oseville Magazine’s first annual “Best of the Best” edition provides readers profiles, images and contact information for the area’s best businesses, as voted by patrons. Earlier this year we announced our plans to produce a “Best of” issue via our social media accounts and in our print edition(s). Winners were determined through an online ballot during the month of March, with the nominees being selected by Roseville Magazine readers. Our staff behind the scenes was overwhelmed by the amount of participants both in the polling process and from business owners who promoted their establishments via their own online presence, demonstrating a true representation of Roseville-area shoppers, foodies and residents. We congratulate the more than 70 winners in as many categories and hope our readers enjoy the features and subsequent content. We hope to make Roseville Magazine’s annual “Best of” issue a marquee product in its own right as the years continue.

Swinging into Old Town Roseville Porch Swing Pickings the newest store in city’s historic district By Rachel Sewell | photo by scott thomas anderson
O
n a quiet street in Old Town Roseville waits a shop with unique turquoise doors welcoming passerbys. This mother-daughter owned boutique sells a rare collection of handmade and vintage items designed to put a personal touch on décor. Known as Porch Swing Pickings, the new antique emporium is the latest infusion of energy into the city’s most historic quarter. The Porch Swing is located at 307 Lincoln Street, beaconing to visitors with inviting blue doors that are hard to miss. Inside are work pieces on sale from local vendors. The shop is filled with painted furniture, floating shelves, rustic signs and other wood and glass touches. It was started by Sally LaVergne and her daughter, Jen. The two women were ready to become dealers of top-quality shabby chic treasures, but found themselves being put on wait lists at every store they approached that hosted multiple vending agents. The Abeijons decided to open their own shop, with their own assemblage of creative personalities. Within 6 weeks, Porch Swing Pickings was up and running. The shop currently displays pieces from 9 different vendors on the first and third weekends of every month, with its doors open from Thursday to Saturday during those timeframes. Its regular hours are Fridays 10 a.m. to 6 p.m., Saturdays & Sundays 10 a.m. to 5 p.m. The boutique also offers online sales, with in-store pick-up. Old Town Roseville has seen what some view as a mini Renaissance since 2015, after three controversial, rundown

apartments were closed or sold to new owners and several new businesses opened. The arrival of Porch Swing Pickings comes on the heals of Old Town Pizza and Four Score Coffee moving into the neighborhood, as well as the continued popularity of Pacific Street Café, the Opera House Saloon and the Boxing Donkey Irish Pub. For the owners of this latest creative endeavor, the objective is highlighting local decorating talent. “I just think that the best part of it is that I get to showcase other artists out there,” Sally Abeijon said. “That is, to me, such a blessing to be able to give them an opportunity to show their beautiful pieces of artwork that they do, and the fabulous things they come up with.” And the small shop has more than just sought-after artwork; the owners have tried to imbue every inch of it with a stylish, welcoming atmosphere. The vibe is also boosted by how close the mother-daughter duo is. “My favorite part would be that I get to work alongside my best friend, who is also my mom,” Jen Abeijon remarked. “She’s an amazing person and example — I am so lucky to be running a business with her.”

We kill them with kindness and it shows in our employees work ethic. And our food is incredible.” She said winning is “incredible.” “It’s our hard work that paid off,” she said. That’s our goal. We set our standards high and it’s nice to see it pay off and be recognized.”

La Provence is a French restaurant that backs up to acres of wild land. Dawn Wolf, manager of the establishment, said their setting for a wedding sets them apart from other venues. “I believe that we are a destination for a wedding where you can get married in beautiful scenery. The backdrop is beautiful nature which is something you can’t get at other places,” she said. Being chosen as best wedding venue is fulfilling, Wolf said. “We are very excited we put a lot of hard work making the day special and that is so rewarding,’ she said. “You build a relationship with the bride and groom and when all the work comes together for their special day it’s very rewarding.”

Roseville Theatre Arts Academy | 241 Vernon Street | (916) 772-2777 The Roseville Theatre Arts Academy won in two categories, best non-profit and best kids entertainment. “We are so excited and amazed. There are so many amazing wonderful non-profits we are honored,” said Michelle Raskey. The theater is a nonprofit children’s theater that teaches musical theater and acting. They also perform plays adults can enjoy, but their focus is on training youth in the arts. “This is a place for them to find their corner of the sky,” Raskey said. She said what makes her academy special is the sense of community. “We have a sense of family. It takes so many people to make this place run. We are always getting new students and everyone is welcome. It’s everyone’s theater.”

She is the official photographer for Woodcreek High School’s football team, but her favorite type of photography is shooting teens. “Shooting senior portraits are my favorite,” Hoffman said. “They are fun to work with. They keep you youthful. We laugh and joke. It’s really relaxed and they have a good time. I like my sessions to be relaxed.” Hoffman said she was “humbled” at learning she won in her category. “I’m excited and was in shock. I thought when it came up, I’m never going to get this. I know a lot of photographers and was so shocked.”

