ugary treats and delectable eats; having a sweet tooth is something that knows no limitations, especially at Icing on the Cupcake. And, what describes the holiday season better than a pumpkin, caramel apple, chai spice or even hot chocolate marshmallow, eggnog or peppermint cupcake? These are only a handful of the seasonal flavors Icing on the Cupcake has in store for the fall/winter seasons. There is also a handful of what they call off-season cupcakes that are available by special order. Flavors like tropical dream, gluten-free pineapple rightside-up and marvelous marble make an appearance from time to time during the colder seasons, so eager customers don’t have to wait an entire year to indulge in their favorites. “Every month we always have an off-season flavor,” said Co-Owner and Marketing Director Sammy Schnetz. “For example in the winter time we would have cotton candy as an off-season flavor because that’s normally a summer flavor.” Eight flavors are offered daily that remain consistent with an additional six to eight flavors that alter per day. Some will change month to month based on the season. “Within those flavors we have some that change every week,” Schnetz said. “We take a lot of orders too. You can get custom cupcakes decorated however you want. You can always order any of the 40-plus flavors that we have as long as you order a minimum of 12.” The four most recent owners took over the business in June of this year and have a lot of fun ideas in store. Remodels of the three locations are on the list of todos along with more customer seating, a coffee/espresso bar and party supplies. “I personally enjoy coffee with a cupcake,” Schnetz said. Icing on the Cupcake one day hopes to see its own line of mixes and frostings in the local grocery stores including their vegan offerings. Schnetz has always had a love of desserts, but it wasn’t necessarily for cupcakes. That is until she tried Icing on the Cupcake. Schnetz used to make ice

cream and sell it in New Orleans where she also worked in a dessert shop. “It’s creative and it’s productive because it is edible,” she said. Her love for all things sweet was reignited with Icing on the Cupcake. “I never had one (a cupcake) that blew my mind before and (now) I cannot stop eating them,” she said. “It’s all about the frosting.” The high-quality ingredients and unique flavors set them apart. “This has been the main bakery,” she said. “This is where everything is made.” The California craft cupcake is made with real beer infused into the cupcake and topped with a pretzel for the added salty, sweet flavor. Another of the more unique offerings is the Sangria cupcake. The flavor profile is nearly identical to enjoying the cocktail itself. “It’s just a very uncommon flavor,” Schnetz said. “The way it exists as a cupcake is brilliant. It’s very bright and fruity.” The buttercream frosting is a wine reduction pairing the perfect balance of sweetness. Even with the multitudes of unique flavors there are those that will always be the most popular. “Our No. 1 best seller always is the red velvet,” she said. In addition to cupcakes, a few other desserts line the front shelves including brownies, blondies, homemade cookies with frosting in

the middle and little pies perfect for Thanksgiving. Everyone can have their favorite flavor on the special day without a ton of pies left over. “We do make everything fresh every day,” Schnetz said. Custom orders have become really popular for large parties, weddings, showers and corporate events. Their largest order so far has been 12,500 cupcakes. “It was insane. All hands were on deck,” she said. Even the owners were in the involved in the baking. “It was fun and everything went smoothly,” Schnetz said. “We want people to know we can handle large custom orders. We have any kind of sprinkle you could ever want.”

obert Chaponot has the home of a well-traveled observer. Bookshelves are stocked with carved wooden sculptures and pottery. Rich, warm textiles cover the floor and furniture. The walls are the color of a waterfall caught in sunset, decorated with photos of sunlit trees, a man buying fruit in Venice and other snapshots of Chaponot’s adventures, near and far, in his 80 years. Chaponot is one of 100 Placer County artists participating in the 24th annual Placer Arts Studio Tour, a three-day multi-location gallery where artists display their work throughout the county and viewers drive a self-guided tour to different exhibits. This year’s tour has 43 locations. Chaponot’s work is displayed in the Sun City Fine Arts Room, near where he and his wife Alicia have lived for two and a half years in Roseville’s Del Webb community. Chaponot has been a photographer

