ICE CREAM AND COOKIES: A COOL SUMMER TREAT

in Folsom

S

coop it, smoosh it, top it, love it — it’s as simple as that. Smoosh Ice Cream Factory is surely one of the coolest spots to visit in Folsom this summer. Smoosh Ice Cream Sandwich Factory starts with fresh cookies baked with natural dough with no preservatives and made with 100 percent grade A butter. Next, a scoop of all-natural, high-quality ice cream with no GMOs, hormones or artificial stabilizers is added and some of the selected topping is “smooshed” between two cookies. Lastly, the selected topping is sprinkled around the outside of the sandwich. With 20 flavors of ice cream, 14 different cookies and 25 toppings to choose from the possibilities are almost endless. “People like to have the ability to create their own unique sandwich,” Dylan Newberry said, owner and founder of Smoosh, which has a location right here in Folsom. For those who are overwhelmed or unsure of what combination to create, Smoosh offers 16 Signature Sandwiches. For those who are vegan, Smoosh serves two dairy free-flavors, white mint chip and cherry chocolate chip. There are also gluten-free cookie choices: Chocolate chip and ginger snap. Besides to-go frozen snacks, Smoosh offers two catering options: Take sandwiches to-go in a carry-out box or bring the Smoosh experience to your party. The Smoosh catering team will create sandwiches as the guests order. Smoosh catering includes four flavors of ice cream and several cookies and toppings. It has catered everything from birthday parties to high-profile events.

The two locations are only the beginning for this unique ice cream sandwich company. Smoosh is planning an upcoming celebration for its first anniversary. In addition to the Folsom and Rocklin locations, a third location is opening at 7th and K streets in Downtown Sacramento, near the Kings Arena. “I want people to walk out happier than they came in. Creating smiles, it’s our mission,” Newberry said. “Positive-energy people create positive-energy people.” ✶

TAKE TO THE LAKES The Folsom Lake area is host to many natural resources for water play including Folsom Lake, Lake Natoma and the American River. Just as with pools, if you’re going to swim in nature, it’s important to remember safety first. “Safety is the priority,” said Robert Goss, director of Folsom’s parks and recreation department. “That’s a key thing as people cool off this summer. Whether in a backyard pool, in a community pool, at Lake Natoma or Folsom Lake, kids need to learn how to swim.” Along with swimming, visitors can rent paddle boats, canoes and kayaks from local concessionaires. The Willow Creek and Negro Bar access areas have life-vest stations. “Be aware of where you are. The river is a neat place to be, but it’s a powerful, unpredictable entity,” Goss said. “Pay attention and be aware of your surroundings when swimming in a natural environment.” For further information on water recreation in Folsom visit folsom.ca.us. TEN FACTS ABOUT PEACHES 1. Peach origins: The fuzzy peach is actually a member of the rose family and originated in China. 2. Peaches on the Silk Road: The peach’s scientific name, prunus persica, is a direct reference to the fruit’s travels to Persia along the Silk Road. 3. Peach varieties: You can buy two main varieties of peaches — clingstone, in which the flesh sticks to the stone and freestone, in which the stone is easily separated from the flesh. 4. Peach colors: The peach can have

yellow or white flesh, which is sweeter and less acidic than its more traditional golden counterpart. 5. Top peach growers: China is the largest producer of peaches, followed by Italy. 6. Peach nutrition: A large peach has

fewer than 70 calories and contains three grams of fiber. It’s also a good source of vitamins A and C.

7. Biggest peach cobbler: “The world’s largest peach cobbler” is made every year in Georgia. That cobbler measures 11 feet by 5 feet. 8. “The Peach State”: That would be the nickname for Georgia. 9. Peach season: Peaches are best

from June to the end of August.

10. Peach ripeness: The flesh of a peach should have a slight give, but use your whole hand vs. fingertips to check since the fruit bruises so easily. Also, check for an even coloring of golden or creamy yellow.

