Fat’s Asia Bistro popular with prominent and everyday diners

By Rachel Zirin | Photos by Bill Sullivan Started in 1939 by Frank Fat, the Fat family has been serving the Greater Sacramento Area with quality Cantonese Chinese food at Fat’s Asia Bistro.

Seventy-eight years ago, when Frank opened Frank Fat’s, the restaurant located in Downtown Sacramento was known for being a political hangout. Notable politicians spent their lunch hours there as well as people from all walks of life.

Frank’s son Jerry Fat, current president and CEO of the Fat Family Restaurant Group, said his father started the restaurant to serve quality Chinese food to everyone, no matter who they were. He treated everyone equally as if they were all important.

Jerry talked about how his father was a strong believer in education and all of his children went to college.

“None of us were going to come back to the restaurant business. My father didn’t even push us to come back,” Jerry said.

“One sibling is a dentist, another is an attorney, and I have a degree in computer science.”

In the early ‘70s, one of Jerry’s brothers went back to the family business and to expand what his father created, Jerry said.

“I went back too, and I knew that if the expansion didn’t work out, I could always go back into the corporate world,” he said. “But it ended up working out.”

In 2000, the Fat family opened their Roseville location and in 2005, the Folsom location opened, Fat’s Asia Bistro.

“Folsom was a very logical location to put one of our restaurants,” Jerry said. “At the time, Folsom was a growing area.

age of quality family restaurants in the area.”

The Fat family is a household name in the Sacramento area for having high-quality Chinese food. Not only does the family restaurant have a full menu of Chinese items, but 20 percent of the menu consists of different Asian cuisines including Thai, Filipino, Vietnamese and more.

Among many delicious and popular items on the restaurant’s menu, the honey walnut prawns is at the top and is served at all of the Fat’s restaurants, Jerry said.

Jerry mentioned that many customers have asked for items on the Frank fat’s menu to be incorporated into other menus, but the family has been against it, except for the banana crème pie for dessert.

Jerry said his favorite thing about the family business is that all his siblings grew up working in the business.

“We started washing dishes, bussing, waiting tables — we worked our way up,” he said.

“I also enjoy seeing generations of families who keep coming in.

I like that we did a good enough job that families are continuing to bring in many generations of their families.” ✶

“People love the cake and it seemed like a good fit for me,” Brown said. “I looked online to see if there were any open territories in the area and I was shocked to see that Folsom was open. For me, Folsom is the one area that I would have wanted in the Greater Sacramento Area. It is such a great town.”

After a two-year process of getting approved by the corporate business, Brown quit her career and opened a little store.

“We have a very warm and inviting atmosphere. It is like being invited into someone’s home. We want everyone to feel super welcome,” she said. “We don’t just stand behind the counter and order you a cake; we come out give a little tour, everyone gets to try a free sample of the day, and we help you find what you are looking for.”

Brown said a lot of the time customers will come in with an event, but have no idea what to get for it. She said they are more like cake consultants. They will ask the number of guests, colors, themes and what type of event to help every customer get exactly what they want and need.

Nothing Bundt Cakes has nine standard flavors — red velvet, chocolate chocolate chip, lemon, white chocolate raspberry, carrot, white white chocolate, cinnamon swirl and pecan praline.

Each cake is made in-house and comes out flavorful and moist.

“We always do a seasonal flavor,” she said. “During the holidays, we have pumpkin spice and during Christmas, we had peppermint chocolate. It was absolutely fabulous.”

In May, the local cake shop showcased their seasonal strawberries and crème cake. In June, the flavor to look out for is lemon raspberry.

Brown said since she opened, the customer and community response has been great.

“Everyone has been thrilled that we are here. A lot of customers said they have been waiting for a Nothing Bundt Cakes to open in the area, so that is exciting,” she said.

The Folsom location now carries a Kate Spade line along with their many gifts — all relating to cake.

“You can come in here and get a cake, balloons, serving packages, cards and gifts,” Brown said. “We want to be a one-stop-shop for unique items for that special occasion you might be shopping for.” ✶ 16 | Folsom Lake Entertainer

By Rachel Zirin | Photos by Bill Sullivan Open in April of last year, the Sutter Street Taqueria has been booming with business and community love.

Owners Rosario Rodriguez and Paul Hayes had dreamed of opening a restaurant and after two years of renovations, licensing and hard work, their dream came to life.

