Whether you know it or not, you experience Bellevue Club member Brian Brand’s work often. He is a founding partner of Baylis Architects, the firm responsible for the fitness expansion of the Club completed roughly a decade ago. Brian’s signature style—expansive views, use of natural light and contemporary accents—is evident in the indoor-outdoor yoga space, the aerobics studio and studio four, which showcases Mt. Rainier on a sunny day if you get the right treadmill. I was lucky enough to talk with Brian about the role architecture plays in the local community and lives of those who inhabit his buildings. You can read more about his story on page 56. Brian isn’t the only person who talked about the impact and importance of home life. Writer Samantha Lund decided her cleaning supplies needed a major overhaul, and you can reap the benefits of what she learned about toxic home products on page 34. Lastly, local nutritionist Dr. Mark Adams provided insider tips on how to make the most out of your next roasted chicken. He shares two recipes, one for how to roast a whole bird and one for making bone broth. See his recipes on page 38.

EASTSIDE HEALTHCARE PROVIDERS UNITE

Local organization connects large hospitals with private practice providers to reduce cost and repetitive tests The Washington Health Alliance last month released a report citing that approximately $341 million was wasted on superfluous healthcare tests and treatments in Washington state during a one-year period. The report examined 48 measures of common medical tests and treatments, and ultimately discovered that 47 percent of performed medical services were found to be wasteful. Additionally, of the 2 million patients receiving the services examined, more than 1 million received care considered low-value. One Eastside organization is working to reduce this waste through a clinically integrated network, or CIN, known as the Eastside Health Network (EHN).

CLEANING UP YOUR CLEANERS IT’S TIME TO THINK TWICE ABOUT HOUSEHOLD CLEANERS.

We read the nutrition labels on the food we eat, we read the labels on our clothing and we strive to use soaps and makeup that are natural. Why would you put something in or on your body that you don’t trust? Why are household cleaners any different? United States regulations on household cleaners are lax to say the least. Manufacturers know the loopholes, and to this day don’t have to list every ingredient in their solutions. Many of our go-to cleaners are made with carcinogens, endocrine disruptors and neurotoxins. It’s no surprise that using bleach-based wipes on the countertops you’ll later use for meal prep isn’t the best idea. But what about toxins that are less obvious? Making the change to a toxin-free home can be intimidating. Even essential oil fragrances can be toxic to pets (please avoid lavender essential oils around your dogs and cats).

Roast a Chicken AND MAKE BONE BROTH

Picking up a rotisserie chicken at the store is simple and can be a good dinner option, depending on the quality of the chicken and the pace of your day. But making a whole chicken at home in a CrockPot is super simple—and all it takes is trying it just once to get it right. Even better, it is as simple to make homemade bone broth from the same chicken with very little extra prep time or cost.

The first recipe below is for a whole chicken in a slow cooker/Crock-Pot; it turns out great every time, and you can make it in the morning or at night. The second recipe is for homemade bone broth to drink, cook with, or freeze for later. You can sip it like hot tea—or use it in place of water to cook rice, quinoa or soup for added flavor. Usually, I get three quarts from this recipe. In restaurants, the fat is often skimmed away to create a more neutral stock flavor that can be used in a wide variety of preparations. I personally do not skim the fat because I like to keep as much flavor and nutrition as possible, which is a whole lot in this homemade broth! Finally, a quick note on the nutrient profile. Bone broth typically has eight to 10 grams of protein per serving, compared to one to two grams of protein in regular chicken stock or broth.