“Local merchants like Karen’s Bakery will be our special guest with delicious baked goods full of peaches,” said Hall. “You can expect to taste wonderful flavors and varieties of peaches.” According to Hall, the Folsom Peach Festival is unique in the way that is has a vast variety of peaches to choose from, whether you’re buying, tasting or just learning. This is due to its location as California is ranked as the No. 1 peach grower in the nation. With the Folsom Peach Festival being in the heart of the golden state, the choices will be abundant. In addition to great tastes and bargains on fresh peaches,

In addition to the brew tasting, a variety of food trucks and food vendors will be on hand for the event along with the many breweries. Entertainment will include live music, making this an ideal event for “beer geeks,” as they are called by Tap Folsom, to mix and mingle with friends and fellow brew lovers. “The Folsom Chamber is proud to produce TAP Folsom, a premier craftbrew event in our own backyard! We are expanding the offerings this year with over 40 breweries along with food trucks and live entertainment. Make it a perfect Friday night and stay for fun after the event on Sutter Street,” said Joe Gagliardi, CEO president of the Folsom Chamber. “We use this event as a way to promote the wildly popular craft-beer scene and highlight local businesses that feature these brands. They are known across the country for their famous nine-patty burgers and now they have opened their doors in the heart of Folsom. The uncle-nephew duo Mohammad Sattar and Wasif Saddique opened the new WayBack Burgers and it is sure to please the hungriest of palates. Originally started as Jake’s Hamburgers in Delaware in 1991, the wildly popular burger restaurant started franchising out in 2009 to meet the demand all over the world. In 2014, the company changed the name to Wayback Burgers and said, “Our fun-filled dining experience belongs to everyone now, not just the Jakes of the world. From here on, we’re known simply as Wayback Burgers.” Sattar and Saddique decided to open a Folsom location of Wayback Burgers to bring a burger brand to town that was unlike others. “We wanted to introduce this brand to the Folsom community because it is really superior compared to competitors and we strongly believe that,” Sattar said, who is also a franchisee of El Pollo Loco and the Hampton Inn. Wayback’s menu is very versatile and there is something on the menu for everyone, Saddique said. “We have fresh beef, crispy chicken, breaded chicken, turkey, fish, veggie and even hotdogs,” he said. “We also have house-made chips, fries, onion rings, mac and cheese bites and chili. There is also a kids’ menu. We have a very large menu.” Sattar said the two more popular items on their menu are the double-bacon burger and cheesy burger. Each year, Wayback does a national competition called the Nine Burger Patty Contest where whoever eats the monstrous burger the fastest wins the grand prize of $3,000 and other rewards, Sattar said. Sattar said there is a Northern California woman who has won the contest for the past two years in a row. Saddique said since their soft opening in May, they have already sold seven nine-patty burgers and the youngest was a 14-year-old. Those who finish their burger receive a champion shirt. Saddique said they make a big deal out of the contest and those willing to give it a shot. CONTINUED ON NEXT PAGE

In addition to the burgers, sandwiches and various side options, Wayback also offers salads and milkshakes. “A lot of people in Folsom have not tasted the quality of a good milkshake,” Sattar said. “We have a hand-dipped milkshake made with 100 percent ice cream and we have gotten a lot of compliments on that.” Some of the flavors include vanilla, chocolate, mint Oreo, cookies ‘n’ cream and more. “The ice cream is a hard ice cream and we use two different machines to make it,” Saddique said. “We use fresh flavors to give it a nice taste and it is made with real milk too. Everyone will love it.” Sattar said they want to create a friendly atmosphere. “We treat our guests like family,” Saddique said. “We treat them like our relatives. We want to be a very welcoming and friendly place.” Also at Wayback Burgers, customers will be able to see their food being made behind the counter, so there are no secrets about their fresh meals. ✶

■ WINE COLUMN

Winery gives back This is quiet a unique partnership in establishing a winery, not only to produce great wine but also to give back to the community. The idea for Mount Saint Joseph Wines originated in January of 2015 during a party conversation between Peter Story and Matthew Spencer. The idea was simple — to beautify the Oblates’ property at Mount St. Joseph and provide income to the Oblates to support their seminary and youth service missions. That concept and that idea led to a “vineyard IF YOU WISH TO TASTE MOUNT team” of parishioners from SAINT JOSEPH WINES’ EXCEPTIONAL WINES AND MEET THEIR WINEMAKSaint Joseph Marello ER, UNWINED ON SUTTER STREET Catholic church in GranWILL BE HOSTING A TASTING OF ite Bay. By May, the team THEIR WINES 5:30 TO 8 P.M. JULY had transformed the idea 14 AT 915 SUTTER ST., FOLSOM into a business plan, the idea would soon become a reality. Mount Saint Joseph Wines was founded by Joseph Smock and Peter Story that summer and is dedicated to this mission: “Mount Saint Joseph Wines seeks to provide unique, extraordinary wines reminiscent of the legendary wines of Tuscany. We strive to make the fruit of the vine, the fruit of our passion - our wine - for the ultimate benefit and joy of: • their landlord, the Oblates of St. Joseph, on whose blessed property their vineyards will flourish • their customers who will come to appreciate our wines as the finest in the Sierra Foothills • their investors whose financial resources we will carefully steward In the spirit of St. Joseph Marello we will always seek to do the ordinary in an extraordinary way.” ✶

