Registration Opens for 2020 Central Coast Competitions: Wine, Craft Spirits, Vinegar 2020 Central Coast Wine Competition The competition returns this year with an elite judging panel The Central Coast Wine Competition, hosted annually by the California Mid-State Fair and sponsored by The Tribune and American General Media, is now accepting entries.

The Central Coast Wine Competition promotes the quality and diversity of commercial wineries while recognizing the fastest growing wine region in California and showcases the California Mid-State Fair’s commitment to value-added agricultural products.

The eligible counties are: Alameda, Contra Costa, Santa Clara, San Francisco, San Mateo, Santa Cruz, Monterey, San Benito, San Luis Obispo and Santa Barbara counties.

Discounted early-bird registration ends Friday, May 29, 2020 with an entry cost of $65 per wine. After May 29, registration increases to $85 per wine. Registration closes Friday, June 5, 2020.

The competition and judging take place June 17 and 18, 2020.

Chief Judge Tim McDonald is returning with an impressive lineup of judges, including industry leaders and international wine journalists, including Phil Markert, director of liquor for Albertsons/Vons, Matt Kettmann, Wine Enthusiast’s contributing editor and Bill Hayes, senior buyer for BevMo!.

“Our goal with the Central Coast Wine Competition is to promote the quality and style of wines being produced on the Central Coast, and to expand knowledge and awareness to wine consumers of the accomplished wineries in the region,” says California Mid-State Fair Interim CEO Colleen Bojorquez.

2020 Central Coast Craft Spirits Competition

The CCSC helps promote the craft distillers that are producing the finest quality artisan spirits inside and outside of California. The competition welcomes craft distillers from all over the United States, offering an additional division for craft spirits produced outside of the state.

Discounted early-bird registration ends Friday, May 29, with an entry cost of $80 per spirit. Then registration increases to $90 per spirit and closes Friday, June 5. The competition and judging take place Tuesday, June 18 in Paso Robles.

Distilleries who participate in the competition will be invited to be a part of the Get Crafty Mixologist Competition at the California Mid-State Fair on Sunday, July 26. Mixologists, restaurants and/or bars will partner with a winning spirit from the California Craft Spirits Competition to create a cocktail of his/her choice. Cocktails are featured in a two-hour festival tasting. The competition is from 3:30 to 5 p.m., and the public, ticketed tasting is from 5 to 7 p.m.

“The California Craft Spirits Competition strives to promote the quality and diversity of craft spirits being produced in the state of California, and nationwide, and educate consumers on the artisan spirits industry that continues to grow.” says California Mid-State Fair Interim CEO Colleen Bojorquez.

California Wines ‘Down to Earth Month’ Celebrates Sustainability in April Earth-friendly Practices Protect the Health of the Land, Communities and the Industry April is California Wines Down to Earth Month, an annual tribute to the California winemaking community’s decadeslong commitment to sustainable winegrowing. Created by Wine Institute, the association of 1,000 California wineries, the month-long celebration highlights winery and business practices that ensure the health and vibrancy of the land, communities and the industry for generations to come.

While taking care of the environment is a key element of sustainability, promoting the well-being of employees and the community is equally important. Following California Governor Newsom’s statewide order for Californians to stay at home to help curtail the spread of coronavirus (COVID-19), California wineries have suspended all public tastings and events. While essential winery and vineyard production and business operations as well as purchase and pick-up of wine are permitted, this directive presents challenges for the state’s predominantly small, family-owned operations. However, vintners recognize that this is the right thing to do.

In previous years, California wineries have celebrated Down to Earth Month, now in its ninth year, by offering sustainability

focused events across the state. This year, many of California’s sustainable wineries are offering special discounts on wine and shipping fees. Wine consumers can still enjoy their favorite California wines at home and support wineries during this challenging time by ordering from winery websites, purchasing and picking up at wineries or signing up for wine clubs.

California is a global leader in sustainable winegrowing and home to one of the world’s most widely adopted sustainable winegrowing programs in terms of both winegrape acreage and case production. As of 2019, 149 wineries producing more than 85% of California’s total wine production are Certified California Sustainable. Established in 1934, Wine Institute is the public policy advocacy group of 1,000 California wineries and affiliated businesses that initiates and advocates state, federal and international public policy to enhance the environment for the responsible production, consumption and enjoyment of wine. The organization works to enhance the economic and environmental health of the state through its leadership in sustainable winegrowing and a partnership with Visit California to showcase California’s wine and food offerings and the state as a top travel destination.

