Auburn Historic Walking Tour

THE GOLD RUSH TOWN THAT SURVIVED

E

very Saturday morning, for one hour, the history of one Placer County Gold Rush town is revived and stories retold.

The Auburn Historic Walking Tour has been roaming the once dusty streets of Old Town Auburn for as long as Ralph Gibson, Placer County Museum administrator, can recall.

“It’s a really good way to ground yourself in Auburn’s history,” Gibson said.

The tour The tour begins on the first floor of the precipitous courthouse. There are seven docents who give tours, so no two are alike. While each walking tour will delve into the same basic content and stop at the same historic monuments, some may focus on a particular person or place or road.

Gibson said each docent tends to tweak the tour to fit their own personality.

After learning some of the history of the courthouse, including previous courthouses and the current one’s construction, the tour will begin the descent into the commercial section of Old Town Auburn down Court Street. The guide will talk about various fires during the Gold Rush in the 1850s, and point out buildings that go back to the fire of 1855.

From the Placer County Museums archive: One photograph from the Placer County Museums archive which has consistently garnered the most interest and fascination depicts a figure hanging from gallows in the Central Plaza of Old Town Auburn.

Until recently, most believed it depicted the last known hanging on the location of James Feeland which occurred in 1856. But that is a false assumption.

Several clues in the scene offered potential leads to help identify the figure hanging and the time the photograph was taken. The Post Office, the American Hotel and the Co-Operative Store depicted in the background offered best avenues for research. The researchers at the museum discovered that the Co-Operative Store did not exist until 1878. The Post Office did not move into the depicted location until 1861. Additional research into the sign advertising “Post Office Book and Variety Store” revealed that it was not until 1881 that a Book and Variety Store was also advertising as the Post Office.

From all of the above research — which included deeds, assessment rolls, city directories, maps and newspapers — the image was definitely taken sometime after 1881. Therefore, it was not the 1856 hanging of James Feeland.

On July 1, 1882 the Placer Herald printed an article titled “Guiteau Hung in Auburn.” Everything — the date and location — fit into place. The photo is of an effigy of Charles Guiteau who had just been hanged for the assassination of President James Garfield. Historical descriptions of the trial and execution of Guiteau read like pure drama. He was theatrical and very vocal during it all and apparently, some citizens of Auburn recognized that and decided to bring the show to town.

Have you ever wondered about the origins of the Claude Chana Statue (the giant gold miner on Washington St.)? The 45-ton statue is a tribute to the man responsible for Auburn’s beginnings. On the tour, attendees will learn where Chana came from, how he got to Auburn and what he did once he arrived.

After walking past the post office, the tour will wind its way to the area that was used hangings near the public drinking fountain and well. The tour continues to the Chinese section of Old Town as guides share stories about the people who once lived and worked in these buildings.

The tour takes about an hour to complete and occurs every Saturday rain or shine. Brochures are available in the courthouse museum on the first floor of courthouse. “The only time we cancel is because of smoke from a fire,” said Gibson. The Docent Guild has been offering tours since the 90s, Gibson presumed, and they have now become a regular part of the museum.

Living history “We participated in a ghost tour last year in Auburn and our volunteers at the archives drug up some of the blood and guts,” said Gibson. “Murders and such from Old Town …

It’s a good look at a Gold Rush town that didn’t become a ghost town — it survived.”

The reason Auburn survived and thrived is because it was a crossroads, a jumping off point for those who were going up into the mines, like an artery, said Gibson.

In addition, the road south to Placerville and north to Nevada County brought travelers through the town on a

Courtesy of Placer County Museums. daily basis. “That’s why we have this confluence of hotels and stores and markets,” said Gibson. “It was a good place to resupply.” In 1964, the transcontinental railroad was assembled, which brought additional explorers and seekers of gold. The railroad was completed in 1869 and Lincoln Highway was constructed in 1913, allowing for even more commerce and economic growth.

As time advances, countless stories are fashioned through the lives of ordinary individuals. Although America, and especially California, are young compared to most of the world, we have an equally stimulating past, rich with gold mines, railroads and mysteries. It is true that some details of the past have been burned or buried and are lost forever. But in Placer County, and elsewhere, dedicated historians have committed their lives to the preservation of history for future generations. The Old Town Auburn Walking Tour is one way to uncover and hold on to those gold flecks hiding in the dirt.