I think it is absolute attentiveness,” he said. “The clients are paying for a service and it’s in a situation that’s an emergency or the condition of their pet is elevated where they need to see a specialist. It can be a very tense moments. Our attention to everything has to be heightened.” Miller said his office is “completely humbled” to win the award. “In a situation where we are not regular veterinarians and these clients are from our referring veterinarians and they have thought so much of us that they did that. That’s amazing.”
Best Barbershop and Best Barber 18/8 Fine Men’s Salon is an upscale men’s barber shop that focuses on the whole package. “We do all male grooming services and cover all the bases from facials, scalp treatment, hair cut shaves and manicures and also waxing — above the belt only,” said Kelly Rogers owner of the salon. What sets her salon apart from the others is the experience. “Our goal and our mission statements is man at his best,” Rogers said. “If a guy looks good, he feels better and performs better.”

These are all semiprivate stations,” Rogers said. “It’s really all about the experience.” Of winning the award after only being in business 14 months, Rogers said they are stunned. “Being able to take this honor is great and tells us we are doing the right thing and my team is awesome,” she said.

Manager Salvador Navarro explained the concept of the raw, vegan restaurant. “We only use fruits vegetables, nuts and seeds. Everything is organic and non GMO. It’s a complete gluten and soy free facility,” he said. The BLT is their most popular dish. It’s made with zucchini bacon that sits in the dehydrator for 48 hours and comes out crisp, Navarro said. He said what sets the Green Boheme apart is its intentions.

“We put love into everything single thing that we do. It’s all about the preservation of the nutrients in the food. In this world of fast food we are making things in the artisan by hand way,” Navarro said. “It’s doing it that way because there are nutrients and enzymes that are beneficial to the body that is missing in today’s culture. Our food is fuel.” He said the restaurant staff is thrilled to take top honors. “It’s awesome. We are just now celebrating a year in Roseville. We feel very blessed to be in this community and we have a lot of support. We know it’s just the beginning.”

Pretty in Ink in the Historic District of Roseville has been open since January 2008 providing custom tattoos and artwork for both men and women. Owner Heidi Harrington said their shop is a bit unique in that they do all custom art work. “We don’t have the boards with the tattoos you can pick from,” she said. It looks like a gallery not a tattoo shop. We work with our customers to draw their design.” She said her goal is to get the clients idea on paper as they see it. “Our philosophy is the client is the one who will wear it for the rest of their lives so they have to be happy with it,” Harrington said. Of being named the best, she said she was excited. “We’ve been here eight years and there are other shops that have been here longer so we were not only surprised, but super shocked.”

OF THE neighborhood Irish pub The Boxing Donkey channels Old Town Roseville’s charisma. By Scott Thomas Anderson | photos by doug guler
“F
amine ships” took the Irish to the East Coast before laying rail lines brought them out West, and in Roseville their immigrant dream settled into a vision of squealing boxcars, secret saloon tunnels and overworked men hiding from the Women’s’ Temperance League. The Barker Hotel is a survivor from those days, and the Boxing Donkey Irish Pub in its belly is a popular tribune to the shamrock side of Roseville’s memories. Today, “the Donkey” is one of the only Celtic havens in greater Sacramento where patrons can drink Guinness while listening to Irish-punk and Gaelic-roots music on the radio. It also serves pub cuisine so in-demand it might be, as the Irish say, “a double-dose of original sin.” It’s long into a midweek afternoon and daylight pours through the high, arched window that was once the doorway to Charles Barker’s hotel. The sun creeps from a framed Roseville fireman’s jacket to a green flag for Jameson Irish Whiskey: The engine jacket — hung across the bar from an emerald fireman’s helmet — has the words “Boxing Donkey” embroidered across its back.
Not far from the window, novelist Nancy Lee Woody sits drinking a Blue Moon. Woody just returned from Ireland and the lively vibe in the Donkey reminds her of pubs she visited in Belfast and Galway. The establishment is thoroughly Californian but it does stick to some Irish classics: Banners for Smithwick’s ale drape down from its ceiling; hard apple cider handles are on-tap; an array of Paddy’s whiskey bottles line the walls. Old Town Roseville faces a railroad largely built by Irish immigrants in a valley once dominated by an Irish newspaper baron. The memory of that world was still alive when the Barker Hotel was built in 1910. The Boxing Donkey projects thus legacy both through the pub’s spirit and the enduring plaster and wood of Old Town itself. The Boxing Donkey also has a modern Irish-Yankee feel that includes its stereo blasting the Celtic crunch of “Streams of Whiskey” by the Pogues or the roving, renegade touch of “Whiskey in the Jar” by the Dubliners. On this late afternoon, Woody sips her beer as the pub’s speakers play “Shipping Up to Boston” by Dropkick Murphys. “I just loved how in Ireland there’s music everywhere, just like in this place,” Woody remarks as the manic marching of Scruffy Wallace’s bagpipes goes honking through the bar’s cavern. “The pubs are like this — full of friendly people talking and music is a part of everything.” But while fans of rocking jigs can get their fill at the Boxing Donkey, the real draw for foodies is what chefs Michael Reese and Melyssa Tucey are cooking in the back kitchen. One of the bar’s most valued dishes is its Saint Patty’s Melt, a continued on page 22