“One day in 2013, Paul and I were sitting on a bench on Sutter Street and we said, ‘Gosh, it would be great to bring a San Francisco-style taqueria to Folsom,’ because we have gone to so many places and hadn’t found the tacos and burritos we really like,” Rodriquez said. “It wasn’t until we talked to my parents, who are our investors, and they said, ‘Go for it!’”

“I am fully supporting my wife,” Hayes said. “It is her dream to have a restaurant.”

The restaurant’s specialties are tacos and burritos, but since opening, they have added al pastor, shrimp and fish options, nachos and different drink options.

The taqueria’s more popular item on the simple menu is the chile verde carnitas super burritos.

The local couple said they are two big foodies and they love trying all kinds of food.

Rodriguez said. “Carnitas is the one kind of meat that people really notice the quality and the way that it’s made.”

Another addition since the opening of the local business is their breakfast menu, which consists of breakfast burritos — huge breakfast burritos.

“Our breakfast is very popular on the weekends,” she said. “They are huge and they are really good.”

Not only is the food great, but so are the employees. Rodriguez said they take care of their employees and the integrity of the kitchen is their top priority. Their crew really lives up to it, she said.

“Having [Salvador] and Mari on my team has been the biggest blessing,” Rodriguez said. “They are hard workers and the customers are always their No. 20 | Folsom Lake Entertainer

1 priority. Having them on my team has allowed me to do other things. They take really good care of this business. It’s really unique to have people like them on my team.”

Not too long ago, the taqueria started staying open until 2 a.m. on Fridays and Saturdays, and Rodriguez said she has gotten some interesting feedback from it.

“People say, ‘Thank you for being open,’ and I thought that is really odd because I should be the one thanking them for coming in and patronizing the business. I think we have been really good for the community.”

Recently, the taqueria was named emerging business of the year by the Folsom Chamber of Commerce and Rodriguez said that recognition was incredible.

“I felt very blessed to get that award because we work so hard, and it feels really good to be a part of the community,” She said. “I get up every day and think, ‘Thank you Lord for giving me a job that I really love.’”

On one side of the restaurant wall there is a mural, and it is breathtaking.

“The mural is a representation of my life in many ways,” Rodriguez said. “I come from immigrant parents that worked really hard in this country. It starts off in their hometown in Tarimoro, Guanajuato — a small town in Mexico. We used to go there every year as kids so I feel very connected to that place. San Francisco is my hometown and I love it dearly. The green house is where I grew up. Then there is Folsom, which is where we are today.”

Rodriquez said reflecting back on the last year, it has been a good one.

“The last year has been the most amazing year. We have made friendships that have rolled over into our personal lives,” she said. “I look back at the vision I had of this place in 2013 and I think about where we are today, and we are so far ahead of where I thought we would be. I feel we are going to be here a really long time.” ✶ June 2017 | 21

Vendors participating include Orange Theory Fitness, Farm Fresh to You, Folsom Telegraph, Kaia Fit and more.

“This is an event we haven’t seen in this area — an event with the combination of fitness and wine tasting,” Frick said.

“We are expecting more than 1,500 people to participate and they can look forward to getting some fitness in and then relaxing and hanging out with some wine at the end.”

One thing Frick wanted people interested in the event to keep in mind is that the runs are timed. He said this is great for those who are keeping track of how fast their miles are and at the end of the event there will be award winners for each of the runs.

With the purchase of any ticket, guests will receive a race bib, a T-shirt, a wine glass, three tasting coupons and a medal.

Proceeds from the event will benefit nonprofits that target human trafficking such as Blue Heart International and 3Strands Global Foundation.

Entertainment for the event will be supplied by DJ Anthony Avery with A & A Music Events.

“I am looking forward to bringing to community together and making it a fitness, fun and family-friendly event,” Frick said. ✶

By Bill sullivan | Photos are courtesy Summer is here and it’s almost that time of year to throw on your patriotic western apparel and giddy up to enjoy an evening of western fanfare and fun in one of California’s longest running events.

The Folsom Pro Rodeo has been entertaining spectators from Folsom and afar in the popular Dan Russell Arena at Rodeo park for more than 50 years now.