“It’s always going to be a vibrant growing place,” said Gibson.

eer has been a luxury for millennia. Auburn has a variety of unique breweries that bring in hundreds of guests weekly. For those guests who want to get their own experience brewing one-of-a-kind beer, look no further than in the heart of Auburn.

Patrick O’Hara, owner of O’Hara Brew House Supply, opened the store in April 2016 and has instructed 45 classes teaching people how to brew their own beer.

The German Beer Purity Law requires that only four ingredients go into beer: water, yeast, grains and hops.

“We are in America, so we can add whatever we want to our beers,” O’Hara enthused, enjoying a sip of his most recent batch of citra IPA. The freedom of being able to experiment in the beer industry includes two current trends, sour beers and New England IPAs. According to O’Hara, the sour beer trend became popular from millennials.

“Sour Patch Kids, kids ate them all the time growing up,” he said. “Millennials love the sour beers.”

While the sour beers leave a tart taste, New England IPAs have more of a bitterness to them. While trends may come

and go depending on consumers and craft brewers, seasonal beers have been consistent.

Fall and winter invite beer enthusiasts to enjoy traditional pumpkin, blood orange, barley wine and holiday season beers.

“During the summer season we drink more light beer,” O’Hara explained. “In the winter when I am cold, I want to drink an imperial stout that is 10 percent alcohol.”

The brewing process is not as complicated as it may seem. All you need is equipment, a beer ingredient kit and your desired flavors. Seventy percent of the process is cleanliness, making sure that each item is washed and ready for the following step.

A few recommendations include taking a class, always use stainless steel kettles, make sure there is no chlorine in the water and use a banjo burner not a jet burner. Finally, when the beer has fermented, Patrick explains that kegging is much better than bottling, it is much easier.

After the brewing process, you will have five gallons of your own beer. O’Hara reminds us that the party is always at your house when you are the brewer.

“But don’t let them come over without something in their hand, you will not drink my beer unless you bring me something to eat,” O’Hara said with a laugh.

any have noticed that the Fosters Freeze off Highway 49, which resided there for 53 years, has been transformed. Over the summer, father-andson duo, Jeff and John Sardella, cut ties with the franchise and invested in independent ownership. The change has been a few years in the making, but for Auburn locals, the new signage came as albeit a pleasant surprise.

“It was an accumulative thing,” said co-owner John Sardella.

Many years ago, In order to be competitive in the food industry, the Sardellas started to revamp the quality of food used in the Fosters menu.

“We changed over to fresher, more natural ingredients,” John said.

Corporate wasn’t keen on the changes and a tough decision had to be made. Corporate basically said go back to lower quality food or if keep the food and change the name, John said.

“We were kind of in too deep at that point,” co-owner Jeff Sardella said.

“We felt the food was more essential to our business than the actual name on the side of the building,” John said.

The Fosters Freeze in Auburn had been under Sardella ownership for more than 30 years and the risk of moving into independent restaurant ownership came with a lot of unknowns, but ultimately the Sardellas felt it was a step in the right direction. Once the decision had been finalized, corporate gave them less than a week to remove the signage.

“It was a big gamble for us, but for us going backwards wasn’t really an option,” John said. “It takes a lot to switch everything over.”

It was months of transitioning before the name change was prepared. It was also important for the Sardella family that customers weren’t shocked with a total change. They didn’t want to open and be something totally different, Jeff said.

The signage may now say Burger & Cream, but the quality of food that locals and passersby have come to love remains the same, if not better.

The ice cream is now creamier and healthier. Yes, a healthier ice cream. It contains a higher butter-fat content with less sugar resulting in a creamier treat.

Even the onion rings got an upgrade from breaded to beer-battered and all the sauces are house-made.

The products are sourced with care from the burger meat to produce to using Rocky the Free Range Chicken in their dishes.

“All-in-all I think the reception has been very positive,” John said.

By going against the grain for so many years, the transition into fully independent ownership was much smoother than most. Over the years people thought of the restaurant only as an ice cream shop. The Sardellas wanted to change that by letting customers know they serve meals too. The name Burger & Cream is concise and indicative of what customers can find on the menu, from sweet creamy treats to full meals.