burger on thin, toasted Rye, covered in hot jack and cheddar cheese, caramelized red onions and a splattering of Thousand Island dressing. A bite reveals how its beef juices flow into tangy accents, pops of cloying onion and the dressing’s sweet and sour pinch, all held together by the countering dryness of the Rye. It’s a true taste sensation. Another hit at the Donkey is the Pork N’ Cheese, a bowl with honey chipotle glazed pork shanks centered in homemade jack and parmesan pasta, topped with fresh micro greens. The pork stands out with a cinnamon-and-sugar touch on crispy skin, and the dark meat underneath balances the hints of sugar with silky, salty highlights. The plate only gets better as it stands, with the sweetened pork drippings being absorbed into the ropey bubbles of cheese on the macaroni. The Boxing Donkey is also infamous for its Spicy Buffalo Mac and Cheese. More Irish in attitude than heritage, this bowl is chalked full of cavatappi pasta piled in hefty Buffalo chicken chunks, large bacon bits and sharp globs of blue cheese. It dares anyone looking down on it with its massive corkscrew noodles glowing titian with spices, and one fork motion shows how drenched it is in clinging, stringy layers of cheese. The whole concoction looks dangerous but is mixed to perfection in a gradation of tastes and textures. “I think the food has really been a pleasant surprise to the people,” notes the Boxing Donkeys co-owner, Joe Tucey. “You can sum-up what our chefs doing in three words fresh: fresh, fresh. That means that everything from the kennebec potatoes we use to cut our fries, to the fish we’re battering in Guinness — it’s all coming to us fresh. I don’t mind paying a little extra to get quality.” Tucey opened the Boxing Donkey in 2008 and runs it with

co-owner Kendl Schubert. Schubert has proven to the pub’s fans she has an uncanny ability for remembering local faces and their favorite orders. She’s also the master at mixing up the Donkey’s signature cocktails, like “the Old Irish ‘Ass,” a swirl of Tanqueray Old Tom Gin, fresh lime juice, Cock n’ Bull ginger beer and hard apple cider, or “the Boxing Burro,” a blend of Tequila Cabeza, Triple Sec, fresh lime juice, acrid elements and orange juice. The Donkey’s other bartenders have also been with the pub long enough to know the all the personalities flowing in from the city. From auto mechanics in their work shirts to lawyers in full suites, the clientele may be diverse, but it always centers on smiling in the pub’s relaxed atmosphere as the libations flow. This part of Roseville’s been a rail-side bar center since the 1880s, and some things never change. “I think this part of town adds a certain charm to an Irish pub,” Tucey reflects. “It’s the old brick buildings and all the history that’s behind all of these walls down here. Roseville needed a good neighborhood pub in Old Town. And I think that’s what we’ve done here. It’s a laidback place where everyone knows each other. It’s a pub where friends are family, and family are friends.”

Another era of dirt track racing roars to life in El Dorado County
L
yndon Johnson was our president, a gallon of milk was just 31 cents and Sonny and Cher had little hit song titled “I Got You Babe.” The year was 1965 and something new was coming to life in El Dorado County, the sport of auto racing. Fifty-one years later, the roar of engines and the cheer of a wide-eyed crowd is commonplace on Saturday nights at the El Dorado County Fairgrounds in Placerville.
With the spring season upon us, the green flag has flown once again at Placerville Speedway. What started as a community football field back in 1956 and transformed into a quarter-mile dirt race track in the summer of 1965, is now known as one El Dorado County’s hot spots for family entertainment on Saturday nights between the months of April and October. For anyone who has never been to a dirt track race, it’s an experience to behold, with several classes of cars and both men and women behind the wheel from all walks of life. Teenagers to seniors and everything in between; all from different professions, living as weekend warriors or choosing to race professionally. Some of the thrills include winged sprint cars boasting over 700 horsepower traveling sideways at extreme speeds, riding on the narrow edge of triumph and disaster, often navigating their way through fields of 20 cars or more. berthed a handful of drivers that from the likes of Placerville Speedway to the sports highest levels. Current NASCAR star Kyle Larson of Elk Grove cut his teeth in the sport of racing at this facility, earning his first win aboard a sprint car here in 2007 before advancing in the sport. Others include Paul McMahan, an Elk Grove native and Brad Sweet of Grass Valley who honed their careers here and today compete in the nationally known World of Outlaws tour that travels the country and returns to their home track one time annually. If that’s not entertaining enough, there’s fire-breathing late model stock car with colorful sheet metal bodies that quiver even while at idle speed due to the extreme power beneath the hood and enough torque to lift a front wheel off the ground as they accelerate out of the corners. these wicked-fast machines racing side by side, three abreast on a surface barely wide enough for two. While the high-end divisions populate the headlines during a racing season at this facility carved into a hillside in the heart of the area’s business district, one grassroots division draws astonishment from some of the youngest fans, known as pure stock race cars. While still very much enhanced for speed and performance, these machines are the closest thing to an actual street car in a class that is populated by entry-level drivers and veterans of the sport. Don’t let the term “pure” be deceiving, these door-donning machines are known for putting on quiet a performance week after week.

