JULY IS ARGUABLY THE BEST TIME TO CELEBRATE LIFE IN THE PACIFIC NORTHWEST. The sun is shining, the mountains are out, and all those months of gray weather become a distant memory. To kick off the season, we touched on the classics. Read about Mount Rainier’s impressive economic impact on local communities last year (page 24). Usually more focused on how to climb it, I was completely unaware that the iconic mountain contributes so heavily. The statistics you’ll find in the article are part of a larger study that encompasses dozens of other national parks, and it’s truly fascinating. I encourage you to follow the link provided and find out more about your favorite spots around the country. In the same vein, you can learn a little more about the historical impact Lake Diablo has had on the area (page 46). Who knew the forest around it used to be home to exotic animals and orchids? Although the landscape defines a lot about our community, the people are far more impressive. Read about a Seahawks fan who became a successful fashion entrepreneur after having a moment of inspiration on page 52. The Tateuchi Center, a $195 million performing arts development project planned for downtown Bellevue, has named Ray Cullom its new CEO. Cullom’s previous 20 years of experience in the not-for-profit arts industry includes the management of five Off-Broadway theaters and the oversight of the construction of a massive performing arts center in Istanbul. Prior to his time in arts management, Cullom also worked as an actor, director, and designer. “I didn’t see that there was anywhere better than this community to come in and to challenge the people who live here, the corporations who live here, to partner with us to come and discover what that next generation of performing arts spaces is,” Cullom said.

BOTHELL ‘WALK ANYWHERE COMMUNITY’ TO OPEN SUMMER 2019 Kirkland-based real estate developer MainStreet Property Group recently began construction on a four-story mixed-use residential and retail building next to Pop Keeney Stadium and McMenamins Anderson School in Bothell. The construction, dubbed The POP, is scheduled to open late summer 2019. Located at 9634 Thorsk Street in downtown Bothell, the building will contain 122 apartment homes and 10,000 square feet of ground-floor retail space. Specific amenities will include a pop artfocused street basketball court, a walking path around the building, and a courtyard featuring high-tech outdoor work pods.

PCC Community Markets’ roots are spreading with the company’s latest announcement today that it will open a 25,000-square-foot store in the Bellevue South project, located on the Southeast corner of Northeast 4th Street and 116th Avenue Northeast. Bellevue will be the co-op’s fifth Eastside location. The Bellevue PCC is slated to open in 2020, and will provide about 100 union jobs. Other PCC Community Markets on the Eastside are located in Kirkland, Issaquah, Bothell, and Redmond, which recently was remodeled.

The volcano that is a constant presence on our horizon actually provides a large boost to our local economy. Here’s just how much it brought in last year.

new National Park Service (NPS) report shows that more than 1.4 million recreation visitors to Mount Rainier National Park during 2017 spent $50.6 million in communities surrounding the park, resulting in a net impact to the economy of approximately $63.5 million. This spending supported about 621 jobs in the local area, not including the 100–105 permanent and 175–185 seasonal staff working directly for the park and another 450–500 commercial concessions service employees working in or near the park. Over the past five years, visitation to Mount Rainier National Park has steadily increased, and the park anticipates this trend to continue in the summer of 2018.

“Mount Rainier National Park welcomes visitors from around the Pacific Northwest, across the country and around the world,” said Superintendent Chip Jenkins. “National park tourism is a significant driver in the national economy, returning ten dollars for every dollar invested in the National Park Service, and it’s a big factor in our local economy as well. We appreciate the partnership and support of our neighbors and are glad to be able to give back by helping to sustain local communities.” The information for Mount Rainier National Park is part of a peer-reviewed visitor spending analysis conducted by economists Catherine Cullinane Thomas and Egan Cornachione (US Geological Survey) and Lynne Koontz (NPS). The report shows $18.2 billion of direct spending by 330.8 million park visitors in communities within 60 miles of a national park. This spending supported 306,000 jobs nationally; 255,900 of those jobs are found in these gateway communities. The cumulative benefit to the U.S. economy was $35.8 billion. According to the 2017 report, most park visitor spending was for lodging/camping (33 percent) followed by food and beverages (28 percent), gas and oil (12 percent), souvenirs and other expenses (10 percent), and admissions and fees (10 percent). Last year Nancy Juetten had an epiphany—she was in the dark about a lot of crucial financial information and household operations. Her husband, Steve, is a financial planner, so it naturally fell into his wheelhouse to manage it. Earlier this year, Nancy and Steve launched Life Goes on Roadmap, a digital program (that mimics a road trip) families can use to compile, store and access all their vital information.