The California Sustainable Winegrowing Alliance (CSWA) is a nonprofit organization established by Wine Institute and the California Association of Winegrape Growers. CSWA promotes the benefits of sustainable practices, enlists industry commitment, implements the Sustainable Winegrowing Program, and administers Certified California Sustainable Winegrowing – a third-party certification program for California vineyards, wineries and wines that adheres to international sustainability standards.

t this boutique winery on the outskirts of west Paso Robles, guests such as Al Garcia, who is visiting from L.A. County, enjoy Damian and Amanda Grindley’s cache of wines in a peaceful, natural environment.

“We’ve been coming to Brecon for six or seven years,” said Al, giving his glass of Syrah another swirl. “My friends and I like bringing our wives to Paso Robles. It’s just nice to get away, you know, and enjoy the wines up here.”

Brecon Estate’s approach to hospitality is understated, accessible and very local in feel. But for owner Damian, grape-growing and winemaking is serious business. From spelunking in caves with wife Amanda, a native-born Australian, to maintaining a vineyard operation subject to the whims of Mother Nature, this Welshman has toiled in Central Coast vineyards for more than two decades.

“Our vineyards are within a five-mile tractor drive,” said Damian.

“It’s not one of these ‘passion’ things, it’s a seven-day-a-week job!” he added, grinning.

It was the diverse soil compositions, unique microclimates for grape

growing and quality of the fruit that drew Damian to Paso Robles and convinced him to assemble his family here. But more recently, something else caught his attention.

“I live on the property and walk through the vines,” said Damian. “I began to notice that I kept running into Ryan Pease, who also works in the industry, amongst the same sets of vineyards from where I sourced grapes for my wines. I’d be in one row and Ryan would be in another row. There was a sort of simpatico, a natural synergy about it, even in the way we sourced the same fruit. His hands-on approach reminded me of myself 10 or 15 years ago and the dynamism that younger winemakers have. Sometimes you have to reach out and grab them before somebody else does.”

After completing his Cal Poly degree, Ryan devoted another year of classroom study to wine and viticulture and cellar work. In 2007, he joined winemaker Matt Trevisan at Linne Calodo as a vineyard and cellar hand before working at Epoch Wines for two seasons of harvest. Seven years later, Ryan returned to Linne Calodo as assistant winemaker for two harvests before creating his own “Paix Sur Terre” label of Rhone-style varietals.

In Ryan, Damian saw a solid work ethic, mutual appreciation for mineral-driven hilltop Rhône grapes, and a habit of seeking the best of everything in Paso Robles to make great wine. Damian understood how Ryan could enable him to continue his boutique wine production at the elevated level that Brecon’s loyal patrons and wine club members have come to expect.

In nearby Templeton, Ryan lives with his wife and two daughters.

When the mood strikes, he enjoys cooking classic French cuisine for family and friends to pair with his own wines. For Damian, working with Ryan is less business partnership and more kinship between winemakers who love doing what begins in the vineyard, continues in the cellar and culminates with the consumer.

The 2018 True Acacia Head Albariño is grown “one hill in from the ocean,” says Damian. Influenced by Brecon’s signature acacia wood aging process, this crisp and refreshing varietal is aromatic with stone fruit that opens cleanly with citrusy notes. Elegance and richness develop mid-palate to a smooth and lingering finish. Pair True Acacia with salads, tapas and seafood.

Perfect for gatherings with friends and solitary sipping, the 2017 Brecon Grenache Adelaida sparkles in the glass like a sunlit ruby with a tasty balance of sweet and dry.

Welcome aromatics of strawberry and raspberry greet the nose followed by fruitiness supported with character.

Grenache grapes are infused with Tannat, Syrah, Malbec, and a skosh of Viognier grapes in this impressive summery wine.