“

“It was multiple things that led to the name,” John said.

“It’s a little more of a modern twist.”

Flavor, quality and freshness are the goals with the new local eatery.

“The great thing about food is that everybody has their own individuality,” John said.

No other burger joint has the same recipes, which gives Burger & Cream the ability to be set apart. John’s favorite offering and personal creation on the menu is The Spicy Johnny, whereas Jeff prefers the burger recipe, The Guido, which has pastrami instead of a beef patty.

Throughout the winter there will be some more remodeling and fine-tuning of the style. The theme in the works is modern rustic. However, the 300,000 customers the eatery serves annually will not have to miss out on their cravings due to remodeling.

ardiology care has been offered to the Roseville community since Roseville Cardiology’s office opened in 1976. However, now the services have come to Auburn with easier access to those up with hill.

This spring, the third Roseville Cardiology office was opened in Auburn, expanding the reach of care to Roseville, Lincoln, and the foothills.

“We’ve been open since April 1,” Dr. David Wampold said.

Each office visit begins with a consultation or new patient evaluation, follow-up care and cardiac care. The diagnostic tests include: electrocardiograms (EKG), echocardiography (cardiac ultrasound), exercise stress testing, stress echocardiography, carotid ultrasound, Coumadin level checks, Holter monitoring, event recorders, in-office pacemaker check and more. Some of these services can only be performed at certain locations.

“We’re basically offering an entire range of cardiac service,” Wampold said.

The physicians also provide a full array of services at the Sutter Roseville Medical Center as well as Sutter Auburn Faith Hospital.

The community of Auburn is reaching out with open arms to welcome Roseville Cardiology and the many services they provide. Cardiac care resources have been limited over the past several years in Auburn, but now with the new office more central to residents, a need has been addressed.

“There were multiple reasons why we went to Auburn,” Wampold said. “There was a void in services there … that

was the primary reason we chose there. I looked at other areas and I liked this area.”

Wampold started the Roseville Cardiology program in the late ‘70s. He was in the midst of his cardiology fellowship at UC Davis when Roseville, which was a community hospital at the time, recruited him. He has then served as the medical director of Cardiology along with many other prestigious positions throughout his career.

Roseville Cardiology’s growth has been expansive over the past 40 years and have 11 doctors on the team.

“All the doctors we have added have stayed. Nobody has left,” he said. “They have had extensive training before working with us.”

Along with the new onsite services in Auburn, there will be a full-time cardiologist, Dr. Frances Canet, and a nurse-practitioner with several rotating staff to-and-from the Roseville office on a regular basis.

There will be no limit on patients. armth and comfort — nothing quite symbolizes Old Town Pizza like those two words and they depict fuzzy feelings during the holidays.

Travelers for the holidays, skiers headed toward the mountains, as well as locals, flock to OTP, building a line that stretches out the door come winter time. This is one of Auburn’s go-to eateries.

“A lot of people who come from Sacramento or the Bay Area, this is their stop-over with their kids,” said Auburn’s general manager, Laura Styler.

While the line for a table might seem never-ending, the wait-times are on average no more than 10 to 15 minutes.

“Holidays are a big deal,” said owner Reese Browning. “It’s pretty easy going around here.”

While no pizza in the area is exactly the same, OTP’s pizza stands out with its dough. The recipe is a blend of flour, water, yeast, oil and sugar.

“We make it fresh every day,” Browning said. “Not all pizza doughs have oil, but we use oil. You have to have sugar because that is what the yeast eats.”

All batches start with 25 pounds of flour and the team often makes around 10 batches on a Friday or Saturday night. One batch can make about 30 medium pizzas and two pounds of the dough will make one family-size pizza.

“Consistency is so critical,” Browning said. “A customer who loves you wants that experience every time.”

That is why when Browning bought the company back in 2002 he opted not to change the original recipes.

Some of the more popular flavors are the classic pepperoni or the Motherlode, which is pepperoni, sausage, linguica, salami, mushroom, yellow onion and black olive.

“Just kind of a good ol’ classic,” Styler said.