Celebrating its 57th year, this year’s Folsom Pro Rodeo will offer a high dose of non-stop action to thrill all ages. From patriotic tributes to bucking bulls and mutton busting. All of which is capped off with fireworks each night on July 1, 2 and 3. In addition to the traditional rodeo entertainment, this year’s pro rodeo event will feature high-flying motocross, live music and much anticipated appearances by world champion bull jumpers.

From the time the gates open each night, this event is a celebration of America as fans will struggle to stay dry-eyed with patriotic fanfare in celebration of Independence Day. The patriotism continues from beginning to end, right down to the colorful fireworks that will light up the each night. The Flying Cowboys, motocross experts, will test the limit of the arena by flying as high as possible with flips and turns.

Traditional rodeo events which will churn up the small, but action-packed arena include bull riding, bronc riding, barrel racing and more. Five-and 6-year-old cowboys and cowgirls will do their best to cling on woolly sheep in the mutton busting competition. When it comes to viewing the Rodeo at Dan Russell Arena, there isn’t a bad seat in the house as fans are up close to the action with nearly every ticket.

For the second straight year, professional bull jumping returns to the rodeo. Frenchmen Manu Lataste and Cristian Serra-Gonzales will show off their athletic talent during the Folsom Pro Rodeo. Bull Jumping is a sport directly linked to southwestern French tradition called “Course Landaise.” Four-yearold Mexican fighting bulls are used for bull jumping.

During the five-minute act, there will be more than 15 jumps and maneuvers. Lataste is a former world champion in the sport and Gonzales is a professional bull jumper who has competed in Spain for more than 10 years.

The gates open at 6 p.m. Rodeo action begins at 7:30 p.m. to give fans time to find their seats and enjoy the food and beverages found in the Cool Down Corral before all the action they don’t want to miss begins. Just as the fireworks conclude each night

the party continues as Mike’s Golden Spike Saloon will heat up with dance music nightly starting at 9:45.

Reserved rodeo tickets are $26.50. General admission is $21.50 for adults or $15.50 for children (12 and under) and seniors (over 62). Family value “buckaroo” packages are available online which includes four general admission tickets, four sodas, four hotdogs for $65 ($96 value). Folsom Family Round Up will kick off rodeo week

By Bill sullivan | Photos are courtesy It’s being bannered at the Folsom Family Round Up and everyone is invited to come out and enjoy the shade at the Folsom Lions City Park on Friday night, June 30 for this free event featuring up-close and personal fun with the stars of the Folsom Pro Rodeo, both two-legged and four.

After its successful debut last year to replace the former cattle drive through town, this event will give families the opportunity to rub elbows with many of the rodeo starts and take advantage of photo opportunities.

One can mingle with professional bull jumpers, the rodeo queens, motocross stars and more.

“This event gives families the opportunity to enjoy live music, get autographs from the cowboys, get up close and personal with rodeo animal stars,” said Joe Gagliardi, Folsom Chamber CEO. From colored ribbons in the hair of little girls attending their first fair to the blue ribbons donning the many award-winning projects on display and a spectacular carnival, there is no doubt that the 2017 Ribbons and Rides El Dorado County Fair will be a fair to remember.

This year’s El Dorado County Fair will surely provide entertainment for all ages that is undoubtedly of blue-ribbon caliber. Highlights of the talent-heavy music schedule include a variety of genres and top names in the region performing them.

Beginning on Thursday, June 15, fairgoers will enjoy a Tribute to Woodstock by the well-known regional band Keep on Trucking on the Wells Fargo Stage just after 5 p.m. On this first evening of the fair, the main stage is populated by the Miss Teen El Dorado and El Dorado Rose Pageants that are always delightful events to the community.

On Friday night look for the rock and blues band Dossi on the Rocks performing along with the originals, blues and R&B of the Ranell Carpenter Band, performing on both Friday and Saturday nights. Hipper than Hip will add to the marquee Friday night with their unique funs, soul and rock sounds along with Locked and Loaded County.

On Saturday night, fairgoers can rock out to Doobie Rock, a tribute to the Doobie Brothers. On the same night, Pat Benatar and Joan Jett are saluted with the well-known Jett Benatar cover band. Other acts throughout the four days include the rocking nerds known as The Spazmatics, Steel Rose, Auto Reverse and more.

Aside from the exciting music venues, the El Dorado County Fair offers all of the traditional fare that

comes with a county fair in a community well known for its tourism, agriculture and farm life. The popular 4-H Junior Livestock Auction will give local youth the opportunity to shine and display their yearlong work in raising prize cattle, sheep and more.