Also in the tasting room is the 2017 Brecon Reserve Petite Sirah, crafted from intensely concentrated clusters of Palisades clone grapes grown in ridgetop calcareous soil on “the cooler side of Camp Roberts.” Accented with Petit Verdot and Cabernet Sauvignon to lend structure to the wine, this ripe and silky royal purple potion was ready to pour after just fourteen months of aging.

Arriving soon is Brecon Estate’s 2017 Meritage.

Stylistically similar to Brecon Cabernet Malbec (which seems to fly out the door), this Meritage features a quartet of Malbec, Cabernet, Cabernet Franc, and Petit Verdot grapes.

“In the meantime, our team continues to practice their voice projection to maintain proper social distancing for those who do come to pick up their Brecon wine, and we are fortunate to have an abundance of alcohol onsite for cleaning purposes!

We will continue to provide updates as more information becomes available. And, as always, ‘Keep Calm and Carry On.’”

KROBAR Distillery Producing Sanitizer for Hospitals, Emergency Responders and Local Businesses The Paso Robles-based distiller is currently working around the clock producing KROBAR Sanitizer to meet the huge demand from hospitals, and emergency service and public works departments. The sanitizer is also available to residents.

To do its part during the COVID-19 crisis, KROBAR Craft Distillery is repurposing its distillery from distilled spirits to hand sanitizer. Last week, the Paso Robles-based small business quickly changed its production facility to produce high-alcohol sanitizer, called KROBAR Sanitizer, to help equip area hospitals, emergency services and public works departments, and the general public.

Word-of-mouth news of the distillery’s pivot to hand sanitizer production resulted in an outpouring of calls from hospitals, as well as local government agencies, both locally and throughout California. As a result, KROBAR’s owners and staffers are working around the clock and upping production.

KROBAR has already donated hand sanitizer to local, regional and state agencies, including: Atascadero Fire Department, California Highway Patrol, Cal Fire, City of Bakersfield, Community Health Centers of the Central Coast, Compass Health, Mee Memorial Hospital (Salinas), Paso Robles Fire Department, San Luis Obispo Fire Department, SLO Paramedics and the SLO Food Bank. Local business have also been in contact to purchase supplies, including Ancient Peaks in Santa Margarita, Calif., which will provide 350 sanitizers to its staff and distributor partners.

“The key ingredient of sanitizer is high-level alcohol – and we can literally produce it by the tankful,” says Joe Barton, coowner of KROBAR Distiller. “So, the moment we heard hospitals and healthcare workers were struggling to find hand sanitizer, my co-owner Steve (Kroener) and our staff went to work.”

The hand sanitizer – made from 80-precent ethanol alcohol – is in compliance with the FDA’s strict guidelines and

is approved for use by hospitals, emergency responders and the general public. KROBAR Sanitizer can be used for hand cleaning as well as a surface disinfectant.

wenty years ago, the father-daughter ownership team of Lloyd Messer and Dana Brown made their dream of establishing a winery on a scenic westside mountaintop a reality. When Lloyd passed in 2006, Dana continued producing wine – with winemaker Jason Joyce – that reflected the place her father’s intuition had chosen in Paso Robles.

On Peachy Canyon Road, Calcareous Vineyard sits nearly 2,000 feet in elevation. Built to complement the location and enamor the visitor, a spacious tasting room with glass walls and wooden beams doesn’t upstage the sweeping views of Paso Robles and the Salinas Valley hillside Rich in limestone, the 442-acre outcropping would make any winemaker envious. The vineyards benefit from the coveted influences of the renowned Templeton Gap, where long, warm days are cooled by evening ocean breezes that make their way through a series of mountain passes.

Favorites and New Releases A new white wine release for spring is the 2018 Lily Blanc. As lovely as a wedding bouquet and pleasantly aromatic, Grenache Blanc and Viognier play nicely with rich textures of honey-colored Roussanne and a touch of banana fruit on the nose. It has a clean

finish that will flatter Thai dishes, roasted pork loin, chicken salad or shellfish.

The 2017 Tres Violet is the flagship of Calcareous Vineyard.

Lush with blueberry, black raspberry, and mocha, this sophisticated Rhône-style wine of Grenache, Mourvèdre, and Syrah finishes beautifully with lasting impressions of structure and minerality. Named a Double Gold winner by the San Francisco Chronicle and awarded 92 points by Wine Spectator Magazine, this sophisticated Rhône-style wine is a favorite among Calcareous Vineyard’s wine club members.