Reflections magazine: What was the impetus for Life Goes on Roadmap? Nancy Juetten: I noticed on social media how so many people I was connected to were being affected by tough situations that were totally random and lifechanging. A gentleman I knew, at 60, went into the hospital with the flu and died. Someone else got divorce papers served after 32 years of marriage. Another was diagnosed with a life-threatening illness. It was sort of a wake-up call. These things were happening to other people, but I’m in the same age range— I’m close to 56, and my husband is 65. I said to my husband, “I know we’ve got our act together, but if something happened to you right now, I don’t know if I would be able to pick up the pieces.” It was a blind spot. RM: How did you start that tough conversation? NJ: I told him if I could have a Christmas gift that would be it—to organize all the key things that keep our lives running. RM: What were the key pieces of information you wanted? NJ: Information about the safety deposit box, bank accounts, all kinds of online accounts and their passwords, property and investment information, insurance policies, doctors, wills, personal contacts—all the real things you to need to know. He created an organizer, a low-tech spreadsheet, and we spent a Saturday filling it out. It gave me such peace of mind that I thought, We should share this with the world. RM: What was the biggest surprise you experienced throughout the process? NJ: We started having all these important conversations between us that had been delayed for a very long time. That’s what’s been most rewarding with other people too; it’s all about igniting the right conversations. RM: At what point did you take this idea and turn it into something you could help other people with? NJ: We started sharing the idea on Facebook and got a dramatic response. We put out a useful report people could download and kept refining the guidebook. About 2,000 people downloaded it in a short time, since February 8.

RM: How did you keep it light so people don’t get overwhelmed by the doomand-gloom of talking about such heavy topics? NJ: We gamified and incentivized it by creating a virtual road trip with 16 different sections. One of our main objectives was to keep it fun. RM: You’ve now taken quite a few people through this virtual road trip. How have their reactions been? NJ: Everyone has said how empowering it is. If something were to happen to your partner, you can put your hands on all the important paperwork, and it’s one less thing to worry about. One couple realized they didn’t know any of the waste bill information. Another gentleman couldn’t find the deed to his house he paid off five years ago. The average human has hundreds of accounts each with different passwords and access questions; if you’re the only person who knows what they are, you’re in trouble. RM: How do you keep all that information protected? NJ: Once you go through the process, you then save all the information on an encrypted thumb drive. riginally created in Spain, sangria is a summer drink that’s crisp and cool. The wine punch has deviated far from its origins: now flavors range from bubbly sangria to rosé, red and white sangria. The early Greeks and Romans drank “hippocras,” which was alcohol or wine mixed with sugar and spices (much like mulled wine). The most likely source of Spanish sangria, hippocras was a popular drink because wine and alcohol were seen as “clean” compared to water, which might not have been. Similarly, a touch of alcohol made other liquids drinkable and mixing it with fruits had a similar disinfecting effect. People who lived in modern-day Spain were doing something very similar with grapevines and wine around 1100 BC. Variations on house sangria—which means blood in Spanish, in reference to the red wine used—ruled in Spain until spreading through England and France in the 1700s and 1800s. In the US, a love for summer sangria dates back to 1964 when the World’s Fair in New York City featured the drink. Today, under European law, all sangria must be made in Spain or Portugal and have less than 12 percent alcohol by volume. However, we believe the best sangria can be made in your very own kitchen.

On a charcoal or gas grill, place grapes on a perforated grill sheet and grill them over high heat, tossing occasionally, until the skin just begins to break, about six minutes. Transfer the grapes to a plate to cool completely. STEP 2

Meanwhile, grill the orange and lemon wheels over high heat, turning once, until lightly charred, about six minutes. Transfer to a plate to cool completely. STEP 3

Combine all the ingredients in a pitcher, and let sangria stand at room temperature for three hours, or cover and refrigerate overnight. Serve in wineglasses over ice.

