RECIPE
Icebox Sugar Cookies
YIELD: 3-1/2 to 4 dozen 2-1/2 inch cookies
For busy moms or dads, these slice-and-bake logs are a cinch to make. Let the kids have a field day making them look like Christmas. Ingredients: 1. Thoroughly stir together, then set aside: • 1 1/2 cups all-purpose flour • 1 1/2 tsp baking powder • 1/4 tsp salt 2. Using an electric mixer, beat until very fluffy and smooth: • 2/3 cup unsalted butter, softened • 2/3 cup sugar 3. Add and continue beating: • 1 large egg • 2 tsp vanilla • 1/4 tsp finely grated lemon zest (optional)
Directions: Beat in the flour mixture until just smoothly incorporated. Cover and refrigerate until slightly firm, 20 to 30 minutes. Place the dough on a long sheet of wax paper. With lightly oiled hands, shape into an even, 11-inch long log. Roll up the wax paper, twisting the ends to keep from unrolling. Place on a tray and freeze until completely frozen, at least 3 hours. Use immediately or transfer to an airtight plastic bag and freeze for up to 1 month. To bake: preheat the oven to 375 ºF. Lightly grease cookie sheets. Carefully peel the wax paper off the log. Cut into 1/8 inch thick slices, then immediately transfer the slices to sheets, spacing about 2 inches apart. Bake, 1 sheet at a time, on the upper oven rack for 7 to 10 minutes, or until cookies are golden all over and just slightly darker around the edges The longer the baking time, the crisper the cookies. Transfer sheets to wire racks and let cookies firm up slightly. Then, transfer the cookies to wire racks to cool completely. Store, airtight, for 3 weeks, or freeze for up to 2 months.

There are many fudge recipes out there, but it’s hard to find one as simple and as delicious as this one!
Candy cane fudge squares
INGREDIENTS (Makes about 32 pieces)
• About 5 cups chopped semi-sweet chocolate • 1 can (14 oz.) sweetened condensed milk • 1 tsp. vanilla extract • A generous pinch of salt • 1 cup chopped candy canes (or other hard candy) DIRECTIONS 1. Line two 8-inch square moulds with parchment paper. Make sure to leave an extra inch or two of paper on all sides for easy removal. 2. In a medium-sized casserole dish, warm the chocolate and condensed milk over low heat. Remove from heat once the mixture is nice and smooth. 3. Add the vanilla extract and salt. Mix well. 4. Pour the mixture into the square moulds and sprinkle pieces of candy cane on top. 5. Leave to harden in the fridge overnight. 6. Cut the fudge in each mould into roughly 16 squares, and enjoy! RECIPE
LEMON CRANBERRY muffins INGREDIENTS • 2 cups all-purpose flour • 1 cup firmly packed light brown sugar • 1/2 tsp. baking powder • 1/2 tsp. baking soda • 1/4 tsp. salt • 1/4 tsp. allspice
• 1/8 tsp. ground cayenne pepper • 1 1/4 cups buttermilk • 1/4 cup butter, melted • 1 egg, yolk and white separated • Zest of 1 lemon • 1 cup fresh cranberries (washed) or frozen (thawed)
DIRECTIONS Heat oven to 400 °F. Lightly grease a 12-cup muffin pan that’s roughly 2.5 inches deep. In a large bowl, combine flour, brown sugar, baking powder, baking soda, salt, allspice and cayenne pepper and mix until evenly blended. In a small bowl, add buttermilk, butter, egg yolk and lemon zest, and beat until mixture is smooth. In a third bowl, whip up the egg white. Make a well in the centre of the dry ingredients. Pour in the buttermilk mixture and stir with a fork until all ingredients are mixed together. Add egg white and cranberries. Pour the mixture into the muffin pan, filling each cavity 3/4 full. Bake until a skewered tooth pick comes out clean, about 20 minutes. Remove the pan from the oven and let cool for 5 minutes. Using a knife, unstick the sides of the muffins and remove from pan.