Folsom’s treasure, Sutter Street Theatre, can seemingly do anything, from classic comedies, full-cast Broadway musicals, gross-out farces and delightful family stories. And sometimes — not often enough, in my humble opinion — they tackle one of the great plays. This they’ve done by bringing us Thornton Wilder’s masterpiece, “Our Town,” playing through July 16. Most know that the play depicts life in a small town, Grover’s Corners New Hampshire, in the early 1900s. It is presented on a bare stage — here all black — with few props, the actions being mimed by the cast. The play frequently reminds us that it is a play as the main character, known only as the stage manager, narrating the story,

36 | FOLSOM LAKE ENTERTAINER

“

Good-bye, Good-bye world. Good-bye Grover’s Corners ... Mama and Papa. Good-bye to clocks ticking ... and Mama’s sunflowers; and food and coffee; and new-ironed dresses and hot baths ... and sleeping and waking up. Oh, Earth, you’re too wonderful for anybody to realize you.”

moving back and forward in the characters’ lives, speaks directly to the audience throughout. To pull this off, it demands actors who become the characters, making the audience believe in their lives as the stage manager tells their stories, showing life’s universal patterns, their daily lives, love and marriage and death. Director Allen Schmeltz has assembled a cast who draws us in completely. James Gilbreath is warm and compassionate, with frequent gentle humor, as the omniscient stage manager. The focus of the story is on George Gibbs (Daniel Putman), the son of the local doctor (Keith Casey) and his wife ( Jessica Plant), who falls in love with his next-door neighbor, Emily Webb (Lauren Tyner, who steals the show, positively glowing in the heart-breaking part. The two mothers selflessly, but unsentimentally manage their families. Doc Gibbs is overworked, but has a moving scene with George when he suggests that he be of more help to his mother. Rich Kirlin is perfect as Emily’s father, especially when he has an awkward talk to George on the morning of the wedding, suggesting afterward that there should be a custom where the father of the bride is never alone with the husband-to-be. His scene before the wedding, in which he gives Emily to George, wonderfully conveys a father’s love and feeling of loss. Maybe I’m being a spoiler when I reveal that the third act is about Emily’s death at 24 in childbirth. Joining the other recent dead in the cemetery, she decides, against their advice, to go back and re-live her 12th birthday. I defy anyone, whether you’ve seen the play before or not, to hold back tears as she learns that nobody realizes the beauty of life while they’re living it. She finally lets go, speaking the play’s most moving lines: “Good-bye, Goodbye world. Good-bye Grover’s Corners ... Mama and Papa. Good-bye to clocks ticking ... and Mama’s sunflowers; and food and coffee; and new-ironed dresses and hot baths ... and sleeping and waking up. Oh, Earth, you’re too wonderful for anybody to realize you.” Many reading this will have seen the play before. Never mind; if you love great theater you owe it to yourself to see this wonderful production of one of the American theater’s greatest works. ✶

Recently renovated, this two-story home on just over a half-acre in the Serrano Country Club gated community in El Dorado Hills will captivate you with its contemporary interior features that radiate both style and sophistication. Built in 1998 on a park-like setting with a welcoming front walk that leads to the entrance, this approximately 4,022-square-foot, four-bedroom, four-bath home also has a highly desired downstairs master suite. First noticed when entering are the new hardwood floors in the downstairs area. The formal dining room is to the left of the entrance foyer. To the right, through double doors, is a home office bathed in soft natural light through a wall of bay windows and a box-beam ceiling that gives the space a very comfortable feel. Located at 4081 Errante Drive in a quiet neighborhood with large trees, the home is priced at $1,278,000. “Its heart is the large and inviting great room that’s open to the kitchen and has soaring ceilings, a stone surround fireplace and custom, built-in shelving, making this an inviting and sophisticated space to host guests,” said Pat Seide, listing agent with Coldwell Banker Residential PRICE: $1,278,000 Brokerage in El WHERE:4081 ERRANTE DRIVE, EL DORADO Dorado Hills. On the upper level is a large and versatile bonus room for entertaining, plus three well-appointed guest rooms. The property has a three-car garage. There are two fireplaces, one in the great room with another on the backyard patio. “Enjoy the seasons and entertain friends and family in the lushly landscaped backyard surrounded by majestic mature trees that provide shade and color through the years,” Seide said. “Like a page out of Sunset magazine, the outdoor space features a covered patio, built-in barbecue station, wet bar and a magnificent fireplace that radiates warmth and beauty on cool nights,” she said. ✶

