be rid of the scary chemicals in that stuff.”

Her verdict: “Body contouring has made a world of difference in my comfort and self-confidence. Clothes look and fit me better than they likely would have without these procedures, and everything just feels better.”

Rhinoplasty Dr. Clark has had only one facial plastic surgery: a nose job when she finished her residency. She stresses that she “didn’t have a ‘bad’ nose, but I hated my profile.” She had a small bump straightened and the nasal tip refined to achieve a more feminine nose.

Her verdict: “Love it! It’s amazing how tiny tweaks to a feature can make a huge difference in how we look. I had a great rhinoplasty surgeon, and my recovery was as easy as I could have hoped for.” While Dr. Clark doesn’t offer this procedure in her own practice, she refers patients to local specialists that she would trust with her own nose.