“The previous promoters of this track went to great lengths to build a strong foundation centered around families,” Arnold said. “Our goal is to continue those long-standing traditions and provide great, affordable family entertainment.” One such tradition at Placerville Speedway is their famed handmade corn dogs that have been a fan favorite over the last 50 years. Hand dipped in freshly made corn meal batter each race night, these piping hot treats are sold as fast as they come out of the fryer and are equivalent to that you would find at a country fair in the heart of the mid west.
These are just sampling of what can be experienced every Saturday at Placerville Speedway. The facility hosts 24 events in 2016. In addition to the three weekly divisions, many traveling groups complete the program throughout the year, providing entertainment on a given race night from 6 p.m. until approximately 10 p.m., a value considering an average big screen movie is two hours in length for nearly the same investment.
In addition to the well-known corn dogs, Placerville Speedway offers a menu to delight all palettes with items that the new management has taken the time to taste test with staff to insure its quality and desirability from the traditional flame broiled hamburgers, hot dogs, spicy nachos and fried chicken, to new items like the homemade Tri Tip Sandwich, Frito Pie and Garlic Fries. Pair this menagerie of items with one of their many ice cold brews or ice cold sodas on tap and it makes for a great evening of family dining and entertainment on a Saturday night.
This year, Placerville Speedway begins a new era in track management with local residents Scott Russell and Kami Arnold taking the wheel of operations under the banner of RMI Incorporated. This duo has deep roots in the local sport and are looking to continue traditions while improving many aspects of the weekly program to focus on strong family entertainment value.
The new season has begun at Placerville Speedway and the schedule of events includes many special nights including the annual Fourth of July Spectacular and the famed Kids Night among many. Roseville takes flight New indoor skydiving center iFly goes live By Jorden P. Hales
R
oseville residents with the thrill-seeking instinct will finally have a new option. iFly, the international indoor skydiving venture, will start taking party and group reservations for its Harding Boulevard location May 15. iFly broke ground on the one-story facility across the street from Roseville Square last year, marking it first arrival in this part of Northern California. Construction is almost completed and its wind tunnel is fully operational. “There are multiple designs,” said Cameron Cole, general manager for Roseville’s iFly. “I’m actually really excited about the one that we’re building here because it’s a onestory design, unlike (San Francisco), where it’s two stories … when you walk through the door of our particular location, you can look to the right, and, ‘Boom,’ there’s the tunnel. It’s the first thing you see when you come through the door, which is really unique … they dim down the lights in the tunnel, so it’s like this glowing becon of awesomeness.” Many of the iFly-trained staff are actually skydivers and say the experience is quite similar, aside from the lack of a parachute. Flight times vary, as customers can choose a verity of experiences, including corporate parties and STEM (Science Technology Engineering Math) programs for kids and local students. “It includes your class, gear, training and everything prior to actually getting inside the tunnel,” Cole explained. “The actual flight time per person can vary. Our most bought package is actually four-minutes of flight time. The alternative is a two-flight package.” As summer approaches, iFly will make locals aware of summer programs available at the wind tunnel.

PREPARE FOR TAKE OFF: The new iFly in Roseville will allow people of all ages to dead-drop through the air at the same speed as free falling from a plane. “We also offer kids camps,” Cole added. “In the summer, if kids come in and latch onto an instructor, we try to keep the same instructor. That way they can build rapport and know where the kids are at, so we can continue building. We definitely do our due diligence and put the right person in the right spot for them.” Such programs do have opportunities for older participants and student as well. “We’ve been doing a lot of outreach to schools,” said Samantha St. Thomas, a regional sales manager. “Elementary, middle school, high school, we’re at Sac State today … They’ll come in the wind tunnel, do an experiment portion, which is really fun for the kids, then get to fly and they’ll have an education portion that relates to physics and how the wind tunnel works. Depending on what curriculum they’re at in their school age, we can relate it back to what they’re learning in school.” iFly will also run competitions through its new Roseville facility. The company is associated with the IBA, a national skydiving league that plans to host an event in Roseville annually. Saint Anna Greek Orthodox Church is hosting the event, which is open to the public, to give everyone the opportunity to experience Greek food, wine, music and dancing. “Our festival contains many components within the entire event,” said Michael Dindio, an executive committee festival member. “The six member Helios Greek band will play all three days, plus numerous Greek and other ethnic groups will dance throughout.” Many Greek beers and wines that are unavailable to the general public will be sold at the event, he said. Enjoy dozens of home cooked Greek foods and pastries throughout the day and evening that will give you a pleasant culinary experience. Keep your children occupied with a kid’s activity zone that caters to all ages of youth. If you are interested in the Orthodox faith, Father Chris and Deacon Joseph will be available to give explanations, Dindio said. There will be one raffle with a grand prize of round trip airfare from the West coast to Kona, Hawaii for two and five nights lodging at Hawaiian Oasis Bed and Breakfast, he said. “Customers will experience the tastes of Greece, authentic imported beers and wines and a warm, homely island experience,” Dindio said. “Greek music and dancing will highlight the overall