THE OLD WEST COMES ALIVE BY KAREN SPENCER | PHOTOS SPECIAL TO THE ENTERTAINER Summer is the time for lazy days, warm evenings, county fairs and carnivals. In rural communities throughout the nation, the Fair is the biggest event of the summer and it is no different for Amador County. Every summer at the end of July the small town of Plymouth comes alive with kids, livestock, carnival rides and contests for the Amador County Fair. This year the Fair is “Moovin’ and Groovin’” July 27-30. It’s apparent when you enter the gates of the fairgrounds that life in the fast lane must be left behind. Old west storefronts beckon you to shop, eat, or rest on the boardwalk with an ice cream cone. Shady trees and colorful flower-lined walkways invite a leisurely stroll through the displays of hand made quilts and jars of blue-ribbon preserves. The past continues to pull you through the intimate fairgrounds to visit the authentic Miwok Indian Village to try your hand at traditional crafts, and to the display of refurbished antique gas and steam engines chugging and churning along. Evenings bring concerts under the Sierra skies — and music wafts over the crowd from three stages. Discover country, rock, blues, or

Each evening Picnic Lawn will be filled for concerts by Cripple Creek Band on Thursday, The Spazmatics on Friday, Foreigner Unauthorized on Saturday and Clean Slate Band on Sunday. Kids will find plenty of activities and entertainment suited to youngsters. In fact they lead the way on opening day, with the annual Kids Parade, as they march down Main Street in Plymouth to the fairgrounds on Thursday where a free carnival ride awaits. Free and fun activities for children keep them happy for hours with old-fashioned contests, gold panning and a Kids area with puppet shows and a circus they can star in. The annual Wine Tasting, with more than 30 award-winning wineries, is a sell-out on Friday evening. Sample the best that Amador County has to offer so you can return to enjoy a leisurely trip to the wineries and a relaxed dinner in a fine restaurant. Microbrew tastings are another favorite during the Fair. On Sunday local restaurant chefs will compete in the Chef ’s Appetizer Challenge. Horsepower under the hood is featured in the arena on Friday with Hot Rod Truck and Tractor Pulls. The old west comes alive with CCPRA Professional Rodeo on Saturday pits cowboys against bulls and broncs, as well as the timed skill events of team roping, calf roping and steer wrestling. Even the vintage tractors fire up and parade through the fairgrounds each day. One of Amador County’s favorite events is the annual Destruction Derby. Folks buy their tickets and line up early for this mud-flinging, crash ‘em, smash ‘em event on Sunday evening. Local tradition includes a mud-bath for the Miss Amador County queen and her court. 1850 WINE CELLARS

A SUTTER CREEK SECRET BY MICHELE SMITH PHOTOS ARE SPECIAL TO THE ENTERTAINER Why the location, would be a first question visitors ask. Originally from the central coast, winemaker Mica Raas started his first year in 2007, and was originally working in Santa Cruz. The owner found Raas and found the talented winemaker based on Central Coast wines. He is an educated winemaker from Berkley focusing on a mix of all varietals from Northern California. With a geologist degree focusing on micro-climate, Mica Raas did a study on cost of fruit, and determined the return on investment best in foothills. He then built a 16,000-foot winery in Diamond Springs with the only goal of making wine. This winemaker has HOURS: 11 A.M.-5 P.M. a reputation of producing the best grapes WEDNESDAY-SUNDAY himself. While the tasting room is in SutWHERE: 3 RANDOLPH ST., SUTTER CREEK ter Creek — the Diamond Creek harvest INFORMATION: 1850WINECELLARS.COM location does not have the 1850 square foot facility, and there is clearly more a draw for visitors in the Sutter Creek urban location. What are the wine tasting highlights? The 1850 made estate grapes are representative of El Dorado Hills, Amador and local county fruit. Chardonnay is for example, is predominately in the central coast, yet is offered on location. The Amador Zinfandel from Shenandoah Valley, is a field variety and wonderful fruit-forward component for 1850 Wine Cellars. Coat to Cruise is a Blanc white and grapes are from Perry Creek. The winery uses ACACAIN barrels which are a porous, one-time use barrels without tannins or oak overtones. These barrels come with a cost at $800 apiece. The owner has 50 acres in El Dorado Hills focused on Rhone varietals and plan to do 14 Rhone varietals this upcoming harvest, one known as Rhone Wolf — with more to come. An event not to be missed is the upcoming Red White and Blues complete with live music, a red-and-white package, combined with significant wine package discounts. The winery is currently being trying to do the Randolph, consisting of a roasted pig, wine tasting, and the street of Sutter Creek will literally be a block party. The winery is owned by former restaurant owners and will be serving food pairings to accompany the great wines. ✶