For those who love Syrah varietal wines, be forewarned: the Syrah always flies out the door. Intensely magenta in color, the 2017 Calcareous Syrah has a pronounced wild berry fruit flavor. Rich caramel tannins balance nicely with vivacious acidity in the finish. Pair this versatile wine with stuffed Portobello mushrooms, spicy sausage alfredo pasta, Kobe burgers, and grilled meats. This wine has enjoyed accolades.

Calcareous Vineyard’s 2017 Lloyd is a Bordeaux-style blend of Merlot, Cabernet Sauvignon, Cabernet Franc, Malbec and

Petit Verdot. Deeply jewel-toned and full-bodied, this fruitforward stunner layers blackberry and sweet cola nuances on a balanced foundation of acidity and smoky tannins. After harvest, each varietal is handled separately and blended after primary fermentation. Pair this wine with formidable foods, like bacon macaroni and cheese, vegetable lasagna, or braised short rib and carrots on mashed potatoes.

The newly released 2017 ZSM is an interesting blend of Zinfandel, Syrah and Merlot that’s jammy, with a bigger body, but with a smooth finish. Aged in American oak, this wine is dressed to impress and will hold its own with everything from charcuterie cheeses to beef steaks.

Another new release is the 2017 York Mountain Cabernet Sauvignon. A dark amethyst in a bottle, a mingling of ripe blackberries, black cherries, and acidity that are anchored by leather. This wine has lots of dark fruit, pepper and earthy notes. Aged in new oak, this Cab drinks smoothly with a wonderful, long finish. Buy at least two – one to enjoy soon and some for the cellar to mature nicely for a decade or more.

Wine & Artisan Cheese Pairings During regular business hours, an Elevated Seated Wine and Artisan Cheese Pairing is available on the terrace from 10 a.m. to 4 p.m., weather permitting. Learn about pairing wines with artisan cheeses to get the most out of both in this hourlong demonstration. The cost is $35 per person and $20 for Wine Club members.

SAN LUIS OBISPO COUNTY

Meyer Lemon, Pistachio & Parmesan Bucatini Recipe by Calcareous Chef: Destiny Shannon *Bucatini, also known as periciatilli, is a thick spaghetti-like pasta with a hole running through the center.

This recipe uses Calcareous Meyer Lemon Oil. Yields 2 - 4 servings INGREDIENTS: 1 lb. quality dried bucatini or spaghetti 1/4 cup chopped pistachios 5 cloves fresh garlic 1 whole lemon (use for zest and juice) 1/4 cup Calcareous Meyer Lemon Oil

1/4 cup room temperature water 1/2 cup Parmigiano-Reggiano Approx. 1/4 teaspoon red chile flakes (adjust to heat preference) Sea salt and cracked black peper to taste PROCEDURE: Start a large pot of boiling water; heavily salt the water.

Peel five cloves of garlic and submerge for 2 minutes in boiling water, remove with slotted spoon and put directly in blender or food processor. If using a hald-held blender stick, put garlic in a glass bowl or jar.

Next, add the quarter cup each of Calcareous Meyer Lemon olive oil and the room temperature water. Blend until completely smooth. Set aside for now...This is your sauce!

Zest and then juice the whole lemon and add to your sauce mixture. I suggest a pinch each of sea salt and cracked pepper be added to the sauce as well.

Boil your pasta according to the package direction for “al dente.” While pasta is cooking – get your sauté pan out, add all of the sauce and place on medium heat. Add chile flakes and chopped pistachios to sauce. Spoon out a small amount of pasta water and also add to saute pan to naturally thicken a bit.

Once pasta is al dente, remove from pot and immediately add UNRINSED pasta to saute pan full of sauce and toss with tongs quickly. Remove from pan and place into 2-4 portions. Cover in freshly grated parmesan cheese. * A toasty baguette and Calcareous Estate Chardonnay are excellent accompaniments to this meal.

