ttore’s Bakery and Café first opened in Sacramento in 1985 and is known by many for its decadent, artistic cakes and European-style sweets. Now the bakery has opened a second location right around the corner on North Sunrise Avenue in Roseville. After years of planning and preparation, Ettore’s opened in Roseville in October of last year and had a ribboncutting ceremony Jan. 18 with the Roseville Chamber of Commerce. What make Ettore’s an “upper crust” bakery, according to Ettore’s Marketing Manager Jack Lyons, is that everything is made from scratch on a daily basis. “We are also one of the only bakeries that uses 100 percent real butter in every item that we make,” Lyons said. “While this may seem like an insignificant detail, it increases the taste and overall quality of everything we produce.” While Lyons is approaching his fourth year working at Ettore’s, he said some employees have been with the bakery and café for up to 25 years.

THE CAKES
A longtime customer favorite is the fruit basket cake, Lyons said. The cake is made of light layers of vanilla sponge cake with alternating layers of fresh strawberries and pineapple, frosted with both white chocolate mousse and whipped cream. The Champagne cake is a soaked sponge cake filled with fresh strawberries and iced with white chocolate mousse. The chocolate mousse cake is every chocolate-lover’s dream: A three-layer
chocolate sponge cake filled with a Swiss chocolate mousse with chocolate sprinkles lining the edges and topped with generous portions of shaved chocolate. A European favorite, the princess torte, has a vanilla sponge cake base and is covered with a thin layer of raspberry preserves and pastry cream. Piled on top is a mound of fluffy whipped cream giving it a rounded shape. Smooth, almond marzipan drapes the entire torte, which is hand-decorated with a sugar flower and chocolate. Customers can choose from three colors:

pink, light green or almond. All cakes costs $28.75 to $100. In addition to the multitude of cakes offered at this charming bakery are a variety of cookies, pies, mini desserts and breakfast pastries. Many of the cookies have unusual names like “Swissies” or “cheese pockets.” The Rugulaches are bite-sized crescent-shaped treats, rolled from a rich cream cheese dough and filled with cinnamon, sugar, poppy seeds and nuts. Other treats will make choosing just one the most difficult decision of your day. Are you in the mood for a tart or a cake cup? Or perhaps you want to try a mini cannoli or petit four? “With so many options, there’s something for everyone at Ettore’s,” Lyons said. THE CAFÉ
“Ettore’s is a name that is synonymous for bakery goods and sweets,” Lyons said. “But we are also home to an awardwinning cafe.”

Ettore’s Niman Ranch flame grilled burger was voted “the Best in Burger” in the Sacramento Burger Battle in 2013. At the café, guests can watch as their madeto-order pizza is cooked in a large brick oven. The café offers breakfast, brunch, lunch and dinner, all with a European twist. Beer and wine is also available for purchase alongside a handcrafted sandwich of freshly baked focaccia bread or saffron risotto with sundried tomatoes and fresh herbs. In addition to its two locations, the delicious creations from Ettore’s kitchen can be found at many Nugget Markets and is available for express catering or weddings. Bringing this European bakery and café to Roseville was a sweet gift to the city and Placer County residents. “We cannot wait to make many memories in our new home,” Lyons said.
The start of Ettore’s
E
ttore Ravazzolo was born in a small town near Zurich, Switzerland. His Italian grandfather “Nono,” who owned a restaurant, was Ettore’s inspiration. By the time he was 20 years old, Ettore was a professional Swiss pastry chef. When he had finished his Swiss military training, Ettore worked as a chef cooking for soldiers in the Alps. He immigrated to America a few years later in 1977. When he arrived, he had $350 in his pocket – half of which he loaned to a friend – and could not speak English. But he was determined and hard-working, and soon Ettore began working at a pastry chef in hotels and restaurants across the United States. Ettore settled in Sacramento at Viva Croissant on Fair Oaks Boulevard and on March 1, 1985, Ettore bought the bakery and changed the name to what it is known as today: Ettore’s European Bakery and Café.

eidi Polewaczyk and Michael Larsen have been selected to represent Roseville City School District as Teachers of the Year for the 2018-2019 school year and will go on to compete at the county level amongst their peers from 16 surrounding districts. Polewaczyk is a special day class preschool teacher at Kaseberg Elementary School. Her colleagues describe her as a gifted teacher who works very hard, is always humble and always contributing in exceptional ways. Polewaczyk is widely recognized within the preschool program for her dedication and innovation in serving students with social pragmatic skill delays. Larsen teaches ballroom dance at Eich Middle School. Larsen is known as being a once-in-a-lifetime teacher who works miracles with middle school students, as it’s not common for today’s teenagers to have an appreciation or ability to waltz or do the cha-cha. His program is inclusive of all students, building confidence as the students transform into performers. His students perform throughout Roseville and will be representing the school and district at a Kings game. The Roseville City School District serves more than 11,000 preschool through eighth grade students in 19 unique schools. Creating opportunities
RIDE Industries was started in 1966, by a small group of devoted parents. They met in the basement of a church in Auburn with the goal to create an organization that would find meaningful work for their adult children with disabilities. Now PRIDE is a major nonprofit of employers of people with disabilities in 14 states, employing more than 3,400 people with disabilities. It aims to be the leading employer of people with disabilities and meet the needs of individuals overcoming barriers to employment. Tony Lopez is the vice president of operations, manufacturing and logistic services for PRIDE. Lopez works out of the Roseville headquarters and has been with PRIDE for 20 years. “You’re not just a number,” he said. “You’re looked at as a contributor.” Lopez recalled an experience when a new employee, the daughter of Wheatland Elementary School’s principal, began working at PRIDE. “She was very introverted; no eye contact,” said Lopez, adding that her parents were unsure what to expect. But within six months, the transformation in the young lady’s attitude and behavior was visibly different. Lopez noticed she was outgoing, appeared to be happier and even told him she was getting her own apartment with a coworker at PRIDE. “That’s kind of the transformation you see almost on a daily basis,” said Lopez. “You take someone society looks at as a tax