Action in the arena will include the Humpz and Hornz Bullriding on Friday night followed by the Hometown Speedway Challenge on Saturday night.

This event features locals completion on ATVs on an exciting obstacle course.

On Sunday, which is Fathers Day, the most famous obstacle course is that of the John M. Studebaker Wheelbarrow Races, a Father’s Day tradition at the El Dorado County Fair. Competitors of all ages take part in this El Dorado County tradition that packs the main grandstands year after year. It’s a competition that not only offers hardware and bragging rights, but awards big cash winnings as well to its annual champions.

While ribbons are fair tradition carnival rides are just as much a part of it all. Paul Maurer Shows promises to bring plenty of thrills. Among the attractions will be state of the art high-flying machines for the daring riders along with traditional rides from Ferris wheels to classic children’s rides.

The 2017 El Dorado County Fair has attractions and exhibits for everyone. Along with the sights and sounds, don’t forget about the smells and tastes that a old-fashioned fair brings as well from gourmet barbecue, funnel cakes and the all-American corn dogs that are traditionally delicious.

“This time of year, is the most exciting time of year for our entire county,” added Gray. “The energy is high and positive. If fair is not in your blood yet, it needs to be.

Concerts in Folsom Lions Park every Friday night

The Folsom City Lions Park presents its annual Concert in the Park series beginning June 5 with the Rolling Heads classic rock band. This series concludes on July 31 with Todd Morgan and the Emblems. The sights and sounds of the 16th century return to scenic South Lake Tahoe this month in one of the area’s most scenic venues. It all takes place at South Lake Tahoe’s Camp Richardson as the Valhalla Renaissance Faire celebrates its 24th year June 10-11 at Camp Richardson.

Heartland rocker bound for nearby Ironstone Vineyards

By Bill Sullivan | photos are special to the Entertainer Back in 1985, John Mellencamp debuted his hit song “Small Town” that is still popular today. Twenty-three years later, the veteran rocker is returning to small towns across the country with a brand-new tour that will set up camp for one single night, just a short drive south of Folsom.

Mellencamp’s “Sad Clowns and Hillbillies” tour will be performing beneath the stars at the Ironstone Vineyards amphitheater in Murphys on Saturday, June 17. He’s being joined on the much-anticipated road trip by Carlene Carter and Emmylou Harris as well as the folk-pop duo of Lily and Madeline.

The return to the road comes with the launch of Mellencamp’s 23rd album, “Sad Clowns and Hillbillies.” On what could likely be his final live tour, you won’t find Mellencamp performing in many oversized arenas or festivals on this trip. The 65-year-old Grammy-winning artist is taking back to the stage in smaller venues across the country to get up close to his dedicated fans in theaters and amphitheaters that seat 3,000 to 20,000 people.

“When you’re playing in front of 20,000 people, you know that guy in the back row is not enjoying it,” said Mellencamp. “I decided to play places where I can drag the audience along with me, play new songs, do what I want to do and not make this about me being some big rock star. If your motivation is the money, it’s the wrong motivation.”

In 1976 Mellencamp began performing professionally as Johnny Cougar and John Cougar. The name came from the suggestion of his manager at the time, something that the Bloomington Indiana resident wasn’t too crazy about.

He took his native German name back in 1983 when he was billed as John Cougar Mellencamp A few years later he dropped the Cougar reference all together and explained the change publicly to his fans in 2005.

“That name was put on me by some manager,” he said. “I went to New York and everybody said, ‘You sound like a hillbilly.”

I said, ‘Well, I am.’ So that’s where he came up with the name, I was totally unaware of it until it showed up on the album jacket.”

Since early in his career, Mellencamp has been known for his self-branded heartland rock that is backed by traditional instrumentation. His songs have been written in a way that many can relate to them. Whether they are about growing up in a small town, young love or life in America’s heartland, it’s hard to find a Mellencamp song that you can’t relate to, or at least know of someone that can relate to one of them.

For decades, many have assumed that all of Mellencamp’s songs are based on his own life. However, here’s a little “ditty” about that; Although Mellencamp did indeed grow up in a small town and still lives in a small town, let’s face it, his job did provide plenty of opportunity. “Jack and Diane” was a song about young love in the ‘70s, however, contrary to assumptions, the song was not truly written about him, along with most of his music.