whole roasted chicken Prep time: 10 minutes Cook time: four to five hours INGREDIENTS 1 teaspoon salt 1⁄4 teaspoon pepper 2 teaspoons paprika 1 teaspoon onion powder 1 teaspoon Italian seasoning 1⁄2 teaspoon garlic powder 1⁄4 teaspoon cayenne pepper 1 onion 1 whole chicken (about three to four pounds) PREPARATION • Combine the dried spices in a small bowl. • Loosely chop the onion, and place it in the bottom of the Crock-Pot. • Remove giblets from the chicken, and save them in the fridge for the bone broth. • Rub the spice mixture all over the chicken. Put some inside the cavity and under the skin, covering the breasts. • Place the chicken on top of the onions in the slow cooker, breast side down, cover, and then turn cooker on to high. There is no need to add any liquid. • Cook for four to five hours on high ( for a three- or four-pound chicken), or until the chicken is falling off the bone. If you will be gone all day, cook the first hour on high and then turn to low for eight to nine hours. bellevue club march 2019 | 41

FRIEND WORKOUT

There are many reasons to find a consistent workout buddy. In fact, experts say this might be the best option in terms of accountability. A 2016 study published by University of Aberdeen reports, “a new exercise companion increased the amount of exercise people took. This was increased even more when the new partner was emotionally supportive.” Finding an exercise partner you enjoy can also bolster inspiration, creativity and a healthy competitive spirit that can push you harder.

SAME SCHEDULES Because accountability is one of the greatest benefits of working out with a partner, finding someone with a similar schedule is crucial to making the relationship work. If either party is constantly cancelling, it can work against you and leave you frustrated. ATTITUDE Whether you’re a glass half-full person or not, it’s important to enjoy the temperament of your partner. You don’t want to spend your time with someone who puts you in a negative state of mind. SIMILAR GOALS You don’t have to share the exact same goals, but it helps to be working on similar skills or with similar equipment. This will maximize your time spent together. Oftentimes, people who struggle through a tough workout form strong friendships that can go beyond the gym.

HOW TO PICK YOUR PLANT PLACEMENT

The first question is: Where will your plant live? Especially in Seattle, choosing a low light plant to begin is always a smart call. “What most people don’t realize is that all the care instructions for plants are written in Florida,” Stearns explains. “So those instructions don’t make sense for people living in Washington. Here, we’re working to educate people about each plant and how to care for it in this area specifically.” ATTENTION

The perfect mix of health benefits and style, indoor plants have become a staple in Pacific Northwest homes. For newbies to the houseplant club, there’s a team of green thumbs in our backyard here to help. Urban Sprouts, a boutique plant shop located in Renton, is home to five indoor plant experts that are eager to find the perfect plant for everyone. If you’re starting your own indoor jungle, the options are endless. Urban Sprouts offers classes, tutorials and even has a 24/7 hotline for plant emergencies. If you can’t get enough plants, they offer subscription programs that deliver monthly. With the help of Urban Sprouts owner Jen Stearns, here’s everything you need to know before you grow.

How often do you want to care for your plant? If watering it once a week seems daunting or pruning is nerve-racking, then look for a low maintenance plant like Sansevieria or “Snake Plant.” If you’re okay with a watering schedule, you can branch out. STYLE

Even with limitations on light, temperature and attention, finding a plant you like is key. The more you identify with your plant, the more likely you are to take care of it. bellevue club march 2019 | 51


SPECIES FOR SEATTLE POTHOS

The vine-like plants you see stretching across cabinets or down shelving units are called Pothos. Like Dracaena, they come in several shapes, colors and sizes to fit any style. Pothos also require very little light and can even tolerate office light instead of natural light. The only thing Pothos can’t handle is direct, hot sunlight.

SNAKE PLANT

A type of succulent, the Snake Plant (Sansevieria or Mother-In-law’s tongue) is the perfect plant for beginners. The tough leaves can tolerate little to no sun and occasional watering while thriving in traditional indoor temperatures. DUMB CANE

Just as the name suggests, these plants are simple to maintain. They’re usually large and leafy, but adaptable to different types of lighting and conditions. Dumb Canes, or Dieffenbachia, come in several colors and sizes and are usually seen in office environments since they require very little attention. ZZ PLANT

The Zanzibar Gem, known as the ZZ plant, is catching its stride in 2019 as one of the most requested indoor plants. ZZ Plants can be small enough to sit on a desk or big enough to look shrub-like. They tolerate low light conditions and very little watering. One of the only ways to kill a ZZ plant is to overwater and give it too much attention. DRACAENA

If you have a plant in your home now, it’s probably a Dracaena. They are light and water tolerant, but most importantly, they come in several shapes and sizes. From tall and thin to short and leafy, Dracaena can be pruned to any size and their leaves will tell you when they need water by drooping.