for more than 60 years. Both his parents were artists — his father illustrated canned food labels and his mother was a potter — but he came to photography in 1956 as part of the United States Army. During that time, he worked in a photography lab in the Pentagon, shot stills for an Army video called “The Big Picture” and shot images in Okinawa, Japan for a magazine. From there, he earned a degree in photography from the Brooks Institute, working with equipment that was a far cry from today’s pocket-sized, point-andshoot cameras. “When you’d take a picture, you’d really have to plan it out and shoot,” Chaponot said. “Now, with digital cameras you can take a thousand photos and hope something turns out ... but it pays to plan.” After Brooks, he spent 34 years in aerospace photography, documenting the

different phases of projects. He holds a Master of Photography degree from the Professional Photographers of America, which he said took him about eight years to earn and is his proudest professional accomplishment. Another milestone? Having a photo in the presidential collection. He can’t recall which president — perhaps Lyndon B. Johnson, he said — but he remembers the photo: A sunrise behind the Golden Gate Bridge. Chaponot’s childhood in the Bay Area informs much of his current work. As a kid, he spent his days fishing and hiking the hills around his hometown, Mill Valley. As an adult, he and Alicia lived in Mariposa for a decade, about 45 minutes away from Yosemite National Park. The vistas — as well as the joy of capturing images of elusive fauna and exquisite flora — are only part of the equation. Chaponot likes his medium because it allows him to move around, versus sitting in a studio all day. He and Alicia hike, kayak, ski and are certified scuba divers, all of which can provide ample photo opportunities. “I’d rather be out there,” he said. “I

like picking a spot where I think the light will be good, and then waiting. Animals sometimes show up or different things you don’t expect to be there.” The light, he said, is crucial. It’s the first thing he looks for when shooting a place or object, especially in unique locations like Horsetail Falls, a Yosemite waterfall that lights up for about 15 minutes a day, two weeks a year when the sun hits it just right. In a photo he points to, the falls look like liquid gold. “As a photographer, light means a lot,” he said. “You have to look for the light.” For Alicia, the last 43 years of marriage to a photographer has meant early mornings and late afternoons waiting for the perfect moment to snap a photo. “In between, you might find something to eat or a bathroom or maybe a glass of water,” she laughed. “We’re up at the crack of dawn, scoping out where the light will be, when the sun will be in the right place.” While photo excursions with her husband may not allow a rigid meal

schedule, Alicia said it has taken them to some beautiful places. Together, they’ve traveled to Venice and Holland, rented a car and spent a month traversing Spain, scuba-dived in the Caribbean and crosscountry skied in wintertime Yellowstone. As for the next adventure? Chaponot wants to visit a granddaughter in Oregon, looks forward to displaying his photographs in Auburn’s Old Town Gallery within the next year and plans to keep enjoying his life’s work: Looking for the light.

hanksgiving traditions around the country often start with drinks and appetizers and end with food comas or, in recent years, shopping. But here in Roseville, there’s a growing warm-up tradition for residents to exercise, work up an appetite and contribute something before diving into indulgences and commercialism. This year marks the fifth annual iteration of the city’s “Turkey Trot,” a 5K and 10K course downtown organized by the Roseville Parks and Recreation Department to raise money for at-risk youth programs. “Right when the Vernon Street Town Square got built, our goal was to bring community events downtown, and we thought this was a good opportunity to start something,” Recreation Superintendent Jeff Nereson said. “It’s meant for all ages, whether you’re a runner or a walker, whether you’re serious or you want to come out and have fun. We get a lot of families, a lot of businesses who use it as a teambuilding or family event, and what we’re finding is, people are making this a tradition.” The event starts and ends at Vernon Street Town Square, and it’s not a race — there are no “winners” crowned at the end, and every registered participant

gets this year’s souvenir medal. No dogs are allowed on the 10K and no bikes or scooters on either, and entry fees range from $35 for kids to $45 for adults on the 10K. Nereson said in October that about 400 people had already registered. He expected the event would sell out this year, as it has in the past. “I think the first year we did it, we had maybe 1,400 people. Each year it has grown, incrementally, until last year we sold out — we weren’t expecting to — at 2,500,” Nereson said. “This year we’ve upped it to 2,600 participants, and we do anticipate selling out this year. I think we’re at a point now where we’ve met our number, and we feel good about that.” Proceeds help the city of Roseville provide and expand its Youth Passport program, which offers recreational