Rhône Varietal Wines

Light-Bodied and Savory to Powerful and Voluptuous The Rhône is a major river in France that runs south towards the Mediterranean Sea and rises in the Alps. This river shares its name with the southern French wine region on its banks, called the Rhône Valley, as well as its major French appellation, Côtes du Rhône. The Rhône Valley is a long north-south valley that uniquely offers both Continental and Mediterranean climate profiles.

There is a wide range of grape varieties that grow in the Rhône Valley and the wine expressions can vary from being powerful and voluptuous reds made from Syrah, Grenache, and Mourvèdre, to light-bodied and savory whites from the Viognier and Roussanne grapes. These varietals, and others grown in the region, are referred to as the Rhône grapes and

regardless of their place of origin, wines made from these grapes are known as Rhône-style wines.

Rhône-style wines can be characteristically rustic and meaty, while others can be quite light and lyrical. Descriptors for red wines include warm red fruit flavors, roasted meats, smoky fires, and spices. These wines are simultaneously robust in ripe fruit and savory in dark spices with a firm tannic structure in their youth. The red wines can sometimes be quite lush and rustic. The best of these wines can be aged for quite a long time. Rhône-style white wines can be supremely elegant and textured with aromatic floral notes of apricot and summer blossom or an herbal earthiness reminiscent of freshly planted

Preheat the oil, in a heavy pan or pot to 350 degrees.

Combine the flour salt, black pepper, garlic powder, and cayenne until thoroughly mixed.

Pour the buttermilk into another bowl large enough for chicken to fit in.

One at a time place the thighs in the flour mix … then dip them in the buttermilk and then put them back in the flour mix and coat them all over.

Make sure the flour mix is pressed onto the wet chicken.

Slowly put the chicken into the oil. The chicken should not be crowded in the pan/pot. Just enough so they all have some space.

Southern Fried Chicken INGREDIENTS

One pack of chicken thighs (boneless) Vegetable oil of choice for frying the chicken (don’t use olive oil) • 6 cups of flour • 5 tablespoons salt • 4 tablespoons pepper • 2 tablespoons garlic powder • 2 tablespoons cayenne pepper, or cajun • •

Cook until a dark golden brown. This is probably about six minutes. But you can check with a thermometer, pull out a piece and check a couple of places to make sure its 165 degrees.

Pull the rest out and let sit. (I check pretty much every piece for the right temperature, thicker pieces might need a few more minutes). I toss just a sprinkle of salt and pepper over the chicken right now.

I just tried this recently with CrossHatch White (Patina) and Rosé (Shape) and both were perfect compliments for the chicken. The white played off the spices in the chicken crust, while the Grenache in the rosé blended so nicely with the rusticity of the dish. Enjoy.

The Central Coast is a large area filled with cowboy-friendly ranch lands, sunny warm hills, miles of romantic coastline and picturesque wineries. Similar to the Rhône Valley, this region also extends north-south along the coast from San Francisco to Santa Barbara.

The wide range of climactic conditions similar to the Rhône Valley in France also gives this New World area a unique spectrum where the Rhône varieties flourish.

Rhône varietals can be some of the most dynamic and delicious wines, especially those from this consistent growing region of the Central Coast. These wines can also offer great value for their quality.

4/20 & Earth Day – Celebration of Cannabis & Mother Earth As those of us in the cannabis world know, April is the time we come together to celebrate 4/20. For purists, it’s smoking a joint at 4:20 p.m. on 4/20. And they say stoners lack precision!

You can Google 4/20 to find a list of celebrations that may have been planned around the world for this coming 4/20. However, as of this writing, this April looks to be a rather unique April on planet Earth. Large events and small get togethers have been restricted in many places including the Central Coast.

The present pandemic of Coronavirus is the consuming focus of global attention. People around the world are anxious as so many people continue to catch this fast spreading contagion.

Avoiding large gatherings, practicing social distancing, selfquarantining, diligently washing your hands are some of the present guidelines for avoiding contamination.

Cannabis dispensaries have been deemed essential and are expected to stay open. Many establishments are delivering or creating a safer method for pick up. To stay safe do not share pipes, bongs, or joints. Clean and sterilize your glass regularly.

While at home you might want to pull out a Magic Butter Machine or a Crock Pot or use your stovetop to infuse some good California extra virgin olive oil with fresh or dry cannabis.