The layout will resemble a Greek village where folks can relax, hangout and enjoy conversation with other attendees.” With the expected 10,000 to 12,000 patrons, this year’s event is a cannot-miss. Included in the admission price is parking, Greek cooking demonstrations, live music and ethic dance groups throughout the event, Dindio said. ggs are in plentiful supply in Placer County, and there are many protein-packed options you can use to add diversity to your diet. Chicken eggs are the most common choice, but our region also offers tasty quail and duck eggs for a more wellrounded experience. However you choose to enjoy your egg dishes, each type provides a low caloric count with a high amount of protein, vitamins, minerals and carotenoids (which reduce the risk of age-related macular degeneration, the leading cause of blindness in older adults). Quail eggs have a rich taste thanks to a greater concentration of fats, proteins, vitamins and minerals. Often regarded as a gourmet food, their small size is perfect for preparing hors d’oeuvres, and their speckled shells can serve as great table décor. Duck eggs, meanwhile, have larger and thicker shells that allow for a longer shelf life. If you’re looking for more of a yolk taste, duck eggs are perfect because they have a large yolk-towhite ratio. Angel Food Cake with Strawberries Preheat oven to 350ºF. INGREDIENTS 1 cup sifted cake flour 1 ½ cups sugar ½ teaspoon salt 1 ½ cups egg whites (about 12 large) warmed to room temperature 1 teaspoon cream of tartar 1 tablespoon lemon juice 1 ½ teaspoons vanilla extract DIRECTIONS 1. Sift the flour, then measure and place in a bowl. Add ½ cup sugar and salt to the sifted flour and sift again, twice. Set aside. 2. Beat the egg whites in a very large, very clean bowl. When the whites are foamy, add the cream of tartar and lemon juice. When the bubbles are uniform, start adding the remaining cup of sugar a few tablespoons at a time. Add vanilla extract. Beat the eggs until they form stiff peaks and the sugar is dissolved (when you lift the beaters a peak will form and hold). 3. Fold in the flour using a clean rubber spatula, using a down-the-side-andup-through-the-batter motion. Do not over mix. When the flour is thoroughly
combined, turn it into a very clean, grease-free 10-inch tube pan. 4. Bake 50 minutes. Test for doneness by pressing lightly in the center; if it springs back, the cake is done. Remove from oven and invert the pan until the cake is cool 5. The cake must be lifted an inch off the counter during the cooling process. This can be done by inverting the cake over a bottle. 6. When cool, remove the cake by running a serrated knife around the edges of the pan. Serve with strawberry sauce.
Strawberry Sauce INGREDIENTS 2 pints strawberries, one pint diced, the other sliced 1/3 cup sugar 1 tablespoon lemon juice DIRECTIONS 1. Cook the diced strawberries, sugar and lemon juice in a small saucepan over low heat until the sugar dissolves. 2. Bring to boil, then reduce heat and cook for 3 minutes. Add the sliced strawberries. Remove from heat, place in a covered bowl and chill for 2 hours. Serve over angel food cake