Styler’s particular favorite is the Gunfighter’s Pesto with pesto sauce, tomato, fresh basil, garlic and feta cheese, whereas Browning prefers the Miner consisting of pepperoni, sausage, linguica and real bacon.

For those who want to avoid the carbohydrates, the stuffed bell peppers are a unique alternative.

“It’s basically a pizza in a bell pepper and great for people who don’t want carbs,” Browning said. “You don’t find that in too many restaurants.”

Another option besides pizza is the Wrap Dog. It is a hot dog wrapped in pizza dough and baked. Customers can even add toppings for even more fun.

“We generally won’t say no,” Browning said. “If we can do it, it’s silly to say no.”

In fact there is no limit to the toppings that can be added to a pizza because it is all based on ratio. As long as it can fit in the conveyer gas-fired oven, it can be done.

Browning knew from a young age that he wanted to go into business for himself, but swore it would never be in the food industry. When he started looking for the business, he wrote on his list, “no restaurant.”

“I didn’t want to be in the restaurant industry,” he said.

He discovered OTP as a customer and got to know the owners. He was in the process of buying a candle manufacturing company by the airport when OTP went on the market. To test it out, Browning worked under the previous owners for a time and learned the ropes. Under their tutelage, Browning felt confident he could run the business.

“I knew I could do it,” he said.

It was completely different from his previous career. Browning had spent 25 years working for Hewlett Packard in manufacturing and customer service.

“All of my experience was in manufacturing,” Browning said. “I’m a real analytical kind of person.”

Fifteen years and three locations later, the restaurant is still on the top favorite list of places to eat locally.

Their community support is another reason so many Auburn residents love this place. There are very few places in Auburn where a sponsorship of OTP isn’t shown.

“We decide to invest in what our customers are invested in,” Browning said.

It just goes to show, never say never.

She has more than 30 years of experience in the floral business and could probably tell you the name of every flower or plant used in bouquets and centerpieces. From holidays to birthdays, anniversaries to “just because,” O’Shays’ arrangements are created with creativity and care.

Holiday arrangements make an excellent gift for loved ones and friends.

“For the holidays, we use Douglas firs, princess pine, holly, pine cones, ribbons and ornaments,” said Herrera.

Many customers return year after year to bring back that luxurious and festive feel to their homes during the holidays. Centerpieces of pine branches, holly and ribbons are available, as well as mantelpieces or arrangements

for a buffet table. “They bring a festive or elegant feel to the holiday season,” said Herrera. “They can set the ambiance for the room.”

Customers are welcome to bring in their own container or basket, or choose one from inside the store, said Herrera. Arrangements vary in size and contents, depending on the customer’s preference, and can be made to anyone’s price range. The artistic florists at O’Shays can create arrangements that will complement the color of the room where it will be displayed. Most of the greens in O’Shays’ arrangements last well past the holiday season, and can be refreshed with a few flowers.

MERRY APPLE MULE

INGREDIENTS

4 ounces apple cider 4 ounces gin (or vodka) 12 ounces ginger beer 1 green apple for garnish 1 teaspoon cinnamon 1 teaspoon nutmeg 2 teaspoon white sugar 24

INSTRUCTIONS

1. Place apple cider and gin into a cocktail shaker and shake gently.

2. Place ice in two copper mugs and pour the shaken mixture evenly into each.

3. Combine cinnamon, nutmeg, and white sugar into a separate bowl.

4. Top with ginger beer and garnish with apple slices.

5. Sprinkle or rim mugs with cinnamon sugar and enjoy!

n regards to appetizers, this one perfectly epitomizes cooler weather gatherings. The apple is tart and the butternut squash is sweet. Drizzle with mildly sour balsamic vinegar and melted warm brie cheese. The crostini should be more about the topping than the bread, so be sure to slice the baguette used into the appropriate size to hold the flavors on top without overpowering them.

The flavor profile touches on salty and sweet. It will be tempting, but don’t fill up on appetizers before indulging in the main course. You’ll regret not having room for dessert.