Lacey said although he’s been working in this industry his entire career, this particular company is unique. “It’s two times as challenging, and two times as rewarding,” he said. “The mission of this work is intoxicating.” PRIDE’s work in the Lincoln community is just getting started. By summer of 2019, the company plans to consolidate its operations and move to Lincoln and expand its efforts within the town. While its Lincoln location currently employs between 50 and 60 people, by next year, it hopes to reach upwards of 200 employees. According to Lopez, when that happens, PRIDE will become the fourth largest employer in Lincoln. Lopez said the Lincoln community has responded to PRIDE with open arms. The company has been partnering with the

He said he enjoys the work and the variety of tasks he is responsible for. rowing up, Roz Ridenoure did not know how to read. She graduated high school knowing just enough to get by. It wasn’t until Ridenoure’s daughter walked around their house making the sounds from her phonics flash cards, that Ridgenoure began to learn to read. “I learned phonics from my kindergartener,” Ridenoure revealed. Now Ridenoure, or Miss Roz as she is known to the children, leads story time at the downtown library from 10:30 to 11 a.m. on Tuesday mornings. She has been the volunteer story teller for almost three years. “I love the kids and to play with them,” Ridenoure said. “The lady was resigning and I thought I can do that. I love seeing them grow and the excitement they bring to reading.” Ridenoure begins each story time with a phonics lesson. According to Ridenoure, phonics helps parents teach their children to read. Puppets and songs also accompany her story time. Ridenoure has previous experience as a volunteer storyteller in another city, but took a training through the library to earn this position. She also has plenty of experience having taught phonics in private schools for 15 years and worked with a children’s ministry for over 30 years. “It’s a passion for me because people struggle and you don’t know it. I know how much that hinders you in life,” she said. Two children’s stories written by Ridenoure can be checked out from all of Roseville’s library locations; “Just a Little Donkey” and “Just a Plain Poor Simple Shepherd.” A coloring book will soon be available to accompany the second book and children can already color along to the first. A couple of Ridenoure’s favorite children’s authors are Nicola Smee and Dr. Seuss. She enjoys simple, plain books. The ones that she can teach a lesson along with the storyline. “It’s a monumental thing to learn to read. Besides that I have fun,” she said.

A mother who lives an hour away from a pediatric specialist at Roseville Medical Center no longer has to bundle up her kids and drive through the rain and traffic for her daughter’s appointment. She merely launches the My Doctor Online app on her smartphone and chats with the physician over a secure video connection. This couldn’t be more convenient for some families. Lately we’ve seen our younger patients turn to video visits as a preferred method of virtual communication with their dermatologists. Some find it’s not always necessary to book an in-person appointment to show the doctor how a new acne medication is working. Patients who have been discharged from the hospital after surgery are using video appointments to check-in with their doctor who can determine if their wound is healing properly. Video visits are becoming increasingly popular as more people rely on smartphones and tablets for so many aspects of their lives. STROKE EXPRESS
When patients arrive in our emergency rooms with stroke symptoms, the ER doctors and staff must move quickly and work collaboratively. A neurologist with specialty training in stroke care — who is at another location — rapidly joins the team with high resolution video. The neurologist can remotely control a highresolution camera to show a close-up view of the patient, and even interact with him or her. Being part of the care team in those first few minutes is critical because the neurologist can start placing orders for treatment and medication, working virtually alongside the ER physician. This extra set of eyes from the telestroke cart,
which includes the camera and screen next to the gurney or hospital bed, provides the most expert and expeditious care — and that’s exactly what stroke patient’s need. With the Stroke EXPRESS program (EXpediting the PRocess of Evaluating and Stopping Stroke), all Kaiser Permanente emergency departments in Northern California are equipped with telestroke carts, which include a video camera and access to scans and test results, enabling the stroke specialist to conduct a patient’s neurologic physical exam even when they are many miles away. MY KP MEDS
If you’ve ever missed — or worried about missing — a dose of your medicines, the My KP Meds app was developed to help you. Y
ou’ve heard of avocado toast, but what about artichoke toast? This may be your new guilty pleasure — regardless of whether or not you fall in a certain millennial age bracket. With the persistent chill of winter still lingering in the air, a warm slice of toasted bread covered with a savory, melted cheese and artichoke topping makes the dreary clouds of March seem to drift away. When I was gathering ingredients for this recipe, I imagined using a sourdough loaf for the bread. But as I was driving to a grocery store, I took a different route and happened upon a delightfully picturesque corner bakery with a neon sign that read “New Roma Bakery.” The bakery is on the corner of E and 18 St. in Sacramento and I highly recommend it. At first I kept driving, but then suddenly made the decision to turn the car around and go inside. I’m glad I did. Once inside, I was greeted with the smell of freshly baked bread and sweet pastries through a haze of flour. As with most bakeries, there were so many options and it took me a good 10 minutes to finally settle on a small French loaf for the base of my artichoke toast. For the mini toasts, I selected a baguette dusted in flour. Artichokes are one of those less-popular and a bit esoteric vegetables that are not commonly found on restaurant menus. But now artichoke hearts are beginning to show up more as toppings on pizza or for dips. Growing up, my mom would steam whole artichokes, and then our family would eat them by tearing off the leaves and dipping them in mayonnaise. When I think about that now, it’s not such a pleasant memory. I think that is the reason why for many years, I thought I didn’t like the taste of artichokes with their spiky leaves and soggy centers. And if you’re thinking you don’t like artichokes, either, because of how you were forced to eat them as a child, I would recommend giving them another try. Artichoke toast or mini toast is a delicious way to ease into eating your veggies — smothered in cheese usually is the best way to eat anything, right? And because of the cheese and Greek