Coconut Crusted Tilapia with zesty fruit salsa and spiced cauliflower rice

his light dinner option is perfect for the warmer days leading up to summer. Impress your guests with this coconut crusted tilapia and zesty fruit salsa. Place over a bed of spiced cauliflower rice and you have a spring meal worth talking about. Preparation takes very little effort and time, but the results are delicious and satisfying. This paleo dish is nutritious and full of flavor. Reach your summer body goals, but not at the expense of taste.
INGREDIENTS 1 mango 4 strawberries 6 small red and yellow bell peppers 1 tablespoons lime juice 1 teaspoon honey Salt and pepper ¼ cup cilantro ½ red onion 2 tilapia fillets 1 egg 2 tbs coconut flour ½ shaved coconut olive oil 1 head of cauliflower Garlic powder Smoked paprika Cumin
DIRECTIONS 1. Dice the mango, strawberries, bell pepper, and red onion. If you like is chunky salsa do not dice so small 2. Mix the fruit and veggies in a bowl and add the honey and lime juice. Mix in the cilantro and add salt and pepper to taste. Once the fruit salsa is done set it aside. 3. In a separate bowl whisk one egg. 4. Dip the tilapia filets in the egg and then coat them with coconut flour and shaved coconut. 5. On the stovetop heat the olive oil until sizzling (just enough oil to cook and not deep fry the fish). 6. Place the fish into the oil and leave for 3-5 minutes (I would cover the fish because it tends to splatter). 7. Flip the fish and let the other side cook for 3-5 minutes. 8. Place on a paper towel to drain excess oil. 9. Slice the head of cauliflower so that it fits easily into a food processor. 10. Process until what’s left look like little grains of rice. 11. In a skillet heat up 1 tablespoon olive oil. 12. Place the processed cauliflower onto the skillet 13. Add spices and mix thoroughly. 14. Cook until soft plate and enjoy.

INGREDIENTS: 12 ounce ahi tuna steak (2 inch thick by 3 inch wide) 1 tablespoon canola or grape seed oil 1 red jalapeño pepper (sliced thin) ½ cup quinoa (toasted) ¼ cup chia (not toasted) 1 blood orange (segmented) ½ a pink grapefruit (segmented) Crushed pistachio Baby lettuce or spring greens (for the bed salad) Water cress (for the bed salad) Cilantro sprigs (for the bed salad)
DIRECTIONS: 1. To a pan over medium heat add the quinoa and toast until it begins to pop, continue toasting for about 3 minutes siring constantly. Remove from the hot pan to a bowl and set aside to cool. 2. Pat the ahi dry and set aside. 3. Once cool mix in the chia seeds and pour onto a plate. 4. Roll the ahi in the quinoa, chia mix until well coated. 5. Prepare your serving plate and arrange the spring greens, cilantro & water cress on the plate. 6. Heat a searing pan over high heat, add the oil and when it begins to smoke add the ahi and sear for 1 minute per side. 7. Transfer the ahi to a cutting surface and slice into ¼ inch thick slices. 8. Arrange the ahi on the plate and add the grapefruit, blood orange, jalapeño coins and crushed pistachios. Serve with the Ginger Soy dipping sauce and steamed white rice.