Indoor plants reduce carbon dioxide levels, increase humidity, reduce pollutants and dust, and keep air temperatures down. “NASA ran an experiment using different plants to improve air quality and found that from one plant to the next, there was very little differentiation in their effects,” Stearns says. “Indoor plants are definitely beneficial, but picking a plant just because it is the best at cleaning air really isn’t the way to do it.” REDUCES NOISE POLLUTION

Plants have been used for years to reduce noise from traffic along roads, but more recent research confirms that plants can help reduce background noise in buildings. Whereas water features reduce noise by cancelling it out, studies indicate that plant leaves absorb noise all together making living spaces quieter and calm. IMPROVES WORK ETHIC

Studies show that offices and schools have higher rates of success when plants are present. Being around plants improves concentration, memory and productivity up to 20 percent. FIGHTS ILLNESS AND ALLERGIES

Research shows a correlation between hospital patients recovery time and plants in the hospital rooms. A study from Kansas State University found that post-operative patients with plants in their rooms had faster recoveries than those without and requested fewer pain meds. Plants have also been proven to fight allergens by exposing a household to year-round allergens, acting like an allergy shot to lessen those symptoms over time. REDUCE STRESS AND DEPRESSION

Houseplants promote happiness. Several studies link indoor plants to reduced stress and anxiety. Humans have a connection with nature that scientists refer to as “biophelia,” which means we feel calm and tranquil when around plants and nature.

TAKE A WORKSHOP Urban Sprouts offers several workshops each month including classes on Moss Wall Hangings, Planter Painting and Soap Making. Make Your Own Terrarium classes are offered each month, covering the logistics and proper setup of a hanging or desktop terrarium. With a variety of plants, seeds, mosses and stones, every participant walks away with a completely unique piece. All ages are welcome and wine is included for participants over 21. The booking fee is $20, which covers a $10 class fee and a $10 credit toward supplies. Terrariums can be made at a wide price range, from $25-$150, your piece can be as intricate as you like. REGISTRATION AND CANCELLATION POLICIES REGISTRATION FEES: Payment for programs is billed at the time of registration. Program fees cannot be prorated. Payment for services is billed the day of the service (Fees subject to change.) Tax is not included in price for athletic classes, camps and training sessions. TAX: Tax is applied to the price for athleticbased classes, camps, workshops and training sessions. CANCELLATIONS: To receive a refund for a program, you must notify us of cancellation at least seven days prior to the start of program. For services, you must notify us of cancellation at least 24 hours before the service. Late cancellations and no-shows are billed at full price. (Cancellations cannot be made online.) MISSED CLASSES AND LATE ARRIVALS: There are no refunds for missed classes or late arrivals for services. CHECK IN/CHECK OUT: Parents or legal guardians of program or service participants younger than 12 must check their children in and out every day with the instructor. GUEST POLICIES MEMBER SPONSOR: A guest may participate in a program or service when he or she is registered by a member. The sponsoring member must be in the Club while the guest attends the program or service. Members have registration priority over guests. REGISTRATION: Members can sign up guests by calling or visiting the Athletic Services Desk. Guest registration is not available online. FEES: Guest fees for programs and services are typically 20 percent higher than member fees. (Fees subject to change.) LIMITATION: Guests are allowed to attend one program or service per year. BILLING: Guest fees are billed to the sponsoring member’s account. No other forms of payment are accepted.