“The idea that I’m writing about myself is a fallacy,” he says.

“First, I’m not that interesting. As a matter of fact, I get kind of annoyed by that. It’s a song. Do you really think that Tennessee Williams was Stanley Kowalksi? He wasn’t. It’s a play. It’s meant to entertain by using reality and observation and thought and imagination.”

Mellencamp is known best for his top 10 singles that became so popular in the ‘80s from three different albums. The famed hits included; “Hurts So Good,” “Jack & Diane,” “Crumblin’ Down,” “Pink Houses,” “Lonely Ol’ Night,” “Small Town,” “R.O.C.K. in the U.S.A.,” “Paper in Fire,” and “Cherry Bomb.”

Many of Mellencamp’s earlier hits came from his appreciation for the small towns populated by blue collar workers deep in America’s heartland, combined with his rebellious spirit. While age has tamed the 1983 Grammy winner a bit, he is still packed full of opinions, honest proclamations and he isn’t afraid to say it how it is. Today, you don’t want to get John Mellencamp started on politics or you’re going to be listening a while.

His newest album is a collaboration of music that still tells a simple story but in a much deeper, slightly darker fashion. The album was originally set out to be a gospel theme when he began collaborating with Carter after they performed together in 2015.

The plan for a gospel genre went south when the two couldn’t agree on a united repertoire, but the 13-track album has plenty of sin, salvation and reality that make it unique and packed with the familiar instruments that make up the Mellencamp sound.

While Mellencamp’s tour will focus on his new album, it promises to bring many of the old favorites to the stage as well. If anyone strives to remember his roots, it’s Mellencamp so it won’t be unexpected if “Jack and Diane” and tales of a “Small Town” make their appearance to stage at Iron Stone on June 17.

Even at age 65, Mellencamp continues to be a working man.

While he may not leave his ranch of more than 80-acres for months at a time, he keeps busy in the recording studio on site and has found his love for painting.

“I’m a very active, type A type of guy,” he says. “If a day goes by and I don’t make something, I feel guilty. I exercise every day. If I don’t paint or I don’t write a song or do a performance, then I’m being lazy and I need to get to work.” ✶

Discover Canadian wines Prior to settling in the United States, owning and operating a wine store/wine bar in Old Town Folsom with my lovely wife, I had a real job back in Australia working in the corporate world. In Australia, we get four weeks vacation per year which gave me the opportunity to pursue one of my

By Erik Loigom passions, that is, exploring wines regions, not only in Australia, but around the world. I have covered many regions in France, Italy, Germany, New Zealand and Canada. Yes its not a mistake, it’s Canada. I visited two of the main regions which I was very pleasantly surprised about the quality of the wine produced there.

I spent two months exploring Canada, from the mountainous Canadian Rockies, skiing Mount Todd, known as Sun Peaks to the French Provence of Quebec.

Just a very short distance from Niagara Falls is one of the cutest towns that I have come across, Niagara-on-the-Lake home to George Bernard Shaw Festival, which runs from April to October each year.

Just outside the township there are over a dozen wineries, many of them producing sparkling wines, a range of whites, a small amount of reds and ice wine Traditional ice wines are made by leaving grapes, usually highly aromatic, high-acid varieties like Riesling, Gewürztraminer, Vidal Blanc, Sylvaner and even Cabernet Franc on the vines until temperatures drop to extreme lows at least 18 degrees.

The sugars and other dissolved solids do not freeze, but the water does, allowing a more concentrated grape must to be pressed from the frozen grapes, resulting in a smaller amount of more concentrated, very sweet wine. These wines are expensive because only a few drops of juice are extract from each grape but well worth a try.

The main wine region in Canada is in British Columbia, the Okanagan Valley, 300 miles east of Vancouver. My two-day planned stay extended to four days after discovering the beauty of the valley and the Okanagan Lake.

There are 120 wineries stretching out along 130 miles of the Okanagan Valley and many of them overlooking Okanagan Lake.

You will not find your big bold Napa Cabs as they don’t get the ripening season that we get in California. What you will find is a range of lighter style red wines, beautiful crisp white wines and a range of sparkling wines.

Even if you don’t drink wine, just the sheer beauty of the region is worth the visit.