On a recent trip to Barcelona, Bellevue Club Executive Chef Justin Sledge was inspired to bring back another Spanish summer classic: paella. With similar origins to sangria, paella is one of the most popular global dishes. However, defining paella is nearly impossible; understanding a bit of its history can help explain why. Paella was originally cooked over a fire during lunchtime for farmers and laborers. It was made with rice and any other ingredients to be found in the countryside: tomatoes, onions, snails, beans, et cetera. Rabbits, duck or chicken would also be added for special occasions.

As the recipe grew in popularity and moved toward the coast, various types of seafood were added to the dish. Now paella is the generic name of 200 or so distinctive rice dishes originating from Valencia, while other regions of Spain and the rest of the world also use the term for rice dishes. To this day, a true Valencian paella contains no seafood but rather a mixture of chicken, rabbit or sometimes snails with beans, tomatoes, spices and rice. However, we think the best paella can be made with any ingredients you crave. Chef Justin Sledge shares his favorite recipe:

• 2 cups chicken stock • 1 pinch saffron • 2 tablespoons olive oil • ½ yellow onion, diced • 1 teaspoon minced garlic • 1 red bell pepper, diced • ½ cup Spanish chorizo, diced • 1 cup Spanish Bomba rice (may be substituted with a similar, short-grain rice) • 2 tablespoons chopped parsley • 6 fresh mussels • 6 fresh clams • 4 shrimps • ½ cup English peas • 2 sliced scallions for garnish

In a large saucepan, bring the chicken stock and saffron to a boil, and then turn off the heat and reserve. Heat a medium-sized clay cazuela or stainless-steel paella pan to medium-high heat and add the oil, onions and garlic. Sauté until tender and then add the bell pepper. Cook for a few minutes, and then add the chorizo and rice. Toast the rice for a minute or two while stirring, and then add one third of the chicken stock. Let the rice and stock cook at a light boil until almost dry and then add another third of the stock and continue to cook at a low boil. When almost dry, season the rice with salt, pepper and chopped parsley and then arrange the clams, mussels, shrimp and peas in the rice so that the top of the shellfish are standing up. Pour the remaining stock over the top and cover the pan for the last five minutes of cooking. When done, the rice and shrimp should be cooked and the shellfish should be opened up. Garnish with the sliced scallions and enjoy.

A quick transition can mean the difference in a race that comes down to the wire. Practicing transitions as a beginner or intermediate triathlete will set you up for success in the future. A triathlon consists of three continuous and sequential endurance disciplines. The most common being swimming, cycling and running. Triathletes compete for fastest overall course completion time, including timed transitions between each component. As a veteran triathlete and USA Triathlon certified coach, Bellevue Club Fitness Director Stacy Munn shares her tips and tricks to a tactical transition. “Just like swimming, biking and running, practicing transitions will make you a better triathlete. Have a plan, and practice it before your race,” Munn says. “Shaving off 30 seconds in your transition time can make a big difference in your overall standings.”

Transition One: Swim to Bike • Do a visual walk-through of the full path from exiting the transition “swim in” to your bike, then “bike out.” Studies show that visualizing yourself calmly moving from one step of any routine to another will decrease the amount of unnecessary adrenaline that could distract you. • Leave your cap and goggles inside the sleeve of your wetsuit when stripping it off as you’re running to the transition area. • Do not sit down in the transition area to take off your wetsuit or put on your shoes. • Leave your bike in an appropriate gear when you rack it. Make sure it’s not a hard gear to push. • Don’t wear your race number on your body during the bike portion unless the race specifies you have to. In most races, you only need a race number on your bike, not your body.

Transition Two: Bike to Run • Tying your shoes in the transition area takes time. Eliminate this step by using speed laces. • To help your feet slide into your running shoes smoothly, prime them with baby powder. • Keep moving along the course while you’re putting on a visor, fuel belt and sunglasses rather than standing in the transition area. Remember, practiced and smooth transitions can help with a lot more than just your time. Athletes that can transition from one leg to another quickly while conserving energy have a clear advantage going into the next leg.