anuary has come and gone and thousands of Americans are stepping on scales, looking in mirrors and having conversations with doctors wondering what happened to that New Year’s Resolution. Summer is coming and as we try and squeeze our way into shorts, tank-tops and the dreaded swimsuit, we can’t help but notice another fitness failure. We become frustrated, discouraged and in some severe cases, depressed. We have so many rational excuses such as family, career, time or even injuries that we can point to but at the end of it all, we are stuck in the cycle. As a wellness professional for over 16 years, I have learned several realities and how to break past the cycle of fitness failure. The foundational truth is simply: decide to make a lifestyle change, commit to it and take action. Unless you make that commitment then each attempt is doomed before you begin. Avoid resolutions, crash-diets or falling into the fitness trend trap of fad-food plans or gimmicks. These do not provide a basis for a life change and are all part of what creates perpetual fitness failure.
Here are five specific actions you can take to make the health and physique transformation you seek attainable and permanent: SELECT AND HIRE A PERSONAL TRAINER
Without question, the fast track to success is investing in a certified personal trainer. And yes, you can afford it if you truly want to make a permanent lifestyle change. Money is important but not as critical as your health and safety. A personal trainer will design a comprehensive program based on your current condition and ultimate goal. They will structure workouts in a progressive manner and evaluate progress periodically to measure results. All you have to do is show up to the appointment two or three times each week and execute the workout under their guidance and perform any other exercise or programs they prescribe to complete on your own. However, be very selective about who you hire and where you train. Be sure the trainer you select is certified and experienced. Also, you get what you pay for in both facilities and trainers so budget a clean, well-maintained fitness
facility and expert trainer into your life. There are so many options available so take some time and research facilities. In most cases, I suggest skipping the big brand gyms as they are simply machines that chew through members and typically hire younger less experienced trainers. More often, a high level personal trainer will work in a boutique, contract independently or own a studio. For an excellent personal trainer, be prepared to pay between $60-$100 per hour. JOIN A SMALL GROUP TRAINING PROGRAM
Aside from private personal training, working in a group is an excellent way to get involved with a community of others seeking the same change as yourself. This gives you a network of supporters and a strong degree of positive accountability. Not to mention, small group training can be very affordable and allow you to maximize your budget and time. Keep in mind, small group training should have less than 10 participants in order to be optimal. Too often, fitness clubs try and cram as many people into a “small” group as possible to drive revenue. I find this unacceptable as a fitness professional and encourage you to seek out programs with integrity and solid programming. In a small group setting, a professional trainer will be able to give you a good deal of attention and keep you working safely and effectively. Again, a worthwhile trainer or fitness facility will charge a fair price and you get what you pay for. Find a company offering groups of 6-10 that run classes two or three times per week and be prepared to spend between $11- $22 per session. GET INVOLVED WITH GROUP EXERCISE CLASSES
Not to be confused with small group training, a Group Exercise class is a regularly scheduled and pre-formatted fitness class led by an instructor. Classes like these are a great way to get connected into the fitness community, make acquaintances and enhance your enjoyment of working out. Group classes are a fantastic way to supplement a workout program or personal training session by adding variety and some social components. Fitness is a journey and having others around you sharing positive energy and enthusiasm goes a long way toward sustainability. Most national brand gyms offer these classes yet I am inclined to seek out smaller or boutique programs as they tend to have a very high level of quality control and instructor oversight. Not to mention, large chain gyms tend to pack members in by the dozens and the program can be diminished by overcrowding or become uncomfortable. There are several excellent studios in the Roseville area so take some time
and seek out the right fit. A good fitness company that offers quality group classes will likely charge anywhere from $60-$130 per month but again, it tends to be worth the extra investment when compared to the environment and results. HIKING, WALKING AND OUTDOORS
One of the outstanding benefits of living in the Roseville area is the easy access to parks, trails and outdoor activities. There are dozens of options for the outdoor enthusiast or a person looking to add this component to their lifestyle. There are countless beginner trails in the area and the majesty of the Sierras is a short drive for those seeking a challenge. Moreover, the cost of enjoying a long hike is negligible and aside from time and transportation, there is little cost associated with getting outside and exploring the beauty of our state. Hikes and long walks can be enjoyed with partners, family and pets so plan some time outdoors and make a day of it. While getting outdoors may seem overly simple, it is about creating a sustainable life change. In my experience, most people who start connecting with the outdoors this way tend to stick to their nutrition and workout plans during the week so they are ready for the weekend hike. GET INVOLVED WITH TEAM OR INDIVIDUAL SPORTS
Organized team sports or adult leagues are a fantastic way to bring fun and focus to a workout program. Not only are some sports inherently active, they all require some kind of fitness training or conditioning. If you have a team sport that you enjoy, Roseville has dozens of leagues available for you to explore. Personally, I enjoy individual challenge sports like the difficult mud and obstacle runs or extended back-country kayaking, snowboarding or mountaineering. These passions fuel my personal fitness programs and keep me focused on more than just sets, reps and meal planning. Again, your sport or physical activity should be woven into the fabric of your life to be more than just something you do. Because you are making a lifestyle change toward a fit body and strong discipline, adding these athletic options are all part of the structure that fortify your resolve and results. Remember, there is no silver bullet for fitness. Instead it is a combination of components and managing your food intake. Plain and simple, you have to get your nutrition under control and ensure your energy expenditure and food consumption is appropriate for your goal. I hope you take these suggestions seriously and move your mindset to programs and activities that enhance the quality of your life and bring long-lasting health and wellness!

Tele-stroke cart PROVIDES IMPROVED STROKE CARE

middle age woman suddenly feels numbness in her face. She has trouble speaking clearly, and difficulty seeing. She’s dizzy and has a severe headache. The 911 dispatcher suspects she is having a stroke. The ambulance rushes her to the hospital.

As soon as she is wheeled into the emergency room, the hospital team is ready. They place a rolling cart alongside her. The cart houses a high-definition video camera linked to a monitor, speakers and microphone. The emergency room team activates the device and instantly, a neurologist in another location is able to see her on video and interact with her in real time to determine if indeed she’s having a stroke. This remote consultation via the high tech cart speeds up diagnosis and treatment of the patient having a stroke. The “tele-stroke” cart is in use at Kaiser Permanente Roseville Medical Center, and 20 other Kaiser Permanente hospitals in Northern California. “I think it’s an incredible service when the emergency department calls you, and you can see and interact with the patient right away,” says my colleague John Geraghty, MD, chief of the Neurology Department. “Patients with potential strokes are getting expedited care.” As soon as it’s clear a patient is having a stroke, the neurologist on-call and the emergency room physician video chat to propose a treatment plan. Minutes matter when it comes to stroke treatment, for improving the chances of survival and preventing permanent disability.

