ouples looking for a romantic evening, who don’t want to go out on Valentine’s Day, may want to consider one of the few formal events in Lincoln — ­ the Downtown Lincoln Association’s (DLA) Chocolate Ball.

Lincoln resident Pam Lopez, a Downtown Lincoln Association board member, said the inaugural Chocolate Ball was held in conjunction with the Lincoln Community Foundations Chocolate Lover’s Festival.

“The foundation didn’t do the festival again but folks were asking us when the ball would be,” Lopez said. “That first year, it was at the Heritage Theater and we sold out. We were at capacity with 80 tickets sold.

“The next year we had it at Beermann’s and we realized the event was too big for Beermann’s,” Lopez added. “We looked high and low and couldn’t secure anything downtown. The next biggest location was Orchard Creek Lodge in Lincoln Hills. We had it there last year and we still had room to expand; it’s a great venue and we’re doing it again there.”

Lopez, who presumes the event to sell out, said she expects 150 tickets to be

available for the event.

And, Lopez added, the Chocolate Ball allows the Downtown Lincoln Association to “do great things.”

“It’s the DLA’s largest fundraiser of the year,” Lopez said.

“Funds raised through the Chocolate Ball are used to host community events downtown such as ‘Kick up the Dust,’ our food truck events as well as Halloween and Christmas programs.”

Lopez said all of the downtown programs require permits as well as marketing. The Downtown Lincoln Association also sponsors annual scholarships for Lincoln High School students.

Attendees can expect a three-course, sit-down dinner of chocolate-infused dishes.

“Our chef is working now on the final menu,” Lopez said. “We have a wonderful cocktail hour, from 6 to 7 p.m., with signature chocolate cocktails and a round of chocolate-infused appetizers, both sweet and savory. There are also three options for the entrée, chicken, beef or vegetarian.”

A silent auction will be held during the cocktail hour. A disc jockey from local radio station 101.9 the Wolf will provide music for dancing and there will be several prizes given away, including: • a piece of jewelry donated by Lincoln Gold and Coin • a 60-inch color television

“When you are done, you are full and happy; you’ve had lots of chocolate,” Lopez said. “It’s a pretty good time.”

of chocolate Health benefits come from Cocao seeds

Valentine’s Day is here, and the chocolate is abundant in stores and wrapped in beautiful bows, ready to be gifted and consumed. The conversations can be heard throughout the office and in around town about the pros and cons of chocolate. Leaving people to wonder, what is the truth about chocolate? Where does it come from and how healthy is it really for us?

Marie Barone, registered dietitian from UC Davis Health gave us the scoop on the truth about chocolate some of which a chocolate lover might not want to hear.

“First, it’s important to note that health benefits are associated with cocoa, which comes from roasted cacao seeds,” Barone said. “Chocolate is made from cocoa with the cocoa butter also found in the cacao seed.”

However, it’s the additions that create this delicacy is what makes it unhealthy. Barone explained that the cacao seed already contains fat, when sugar and milk are added to it, this creates the chocolate to become higher in calories and fat and not as healthy.

The pros and cons of chocolate conclude that the most sayings about chocolate, are myths. The most common myths being that chocolate can be enjoyed a lot, because it is good for us as well as dark chocolate is best.

If chocolate is not consumed in moderation, weight gain, including diabetes and heart disease may occur.

“Watch out for chocolate candy bars and desserts which will have a lot of calories, fat and added sugar and low amounts of the beneficial flavonoids,” Barone advised.

If you are worried about calories and watching your intake on the chocolate this year, Barone suggests going for higher-end dark chocolate that has 70 percent or more cocoa solids, which provides more benefits. Like anything, if it is consumed within moderation there is not as much to worry about during this sweet holiday and year-round. ❖

Before getting too freaked out, there are still the health benefits to discuss. The health benefits of cocoa come from flavonoids, which are nutrients found in plant foods.

“These flavonoids may be beneficial to heart health by lowering cholesterol, helping to prevent blood clots, and lowering blood pressure,” Barone said. She does add that cocoa may benefit the brain.

Fall in love with Irish cream and cookies truffles reciPe AnD PhotoS BY teSSA mArguerite

Truffles are one of those deceiving desserts that look like they must have taken hours to make and years of experience. And, true, there are some truffles out there that are pure works of art. But if you’re anything like me, it’s the balance between simplicity, taste and presentation that makes me fall in love.

When I think of truffles, I picture rows upon rows of chocolate pieces, resting in delicate parchment, behind a glass case in a bakery that is filled with the intoxicating smell of sugar. It’s hard to say no to such a decadent indulgence, especially when you have a recipe that can whip up a heap of truffles in a snap.