POWER TO THE LAKE On a boat tour of Lake Diablo, learn how this gorgeous spot in the North Cascades lights a city.

J.D. Ross, known as the father of Seattle City Light, was passionate about bringing hydroelectric power to the people—and he hoped everyone would take as much joy in electricity as he did. So the second superintendent of Seattle City Light made a plan to keep the public utility in the spotlight. In the 1930s, he created a rather fantastical tour of the Skagit River in the North Cascades, where dams provided (and still do provide) a large chunk of Seattle’s energy needs. Tour-goers were treated to a rainbow light show, an island populated by monkeys and albino deer, exotic flora like banana plants and orchids, music playing from phonographs and amplifiers hidden in the hills, and even a legendary fried chicken dinner. The self-taught engineer’s goal was to impress people with the potential of electricity, and maybe even get them to buy bonds so the project could continue to expand. It worked. And more than 80 years later, the tours are still happening—although the albino deer and monkeys are no longer part of the show (most of the deer unfortunately became meals for mountain lions, although you’ll still occasionally see a lighter-colored descendant in the area).

Today, Seattle City Light, North Cascades National Park, and the North Cascades Institute come together to offer a handful of tours, the signature of which is the Diablo Lake & Lunch. The half-day tour starts by boarding the Alice Ross IV, a comfortable vessel with both heating and air-conditioning, plus an open deck and a glass-ceilinged cabin. As you cruise past breathtaking views of mountains, waterfalls, and islands, you’ll see parts of the lake that aren’t visible by road or trail. Getting there is a little simpler than it was way back when. Today, it’s a relatively easy two-and-a-half-hour drive from Bellevue. In the early days, it required a few additional modes of transportation: a drive to Rockport, then a train ride to Newhalem, followed by a sideways car up the mountain to the lake. You’ll learn all about that cultural history on the tour, along with the area’s natural history, biodiversity, and geology. For example, just how does Lake Diablo get that picture-perfect bluish-green hue? Thank the glaciers that melt into the lake. Follow along with the trials and tribulations of the early explorers and settlers in the area, through to the challenges of building the three Skagit River Hydroelectric Project powerhouses and dam —Gorge, Diablo and Ross—in such a remote location.

CLEAR Lesley Grosvenor is a sports fan who also loves fashion. ONCE she spotted the potential, Grosvenor reached out to some friends turned business partners who were already involved in the sports fashion arena, Ariana Wellington and Alex Menichini. Their experience combined with her own lifelong passion and education in fashion proved fruitful. Two years after launching, SHEERGEAR has grown rapidly. Last year they grew 900 percent and are consistently coming out with new lines (including a new resort line) and styles of their BPA-free plastic purses that come with colored accessories to go with your favorite teams. The purses are currently sold at dozens of NCAA schools as well as through Fanatics and Amazon. “We started out focusing on football, but NCAA basketball arenas now require plastic bags too, so it’s really a year-round thing,” Grosvenor says. “And the thing that’s really great about our bags is they aren’t onetime use. They are meant for all of everything—NFL games, basketball games, concerts. So many events now require clear bags, and you can change the color pom-pom according to where you’re going.”

GROSVENOR says she knew she was filling a hole in the market but has been stunned with how well the lines have been received. “I can’t describe how proud I am. I poured my heart and soul into the design of the purses and there’s nothing more exciting or a greater compliment than when people love it and appreciate it,” she says. PARADISE IN PORTUGAL After a few days in Lisbon, the capital of Portugal and home to medieval castles, cobblestone alleyways and Gucci storefronts, I sat in a small café at the train station waiting for my ride to Lagos. Crowds of Portuguese professionals and travelers were rushing by when a group sat near me that immediately stood out: three young men, all with bleach blonde hair, heavy tans (especially for spring) and flip-flops. They were Australian, clearly experienced surfers, and, like me, headed to the coast—to the Algarve.

When I booked a trip to Lagos (a city within the larger Algarve region), I knew there were beautiful beaches and rugged grottos. I knew the seafood would be fresh and plentiful, and the vino expertly made in the nearby wine-centric city of Porto. What I didn’t realize until seeing those surfers, and subsequently the coastal landscape, was that the southern tip of Portugal—a seemingly well-kept secret—is a European Mecca for the wellnessminded traveler, especially for those with a healthy sense of adventure.