■ AMADOR WINE

AVIO WINERY

A LITTLE OFF THE BEATEN PATH, BUT A RARE FIND IN AMADOR COUNTY BY MICHELE SMITH PHOTOS ARE SPECIAL TO THE ENTERTAINER Adam Stone, Assistant General Manager at Avio Vineyards shares some very interesting insights about this beautiful vineyard, that is a worthy stop when visiting Amador wine country. What can a wine taster expect when visiting this stunning vineyard? One of the winery tasting highlights is the Cab Franc without question. A Cab Franc is different in this area compared to what people already create in the region. Most wine tasters tend to gravitate to wines what they are knowledgeable about. For example, Cabernet Sauvignon versus Cab Franc. AVIO’s signature wine is maximus — a super Tuscan wine and southern California varietal that mix well. This wine speaks towards the future that is post-past. Visitors can also expect an abundance of Sangiovese and Pinot Grigio — one of the only estate wineries offering HOURS: 11 A.M. -5 P.M. THURSDAY-SUNDAY this varietal in Amador County. WHERE:14520 RIDGE ROAD IN SUTTER CREEK CONTACT: AVIOWINES.COM With our extreme drought in past years and excessive rains, visitors to the area can expect an early harvest. Be sure to keep an eye on the event calendar to attend any upcoming harvest events. Winemakers this year certainly need to be on their toes, with this early timing (i.e. picking grapes too early versus picking too late), according to Adam Stone. Avio Vineyards offers one of the most beautiful wedding spots in the Sierra foothills and a quiet spot as well. The location can accompany 150 guests for a wedding. The property is more than 70 acres with 30 acres planted. The winery was inspired to be built on 9-11 by owners Stefano and Lisa Watson, when they had a “what’s next” concept. Like most winemakers, Adam Stone loves great wine. This is one of the most exciting positions he has ever had, as not only being hands-on during harvest, but this is the only job in the business where Adam had the opportunity to ever to see the actual product produced. The winery is 100 percent estate grown, and boasts world-class views. Avio Vineyards also is launching a new wine club — stay tuned for this soon. Membership is limited. Avio Vineyards yields 1,400 cases per year. According to Matt Stone, assistant general manager, “inspired” is his description of Amador County. “Amador is one of the most intimate, peaceful, beautiful settings. After working in the wine industry for several years, I found the opportunity to learn from the history of long-term winemakers, versus my passion for the chance to raise the bar, and improve the bar. Avio Vineyards is truly about the wine and the wine tasting experience. I look forward to educating our patrons on our unique wines,” he said. ✶

ROARING CAMP GOLD

One of Amador County’s best kept secrets is the family-owned Roaring Camp! Something special in the way of family recreation. An old goldmining camp on the Mokelumne River. In the past, it was accessibly only by horseback. Roaring Camp was once a camp for Forty Niners, but since it was so

inaccessible, most of the gold still remains. Visitors can see our operating gold mine and can mine their own gold

falls and natural rock formations forty feet high. There is also a quiet, secluded “swimming hole” with rocks of varying sizes, ideal for diving by those who dare! Dogs are welcome at Roaring Camp! The fishing is excellent! The entire camping resort creates the most delightful summer magic that you could imagine. Located along the Mokelumne River in Pine Grove, this unique resort is a favorite amongst locals, and out of town guests who’ve been coming for years! Call to make reservations. Open from May to September with tent and cabin options, BBQ meals, tours and swimming! Call: 209 296-4100 www.facebook.com/roaringcampgold Email: info@roaringcampgold.com www.roaringcampgold.com