It was the idea of a grownup cookies and cream treat that inspired me to make these Irish cream and cookies truffles. The Bailey’s is a sweet addition to the rich chocolate, melting together to form a creamy bite of delight. I also enjoy the austerity of this chocolatey twist on a classic truffle recipe. There’s absolutely no baking involved. The hardest part is waiting up to two hours for the unformed mixture to chill in the refrigerator. During that time, I recommend putting on some music, making a cup of coffee and trying not to think about the rich, sweet treats that are clearly calling to you from the kitchen. If you try and form them too early, it makes everything a lot more difficult

and sticky. You will know if the mix is ready to roll when it doesn’t stick to your palms.

The cleanup is quick with only a few tools to clean; all the dirty work is done over parchment paper.

If you chose crushed chocolate cookies, sprinkles, or nuts, be sure to press the topping firmly into the truffle as you roll it. Flaked coconut is especially difficult to use as it is dry and stiff. Another option is to save some chocolate pieces and melt them in a saucepan after the truffles had chilled in the refrigerator.

Instead of rolling them in a topping, try drizzling the chocolate over the rounded truffles and let it set for 10 minutes. This works well if it is white chocolate on dark or vice versa, creating a sweet, contrasting design.

After you’ve perfected the Irish cream and cookies truffles, try swapping out the Irish cream with Kahlua and rolling them in chocolate sprinkles, powdered sugar or chopped hazelnuts. A variety of liquids can be substituted for the Irish cream or Kahlua and it’s fun to experiment with sweet liquors or brandy. With the amount of chocolate added, it’s difficult to make something less than delicious. There are so many variations that can be made to this recipe; the possibilities are endless.

Truffles are wonderful sweets to bring to parties and can be kept in the refrigerator for up to two weeks. ❖

Irish cream and cookies truffles 1 ½ cups chocolate chips (semi-sweet, dark, milk chocolate) 1/3 cup heavy whipping cream 4 teaspoons Bailey’s (or any Irish cream liqueur) 3 tablespoons maraschino cherries, finely chopped Toppings: crushed chocolate cookies, powdered sugar, coconut, chopped nuts or sprinkles In a medium saucepan, combine chocolate pieces and whipping cream. Cook over low heat stirring constantly until fully melted — ­ may need to occasionally remove from heat if it begins to clump. Remove from heat; cool slightly. Stir in cherries. Mix in Bailey’s using a wire whisk until smooth. Chill for one to two hours, or until firm.

Lay a long strip of parchment paper on baking sheet or countertop. Using your hands, roll chocolate mixture into 1-inch balls. Cover in desired topping.

Truffles can be kept in an airtight container in the refrigerator for up to two weeks.

PRIDE Industries was started in 1966, by a small group of devoted parents. They met in the basement of a church in Auburn with the goal to create an organization that would find meaningful work for their adult children with disabilities.

Now PRIDE is a major nonprofit of employers of people with disabilities in 14 states, employing more than 3,400 people with disabilities. It aims to be the leading employer of people with disabilities and meet the needs of individuals overcoming barriers to employment.

Tony Lopez is the vice president of operations, manufacturing and logistic services for PRIDE. Lopez works out of the Roseville headquarters and has been with PRIDE for 20 years.

“You’re not just a number,” he said. “You’re looked at as a contributor.”

Lopez recalled an experience when a new employee, the daughter of Wheatland Elementary School’s principal, began working at PRIDE. “She was very introverted; no eye contact,” said Lopez, adding that her parents were unsure what to expect.

But within six months, the transformation in the young lady’s attitude and behavior was visibly different. Lopez noticed she was outgoing, appeared to be happier and even told him she was getting her own apartment with a coworker at PRIDE.

“That’s kind of the transformation you see almost on a daily basis,” said Lopez. “You take someone society looks at as a tax burden, make them a taxpayer and give them a paycheck — ­ something most take for granted … It’s an amazing experience.”

Scott Lacey, director of operations, has been working with PRIDE for 13 years. Lacey said although he’s been working in this industry his entire career, this particular company is unique.

“It’s two times as challenging, and two times as rewarding,” he said. “The mission of this work is intoxicating.”

PRIDE’s work in the Lincoln community is just getting started. By summer of 2019, the company plans to consolidate its operations and move to Lincoln and expand its efforts within the town. While its Lincoln location currently employs between 50 and 60 people, by next year, it hopes to reach upwards of 200 employees. According to Lopez, when that happens, PRIDE will become the fourth largest employer in Lincoln.

Lopez said the Lincoln community has responded to PRIDE with open arms. The company has been partnering with the Lincoln Chamber of Commerce and other leaders in the Lincoln community.

Martin Canada is a Marysville resident and has been working at the PRIDE warehouse in Lincoln for three years. He said he enjoys the work and the variety of tasks he is responsible for. Rose Mansanalez, 52, has only been working at PRIDE for a few months, but said she already loves the job.

“My bosses are awesome,” she said, “and so are the employees.”

Wide open space, nature, livestock, bonfires, and overall peace and quiet differ vastly from the bossy HOAs, limited privacy, annoying neighbors, and parking problems that are suburbia. However, buying in the country can be a downright culture shock if you don’t know what to expect.