activities to low-income families, and Operation Swim, which helps purchase towels and bathing suits for kids. Event organizers are also asking participants to bring non-perishable food items to be donated to Saint Vincent DePaul, either to the race itself or to packet pick-up at the Roseville Sports Center on the three days prior. Nereson said Turkey Trot raised more than $20,000 in some years, the vast majority of which came from participants as opposed to sponsors, although Whole Foods will again provide all the post-race refreshments this year. Nereson added that weather has been “amazing” in the past, generally cold but sunny, although it’s not a crucial variable. No matter your Thanksgiving plans, you can write this one in stone — Turkey Trot is always a “go,” rain or shine.

could eat pizza every day,” said owner of Newcastle Pizzeria Julie McReynolds. Before opening her own restaurant in May 2014, McReynolds traveled to many places that allowed her to sample different pizzas from all over the world. She recently opened her second location in Rocklin on Oct. 13. Many of the menu items were inspired by her numerous trips. Some countries that really stand out to her are Australia, New Zealand and Italy. Wherever life took her, McReynolds sought out the best pizza. Having the perfect crust for her wood-fire oven was really important to McReynolds. Head Chef Cory Lazaldi perfected the sourdough recipe for a crust unlike any other. He is also the head chef of the new Rocklin location and assists McReynolds in other aspects of the restaurant.

McReynolds and her staff pull from the “sourdough mother” every morning to make fresh dough balls that are never frozen and never pressed by a machine. All crusts are hand-rolled making each one consistent in size, but unique by the hands that create them. “I just love the craft of making dough,” McReynolds said. “Anywhere you go they make a pretty decent pizza; anywhere I go I look at their pizza menus.” Of course there are the obvious classic places known for their pizza such as New York, Chicago, San Francisco and the most common, Italy. Once in Italy with her mother, McReynolds was inspired by what she says was one of the greatest pizzas she has ever sampled. Sitting in a restaurant in Tuscany, McReynolds ordered the chef ’s favorite pizza on the menu. What came out surprised her. They brought a pie with

prosciutto, onion, mushrooms, olive oil and a big pile of cold arugula tossed in lemon zest. She called it a salad on top of a pizza and quite honestly didn’t expect to be swept away by the masterpiece. “I tasted the pizza and that was one of the best pizzas I have ever had in my life,” McReynolds said. Now the same recipe can be found on her menu aptly named the Tuscany. The Stella, which has salami, Italian sausage, red onion, fresh mozzarella, gorgonzola and house-made red sauce, is another pizza inspired from her travels that has landed on her favorite’s list. Commonly, when she takes a pizza to go, it’s half Tuscany and half Stella. “I have customers who say they just got back from Italy and ‘your pizza is all that,’” she said. Bringing authentic and quality cuisine with a family-friendly atmosphere to Rocklin and Newcastle is of crucial importance to McReynolds and she has succeeded in doing so. The menu will remain consistent at both locations with eight to 10 local beers on tap and a few additions starting in Rocklin before being added to Newcastle. “We like to support local,” McReynolds said. “Always local; everyone is local.” Eventually, McReynolds hopes to incorporate cheeseboards, house-made pastas and other tasty “nibblies” as Chef Lazaldi calls them. They will also be roasting meats in the wood-fire oven to top pizzas with perfectly cooked pork, lamb, chicken and more. “He’ll be doing all sorts of fun things in the oven,” McReynolds said.

Pizzas out of the wood-fire oven are award worthy, but pizza is not the only menu item that has customers wanting more. The chicken wings are cooked in the same wood-burning fire and pairs well with the Caesar salad topped with house-made dressing. The excitement from Newcastle has spread to Rocklin. The new location is “a perfect recipe,” McReynolds said. “It’s the next step.” It was a move that she wasn’t anticipating, but the ideal location seemed to fall in her lap. In fact, it already had a wood-fire oven just waiting to be used again. “It wasn’t something I was really looking for,” McReynolds said. “I love to feed people. I truly do love when people appreciate and enjoy the pizza.” When customers ask for a little more Parmesan cheese sprinkled on top of their dishes, McReynolds calls it adding a little more love. 

lue Line Arts is more than just a gallery. Yes, it has several open rooms full of art — sculptures, paintings, drawings and, most recently, a mixed media show by Yale graduate Jim Piskoti — but it also has a full roster of new art education classes for young and old alike. Among the many ongoing and upcoming events are Art Night at the Blue, a monthly wine and art event, Beginning Painting, a six-week course for adult beginners, and Super Saturday Art Academy for kids between the ages of 5 and 10. “We’re putting a stronger focus on education,” said April Frost, arts education coordinator. “We want to reach more of the community.”