■ REAL ESTATE

BOOK A STAY-CATION IN FOLSOM

BY PAT QUAN

It’s time to relax. July is the most popular month for vacations. So where do you like to go? Hawaii? D.C.? Santa Cruz? lake Tahoe? wherever family is? folsom? Yes, folsom! folsom makes a great place to do a “stay-cation.” one reader suggested that I write about a stay-cation trip in Folsom. So pack up the bicycle and let’s go. Day 1: Get up early and go for a morning kayak ride. The water is so flat and peaceful; it’s one of my favorite places to relax. After a nice paddle, grab a tasty lunch from Jack’s Urban Eats before strolling around Dimple Records to treasure hunt through the new and used music, videos or books from their extensive selection. Put on those Beats headphones and take the kids to Livermore Park to burn off some energy in the mini water park or playing sand volleyball. After a brief rest, get ready for a dinner and a show. The Palladio has a wonderful movie theater with unbelievably comfortable seats. for me, I almost don’t even care what movie is playing because two hours in those amazing seats is worth the price of admission alone. After dinner at Chicago Fire and dessert at Pinkberry, you’ll be relaxed in that movie theater in no time. Then head back to the Hampton Inn. Day 2: Sleep in and go out for breakfast. Try out the waffle Experience and their locally sourced natural and organic ingredients. Then, it’s time to shop till you drop. Start out in Historic folsom and visit their unique shops to find just the right item while munching on chocolate from Snooks Chocolate Factory. Stop by Art of Cigars and learn how to roll a perfect cigar. Let your Picasso out at The Painted Cork and enjoy a glass of wine while you create that perfect masterpiece. Need to express your athletic side? The folsom Aquatic Center at Lembi Park has it all — diving boards, lap lanes and a wonderful play area sure to entertain. By now, you’re probably pretty worn out — so take a break and try your favorite style of restaurant. Whether it’s Japanese, a steakhouse, Thai,

Italian — folsom has it. Just be sure you have time to catch the free summer concert series show. If you’re lucky, the performer Swift Country will be doing their tribute to Taylor Swift. End the night sipping some of the 22 beers on tap at the Folsom Tap House. Day 3: reserved for the most fun of all. A bike ride at the lake or on the miles of folsom trails? A golf outing? A morning run? well maybe, but after a quick lunch at fishology, then it’s time to go look at open houses. Now that is fun. Real estate is the favorite pastime for wild, fun-loving and top-producing Realtors like me. But you better look fast. The homes do not last long on the market. In folsom, at the time of this writing, 133 homes are on the market for sale. The average home is $659,000. But 160 homes are pending. Again, more homes are pending than are for sale. Note that the average home that is pending is much less at $560,000. In Folsom, 362 homes have sold in 2017. That average sold price is just over $503,000 and sold in an average of 21 days at $256 per square foot. So it looks like the higher priced homes on the market are not selling as quickly and cause the average price for a home for sale to rise. Is that true? well there are 21 homes for sale that are over $900,000, only nine are pending and just 11 have sold in this price range in 2017. The sold homes take an average of 51 days to sell and the active homes have been on the market for even longer. So these homes do not sell nearly as fast as the lower priced homes and there is much more inventory available as compared to number pending or sold. I talk with sellers and buyers about these topics, and more, all the time. With proper planning and a good Realtor (luckily, I know a really good one), you can smoothly get to your next stage in life. COOKING WITH SUMMER VEGETABLES

VEGAN CORN CHOWDER

While soup is often referred to as a meal that assists in warming the body when chilly, soup is not just for the colder seasons of fall and winter. In fact some of the best veggies can only be found ripe during the hot days of summer. Veggies such as corn, zucchini, yellow squash, bell peppers, carrots, and potatoes are at their peak of perfection when it is hottest outside. Nothing says summer soup to me like a warm, tasty bowl of corn chowder. Probably wouldn’t be so bad cold either. Utilize the summer veggies and make a feast for the eyes and your tummy. 2 cans of GMO-free organic sweet corn 1 teaspoon and 1 tablespoon coconut oil, divided Pink Himalayan salt and fresh ground pepper to taste 4 cups of whole fat coconut milk 2 cups vegetable broth 1 yellow onion diced 1 red bell pepper diced 1 green bell pepper diced 1 zucchini diced 1 jalapeño diced with seeds removed 1 yellow squash diced