yogurt, this is a protein-packed snack, too. Artichoke toast can be served as an appetizer — especially the mini toast — or as a full meal when paired with a tomato or vegetable soup. It could also easily be made into grilled cheese by adding another slice of bread on top and grilling or baking it for about 10-15 minutes, on medium heat. I decided to turn the toast into mini toast when I was trying to decide on an unusual appetizer for a dinner party that I was hosting with an “Italian diner” theme. Originally, I had planned on making bruschetta, but I wanted to try something different and thus the mini toasts were born. I had been calling them artichoke bruschetta, but a baker friend of mine graciously informed me that the word bruschetta actually refers to a particular kind of “mini toast.” It is a starter dish from Italy that is traditionally made with grilled bread rubbed with garlic and topped with tomatoes, olive oil and basil. After learning this, I began to call my creation mini toasts instead, which I thought sounded cuter anyway. The combination of flavors in this toasty recipe is enhanced with a hint of garlic and fresh basil leaves as a garnish. I rarely make the same recipe twice; there are too many variations that I am curious to try. Create your own artichoke toast or mini toast by experimenting with different breads, cheeses and methods of baking. Although the artichoke and cheese mixture does not need to be baked to be eaten, I think you’ll find it is tastier warm and melty.

Artichoke toast and mini toast INGREDIENTS 2 cups cooked artichoke hearts, quartered or 1 14 oz. can artichoke hearts, quartered 2 cloves minced garlic 1 cup plain Greek yogurt 1 cup cream cheese, softened 1 cup grated mozzarella cheese 1 cup grated Parmesan cheese — divided into two ½ cups Fresh basil (optional) Sliced bread — any type, depending of preference. Mix until mostly smooth, allowing for some lumps of artichoke. 3. Arrange sliced bread on baking sheet. Spoon artichoke mixture onto bread. Be sure to completely cover the edges of the bread to prevent burning. Top with remaining Parmesan cheese and basil, if desired. 4. Bake for approximately 10 minutes, or until golden brown and bubbly. Allow to cool and enjoy.

t all started with a (food) truck — a unique and delicious food experience. From driving on the ground to a solid foundation, KoJa Kitchen has seen immense growth in less than 10 years. Alan Tsai and Hiep Lien introduced KoJa Kitchen, a Korean-Japanese blend to the food industry in 2011 with their food truck in San Francisco. By 2014, they opened their first restaurant location in the Bay Area and have continued to expand since. “This is our first location in the Sacramento region,” said Thomas Quach, franchisee of the Rocklin location. “The next one will be in Downtown Sacramento, then in Elk Grove and then moving down to Los Angeles.” Thomas grew up in the Sacramento area and wanted to bring this dining experience to the area, already it has been a different experience than he expected. “We see a lot of families here and they

Currently, the team is looking at delivering to the local neighborhoods as well as the businesses in the surrounding area. They offer takeout — not just walk in, but also through drive thru. “We want people to come in and try our food and this new concept; it really is something different, but delicious,” Quach said. The most popular food items are the KoJa which consists of a choice of protein served between lightly fried garlic rice buns. According to KoJa Kitchen, it’s like a burger, but better. The other popular item are Kamikaze Fries that consist of criss-cut waffle fries, minced Korean barbecue beef, kimchi, red sauce, Japanese mayo and green onions.