One of the ways Blue Line has done that is with their new course, Painting Together, a seven-week multi-generational art experience for all ages. Deidre Trudeau, known as Miss Dee by most of her students, teaches the Wednesday evening class in the back of the gallery, surrounded by art, both finished and in-progress. Her eight students are comprised of children,

parents and grandparents. During the first class, Miss Dee showed her students a canvassed example of what they will be striving for: Autumn aspens along a thin dirt trail. “You’ll get here,” she told them. “But for now we’re just practicing.” Among those practicing were Caitlin Tran and her grandfather Hiep Ha. They laughed quietly as they brushed

Blue Line reaches out to their community in ways both educational and philanthropic. Art Bra, an installation benefit for Placer Breast Cancer Foundation opened Oct. 13 and runs through Nov. 25. “It’s all art about bras,” said Exhibition Consultant Tony Natsoulas. “The different uses and interpretations, through sculptures, paintings and photographs.” All sales during the six-week show benefit the cancer foundation, Blue Line, and the artists themselves. Following Art Bra will be a show highlighting Placer County artists, and then an international showing of artists around the world. “We change shows every six weeks,” Natsoulas said. “It’s always something new and different.” 

“I

really didn’t have an interest in volunteering before because I would fall in love and wanted to adopt them all,” Monica Merritt said about helping out at the animal shelter. Since 2013, Merritt has been volunteering for Placer SPCA. The shelter houses numerous animals and the retired state programmer analyst has assisted in caring for a long list of dogs, cats, guinea pigs, hamsters, birds, chickens, baby goats, tea cup pigs, turtles, snakes and lizards. It all started when her granddaughter wanted to volunteer. She was not old enough, so Merritt agreed to do it with her as a team. After orientation and training classes, Merritt started walking dogs. She began fostering animals in 2014. Her first assignment was taking home five kittens. Willing to give more, she volunteers at Pet Food Express in the Roseville Fountains to help with that adoption program. She also does some office work and helps maintain a spread sheet which logs all the pets’ details including any health problems. Plus, Merritt was taught some photography skills and now takes photos of the adoptable animals which

are posted online. To get the best photo, she takes the pets out of the cages to let their real character shine.

“I can get a nice picture and get it out there,” Merritt said. “You can draw out their real personality.” Despite not initially wanting to help out, the Lincoln resident has become one of the shelter’s top volunteers. A “crazy cat woman” award was given to her for contributing 1,800 hours to the facility last year, Merritt said. Over time, Merritt estimates she has helped 200 to 300 animals find homes. Some have found their way into her own home. Before volunteering at the shelter, Merritt had just two pets. She now has nine: Two dogs, six cats and one bunny. The 68-year-old got her animal-loving roots where she grew up. It was a small town, College City. At the time, the town had a population of 65 and farmers would run cows through the street, she said. Merritt would help bottle feed lambs and had “all kinds of animals in my life.” “I’m just an animal person,” Merritt said. 

“W

ingstop is in the flavor business,” said district manager of Wingstop, Jimmy Moore. “We are not in the chicken business we are in the flavor business.” Wingstop’s 11 sauces and spices range goes from atomic hot to heat-less garlic Parmesan, Hawaiian and teriyaki. There is a little something for everyone. “I like the Louisiana rub,” Moore said. “I was born in Louisiana. I am used to that Cajun flavor.” The fast-casual restaurant was founded in 1994 by Antonio Swad in Texas and has become a successful franchise. The Roseville location off Sunrise Avenue opened on June 25 and is happily settling into its new shopping center. “I wouldn’t classify it as fast food because we cook everything to order; hot and fresh.” Moore said. “It would be more of casual sit-down.” What used to be the least desirable part of the chicken has become one of the most desired over the past few decades. Wingstop’s bone-in chicken wings take 17 minutes to cook and boneless takes about 13 minutes. The chicken is fresh and never frozen. “The bone-in is more popular,” Moore said. “(It’s) our classic.”