SERVES 4-8

INGREDIENTS

2 cups diced butternut squash 1 cup gala apples 6 tablespoon olive oil ½ teaspoon cinnamon ¼ teaspoon nutmeg ¼ teaspoon allspice ¼ teaspoon cloves pink Himalayan salt, to taste

ground black pepper, to taste gluten-free French baguette, sliced into 8 slices 1 cup brie cheese sliced 4 cloves fresh minced garlic ¼ diced white onion 6-8 fresh basil leaves 2 tablespoon balsamic vinegar

INSTRUCTIONS:

1. Heat 2 tablespoons olive oil in a pan on the stove.

Once warm, add the butternut squash, apples, cinnamon, nutmeg, allspice, cloves, pink salt and black pepper.

2. Sauté until soft then remove from heat, place in a separate bowl and set aside.

3. Slice the baguette into 8 pieces about half an inch thick.

4. Brush slices with 2 tablespoons olive oil and set aside.

5. Slice the brie into pieces that will fit onto the sliced bread.

6. In the same pan that cooked the squash and apples, heat the remaining 2 tablespoons olive oil. Add garlic and onion. Sauté until fragrant (about 1-2 minutes).

7. Add the squash and apple mixture to garlic and onions and cook on low heat until warm.

8. Place sliced bread on a baking sheet topped with sliced brie and broil to the desired amount of melted cheese and toasted bread. *Keep an eye on it because it can burn quickly.

9. Remove costini from oven.

10. Top with apple and squash mixture.

11. Flake sliced basil leaves over the top with balsamic vinegar. Serve and enjoy!

Part one is how to prepare the Cornish Game Hens and part two is the Cranberry Apple Sage Sausage Stuffing … phew that is a mouthful, pun intended. The stuffing can be placed in a roasted chicken or turkey as well. Even duck would work, but for this particular dinner Cornish Game Hens seamed ideal. Christmas dinner will never be the same.

CRANBERRY APPLE SAGE SAUSAGE STUFFING SERVES 4-8

INGREDIENTS

12 cups day-old, gluten-free white bread, diced 2 stalks of celery, halved lengthwise and sliced 1 yellow onion, diced 1 ½ cups fresh whole cranberries 1 cup diced apple 2 tablespoons fresh sage leaves, chopped

1 tablespoon thyme 1 tablespoon rosemary 2 eggs, beaten ¼ pound spicy Italian sausage 1 cup unsalted butter 2 ½ cups chicken bone broth Salt and pepper to taste 2 tablspoons coconut oil

Preheat oven to 350 degrees.

Spray a 9-by-13-inch baking dish with 1 tablespoon coconut oil.

In a large skillet on the stove, melt butter over medium heat.

Once melted add onion and celery. Cook until soft.

In a large mixing bowl combine bread, apples, cranberries, cooked onion and celery and herbs.

6. In the same large skilled add remaining tablespoon coconut oil until melted.

7. Cook sausage in skillet until done.

8. Add to the bowl of ingredients.

9. Add half the allotted amount of chicken broth and stir until combined.

10. Pour beaten eggs into mixing bowl and combine.

11. Add remaining broth into the bread mixture. *Bread should be moist, but not soggy.

12. Salt and pepper to taste.

13. Place stuffing into greased baking dish and cover with foil.

14. Bake for 30 minutes covered and 15 minutes uncovered.

15. Allow to cool for at least 5 minutes, serve and enjoy!

STUFFED CORNISH GAME HENS SERVES 2-4

INGREDIENTS

2, 1½ pound Cornish hens 1 tablespoon rosemary 2 cloves of garlic, minced

2 tablespoons olive oil 4 tablespoons butter Salt and pepper to taste Kitchen twine

INSTRUCTIONS

1. Preheat oven to 425 degrees.

2. Rinse hens in cold water inside and out and pat dry.

3. Season well with salt and pepper on both inside and outside.

4. *If desired fill cavity with uncooked stuffing and tie off the legs. If not stuff with lemon and garlic as desired.

5. Place in a large cast iron skillet 6. Drizzle with olive oil and rub over hens 7. Cut the butter into small pieces and lay on top of the hens.

8. Place in oven for 1 hour. Skin will turn golden and crispy with an internal temperature of 180 degrees.

9. Remove from oven and let rest for 5 minutes before carving. Run drippings over the top.

10. Serve and enjoy.

CARAMEL APPLE BUNDT CAKE

e have now reached the end of our Christmas food journey and what a sweeter way to introduce the finale of courses than with a Caramel Apple Bundt Cake. By now we should all have full bellies with hopeful room for at least one slice of cake. This is best paired with a cup of coffee or even another one of the earlier cocktails.