It’s summer. Folsom and the real estate market heats up

June in Folsom — It’s hot; it’s lots of sunshine, long days and wonderful warm evenings; it’s time to be outside. It’s a great time to spend with friends and neighbors. There’s so much to do in Folsom. Take your pick. What’s your favorite pastime? Boating on Folsom Lake, fishing at Folsom Lake, golfing at Empire Ranch? How about riding at the BMX park or skate park? Even my dog loves June. He enjoys Fido Field Dog Park. He talks about it all the time. What about home repairs and updates? Who loves fixing the deck, water faucet or planting flowers more than I do? Everyone. I do not love doing handyman work. I love real estate.

So June is also the peak of the moving season. The time to play musical chairs for homes. When the music stops — and school starts — families want to be in their new home in the school boundaries of their choice and ready to start school.

Sellers really want to be on the market in this time frame to attract the most buyers.

So, what does that mean to us? Whether you’re moving or not? Home repair time starts so innocently. What starts as needing to repair a door, replace a garage door opener or fix a gate, it ends up thousands of dollars later as a kitchen remodel, new flooring, an updated bathroom. I know this from experience. Sellers and buyers go through this all the time.

Well, if we have to replace the dishwasher, we should get a stainless one. And if we do that, it won’t match the range, oven or microwave. If we get new appliances, I’ve wanted to move the oven to over here anyway. Then we have to change the layout. So we might as well get new counters. And so on.

It’s this type of thinking that ends up with, “Aw, we’ll live with dishwasher for another year and deal with it later. Let’s go golfing instead. If we hurry, we can get out at twilight and still finish before dark.” Now that’s what I call a great home repair day; a few pars and a birdie if I’m lucky.

But my daily summer pastime is helping families buy the home of their dreams and/or sell their wonderful home so they can move on to the next stage in their life. The real

estate market in Folsom is exciting and changing every day.

For buyers, it’s still a challenge. As of today, there are only 108 homes on the market. The average listed price has risen dramatically to over $656,000. In June 2016, I reported that the average home price was $470,000. The average home on the market today is 2,775 square feet, sells for a list price of $243 per square foot and has been on the market for an average of 46 days.

Let’s take a closer look. There are 136 homes pending sale today. There are more homes pending sale than there are homes for sale. That’s highly unusual. The average list price of a home pending sale is over $555,000, is only 2,173 sq ft, $264 per square feet. Sellers accepted an offer in an average of 18 days. The homes that had accepted offers were much lower priced than the average home on the market today.

Here’s another interesting perspective. In the first four months of 2017, the average sales price of a home was just over $495,000, 2,039 square feet, $251 per square foot and sold in 24 days. Those numbers are much more in line with 2016.

It will be interesting to see what happens next. The size of the average home that has come on the market in Folsom has grown in price and size compared to the recent past. It looks like the seller’s market is changing. So what does that mean for you? If you are contemplating selling your home, it’s worthwhile to explore that now. If you are thinking of buying a home in Folsom, be prepared so your offer can stand out amongst the rest.

we are so blessed to reside in such an agricultural hub (if you will). there are farmers and rancher who make it their sole mission to produce quality fruits, veggies, and meats. lucky for us they all seem to convene at the Farmer’s market, which makes it incredibly easy as a consumer to shop for only the best and most nutritious ingredients. I decided to visit out local farmers’ market for some fresh produce to make some summer treats both classic and unconventional. It’s like finding treasure when the fruits and veggies needed are in season and they are ripe to perfection.

I highly recommend frequenting any farmers’ market to support the local ag and, bonus; you get something tasty every time.

Pasta Primavera

Farmers’ Market Coconut Pops

(Serves 4-6) 1 bag of fettuccini noodles * I use gluten-free rice noodles 2 large heads of broccoli 1 green bell pepper 2 zucchinis 1 garlic clove minced ½ yellow onion 2 tablespoon grass fed butter 1 cup Parmesan Pink Himalayan salt and pepper to taste

1 ½ cups of raw coconut water 1 large lime juiced 1 lemon for zest 1 large handful of strawberries sliced 1 large handful of blueberries sliced

Add water and a pinch of salt to a large pot and place on stove. Add noodles and boil until soft. *careful gluten-free can turn mushy very quickly. Test often.

Drain noodles once cooked and place back in the pot. Add olive oil to a medium skillet and allow to heat.