“You’d be amazed on how well our chicken just attracts people,” he said. “They have their favorite flavors. You get people really attached to it. They love it.” While wings are the most popular menu offering, there are many side dishes and dips that compliment the many flavors. The ranch and blue cheese sauces, and potato salad are all made in-house from scratch. Sides to pair with chicken include, for example: Veggie

sticks, coleslaw, baked beans, fries and rolls. The dishes are not easily replicated at home. The hand-cut fries are blanched beforehand and then topped with seasonings. And, don’t forget the sweet treat after the meal, Wingstop has a triple-chocolate chunk brownie. So far, the restaurant has had a pretty steady lunch rush, while majority of Wingstops have a busier dinner schedule.

However, football season has proven to be hectic time among all locations. “Our busiest day of the year is Super Bowl,” Moore said. “Every store in the country gears up for that day.” Customers order several weeks in advance large portions to take home and enjoy with the annual game. The most popular are family packs with up to 100 pieces. Settling in Roseville, Moore has become a member of the Chamber of Commerce. He said he appreciates the history as well as the town’s up-and-coming potential. “Roseville is a very nice and exciting little town,” Moore said. “We are here to stay. We are looking to grow in this area.” Wingstop is in the process of obtaining a liquor license, and will soon offer beer. “We just want to welcome everybody to come in and try us out,” Moore said.

Mandarin Glazed Ham

recipe

INGREDIENTS: ¼ cup packed dark brown sugar 2-3 sprigs of fresh rosemary Spiral cut ham (fully cooked and whatever size will fit in the crock pot) GLAZE

1 cup fresh squeezed mandarin juice ½ cup packed light brown sugar ½ cup apricot jelly ¼ cup dijon mustard 3 tablespoons apple cider vinegar 3 cloves of garlic, minced 1 inch knob of minced ginger DIRECTIONS: 1. Place a small saucepan over medium heat and melt the apricot jelly. 2. Once melted, add the remaining ingredients of the glaze into the sauce pan until simmering. Remove from heat. 3. Sprinkle the ¼ cup dark brown sugar onto the bottom of the crock pot. 4. Add the ham and then pour the glaze over the top and in each layer of the spirals. 5. Lastly, top with rosemary, cover with the lid of the crock pot and cook on low for 4 to 5 hours.

t may only be November, but with the holidays and all the hustle-and-bustle it seems these last few weeks of the year tend to breeze by in the blink of an eye. No one wants to waste a second slaving over a stove when the family is gathered around the fireplace sipping hot chocolate (yes, hot cocoa before dinner is totally acceptable during the holidays) or outside making large pillows of fallen leaves to jump into. A slow cooker or crock pot is a great way to ensure that a meal gets on the family dinner table without having to miss all the fun by being cooped up in the

kitchen. This month I have picked a holidayfriendly meal that can be made in the slow cooker with the local seasonal ingredient: mandarin. Sweet and savory hams are often a staple at the holiday table along with turkey and several other roasts. Why not switch it up this year with a local twist on a classic favorite? Mandarin season is a big deal in Placer County and what better way to show our appreciation for the hard work these farmers do all year-round than utilizing their harvests on our Thanksgiving tables this year?

The annual contest is back. Completed entry forms must be received by Nov, 9. There are three categories, individual/ family, professional (bakery) and company/organization, only eight entries will be accepted from each category. Entries are taken at a first come, first serve basis. Houses must be turned in by 4:30 p.m. Monday, Nov. 27. Gingerbread houses will be displayed Nov. 27 through Dec. 15 in the Civic Center lobby, 311 Vernon St., in Roseville. The winner, by community vote, will be announced on Dec. 4 on the city’s website. Voting begins in the evening of Nov. 27 and continues until Friday, Dec. 1.

The City’s Christmas Tree will be officially lit on the Square. Santa will also not be able to visit with children one on one during his neighborhood tour but his elves are stocking up on little treats for the crowd.