When living in town, water is available and on demand directly from the faucet. The city maintains the water supply that homes tap into directly. The same goes for the city sewer system. A homeowner in town flushes a toilet and woosh, everything goes down into the city maintained sewer system. This is not the case in the country. A home’s water supply (if the home is run off of a well which most rural properties are) is located on the property and maintained by the homeowner. And country dwellers must watch what they flush. Septic systems are not designed to break down many things, and repairs to either the well or septic systems can be downright costly.

In addition to wells and septic systems, someone buying country property should consider municipal regulations, easements, water and mineral rights, zoning, etc, as well as future changes to the general plan which may annex the property into the city. Someone buying in the country may want to preserve their open space which future development could encroach upon. Nearby farms and ranches may also create noise, odors, and dust, all which should also be taken into consideration by a buyer.

That’s not to say that someone should forego the country lifestyle just because there are so many variables. There is nothing quite like country living, and as long as a buyer is prepared for all that comes along with it, country living is like heaven on earth. Nothing can compare to fishing in your own pond, racing dirt bikes across your own property, or seeing deer just a few feet away from you in their natural habitat. The trick is to hire a realtor who understands the intricacies of country property and to do your homework! After that, there’s nothing left to do but enjoy the peace and quiet that is your new world. ❖

Snowshoeing in the Sierra

The snow continues to fall in the Sierras, and winter activities are in full swing. This is the perfect opportunity to try new snow activities, including snowshoeing.

While enjoying the snow, great exercise and company, this is an experience that comes just one time a year.

First and foremost, make sure to always carry water while enjoying outdoor activities in the snow, said Marketing Engagement Lead Derek Moore at Tahoe Donner. Pack snacks for the trip and make sure to spend a quality amount of time stretching. When it comes to clothing, it is essential to dress in layers as well as wear comfortable, waterproof boots.

Moore also recommends finding a trail and destination that is perfect and fun for the youngest or least fit group member. If it is someone’s first time snowshoeing, a simple trail would be best, while more experienced individuals can enjoy longer, more difficult trails.

“If you are snowshoeing at a cross country ski area, stay to the side of the trail where it is most packed,” Moore said. “Avoid the middle of the trails and the grooves that are cut in for guiding skis and let the skiers pass.”

Tahoe Donner’s Cross Country Ski Center offers private lessons and tours for individuals and groups to learn the basic skills and gain knowledge about snowshoeing and the area. The center also provides marked

“Snowshoeing offers great exercise and an adventurous outlet to connect with nature and explore the outdoors,” Moore said. “It’s also a fun activity for the whole family.” ❖

‘Oklahoma!’ at lincoln’s Civic Center Story and photos By Paige Smith

Lincoln Theatre Company welcomes the community to come and enjoy their production during the 75th anniversary of Rodger and Hammerstein’s first musical, “Oklahoma!” Featuring a new projection system that will bring the stage to life, leaving the audience feeling like they are back in time.

“This is a wonderful way to not only tell the story that Rodgers and Hammerstein wrote for us, but also to recognize the talents that it takes to put on this production and the amount of work that each cast member devotes to bringing the best character they possibly can,” said Peggy Schechter, president of the Lincoln Theatre Company as well as the director for “Oklahoma!”

With a cast and crew that has been working tirelessly to get a set designed, lighting and audio set up, scripts memorized and so much more, it is a part of the creation process that brings it all to life on stage.

“We hope you understand and appreciate the coordination needed by the director of any show, but most especially a musical, to bring all the moving parts together to create a masterful production for all to enjoy,” Schechter said. “We hope you take a smile home with you after this show.”

From the first rehearsal to the closing show, there is a story and experience for all to take away. The story of “Oklahoma!” is no different and the cast and crew have kept to the original production and script as close as they are able.

“We work within the confines of our stage area and script that have been provided by the publisher to bring the writers vision of their created story,” Schechter said.

While the production and story of “Oklahoma!” remains the same, the city-owned Lincoln Civic Auditorium has endured significant improvements over the last three and a half years. With the help of the city, donations and grants, the auditorium has grown from an auditorium to a working theatre.

“Word Up!” funk fans. For those who rocked out to the band Cameo in the ‘70s or just love the retro sounds of classic funk and R&B, the Valentine’s Soul Jam is the place to be on Saturday, Feb. 17.

For one night, the audience will be moving and grooving at Thunder Valley Casino Resort with Cameo and other bands.

Cameo is an R&B band that was formed in New York in 1974.

The band has a hard-driving funk sound, once very similar to Parliament and Funkadelic. Later, during the late ‘70s and ‘80s, Cameo developed more of their own sound with hits like “Word Up!” “Sparkle,” and “Shake Your Pants.” Current members of Cameo are Larry Blackmon (founding member), Tomi Jenkins, Anthony Lockett, Aaron Mills and Charlie Singleton.

This show promises to transport fans back to the golden age of funk. Get in the mood with rubbery bass lines, electro beats and feelgood call-and-response vocals at the Valentine’s Soul Jam.