INGREDIENTS

SERVES 8-12

2 cups sugar 3 large eggs 1½ cups coconut oil, melted, plus extra for greasing ½ cup apple cider 3 cups gluten-free, all-purpose flour ½ tsp pink Himalayan salt or sea salt 1 teaspoon baking soda ½ teaspoon cinnamon

½ teaspoon nutmeg 1 teaspoon organic vanilla extract 1 cup chopped walnut 2½ cups diced apples Caramel Glaze ¾ stick of butter ¾ cup light brown sugar ½ teaspoon baking soda ¹⁄³ cup half and half

INSTRUCTIONS

1. Preheat oven to 325 degrees.

2. Grease a 10-inch Bundt pan with coconut oil and lightly flour.

3. In a mixer, beat eggs, sugar, apple cider and oil.

4. Sift in flour, salt, baking soda, cinnamon and nutmeg.

Fold in walnuts and apples.

he common everyday apple is actually the epitome of versatility. If you ate a different kind every day, it would take more than 20 years to try each of the more than 7,000 varieties around the world.

Just in the United States, there are at least 2,500 varieties.

At the Boorinakis Harper Ranch in Auburn, the focus is on the less well apples.

“We have a mixed orchard,” Julia Boorinakis Harper said. “It’s mostly the old pear trees. This was originally a pear ranch. There are half-a-dozen apple trees mixed in with the pears.

Most are heirloom varieties.”

One of those is the Arkansas black.

“It’s very dark red, crisp and keeps really well through the winter,” she said.

It has a long shelf life, lasting until March or April.

“The Black Arkansas exudes a waxy coating,” she said. “After a couple of months, they get a coating like you see in a grocery store. But it is a natural coating and keeps them from drying out. It keeps them crisp and fresh. They look like beautiful shiny candy apples.”

Another farm specialty is an heirloom variety Granny Smith. It’s a late season apple and there were still a few left to harvest in mid-November. It also stores well.

A couple of the varieties are unique to the ranch, including the Tony Delicious, which is named after a family friend.

“My grandfather was out hunting many years ago and found that tree growing in the mountains,” Boorinakis Harper said. “He shot down a branch, brought it home and grafted it onto a tree on the ranch. It was a much older variety on a homestead — it could have been 100 years old.”

It is not to be confused with the Red Delicious apple found in grocery stores.

“It’s much more flavorful — kind of a cider flavor,” she said. “It is a pink and green striped apple.”

Harvest time for the Tony Delicious is September into October.

“We sometimes have those at the farmers’ market during our pear season,” she said. “(Unlike the apple

One of the easiest ways to use up apples is to make applesauce. The Boorinakis-Harper family recipe uses only minimal ingredients — apples, a little sugar and a little lemon. The secret to success is in the consistency.

“We don’t make it baby food texture,” Julia Boorinakis Harper said. “It is so much better if you leave it chunky.”

To keep apples from turning brown after they are peeled, add a little lemon juice.

“A lot of tart varieties don’t tend to turn brown as much because of the acids,” she said.

To extend the shelf life, store the apples in an unheated room.

“You can keep them in the refrigerator, too,” Boorinakis Harper said. “Just check on them now and them and discard any that are going bad.”

Another apple unique to the family farm is the Green Scrumptious.

“It is a very crisp, tart green apple,” she said. “We’re not really sure (about its origins). It was another of my grandfather’s trees. It could have been a seedling or come from root stock.”

In fact, one of the things that makes apple so much fun to cultivate is the surprise element.

“Apples are unusual because, unlike tomatoes, you can’t plant an apple seed and get a recognized variety,” Boorinakis Harper explained. “With apples, they can come up as anything from seed. They could be fantastic or inedible. You don’t know what you are going to get until they root and produce.”

As a member of the California Rare Fruit Growers Association, the family has access to European heirloom varieties. “(The association) has an exchange where members bring grafting wood from their trees,” Boorinakis Harper explained. “These are very old named

varieties — Italian, French and all over the place. We go to that and bring home things that look interesting — apples, pears and figs. We graft them onto our own trees and grow them and see that they turn out to be. … It’s exciting to see what you get.”