2 large rainbow carrots of any given color finely chopped 2 cups cut russet potatoes cut into large chunks 1 pinch of thyme and chipotle for flavor

Preheat oven to 425 F. Drain corn from cans and rinse. Line a baking sheet with tin foil. Pat dry kernels with a paper towel and arrange on a baking sheet. Coat kernels with 1 teaspoon coconut oil and salt and pepper. Roast for 15 minutes or until lightly caramelized. In a large stock pot combine the coconut milk and 1 cup vegetable broth. Bring to a boil and then reduce to a simmer for 20 minutes. In a skillet, melt the remaining coconut oil and add onions, zucchini, squash and peppers over high-heat. Sautee until soft (only a few minutes.) Add the cut potatoes and carrots and cook for a 5 minutes. Season with salt, pepper, thyme and chipotle. Add sautéed veggies to the milk and broth mixture. Add remaining cup of vegetable broth and let simmer until the potatoes are soft with a fork. Serve into bowls with a side of toast and enjoy! CONTINUED ON NEXT PAGE

VEGGIE SPRING ROLLS Sometimes raw is the best way to eat what nature has so graciously provided; Plain and simple. Enjoy a taste of Thai with these at home spring rolls and spicy dipping sauce. Who said eating vegetables was hard? Serves 4-6 Ingredients for the filling: ½ cucumber 1 red bell pepper 1 small head of butter lettuce 1 medium carrot ½ zucchini 1 avocado 1 bunch of basil 1 teaspoon of sesame seeds

8 rice paper sheets For the dipping sauce: ¼ cup coconut aminos 1 tablespoon sri racha, add more for more spice 1 tablespoon sesame oil Soak the rice paper sheets in warm water for approximately 30 seconds or until soft. It is important to do only one sheet at a time. Lay the sheet out on a clean surface and arrange a small amount of each ingredient in the center. Arrange the veggies in whatever order or combination desired. Fold the sides over the and gently roll like a burrito. Serve with the dipping sauce. enjoy! *All vegetables should be thinly sliced

SUMMER VEGGIE QUICHE Now this is a dish that feels just like summer to me. Brunch is best when it is held outside with family and friends surrounded with wonderful things to eat. Quiche is always on my list of must-haves for a brunch. The possibilities are endless … but this one is my favorite. For the crust: 1 ½ cups all-purpose flour gluten free ½ teaspoon pink salt ½ teaspoon oregano 1 teaspoon dried basil ½ teaspoon black pepper ½ cup unsalted butter 6 tablespoon ice water For the Filling: 1 yellow onion

1 teaspoon dried basil and oregano Pink salt and cracked pepper to taste 2 cups of sliced zucchini 1 head of broccoli chopped 6 eggs ½ cup of unsweetened almond milk ½ pound of bacon chopped Topped with ½ cup cheddar cheese Preheat oven to 400 F. In a mixer combine flour, salt, oregano, basil, 1/2 pepper until well incorporated. Add the cubes of chilled butter until dough is broken into small clumps. Add ice water until dough sticks together and knead only a little. Chill dough for 30 minutes. On the stove, sauté chopped bacon pieces until

almost crispy. Use the bacon grease to then sauté the chopped onion for 4 minutes. Add seasonings, zucchini, and broccoli. Cook until tender. Pull pastry out of the fridge and press into a greased quiche dish. Whisk together eggs and milk in a separate bowl and set aside. Scoop veggies onto the pastry dish and add spinach. Pour eggs and milk over it all and gently move the mixture until every corner is filled. Bake on the lowest rack for 45 minutes or until toothpick comes out clean from the center. Too keep pastry edges from burning cover with tinfoil for the last 15 minutes. Let sit for 10 minutes before serving. Serve and enjoy!

8 p.m. Aug. 19 For more than two decades, Gin Blossoms have defined the sound of jangle pop. Gin Blossoms soon unfurled a chain of crossover favorites spanning five different formats, from “Hey Jealousy” and “Until I fall Away” to “follow You Down” and the grammy-nominated “As Long As It Matters,” earning the band sales in excess of 10 million in the U.S. alone.

Born in Cologne, Germany, to a Chinese-German father and a Hungarian mother, he began playing guitar at 11, and traveled extensively through Europe and Asia intent on fully absorbing each musical tradition he encountered. After pursuing his rock ‘n’ roll dreams first in his native germany and then in Boston, he abandoned the frustrations of the East Coast and settled in Santa Fe, N.M.