After the initial video consultation, the patient will undergo an emergency CT scan. Once in the CT suite, the patient will often be given a special medicine called tPA, short for tissue plasminogen activator, before having a CT angiogram. The tPA, in use since it was approved by the FDA in the 1990s, can dissolve the blood clot that has caused the stroke; there is clear evidence that the sooner the patient receives the tPA, the better their outcome. Thanks to the tele-stroke cart consultation, which we began using last January, we have been able to reduce significantly the time it takes for patients to receive treatment from the time they arrived at the hospital. A lot of this credit also goes to the EMS personnel who are recognizing strokes more quickly, and to the emergency room staff, which announces a “stroke alert” when patients are arriving, which puts care teams and our technology into action. Strokes can often be prevented by making the right lifestyle choices, such as: controlling your blood pressure, eating healthy, maintaining a healthy weight, and not smoking, among other factors. Everyone should recognize how to recognize a stroke by employing the FAST method, an acronym that stands for: • Face drooping • Arm weakness • Speech difficulty • Time to call 911 Remember, the quicker you seek treatment, the better your chances of a favorable outcome.

hen it comes to small towns on the Northern California coastline, it goes without saying that the quaint and rustic village of Mendocino is a must-do on the bucket list of any traveler who enjoys visiting scenic seaside towns in our region. Nestled deep along the famed Highway 1 route, Mendocino’s scenery and architecture is as rich in beauty as it is history of early day commerce and Hollywood presence.

With a population of less than 900, the unincorporated community of Mendocino is one of today’s most desired getaway destinations. It’s New England-style buildings, and white picket fences that are California’s closest thing to Cape Cod are a constructed from the one commodity that is responsible for Mendocino coming to life, that being the lumber industry in the mid 19th century.
With the lumber boom resulting from the Gold Rush and San Francisco rapidly growing in the need of building materials, the redwoods around Mendocino provided great prosperity for those choosing to settle in and near the area. Today, that history is still very evident in the well-maintained buildings that dot the landscape in this designated National Historic Preservation District.

Main Street in Mendocino offers many great places to dine, stay and shop for unique gifts, while still offering the convenience of everyday items in a well-stocked market where every square foot is packed with the freshest of foods and must-have items for those staying long term. One of the most well-known lodging destinations is right on Main Street, the Mendocino Hotel. This inn was built back in 1878 and still serves the same function today that is did over a century ago. Its rooms are furnished with antiques, fireplaces and memorabilia above a full restaurant and bar that is well populated by both travelers and locals each evening.
A trip to Mendocino will find visitors enjoying a variety of opportunities from deep sea fishing, whale watching and abalone diving to activities of the drier fashion such as hiking along the trails of the ragged, seaside cliffs, enjoying the scenic wildflowers that separate the trails from town and of course, shopping and dining in the village where galleries and unique gift shops are abundant as are book stores and fine eateries.
When it comes to Bed and Breakfasts in Mendocino, all of them have great amenities. On our trip, we stayed at the Hill House Inn that sits just up the hill above town. Situated with a northwest view of the Pacific Ocean and Big River, the Hill House Inn is surrounded by lush Victorian gardens that are flanked by rustic redwood water towers and magnificent cypress trees. The hotel and its Cabot Cove Restaurant offer an extensive list of area wines and
features live music on particular nights. The Hill House Inn is where many Hollywood stars have stayed. One of the first stars to stay at the Inn was Bette Davis while filming “Strangers” back in 1979. Today, the Inn continues to honor her with a Bette Davis Suite. A large photo gallery in the lobby displays a collection of signed photographs of many celebrities that have either stayed at the Inn, who have visited for retreat or to star in the long list of films that have been made in the area. One of the most notable regular guests was Angela Lansbury, the star of the television series “Murder She Wrote.” The Inn is known as the Cabot Cove Inn throughout the series that features Main Street as the backdrop for the opening credits of the where Lansbury is riding her bicycle in her television-based hometown of Cabot Cove. The list of movies filmed in the Mendocino Village is a lengthy one. Some of the most well-known flicks that filmed on location here were "East of Eden," "Dying Young," "The Majestic and Pontiac Moon." Not only did Mendocino provide a visual set for many of these films, it too provided a great deal of privacy and relaxation for stars between shoots. continued on page 46

Just a few minutes down the road from town is the Point Cabrillo Lighthouse and Preserve. Following the 1906 San Francisco earthquake, maritime commerce reached an all time high on the Mendocino coast and a lighthouse became critical. The Point Cabrillo Lighthouse illuminated the coastline for the first time in 1909 and operated under the United States Lighthouse Service and the Coast Guard before it was acquired by the California State Coastal Conservancy in 1991. The lighthouse is surrounded by more than 200 acres of undeveloped coastal bluffs. The structure has been fully restored and continues to light up the sky with its unique British built Fresnel lens. The light keeper’s house and cottages on the land are completely furnished with early 1900 period antiques and available for stays or two nights or more. The land surrounding the light station is beautiful, with wide open bluffs bordered by time weathered fences, wild flowers and wild life roaming the area. During the annual Mendocino Whale Festival in July, Point Cabrillo offers events for the whole family and spectacular views for whale watching. A visit to Mendocino can be a day trip or a several night stay. The community boasts more than enough activities and sights to see that regardless of the length of your stay, you will never be starving for something to do nor will you be lacking choices for great seaside dining and shopping.