The ranch has been in the family since 1918, when Julia’s great-grandfather, George Boorinakis, purchased the land in a rural part of Auburn.

He came from a Greek village in Turkey, near Smyrna,” she said.

The family roots were in farming.

“He moved to San Francisco and eventually found this property,” she said.

His son (and Julia’s grandfather) Philip Boorinakis continued to build the family legacy on the property. He passed away five years ago. Today, Julia and her parents, Phyllis Boorinakis and Tom Harper, run the ranch.

In addition to apples and pears, there are fig trees and a honey bee operation.

The family sells produce at the PlacerGrown Farmers Market in Auburn and also at Newcastle Produce in Newcastle.

“People really love the story of the Tony Delicious,” Julia said. “That’s a good apple for a reason. The Arkansas Black is another favorite.”

As longtime ranchers in the Auburn area, the Boorinakis-Harper family enjoys being part of the community.

“We really like to work with other businesses and grocery stores, farmers markets and other farmers whenever we can,” she said.

And cultivating apples has been a satisfying endeavor for the family.

“Apples are just a really interesting crop to grow,” she said. “There are so many kinds and so many are so old – especially when you look into the heirlooms varieties. If you put in the work and are patient, you will get some wonderful varieties you won’t see in a grocery store. … Once established, they can grow for a long time with very little care.

After coming upon the decision to operate their own business, the Dobsons began a search for the ideal property. Since the two have family nearby, Auburn seemed like the perfect place to settle into. The two moved from Roseville when they found the perfect spot. At the time there were only about three or four well-established wineries in Placer County.

“The property just turned out to be the right place at the right time,” Dobson said. “I just always loved Auburn.

(It’s a) small-town feel where you get to know a lot of the people.”

They transformed the acreage little by little from a cow pasture into the vigorous vineyard it is today and by 2010, PaZa had its first harvest. It produced four and a half barrels of red wine whereas today they produce anywhere from 16 to 18 barrels a year.

The three-acre vineyard winds to stunning views of the countryside and is surrounded by ambient lulls of grassfed cattle that surround the property.

Taking on the project of operating their winery has been no easy task. Both Zane and Pamela work full-time outside of PaZa. Zane works for Sacramento County sewer district and Pamela has a career with Save Mart in Auburn.

After 15 years in Porsche racing and other sports cars that took Zane all over the country, he moved to California in 2003. Shortly after, he married Pamela who grew up in California and has had a career in the grocery industry, which launched her interest in wine. The couple enjoyed wine tasting with friends and decided to add their mark to the wine trail.

“Once we opened the gate and opened for business life got really busy,” Dobson said. “We do everything here.”

In the beginning there were about 2,400 baby vines that were planted.

“It looked more like Arlington Cemetery from a distance,” Dobson said.

Currently they have planted four varietals on the acreage including petite sirah, primitivo, barbera and albariño.

a Spanish grape that carries notes of honeydew melon, grapefruit and meyer lemon. It has a thicker ski, which helps prevent mildew. By doing research The Dobson’s knew what varietals would work well in this area with the warm climate.

“We were the first to plant that (albariño) in Placer County,” Dobson said.

“Pamela and I trained all these (vines) for better or worse. Every year is better.”

The most popular wine blend is their “Living the Dream” blend of petite sirah and zinfandel. The story behind the name came from customers who commented that the Dobsons were living their dream as wine makers.

Residents of Placer County have quality wine in their backyard with not need to drive to Napa for an enjoyable tasting experience.

“We’ve got a lot of high-end wines right here,” Dobson said.

Aside from the upscale wine, PaZa is set apart with their outdoor tasting venue.

“It’s pretty unique with the open area kind of pavilion-style tasting shed,” Dobson said.

It truly is an outdoor experience with the rustic, elegant tasting shed that allows for the cool crisp mountain air to flow right through. The patio has heaters and fire pits that allow for tastings all year long. The family-friendly venue has tables for picnics and shelter from any weather that may pass by.

“The growing part is a major part of making good wine. It is true that good wine starts in the vineyard,” he said.

“We want something different, something with character (and) something that is above normal. It doesn’t just get your attention it keeps it and gets better with age.”