Place chopped onion and minced garlic in hot oil and cook until fragrant.

Add chopped broccoli, zucchini, and bell pepper, sautee until soft.

Add veggies to pot with noodles and stir with butter and Parmesan.

Serve with another sprinkle of cheese, salt, and pepper.

Enjoy!

In a large bowl combine coconut water, lime juice, and zest.

Slice all of the fruit into thin pieces and arrange in a Popsicle mold. Feel free to mix-and-match fruits. Pour the coconut water mixture over the fruit to cover.

Cover, place sticks, and freeze until solid.

Serve immediately once removed from mold. Wouldn’t want them to melt!

Berry Scones makes 6 scones 3 cups of gluten-free rolled oats ½ cup coconut flour ¼ cup + 2 tbsp raw sugar 1 tbsp baking powder 1 tsp Pink Himalayan salt ¼ cup + 2 tbsp chilled coconut oil 1 cup chilled almond milk *I prefer unsweetened 2/3 cup berries *I chose raspberries for one half and blueberries for the other Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.

In a blender, pulse the oats until they are fine flour. Measure out 2 cups and keep the rest for dusting.

Pour into a large bowl and add coconut flour, raw sugar, baking powder, and salt.

Add chilled coconut oil and mash it in the mixture with a fork until crumbs form. Add the chilled almond milk and mix well. Use leftover flour and sprinkle on a flat surface. Roll dough into ball and kneed several times. Split dough in half.

Place 1/3 cup of berries in each half and gently mix blend. I did one half blueberries, the other strawberry.

Make a 1 inch thick circle out of each batch and slice into 6 triangles.

Place onto lined baking sheet and bake for 12-15 minutes. Let cool before transferring. Once completely cool, serve, and enjoy!

The Folsom Entertainer caught up with Siegel who is currently on tour, to discuss music, Keyboard Conversations and his upcoming show at The Harris Center.

Keys to the Classics

Do you remember the first piece of music that left a real impression on you?

The first piece of music that captivated me was the “Second Piano Concerto” of Brahms.

accessible, inviting introduction — therefore my approach is for both the expert and novice.

And the audiences I play for in every city where I do these programs is a mixture of both.

Was music a big part of your childhood? First instrument?

I grew up in a musical household — my father was a bass player in the Chicago Symphony — so music was always being played. The piano was my first and only main instrument.

Sophie’s choice: you’re on a deserted island and can only take a handful of recordings, whose music is coming with you?

As for Desert Island Discs (there is such a program on the BBC in London!) I would probably take the “String Quintets” of Mozart, and the “String Quartets” of Beethoven.

Hardest piece of music you ever learned to play and why?

I find every piece of music hard to play well!

When did you first begin cultivating the idea of doing conversations during the performances about the music?

Keyboard Conversations, and the idea of talking at a concert about the musical composition I am to play, came about after meeting an avid music lover who wanted a musician to be able to talk about music so that she would get more out of the listening experience rather than just an “ear wash of sound.” Also, many people knowing I am a musician have confided to me that they know they are missing something great in life not to have Beethoven or Mozart but are looking for an attractive,

As an artist performing the work of other musicians, how do you draw the line between putting your stamp or your artistry on a piece without changing it how the artist intended?

A composer like Ravel is very specific how he wants his music played and marks very carefully indications — Bach hardly has any indications as to how it is to be played — therefore with Bach one has a more difficult time as an interpreter.

You have played in numerous orchestras around the world. How does the same piece of music vary by orchestra, city or country?

For example, is a Gershwin piece performed differently in New Orleans than say, Tokyo? Do different cultures approach a piece differently?

No, Gershwin, or Mozart or any great composer is not varied in performance from country to country. The musical composition has its own “values” which transcends where the composition happens to be played.

Most people assume classical music is of the past — Mozart, Brahms —are there new musicians writing music that you think will be “classic” a hundred years from now? Are there songwriters or composers who you just love now?

As for music of our time the only true test as to whether it will be classic, meaning being heard in future generations, is to live another 50 years and look back. History teaches us to be wary of making any predictions about which composer and composition seems destined to be performed in later generations.

Why did you pursue classical piano as opposed to say, folk or country? What is it about this music that you love the most?

Though I played jazz in my youth, classical music for me has the unique appeal, both as a performer and a listener. ✶