HOW TO GET THERE There is no international airport in Lagos, so you have to fly into Lisbon or the smaller city of Faro and take a train from either. If you’re eager to spend a few days in the cultural hub of Lisbon (highly recommended), opt for the easily navigable fourhour train ride from there. You won’t be disappointed with the picturesque countryside views and pleasant company of other travelers found along the way.

Upon arrival, the white-washed buildings and open-air markets immediately speak to the coastal lifestyle that dominates the region. Within the bustle of the historical city center, there are plenty of places to stay, but a short taxi ride from the train station will take you to a heavenly property perched on a verdant cliffside overlooking the ocean. The Boutique Hotel Vivenda Miranda is an 18th-century traditional Portuguese-style residential house that was transformed into a 28room boutique hotel, complete with a full-service spa, restaurant, garden yoga studio, private pool, fitness room and direct access to miles of beach and cliffside trails. “You sit on the terrace and within minutes you can’t imagine that the world is still going on elsewhere,” says Dörte Ahlgrimm, director of communications. “There are 180 degrees of stunning ocean views. You can relax and really let go.”

Aside from the stunning visuals, the property is perfectly crafted with wellness in mind. Fresh local food is a major component to the overall experience, and the rotating menus contain roughly 60 percent vegan and vegetarian options. However, they do provide plenty of seafood (most of which is caught on boats you can see dotting the horizon from your room) and meat options for those who want them. In between meals at the Mirandus Restaurant, guests can head to the spa for full-body salt scrubs, healing massages and facials highlighted with organic products from Natural Remedies or enjoy an outdoor yoga class in the breathtaking garden.

WHAT TO DO

Beach and water-based activities dominate the Algarve, and Lagos is no exception. A refuge for surfers, kiteboarders, boaters and sailors, the waves are consistently good and the beaches far less crowded than expected considering the surplus of natural beauty. With numerous semi-private beaches accessible by boat or foot, there’s a spot for everyone, even those just looking to curl up with a good book. Locals praise a town called Sagres, located a few miles north of Lagos, as the best surf spot in the Algarve, but the beaches of Lagos can certainly hold their own and include a few friendly beachside bars. For many visitors, the highlight is the cliff hiking. There are endless trails that follow the rugged coastline, and they can get as adventurous as you want, with stairs carved carefully into the natural rock. The most picturesque hiking spot in Lagos is arguably Ponta de Piedade, a cavernous cliffside with bright blue swirling pools and a lighthouse looking over the ocean. Boat tours given by knowledgeable locals through the grottos and caves are common and well worth it. “I go to the ocean to lose my mind and find my soul,” Ahlgrimm says. “I’m a water person. It has a very special power, and it makes you feel at peace.” After a day’s activity, a 20-minute walk (or five-minute drive) from Vivenda Miranda will take you back to the city center where the nightlife consists of delightful wine bars and quaint shops. And if you do want to escape the beach for a day, Ahlgrimm says you can always take a jeep tour through the Monchique Mountians that loom in the distance.

WHERE TO EAT

With charming fishing boats constantly trolling the waters, it’s no surprise seafood reigns king in the Algarve—specifically the sardines. One cab driver, a local to Lagos, explained the superior taste is due to the location. Lagos sits on a point where the water is a unique mixture of Mediterranean and Atlantic waters that results in a flavor all its own. He suggests preparing the sardines (or ordering them) simply with salt, pepper and olive oil to savor the unparalleled taste and eating them only from mid-May through October for peak plumpness. However, while the sardines are world-renowned, he says the true delicacy of the region is percebes, also called gooseneck barnacles. The quirky looking mussels grow on the grottos and rocks and are notoriously dangerous to harvest—hence why they are rare and somewhat of a splurge. They are seasonal, so if you get the chance to try these naturally salty delicacies, take it. These and other seafood staples—like cod and prawns—fill the menus of the many restaurants in the city center of Lagos, so take your pick and enjoy with a glass of Porto, the official wine of Portugal. “I suggest that once you get to the city, you just follow your nose,” Ahlgrimm says.
